Publisher's Corner by Sean Athey Hello Everyone! Welcome to this issue of Tidbits of the Lake Area. I want to personally thank you for picking up our fun, family-friendly and free publication... and you are not alone. We have been working very hard, and have built a steady and growing readership of over 15,000 people of all ages in Northeast South Dakota and West Central Minnesota. We have also increased our distribution so you can now pick up Tidbits at 600 businesses and high traffic locations across Tidbits Territory. These businesses are vitally important to bringing Tidbits to you and I want to personally thank them here for their support and granting us the privilege of placing our product in their stores for our readers. We have a specific philosophy involving our distribution which I will go into in detail in future Publisher's Corners along with answers to questions about Tidbits that I get while I am out visiting with our readers and valued advertisers. Plus, I will try to share some of my experiences growing up on a small farm here in Eastern South Dakota.... such as the "cow" incident. Now, I know my family is already laughing as they read this... so, I'll share this one quick story with the rest of you. When I was about 7, my grandparents, Vincent and Dorothy Tillman farmed and milked cows on "the big farm" and my sister, who was a year and half younger, and I, would get to spend a couple weeks having a great time with them in the summer. Well, one day, my Grandpa and sister took the truck around to the gate midway through the pasture and my job was to walk down the fence line and open the gate for them. To this day, I am not sure why couldn't have rode in the truck and then got out and opened the gate - farm logic, I guess... So, I started slowly along the fence, with the herd off in the distance minding its own business, well, for the most part. Technically all but one curious cow who seemed very interested in what I was doing. I looked over my shoulder and started doing my best 7 year old speed walking impression. I looked over my shoulder again and now the cow was doing its best "curious cow" speed walking impression, only it wasn't an impression - it was gaining on me! So, I started running and, of course, the gate seemed to be further away by now, somewhere in the next county, I think, and I looked over my shoulder again and there was "cow-zilla" blocking out the sun like some slobbery nose black and white eclipse. O, God, I thought... this cow could probably eat me in one bite! I looked forward again, and there was the "gate", a wire with an insulated handle twenty feet away. That's not even going to slow the cow down! I thought as I set the land speed record for a seven year old in a cow pasture. I reached the gate, did my best "action hero" tuck and roll under the fence (Indiana Jones would have been proud) stood up, brushed some "pasture" off my pants and stood there crying and waiting for Grandpa. So, he pulls up, gets out, looks at me, looks at the cow standing there looking innocently "cow-like" and says "Stop crying, its just a cow, she would have stopped if you would have stopped". All I could think was... Grandpa, I don't believe the cow got that memo. Thanks for reading, please enjoy this issue!

What's the deal with Lutefisk?

Lutefisk season is upon us again judging by the number of “feeds” going on in the next couple weeks across Tidbits Territory. Since I am in, what seems to be, the minority as one who has not had the pleasure of consuming this traditional holiday food I thought I would dig into its origins and see what I can find out.. Lutefisk is a traditional dish of the Nordic countries and is made from cod (or ling, pollock or haddock). The first treatment is to soak the stockfish in cold water for five to six days while changing the water daily. The saturated fish is then soaked in an solution of cold water and lye (yep, lye) for an additional two days. The fish swells during this soaking, and its protein content decreases by more than half which produces a jelly-like consistency. When this treatment is finished, the fish (saturated with lye) has a pH value of 11-12 and is therefore caustic. To make the fish edible, a final treatment of yet another four to six days of soaking in cold water, changed daily, is required. Eventually, the Lutefisk is ready to be cooked. Cooking the Lutefisk must be carefully done to avoid it falling to pieces because of its high water content. It is common to spread a layer of salt over the fish a half an hour before cooking to help “release” some of the water. Final preparation can be done in different ways. It can be placed in a pan with a tight lid and steam cooked over very low heat or wrapped in aluminum foil and baked or (parboiled) wrapped in cheesecloth and gently boiled. Another common cooking preparation is too fill a pan 2/3 full of water, add a little salt, and simmer the lutefisk

pieces for 7 to 8 minutes. Lutefisk is served with any number of side dishes depending on regional tastes. In the United States potatoes, lefse and meatballs and gravy are common. The fish itself is often paired with melted butter and white sauce. Lutefisk has somewhat of a murky origin, although mostly the preparation points to food preservation as it was an “everyday” meal during the long winter months. Mentioning Lutefisk gets a variety of reactions from wrinkled noses to watering mouths, depending on your palate. One of my favorite humorists, Garrison Keillor, had this to say in his book, Lake Wobegone Days: “Every Advent we entered the purgatory of lutefisk, a repulsive gelatinous fishlike dish that tasted of soap and gave off an odor that would gag a goat. We did this in honor of Norwegian ancestors, much as if survivors of a famine might celebrate their deliverance by feasting on elm bark. I always felt the cold creeps as Advent approached, knowing that this dread delicacy would be put before me and I’d be told, “Just have a little.” Eating a little was like vomiting a little, just as bad as a lot.” Hopefully this information does not turn you away from your local Lutefisk Feed but serves to make you curious, as I am, to give it a try. Two deer hunters were standing on a ridge near a highway in rural Oklahoma on the opening day of dear season. They both spotted a large trophy class buck meandering towards them. As the one hunter raised his gun to shoot, a funeral procession came slowly by. The hunter lowered his gun, took off his hat, and stood with his head bowed until the procession was past. Of course by then, the deer was long gone. The other hunter exclaimed "Wow! That was the most sportsmanlike act I've ever seen! You allowed this trophy buck to escape while showing such compassion and kindness toward someone's dearly departed. You are a great humanitarian and a shining example to sportsmen throughout the world!" The first hunter nodded and said; "Well, it is the least I could do, we were married for 42 years." A lawyer is on his way home after a long day. He comes to a four way stop but just slows down and creeps thru the intersection. Just as he is picking up speed he is pulled over. The cop asks the laywer why he didn't come to a complete stop. Well being a lawyer he decided to argue about there being no need to stop and that slowing down to a crawl was the same to make sure it was safe to continue. After arguing for awhile the lawyer smugly says, "If you can tell me the difference between coming to a complete stop and just slowing down I'll pay the fine and donate the same to the Policeman's Ball." The cop calmly asks the lawyer to step out of his car. As soon as he does the cop beats him senseless with his flashlight for a good 5 minutes. He slowly leans down on one knee and asks the lawyer, "Would you rather me come to a complete stop or just slow down?"
