orn to the family of Alhaji Bukar Abacha in WulgoNgala Local Government Area of Borno State, Hajiya Amina Bukar Zanna Ibrahim is the fourth of 24 children. At nine, she was adopted by her uncle and his wife. She spoke to Tambari about her aspirations as a child, challenges faced, and her achievements in life so far.

ducational background I attended Wulgo Central Primary School, Yerwa Practice School, Maiduguri and Shehu Garbai Primary School, Maiduguri. I had my secondary education at Government Girls’ Secondary School (GGSS), Wulgo-Ngala, my home town in Borno State, from 1983 to 1988. From there, I proceeded to the University of Maiduguri, where I obtained a BSc in Economics. From there I went on to do my National Youth Service Corps (NYSC) programme at Habib Nigeria Limited, Katsina, during which I was posted to the credit unit in the Operations Department. I was posting and updating daily credit status of the bank’s debtors in the ledgers. I was also raising and posting debit and credit vouchers. Career After my NYSC programme ra amme I officially got employed in Habib bib b Bank, Apapa branch in Lagos, two before I o weeks w got married. I worked ed there for four years before resigning ng g to be a full time housewife from 1997 7 to t 2000. I started business in the year 2000, 20 000, buying and selling laces and veils. ls.. I also got a license to peddle kerosene ro osene and diesel from the Department nt of Petroleum Resources, Abuja. I was wa as supplying to companies, but the business bu usiness didn’t last. I registered my company, co ompany, Gambaraa Nigeria Limited im mited in 2004, and we started producing uccing yoghurt in January 2005 200 05 when we received an official license from the National Agency for Foods and Drugs Administration and Control (NAFDAC).

It was an idea from my husband who saw great potentials in the business. Initially, y I wasn’t wasn t interested in it, it but when I gave it a try I realized I liked it; so I developed a passion for it. I started Amira Yoghurt from my kitchen, with a daily output of less than five

liters. I had only one supply outlet. Today, we have 50 permanent members of staff, our own operational factory, thousands of liters of daily output, nearly a national supply coverage and 10 different range of products. I also registered another company, Gambaraa Property and Investment Limited in 2006, which is into real estate development. Challenges, especially as a northern woman in business There are several challenges when it comes to building up a business. The very major challenge I had was societal norms and culture. As a lady from the North, people are not used to a woman owning and running her own business. There were a lot of sidetalks, but I have been able to overcome that. Balancing home and work is also a major challenge. Staff dedication is another challenge - some of them don’t want to earn a living through honest means. Access to technology and training, poor enabling environment and competition from imported yoghurts, which were cheaper, better package and way ahead, fund and availability, are great challenges. Growing up My biological mum had four girls and five boys, but from my dad, we were 13 boys and 11 girls. Growing up was a mix of bitterness and happiness, just like other phases of life. It wasn’t much fun because I lost my mum at the age of six. My siblings and I were adopted by our grandmother. Again, when I was about 9 years old, my uncle and his wife (my mum and dad) took me away. The pain of separation from my loving grandmother and siblings was terrible. I ran away before I finally got used to them and settled. I was also bullied by my classmates every time I changed school. Once I settled, I started enjoying life as I was the first child in my uncle and auntie’s home. They brought me up lovingly and gave me everything a parent could ever give a child. Life’s lessons Life has taught me many lessons, some of which are to be grateful for all my blessings, celebrate all wins, be compassionate, believe in myself, not let anyone kill my dream, respect and have compassion for all, irrespective of their status. Aspirations as a child Honestly, as a child I was living an unconscious life. Until I started my business and reading books, I didn’t know what I wanted to become. I was just there like any other person, just being me. Fond memories I miss cycling a lot. I did that with my friends a lot, especially after school. We would go out on our bikes. I miss strolling and skipping. I miss being a child and being careless about everything and not feeling responsible for anything. My typical day The first thing I do when I wake up is, brush my teeth,

I also visualise my plans for the day, do some little house routine and assign responsibilities for things to be done at home, take my breakfast, then I leave for work. When I get to work I check the factory to see what they are doing. I check the numbers, the market and the orders we have, previous days’ sales. I also have a brief meeting with all the heads of departments. After work, I come back home, pray, then have dinner, gist, play with my family and retire to bed. Most cherished gift My children, they are from God (Allah) How I met my husband I met him at a friend’s wedding; my friend is his niece. I happened to be standing next to him at the wedding dinner party. After the party, the car I came in didn’t come back to pick me, so we all had to use the same car. We were many, we shared the same seat. Then a few months later I was in the hostel at the University of Maiduguri when my friends came giggling and said Zanna was here to see me; and the rest is history. This is unlike when I visit other countries; most times I have to combine all the prayers. It is a very beautiful place for business, relaxation, skiing, boating and sightseeing. Dubai is a multi-cultural place where everyone in all parts of the world is represented.

There are so many ways I relax, but the very typical ones include watching movies, listening to music, chatting with family and friends, sauna and spa. Best food I don’t have a best food; I love any meal that is nicely prepared. Definition of style Style simply means the way you express your inner self, what comes from within. It could be the way you dress, your colours, patterns and the way you carry yourself. I love wearing clothes that fit me, especially blouse and skirts sewn in our Ankara print.

What I wouldn’t be caught wearing I wouldn’t be caught wearing a short or revealing dress. Favourite fashion designer I have a fashion house here in Nigeria called Grand Atelier. I have never forgotten that, it has always been a guiding principle. ple e. Favourite sportt I go to the gym, but I don’t have a favourite sport. I love tennis, but I don’t play it a lot. However, when I play I feel very relaxed. Favourite colour Gold. I love the colour gold because gold is warm and beautiful. Gold implies grandeur, glitz, prestige, sophistication, elegance, success, triumph and achievements. Gold is also associated with riches, wealth, prosperity, abundance, love, compassion, courage and wisdom. Favourite weather I have appreciation for all weather conditions. Everywhere is green and beautiful during the rainy season, farmers are in business and crops are planted. When the weather is cool and the environment is calm, there is no need for air-conditioning. During the hot weather, crops are ready and we have crops and fruits of the season. The hot season is harvest for the farmers. And for those of us

To women who want to be in business I congratulate you because you are about to embark on the most fulfilling, rewarding and exciting journey in life. Failure is part of the process of winning, a stepping stone for success and a pause for redirection. It does not matter how many times you fail but how many times we get up after each failure. It takes passion, determination, resilience, persistence and tenacity to succeed in the business world. Be positive in every situation and always expect positive results. iving children the best treat can sometimes be hard. Many times one realises that recipes are being repeated; hence making meal times boring for kids. Children, as we know, love to have their meals looking colourful and attractive. As a parent, you also want them to have a healthy and balanced diet. This edition of Culinary Corner is aimed at giving you an insight to a three-course meal you could try out for the kids. Irish potato, chicken, shrimp, carrot, green pea’s porridge

INGREDIENTS Chicken Irish potatoes Carrot Green peas Shrimps Onions Seasoning Garlic Green pepper Salt Flour Tomatoes DIRECTION 1. Peel and cut potatoes to desired size 2. Chop onion, mince the garlic, then cut the green pepper, green peas, carrots and tomatoes to small pieces.

3. Cut chicken to small pieces. Place in a pot with seasoning and little water. Allow to cook. 4. Clean shrimps and add to the chicken. 5. When boiled together, add the potatoes. 6. Then pour oil in a pan, allow to heat, add chopped vegetables and fry. 7. After it is fried, add it to the chicken, shrimp stock and potatoes. 8. Mix flour with water, add to the mix, stir and allow to simmer and thicken.

Strawberry milkshake INGREDIENTS • Strawberry • Vanilla extract • Milk or yoghurt

DIRECTION Blend strawberries with vanilla and milk until it is smooth. Add ice cubes and serve.

SCANTY MENSES FOR TWO DAYS My period doesn’t flow well its normally four days but recently flow for two days and very scanty. My breast brings out milk and the colour is orange. I don’t know what to do. Mariam, Kogi State. The breast milk is likely due to hyperprolactinaemia which you need to treat. It is better to do hormonal assessment first before commencement of bromocriptine or any other appropriate drug. Concerning the scanty menses for two days instead of normal flow of four days, was there any preceding history of uterine instrumentation or dilatation and curettage? You need to do hysterosalpingograph (HSG). Uterine adhesiolysis either blind with folley’s catheter insertion or hysteroscopic adhesiolysis to determine what and where the problem is.

EVACUATION DONE THREE TIMES - WHAT NEXT? I have done evacuation three times now in the last two months yet my pregnancy test is still positive. Yet i have not met any man since the first evacuation. Do i still go for another evacuation or what do I do? Rose Gboko The probable diagnosis is gestatioal trophoblastic disease (GTD). You need to do serum beta HCG quantitative level. If it is high especially in thousands or hundred of thousands then it is GTD. Where this is not available urinary pregnancy test in serial dilution could be done and if it is still positive in 1/250 then it is a pointer. Subsequent management is better in a tertiary health institution like specialist or teaching hospitals. Chemotherapy would be required. I would advise you to see a gynaecologist as soon as possible.

EFFECT OF MASTURBATION Does masturbation have any side or medical effect? Troy, Kaduna It is documented in most series that masturbation does not have any medical effect. But there are cases where a person gets addicted to it that it gives more sexual satisfaction than relationship with partners which had brought strains on marital relationship. Also the psychological effect some experience because they could not stop could not be ignored. Otherwise no serious medical effect.

NO MENSES FOR TWO MONTHS Two months now my menses ceased. i was given primolut N and yet nothing happened. What do you advise me to do? Amina Have you been having irregular menses before? When did you take the primolut N because one may have to wait for upto two weeks after primolut N sometimes to see the effect. Just be patient a little bit more for about one or two weeks. If not then see your doctor preferably a gynaecologist.

Chef Stone’s culinary journey taking African food to the next level

From past events in various parts of the country, where were you best received? Is there any visit that stands out? I have been privileged to visit different parts of the country. Some of those times were to run culinary crash courses. Fortunately for me, I have been warmly received everywhere.

Any cooking hacks you want to share?

Abiola Akanji known as “Chef Stone” grew up in Lagos but was privileged to study in London where he worked part time in a couple of restaurants and picked up some of his culinary skills. His passion for food started at a tender age which gave him the drive to be where he is today. At 32, he owns a culinary school in Lagos and Abuja where he teaches individuals some of his acquired culinary skills.

W

hat made you start the Red Dish Chronicles? How long has it been in existence?

My passion for food started at a tender age. As a young boy I was always in the kitchen with my mum, where I picked up interest for food. I remember watching her on several occasions and I was intrigued by how swift she was at cooking and how she combined recipes. I knew this fascination was not to be ignored. Thus, I started experimenting with various recipes and perfecting the art of cooking, which birthed the dream to own a culinary school. I have been sharing this passion of mine with others since September 2013.

There are a handful of culinary schools out there, what makes Red Dish different? At Red Dish Chronicles Culinary School we pride ourselves on who we are. Passion is all we are about - passion for food, passion for the art of cooking, passion for developing new recipes, passion for training others, and passion for absolute excellence in all we do.

Where did you get your training? While I did my undergraduate studies in London I was privileged to work on a part-time basis in few restaurants and a couple of big chain supermarkets’ bakery department. I picked up some of my culinary skills there. I went further to improve my culinary skills at the French Culinary Institute in New York City, where I received more professional training.

What is the procedure for the online classes? We offer the option of taking the Continental Culinary Arts course online, which is quite flexible and takes about 6 to 12 weeks, depending on the student’s availability. Looking at the history of registration in your culinary school, which of the diploma courses has the highest number of students - African Culinary Arts or the Continental Culinary? What do you think drives this preference? A greater number of Nigerians are now making efforts towards improving their culinary skills. Having observed from the several trainees we had in the past, I would say the majority lean towards learning intercontinental recipes. My guess is that the majority can prepare some local delicacies by default. Nonetheless, at the Red Dish Chronicles Culinary School, we offer a variety of courses to suit everyone’s needs. We offer a continental culinary arts course (also available online), a baking and pastry culinary arts course, an African culinary arts course, a professional chefs programme of cuisine,, and a professional chefs programme of cuisine, baking u uisine, and pastry.

There is a plethora of cooking hacks I could share daily. However, the one I think would be most beneficial to the majority is how to avoid tears while slicing an onion. There is a link between the muscles in the jaw and the tear ducts that stops the tears flowing while you chew. Thus, simply chewing gum whilst cutting an onion can help avoid tears.

What is the next step for Red Dish Chronicles? Since the launch of the Red Dish Chronicles Culinary School, we have grown from strength to strength. My dream is for Red Dish Chronicles to be the number one culinary school in the country and in Africa at large. Thus, we are looking to go to different parts of the country. We recently opened a branch in Abuja, and I am glad to say it is one of the best decisions I have made.

Do you have a secret recipe or self-created “signature” dish? As a matter of fact, I have a self-created secret spice. Here’s the story behind the famous Chef Stone’s Secret Spice. This spice takes 21 days to brew, as I need to age it for 19 days, after which I beg the gods of spice to accept it. And in case where they do not, I start the process all over again. On a signature dish, I frequently experiment and create new recipes daily. One of my favourite signature dishes is my sautéed zesty chilli tiger prawns.

Do you have any advice for chefs-in-themaking and others who look up to you as a role model? Yes, the first thing g I would like to say is: believe in yourself and let the t passion drive you. Be eager to learn and d improve your skills; never think you know itt all. Be open to corrections, dre e take risks and dream big. Love what you do and work hard. hard d Don’t just sit around dreaming about success, work hard for it. Most su u importantly, comm commit m all you do to God’s hands. That is the key y to success.
