BEER
From The Brewer.......
Pilsner
On October 5, 1842, the beer style Pilsner was born. Developed by the way of Bohemian and Bavarian
knowledge collaboration in the town of Plzen, Bohemia (now the Czech Republic) this light, clear and
golden straw-colored beer was unlike anything the citizens of Plzen had ever seen before.
Being used to heavier and darker Ales, this new Lager style beer was crisp, refreshing and much cleaner.
Legend has it that, in 1840, a monk snuck out of Bavaria with some of this highly advanced Lager yeast and began the spiral of the most copied beer in existence.
Pilsner Urquell means “The Ancient Source of Pilsner” now produced by the Pilsner Urquell Brewery.
It is grandfather to most of the beers produced in the world today. The original ingredients for this particular style consisted of light barley that was partially malted, along with an abundance of the fragrant
Saaz Hop.
Today, various purposely developed Pilsner malts are in use across the world that both large and small breweries utilize. The large Marco Brewery manufacturers have derived from the original ingredients and use “fillers” such as rice and corn. The story of American manufacturers using these fillers to water down
the beer after World War II is a myth.
The reason for the use of corn and rice in American style Pilsners was simply to adjust to the demographic
of American beer drinkers for whom the immigrant German brewer was now brewing. The American
market had not yet developed a taste for the light but malt-forward beers brought over by immigrants, so a change was needed and that changed sparked the entire light American beer industry.
Pilsner beers are the most difficult beers in which to hide any faults or blemishes. Carefully brewed, cold fermented and aged, this particular style should always be light, crisp, clean and refreshing.
Cheers.

FOODIE
THE CALOOSA CLUB
FINE DINING AT CAPE ROYAL GOLF COURSE It’s All About the Sauce!
Written by Nancy Skarda Although publicized in local newspapers, many people aren’t aware of the rebirth of the Royal Tee Golf Course into the Cape Royal Golf Club, managed by Green Golf Partners. Tyler Arnold is the PGA General Manager & Head Professional. Residents of the gated Cape Royal community purchased the property and leased it to Green Golf Partners last year, and they began rebuilding the 27hole course. During that time, the clubhouse was redecorated and it was refurbished with a new kitchen. The bar/dining area was changed to a full service bar and restaurant named The Caloosa Club. It is run by Executive Chef Mark Thomas, Food and Beverage Director.
Chef Thomas brings a special mix of education, training and experience to The Caloosa Club. He came to Cape Royal from Lake Jovita Country Club and Belleview Biltmore Golf Club, near Clearwater. He earned his chef ’s degree at Florida Culinary Institute where the study of sauces was his specialty. Afterwards, he trained under French and Italian chefs who say, “The sauce is the key to everything.” His career has evolved, opening as many as nine restaurants and working for the well-known Veranda Restaurant in Tarpon Springs (1500 seats), formerly the famous Louis Pappas Greek restaurant. Some of the Caloosa Club’s most popular menu items are best-loved recipes from these other restaurants. The club is one of the few local golf course-connected restaurants in the area that offers an extensive menu for breakfast, lunch and dinner, as well as a kids menu. Selections include gourmet sandwiches, wraps, fancy pasta dishes, super-sized salads, tasty appetizers, soups and full size dinner entrees. Favorites like the 1905 Salad, Philly Cheesesteak, and the classic Reuben are additional choices beyond hamburgers and hot dogs. The most popular entree served is the prime rib dinner. Menu selections are continuously reviewed by Chef Thomas for variety, and menu specials are developed daily and weekly. The chef also monitors serving sizes offered: he recently added two serving sizes of a Midwest soup named Chicken Booyah which is immensely popular. Food is prepared here from CAPESTYLEMAG.COM
Chef Thomas, who supervises a restaurant/bar staff of 12-20, also provides catering for community residents and the public at large. He develops special catered menus based on guests, and he plans every event and menu to be unique, whether it is for a ladies luncheon or a men’s golf dinner. The club also offers home delivery of meal orders to Cape Royal community residents. It will prepare orders in 20 minutes for anyone (including golfers) who calls ahead of his arrival. The Caloosa Club’s fully stocked bar includes a choice of wines and craft beers. It hosts monthly wine tasting events, as well as quarterly beer tasting events. These activities are open to the public.
The Caloosa Club operates with the same goal as the Cape Royal Golf Club: to provide championship service, “A1 Service,” to customers from the time they arrive until the time they depart the property. Club employees strive daily to make all guests feel welcome.
10
locally grown sources, and each diner’s meal is made to order. The restaurant’s growing popularity is reflected in the fact that it is now serving as many evening dinners as it is lunches.

MARCH 2018
The Cape Royal Golf Club has experienced significant growth in the few months it has been open. Recently, a new golf league outside the community signed up for weekly games. Local business associations have noticed the positive transformation of the golf club and restaurant, and they are planning future events here. The Cape Coral Chamber of Commerce has selected the club for its annual golf outing here in March. Recently, a charity golf event was held to benefit the Cape Royal Community Foundation, resulting in $6,000 being raised. The Hawaiian-themed menu selected by Chef Thomas was quite different from what golfers might have expected. Chef Thomas stated that hosting these successful charity events is essential for the club’s growth. More information about The Caloosa Club at 11460 Royal Tee Circle in Cape Coral can be obtained by checking its Facebook page, or visiting caperoyalgolfclub.com. It is open 8:00 a.m.-7:30 p.m. Sunday through Tuesday, and 8:00 a.m. until 9:00 p.m. (when service stops) Wednesday through Saturday. Non-residents going to the Caloosa Club for dinner should arrive at the community before front gates close at 7:00 p.m. Sunday through Wednesday,
and before 8:00 p.m. Thursday through Saturday. Other questions can be
answered by phoning the pro shop at 239/283-5522.
BEAUTY
Ask Your Stylist Stupid Questions. You’ll be glad you did
There are many times when I hear "This is a stupid question, but..." Let me start off by saying that there
are no stupid questions. But I have a stupid question: why all the fear of feeling stupid?
The only people I can blame for this are your stylists. Nobody wants to feel like they don't know something.
Imagine you’re sitting in a room and someone is talking and everyone nods in agreement. And you do, too,
even though you have no idea what everyone is agreeing to. Who wants to be the weirdo who interrupts
with a stupid question?
Your stylist should make you feel comfortable about asking any kind of question. You are purchasing a
service and you should be as well-informed as possible about what you are receiving. Anyone who has ever
been in my chair knows that, most of the time when they don't ask questions, they end up listening to piles of information that I give freely to make sure they understand as much as possible.
So please, don't ever feel uncomfortable asking questions. Not only should you ask questions, asking them makes you a smart consumer.
Of course, some questions are going to get you the information you want faster and more easily: • What’s included in the price? Add-on sales have unfortunately become the norm. Services that were
once included in the price of a haircut have become an addi-tional cost. Want your hair dried after your
cut? That will be $20. Want it styled? Another $20-$30. So, when you go to get your hair done, be sure to
know exactly what you’re buying.
• Will it look good on me? How many of you brought a picture to your stylist of Jennifer Aniston’s iconic
asymmetrical bob, only to go home miserable because you looked nothing like Jennifer Aniston? A good
stylist should custom fit the look you’re craving specifically for your face. A haircut should accentuate your best features, while downplaying your least favorite features.
• How much work will go into styling it at home? If you typically spend 10 minutes on you hair every
morning, make sure your stylist knows this before jumping into a sleek graduated bob that needs to be
styled in order to show off the artistry of the cut. Communicate how much time you put into your hair each day so your stylist can craft a cut specifically for your life.
• How short will it be when it’s dry? An inch is an inch, right? Wrong. An inch can be interpreted
differently to different people. Be visual when expressing how short you’re willing to go. Either use your fingers to show what your inch is, or just show where on your body you want the shortest layers to fall.
• Stay away from saying, “Do whatever you want” to your stylist. Unless you’re willing go short, like
really short. If you are that adventurous, ask your stylist if he or she has a “no say, no pay” policy. It lets your stylist be as creative as they want, and you get a free hair cut.
Now, go make an appointment and ask away! CAPESTYLEMAG.COM

Dry Eye Syndrome New Diagnostic Tool that Helps Detect
SOONER THAN EVER
Having access to cutting-edge eye care technology can make a world of difference in a patient’s
health care experience. This is particularly important for patients impacted by Dry Eye Syndrome (DES), as this condition can easily remain undetected without the proper tools. The InflammaDry diagnostic test is a great solution to ensure that the presence of DES does not go unnoticed, so that patients are receiving the highest quality of care available.
Living with Dry Eyes
DES is a common inflammatory disease of the eye. Typical symptoms range from mere itching
and tearing to a burning sensation, or even feeling like there is a rock in your eye. Living with dry
eyes has proven to be debilitating and disheartening for many patients, as these symptoms can
affect everyday life, making it difficult to perform tasks such as reading or using an electronic
device.
An ongoing problem with properly diagnosing DES is that patients often experience symptoms
of this disease before the eyes begin to show clinical signs. This can make it difficult for the
physician to properly identify what is causing the patients’ current condition. For years, doctors
have relied on different diagnostic tools to help evaluate a patient’s tear production and quality.
While these tools have proven to be helpful in assessment, they do not help identify the underlying cause of dry eyes: inflammation.
Inflammation and Dry Eye Syndrome
Studies have shown that MMP-9 is an inflammatory marker that is always elevated on patients with DES. Rapid Pathogen Screening, Inc. (RPS), a company dedicated to developing modern
and more efficient diagnostic tests, has invested time and resources in researching this problem.
As a result, the InflammaDry diagnostic test is now available. This easy to perform, in-office test,
can detect in as little as 10 minutes if a patient’s MMP-9 marker is elevated. The knowledge that
inflammation is present can assist the doctor in making the correct diagnosis.
Having this information is beneficial, not only for those who are experiencing symptoms, but
also for patients who will undergo ocular surgery. Properly treating DES prior to surgery has shown to improve post-surgical outcome and decrease risk of complication.
At Elmquist Eye Group, it is our goal to have the best and latest technology available to benefit
our patients’ eye care experiences. With this purpose in mind, we have now incorporated the InflammaDry diagnostic test as a valuable tool to help our Dry Eye Syndrome patients.
If you would like to learn more about this tool, or have concerns about your vision, Dr. E. Trevor Elmquist, Dr.
Kate Wagner, Dr. Nina Burt, and Dr. Sarah Eccles-Brown of Elmquist Eye Group are available to answer
your questions. With over 20 years of service to the Southwest Florida community, Elmquist Eye Group offers
experienced doctors that are dedicated to patient care. Elmquist Eye Group’s Cape Coral office is located at 2336

CapeScape: Cape Coral’s Newest & Fun-est Business-Boosting Tradition... By The Cape Crusader
Well, another year has flown by and our desire to promote “the best kept secret in Florida” keeps getting stronger. This time last year, CapeStyle Magazine introduced the Cape Coral Map-a-paloosa to rave reviews. But we’re not ones to rest on our laurels, so we’ve revised, added to, expanded on, and otherwise enhanced our ‘suitable for framing’ CapeScape—officially making it not only the newest local tradition, but the coolest and fun-est business-boosting promo in The Cape.
Cape Coral is one of the fastest growing cities in the country. New businesses are popping up every month. Who can keep up? This year, lots more shops, companies and services have come together to form the face of their community in this eye-catching collage. The 2018 CapeScape is twice as big, and way more detailed, making it even funner to meander down familiar streets and side-alleys to find those quaint, little gems you’ve heard so much about, wanted to try, but haven’t taken the time to punch them into your GPS.
Now you can easily find that laid-back Tiki bar, that unique boutique, that intimate cafe, charming art gallery, fresh market and exciting new restaurant—like Blu Agave, where they serve up authentic Mexican cuisine. Or Point 57, with its fare & libations geared to the sophisticated palate. An elegant waterfront dinning experience may be had at Gather, where good friends get together to eat, drink and chill. At a glance, you’ll mentally bookmark these and other great additions to the Cape’s culinary scene.
This CapeScape is chock-full of all kinds of new places to discover, along with nuggets of helpful info. It’s a visual feast for the eyes, designed to make locals proud of their diverse sub-tropical paradise, while giving Snowbirds a quick lay-of-the-land.
But this is only the beginning! Each year, we intend to build and grow right along with our beloved town, adding more facts and detail, identifiable landmarks, colorful facades and memory-making hot-spots. It’s truly the fun-est business-boosting tradition ever! If you didn’t join us this time, there’s always next year!
Pick yours up FREE from any participating shopkeeper, merchant or service provider. And look for me too! The Cape Crusader—pointing the way to truth, justice and, of course, the Cape Style.

MOVIE REVIEW
By Rachel Roth Don’t listen to angry fanboys, who are angry for reasons I only half understand. Star Wars: The Last Jedi is one of the best, a spiritual sequel to The Empire Strikes Back that reaches out to old fans while stringing together a new song for the fresh ones. There has been a lot of hate for this new Star Wars film for multiple reasons, but like in so many other cases, most people don’t understand why the angry fanboys are angry. Is it because a woman is the new lead? They seemed to like The Force Awakens without much complaint. Is it because Luke’s character seems to be completely different then he was from the originals? That might be, but then again the time gap between the last time we saw Luke until now is 32 years. Yes, it’s hard to believe that the hopeful farm boy everyone loves would turn into a bitter, resentful man filled with regret and shame, but people change. Let’s not forget the most important thing, it’s a movie. I don’t know about anyone else but if my nephew turned to the dark side and murdered all other Jedi students, I would probably blame myself too and be consumed with despair. Now, forgetting the change of Luke character, I don’t know what else people seem to hate about it. The few plot holes that every Star Wars film in the world has? They made a whole separate film, Rogue One, to fill in just one plot hole from one movie. Let it go! I sometimes find that people will go into a film already hating it because of what other people say. Don’t spread the hate around for a perfectly good film and don’t go sabotaging the rating score. Don't make it seem like the audience hates it when it’s just a group of whiners getting mad for reasons that will make people nod their head slowly pretending they understand, when they’re actually thinking “what?” It’s getting ridiculous. Filled with the same fun action Star Wars is known for, and with the emotional depth that they sneak in during the intermission of the action, there is more than one scene when an old, die-hard fan will want to jump out of their seat to scream “I get that reference.” Characters you never thought you’d see again are honored and new ones are handled with gentle care, including the troubled Kylo Ren, a.k.a Ben Solo, who many people, including my Han Solo loving mother, hated after The Force Awakens. Without giving too much away, prepare to start feeling something for him. He starts to grow on you with his childlike eyes that ask the question “why can’t I be happy?” Well Ben, no one’s happy on the dark side, but we’ll have to wait to tell him that for the Episode IX. Then there is the new Luke Skywalker, Rey, who has to go through a new challenge all her own proving she doesn’t need any guidance, only someone to tell her it’s time she trusted in herself. With an interesting balance between the dark and light side, with a inspiring message of how you don’t have to come from greatness to be great, The Last Jedi moves the Jedi story in a whole new direction that I rather enjoyed. Instead of believing so wholeheartedly in the Jedi’s to keep the peace, trust in life, in people, in the Force that connects all things, trust in love and friendship not the magicians that are gifted with the power to control the Force. I strongly recommend this movie, even for non-Star Wars fans.

Teddy Perchall CAPE KIDS WITH
Submitted by proud mother Denise Perchall
Theodore G Perchall II, we affectionately call him Teddy, attends Mariner High School (MHS)and is a Junior this 2017-2018 school year.
Although he grew up excelling in a variety of sports, like basketball, tee-ball, bowling, skating, karate, swimming, tennis, and golf, tennis turned out to be his favorite of all. He’s been playing tennis since he was 7 years old and is part of the MHS Tennis Team and played on his middle school team, too. He’s had the privilege of going to the renowned tennis camp at Florida State University and living in the dorms during the camp back in 2016. Teddy’s hoping to attend the Nike Tennis Camp this summer. Not only is Teddy part of the MHS Tennis Team, he’s also a valuable player to the MHS Golf Team and is taking weight training at Mariner, as well.
He’s starting to take an interest in Psychology and is doing really well in the Teaching Academy offered at Mariner. He’s also been a part of the Chess Club in between sports seasons. Brought up in a single parent household, Teddy's mother made sure that he was exposed not only to sports, but to culture, theater, church and travel.
He attends Bridge Community Church with his mother and sister. Sometimes you’ll find him volunteering his time operating their audio equipment during Sunday Service.
Since Florida is a vacation destination for most of the country, you may find Teddy and his family grabbing a hotel room anywhere in Florida from St Augustine down to the Keys… and just enjoying what the destination has to offer.
He’s looking forward to joining the workforce this summer and is starting to fill out job applications. When or if there is free time from his chores, school, sports, homework, you might catch him at an Everblades hockey game or happily indulging in video games with his friends (CS Go being their latest fav.)
But the most important thing about Teddy is his heart…especially towards animals. We recently found out that one of our cats had a broken hip and needed an FHO (Femoral Head Ostectomy). It’s an expensive surgery, and without being asked he offered $500 out of his savings account to pay towards this surgery.
He is truly an altruistic human being, and I, personally, cannot wait to see what this kind young man will grow into and choose to do in life.

Heroes & Hounds Submitted by Jonette Kessack, photos by Rachel Eckerle
The Heroes and Hounds event was held on January 6th at Sunsplash Water park in Cape Coral. Three local charities and the Cape Coral police K-9 division
combined their efforts to bring a fun, new event to the city and raise money for their causes. Holiday 4 Hereos, The Cape Coral Animal Shelter and the
Southeastern Guide Dog school all benefited from the event.
Officer Steven Scrobe of the CCPD coordinated the K-9 competition which included departments from 6 South Florida counties and multiple agencies. The dogs were the hit of the day as they showed off their skills and awed the crowd with their strength and agility.
Peter Kessack coordinated the entertainment and charity part of the event. Music was provided by Rob Roberson and LCEC's The Killawatts. The primary
sponsor of the event was The Gunterberg Charitable Foundation.
What started out as a small charity event turned into a howling success with thousands of attendees and a picture perfect day. Thanks to all who attended.
