PRESIDENT’S MESSAGE Shawn Airey

What tremendous weather we had to finish off November and start off December with. Hopefully it continues to be favorable for the rest of winter. AG-EX was a huge success with several previous exhibitors and some new ones. It is always great to get together with other breeders and see what direction everyone’s programs are headed. Our Judge was Allan Marshall from Innisfail, AB. Allan along with his family own and operate Future Farms. The show was well attended and I would like to thank the volunteers who helped with the show. Our MCA annual general meeting will be taking place Jan 9/2016 at 1:00 at the Victoria Inn, Brandon. All MCA members are encouraged to attend. If you have any questions about this event or any others, please feel free to contact myself or any of the directors. Shawn Airey MCA President

CCA Report

Mel Reekie General Manager

What a year it has been; 2015 continued to bring out the best of Charolais! The CCA Board of Directors met in Calgary this fall and reviewed the many successes of the past year. One in particular being the CCA Annual Meeting in Manitoba. The AGM was well attended as Charolais enthusiasts were greeted with the “Friendly Manitoba” comradery that we’ve all come to know. The participation and quality of cattle at the Pen Show was impressive. Manitoba houses an enthusiastic group of leaders within our breed. With gracious thanks to Candace and Helge By of By Livestock, the World Charolais Technical Congress will also remain a highlight of 2015 for many years to come. International guests were treated to Canadian hospitality throughout Western Canada that didn’t disappoint. Record sales of Canadian Charolais seed stock were realized with tremendous interest and support of our high quality genetics spanning the globe. Right here at home, the Provincial Associations as a whole reported renewed enthusiasm, Charolais premiums and a general buzz in the industry. CCA Whole Herd Enrollments saw an increase over 2014 as a result. Specifically, Manitoba had an increase of over 100 head for 2015 enrollments. The EYE Committee would like to commend all those who applied for the 2015 CCA Scholarships. It was a true pleasure for those on the committee to read through the inspiring messages and get a first hand look at the next generation of Charolais Leaders. The strength of the leadership skills, the involvement with the breed and your respective communities is remarkable. We received a significant number of highly qualified applicants for this year’s funds. Of the sixteen

strong applications, we had the tough decision to select four recipients. Congratulations to: Laura Weinbender of Canora, SK as the 2015 Recipient of the $1500 Dale Norheim Memorial Scholarship and to Jessica Sperber of Rimbey, AB, Luke Marshall of Red Deer County, AB and Genevieve Dubuc, St-Eulalie, QC for each receiving a 2015 CCA Scholarship of $1000. Looking to 2016, please remember that Memberships and Whole Herd Enrollments are due January 1, annually. Please report any changes of address or account information to the CCA Office. Charolais Banner subscription fees have increased to $45 for 2016 as a direct result of postal, printing and paper fees. You will see the increase on your 2016 CCA Membership fees. New for 2016, you can view the Charolais Banner online! The Banner will be available online immediately upon publication. As we move into the New Year, CCA will be optimizing funding and will be conducting additional testing with HD panels to help work toward our goal of publishing Genomically Enhanced EPDs. We continue to work closely with Doug Blair, CBBC, AGI and various University researchers to move forward in exploring ways to better position the Charolais breed for expansion in the beef industry. We are committed to due diligence and exploring what we can do as a Board to move the breed forward. The 2016 CCA Annual General Meeting will be held in June in North Central Alberta, details will be published as they come available. Mark your calendars and start making plans for the 2016 National Charolais Show being held at the Royal Agricultural Winter Fair in Toronto, ON next November. Don’t forget! The 2016 World Charolais Congress is being hosted by Mexico, April 15 – 24; details regarding registration are now available. Go to www.charolais.com and follow the link for complete details. Does your farm have a website? Email Mel at mreekie@charolais.com to have your operation added to the www.charolais.com list of Canadian Breeders under the Links tab.

from Joan’s Kitchen

Hope everyone has been enjoying this mild weather I sure have. I’ve included an easy vegetable soup recipe I use constantly to use the vegetables I have on hand

Vegetable Soup 2 Tablespoons canola oil 1 ½ cups chopped onion 2 cups chopped carrots 1½ cups chopped celery 4 cloves minced garlic 4 cans consommé soup 1 quart canned tomatoes 3 cups peeled and diced potatoes 1/3 cup fresh chopped parsley 2 bay leaves ½ teaspoon dried thyme 2 cups frozen or fresh corn 2 cups frozen or fresh peas Heat canola oil in a large pot over medium heat. Add onions, carrots, garlic and celery and sauté 3-4 minutes. Pour in consommé and add tomatoes, potatoes, parsley, bay leaves, thyme, and season with salt and pepper if you wish. Bring to boil, then reduce heat and simmer until potatoes are tender about 20-30 minutes, then add corn and peas and cook five minutes longer. This simple slow cooker meatball recipe my cousin shared with me.

Slow Cooker Meatballs 28 oz. ketchup 28 oz. beer Put in slow cooker and simmer while you make meatballs. 1 1 /2 pounds ground beef 1 teaspoon chili powder 2 tsp. parsley flakes 2 tsp. garlic powder 1 finely chopped onion ½ cup dried bread crumbs 1 egg Mix together and make into meatballs. Put on tray and cook twenty minutes in preheated 400F oven. When cooked spoon into slow cooker and cook for 3 hours. If anyone needs a cookbook for a stocking stuffer I have still some copies of the first cookbook Joyce Stewart and I compiled and the new one we bought out in the spring. They are $15 if mailed and $12 if picked up. All proceeds from the book go to Cancer Care Manitoba. After school yesterday I had a couple of high school girls here making Butter Tarts for a school project so thought it was a good time to try a meatball recipe I plan to use over the holidays.

Merry Christmas and a Happy New Year

18

Manitoba Charolais Bull-etin 2015

Slow Cooker Sweet & Sour Meatballs 1-2 pounds lean ground beef 1 or 2 eggs depending on if you use 1 or 2 lbs. of ground beef 1/3 cup bread crumbs 1 teaspoon salt ½ teaspoon pepper 2 teaspoons garlic powder 2 teaspoons onion powder 1 cup pineapple chunks, drained not crushed 1 red pepper, seeded, and chopped Sauce: ¾ cup sugar ½ cup apple cider vinegar (may substitute white vinegar) 2 Tablespoons soya sauce 1 teaspoon garlic powder ½ teaspoon onion powder ¼ cup ketchup ½ teaspoon crushed red pepper flakes (optional) 1 tablespoons cornstarch and 2 tablespoons cold water In a large bowl combine ground beef, egg, breadcrumbs, salt, pepper, and garlic and onion powder. Use your hands to mash everything together until the ingredients are well mixed. Roll the mixture into meatballs. Place meatballs side by side in a single layer in bottom of greased crockpot. Add pineapple chunk (without juice) and red peppers. Prepare sauce by whisking together sugar, apple cider vinegar, soy sauce, garlic powder, onion powder, ketchup and red pepper flakes in a bowl. Pour over meatballs in the crockpot. Cover and cook on high for 1-2 hours or on low for 3-4 hours. About 30 minutes before serving, in small bowl whisk together cold water and cornstarch. Pour into crockpot and stir. Cover and allow to thicken for about 30 minutes before serving. Sprinkle with sesame seeds if desired.

I made up the meatballs and cooked them in a 400F oven for 20 minutes on a tray. While they were cooking I made the sauce in my slow cooker. When the meatballs were cooked I put them in the slow cooker until we were ready to eat (a couple of hours). I thickened the sauce half-hour before we ate. This meatball recipe this is my favourite.

Gumdrop Fudge

1 ½ pounds white candy coating, coarsely chopped 1 -14oz can sweetened condensed milk 1/8 teaspoon salt 1 1.2 teaspoons vanilla extract 1 ½ cups chopped gum drops Line a 9-inch square pan with foil, set aside. In a heavy saucepan, combine the candy coating, milk and salt. Cook and stir over low heat until candy coating is melted. Remove from the heat; stir in vanilla gumdrops. Spread into prepared pan. Cover and refrigerate until firm. Using foil, remove fudge from the pan, cut into 1 –inch squares. Store fudge in an airtight container at room temperature. Yield 3 pounds. Next time I make this fudge I will use parchment paper instead of tinfoil as it was hard to remove the foil and when I make other fudge parchment paper has worked better. Merry Christmas and Best Wished for 2016 to everyone. Check out my blog http://joanairey1.wordpress.com for new recipes throughout the year.
