Seafood Pasta with Shrimp and Scallops (and Garlic!) Compiled by Nana Yahaya
S
eafood pasta with shrimp and scallops and lots of garlic is one of the fastest and most delicious meals you can make with pasta! If you love shrimp, scallops, butter and garlic, this seafood pasta is for you! It’s a beautiful weeknight meal that can be made in under half an hour, but the cooking time is half that! A buttery garlic sauce pairs with shrimp and scallops in this easy dish. Add some pasta and dinner is served! Ingredients · 1 lb (454 g) scallops, fresh or thawed · Kosher salt · 12 oz (340 g) good quality pasta · 3 Tbsp extra virgin olive oil · 8 large or 12 medium shrimp, fresh or thawed · 3 or 4 cloves minced garlic · chopped Italian, flat-leaf parsley · freshly ground black pepper · 3 to 4 oz (85 to 100 g) good quality butter · 1/3 cup (80 ml) seafood stock or broth (if you’d like) · (lemon slices/wedges to serve) Instructions Prepare the Scallops 1. Soak the scallops for 10 minutes in a brine solution (3 Tbsp Kosher salt in 16 oz water.) 2. Remove after 10 minutes and place on a rack to dry. Cook the Pasta 1. Next, put a large pot of well-salted water on to boil for the pasta. Once the pasta goes in, set a timer for 7 minutes before the pasta will be
ready (according to package instructions.) Make the Sauce 1. Make sure the scallops are dry. If they are not, pat them dry with a paper towel. When the timer goes off, put a large cast-iron pan on high heat and add the extra virgin olive oil. 2. When the pan and oil are very hot, add the scallops and sear them for about 1 1/2 minutes before adding the shrimp, garlic, and parsley. 3. Cook for another 2 minutes before turning the scallops and shrimp, and lowering the heat a little. Next, add the butter. 4. This seafood pasta sauce is probably the quickest sauce you can make! 5. Turn the heat down just to keep the pan warm, and add some freshly ground black pepper, if desired. Add the Pasta to the Seafood Sauce 1. Drain the pasta, which should be ready, but reserve a cup or so of pasta water. You will only need this pasta water if you want to add some after mixing everything. Add the pasta directly to the seafood sauce in the pan. 2. Stir gently to incorporate all the ingredients together. Add some of the reserved pasta water, if desired, then top with a twist of lemon in the pan. Serve immediately as this seafood pasta dish is best piping hot. arbuds are a common 21st-century convenience. They allow us to listen to, music, podcasts, even movies and television shows, without disturbing the people around us. But etiquette, and even safety issues, occur when you use those earbuds to tune out from the world. There’s a time to escape and there’s a time to participate. It’s helpful to know the difference. The Need for Earbud Etiquette Having music or entertainment is nice when you want to pass the time and not disturb others. But wearing earbuds demonstrates that you are not interested in the conversation around you. Earbuds are fine when it is not necessary to participate after you’re seated on a bus, train, or plane, in the library, when sitting alone in a coffee shop, or when walking (unencumbered, of course, and when you can listen and still observe your surroundings). However, there are occasions when earbud etiquette indicates you should avoid using them: · During dinner with family and friends · In a classroom · In a worship house · Attending a concert, performance, or lecture · Walking your dog · Walking or driving in an unfamiliar area · In the company of others to whom you should be giving your attention Tuning out has its advantages. But it is very important that you don’t do it so often that you tune out other people. Escaping from social interaction does more harm than you think. When you have the opportunity, engage in conversation with someone. You never know what you may learn, or what sort of bond you might build. Tuning Out at Work Productivity is the primary objective at work. Many office environments today encourage collaboration and “open door” policies. To that end, many companies are designing offices with open desk areas, low-walled cubicles, and glass walls. While every job requires some head-down time to concentrate on writing a report or email communication, an open environment makes this more challenging. And so, many workers are turning to earbuds or noise-cancelling earphones for help. However, research on listening to music while doing work that requires concentration proves this counter-productive for the most part. Unless you are listening to instrumental music, you may be doing yourself - and your employer and co-workers, a disservice. Many times, co-workers complain that folks using earbuds during work hours are non-responsive when needed. Etiquette dictates that if you feel using earbuds or earphones at work helps your productivity, keep the volume at the lowest setting to work and give attention to those around you when necessary. Compromise is key here. Don’t Forget Hygiene! Face it, there are some tunes that need to be shared. But do you really want your earbuds in someone else’s ears? Bacteria can be powerful when allowed to colonize. And an earbud in the ear is the optimum environment to encourage this. Use discrimination when sharing your earbuds. If you simply must share a piece of music or spoken word you’re listening to, consider playing it through the device speaker. Earbud etiquette is necessary for our technology-driven 21st century. 10 Natural Dry-Skin Remedies You Can DIY at Home

our kitchen, not the drugstore, may hold the secret to achieving healthy, vibrant skin. The list of culprits that can cause dry skin is a long one, from daily bathing habits (think hot showers and scrubbing yourself dry with a towel) and wicked winter weather to a lack of natural oils in your skin as you age. The good news is that you don’t necessarily need to visit a dermatologist to heal your dry skin. Instead, consider adding a natural remedy to your skin-care routine at home. In fact, the ingredients for these dry-skin remedies might already be in your kitchen. Natural oils and remedies tend to be pure, Dr. Poblete-Lopez says, which makes them a better choice for many people. “Other over-the-counter products can have a ton of ingredients in them — they not only contain the active moisturizing products, but they also have preservatives.” That’s often the case for water-based products. These, along with products that contain alcohol and fragrances, can cause irritation or an allergic reaction, or dry out your skin. It’s often a good idea to keep it simple when it comes to beauty care, especially for people with allergies or a very sensitive complexion. Unlike water-based lotions and creams or those containing preservatives, pure oils have a natural base, making them great dry-skin remedies. 10 Natural, DIY Remedies to Moisturize Dry Skin A simple way to use your favourite oil (in its purest form) is to drizzle it into warm bathwater. You can also try these natural remedies: 1. Whip Up an Olive Oil Cleanser to Soothe Dry Skin A great natural oil to use is olive oil, which works as a natural cleanser and moisturizer, says Brandy Crompton, a licensed aesthetician and former manager of LeBliss Salon and Spa in Louisville, Kentucky. “Just rub the oil into your skin and drape a warm, damp cloth over your face until it cools,” Crompton says, “then wipe away the excess oil.” Olive oil is a good choice as a cleanser because it won’t strip your skin’s natural oils, but it will clean your skin, she adds. 2. DIY a Rich, Creamy Avocado Mask Creating a homemade mask of avocado is another natural way to soothe dry skin. Crompton suggests pureeing half an avocado and mixing it with 1 teaspoon (tsp) of olive oil; you can also add 1 tablespoon (tbsp) of honey for very dry skin. Apply the mask to your face, leave it on for 15 to 20 minutes, and then wash it off. Your skin should feel moisturized, but you can double up on the hydrating effects by applying your regular moisturizer as well. 3. Make a Natural Olive Oil and Sugar Scrub Create a naturally moisturizing exfoliating scrub using a combination of olive oil and sugar. Combine ½ cup of sugar with 2 tbsp of olive oil,

Create an Easy Oatmeal Soak to Calm Your Skin Adding a cup of oatmeal to a warm bath can naturally rehydrate dry skin, Poblete-Lopez says. “The oat product itself is soothing,” she explains, and it helps your skin retain moisture from the bathwater. 5. Exfoliate Your Face With a Homemade Oatmeal Honey Mask Oatmeal also makes a great exfoliator or mask. Mix 2 tbsp of oats with 1 tbsp of honey and a dash of water. Crompton suggests warming up the mixture, then rubbing it into your skin. You can use it just to exfoliate and wash it off right away, or leave it on for 15 to 20 minutes as a soothing, hydrating mask. 6. Apply Coconut Oil Before Bedtime “Coconut oil becomes a solid at room temperature, so use it as a moisturizing cream at bedtime or anytime,” recommends Tsippora Shainhouse, MD, a boardcertified dermatologist at SkinSafe Dermatology and Skin Care in Beverly Hills, California. “For chapped heels and hands, apply the oil, then layer with thick socks or non-latex gloves.” RELATED: The Best Anti-Aging Creams to Add to Your Skin-Care Regimen 7. Add Your Favorite Oil to Your Bath “Natural oils are great for moisturizing the skin and helping to re-create the natural skin barrier, which is often damaged by frequent hand and face washing with water and drying soaps that strip the skin of its natural protective oils,” Dr Shainhouse says. Aside from olive oil or coconut oil, you can test out other natural oils that are free from irritants, including jojoba, argan, and avocado oils. To use, Shainhouse recommends adding a few tablespoons of the desired oil under

Shainhouse recommends using these compresses on your skin for 5 to 10 minutes at a time. It’s especially helpful for irritated skin that’s itchy, too. Lactic acid can sting cracked skin, though, so use with caution, per Harvard Health Publishing. 9. Consider a Fruit Enzyme Cleanser or Exfoliant Fruit enzymes can be lifesavers during dry-skin season. “These alpha-hydroxy acids are great for gently exfoliating the superficial layer of dulling dead skin cells on the face and body,” says Shainhouse. She recommends using a fruit-enzymeinfused wash or mask twice per week. Some good fruit enzymes to look for include pineapple, pumpkin, and papaya. 10. Apply Aloe Vera to Dry, Irritated Skin While often thought of as a remedy for sunburn relief, aloe vera gel can be helpful during the dry winter months, too. It works by alleviating redness and irritation related to excess dryness, and it can even decrease signs of ageing, as well as acne breakouts, according to previous research. But Shainhouse cautions that some people can develop allergic contact dermatitis to aloe, so you may want to perform a patch test first before applying it to a large area of skin. www.everydayhealth.com DID YOU KNOW...

CAUSE AND MANAGEMENT OF HYPOTHYROIDISM I had a small neck swelling and my doctor recommended some tests be done. The results showed that I have hypothyroidism. Hypothyroidism occurs when the thyroid gland is not producing enough hormones. Causes of hypothyroidism include; Autoimmune disease, radiation therapy, thyroid surgery and certain medications. Hypothyroidism can occur when there is low iodine intake and during or after pregnancy. For women with hypothroidim during pregnancy or after, development of auto antibodies can be the cause. The most common cause in all ages is autoimmune disease known as Hashimoto’s disease. At the initial stage, hypothyroidism is asymptomatic, that is usually no symptoms. But if left untreated or poorly managed, symptoms could include: Increased sensitivity to cold, constipation, dry skin, weight gain, puffy face and thinning hair. Other symptoms include: weakness, depression, impaired memory and enlarged thyroid gland (goiter). The enlarged thyroid gland is one of the reason that quite a number of patients report to the doctor. This occurs in an effort by the body to force the gland to produce more hormones since it is low in the serum. Long time hypothyroidism can lead to complications like obesity, infertility and irregular menses which can be heavy otherwise called menorrhagia. For women of reproductive age group hypothyroidism should be properly managed to avoid the problem of infertility. For the hypothyroidism with a known cause, treatment of this can ensure cure. In most cases like autoimmune disease, appropriate hormone replacement therapy, which are available in tablets can achieve adequate management for a normal lifestyle. Kindly see an endocrinologist.
