amadan Kareem and Eid Mubarak in advance! On the occasion of Eid Al Fitr, it’s a time to reflect upon ourselves and the success of this season that gives us patience, strength and humility. We at ABODE are very pleased to bring you this year’s Eid and summer issue, as this edition focuses on how this grand festival is celebrated across the nation – from parades and fireworks, to warm family gatherings. What’s more important than receiving gifts is the joy of giving them to your loved ones to make their day special, and this month our theme is glam, style and luxury so we’re showcasing some real treats to share. While we’re still reveling in the grandeur of iftars and suhoors with good food in mind, we urge you to take a look at our Eid listings as the city’s five-star hotels offer up a vibrant ambience and festivities to welcome you. ABODE: How was Sotra born and where does the name come from? MM: Sotra started as a bold fashion idea with humble beginnings of designs around a dining room table. Now it has successfully placed itself among the most popular brands with a shop located in one of the trendiest malls in Jeddah, Ana Special Mall. Sotra is an Arabic word meaning ‘jacket’ or a top clothing article. It is perfect because it sums up, and alludes to, modest clothing. It’s a time for peace and listening to intuition. A: What does the modern Arab woman want from a fashion house? MM: Arab women are no different than anywhere else in the world but the rich heritage of the Middle East could influence our aesthetic. We need lighter, cooler articles due to the climate but in the end we want something that flatters our body and makes us feel beautiful. A: What is your favourite thing about running your own business? MM: I love that it’s an evolving platform for self-expression. I need change and I need inspiration. Alexander McQueen a new era in fashion - there are “noIt'srules. It's all about the individual and personal style, wearing high-end, low-end, classic labels, and up-and-coming designers all together.

A

lexander McQueen has been hailed one of the most influential designers of his generation, and for good reason. With 37 stores around the world, McQueen has become a household name. After his untimely death in 2011, Savage Beauty was exhibited in his honour. Let’s take a closer look at the man behind the brand in the Savage Beauty Exhibition. Born in Lewisham, McQueen was the son of a London cab driver and the youngest of six children. At the tender age of just 21, McQueen relocated to London and applied for a job teaching pattern-cutting at Central Saint Martins. But

SAVAGE BEAUTY NOW ON AT THE V&A MUSEUM, LONDON instead of a job, he was offered a place on the school's distinguished MA course. It was at his graduation that McQueen, with the help of his friend and mentor Isabella Blow, displayed a remarkable ability. Through his designs, he was able to affect an audience whilst also creating a powerful theatrical experience. It was when Icelandic singer Bjork wore an early design of his for the cover of her album, Homogenic, that the Alexander McQueen label was born. During his time as Creative Director, McQueen was awarded the title "British Designer of the Year" four times between 1996 and 2003; he was also awarded the CBE and named International Designer of the Year by the Council of Fashion Designers in 2003. He has been the mastermind behind some of the most outrageous, creative and darkly beautiful runway shows of the 1990s, changing the way people perceive fashion, transforming it into a show rather than the ordinary way a collection is shown. He said in an interview once, ‘’I want to elevate my fashion shows from the mere mechanical act of showing fashion into a narrative medium". From the controversial ‘bumster’ trend to the scandalous ‘Widows of Culloden’, McQueen shocked and inspired the fashion world right up until his death. Shortly after his death in 2011, the Costume Institute at the Metropolitan Museum of Art in New York created the Savage

Beauty exhibition. In September 2013, the Victoria & Albert Museum in London started working on the exhibition with over 60 additions to the curation. Savage Beauty is a creative display of McQueen’s masterful tailoring and haute couture insight with an imagination that spanned from cryptic to glorious. Quoting Vogue’s editor Suzy Mences, "Clothes do not come to life by themselves, but from roots which are watered by the culture of their time.’’ When asked what kind of woman he wanted to dress, McQueen said "When you see a woman wearing McQueen, there's a certain hardness to the clothes that makes her look powerful. It kind of fends people off. You have to have a lot of balls to talk to a woman wearing my clothes."

he glimmer in Qatari/British Husnaa’s eye tell us she’s a force of passion and energy. This penchant for food, fashion and beauty is the perfect recipe and at just 22, she is definitely one to watch as it’s obvious that her talent and vivacious character is taking her on one, superstylish trajectory straight to success-ville!

ABODE: What inspired you to start blogging? HM: My inspiration came from 2 places, my hubby and father. They both pushed me to start working on a project to occupy my time and keep my mind busy. That’s when I started blogging and ‘EatSleepBeFancy’ was born. It has allowed me to combine my love for good food and fashion into one.

A: Describe the blogging scene in Qatar? HM: I still feel the term "blog" is fairly new here. There are few bloggers that represent Qatar or the "Middle Eastern woman" per-say, so I feel theres a great gap in the market for me. On that note though, we do need more Qatari women who can represent Qatar in a good light. In feel like in social media we don't have enough local women putting themselves forward.

A: Describe your own style HM: Sophisticated, classy & elegant.

A: Who are your style icons? HM: Sheikha Mozah! That may appear an obvious answer answer but I genuinely love her style and her persona. To me she defines elegance.

A: What are your goals as a blogger? HM: My main goal from the start has always been to remain relatable. It would be great to make it big and become a household name though, Inshallah.

A: What do you think are the traits audiences respect most in a blogger? HM: Again, being relatable. I also think being honest is important. For example, I would never represent a brand I have no interest in as that would be a contradiction to my followers.

A: What keeps followers coming back to you? HM: Maybe the fact that I am the only blogger in Qatar who really puts myself out there. I also try and come out with fun, new fashion trends that are easy to follow. Lastly, I try to represent myself as someone who could be appealing to the Eastern and Western market. I never want to limit myself to one audience.

A: What other bloggers do you follow/admire and why? HM: @thelondonite. She was the blogger who got me into, and taught me about, blogging. @dalalid. and @mythayelali. I love both of their style.

A: With the emergence of new social media sites, micro blogs and hugely popular visual platforms such as Instagram, how do you stand out? HM: I be myself!

A: Shoot us your best advice for anyone considering starting up their own blog. HM: Do it now, don't wait! If you have an idea put it to work, thats what I did.

Hair protection for summer

This is the season to double up on hair protection. Summer is here and all you can think of is – how do I get easy breezy hair and look stunning. Celebrity hairstylist Asgar Saboo shares his tips on how to achieve glamourous & shiny locks for the whole season. Yes, we have you covered!

Invest in haircare It’s important you start taking care of your hair at least 2 months prior to the summer kicking in. Invest in products that suit your hair type as opposed to buying expensive shampoos and conditioners which might not work for you. Consult your hairstylist if dry shampoos work for you. Hair once colored needs shampoos that can lock in moisture and prevent dryness and dullness.

Deep Condition Do a weekly deep conditioning treatment. Layer products to cater to your hair’s needs. If you have extremely dry hair, mix a blend of oils with your conditioner and leave it on overnight. For greasy hair, skip the oils and opt for a conditioner that softens the hair but doesn’t leave the hair feeling too oily. It’s all about customizing products to suit your specific hair type.

Trim it right Be sure to trim the ends of your hair every six weeks to avoid split ends and breakage.

Pamper, pamper, pamper!

Protect your hair • Use a heat protection spray before using any heat-styling tools on your hair. • Keep hair out of your face and in place with a scarf, tied as a bandana or styled like a 1950s movie star. Wrap just behind your hairline, allowing the ends to flow out the back. • Bandanas or kerchiefs are great for casual beach days, since they protect the hair from the sun. They also make fashionable accents for your chignon or ponytail. • To protect your hair further, apply a serum to towel-dabbed hair and follow it up with a heat protection spray. • Air-drying isn’t for everyone, especially women with frizz-prone hair. Switch to an ionic hair dryer (it dries faster without frying), use the cool setting whenever possible and create extra volume by lifting with your fingers at the roots since humidity makes hair limp. Apply a thick, creamy moisture mask to warm, damp hair and leave it on for at least five minutes, preferably under heat or wrapped in a warm towel, this is sure to boost your hair health.

BODE: Isabella, how would you describe your fragrances? IB: My fragrances are inspired by my journey in the Middle East. It’s been a journey of diversity in culture, religion and beliefs. A place where on one hand you find camels, falcons, desert and sea, and on the other you find the most amazingly breathtaking skyscrapers and the most luxurious and expensive cars in the world. It’s like a combination of New York, Los Angeles and Las Vegas. I think all these experiences in this country and of course the strong power of the oud add to it. I think you can find all these things in my line of perfumes. Each scent is developed carefully and inspired by Qatar’s diamonds, pearls and precious stones. Each fragrance has a touch of oud in different quantities and different kinds, but almost all contain it. The bottles have ribbons and each ribbon supports a cause. The pink supports cancer foundations, the black supports the suffering children and people we have lost in different circumstances. The white ribbon is a sign of peace and a call to stop war. A: How many fragrances are you launching into the Qatari market and what are the names? IB: We are going to launch various fragrances. The first launch will have 35 fragrances and we want to present one every day. The names are Al Mamlik, Al Mamlika, Al Malakiya, Yaqhout and Almas. We have different names most of them in Arabic but each one is related to the fragrance in a way.

A: How did the fragrance come to be? IB: I remember last year thinking about it, but this year I had the opportunity to make this dream a reality. I guess when you really want something and you spend so much time working on it, you don’t realise when it just happens. A: What make your perfumes so distinctive in the market? IB: Well, the fragrances are unique. They contain pure oil so they last longer. Most importantly, these fragrances are designed especially for you and no one else in the world has them. A: Why do you think your fragrances will have success in Qatar? IB: I don’t think about having success or not, I just love and enjoy what I am doing. A: Tell us about the design of the bottles? IB: The designs of the bottles are done by me and are pure crystal.

A: Tell us about the inspiration behind the aromas. IB: Every situation is an inspiration. Everything that surrounds me inspires me. But the first thing that comes to mind is my son. Also this country; the music, the people, the smells, the food. I think I love life so it’s easy to be inspired. A: How do you pick up the perfect scent? IB: I choose it depending on my mood. Sometimes I want to be calmed so the essence should not be too strong; a bit floral perhaps? Sometimes a hint of sweetness will enhance the life of it. At night something stronger with more personality. It depends on the situation. A: Will you be producing perfumes for men? IB: Yes we already have perfumes for men, but very soon we will launch the line in a very interesting way. I can’t wait to tell you all about it! A: Where can people buy your perfumes? IB: At the Meliá Hotel in West Bay.

L' essence Florale Christopher Chong Passion, Innocence and Intimacy – Red, White & Pink By Keertana Koduru

T

he energetic, enthusiastic, perfume perfectionist – Christopher Chong, Creative Director of Amouage spoke to ABODE about his new fragrance – Opus IX. Based in Amouage’s London office, Chong travels the world to meet with customers from all walks of life, sharing personal stories and journeys through perfumery – an aspect of his role he believes is one of the most rewarding. Known to be a respected craftsman who defies convention and pushes artistic boundaries, he defines himself by transferring his emotions into scents, allowing him to build a lasting legacy.

ABODE: What was your thought process behind Opus IX? CC: Inspired by one of Opera’s greatest romances, Giuseppe Verdi’s La Traviata, an adaptation of the novel La Dame aux Camelias, ‘The Lady of the Camellias’, I composed the fragrance to tell a story through the ingredients in 3 parts of the act. Act 1 – is all about the transparency in the form of jasmine & fuchsia. Act 2 depicts confrontation in the form of beeswax. The final act revolves around redemption and realisation in the form of leather, ambergris and civet. The strength of each ingredient portrays my love for the talent of Maria Callas in the 1958 Lisbon production of the Opera. A: How long does it take to create a perfume? CC: About 18 months all being well and up to 24 months otherwise. A: What changed your career from being an opera singer to a perfume creator? CC: Being a perfectionist, I wasn’t doing justice to the part I was playing in opera

A: Being part of so many operational functions of a company, which part do you enjoy the most? CC: I love doing what I do and I can’t imagine what I’ll be doing in 5 years because I’m fascinated with a lot of different activities around the world. My Publicist and I back in New York keep thinking of taking our love for music to the production room as well. Liking different genres of music, producing a fusion of Opera and pop is an idea that tickles me. But it’s always about going back to basics. Creating a scent is my calling.

A: If you had a whole day off to yourself, what would you do? CC: Run over to Mc Donalds, eat all day and be happy! A: If you were deserted on an island, what are the 3 things you would have on you without doubt? CC: My iPhone, my sanity and definitely water.

It’s every woman’s dream – a beauty treatment that helps you look slimmer. We decided to try out two treatments available in Doha to see if it is possible to drop a dress size at the spa and this is what we found out…

THE HIGH-TECH APPROACH We had heard about lipomassage through friends and were keen to give it a try, so we checked in at the LPG EndermoSpa & Beauty Center. The technique uses the Endermologie patented system by LPG, which is 100% natural and requires no invasive treatment, with the aim of slimming fat cells, smoothing cellulite, firming the skin and resculpting the figure. While we were advised that it would take at least five sessions before any result could be seen, it seemed worth waiting for. Each session lasts 35 minutes. The session starts with a personalized consultation. Afterwards, you are required to get into a special suit named ‘Endermowear’ and to lie down while a therapist uses a machine to give you a kind of high-tech massage. This includes a vacuum, which rolls over the skin to stimulate the blood circulation and drain the fat by the lymphatic system, then a cellulite treatment, before the therapist finishes off with a firming treatment. The first two stages – the suction and cellulite treatment – are a bit uncomfortable, though you can ask the therapist to turn down the intensity. However, the final firming treatment is like a deeply relaxing massage, perfectly timed at the end of your session. As I had suspected, I was told that the treatment will provide the best results if I also exercised regularly and watched what I ate. Lipomassage is recommended for people who, despite weight loss diets, can’t get rid of stubborn fat deposits such as ‘saddlebag thighs’ and for people who do practice a healthy lifestyle, yet suffer from cellulite, fat deposits or flabby skin. It’s also recommended for women trying to get back their pre-baby body or regain their figure after menopause. In my case, the results were subtle but noticeable. My trousers felt looser and I lost an impressive 4cm around the waist after five sessions.

Body sculpting

We decided to treat ourselves to the hour-long Body Lift Sculptor at the ultra-luxurious Spa by Clarins at Marsa Malaz Kempinski. According to the spa’s brochure, the treatment will intensively streamline body contours and help create a body that’s “firm, toned and silky smooth”.

The treatment began with a 15 minute steam room session, followed by skin diagnosis. The therapist then gave me a light massage to open up my lymph nodes and make the treatment more effective. I was then rubbed with an exfoliating lotion before the application of a sculpting cream to firm the skin and reduce the appearance of cellulite, while a special mask was applied to my thighs and tummy. Finally, the therapist rubbed in a moisturizing lotion and left me to float out of the room in a bubble of bliss. Over a cup of rose tea in the spa’s cafe, manager Esmerelda Van Der Westhuizen explained that the results differed from person to person, but the main benefits included cleansing and purifying, boosting circulation and potential loss of centimeters. It is a perfect treatment if you want to slink into a fitted dress for a big night out but, for longer term results, she recommended multiple sessions with (you guessed it) diet and exercise. “Someone who is already leading an active lifestyle, going to the gym and staying healthy, is more likely to see a better result,” she said. For me, there was no change in measurements after one session. However, my skin was super smooth and soft, while the appearance of cellulite and stretch marks was diminished. I would recommend a morning treatment before a big evening event, especially as you can also take advantage of the spa’s amazing facilities, such as the pool, sauna and relaxation area, for as long as you like. Want to get a healthier body or lose some weight? Abode asked Doha-based wellness company Evolve to provide their top tips.

F

aced with fast-food outlets along every major road, it can be pretty hard to stick to a healthy diet in Doha. With this in mind, we asked Evolve, formerly known as Fitness with Food, to put together an eating plan for our readers. The result is the Better Body Plan, a five day guide full of delicious healthy meals and snacks. In line with the trend towards ‘clean eating’, which is all about ditching processed foods in favor of whole foods, the plan’s focus is to promote a better approach to nutrition, though losing weight can be a pleasant side effect! Evolve founder Haitham Khalid, a personal trainer and Le Cordon Bleu trained chef, said people who usually ate a lot of refined sugar and fat would notice multiple benefits once they started the plan.

“They will be getting more nutrients, so they will feel more energized, and they may lose some weight…they are going to be cutting out most of the refined carbs in their diet and replacing them with more complex carbohydrates and a lot more vegetables.” Helpful Hints • The plan is based on sensible eating with regular activity. To achieve or maintain a healthy weight – aim to exercise at least three times a week. • Try following the plan for five days a week for two weeks. Be more relaxed on the two ‘off’ days each week but don’t abandon healthy eating altogether. Repeat some of the meals from the plan that you really liked. • Aim to drink two to three litres of water that has a PH level of 7 or above every day. • All dinners should take only about 20 minutes to prepare. • Try to buy all organic produce if possible.

Chicken, orange and pomegranate salad Serves 4

Ingredients > 4 large oranges, peeled and thinly sliced > 5 tablespoons olive oil > Juice of ¼ lemon > A handful of coriander, chopped > 200g pomegranate seeds > 4 skinless chicken breasts, cut into strips > Freshly ground black pepper

Procedure 1) Place the orange slices in a large mixing bowl. Add 3 tablespoons of olive oil, plus lemon juice, coriander and pomegranate seeds. Toss well and set aside to marinate. 2) Heat the remaining oil in a stick grill pan and sear the chicken over high heat for about 3 minutes on each side, or until cooked through. 1. KICK BACKS Start from a kneeling position with your palms on the floor and the knees forming a 90 degree angle. Your hands should be shoulder apart. Exhale while lifting your right leg and ensure your upper leg is in line with the back while your knee maintains the same 90 degrees angle. Inhale and go back to initial position, then repeat movement using the other leg. This counts as 1 time repetition. Perform 3 sets of 12 repetitions.

2. CALF RAISES With your feet slightly apart at shoulder length, raise your heels until you are on your tip toes. Stay with your heels raised for 3 to 4 seconds and return to original position. Perform 3 sets of 12 repetitions.

4. SCISSORS KICK Start by lying down on an exercise mat with your legs stretched and your hands next to your body. Lift your legs slightly above ground and perform the scissor kick by crossing your legs together, alternating left above right and vice versa. Perform 3 sets of 12 repetitions.

Add Class with a Formal Table Setting Even if you are having a casual dinner party, setting a table the right way can sometimes be tricky. For a simple table setting first set your charger on the table and then place your dinner plate, salad plate, and top it off with a nice napkin. Set the salad fork first and the dinner fork on the left hand side of your plate. On the right hand side place the dinner knife, soup spoon, and tea spoon. You’ll be saying “bon appétit” in no time!

Choose a Magical Location There is nothing more dreamlike than dining alfresco either outdoors on your patio, balcony, or on a rooftop! Try to find an outdoor location, and if you’re lucky choose one with a fabulous view of the city or ocean. Eid Mubarak! Abode looks at the cultural traditions behind Eid al Fitr and how it is celebrated in Qatar By Dawn Gibson

G

ratitude. Family. Kindness. Generosity. Joy. Eid al Fitr is a magical time of year, an important holiday that will be celebrated by millions of Muslims all around the world this July.

One of two Eid celebrations held during the year (the other is Eid al Adha), Eid al Fitr means ‘festival of breaking of the fast’ in Arabic as it is held to mark the end of Ramadan, the Islamic Holy Month of praying and fasting. In Qatar, Eid al Fitr is recognized as a three-day public holiday, a happy occasion that involves people travelling from home to home visiting family members and enjoying sumptuous, elaborately prepared feasts, as well as gravitating to public parks and places to celebrate throughout the country. Both Eid festivals are held to show gratitude and thankfulness to Allah. The festivals were established by Prophet Muhammad (Peace Be Upon Him) in Medina after the migration from Mecca. Eid al Fitr is marked at the start of the month of Shawwal. The first day, families gather to share a meal during daylight hours after Ramadan, so there's a particular emphasis on enjoying celebratory food - especially sweets. Muslims start the Day of Eid with a small breakfast, typically including dates, before attending Eid Salat, a special prayer service traditionally held in a large hall or big outdoor area. Before taking part in the Eid prayers, Muslims give Sadaqa al Fitr, a small amount of food that is provided in charity to families or individuals in the community who do not have enough to eat. Traditionally, non-perishable basic foods such as flour, rice, barley, dates and raisins are donated for Sadaqa al Fitr, but some Islamic charities accept donations to buy food for distribution to needy people or those in areas affected by war or natural disaster.

Fabulous Food It wouldn’t be Eid al Fitr without amazing family meals comprising dish after dish of mouth-watering delicacies, enjoyed by young and old. Specially prepared dishes vary widely around the world, but some are known across a number of countries. As Eid al Fitr is also known as the ‘Sweet Festival’ or ‘Sweet Eid’ due to the mind-boggling array of sweet treats on offer, it is not surprising that ma’amoul is a firm favorite. These tasty shortbreads, popular across the Gulf and Levantine countries, are traditionally filled with dates, pistachios, walnuts, figs and almonds. You will find ma’amoul for sale in the supermarket but the best are naturally home-made. More filling fare includes harissa, a dish of roughly-ground wheat mixed with meat that looks a bit like porridge, slow-cooked spicy lamb and chicken, meat stews, debyaza (an apricot pudding with nuts, dates and raisins which needs to be prepared three days in advance) and umm ali, a delicious bread and butter pudding. Other favorites include sheer khurma, the sweet breakfast dish made of saviyaan pasta cooked with dates in milk, special biriyanis and divine tagines. If you are not enjoying the celebrations at a Muslim family home, but would like to experience what Eid al Fitr specialties are all about, Doha’s hotels and restaurants pride themselves on presenting sumptuous holiday buffet feasts that will introduce you to all the spiciness and sweetness of this special cuisine.

Other traditions include giving to charity in general, going to mosque for Fajr (dawn) prayer, greeting other Muslims with an ‘Eid Mubarak’ and a general spirit of goodwill within the community. Naturally, family time is incredibly important and many Eid traditions are based around the traditional trooping around relatives’ homes in your best clothes to socialize, give gifts (especially to children) and appreciate the lovingly prepared home-made holiday dishes.

It's customary to greet people during the holiday with ‘Eid Mubārak’, meaning 'Blessed Eid', or ‘Eid Sa‘īd’ (Happy Eid).

Celebrating Eid in Qatar Qatar comes to life during Eid with colourful celebrations throughout the country. It’s a wonderful time to get together with family and friends to experience some of the many activities put on by Qatar Tourism Authority, other government agencies, shopping malls and major public attractions. The fireworks show at Katara is always spectacular and traditionally takes place every evening over the first three days of Eid. If you want to watch the show from Katara or the Corniche, aim to get there during the afternoon as the traffic build up is intense. Katara also hosts a variety of Eid entertainment for little kids and big kids alike. More family entertainment can be found at Souq Waqif, which has previously held circus shows, games, art displays and concerts. The boardwalk of The Pearl is another great area for Eid festivities with shows, balloons for the kids and face-painting among the usual drawcards. Eid is also a perfect time to pay a visit to one of Doha’s many malls. Not only is it a great way to beat the summer heat in air-conditioned comfort, but expect to pick up some bargains or receive free gifts with many purchases in line with the spirit of giving that marks the holiday. The little ones will be kept entertained with performances featuring popular children’s characters, as well as clown shows, balloons, dancers and oud players.

DatEs Eid al Fitr is expected to take place from 18 to 20 July. The date cannot be accurately predicted on the Gregorian (Western) calendar because the Muslim calendar is lunar. Ramadan ends after a confirmed sighting of the new moon.

The newly opened ‘French Olive’ on C-Ring Road, Al Sadd area is full of surprises. Stylish décor, divine cuisine and good service make it one of our new favourite places in town. When I discovered a new Italian eatery had opened in Doha, I knew I had to sample its delights! The restaurant has a pleasingly eclectic interior design with different seating areas setting the perfect atmosphere for breakfast, lunch or dinner. Enjoy the changing ambience from relaxing and laid back to vibrant and animated as day turns to night. The menu has it’s roots in all the right places as their talented chefs cook and bake everything from scratch whilst honouring two of the most renowned

cuisines of the world: Italian and French. What makes the different are the organic, finest ingredients they use. It also brings something extra special to Doha: a truly Italian approach to food. I am personally an Italian food lover, so it was right up my culinary alley. For starters we shared two salads. The Caprese salad with it’s mouthwatering buffalo mozzarella, roma tomatoes and fresh basil didn’t disappoint. Then came the Portobello salad which comprised of white quinoa, avocado, cherry tomatoes,

red peppers and of course the essential ingredient, portobello mushrooms. The salad was set off beautifully with a chervil herb dressing. I found these salads to be a healthy yet tasty choice. Now, to the main course! Tagliatelle alla Sorrentina with it’s homemade tagliatelle pasta, cherry tomatoes, buffalo mozzarella and basil was a treat! Then we sampled the Pizza Valtellina with its crispy and thin base, baked to perfection with tangy tomato sauce, mozzarella, cured beef bresaola and fresh rucola to top it off! We also had some fresh fish and vegetables, Branzino, spinach, buttered seasonal baby vegetables and roasted potatoes. For drinks we were surprised with the wide selection of refreshing mocktails. First up, we tried “The French Olive

Italian Sorbets

Booster”, a healthy mix of carrot, beetroot, red grape, orange, ginger and green tea. It was not only delicious but also rich in vitamin A, calcium, phosphorus, iron. They then poured us an “Appletini”; a freshly pressed apple juice with lemon. So simple yet totally refreshing. We wrap up a perfect lunch with a sample of their yummy desserts which came from a good variety of French pastries and Italian sorbet. I have to say the French pastries were so well presented and incredibly fresh but nothing beat the Sorbets “Ne Plus Ultra”. I have to give it an 11 out of 10! I can't think of anywhere else in Doha that offers such an authentic Italian eating experience, fine décor and good service. I will definitely be coming back for more.

This is a great recipe for Eid and an absolutely delightful dish - Moroccan-Style Couscous with Seven Vegetables. Steamed couscous is piled high with stewed meat and succulent veggies. Based on the meat you use, it's easy to make and will satisfy the whole family. Beef takes the longest time to cook - 2 hours, whereas lamb and chicken take 1.5 hours and 30 minutes respectively. step 1 PREPARE THE ingredients: 1 kg of couscous 1 kg of meat 1 tea cup oil 150 gms onion /cut cups Salt to taste 1 tsp black mix Moroccan spice (Black pepper) 1 tsp saffron 1 tsp ginger 500 gms carrots 500 gms white turnips 300 gms pumpkin yellow 500 gms zucchini 300 gms cabbage 500 gms tomatoes (washed and still its skin and seeds, cut into small pieces 50 gms fresh coriander Water (about 3 litres) 100 grams of chickpeas soaked in water and washed well

• Place the meat into the bottom part of the couscoussier along with onions and tomatoes and pour water and oil to form a thick sauce.

step 2 • Place the couscous in the top pot painted with a little oil and put it on the top to cook for a second time.

• Add spices such as salt and black pepper, saffron and ginger to the mixture.

• When steam ascends heavily over couscous, lift from the pot and pour the couscous in a bowl and add a quarter litre of cold water and mix with hands lightly in order to separate the grains from each other.

Method: • Place 1 kg of couscous in the steamer painted with a little oil and pour half a litre of salted water and mix well to separate the grains and then add two tbsp of oil to the mixture. • Allow to cook in the steamer until heavy steams appear.

• Add the chickpeas, carrots, turnips, zucchini, pumpkin and cabbage. Also add the string tied bouquet coriander and sufficient water to into the bottom pot and stir till the cooking is complete over medium heat.

step 5 Serving: Place the couscous in a round bowl as shown and make a hole through the middle to place the meat in the centre. Place the vegetables around the meat to decorate the dish as shown and serve hot with extra sauce on the side!

• Return the couscous to the top vessel to be cooked again for about half an hour for the third time. Once the steam rises over the couscous, lift the pot (steamer) and place in a bowl and sprinkle water to separate the grains which are still hot.

with pecan nut and cheese, lemon and honey dressing Ingredients > 5 dragon fruit 50 gms > strawberry 50 gms > mandarin segment 50 gms > sweet melon 20 gm > water melon 50 gms > pineapple 50 gms > grapefruit segment 20 gms > assorted mixed leaves lettuce 200 gms Lemon and honey dressing: > 1/2 cup Extra Virgin Olive Oil > 4 tablespoons Lemon Juice > 3 tablespoons Honey > Sea Salt > Ground Black Pepper

Ingredients > 180 gm of fillet of beef fillet > 3 big size potatoes > butter 300gms > pepper 2tbsp > vegetable oil 100ml > pecan nuts 80gms > mixed herbs 30gms > bread crumbs 50gms > dijon mustard 20gms > wild mushrooms 200gms > double cream 50 ml > celeriac 80gms > baby carrot with leaves 80gms > asparagus 30gms > beef sauce 30ml

Procedure

1) Cut the fruits into baton shape, vacuum pack it, and keep aside. 2) Mix the assorted lettuce and soak in the ice water so they look fresh and crispy 3) Put half of the lettuce on the plate, and arrange the cut fruits gently over it 4) Put another half of the mixed lettuce on top of it 5) Sprinkle some crushed pecan nuts 6) Season with rock salt and crushed pepper 7) Drizzle a few drops of lemon and honey dressing.

1) Cook the beef tenderloin in the sous vide at 55 degrees centigrade for 30 minutes and keep aside. 2) Make a crust of pecan nuts and herbs. 3) Peel potatoes and make thin slices, add melted butter and mix well. Layer the sliced potatoes in a deep tray and season well. 4) Once the tray is full, cover it with aluminium foil and cook for 1 ½ hours until the potatoes are fully cooked. Once the potatoes are cooked, place a tray on top of that just fits into the tray and distribute weights on top. 5) Leave overnight in the fridge to press and set. 6) Sauté mushrooms in butter add little cream and make a fine puree. 7) Dice celeriac cubes and cook in salted water. 8) Sauté the celeriac cubes until golden brown. Boil baby carrots and keep it warm. 9) Once the beef is cooked remove from the bag, heat oil in a pan and brown evenly on all sides. 10) Apply a little bit of mustard paste and cover the beef with the crust gently.

Lemon and honey dressing 1) Take a mixing bowl and add lemon juice and vinegar and whisk it. Add honey and season with salt and pepper and Serve!

Assembling: Place the mushroom puree on the plate. Put the beef on the side and the pomme anna beside that, arrange the celeriac and carrots around. Put beef just as required.

Procedure 1) Take the digestive biscuit and make a crumble 2) Toast the pecan nuts and chop it roughly into small pieces 3) Mix the crumble and the pecan nuts with butter and icing sugar. 4) Take a spring form pan and arrange the crust in the bottom pressing thoroughly with your fingers and refrigerate it for 30mins. 5) Mix cream cheese and sugar and add the labneh and vanilla bean to it and keep aside. 6) Soak the gelatin leaves in cold ice water. When it becomes loose, melt it and add to the cream and mix it well. 7) Mix the cream and the cheese gently and keep aside.

8) Place the Gulab jamuns on the crust evenly and then pour the mixture over it covering all the Gulab jamun evenly. 9) Refrigerate for minimum 2-3 hours to set the cake.

AMIRA FOUAD: Bridging Cultures

Pianist Amira Fouad has performed at some of the world’s best concert halls with the likes of London’s Royal Philharmonic Orchestra. She spoke to Abode about her work as the founder and artistic director of Qatar Music and Arts and how it feels to meet a Prince.

A

mira Fouad is one of those people who always seem to be working on a dozen projects at any one time. Beginning her musical studies at the tender age of five, she now juggles performances around the globe as a concert pianist with work as an educator and artistic director, bringing together artists across cultures.

Q: What’s on your agenda right now? A: I’m working on solo and chamber music recitals for audiences in the UK, Europe and the Middle East. I’m also involved in educational projects with the Royal College of Music in London, where I completed my Master of Music, the English Chamber Orchestra and Royal Albert Hall. Q: How did you get involved in the music scene in the Arab world? A: I was born in Scotland to Egyptian parents and we moved to Canada when I was five. My musical relationship

with Egypt started very soon after my graduation when I was invited to perform at the Cairo Opera House and subsequently to tour the region under the British Council. Q: How did Qatar Music and Arts come about? A: I moved to Qatar in 2009 and at that time it was just the beginning for music and concert venues in Doha – Katara was not yet open, neither was the Qatar Music Academy or the Qatar National Convention Centre. I was asked to do a number of musical projects – I started performing concerts and soon my role in Doha developed to artistic direction of concerts, such as the Encore! series at the St. Regis Doha, master classes, outreach

programmes, working with touring orchestras and directing music in London and Edinburgh for Qatar UK 2013! So, I needed to establish an organization that could hold a diverse range of artistic events. While I have returned to the UK, Qatar Music and Arts continues and we will be announcing some new projects soon. Q: What are your favorite memories of living in Qatar? A: When the British Ambassador asked me to artistically direct the music for the 2013 Doha visit of His Royal Highness, the Prince of Wales, and Her Royal Highness, the Duchess of Cornwall. I created a collaboration of artists from the UK and Qatar by inviting scholars from the Royal College of Music to perform alongside students from the Qatar Music Academy and musicians from the Qatar Philharmonic Orchestra. The Royal couple was so engaging, while the children were beside themselves with excitement.

Tie your hair up into a tight and smooth high ponytail. For a quick and easy routine, use the round “donut” – place it at the root of your ponytail. Now, working through sections of the ponytail, wrap the hair around the donut securing it with hair pins. Smooth and fix the hair with a final spray of Kerastase 'Laque Couture. This style works for any occasion just like the little black dress.

Make a side partition on the front of your head, curl your hair, and tie it all up into one low side ponytail. Don’t make it too tight. The hair must look loose on the sides.

Now, working through small sections of your curled hair from the ponytail, take each section from bottom to the top of the ponytail and fix it using hair pins all around the pony tail until you have a nice, round bun. This will give your bun volume and creates the perfect low bun with just enough curls for that romantic feel.

Make two sections of your hair- front and back. Work on the hair at the back to create a tight ponytail. Then do a low bun and secure it with a few hair pins. Now create a large loose braid with the hair at the front, gently tugging the hair with your fingers to give it some volume. Run the braid along the side brining it down to the root of your low bun at the back. Voila! This style is so easy and works for an evening out or a casual laid-back look!
