With the amount of beer on the market today, it is easy to find something that sounds, looks, and maybe even tastes like anything but beer. So, what is beer? How is it defined and how can you tell the difference?

Well, the first legal distinction goes back many centuries to when the former Holy Roman empire ruled europe. During that time there were many different laws, all implemented in certain areas or cities. It wasn’t until 1516, when Bavaria adopted the Reinheitsgebot (purity commandment), that we had the first unified beer purity law. This law outlined the ingredients that could be used in the production of beer and also set the prices for different types of beer. The original text outlined three ingredients; water, barley, and hops, and was a way to

ensure enough wheat and rye was available for local bakers. although,

some suggest the restriction was actually enacted by the powerful Wittelsbach family in Bavaria so they could profit by selling special wheat beer brewing rights. Remember all the weizen (wheat) beers: Hefeweizen, Kristalweizen, Dunkelweizen, the list goes on, germany is known for their wheat beers.

as you may have noticed, the original law was missing

an important ingredient in the production of beer (and any alcohol), yeast. When these “beer purity” laws first came out, no one really knew how sweet wort

(brewers term for beer that has not yet been fermented) was turning into beer. It wasn’t until louis pasteur’s pivotal work “The Diseases of Beer, Their Causes, and the Means of preventing Them” came out in 1859 that yeast

and its role in producing beer was discovered. Now, the Reinheitsgebot includes four ingredients: water, barley, hops, and yeast. It is still in use today and influential in the world market. In fact, many german beers include text on the bottle

that they brewed their beer according the “german purity law” or Reinheitsgebot.

So, now that we know a little about the

history of a very influential law that aims to

define what is and what is not beer, let’s get to

the many varieties and styles of beer that are

available today. according to the federal

government, beer must include water, at least 25%

malt, a minimum amount of hops, and it must be

.5% alcohol or higher. you’ll find that many different

governments definitions of beer are not nearly as stringent as they used to be.

Well, how about the average consumer?

The Legend of Sawney Bean @ Big Blue Brewing

South Cape offers a variety of bars and hangout spots for the

locals, as well as the many visitors that make their way to Cape Coral. One common hangout place is Big Blue Brewing, offering

not only their very own house brews, but a full bar and menu as

well. I, of course, went for one of their house taps. It was a Nitro Scotch ale with aBV of 7.2% called the legend of Sawney Bean.

The appearance of The legend of Sawney Bean is a cloudy, dark

brown with a long lasting, frothy head nitro that’s very slow to

a gose. The gose originated in the gosel region of germany,

where the water had a lot of salinity. The base style would be

very similar to a Hefeweizen, however, historically, this beer picked up a lactic acid producing bacteria, similar to the bacteria

in probiotic yogurts, which added tartness. anderson Valley took this great german beer, which almost went extinct until american brewers revived it, and added an american ingredient, melon.

Well, what about that ginger flavored apple cider by angry Orchard? It is tasty, it is dry and posses a lot of the same qualities

as a gose. It is not a beer. It derives a majority of its fermentable

sugar from something other than malt. In this example, it derives

its fermentable sugar from apples. Similarly, mead derives its

fermentable sugar from honey. Then, there is wine, and a variety

of other fruit based wines that derive their fermentable sugars from grapes, or the particular fruit used.

There is a lot of fruited beer on the market today but it all goes back to what the yeast are consuming to create alcohol and CO2,

which are byproducts of fermentation. Ironically, during several

hundred years of Reinheitsgebot rule, they had no understanding

of yeast and without that understanding of yeast; we wouldn’t be able to accurately classify alcohol as beer, as we do today.

a very mild aroma with a hint of chocolate and caramel. When

you breathe it in, you will feel a little bit of a kick. Initially the taste is very robust but once the head goes away, it tastes kind of flat.

For those who may not be familiar, Scotch ale (also referred to as a “Wee Heavy” per 19th century Scotland) traditionally goes

through a long boil in the kettle for a caramelization of the wort.

Compared to Scottish ales, they'll be sweeter and fuller-bodied,

and of course higher in alcohol, with a much more pronounced, malty caramel and roasted malt flavor.

Overall this ale was a distinctively different beer. a great choice if you like variety and a change from your typical brew selection. I

enjoyed The legend of Sawney Bean. If you are looking for a fullbodied beer with a bit of a kick, this is one you want to try.

Big Blue has live music every Thursday – Saturday. The employees

have tons of energy making it a fun place to hang out. They offer

a full-service restaurant and bar unlike most local breweries in the

area with a little something for everyone, young and old. The space has cool architecture with a pup friendly patio.

Emily Umana was born May 8, 2011, Mother’s Day,

in Cape Coral Hospital.

Emily is a sweet, kind 7 year old who brings joy to

everyone’s life. Those who know, her love her.

Everyone always compliments her on her sweet,

innocent, distinctive voice and her long curly hair.

She goes to school at Patriot Elementary where

Emily is in second grade.

Emily began to dance at age 3. She started with

a creative movement class once a week for fun.

At first, she was extremely shy, but by the age of

5, Emily began to ask for additional dance classes.

I soon realized Emily's passion for dance. Emily started to take acro and contortion classes, too.

By age six, she competed with her first solo dance

at Groove Competition, scoring first place platinum in her age group.

Soon after, we began to drive out of town to

attend other competitions. Emily had a great competition season, surrounded by friends and

Hooray for Rosé (Part II)

Quality rosés, even value-driven economical ones, are made with

one of three very specific methods of production – Vin Gris, Saignée or Direct Pass.

Vin Gris is the most common approach. In it, the wines are made

just like red wines (grapes are crushed, juice is fermented, wine

is filtered to remove skins, wine is bottled) except that the juice spends significantly less time fermenting on the grape skins than

the juice of red wines does. The fermentation for a rosé made in

this manner can be as short as a few hours or as long as a few days.

The next avenue for making a rosé is called Saignée, which is the

French word for “bleed.” This involves crushing the red grapes,

allowing them to ferment for a few hours to a few days and then

remainder of the wine to continue fermenting to produce a

quality red wine. Saignée is frowned upon by traditionalist

Finally, there is the Direct Pass technique, which follows that the red grapes are crushed, pressed and the skins are removed immediately. The wine is then fermented and bottled the way a

basic white wine would be produced.

Rosé is arguably the oldest type of wine made. It is produced

around the world with a wide variety of quality grapes. It is

protected by the same laws and restrictions that govern red and

white wines in prestigious wine-making regions spanning the globe. Vintners are dedicated to perfecting their rosé wines just as they are their reds and whites, and wine lovers everywhere are enjoying the results of those efforts. So, if you shudder

thinking about the White Zin craze and haven’t even glanced at

a rosé since, please reconsider.

This is the season to try a light, fruity, fun, summer alternative to the usual lineup of bubblies and cocktails. You will be so glad you

did, you’ll say Hooray for Rosé!

MOVIE REVIEW

Review by Rachel Roth Cory Finley’s directorial debut, which he also wrote, tells the story of two upper class teenagers with life’s resources at their fingertips. They plan on murdering one of their step-fathers in a film that’s full of wit and schemes.

Starring Olivia Cooke and Anya Taylor-Joy, Amanda (Cooke) and Lily (Taylor-Joy) are former best friends. They lost touch after Amanda killed her mother’s prized thoroughbred in a homemade euthanization attempt gone wrong. The two reconnect in preparation for the SAT season and it’s where their fascination for each other rekindles their former friendship. Their problems are…Amanda feels nothing, and Lily feels everything.

Cooke portrays Amanda as unfriendly, calculating, and extremely intelligent, and maintains the same dark, dead eyed expression for the entire runtime which alone deserves an award.

Our first impression of Amanda is that she is insane. “I have a perfectly healthy brain. It just doesn’t contain feelings. And that doesn’t necessarily make me a bad person. It just means I have to work a little harder than everyone else to be good.” It is the exact opposite for her friend, Lily, who is capable of being good but doesn’t want to be. Taylor-Joy does an outstanding job of using indirect movements in her face, a blink or a shift in her lips, to show a change in emotion without giving it all away. These are two young actresses with many Academy Award nominations ahead of them.

It isn’t too far into the movie when the murder plot happens. Lily’s father died (pre-movie) and her mother remarried a rich man who isn’t the warmest individual. Lily hates him, and doesn’t even try for a civil relationship, though she believes she has. She is easily talked into murdering him.

“There’s nothing sacred about human life,” Amanda says. She is the one who suggests getting rid of him in the first place. On the other hand, Lily is quick to go along and becomes strongly fixated on doing the deed, not caring how her own mother will be hurt being widowed twice. Among the cast providing a colorful character to the two composed leading ladies is the late Anton Yelchin. He’s a disgruntled wannabe gangster who doesn’t have what it takes to thrive in the crime world. Thoroughbreds was one of his final roles and is dedicated to his memory. Production was finished just 14 days before his death.

Fair warning, even though there is no graphic violence, the movie contains dark material. For reasons I don’t understand, it is labeled a comedy under some media platforms. Whatever humor it contains is dark, based more in satire than laugh out loud comedy. Please give it a try. It’s a well-made indie film that went unnoticed around the many blockbusters released at the same time.

The two sides of the heart work in opposition to each other. The right side of the heart takes in deoxygenated blood from the body

and feeds them to the veins and lungs; the left side carries the oxygen and nutrient rich blood from the lungs and feeds it back to

the body. Four chambers make up the heart. The top chambers are called the atria and the lower are the ventricles. Without the

proper functioning, the heart will begin to cause damage to major organs, and without maintenance, your heart can cause adverse

effects very quickly.

Most of us are very familiar with symptoms of coronary heart disease, but what about the perilous condition that takes over 130,000

lives each year called Atrial Fibrillation (AFib)? More than 6 million individuals in the United States have AFib. Hereditary heart

disease usually causes the disorder, but other factors that contribute to the heart arrhythmia are high cholesterol, high blood pressure, obesity, heavy alcohol use and more. A disruption to the top chamber of the heart, prompting the hearts rhythm and rate to fluctuate, causes an arrhythmia.

had recently lost one of my Great Danes in the fall of 2011 and was down to only one Dane named Nemo. I saw a pet ad in the paper and called, learning

that Tina's family had to get rid of their pets, including a Great Dane named Diesel.

It was love at first sight! He met Nemo and it was successful. There were no fees

and I could tell the family (especially the mom) wanted to locate a good home for their pet. After owning numerous Danes, I realized that Diesel wasn't full Dane

and my vet agreed. Hopefully, he will live longer as Danes are not known for their longevity.

The family reached out to me numerous times to check on Diesel and see how he was doing after I adopted him.

Diesel had some anxiety issues. He also had a happy tail, meaning that when he

got excited, he would wag his long tail so hard that it would hit walls and bleed.

Diesel had numerous surgeries because he would get to the wound and, as a result, his tail would get shorter. Thankfully, he did heal enough to keep a portion of his tail.

Eight months after rescuing Diesel, Nemo crossed the Rainbow Bridge and it's been only Diesel and me for the past 6 years. Diesel will turn eight years old on

New Year's Day 2019.

In December of 2013, I was reading the paper regarding families that needed help during the holiday season. To my surprise, I read that Diesel's original family was

staying in a local hotel. Their father was incarcerated and they had no home and

no money. The three children wished for Christmas presents that included book bags and school supplies. Reading the article tore my heart and I felt the need to do something, including reuniting Diesel with his original family.

I sent out an SOS to friends, businesses and the community, and

they all stepped up to assist this family in need. I reached out to

the family case worker and arranged for a meet up at the Cape

Coral Yacht Club when the Parks & Recreation Department was hosting Breakfast with Santa. Wow, they were surprised!

Not only did the children receive their requests for school supplies, but numerous miscellaneous presents, gift cards and money to help

them find a place to live. Best of all was reuniting the family with

Diesel! Their faces said it all, and I believe Diesel remembered them

as well. It was very emotional and there was not a dry eye in the place.

When I first rescued Diesel, Tina said “Look at Diesel's markings. He

has angel wings!� Diesel has been my angel in need since he rescued me!

When it comes to eating and working out to loose fat and gain lean, 80% of it is your diet and 20% is your workout! Let’s keep it simple and go back to the basics of CICO “Calories In Calories Out”.

This is an eating plan that requires you to first determine how many calories a day you need to maintain your weight, and then

subtract 500 calories per day for every pound of weight you would like to loose in a week. Example: 3500 calories = l lb. of fat. So to loose one pound per week, you would eat 500 less calories a day. There are free online tools, such as Body Weight Planner, that

will calculate this formula for you.

Now let’s add some exercise to this formula. Let’s say you do a spinning class 3 days a week and a Boot Camp class 2 days a week. You calculated from your fit bit or other tracking device that you burn 500 calories

in these classes. Great! You now have a deficit of 3500 calories for the entire week! Is this healthy? It is if your calories are clean! Vegetables, fruits, whole grains, lean

proteins and low-fat dairy. Remember to be mindful of not eating whatever you want; it is essential you get the right nutrients.

What is so hard about this? Tracking the calories is very important, as well as the

quality of food.

Once you achieve your ideal weight and % of body fat, you can maintain! Calories in = Calories out = Maintenance!

In September of 1983, Aaron Quaintance was born outside Cleveland, Ohio, and had a typical childhood. At the age of nine, his parents decided it was time for a change. With dreams of starting an advertising business, they chose Cape Coral, FL as their new home.

Quaintance was an average student who stayed out of trouble, respected his parents, and achieved

“good enough grades to keep [his] parents happy.” Like most eager young boys, Aaron dove into

sports early on, beginning with 5th grade football. A few years later, he branched off into 8th grade basketball as well. “I was like Bambi,” as Aaron humorously describes his young, lanky appearance

that was perfect for basketball. Though, looking back, he wishes he hadn’t kept football as his only

athletic priority. Fortunately, Aaron’s versatile talent earned him a college football scholarship and the opportunity for a bright future.

Quaintance had no idea would powerfully illustrate

his path in life and come to shape his future career.

Quaintance continued playing football at Webber International University as a tight end and offensive tackle, where he was named to the NAIA All Conference College team and received an NAIA All

Conference Academic Award.

“We went to church when I was little, but I came to know Christ my sophomore year in college.”

One day, after a two-a-day football practice in college, Aaron says “A pastor came to speak to our

team. His words were like a sword, speaking right to me. I’m very analytical. I researched and read

the Bible, I knew it was time I made the commitment to follow Christ and started regularly attending

a church near college and Chritian Life Fellowship when home.” He describes how his reputation

changed, and consequently, the old friends who didn’t like this change dropped off. SEPTEMBER2018

“God changed my heart that year in college,” according to Quaintance. He felt that he was called to education

and thus changed his major, got certified, and began an internship at a middle school in Frostproof, FL. His life

as a teacher took off immediately after. “I graduated on a Saturday, and began my first day as a coach at

Riverdale High School that Monday” where he taught intensive reading and coached football. Everything seemed to be falling into place.

In 2007, however, life changed entirely for Aaron. He and his family’s faith and commitment were put to the test. Having only been married to his wife, Lisa, for one year, Aaron was diagnosed with testicular cancer. Following

his diagnosis, Quaintance would undergo surgery only to find after a period of observation that the cancer had spread to his lymph nodes.

A long and trying road of chemotherapy treatments lay ahead. He remembers “God had humbled me and brought me to my knees. That was one of my defining moments in my walk with Christ. Before this, I was a simple man with no material attachments, and no need for God.”

With all of this happening as newlyweds, Aaron was incredibly grateful for his wife’s compassion and love during that time. “Before this, she had never seen me cry,” he admits. “My wife was my rock and it brought us closer together in our marriage than we ever thought possible. Our church and immediate family were also a huge help to us.” Aaron even credits his wife with “saving his life” when she insisted that he go to

the hospital the day after his last chemotherapy treatment for what he thought was indigestion, which

turned out to be pulmonary emboli, or blood clots in his lungs; a possibly fatal condition.

Today, Aaron is thankful to be alive, cancer free, and ready to answer the call that God has sent him. He and

Lisa are parents to three wonderful children: Ella (age 7), Kohlee (age 6), and Duke (20 months), and remain excited for the future.

His passion for teaching and investing in the next generation was clear when he described the highlight

moments of his career in education. “When the light bulb would go off in my students’ heads, and they would

get inspired to do more at home, when you see you unlock the passion in someone, that’s the real payday. Or

when kids share how you’ve changed their lives. As a coach and a teacher, you’re spending a lot of time with them and have a chance to speak into the lives of the young adults. Getting a letter telling how you affected their life for the better is the ultimate encouragement to continue to strive to make a difference.”

Quaintance has served as an Elder at Christian Life Fellowship for the last 3-4 years and also facilitates water baptisms. His most recent appointment to follow was the most humbling yet.

Lead Pastor of Christian Life Fellowship, David Comer, hand selected Aaron Quaintance as the Principal of the school being born from this church, Christian Life Academy.

When asked what made him stand out for the position, Pastor Comer explains, “I’ve known from its

inception that, as our school grew, there would be a need to bring someone on staff with more than just

an educational background. The vision we have for our students is much larger than simply passing tests

and completing grades. It’s about developing the whole student to become a

change-agent wherever they go and I knew that would take a different kind of

leader. Having seen Aaron live that out in his own life, I’ve always believed he would be the one to take this on, I just never told him until recently!”

Humbled and honored, Quaintance shares his feelings on the appointment.

There were some major things that had to be considered and worked

through, such as retirement, medical benefits, or the fact that his kids went to

public school where his wife was also a (public school) teacher. Luckily, Lisa

will now be teaching at Christian Life Academy, and they have made the

decision for their children to attend as well.

“We’ve thought about all possibilities, considering whether my wife should stay

in the public-school system, but we knew we had to be all in on this. I knew God

was leading me somewhere, I just didn’t know where.”

Christian Life Academy’s new construction project will be completed this Fall 2018.

It will bring an additional 5,500 square feet to the building, ultimately increasing

their capacity to 145 students. CLA started with just 6 students in 2014, ranging from Kindergarten through 3rd grade. In 2017 the student body climbed to 35 students,

ranging from Kindergarten through 8th grade. In the 2018 school year, 58 students have enrolled and CLF is excited to continue the upward trend of enrollment.

When asked about his goals, Quaintance succinctly puts it as, “Developing

students who are prepared for life and not just academics. Well rounded, well educated and prepared to succeed in life while pursuing God’s will.”

“CLA’s School board casts the vision and my job is to carry that out,” Quaintance says. Ultimately, the vision for this school that started with Pastor Comer, and is shared with Principal Quaintance and the entire staff,

is for “all the challenges seen in public school removed” and can be further

described in their Mission and Vision Statements:

LOCAL MUSIC

Strange Arrangement is a local band of two dedicated musicians fronted and founded by the brothers Van Kirk, Warren and Greg.

Based on Pine Island, they are true innovators and creators of their own rhythm and blues. They recently played at the Taste of the Cape in April, where they were accompanied by the Gulf Coast Symphony Orchestra. They also recently won “Best Band Award”

from the local Pine Island newspaper.

Their music genre spans from hip hop, funk, rock style to some country. They are talented and versatile enough to switch from R&B to salsa in the middle of a set. “We both do vocals,” said Greg. “We can even add a fiddle player if people want country and western themed music,” added Warren.

While Warren plays his Godin guitar, both lead and rhythm, Greg works on his Fender Zone bass. They can perform as an entertaining

duo or expand to a full orchestra with drums, horns, strings and keyboard. “At times we have added backup singers and even dancers,” added Warren.

The brothers host a weekly, free music program at the Pine Island Community Church for children and adults wanting to explore music and try different instruments. They are determined to bring

an interactive experience to anyone interested in the joy of music. Both brothers are talented enough play a variety of instruments which makes it easier to teach those interested in anything from guitar to keyboard.

every instrument and encouraged the people to enjoy the music they were creating. They explained to children how an instrument makes noises by vibration. Greg showed enthusiasts how to hold chords and gives examples, while Warren explains all about tempos

and beats.

“With our growing success, we are moving forward to acquiring a publicist who will get us more exposure online and in the press,”

Warren said. “We have future plans to cut a CD to offer for sale to fans.” They are currently working with a studio, producing a new recording which will be accompanied by a series of music videos.

Strange Arrangement is a very entertaining and creative band that people should make every effort to hear. Samples of their music can be found on “YouTube” music.
