his month sees one of Qatar’s biggest events – National Sports Day. The aim is to promote a healthy lifestyle and we hope that our readers will be inspired to get involved. This wonderful and unique initiative is now in its 4th year, after being established from the great mind of HH Sheikh Tamim bin Hamad Al Thani in 2012. Therefore, why not use February 11th as the starting block for you and your family to try out a new sporting activity – or even, to achieve a personal goal. And this occasion means so much more. It is the opportunity for us all to come together to celebrate our unity and our diversity. We can feel proud that Qatar, as a nation, sets an example to rest of the World because there are only a few countries where a special day is devoted to sport. And as the rest of

the World, and Qatar itself, gazes towards being the Host Nation for one of the biggest soccer tournaments in the world come 2022, this edition strives to bring you people, news and features to ignite and keep your sporting interest ablaze. The start of this year kicked off one of the biggest fashion collaborations to find its way into the gym bags of all women across the globe. PUMA appointed cultural trendsetter Rihanna to the position of Global Ambassador for Women’s Training, as well as bringing her styling sensibilities and innovation as PUMA Women’s Creative Director.

Q

What time do you wake up each day? I am generally a very early riser – 6am is pretty normal for me. It can be hard to keep to a routine sometimes when you are travelling through so many different time zones.

What is the first thing you do? If I’m at home, the first thing I do is take my dog out for a walk on the beach, and grab a coffee. But my training routine is usually calling, so I have to get ready to start my work outs. How long does it take you to get ready/dressed? With so much travel and a number of responsibilities to my brand partners, I’ve gotten pretty quick! I also have a great team for special red carpet events – known dearly to me as my “glam squad” that are amazing multi-taskers – they can take me from the court to the carpet in no time at all! What’s a typical breakfast/lunch/ dinner? I try to keep it pretty light and focus on fresh foods: grilled chicken, vegetables and lots of produce. Though I do sneak a few of my Sugarpovas from time to time – I have a definite sweet tooth! How do you spend your day? A breakdown of training etc? I start early with training and then break for lunch and to refresh. I alternate between sports training and also staying on top of my business responsibilities with my brand partners (TAG Heuer, Nike, Evian, Head, Porsche, Avon, and Supergoop!). And of course on my own candy collection, Sugarpova. This way I’m never bored and continually challenge myself throughout the day. Would you say you have a definite routine? Absolutely. That’s part of the discipline of being a pro athlete. There are sacrifices you have to make – I can’t stay up late or blow off a practice without feeling those affects, so it takes unwavering dedication to the routine that works best for me. How do you decide what to wear on the court? Is your clothing important

to you? Definitely. I have been designing my own tennis dresses with Nike for years now, and our collaboration is something I’m very proud of. Just like anywhere else, you want to feel good on the court – from a technical and emotional level, those small choices can affect your performance, and we take that into consideration with every design. Why did you choose to work with TAG Heuer? The heritage and quality of the brand is unsurpassed – it’s such a well-known symbol of luxury and performance. The match just felt natural. You have been the brand ambassador of TAG Heuer for a few years. What about the brand you see resonates with your personality? The versatility of TAG Heuer’s watches is what resonates most with me. I can throw on one of my favorite ceramic ladies timepieces, and go from court, to business meeting, to red carpet event with no effort. That can’t be said for many accessories, and I just feel like the brand really reflects my on-the-go lifestyle. Do you follow the trends each season? Do you have any favourite designers? I do – I am a fashion lover at heart and follow the runway shows with great interest. I like Lanvin, Vera Wang, Proenza Schouler, Alexander McQueen, Marc Jacobs, Rag & Bone and countless others. Do you have a team to help you with your day to day? I truly prefer to have a few close associates than a larger, less personal team. There are a few key individuals without whom I couldn’t manage all of my responsibilities. What is your favourite feature about yourself? I would say my strength – physical strength as it applies to tennis, and my mental strength as it applies to all areas of my life, but particularly my aptitude for business. What are your key fitness tips for readers? I always say “everything in moderation.” It comes naturally to most people to want to push themselves ever

further, but it is also important to reward yourself – it helps retain focus and drive. What would be your idea of food heaven? And hell? I will let my sweet tooth answer this question! I am a woman who loves candy, so that’s probably my food heaven. As for food hell – that would likely be airline food everyday for eternity. What are five items you can’t do without? That’s tough to limit to only 5, but I would say: my skincare regimen (Supergoop! for sun protection), my Nike tennis bag with all of my gear, a keepsake jewellery box my grandmother gave to me, my white ceramic Tag Heuer watch and my dog, Dolce.

Pushing the boundaries of traditional wear is the driving force for this budding fashion designer. With sheer determination, a fearless approach, and of course an uncannily beautiful attention to the world of haute couture, Muna Saad, is most definitely one of Doha’s new fashion rebels to watch out for this year. Q. What is your inspiration behind your brand? How did you get started? A. The main inspiration has been my life: living, studying and journeying through France, particularly Paris. This is where I started to dig into fashion more and more and get the real flavour of all the different Parisian styles and trends. There has not been any one more of a greater influence to me than that of Mr. Karl Lagerfeld. He became my first icon and remains to date still as my style influence, and I would love to meet him one day. I started by designing dresses for my close friends and family, and then, from the encouragement of all those around me, I decided to start in the field and go for it. Q. Tell us about your latest collection, what are you working on? A. My latest collection is called Mad Sadou. It is quite an extravagant collection, with a Great Gatsby feel and aesthetic to it; dedicated to women who like to be edgy and fashionable. I would say that it is mostly perfect for events and evening gatherings. Q. Where do you see your brand heading to in the future? A. I see my brand crossing the Arabic Gulf boarders to hit the European market. This I see will be achieved through having the Arabic traditional Khaleejy style designed and presented to be red carpet ready. Q. Where can we see more of your collections? A. The most accessible way of seeing my collection is via Instagram, I have most of my orders and clients through this means, as well as many exhibitions. However, I am very proud and happy that this month I will be stocked in Jo LaMode Boutique, Royal Plaza Mall, where you can find all my latest collections. ABODE goes behind the fragrance; in conversation with Ann Gottlieb, the professional "nose" behind Calvin Klein’s fragrances, to discuss the behind the scenes of the ETERNITY NIGHT Ad Campaign which stars Hollywood husband and wife duo, Ed Burns and Christy Turlington. Q. What were you trying to accomplish when you originally created ETERNITY back in 1988? A. The first two fragrances in Calvin’s portfolio, OBSESSION and OBSESSION for men, were rich, warm Orientals. It was important that this new fragrance be completely different in character to tell a different story and appeal to different women and men, which is why a floral bouquet and fresh fougere were chosen.

Q. What impact did ETERNITY have on the house of Calvin Klein and the fragrance industry in 1988? A. Shortly after the blockbuster hits of OBSESSION and OBSESSION for men, the success of ETERNITY cemented Calvin’s importance as not just a fashion designer, but as a fragrance designer as well.

Q. How did you capture the sentiment of eternal love when creating ETERNITY? A. What better expression of eternal love than a fragrance comprised of floral bouquet overflowing with roses?

Q. What do you think made ETERNITY so successful? A. The scent is a true work of art. It is beautiful, has a fantastic trail and signature, and is of great recognizable quality.

Twenty-eight year old Marketing Manager Stefan Craita and his partner Dijana Buzaljko, 32, wanted a fun-filled way of spending some time together, in the lead up to Valentine's Day.

Step 1: The client has long blonde hair, she wanted a new look but keeping its length and colour. So I gave her highlights from the roots then coloured it using a warm brown mixed with light brown. •TIP: Putting highlights on the roots gives a full volume effect and mixing two colours makes the hair look full, rich and natural.

Step 1: Firstly it is essential to clean the client's face thoroughly to remove impurities and prepare her skin. •TIP: Cleaning the face won’t just give a good canvass for makeup, but it also helps regulate blood circulation which aids in keeping skin looking healthy.

Step 2: To then give her a new look, I decided to cut her hair into soft layers. •TIP: Layers are great to give body to hair!

Step 4: I put eye primer on her eyelids, added setting powder to it then applied eye shadows. And for her blusher, I chose a pink shade to highlight he apples of her cheeks. •TIP: Choose a lilac eyeshadow to give a feminine vibe, and an almost translucent blusher to soften the look against the heavy eye makeup. Step 5: Lastly, I for her lips, I chose a berry toned lipstick for her which is heavily pigmented yet feminine. •TIP: Use a lip balm prior to applying lipstick to avoid cracked lips and an uneven surface.

Step 2: To tighten her pores and keep skin moisturised I wiped her face with cooling lotion then applied primer. •TIP: Use a sheer primer for glowy based makeup or matte primer for matte makeup. Step 3: Then, using an airbrush to apply a thin layer of foundation, I applied a light setting powder. •TIP: Apply powder foundation after concealing and shading to set the whole base.

Step 3: For the styling, I gave her two looks. Firstly, I curled and put her hair in a messy-do to create a romantic vibe. The second style is a chic and sophisticated up-do, perfect for an evening dinner. •TIP: Always consider the clothes that you will wear when styling your hair. Depending on the neckline of the outfit, you can decide a hair up or down style.

Ever since Qatar marked the second Tuesday of every February as its National Sport Day, it became one of the most awaited events amongst its residents. Static Stretches for Body Flexibility

How important is flexibility in our life? Due to sedentary lifestyle and age our flexibility tends to deteriorate. We all want to maintain and keep our bodies young, and having a flexible body helps us feel good and perform our everyday activities with ease. Stretching regularly and being active helps in preventing this loss in mobility, not to mention that a flexible body can also reduce the chance of experiencing back pain. • Flexibility needs commitment and consistency. • A dynamic warm up is a good beginning for your flexibility sessions. The best time to do flexibility training is after the cardio workout. • Frequency: 4-6 days/week • Do not stretch beyond feeling a slight discomfort, it should not be painful. Hold your stretches between 10-30 seconds. Do 2-4 repetitions on one leg/arm then change. • The length of the flexibility work-out depends on the motivation of everyone. As per the needs should last at least 5 to 10 minutes. Advantages: Static stretching can be used by virtually anyone as it is easily taught and usually very safe. Once learned, it can be performed in almost any environment without external assistance or equipment. Disadvantages: Static stretching will improve flexibility at a specific body position and only to a small degree outside of that position. It is best suited as a complement to other methods of flexibility training or as a relaxation method in itself

Primary muscles stretched: Shoulder Stand on a laid down position with the legs in front of you. Extend your arms at the back with palms facing down and pull your chest forwards, away from your hands. Move deeper by pulling your hips further forwards; do the movement gradually.

Primary muscles stretched: Hip flexors. Start from a crouched position then put your right leg in front and line your knee and ankle up. Then slide back the other leg and feel the stretch.

I’m worried about how much I use my mobile phone. I can't put it down. I get anxious if people don't call me or text and check to see if it’s still working. I waste so much time on silly videos, pictures and pointless text conversations. It’s starting to affect my studies.

A.

You probably know humans are habitual. So too much of anything can be problematic; especially when it becomes an automatic part of your mental well-being. Without realising, anxiety, procrastination and paranoia can creep into your mind as a result of over-dependence on a mobile phone. Widespread use and availability has resulted in many people younger ones especially – experiencing the negative consequences of psychological feelings such as ‘Nomophobia’ (the fear of being separated from your mobile device) and ‘F.O.M.O.’ (Fear of missing out). Some don’t see a problem, but you do. However, your awareness puts you in a great position to be productive. You must be realistic though. Drastic measures like deleting all social media apps at once is unlikely to work; you’ll just relapse quickly. There are many things you can do to reduce temptation and wean yourself off your phone. Purposely leave it at home for a day. When studying, leave it in your bag instead of on the table. When it’s charging, do something else in a separate room. At night, don’t use it as your alarm clock. Don’t be disheartened if you struggle at first. Breaking daily habits associated with your mobile phone will be a shock to the system. It will take a while to alter. However, its time you controlled your phone, rather than let it control you.

My job requires me to regularly socialise with lots of different people. I'm not really outgoing, but make an effort. However, it seems everybody has an agenda or is two-faced. One minute they act friendly, the next, they’re horrible. People keep letting me down and it's starting to get to me.

A.

I'm not going to lie to you. We live in a fickle world, therefore, patience is fundamental. We’ve all experienced superficial personal, social and professional relationships. You’re not alone. It’s a difficult discovery when you learn others don’t think exactly how you do. Nevertheless, most people desire companionship and connection with others. However, these connections take time to develop. Some working situations just don’t provide the correct opportunities for true friendships to blossom. At best they may provide a comfortable acquaintance. In order to gain real lasting relationships, we mustn’t rush into things every time we have a good time or someone is nice. To truly understand someone and become friends, you need to see that individual in a range of situations and circumstances, not just one or two. How do they act at their best; their worst and when faced with adversity? Everybody we meet is not our friend! So you must be mindful. Simultaneously, it does no harm to strengthen your own positive qualities too. So when the time is right, you attract more productive people. Sometimes, to make a positive change, we have to accept the world as it is, and not how we would like it to be. In the end, it’s worth the wait.

My husband and I are about to give birth to our first child in a few weeks. Although I am overcome with excitement I’m equally scared of getting this wrong and being a failure as a mum. It is really worrying me. What can I do?

First of all let me reassure you that there is no ‘perfect parenting’ manual. Trust me on that. You cannot fail if you take your parental responsibilities seriously and do what you believe is correct. Remember, you are not their ‘pal’. You’re their parent; there to provide, guide and protect them. Amongst all the things children need, the necessities are love; trust; boundaries; respect and consistency. This allows them to learn and grow in a physically and mentally safe environment. Your job is to facilitate opportunities and maximise their moral and personal potential. To instil in them to be realistic whilst understanding people and surrounding environments. Parenting is a long, and often turbulent, road – but ultimately rewarding. You’ll definitely make mistakes. This is natural. However, nobody else can lay the critical foundation that a mother does. Your views will be integral to the future choices your child makes. You are the first teacher. I’m confident you will do a great job.

It’s essential to build up slowly at first and to consult your doctor if you are planning to start running for the first time. If you need motivation, try listening to music or rewarding yourself with new sports clothes so you look and feel great. What to Eat Pre and Post Your Work Out By SparkPeople.com

The size, timing, and content of your pre- and post-exercise meals and snacks can play an important role in your energy levels during your workout, how well your body recovers and rebuilds after your workout, and whether the calories you eat will be used as fuel or stored as fat. Here’s what you need to eat and drink to get the results you want!

E

veryone knows that athletes must plan and time their meals and snacks very carefully to reach their performance goals. But what about the rest of us? You try to squeeze in 30-60 minutes of exercise most days of the week. Do you have to be careful about what you eat before and after your workouts, too?

Usually not. If you’re eating a healthy diet and getting enough calories to support your activity level, you can probably rely on your own appetite, energy levels, and experience to tell you whether you need to eat anything before or after exercise and what it should be. The basic rule here is: Find out what works best for you, and do that. There are some advantages to knowing how your body works and what it needs to perform at its best. The bottom line for healthy weight loss and fitness sounds simple: You have to eat fewer calories than you use up—but not fewer than your body needs to function at its best.

Eating Before Exercise for Maximum Results Your Pre-Exercise Fluid Needs

Being well-hydrated will make your exercise easier and more effective. Try to drink 16-20 ounces of water during the 1-2 hours before starting your workout.

Your Pre-Exercise Meal or Snack

News flash: Most of the fuel you use during exercise doesn’t come from the food you’ve recently eaten! It actually comes from the carbohydrates (called “glycogen”) and fat that’s stored in your muscles, liver, and fat cells. That’s enough to fuel 1-2 hours of very intense exercise or 3-4 hours of moderate intensity exercise.

This means that if your overall diet is adequate to keep your fuel tanks topped off, you may not need to eat anything before you work out. So, if eating before exercise upsets your stomach or you like to exercise first thing in the morning or at a time when eating first isn’t convenient, don’t feel like eating first is a must. Some people do have a hard time exercising without eating first, especially if it’s been a long time since their last meal or snack. These individuals often are more sensitive to changes in their blood sugar levels, which fall during the first 15-20 minutes of workout. That drop in blood sugar can cause tiredness, mild dizziness, or even faintness—especially if your blood sugar was already low, but eating something beforehand can help prevent this. If you have health issues like diabetes or hypoglycaemia that can cause low blood sugar, you’ll probably want to eat before your workout. If you get very hungry during a workout (and it interferes with your energy levels or focus), or become so ravenous after an exercise session that you end up overeating, try eating before you hit the gym to avoid these problems.

How To Handle Your Pr-Exercise Hunger If you are a moderate exerciser who tends to perform better with a pre-exercise snack, there are two ways to handle your needs:

Eat a small (100- to 200-calorie) snack about 30 minutes before you work out. This snack should include fast-digesting (high glycemic index) carbohydrates and very little fat (which digests slowly), so that you digest the meal quickly and the fuel is available during your exercise session.

Here are some ideas: • Fruit juice • Fruit smoothie • High-glycemic fruits like pineapple, apricots, banana, mango, and watermelon • Sports drinks • Pretzels or bagels (but not whole grain varieties, which digest slowly) • Energy bars (look for 3-5 grams of protein, at least 15 grams of carbs, and very little fat)

Eat a nutritionally balanced meal 1-2 hours before your exercise. This is the best option for many people. The larger the meal, and the more fat and protein it contains, the longer you may need to wait before exercising. Ideally, try to eat enough calories to equal about half the calories you expect to burn during your upcoming workout. So if you burn about 600 calories during your workout, aim for at least 300 calories during this meal — or a little more if your exercise is “high intensity” (over 75% of your maximum heart rate). At least 50-60% of these calories should come from carbohydrates, which should keep your blood sugar and energy levels fairly stable during your exercise session. Include some protein to help prevent the breakdown of muscle for fuel and give your muscles a headstart on recovery after exercise.

Some good food choices and combinations for this kind of meal include: • Fruit and yogurt • Nuts • Oatmeal • Cereals (with more than 3 grams of fibre) and milk • Trail mix with nuts and dried fruit • Hummus and raw veggies • Hard boiled eggs (or egg whites) • Cottage cheese and fruit • Half a peanut butter or turkey/chicken sandwich on whole grain bread • Whole grain crackers with nut butter or cheese • Whole grain fig (or fruit) • Milk (especially chocolate milk) • Tomato or vegetable juice • Yogurt smoothie (with added protein powder, if desired) • Most protein/energy bars As a moderate exerciser, you have a lot of flexibility when it comes to timing your meals and choosing your foods. The most important things are getting to know your body and how it responds to exercise, so that you can give it what it needs to perform at its best. Eating the right foods at the right times before you work out is essential to keeping your energy up, your workout performance high, and your body in fat-burning mode.

Refuel and Recover with a Post-Workout Meal or Snack Your Post-Exercise Fluid Needs

Most moderate exercisers will lose about one quart (4 cups) of fluid per hour of exercise, so try to drink about 16-20 ounces of water shortly after your workout to aid the recovery process. If you sweat a lot or the weather is hot and/or humid, consider weighing yourself before and after exercise, and drinking an ounce of water for every ounce of weight you've lost. Because heavy sweating also causes loss of minerals and electrolytes, consider using a sports drink with electrolytes if you need to replace more than 2-3 cups of fluid.

Your Post-Exercise Meal or Snack

As long as you’re staying within your overall range for the day, you don’t need to be obsessive about matching the following calorie and nutrient ratios perfectly. Just be careful not to fall into the very common trap of thinking that it’s OK to eat anything and everything in sight because you just worked out. Many people are very hungry after a workout, making it easy to eat more than you really need, or choose foods that won’t really help your body. Eating too much of the wrong thing can do the opposite of what you want—causing your body to store that food as fat instead of using your post-workout food to refuel and repair your muscles.

Here are some sample food combinations for your post exercise meal: 1) Bread, a bagel, or an English muffin with cheese or peanut butter 2) Dried fruit and nuts 3) Cottage cheese with fruit 4) Fruit juice with cheese 5) Yogurt with fruit 6) Veggie omelet with toast or roll 7) Chocolate milk 8) Cereal with milk

So what does the ideal meal or snack look like? Calories: Ideally, try to eat enough calories to equal 50% of the calories you burned during your workout. So if you burn about 600 calories during your workout, try to eat 300 calories afterward. Don’t worry about undoing the calorieburning benefits of your workout–that’s not how weight loss works. As long as you're eating within your recommended calorie range (whether for weight loss or maintenance), you'll be on your way to reaching your goals. Carbohydrates: Roughly 60% of the calories you eat at this time should come from carbohydrates. Contrary to popular belief, your body needs more carbohydrates than protein after a workout, to replace the muscle fuel (glycogen) you used up and to prepare for your next exercise session. Moderate exercisers need about 30-40 grams of carbohydrates after an hour of exercise, but high-intensity exercisers need more—around 50-60 grams for each hour they exercised. If you have some favourite highcarb foods that are lacking in the whole grains and fibre that are often

recommended as part of a healthy diet, this is a good time to have them! Your body can digest refined carbohydrates faster during your "refuelling window," but if you’re a whole foods foodie, don’t force yourself to eat processed foods. Protein: While carbs are essential, it’s also important to include some highquality protein in your post-workout meal or snack. This protein will stop your body from breaking down muscle tissue for energy and initiate the process of rebuilding and repairing your muscles. About 25% of the calories you eat after a workout should come from protein— that's about 10-15 grams for most people. Fat: Fat doesn't play a big role in postworkout recovery, and eating too much fat after a workout won't help your weight control or fitness endeavours. Only 15% (or less) of your post-workout calories should come from fat—that's less than 10 grams. The ideal time to eat after a workout is within 30 minutes to two hours, when your body is ready and waiting to top off its fuel tanks to prepare for your next workout. But if your appetite or schedule doesn’t allow you to eat a meal right after your

Liquids like smoothies, shakes, or chocolate milk, and/or energy bars can be especially effective snacks after a workout.

Stick to a Colour Scheme In the Victorian era it was very popular to decorate each room using a different colour scheme of about three colours in various shades. The main colour typically appears on about 60 percent of the surfaces, the secondary colour on about 30 percent, and the remaining colour on accents and accessories. This icy dining room is absolutely gorgeous and used a combination of silver and robin’s egg blue, along with a touch of purple flowers for a finishing touch.

Replace all Your Light Fixtures You most likely have uber modern lampshades and light fixtures in your home – it’s time to remove all of them and get yourself a whole new set! If your lighting is wrong, your overall Victorian look will be completely off! Look for beaded lampshades, chandeliers, and cast iron lanterns to place on the coffee table as decoration. For an even more authentic and romantic feel, add multi-level candleholders to provide dim lighting in your dining or living room.

Deck the Walls!

Whether you choose patterned wallpaper or decide on trying out your painting techniques with a textured finish, try choosing tones that complement the era as well as give it a little zing! Texture was a big thing on Victorian walls and it was common to paint over plaster, or to cover the walls with thick, embossed wall covering. This designer used a colour wash technique to give the walls some dimension – a creamy base was used and then a nice jewel purple was layered over, giving it some colour and the look of a textured wall.

Use Plump, Lush Fabrics

The Victorian era tended to use lush ornate fabrics and everything was super plump, heavy, and extravagant. Add some richness to your bed with a velvet tufted headboard and pile up the pillows making sure to invest in a heavy comforter and decorative throws. You may also want to replace your blinds with heavy drapery and decorative tiebacks with silky tassels.

step 1 PREPARE THE INGREDIENTS 3 tbsp. fresh bread crumbs 3 tbsp. unsalted butter 1 oz. spinach, chopped 1 spring onion, chopped 1 rib celery, chopped 1 clove garlic, chopped 1/3 small red onion, chopped

If you think green tea is only for drinking, think again! You’d be surprised at how cooking with green tea can enhance the flavour of foods, making a meal truly memorable. Using Japanese premium green tea powder Matcha, The St. Regis Doha shows you how this detoxifying ingredient can be used to make both sweet and savoury dishes.

Green tea cured salmon Red onion and herbs crushed potato, quail egg, cherry tomato, and green tea emulsion Ingredients Green tea cured salmon > 500gms salmon fillet, deboned with skin on > 1 cup loose green tea leaf > ½ cup granulated brown sugar > ½ cup rock salt. Herbs crushed potato > 1 pc of baking potato > ½ pc red onion, finely diced > 1 ts chopped parsley > 1 ts chopped chives > ½ ts grainy mustard > ½ ts lemon zest > 1 ts sour cream > Olive oil to taste > Salt and white pepper to taste. Green tea emulsion > 2 egg yolk > 1 cup grape seed oil > ½ ts salt > White pepper to taste > 3 ts lemon juice > 1 ts Dijon mustard > 2 ts green tea powder > 2 ts hot water. Garnish > Hard boiled quail egg > Cherry tomato > Sliced of black olive > Picked frisse lettuce, yellow part > Mix micro greens > Picked dill.

Procedure Green tea cured salmon 1) Mix the tea, salt and sugar in a bowl. Line a large baking pan with plastic wrap. 2) Pat the salmon fillet dry and lay it skin-side down the pan. Sprinkle the tea-salt-sugar cure mix over the salmon and coat evenly. Fold the edges of the plastic wrap over the salmon to wrap tighly. 3) Use something heavy to weight the salmon down. Refrigerate for 3 days. You must allow up to 3 days for curing 4) Remove the salmon from the refrigerator and use cold water to rinse off

Appetizer the cure mixture. 5) Pat the salmon dry with paper towels, then place skin side-down on a tray. Lightly brush with olive oil, cling film and refrigerate. Herbs crushed potato 1) Season potato with salt, pepper, olive oil. Wrap with aluminium foil, baked at 160˚C for 60mins. 2) Remove the skin of the potato. Fork mash the potato. Seasoned with salt, add olive oil, mustard and sour cream and mix well. 3) Add red onion, parsley, chives, lemon zest. Rectify the seasoning. 4) Mould in a round cylinder shape diameter 6cm and 6 cm height. Refrigerate. Green tea emulsion 1) Put the lemon juice in a small pot, add 1ts of green tea and heat to a simmer. Once warm take off the heat and allow the tea to steep in the lemon juice until cool then strain. 2) Put 1 ts of green tea into a cup and pour on the hot water. Allow to steep then strain. Put the eggs, liquid (lemon juice, water) infused with tea, mustard, salt and pepper in a bowl and whisk till well blended. 3) Now add tiny bit of oil with one hand while you whisk with the other hand, until well blended and emulsified. Gradually, just a drip or two at a time, whisk in the oil. 4) Once you have used up about 1/3 of the oil, you can be a little bolder, adding the oil in a thin stream, whisking constantly all the time. 5) Transfer in a squeeze bottle and refrigerate. Assemble the plate 1) On a round plate, place the portion potato in the centre. 2) Slice 3 pieces of cured salmon and place on the plate. 3) Cut the quail egg into half and arrange in 3 corners. Top with half cut of cherry tomato. In between place the black olive slice. 4) Make 6 drops of the emulsion on the edge of the plate. With a sharp knife drip the emulsion dot to give a tear drop design 5) Toss the herbs with olive oil. Mount on top of the potato.

Braised cherry tomato with wild rice ratatouille > 10 pcs of cherry tomato, stem on > 20gms of wild rice, cooked > 100gms eggplant cut into cubes > 100gms of yellow zucchini cut into cubes > 50gms of onion > 1ts of chopped garlic > ½ cup tomato sauce > Olive oil > Thyme > Salt and pepper. Veal jus > 2 lt brown veal stock > 30ml Balsamic vinegar > 1 sp honey > 30gms butter > 200gms of banana shallot, sliced > 100gms of elephant garlic, sliced > 1kgs veal trimming, cut into cubes > Thyme, rosemary. Green tea foam > 200gms of skim milk > 2 packet of green team > Salt and pepper to taste.

Procedure Veal loin stuffed with green team mousse 1) Cut the salmon fillet to a flat form. Use a meat pounder to evenly spread the meat. Reserve 2) Bring the cream to boil. After boiling add the tea and let steep covered off the fire. Strain and reserve the leaf. Bring the infused cream to cool down completely. 3) In a robot coup, add the cut chicken breast, season with salt pepper. Mix until rough chop. Add egg white and mix until fine consistency. 4) Fold in the cold infused cream. 5) Lay down the veal loin on cling film wrap, seasoned with salt and pepper. Spread the mousse evenly on the veal loin. Place the leaf of the tea on top of the mousse. Round the spread loin in cylinder shape with the help of the cling film. Steam the loin around 25 mins and let rest. Turned mushroom polenta 1) Turn the mushrooms. Place in a cooking pot. Add little bit of water, pinch of salt, lemon squeeze. Cover and bring to boil and let to simmer until the mushroom is cooked. Cool down on ice with the cooking liquid. Reserve 2) Bring milk to boil seasoned with salt and white pepper. Once to boil add the polenta gradually and bring to boil. After boiling let cook for 2 to 3 mins by constantly moving with a rubber spatula. 3) Off the fire add, diced cold butter and parmesan cheese. On a large tray, lay cling film. Pour the polenta on the tray with depth 2cm. Let cool down. 4) After cool down. Cut into round with 3 cm diameter. 5) Place the turn cooked mushroom on top of the polenta and reserve. Carrot Puree 1) Bring carrot to boil, starting with cold water. Season with salt and pepper 2) Once carrot cooked. Strained and blend when hot into fine texture 3) Incorporate 50 gms of cold butter cut into cubes. 4) Transfer into squeezing bottle and reserve Braised cherry tomato with wild rice ratatouille 1) Sautee the zucchini, eggplant with olive oil. Add onion, garlic and thyme. Season with salt and pepper. Add tomato and wild rice. Let simmer until almost dry consistency. Rectify seasoning. Allow to cool down. 2) Cut the top head of cherry tomato. Scoop the seed out completely. Fill the tomato with the stuffing and cover with the top cover of the tomato. Drizzle with olive oil. Baked in the oven at 160˚C for 3 mins. Veal jus 1) Roast the veal trimming in the oven at 180˚C until golden brown. Remove excess of fat and reserve. 2) Caramelise onion and garlic in butter seasoned with salt. Deglazed with balsamic vinegar. Add honey. Let to syrupy consistency. Add veal stock, thyme, rosemary, roasted trimming. 3) Bring to boil. After boiling, simmer and allow cooking for 2 hours. 4) Strain. Bring back the sauce to fire and reduce to nice consistency. Strain and reserve Green tea foam 1) Infuse the tea in hot milk. Let infused covered for 5 mins. Removed the tea bag. Season 2) Used a hand blender and froth the liquid to foamy texture. Assemble the plate 1) Scoop one spoon of veal jus in the middle of the plate. 2) Slice one piece of the loin and top of the veal jus 3) Place the turned mushroom polenta, braised cherry tomato, carrot puree on each corner of the plate. Scoop couple of the green tea foam on the plate 4) Garnish with micro greens.

The best way to discover a place like the island of Cozumel, located off the eastern coast of Mexico, is to be immersed in its spices, its flavours— to indulge in its food. This region of Mexico known as the Yucatan Peninsula is a haven for exotic, and therapeutic plants, herbs & fruits.

C

ozumel is a place to visit, not just because it is an oasis retreat, or for its beautiful beaches, friendly locals, historical sites, but it is an island that offers a rich culinary excursion. With restaurants and cafes that offer a variety of options while incorporating the flavours and ingredients native to the area. With a long list of places to opt to do a foodie tour on, I settled on Cozumel for many reasons: an island where the locals treat you like a local; the most tranquil waters with a turquoise hue like few places in the world, and the opportunity to discover this region's vast array of culinary spices and condiments.

The collection of family portraits hanging on the walls lends to the feeling you’ve arrived at a home where you are expected to enjoy a meal.

As if on cue, the breakfast entrées arrived, first the panuchos: flat tortillas fried in oil and smothered in a bean spread, topped with finely cut tomatoes, onions, lettuce, white cheese and a dash of homemade (and very creamy) sour cream. Next were the chilaquiles: tortillas deep fried with scrambled eggs and a spicy red tomato sauce. I didn’t want to include in this article those places that are tourist traps or the ones hotel maître d’s push on to visiting guest. I did my homework and went straight to the experts: the locals. I wanted to go to the favourite places and local haunts of the Cozumeleños, and one such place is Le Chef. When a local described this sandwich, their mouths would part, and they would gesticulate with their hands, feign biting down into an imaginary sandwich, and sort of exhale in delight. Owned an operated by Chef Eduardo Glen Mora, this place has a provincial

feel to it and its clientele is 60% locals. It started as a shop that sold gourmet products but now it's a thriving eatery that serves up some of the best lunch and dinner you’ll find. First to arrive was the fresh tuna tartar. The taste was as if Mora had walked the 5 blocks and fished it himself; this was followed by a spinach salad with smoked salmon—a tangy orange vinaigrette dressing accompanied the salad that was delightful. But the golden ticket was the famed lobster & bacon sandwich. Prepared on marble bread with panela cheese, mayonnaise, crunchy bacon, lettuce and a secret sauce Eduardo was not willing to divulge—the sandwich was as scrumptious as the locals had acted out in their description, and a must to add to the list when in Cozumel. Lunch was finished off by a homemade espresso crème bruelee. I slowly, yet happily wobbled to the awaiting car for a leisurely drive to the next spot, Coconuts. Located on the other side of the island, about a 20-minute drive east from the center of Cozumel. It sits on a bluff that overlooks the Atlantic Coconuts Ocean. Sergio Rojas, or Cuco, as he likes to be referred to, opened this outdoor seaside restaurant, which consists of a huge palapa, in 1998. He, like the place, is a cross between Margaritaville and Speedy Gonzalez. The place is all about music, leisure, nature, good food and a great time. The seafood is incredible. From the ocean to your picnic table, it won’t get any more organic than that, but the feel-good ambiance is even more wonderful. It’s the highest spot on the island with the best view, and the ceviche is, truly, I have to take a pause here, and…wait for it…(here is the pause) … spectacular. I recommend the octopus, as well as the ceviche, but everything on the menu was fresh and caught that day. After taking in the view and petting the menagerie of animals Cuco keeps onsite, from parrots, to dogs, to chickens, to a cat named Garfield and even a crocodile (safe to say I did not pet the croc) it was time to freshen up at the hotel and head to dinner at La Cocay. Owners Kathy & Gary Klein settled on that name because it stands for firefly in Mayan. The fusion you’ll find here is that of Mediterranean, Mayan of course, with classic European and even touches of Asian. The Napa salad with creamy blue cheese was a combination of crispy & zesty to the palate. Followed by a seared tuna that turned to the consistency of butter once in your mouth, and later a 6oz tender filet mignon in a red wine demi-glace with roasted garlic, carrots and potatoes. To accompany the savoury meal the ambiance was on point.

A mix of chic yet inviting, it’s an ideal place for a romantic dinner or a pleasant night with family a friends. With such an ambrosial meal to giddily write about, it was now time for dessert, and the word ‘bout town was that La Kondesa restaurant was the place for sumptuous confections. It’s an establishment that is setup al fresco, in a modern space

with plenty of foliage all the while dimly lit. And don’t get me wrong, this place serves up some wonderful dishes, but dessert is what I was after. The first to arrive, churros with chocolate syrup and caramel dipping sauce; this is a classic of the Mexican cuisine. That was followed by cornbread cake, another

time-honoured tradition, moist and doused in syrup. But Kondesa’s pièce de résistance is their Pan de Dioses: chocolate cake, chocolate ganache, Kahlua and bananas. So, head to Cozumel and delight your tastebuds in a fusion of traditional flavours... A comer se ha dicho!

Qatar Museums celebrates Handball World Championships with new public art pieces Qatar Museums unveiled three new artworks especially commissioned to celebrate the 24th Men’s Handball World Championships in Doha. Thanks to collaboration between Qatar Museums and the Qatar 2015 Organizing Committee, the artworks are installed at the Lusail multipurpose hall as part of an ongoing public art programme designed to bring culture to the streets of Doha. One of these iconic pieces is of this large bronze sculpture, entitled “The Challenge 2015”, and was produced in just five months by the noted Iraqi artist Ahmed Al Bahrani.

My Museum to project the concept of identity at MIA Establishing one’s identity is crucial; we are all born with it but sometimes we acquire one too. In order to explore the concept of identity, students of Qatar Academy Doha together with the Qatar Museums Family Programmes have produced a display titled ‘My Museum’. The interactive display includes 12 in-depth workshops, activity sessions and museum visits over a 3-month period. Primarily aimed at school children, the display can be visited anytime of the week including week-ends. According to authorities of the Museum Family Programmes, the students involved in the project obtained ‘creative thinking, problem solving, self-motivation and independence.’ The ‘My Museum’ project is showcased at the Museum of Islamic Art Library from 11th January.

Training Leaders for Tomorrow Silatech together with the Welfare Association of Palestine conducted an 8-day Qasd values-based leadership programme for 16 young Palestinians. The objective of the programme was to create a socially conscious new generation who will be able to infuse positivity and transformation into their communities and the region. Qasd is a unique leadership programme designed to secure social responsibility in decision making and also enhance skills required to become successful in the job market. A Silatech initiative, Qasd is not limited to Qatar as it is in its pilot stage in Palestine, Egypt and Sudan. While Silatech is a regional social initiative that is dedicated towards creating jobs for young Arabs, the Welfare Association is a non-profit organization that provides development and humanitarian assistance.

Students of Gulf English School Primary (GES) received the rare opportunity of interacting with Chris White, acclaimed UK Children’s author and poet. The workshop that was held at GES in conjunction with the Doha Book Fair at QNCC where Chris performed thereafter saw several fun-filled activities for the students; he drew examples from his own books, illustrations which are also his handiwork and of course recitals of his poetry. According to school authorities, the purpose of inviting a children’s author to GES was to ignite their minds with creativity and spontaneity. The author himself noted that the workshop was intended to get ‘kids’ creative juices flowing...to make it seem possible and within the children’s reach so that they want to create something special and unique.’

Let’s experience cultures! It is time for yet another year of diversity as Qatar Museums announces the launch of the Qatar-Turkey Year of Culture 2015. Q. As a citizen of the country to host the first Olympic Games, how important is this event to you? A. In the Antiquity, we had the Olympics Games for centuries. We had the honour of organizing the first Olympic Games of the New Era back in 1896. And 10 years ago we organized it again in 2004. We have a very strong National Olympic Committee. They are very active in participating in the work of the International Olympic Committee. We also host the International Olympic Academy in Greece which is an important vehicle to convey the ideals of the Olympic Movement, to the new generation. For every Greek the Olympic ideals and the Olympic Movement mirror his or her mind and life. Recently we had another important institution in Greece which is the International Centre for Olympic Truce. This Centre works so that during the Olympic Games people should live in peace and avoid war. This message of peace comes from the Antiquity since

at that time, during the Olympic Games, there were no wars. It shows that the Olympic ideals are not just sporting ideals. They are also a way to see the whole world and to see it through the eyes of peace and co-existence. Q. How important is sports to you? Have you visited sporting venues in Qatar? A. I was recently at the Opening Ceremony of the World Handball Championship. I was at the Lusail complex which is built by a company with seat in Greece. I also visited the other venue, close to Aspire Zone, where the Handball Games took place, is also built by a Greek company. Out of three venues, we have two built by Greek hands. Of course I have visited the Aspire installations which are for me impressive and I noticed that Qatar is one of the frontrunners in the area of international sports.

Q. What is your favourite sport? A. Many; I love Football. Since the Antiquity we have a lot of other sports that we practiced and which are considered traditional. For instance, we have the famous marathon which, in its classical way, is goes from the city of Marathon to Athens; 42 kilometres. This for me is the epitome of sports in Ancient Greece which survive until today and I was very pleased to hear that a marathon will be organized in Qatar. Another interesting area of sports is racing and skateboarding. This I see is popular in Qatar and Qatar has even produced a world champion in racing, Namer Al Attiyah.

Q. Can you tell us your definition of luxury? A. In the past the definition of luxury meant extravagant or expensive. Today, luxury especially in the hotel industry goes beyond the physical appearance of the building it is a much broader definition which extends to the levels of service and amenities. At Shangri-La Hotel, Doha luxury means personalized tailor-made service from the heart and attention to detail, it is making guests feel comfortable and special. Luxury is an experience. And the most important aspect is consistency in providing superior quality with an element of uniqueness.

Q. On being the first Shangri-La property in Doha: A. jobs washing dishes in hotels as I was saving for my first drum set. I then fell in love with the hospitality industry, I was fascinated with the diversity and the prospect of traveling the world and meeting new people and I knew it was my destiny.

I was always determined to join ShangriLa Hotels and Resorts as I was intrigued with the Asian hospitality and I have been working with Shangri-La for over 13 years. I love this job I can’t imagine doing anything else.

Q. What kind of boss are you? A. I am very direct. I am also down to earth. I enjoy interacting with people, I like to get close to my team I am a caring yet demanding and very detailed person, which is key in our industry. Attention to detail is vital. Being the General Manager of a preopening property, I was fortunate to be involved in the hiring process of every team member so we all have a very close bond.

F

ortunately writing doesn’t require much physical movement, as I am in my second day of recovery after training with World Champion Muay Thai Fighter Den Dong. The first recovery day: not bad at all. Then Day Two arrived, reminding me of how incredibly outof-shape I am. The cool thing about Den is that he knows how to make even the most inexperienced and far from in condition student feel perfectly comfortable and confident from the first moment, while at the same time being super critical and a stern taskmaster every step of the way. This guy is a great teacher. Interestingly enough, his beginning warm-up is called Wai Kru, which is a prayer-like ritual showing respect for your teacher (Kru means “teacher”). It’s a ritual that also asks your teacher and your parents for good luck in the upcoming fight. I’m proud to say I was able to successfully do that, and after seeing him in action, I added a few more people to my asking list! Accompanied by beautiful traditional Thai music, Den demonstrated the pre-fight dance ritual with intricate rhythm and footwork. The type of music and dance can give hints of what specific region the fighter’s style comes from. Next was stretching & cardio, which quickly made me regret smoking Double Apple Shisha the night before.

Once we were warmed up, Den got into the different punching, kicking and elbowing techniques, and then combined them into striking combo. Perhaps the most fascinating part of watching this world champion in action is how effortless he makes it look. The sheer power of his kicks, punches and elbows, and his lightning-fast moves leave you astounded and flustered. Yet he moves with such grace and elegance through all of this, feet angled for perfect balance and nimbleness at all times, and it’s quite artistic. As he walked me through the basics, Den kept yelling, “Stop looking at your feet! Never take your eye off of your target!” I learned that having an acute visualization of the target enables you to direct all of your power to it. Watching him reminded me of two things: seeing

the great opera singer Pavarotti sing, and the words of my trumpet teacher: “pick a spot in the back of the room and play directly to it.” Pavarotti used to stand very still, channeling all of his energy and breath with laser-like focus. When you focus on playing to a specific spot in the room, all of this energy creates a concentrated effect of immense and seemingly effortless power. When your weight shifts, movement & breathing are all in sync, the kind of power you can achieve is absolutely astounding. In music, the end result is a voice and sound that sends chills down your spine. In our Muay Thai session, it's the result that I’m still recovering from. Two concepts that were very familiar to me were the importance of practicing in slow motion in order to be able

to react and execute with lightening speed, and slow motion repetition. By slowing things down, you expose all of the imperfections of your technique. Isolating each move and doing them over and over slowly helps to build muscle-memory, eventually getting to the point where you don’t have to think about details…you just react. When I saw Den do some cool combo-moves, that reminded me of playing Mortal Combat on my Sega in the 90’s. I got excited and tried to do the same thing at the same speed, which forced him to yell at me “No! Wrong!! Slow down!! Start over!! Focus!!” So we broke down and isolated each move, repeated each move, and then combined them at probably one-twentieth of the speed I saw him do it at. Spending just ten minutes on one move helped to engrain it in my muscle memory, and that's when things started to flow. It was during the sidekick instruction when Den paid me my first and only compliment: “Ya!! You got it! Ya!! That’s it!!” I was able to hear and feel what a solid and correct kick was like. He had me repeat it to the point of exhaustion, but that single compliment provided enough encouragement to come back again and again. When a teacher can inspire one of the most clumsy and non-athletic people in Doha - me - to return to a Muay Thai class with such enthusiasm, confidence and curiosity, they’ve got to be doing something right. Den was able to introduce an ancient and complex tradition that by all rights should be intimidating, in an accessible, fun, encouraging and productive way that leaves you coming back for more.
