FALLING IN LOVE IS ONE OF THE BEST EXPERIENCES WE CAN LIVE...

T

his term has been used for ages and it’s been the base to tell from the most dramatic stories to the most tragic ones in history with which everyone has felt identified in different parts of their lives. Movies, series, novels, art and more have been the vehicle that takes us to those feelings that we englobe into the phrase “being in love”. Even if sometimes it’s felt like it’s a game of the universe taking us to the maelstrom of what it is to be human, it all varies in different sorts of tones, times, eras, people and it will depend a lot on how we lived those moments that leave marks that we ourselves can only truly understand. A lot of people went through something called “love in times of covid”, an experience that came to reassure lessons from the past or even just a turning point for what’s coming next in our lives. ”Did you ever feel or know that you’d end up hurt?” This question is usually asked when we’re telling our stories and our listeners pay attention to certain red flags… What person in their right mind would get in a relationship thinking about the end of it? Weather it’s a relationship with or without a title, marriage, family, or others, no one wants to invest time thinking the outcome will never be a good one. I heard different stories during this pandemic and most of them stuck in my head making me wonder a lot about how true love and hurt can feel. This issue is a tribute to all kinds of love.

Love isn’t just bright or dark, it’s that balance between those beautiful feelings we have in a romantic relationship, a healthy friendship or how passionate work can feel. It’s about how we’re betting on feeling the whole thing surrounding love, even the bad parts like betrayal, humiliation, pain, sadness. Have you ever thought why those blows we’ve taken in the past on the matter of love are so important? It’s because love, as an emotional experience, is born from our vulnerability, that innocent state where malice is inexistent and the truth of others becomes noise. We’ve all shared our stories and we can put ourselves in them like the villain or the victim, but never forget that there are three versions of that story: the one you tell, the one the other part tells and the one that was lived.

This is what we are getting now in 2021, the trend being a mashup of inspirations with the 80’s, 90’s and 2000’s. Giving a twist to our style is always a challenge that sounds complex but it is valid for the transition in which you find yourself to redefine your style, it all depends on what inspires you and what you feel to make it happen. A Mexican brand that can inspire you a lot to do it is Antonio Sanchez with its clothes full of romanticism and sensuality, with daring and charming designs expressed in planes of contrasts and textures of movement. In his different collections, you will find feminine silhouettes, dresses with long necks with light falls, midi skirts and pants with transparency. A

n experience that goes beyond consumption, that’s how I would describe the delightful afternoon I had at Fairchild 1869 one afternoon when I decided to go to enjoy a special menu they prepared in collaboration with Beefeater London Black Berry. The pairing consisted of a 3-course menu perfectly designed to taste exquisite flavors and combinations with this new bottle of Beefeater. Being a special menu, the pairing was planned in such a way that I could choose 2 different options: a consommé of squid and octopus with caper oil and baked mushroom, or an olive oil gazpacho, accompanied by colored cherry tomatoes and cucumber. The consommé left a juicy and exquisite taste on the palate in equal parts, being a classic to enjoy powered by the subtle flavor of the zetas; the gazpacho masterfully combined vegetables, salt

and essential fatty acids of olive oil, enhancing its flavor with the elements that accompanied it while giving it that creamy and irresistible texture for our palates. To continue with this experience, there were also 2 options for the main course: sea bass with herb sauce accompanied by an orchard salad with apple cider vinegar vinaigrette and the second option was the slowcooked chicken with bean sauce and avocado leaf. The sea bass had a flavor that didn’t need great recipes or complicated sauces to disguise its taste, being that the chef’s choice was ideal, plus it is an ideal dish if you are measuring your diet or for light dinners. Now, moving on to the chicken, the key element I consider to be the simple and well-known bean sauce, perfect to accompany this soft chicken meat, since it provides that specific bean flavor but under a different concept from the typical pot beans.

In addition to these delicious dishes, Beefeater London Black Berry was the brand selected to dress the palate of this gastronomic experience with a series of cocktails that maintained the essence of its distinctive flavor. The drinks were presented in the following order: Red Pink, Exotic Wine and Anana Refresh. It was interesting to me how the blackberry notes in the classic flavor of the well-known gin accompanied the selected dishes perfectly because the flavors did not fight with each other even though they sometimes contrasted. Being the first Red Pink, it was an indispensable element for the enjoyment of the food; being the key component of this pairing, it surprised me with the perfect balance of flavors between the watermelon and strawberry puree, the agave honey and the indispensable yellow lemon juice that showed us that it is possible to play with cocktails and obtain flavors that do not need to fight with the idea of a pairing of contrasts.

Exotic Wine was a refreshing cocktail and perfect for that March afternoon because of the grapefruit juice, lemon and citrus bitters that provided not only a special flavor, but also a revitalizing energy; in addition to the red wine and the indispensable element, Beefeater London Black Berry. We closed the pairing with Anana Refresh, a special combination of pineapple juice, angostura, pineapple stalk and lemon plus a subtle touch of agave honey that produced a final sweet sensation in the mouth at the moment of tasting it... But that was not all. “Red & Pink”cocktail made with Beefeater Black Berry.

There are different ways of looking at dessert, some say that if you need dessert it is because the food was not enough, others say that the perfect closure to a good pairing can be accompanied by a delicious and well-chosen dessert. Personally, on this occasion, the dessert was the perfect ending to a sunny afternoon full of flavors really cared for to leave Fairchild 1869 with a smile on your face for everything that happened on your palate. The dish that was the finishing touch of this pairing was the dessert and I had two very good and beautiful options to choose from: “Tres leches” cake with dehydrated fruits and red fruit reduction and the caramel flan with dulce de leche, accompanied by a fluffy layer of chocolate cake. I couldn’t help myself and went for the unmistakable impossible cake, that cake amazed me since I was a child b ecause it was two desserts in one and only my grandmother knew how to make it perfect. The creamy texture of the flan and the soft texture of the cake were magical as they kept a balance between the flavors. It was the perfect closure.

urrounded by an impressive natural wealth, this construction offers the ideal lodging for those seeking exclusivity, privacy and peace.

16th century on the grounds of an ancient Maya settlement, but it was not until the beginning of the 17th century that the main house was built. Some of the columns and floors still preserved in the building were part of Mayan observatories, where ceremonies involving the contemplation of the Milky Way were held. This is why the hacienda was named Katanchel, which in Maya means “where one asks the arch of the sky”.

The haciendas of Yucatan had their greatest splendor when a type of agave called “henequen” used as fiber to make various products became an international boom because this state was the world’s only producer of the socalled “green gold”. At the beginning of the 20th century, henequen began to be produced in other countries such as Brazil, Cuba and Haiti, after which henequen went into decline and many haciendas became ruins and were devoured by the jungle. Others were remodeled and converted into luxury hotels while preserving their original architecture; one of them is Katanchel, which was built in the

I

nspired by the pop music of the 80’s and 90’s, Gregory Dillon is a queer artist who creates pop songs with one goal; generate a positive influence on the public. Growing up in New Hampshire and being a “farm boy”, as he refers to himself, Gregory was a shy and reserved young man who retreated into his music and his space; until he decided to go on the journey of his dreams to start creating a pop fantasy that would support kids, who like many of us, were going through a teenage years full of insecurities. When we talked with Gregory, he expressed to us that the first big step was moving to Brooklyn, NY. Where he began to experience completely different situations than he was used to, situations that he describes as “intimidating and extreme, that he had never experienced before,” until he slowly began to be the way he wanted to be, dealing with new people, going to new places and becoming more confident. 141MAGAZINE.COM

around the world, he seeks to truly connect with people and be an artist that creates a difference. I don’t want to change on a global scale, but on a personal level, where people start to believe in their own worth.

Similarly, as an independent artist, Gregory has been affected by the current situation in the world, looking for how to get support and people to connect with his project, “being an independent artist, you decide what you are so it is necessary to think outside the box and focus more on the audience.”

Through lyrics that evoke a sense of nostalgia, Gregory seeks to create a unique environment for his audience, where they can be themselves and feel free to love; just as in his efforts as a public advocate for LGBTQ rights 133

One of the projects that wants to change the way we go through this pandemic situation is the release of his new track “SWING SWING”, after his awaited first EP “Sad Magic”, which have a conceptual aesthetic driven by blue tonalities, which, according to the artist, connect emotions and generate a complex feeling of nostalgia. These songs invite the audience to connect with specific moments in our lives and to recognize that, like Gregory, we have all gone through a long process of individual understanding before knowing our capabilities to love, being these the major inspiration for his creative process. Through different colors, Gregory has been able to transmit to people the impact they have on our lives, affecting our mood and personality. In this case the color blue, not only generates a feeling of loneliness, but tranquility and confidence perceptible in his images. As a result of this artistic growth, Gregory expresses that it has been a “stage that has allowed him to transcend different parts of himself” and has taught him to transition as an artist, being proof of this his future projects, where he plans to incorporate the behind the scenes of his videos and provoke a greater interaction from his audience where there is always a space of support for all. 134 141MAGAZINE.COM

B

eing a visual artist who has dabbled in different techniques such as oil painting, Chinese ink, watercolor and tempera, Sebastián Dávila manages to captivate us through his wonderful collage pieces, which have the characteristic of evoking a feeling of tranquility and peace in everyone who sees them. Talking with the artist, we were able to learn about the long process he had to go through to adapt his line of work to paper, since his motivation was affected by different factors, such as his move to the city of Merida and the understanding of the public’s acceptance, being reflected in this way in his works the different personal changes he lived through. Throughout this process of growth, characteristic elements of his work have stood out, such as fishes and angels, which, in the words of the artist himself, “these elements seek to transmit a feeling of freedom due to their wings, in the same way the butterflies and their symbolism of metamorphosis and constant evolution”. Another recurring element in his work are boats, which he commented that he includes in his works due to personal experiences and different dreams he has had; but the main theme of his interest, which he seeks to integrate in his work are selfportraits. Inspired by artists such as Frida Kahlo, Sebastián recognizes that starting from his own image he has generated a visual diary that allows him to communicate his experiences.

Also, a characteristic that has distinguished Sebastián Dávila’s work is the lack of faces in his different portraits, due to 4 main reasons described by the artist. Initially, this recalls his first contact with illustration at the age of 3, where for no reason, he avoided drawing faces, as well as his taste for surrealist tendencies and as he expresses “in dreams sometimes we don’t see people’s faces”; Other reasons are his desire to show what exists beyond the external, avoiding the face of people and his interest in generating works with which the public can identify and even get to insert their faces in them as there are different stories that many people are sharing at the same time. Through the different styles, techniques and materials that have been advancing and evolving in Davila’s artistic growth, he determines that one of the signs that identify him are his experiences and the constant change that he lives day by day, which is possible to appreciate in his different works. Being such a changing artist, Sebastián considers that collaborations are elements that allow him to perpetuate art and learn from other artists, while generating support which can be key to the generation of new ideas. 138 141MAGAZINE.COM


Currently, having changed his way of working as a result of the pandemic, he considers that it is time to be grateful for the technological advances that we have not only for art, but for all professions; being that adaptation and constant progress is necessary to continue maintaining a constant growth and not to pause our activities definitively, but he emphasizes that these new techniques will not replace or compare with the experiences of enjoying a live work and being able to dialogue with it, despite being much cheaper and more powerful tools. He also emphasizes that these tools have given the public the possibility to get to know not only the artist, but also what lies beyond the works, having a direct approach to art and its medium. For those who have not found the motivation to venture into art or still do not feel like artists, Sebastián invites them to really start doing things, since the pandemic has given us the opportunity and the time to do more things that previously we could not or had never considered. One advice he leaves us with is “make mistakes, there are only 2 possible results, you learn what you shouldn’t do anymore or from those mistakes you can get an interesting result”.
