Dear readers, This December, we’re focusing our issue not just on the glory of Qatar and how much we’ve all achieved this year, but also on the beauty of Qatar and the many cultural aspects of our beloved country. This month brings the Qatar National Day, also known as Al-Yaoum al-Watani, held annually on the 18th of December. Qataris and expats both young and old celebrate another year of success, unification and development within each sector of business, and we at ABODE Magazine, couldn’t be more proud to be a part of it. As we now prepare to conclude 2015, ABODE Magazine would like to congratulate the Emir of Qatar, His Highness Sheikh Tamim bin Hamad bin Khalifa Al Thani, on guiding Qatar through another prosperous year, Her Highness Sheikha Moza bint Nasser on her continued efforts to support education through Qatar Foundation and driving forward the citizens of our beloved country, and Her Excellency Sheikha Al Mayassa bint Hamad bin Khalifa Al Thani, for her outstanding achievements as Chairperson of Qatar Museums, Doha Film Institute and Reach Out to Asia. This December issue features the most current fashion trends, the Resort 2016 collection, and we forecast the upcoming year’s style, showcasing the best of what New York, London, Milan and Paris have to offer.

from the desk of the Chairman December 18th marks another National Day in our beloved Qatar and, at such times, we must pause to look back at our country’s successes in the past year. In the January 2015 edition of ABODE, I stated that Qatar is developing its reputation across the world as a centre for sports, knowledge, business, culture and education, and I believe that our country has succeeded in spectacular fashion over this past year. Firstly, I would like to pay tribute to His Highness Sheikh Tamim bin Hamad Al Thani, Emir of our beloved Qatar. Although our achievements as a nation have been supreme this year, they would not have been possible without the wise leadership of His Highness who has striven to ensure continued prosperity and stability for Qatar in these challenging times. This last year has also brought with it a host of exemplary achievements in Qatar’s arts and culture development. In the earlier part of the year, residents of Qatar visited the Qatar Museums Gallery, Katara, to see the For Them charcoal portrait exhibition of revered Arab painters and sculptors by Iraqi artist, Ismail Azzam. And, currently, the Intolerance exhibition by world-renowned Belgian painter, Luc Tuymans, is drawing large crowds of excited art aficionados to the Qatar Museums Gallery, Al Riwaq. ABODE has also been proud to promote Qatari fashion culture throughout our pages this last year, making a name for ourselves in the world of style, interviewing Muna Saad Al Sulaiti about her haute couture designs, and Maha Al Mannai, founder of fashion abaya boutique, Dar Aldazah. Next year, and in the years to come, ABODE will continue to do its part in supporting the Qatar National Vision 2030 which aims to further our nation’s advancements and transformation, fostering our capacity of sustaining our own development and providing a high standard of living for future generations. Our magazine has always championed two pillars of that Vision, Human Development, promoting an educated and healthy workforce and Social Development, emphasizing the importance of family and the emerging role of women in our society. So, on this National Day, I wish all of you a wonderful holiday in the spirit of celebrating our past, present and future in the country that we all love and call home, Qatar.

e’ve all heard stories of heroism, tales uttered only amongst the few who bore witness to a man who was more generous than ever imagined, more humble than words can begin to express and one of the most fearless men that was ever born, a man who guided the small State of Qatar to the new world. Some say that when Sheikh Jassim took over the ruling of Qatar, he built the first trade harbour which lead to better pearl trade, more jobs, bigger villages, and more people being attracted to Doha’s thriving trade. He was young, religious, and believed in the unification of the tribes in the peninsula to what we know and love today, Qatar. You may not know what the colour of the flag represents and how it adds to the uniqueness of Qatar but to the Qataris, the colour means much more than the eye can see and perceive. Many years ago, a specific kind of seashell was coloured in a unique shade of red called 'Leda’am' and was found only on Jazirat bin Ghanim island off the coast of Al Khor city. The locals used to extract the colour from the shells to dye their clothes. It is also known from the Hadith that the Prophet Mohammed (PBUH) wore a coloured cloth from the peninsula of Qatar for the last prayer that he recited before he died. This Hadith prompted Sheikh Mohammed bin Thani, the father of Sheikh Jassim bin Mohammed Al Thani, the founder of Qatar and who fended off the Ottoman army in the late 19th century, to call for unification of the tribes living in Qatar, all of whom had a flag of their own, to unite under this unique colour. At the time, this made for an incredibly strong front for the army and brought together a country that would grow into present day Qatar. We are people who put God first, invest in our families, appreciate our friends and are dedicated to making Qatar a wonderful place in which to live. We take pride in our harbours, our Corniche, our souqs, and our picturesque beaches and parks and welcome expats into our country with open arms, excited for them to experience the many wonders it has to offer. We've compiled a list of places for you to visit during the national day month and we hope that while you're there, you'll take the time to savour our great land, and everything it has to offer. Al Zubarah Fort

A UNESCO heritage site, the fort is regarded as one of the most important heritage sites in the country. Our dry, sandy environment has helped in preserving Al Zubarah as well as many other heritage sites. The fort dates back to the 18th Century as it flourished in the Gulf as a pearling and trading hub.

Ever heard of Al Jassasiya, one of the most mysterious places in Qatar? The site was first discovered in 1957 and is believed to date back thousands of years. Upon a series of hills overlooking the Arabian Gulf, you will find the most unusual carvings of fossils, boats, scorpions and those depicting the outlines of turtles. The site is always open with no fees, located in the northeast of Qatar, 75km from Doha, Madinat Al Shamal.

Souq Waqif Al Wakrah

The souq stretches approximately 3km along the town’s coast with a lovely corniche where you can enjoy a meal at the variety of restaurants available. A perfect destination for family and friends.

After graduating in 2003, he went on to win ‘Fashion Fringe’ in 2004, and moved ship to New York, doing a stint working for Diane von Furstenberg. London however, proved to be his true place of calling and in 2005, he presented his first collection under his own name, Erdem.

My collection is not for a young girl looking for the next big thing; it is for the woman who has self-confidence and wants to look good for a special occasion.

With numerous awards and accolades under his belt, stars gracing the red carpet wearing his coveted designs and showcasing his highly anticipated collections to packed out audiences at Fashion week, it’s safe to say that this is a man who knows what a woman wants. "The Erdem woman has remained the same, she has never been concerned with being cool," he muses. "She's quite seasonless, in a way. She's a woman who does what she wants and is strong. It's a distinct idea of a woman I have in my head, but it's almost an imaginary figure that happens in the process of creation rather than at the end." Saudi Arabian designer Reem Al Kanhal has always believed that fashion is more about how it makes a person feel inside than an apparent aesthetic. From ladylike skirts and dresses to flowing pants and tops, Reem dedicates her work to strong and independent women who are aware of their femininity and willing to express their true elegance and class.

Chinese designer Xiao Li studied fashion at the Royal College of Art and at the London College of Fashion. A knitwear specialist, she has worked with acclaimed designers such as J.W. Anderson, Alexander McQueen and Anya Hindmarch. In 2013, she won the prestigious International Talent Support Award that included temporary work experience at Diesel. Her work has been showcased at various fashion weeks, including London and Hungary. Most recently she was selected as a finalist for the LVMH Fashion Prize 2015.

English-born Lee Wood showed his interest for fashion and design after graduating from Berkshire College, London, with a diploma in art and design. After 16 years of working alongside Donatella Versace, Lee decided to give life to his own personal aesthetic with L72, a label that plays with minimalism while merging streetwear elements with the sartorial tradition to create a contemporary look rigorously made in Italy.

Born and raised in Vienna, Austria, Arthur Arbesser is internationally known as one of the most promising new designers in the Milanese panorama. He studied fashion at Central Saint Martin’s College in London, during which time the prolific art scene absorbed him and allowed his own aesthetic to flourish. Upon graduation, he moved to Milan to work for Giorgio Armani, where he stayed for more than seven years. During Milan Fashion Week in February 2013, Arthur launched his namesake womenswear label; in June 2015 he was part of Pitti Italics project at Pitti Uomo.

A German designer based in New York City, Melitta Baumeister graduated from Parsons The New School For Design with a Masters in Fine Arts. Not long after, in February 2014, she launched a womenswear line under the 'Vfiles' platform during New York Fashion Week. Her work has been described as a constant conversation of her desire to explore the possibilities of tomorrow; celebrities such as Rihanna and Lady Gaga have also worn her designs. Discovered by the Dover Street Market (DSM), her collection is currently sold by DSM New York, London and Ginza, and her business continues to spread internationally.

Atelier Krikor Jabotian was founded by Krikor Jabotian when he was just 23. A talented designer who started his professional career as a member of Elie Saab’s creative department just days after he graduated from l’Ecole Superieure des Arts Techniques de la Mode in Beirut, Lebanon. Krikor’s independent career began when his elegant designs were selected and showcased by STARCH, a non-profit organisation founded by Maison Rabih Kayrouz.

Fashion Lectures by Christian Louboutin Further strengthening a culture of fashion education, VFDE 2015 featured Fashion Lectures hosted by the leading names in fashion. ABODE brings you notes from the session led by Christian Louboutin, Founder and CEO of Louboutin. The sessions were moderated by Jessica Michault, Editor-in-Chief of Nowfashion.

S

ince bursting into the fashion world in 1991, Christian Louboutin has become the label of choice for red carpet stars and women across the globe. Instantly recognizable by the signature red lacquered sole, Louboutin stilettos have been seen on the world’s most fashionable A-listers for over 20 years. Winning the Luxury Institute’s Most Prestigious Women’s Shoes award from 2007 through to 2010, the designer is arguably the most popular shoe brand in the world. How have you blossomed into such an iconic brand Mr Louboutin? Well, I was born and raised in Paris and have always had a passion for shoes, I have always admired the way women move. It all started when I was young, I would gaze at dancers as they maneuvered around the room, they were always wearing high heels and that changed the way they danced. My sister was a dancer and had great legs, this had a huge influence on me as a designer. The transformation of a woman wearing high heels is impressive and makes a big difference, the shoes completely enhance and reshape the body and change the body language. What is the design process that goes into making one of your creations? For me, it all starts with a pen and a piece of paper. I need to focus myself and concentrate on creating the collection. I always go to a familiar place and stay there for at least 2 to 3 weeks during the design process and if I am designing a summer collection I'll go to a warm place like Egypt or Rio de Janeiro. If it’s a winter collection, I'll go to a cold place like Switzerland or Germany. I am heavily influenced by the climate around me as I design and really need to be by myself during this time. How did you come to create a cosmetics line? I started to design my shoes 23 years ago and have always stuck to shoes. I wanted to concentrate and focus on that but for many

different reasons beauty has always interested me, I can see there is a relationship between makeup and shoes. I like women who are in charge, women that know how they want to look. I design for these kinds of women and I think beauty is very important for them too. So I launched the first line of lipsticks and nail polishes and have been working on this project for the last 4 years. What has been your biggest mistake so far in your career? When you are a designer, creativity is key, so you should keep your full integrity at all times. So, my biggest mistake is when I design something and it's what I want and then I listen to other people out of respect. It's a big mistake listening to other people's advice against your own so I have learned that you should never alter your original design. If I follow my original designs it all falls into place. Why does Louboutin never advertise? I never thought of advertising and everybody is different. Advertisements come from the world of marketing and for a marketing person they first need to create an image or brand and then a product. I am a designer, I like to design shoes, my tools are designing beautiful shoes and having beautiful women wear them. So women wearing my shoes are my best advertisement. How would you describe women from the GCC countries? When people say women from the GCC are different because of their nationalities or culture, I disagree. Women in Dubai are very detailed, they look at every single detail, very feminine and for me it is very easy to design for this kind of woman. Do you have any advice for young designers? My advice is to follow your own way and before you focus on the fashion industry, focus on what you like. Focus on finding your true identity and everything else will follow. It's important to be on the side of creativity instead of becoming a part of a franchise world.

The JewelS of Nusantara International Indonesian designer Dian Pelangi presented her latest collection 'The Jewels of Nusantara' at the 8th Heya Arabian Fashion Exhibition last month.

T

o experiment with the trends and tastes of the Middle Eastern market, Dian’s designs incorporated the modified Kaftan and Jalabiya’s silhouettes to add to the elegance and sophistication of the wearers.

As a modest fashion house established since 1991, Dian Pelangi is fluent in a diversity of Indonesia’s culture that also displays her unique take on Islamic values and modernity.

For the 8th HEYA Arabian Fashion Exhibition, Dian Pelangi presented an outline of the kaleidoscopic motifs of Indonesian materials, especially Batik, beadings and weavings. The Jewels of Nusantara represents the rich legacy and tradition of the archipelago or locally known as the Nusantara, hoping to push the boundaries between nations, genre and style by combining it with the Middle East’s silhouettes. Every garment is carefully hand-made, each finished by talented, local artisans, living at the heart of Batik, manufacturing in Pekalongan, Central Java. The Jewels of Nusantara collection is a fashion statement that features the Indonesian history, culture and originality, best-suited for those who appreciate the finer things in life, the ardent fashion aficionados who seek for an emotional component that extends beyond mere high fashion luxury.

Rani Zakhem is an incredibly talented Lebanese designer with a buzzing atelier based in Beirut. We sat down with the couturier during his highly anticipated visit to Fifty One East in Lagoona Mall this past October and found out a little more about the man behind the label. 36

BODE: You grew up in Kenya between Mombasa and Nairobi until you were 10. What brought you and your family to Africa? RZ: Well, I was born in Beirut and moved to Kenya when I was very young. Our family business is in construction and pipelines and so my father was based there. It was a very beautiful place to live, all the colours of the surroundings really inspired me. Kenya, in general, was just such a joyful place to grow up in.

ABODE: How are your designs inspired by this time spent in Kenya? RZ: I have a lot of vivid childhood memories of time spent on the beach in Mombasa. The azure blue of the water was absolutely beautiful. The fauna that used to creep up our walls, the Bougainvillea, Flowers of Paradise and the Orchids all bloomed with colours, even the fruit trees inspired me. When you're a child growing up and you experience these colours it really stays with you. ABODE: Your designs are inspired by Kenya's beauty; did you feel this collection was a homage to that? RZ: Absolutely. I wanted people to experience a little bit of the beauty in Kenya through my designs and I wanted to spread the beauty I was touched with. I feel I want to give back a bit and say my own personal thank you. I hope this showed through in my collection. ABODE: You studied interior design but pursued a fashion design career. Why the sudden change between the two design outlets? RZ: In my opinion, there is no difference between fashion

and architecture because architecture is all about lines and geometrics. 3D elevations and top and side views are all connected and fashion is the exact same thing, only on fabric. To be able to create a dress, you need to be able to have 3D vision, to see the design come to life from each angle. It's 2D that slowly evolves into 3D. I have a large atelier in Beirut with incredible seamstresses who all help to create amazing collections. I really couldn’t do it without them. ABODE: What kind of woman do you design for, Rani? RZ: I design for a very social woman, a worldly wise woman who travels extensively and is well read. A very educated woman who loves to dress up on every occasion is my ideal power woman. Someone who is elegant and modern but at the same time has an edgy twist, she is sensual without being too suggestive. ABODE: Your designs feature rich, intricate workmanship that has been beautifully translated into your couture gowns. Do you have any interesting stories of how some of them came about that you would like to share with us? RZ: Sometimes mistakes I've made turn out to be my best work. My original plan can sometimes go wildly out of control but it can turn out to be one of my bestsellers. For example, a design I was working on did not go the way I had planned at all, it was a floral gown from a few collections ago. It turned out to be the dress Kaley Cuoco wore to the 71st Annual Golden Globe Awards in 2014 in which she was a nominee. Ladies still request that dress, it's always on re-order and flies all around the world. That dress has been to more countries than I have!

Chiffon, because it drapes to showcase my collection in Rome was such an honour. That is beautifully. Tulle, because it gives you that texture that is needed the biggest so far. I felt at first it was a joke, but as time went on for added elegance and lace and Swarovski crystal embroidery I realized I had indeed been invited and I then had 2 months to are among my best materials to use when I design. Seven years ago, Doha opened its doors to iconic fashion brands from all around the world. Now, there are a plethora of sophisticated trends booming in the country, and not just for the ladies, but for the men too. As ABODE explores men’s fashion and what Qatar has to offer the fashion-forward youth of our country, Boggi Milano springs to mind. Epitomizing the contemporary man of today, Pietro Rizzi is Head of the Product Department and Creative Designer to the brand. We sat down with him to find out why men are ‘casting their lots’ on Boggi.

P

ietro Rizzi started his career in the luxury apparel industry when he joined Ermenegildo Zegna, a powerhouse in men’s fashion with more than 550 mono-brand stores around the world. During his apprenticeship at Zegna, Rizzi specialized in the product department and was exposed to all the facets of product development.

In 2006, Rizzi stepped up a notch and joined Boggi Milano. Armed with 18 years of experience in the industry, he further polished the products, style and quality which now characterizes the brand. He was able to demonstrate his acute ability to push a brand forward and today, he’s the Head of the Product Department of Boggi’s formal line, the core business of the brand. Nine years after joining the company, Rizzi has evidently raised the bar, with Boggi having 50 stores open at the time, to now having reached 130 stores worldwide, with more branches poised to be opened in Qatar over the next few years. They are also preparing to penetrate the market in the United States, Amsterdam, China and Malaysia. ‘‘The DNA of the brand, of course, is the formal brand absolutely,’’ said Rizzi. ‘’It is done with detail; we study every collection and produce new designs constantly. We approach the best mercers who stock the highest quality of fabrics like cashmere, silk and wool.’’ From Rizzi’s point of view, the company’s objective is to deliver the best quality that transcends the amount tagged on the product. The materials used are luxurious, the silhouettes classically bespoke and that’s how they intend on keeping things at Boggi in the years to come.

Things needed: A comb, a few hairpins, hairspray and rubber bands Plait many braids in different sizes and directions in your hair (a little bit loose). Loosen the braids by pulling gently at each plait. Style the braids according to your liking then secure it with a pin.

Low Messy Bun with Hair Piece Things needed: A brush, a hair piece, a few hairpins and hairspray Part the hair sideways. Fasten lots of pins in a cross direction around the head. For the remaining hair, part it into two and roll the hair and secure it with pins (make sure the pins are fastened ‘inside’ the hair), repeat on the other side.

rowing up, when people would say to me ‘You are what you eat’. I would think, that’s really stupid, I am not French fries. But as I’ve continued my journey towards healthier living, I’ve realized that perhaps there may indeed be some wisdom in that phrase. After all, everything that you put into your body becomes a part of you, both the healthy and unhealthy. The more nutritious, whole foods you eat the better your body will function, and the more energy you will have. On the other hand, by filling the body with processed foods full of salt, refined sugars, and unhealthy fats, energy levels fluctuate, the body doesn’t function as well, and long-term use can lead to organ damage, obesity, diabetes, and other health ailments. One way to make sure that your body is getting all the nutrition that it needs is by incorporating more ‘superfoods’ into your diet. Superfoods are nutrient-rich foods that contain especially high levels of vitamins, minerals, and antioxidants. Here are a few that are great for your health and easy to integrate into your diet.

Goji berries

Goji berries (also known as wolfberries) are small, reddish-pink berries that grow on a shrub native to China, Tibet, and Mongolia. Used in Chinese traditional medicine for thousands of years, this nutritional powerhouse has become increasingly recognized in the West as a valuable addition to a balanced diet.

Health benefits: These berries are packed with antioxidants which are substances that protect our bodies from cell damage and help prevent disease. They are also high in Vitamin A which helps maintain vision, skin health and boosts the immune system. Goji berries are said to help combat fatigue, improve circulation, and some studies have even shown them to inhibit tumor cell growth in certain types of cancer. Suggested uses: Usually sold dried, Goji berries are sweet, but tart. They make a great addition to smoothies, granola, yogurt parfaits, or trail mix. They can also be baked into bars, cakes, and muffins, or even sprinkled on top of savory soups and salads.

Kefir

Kefir is an ancient drink from Eastern Europe made by adding Kefir grains to milk and allowing it to ferment. The result is a thick, yogurt-like drink with a rich, tangy taste. Health benefits: Kefir is one of the most potent probiotics available, with more than 30 strains of healthy bacteria and yeast that aid in digestion and weight management. With its high calcium and Vitamin D content, Kefir helps maintain bone density and prevent osteoporosis. Kefir may also be digestible to those with lactose intolerance as the healthy bacteria in kefir break down the lactose in the milk. However, if you have a strong lactose allergy, be sure to test your tolerance to Kefir with a small drop on the skin before consuming. Suggested uses: Kefir is best consumed in the morning to line the stomach and intestines with the helpful bacteria and yeast that will aid in the digestion of food over the course of the day. It also makes a great evening snack to help curb the appetite. It can be drunk on it’s own, poured over cereal and granola or blended with fruit to make a smoothie.

Chia

Chia seeds come from a plant native to Mexico and Guatemala that is part of the mint family. Used by the Mayans and Aztecs as a staple of their diet, this tiny seed was revered for the sustained energy it provided.

Health benefits: High in fiber, Chia releases starch slowly, balancing blood sugar, maintaining a sense of fullness, and providing long-lasting energy. Chia is also an excellent source of high-quality protein making them a great option for vegetarians and vegans. In addition to this, Chia is also a great source of antioxidants and omega-3 fatty acids which help reduce cholesterol and inflammation. Suggested uses: When put in a liquid, Chia seeds absorb up to 12 times their own weight, giving them a texture somewhat like tapioca, and making them a great base for puddings. Use coconut milk or a nut milk and soak the Chia seeds overnight until the liquid is absorbed, adding sweeteners and flavorings of your choice. More liquid can be added if you want to create a Chia juice or tea. The seeds can also be sprinkled on cereal, granola, and yogurt and added to porridge and smoothies.

Assume a reverse lunge position with your left leg extended backward and body straight. Now bring the leg forward at great force to a leg-raise position, leaping off the right leg as well to launch your whole body vertically in the air like a rocket. Try to get as high as possible.

Lie on the ground in a low plank position with your hands under your shoulders and your belly touching the sand. Push up from the ground and jump into a squatting position with the right leg in front of the left, as if you’re balancing on a surf board. Remember to squeeze your glutes and engage the core! Return to the original plank position and repeat with your left leg in front of the right for the surf stance.

VEGETABLE SOUP Ingredients > 1 Potato > 2 Onions > 2 Squash > 1 Tomato > 2 Green Chili Peppers > 1 Red Pepper > 2 Carrots > 5g Mashed Garlic > 20g Ginger > 1 tsp. Chili Paste > 2 tsp. Butter > 2 tsp. Vegetable Oil > A pinch of Salt, pepper, cardamom, red Chili pepper

Procedure 1) Cut the vegetables to small cubes. Put the butter and oil into the cooking pan and sautĂŠ the onion and garlic, mix them well. 2) Add the rest of the vegetables and mix them until it develops a golden colour. Then pour the vegetable stock and spices and chili pepper into the mixture and let it cook well.

3) Serve it with fried bread.

GRILLED HAMMOUR FISH Ingredients > 1kg Hammour Fish > 12 Lemons > 12 tbsp. Olive oil > 1 Salt & Pepper

Procedure 1) Clean and wash the fish. 2) Marinate the fish with olive oil, salt, pepper and lemon slices and let it marinate for an hour. 3) Grill the fish to perfection and arrange it in the centre of your serving plate. 4) You can serve with salad, rice or soup and other accompaniments such as lemon sauce or chili sauce. 5) The traditional way to serve this is with rice and fried nuts.

HAREES Ingredients > ½ kg Lamb Meat > 100g Lamb fat > 2 cups whole wheat flour > 2 lt Meat Stock > 50g Ghee > 50g Butter > Salt, pepper, cumin, cardamom

Procedure 1) Put the whole wheat in the water; for best result let it soak overnight. 2) When the whole wheat is soft, boil it in meat stock to add flavour. 3) Meanwhile, mix and combine the lamb meat, fats with ghee and butter and mix until cooked. Add the spices.

Main Dish

4) When both ingredients are mostly cooked, mix together the wheat and lamb meat and all the spices.To make it softer put it in the mixer. 5) Serve it.

SAGO Ingredients > 2 cups Sago > 2 cups water > 2 cups milk > 1 cup condensed milk > 2 tbs. honey > 3g Saffron

Procedure 1) Boil a small pot of water. When the water is boiling, add the sago. Reduce heat and simmer for 10 minutes then add milk, condensed milk and honey, mix them well until it's cooked. 2) Put the saffron in hot water for 30 minutes then strain and add the saffron water in the sago mix. 3) Plate and serve it cold.

Get your stomachs rumbling with Prime's Chef de Cuisine, Morad Benmchich, as he lets us in on his best-kept culinary secrets.

Ingredients > 5 cl olive oil > 15 sage leaves > 12 slices of streaky turkey bacon > 6 garlic cloves > 2 onions > 2 sticks of celery, finely chopped > 150 gm of bread crumbs > 80 gm of dried apricots, roughly chopped > 300gm minced veal > Zest of one lemon > A pinch of nutmeg > 1 large egg > A pinch of salt and pepper > 1 turkey, approx. 6 KG > 12 small sprigs of rosemary > 2 carrots > 1 large orange > 60g plain flour > 1l chicken stocks

Procedure 1) Preheat the oven to the maximum setting. 2) Start the stuffing. In a saucepan on a medium heat, add olive oil. Then add sage leaves, two peeled and chopped garlic cloves, a finely chopped onion and the celery, soften until brown. 3) Take the saucepan off the heat and add breadcrumbs and apricots, and leave to cool. 4) Add your veal mince, lemon zest, nutmeg and egg to the saucepan. Season with salt and pepper before mixing well. 5) Now make a start on the turkey. Give it a wipe on the inside and outside with kitchen paper (never wash it in the sink as this spreads bacteria around it and on kitchen surfaces). 6) Take the remaining garlic and peel and cut into thin shards. Take the rest of the bacon and halve the slices lengthways and then cut into 5cm-long rectangles. Take a small sprig of rosemary and roll the garlic and rosemary tightly (a bit like wrapping sausages in turkey bacon). Repeat until there are 12 little parcels. Create six holes in the thighs of each leg and push the little wraps into the slits. This will add wonderful flavour to the meat. 7) Cut the second onion into chunks and roughly chop the carrots. 8) With the neck of the turkey facing you, find the edge of the skin that covers the breast, put your fingers in and start to separate the

Tip from the Chef: Roasted turkey often gets perceived as being dry and that is mainly due to the fact that the legs take longer to cook than the breast. The best solution to this is to place the stuffing between the meat and the skin of the turkey. This makes the breast thicker so the bird cooks evenly, giving you a juicy, well-cooked turkey. skin from the breast very gently, without breaking the skin. Then take the stuffing and push it in between the skin and the breast. Then use the excess skin and flap it underneath the turkey (or use a small skewer to hold it in place) to prevent anything spilling out. 9) Heat the orange in the microwave for 30 seconds to release the oils and push it into the turkey's cavity. Then place the bird in a large roasting tin and surround it with the onions, carrots and the rest of the garlic. 10) Cover the bird in foil and turn the oven down to 180 degrees Celsius and roast based on the correct time until the juices run clear. For the last 30 minutes, take off the foil and let the skin brown. And pour the juices from the meat into a saucepan; this will be later used for the gravy. 11) Once the turkey is cooked, remove it from the oven and place it on a serving tray. Loosely cover it with foil and leave to rest 20 minutes. 12) Finally the gravy. Add some flour to a new saucepan and cook for a minute (this is important to avoid a floury taste), then add the juices from the turkey and the chicken stock. Keep stirring the gravy until it thickens.

step 1 Prepare the Ingredients: Pastry cream > 500g Sponge Cake > 100g Strawberries > 100g Mixed berries > 100g Plums > 100g Pineapples > 100g Papaya > 100g Rock melon > 100g Grapes > 100g Roasted Almond slices

Slice the ready-made sponge cake horizontally into two.

For the pastry cream: > Fresh milk 500ml > Sugar 100g > Eggs 3 > Vanilla essence 110g > Corn flour 40g Boil the milk and combine the sugar and eggs. Blend the egg mixture with the boiling milk and thicken it with the corn flour. Let it set for 30 minutes.

We are a huge fan of Thai food here at ABODE so when Isaan launched their new menu, it was a must-try. For starters, we shared the Tom Yum Goong, a spicy prawn soup with mushrooms and lemongrass.

The Mieng Pla Thod is deep fried sea bass in tamarind sauce which you wrap in betel leaves and is yet another dish highly recommended by us. Soon after came our favourite dish of the evening, the Panang Gai, chicken in Panang curry.

The spicy food connoisseurs will really appreciate the aromatic heat of this soup, a very comforting dish indeed; the Por Pia Goong shrimp spring rolls were of a light and crispy texture, the sweet chilli sauce complimenting the overall taste.

Creamy and aromatic, this dish makes a complete introduction to Thai flavours and shortly follwed by this was the Pad Si-eiw Goong, wok fried noodles with egg and shrimps, a simple yet appealing typical bowl of noodles and Mak Nuea

The Arab Museum of Modern Art in Doha has dedicated the ground floor of the museum to a new display of solo exhibitions featuring pioneering artists from the Museum’s Permanent Collection. The ongoing exhibition Focus: Works from the Mathaf Collection offers a glimpse into some of the museum’s most iconic works by combining a series of solo shows that highlight key artists in the collection. The display will last until the 14th of February 2016.

s the saying goes: “Find a job you love and you’ll never work a day in your life.” That's exactly what Doha’s vibrant DJ Laura O’Shea lives by, and you can see it in her performances. Oozing energy and hypnotised by the beat, she describes DJ’ing as being like meditation. ABODE caught up with her at a recent gig at Doha Marriott’s Late Brunch.

ABODE: What’s been your favourite gig in Qatar to date? LO: I was the official DJ for the World Handball Championships earlier this year at their 'TwentyFour Fanzone'. Seeing 2000 people go nuts and literally throw each other in the air, was pretty unforgettable.

ABODE: Describe your musical style. ABODE: How did you get into DJ'ing? LO: House music is my love. It’s so diverse that it gives me a broad LO: As a teenager, I sang Italian opera competitively and danced range to play with. Sports car with all-wheel drive is the first choice for more than one in three Porsche 911 buyers. With the new 911 Carrera 4 and 911 Targa 4, they now profit from an increase in sporting characteristics and comfort in the latest 911 generation: the innovative turbocharged engines are more powerful and consume less, with the improved all-wheel drive increasing dynamics and driving safety. In addition, the adaptive PASM chassis (Porsche Active Suspension Management) with its ten-millimetre lower ride height included as standard enables an even greater spread between sporty circuit and relaxed long-distance driving. Rear-axle steering, that is available as an option for the Carrera 4S models, further increases

the dynamic spectrum considerably. Interior functionality is enhanced by the standard Porsche Communication connectivity and infotainment system with simplified operation and multitouch display.

between the rear lights now produces an especially distinctive effect thanks to its consciously three-dimensional design. It also underlines the typical format of the all-wheel drive 911, with rear fenders that arch further outwards by 44 millimetres.

The all-wheel drive models include numerous optical refinements of the new 911 Carrera generation. They range from the headlights with four-point daytime running lights, via door handles without recess covers, to the redesigned rear lid with vertical louvres and new rear lights, including the characteristic four-point brake lights. The new 911 Carrera 4 and 911 Targa 4 derivatives also have their own distinguishing characteristics. The distinctive light strip

Faster sprinting with up to twelve per cent less fuel consumption Behind the re-engineered flat engines are more than four decades of Porsche experience with turbocharged engines from motor racing and production sports cars. The result is that all new 911 Carrera models impress with top values in terms of performance, driving fun and efficiency. Thanks to bi-turbocharging, the three-litre, six-cylinder engines in the


911 Carrera 4 and 911 Targa 4 achieve an output of 370 hp and a torque of 450 Nm, while output in the S models increases to 420 hp and torque to 500 Nm. This gives the driver an additional 20 hp of dynamic performance to convert into driving fun. The greater power of the Carrera S models comes from turbochargers with modified compressors, a specific exhaust system and tuned engine management. In combination with the now electrohydraulically controlled all-wheel drive, the 911 Carrera 4 achieves better acceleration values than its rear-wheeldrive counterparts for the first time. Equipped with the options of PDK and Sport Chrono Package, the 911 Carrera 4 sprints from zero to 100 km/h in 4.1 seconds (0.4 seconds less than its predecessor model), with the S model registering 3.8 seconds (0.3 seconds less). The 911 Cabriolet 4S and the 911 Targa 4, with comparable equipment, need just 0.2 seconds longer. Top speeds vary according to model and equipment between 287 km/h and 305 km/h. Traditionally, every new generation of engines from Porsche combines more output with less consumption. Consequently, fuel consumption in the 911 Carrera 4 Cabriolet with PDK drops by 0.8 litres to 7.9 l/100 km. The models with the most significant improvements are the 911 Carrera 4S Cabriolet and 911 Targa 4S: average consumption decreased by 1.2 litres to 8.0 l/100km (when equipped with PDK). Inherited from the 918 Spyder: Sport Chrono Package with mode switch In conjunction with the optional Sport Chrono Package, the new 911 models feature a mode switch on the steering wheel for the first time, derived from the revolutionary 918 Spyder. The mode switch consists of a rotary ring with four positions for choosing a driving mode, this includes: “Normal”, “Sport”, “Sport Plus” and “Individual”. The latter setting enables drivers to configure their own individual vehicle set-up, for example the PASM, active engine mounts, PDK shifting strategy and sports exhaust system. In combination

with PDK transmission the mode switch has an additional button, the “Sport Response Button”. When this button is pressed the drivetrain is pre-conditioned for maximum acceleration for 20 seconds, for example before overtaking manoeuvres. For this, the optimum gear is engaged and the engine management adjusted to an even more spontaneous response for a short time. Re-engineered PASM chassis with ten millimetre lower ride height as standard A Porsche 911 with all-wheel drive stands for the commendable combination of traction and driving safety with sporty driving performance. In this new generation, Porsche reconciles these contrasts even further. The electrohydraulically controlled all-wheel drive responds with more speed and sensitivity, thanks to the technology adopted from the 911 Turbo. This enhances directional stability during extremely sporty driving, without sacrificing agility. Harmony between the re-engineered all-wheel drive and the retuned PASM chassis with its tenmillimetre lower ride height is thus even better. It is fitted as standard to all 911 Carrera models and increases stability during fast cornering. At the same time, the new shock absorber generation enhances comfort and improves car body control during dynamic driving.

The active rear-axle steering, that is available as an option for all Carrera S models, is chassis technology adopted from the 911 Turbo and 911 GT3. It increases the turn-in agility of the 911, leading to even higher driving stability when changing lanes at high speeds and reducing the turning circle by 0.4 metres. The improved handling is transmitted to the driver via the new steering wheel design taken from the 918 Spyder. The basic steering wheel has a diameter of 375 millimetres, whereas the optional GT sports steering wheel measures 360 millimetres. For everyday practicality, Porsche offers a hydraulic lift system with integrated lifting cylinders in the struts of the front axle. The vehicle’s ground clearance increases by 40 millimetres within five seconds at the press of a button. The new Porsche 911 Carrera 4 and 911 Targa 4 models are available in Qatar.
