DEAR READERS, It's my pleasure to welcome you to the November edition of ABODE, where we've filled our pages with some truly fashion-forward content, celebrity interviews, local flavour and much more. First I must take a moment to acknowledge a milestone event for our very own AHB Group as we celebrated the recent grand opening of iconic British brand Harry Ramsden's World Famous Fish & Chips which marks its first restaurant in the Middle East at The Pearl-Qatar. As the local franchising partner for Harry Ramsden's AHB Group is proud to bring diners in Doha a taste of Britain that they won't soon forget. Then in People and Society we turn our attention towards local author and businesswoman Caroline Carpentier, whose upcoming release Qatar Success Stories: Leading Institutions highlights the local businesses that have grown into key national players in Qatar's rapidly developing economic landscape. aray Spa, located in the Marriott Marquis City Center Doha Hotel, gives you a change to experience a traditional Moroccan Hammam ritual - 75 minutes of bliss! A hammam is a steam room, similar to a Turkish bath, where Moroccans habitually go each week to cleanse themselves.

The hammam is an incredibly important part of Moroccan culture and life; men, women and children will visit their local hammam at least once a week, and spend two or three hours there (sometimes even longer!), catching up on gossip with their friends while following the long rituals to cleanse their bodies until their skin glows. During Roman times the hamman ritual was well integrated into the culture. The same place was called Spa from the latin word salus per aguam meaning "health by or through water". Istanbul also has public hammams. Luckily for us, right in the centre of Doha at The Marriott Marquis Hotel, we can indulge in a private Moroccan Ritual that will add a glow to your skin and give you an exquisite and sophisticated experience. The treatment starts with a shower, following which you will be directed to lay down on a hot marble bed covered with soft towels, accompanied by some very relaxing music that will drive your senses to live a quintessential experience. Black soap mixed with eucalyptus sits on your skin for a few minutes followed by a scrub. Your body will feel lighter, and the skin feels supple soon after the application of Saray Spa brand dead sea clay. Soft rose water foam cleans off excess soap, and your skin feels brand new. The ritual ends with a soft back massage using rose oil. Further indulging the senses, you're directed to a resting area where you can choose from tea or lemon water. Margaret Zhang shares her stunning take on Swarovski's Fall/Winter 2015-2016 Collection. The international icon flew to Dubai to shoot the collection through her eyes, and she posed for the camera too! Styled with Margaret's iconic vision and her personal fashion layering style, the looks draw together different textures and colours for an exclusive and unique interpretation of the collection. But, as an Australian, I make a habit of chasing summer around the world, and Dubai has always been on my checklist. A common misconception about dressing for the heat is that, all of a sudden, we can’t wear more than one garment at a time. Of course, you wouldn’t want to be hauling yourself through the desert in overcoats and leather, but pairing light basics with structured pieces, breezy trousers and midiskirts can make for some very high level and accessible day-tonight and office-to-occasion looks that push the boundaries a little. In order to transform the look all you need to do is switch up the degree of sparkle in your jewelry or maybe try something unconventional like a watch as a choker, or a necklace as a belt.”




FRANCESCO SCOGNAMIGLIO Fall/ Winter 2015 Collection. The collection is inspired by the many forms of art surrounding the city of Naples. Once again this season the opulence of flowers such as the iris drive inspiration to amazing results. The best dress of the collection was modestly inclined, in pink dĂŠvorĂŠ velvet with threequarter sleeves, an anklelength hem, and a loose belt around the natural waist. Very romantic, sensual without edging toward the indiscreet. A pair of long coats with generously proportioned belts suggested that Scognamiglio is more than capable of everyday delights; on the other hand, the sheared black lamb duster, lined with pink satin quilted in an elaborate rose motif, was hardly the stuff of morning commutes! ABODE: What drives your creativity and influenced your autumn/ winter 2015 collection? Francesco Scognamiglio: My city Naples in southern Italy. Its effortless sense of beauty transcends in every corner. It's through art in its multiple facets that I am inspired to draw these amazing chiffon dresses that flutter in the air. The iris flower inspires my designs. When I print them on silk, I believe it's like oil on canvas, BODE has an exclusive interview with the man who has the finale is timelessly beautiful as in antique paintings. The designed iconic clothes for Madonna, Lady Gaga and passion behind the history of my city motivates me and creates Rhianna. the conditions to produce something special.

ABODE: Hello Francesco, thank you for this exclusive interview with ABODE magazine. You are now one of the biggest names in the Italian fashion scene. To what do you attribute your success? Francesco Scognamiglio: I have dedicated my entire existence to fashion. It's been more than 18 years since my first show in Milan, and I believe my success is definitely due to the fact that I never stop in front of any hurdle. I believe that hard work pays off, and that if you are passionate about the things you do, you create the conditions for success.

ABODE: You have dressed some of the hottest icons of the century, from Madonna to Lady Gaga. Who is your muse? Francesco Scognamiglio: My muse is and will be forever be my mother. I lost her eight years ago. She is the only reason of my life and she was the only person who has believed in me since I was a child. A wonderful and elegant angel who still inspires me dayby-day to do even better. ABODE: Where does the white and flawless obsession on your catwalk come from?

Francesco Scognamiglio: It's all about feelings. It's so hard to think of a new collection every six months and create something different. People can't imagine how hard it is so in each season it's like a new story. My heart is open as If I'm reading a new book but the characters are familiar. There is always something old that mixes with new feelings and drives my creativity. ABODE: You have created some amazing iconic clothes and managed to create Maison Francesco Scognamiglio in only one decade. What has been your driving strength? Francesco Scognamiglio: Only passion. ABODE: In the Arab world there is a great interest in perfumes. Are you considering creating one? Francesco Scognamiglio: Sure, but for now it's too early to talk about it. It is one of my next thoughts. I already have in mind the concept. I created my fragrance in New York last year with this good friend of mine who also happens to be one of the seven best noses in the world of fragrance.

e would say "elegant, stylish and beautiful" best describes Lia Makrigeni, our blogger of the month, but let's find out how she sees the world - in her own words!

ABODE: Hi Lia, could you start by telling us a little bit about yourself?

ABODE: What do you think will be the big hits fashion-wise for next season?

LIA: My name is Evangelia Makrigeni, but since I was a kid people have called me Lia. I'm the founder of Sparkling Bubbles Fashion Blog. Though I'm Greek, I've moved to Qatar seven months ago because of my husband's job. I'm an Aries, I love travelling, and I am obsessed with flat boots and leather jackets. My big love, though, is my dog that I have here with me in Qatar. I try to be happy every day because that is all that matters.

LIA: Don’t give away your floral. It will be a must for Spring-Summer 2016. Also: slouchy but chic pants, and summer white.

ABODE: Can you tell us about your blog and what inspired you to start it? LIA: I started my blog in 2012, but I wasn’t so active then. I can’t say that I was inspired by something because I have always followed fashion in a more amateur way; but if something pushed me (to get serious about the blog), I would say it was my first time in Paris.

ABODE: How would you describe your own personal style? LIA: Feminine-classy but always unique.

ABODE: What was your primary reason for going to Paris Fashion Week?

ABODE: What do you feel you get out of Paris Fashion Week? LIA: It’s always awesome to get to see what is going on with the next season in fashion, as well as meeting friends that you have worked with before, plus some new people which will be good for collaborations in the future.

ABODE: Do you have any fashion rules when putting an outfit together? LIA: Rules are made to be broken! Clutches are not just for the evening and sneakers not just for the gym.

ABODE: What’s your next fashion must have? LIA: I would say a jumpsuit, comfy and chic.

ABODE: You have a lot of followers on Instagram, how did you do this? How do you keep them?

LIA: I've attended Paris Fashion Week for the last two years, but this October ABODE magazine was a good excuse to attend again and take over the magazine's Instagram. Also, I wanted to support designer friends that I’ve worked with in the past.

LIA: I think they never get bored. I try to upload pictures almost everyday. They know my style. Also, I have many followers from the collaborations and the photos that I am tagged in with big brands and photographers.

“Queen of the Desert” INTERVIEW WITH

icole Kidman on taking her kids along with her to film in the Moroccan desert for her latest movie ‘Queen of the Desert’, riding a camel, broadening her horizons and more…

The film, directed by Werner Herzog, is in competition at the 2015 Berlin International Film Festival. The Australian actress looked stunning as she walked the red carpet in a white vintage-inspired couture dress designed by Maison Valentino. In ‘Queen of the Desert’, Nicole plays Gertrude Bell, who has gone down in history as the ‘female Lawrence of Arabia’ for playing a key role in setting the course for the new political order in the Middle East around 1920.

James Franco and Damian Lewis also star in the film as Kidman’s on-screen lovers. In Berlin, Nicole spoke about how Werner Herzog set up a tent so that her kids could join her while she was shooting in the Moroccan desert. She also talked about the incredible experience she had making this movie, broadening her horizons, riding a camel and more… Q: Nicole, you shot this movie in extreme conditions in the desert. Why did you choose to do this? NICOLE KIDMAN: I think I’m an adventurer, you know, I love to travel and I love to be exposed to different cultures, different people, particularly as I get older I want to broaden myself more. I don’t want to become smaller and more isolated, I want

celebrityinterview to become more engaged and more outgoing. So the idea of going to Morocco with Werner Herzog was in that vein of exploring and pushing out of my comfort zone. Q: What was it like shooting in the desert and how did being there help you with your role? NICOLE KIDMAN: I think the location and, you know, obviously that Werner [Herzog] chooses to go to the places that his movies are set. I mean he’s not a green screen kind of guy. So I think the beauty of being in that landscape, and I have a huge love of the desert, certainly helps to infiltrate those relationships. One of my favourite sequences in the movie is actually when we are climbing up this weird, little tower and we see the vulture which Werner found on the side of a road and asked would he be in the film - the vulture’s owner [laughs]. And so we got lucky to get that vulture. And then when we [Kidman and Franco] run off the desert and they do that wonderful shot and we get to kiss in this vast landscape in this desert and that’s just exquisite as an actor to be doing that in the actual place that we’re meant to be. So the adventure of this movie was also part of the intoxication of it for me.

letters and diaries. She would bathe like that outside under the stars and I thought that was such a great thing, because it really shows this woman’s love of the world that she becomes a part of. I think a woman in that era, even a woman now, who chooses to go out and live like that is an unusual, extraordinary person and I was so glad that I got the chance that I got to explore her. Q: Is it more difficult to play a real-life character, like Gertrude Bell or Grace of Monaco, or a fictional one? NICOLE KIDMAN: It depends on what’s trying to be achieved with the project. Whether they’ve existed in real life or whether they’re fictional doesn’t really affect me except if you’ve got to find the right sound. Because Gertrude is not known to people, Werner was adamant that we just create her and her essence appropriate for the story. So that’s very different from doing something like Virginia Woolf where I had to listen to her voice and find her cadence. And then, you know, (with) Martha Martha Gellhorn also there was certainly a lot of footage on her. And then for something like Grace, obviously trying to really capture her sound and the way she looked whether succeeding or failing, it’s still an attempt. If it's fictional, I suppose it's finding the essence and the truth and all of the complexities of the character, finding a strong backstory because that’s the sort of research you do leading up to playing the role. Whether you discard it or use it is up to the director.

Q: Being a mother, what was it like having to uproot to Morocco with your family to film? NICOLE KIDMAN: I’m at a place in my life where I’m looking to go to different countries, always be exploring stories and pushing out of my comfort zone. I don’t want to be just sitting at home and driving to the studio to make a movie. So when Werner said would I go to Morocco and live in the desert with him, I said, ‘Can I bring my children?’ And he said, ‘Yes, there will be a tent for your children.’[laughs] And so that’s what we did. As I say, I think Werner’s filmmaking requires him to be in the actual places that he’s shooting and that’s the glorious part of it. And I just remember when I arrived in Merzouga and I went ‘Ahh’. I mean, for me, not seeing anything but just horizon and being told I had to get on a camel that afternoon after getting off the plane and learn to ride a camel is right up my alley. And from that point on, just doing things that I’ve never done before and probably will never do again. I was able to sleep under the stars and see the night sky from that particular part of the world. It was just an exquisite memory for me now, etched there forever. Q: You asked Werner to add the scene where you take a bath – is that right? NICOLE KIDMAN: That’s what Gertrude did, it’s in a lot of her

Q: James Franco was saying that his first day on set with you Werner told you to get on some horses and ride? NICOLE KIDMAN: [laughs] I said to James [Franco], ‘Can you ride?’ And he went, ‘A little bit.’ And I said, ‘Do you feel safe?’ He went, ‘Let’s just go for it’, which was basically what we did through the whole film - just go for it. Q: Would you work with Werner again in even harsher or grittier circumstances? He’s known as quite an extreme filmmaker. NICOLE KIDMAN: My vision of Werner him running across the sand dunes because he doesn’t like using the walkie talkies right? He would run 10 minutes to come and deliver a message which was, ‘Quick get over here, we need this shot.’ He’s authentic and I love that and I love that he’s out there doing it. His crew is with him and there were times when due to circumstances we were being rained out and we just had to shoot because that’s this type of filmmaking. So he just adapted the scene to have an enormous amount of rain and we kind of just shot through the rain. That's part of the adrenaline rush of


making a movie with Werner. I would actually relish the idea of give me a history lesson on it all and he’s like, ‘Nicole, this is too going somewhere else and doing something like that. As I said, extensive. I cannot do this.’ is Werner sort of against the world. Against nature. Q: Finally, what did you know about Gertrude Bell before Q: Has your own personal point of view changed about what making the movie and what surprised you most about is going on today through this historical background that you her life? NICOLE KIDMAN: Unfortunately, I knew nothing about her so had to play in this film? NICOLE KIDMAN: Such a complicated question. I mean when that’s partly the reason I wanted to make the film. I wanted we were out there… no, I think what’s so beautiful about this people to know about her. She was such an important part movie is that you just see how exquisite that region is. The of our history and I’ve subsequently studied her, I’ve read the desert and the people and being a part of it certainly gives you books that have been written about her, read the letters and a strong affinity for it, but I’ve always felt a pull towards the I’m amazed that she wasn’t written about and that we haven’t desert. That’s probably the greatest pull for me is going places, studied her. We talk about Lawrence of Arabia but we’ve never broadening my horizons, broadening my thinking and being heard of Gertrude Bell. Freckles are beautiful. I personally lean more towards flaunting than concealing them, but if I wished to hide them, using a full coverage foundation can lessen or completely eliminate the freckles from sight. My favourite to use is Kat Von D’s Lock It Foundation.

There are all sorts of tips and tricks to get rid of puffy morning eyes. Setting semi-frozen green tea bags on your eyes for 5-10 minutes helps reduce the inflated area. As for the dark circles, you solve that problem by making sure you get enough sleep (they say ‘beauty sleep’ for a reason). Dark circles are a product of fatigue, but you may also be genetically susceptible, as the tendency to develop them can be inherited. Make sure that you’re staying hydrated and using creams and serums that are specifically for use around the eye area.

Practice truly does make perfect. Abide by the ‘less is more’ ideal. Don't forget to tone and moisturize five to eight minutes prior to your makeup.

STEP 1: Priming, Foundation and Concealing Applying a primer will ensure that your makeup will stay in place throughout the day. Follow that with application of your foundation; my favourite is Kat Von D’s Lock-It. It’s like real-life Photoshop in a container! Apply your favorite concealer, blend it all out, then set with a translucent powder or a powder that matches your skin tone.

A good primer, foundation, setting powder, a contour palette, your favorite eyeshadow palette, eyeliner, a bunch of lipsticks and glosses for added variety as needed, mascara and most important of all, your makeup remover. That is all that you’ll need for a full face of makeup.

STEP 2: Contouring and Highlighting You have two options here: you can execute your regular every-day contouring techniques, but with lighter shades for a more natural effect; or you may follow the new craze of strobing, which essentially is just using a highlighter where you would normally highlight, rather than contouring. My personal go-to highlighter is Ben Nye’s Banana Shimmer powder. As for contouring, I use Kat Von D’s Shade + Light Contour Palette, which gives you all the options you need to pull off either a natural or more dramatic contoured look. STEP 3: Blusher The choice of colour here depends on your skin tone. For a light to medium skin tone I would go for the peach tones of Sephora Collection’s Colorful Blush in Flirt It Up. For medium to dark skin tones I would go for something more along the shades of red, such as Oh My Gosh, also from Sephora Collection. STEP 4: Eyes To keep the look more natural, I would avoid using eyeshadow or even using eyeliner. Just go for a simple black mascara to give your eyes an awake and lively appearance. STEP 5: Lips Here are a few of my favourite colours that give a natural look to the lips: NARS Audacious Lipstick in Brigitte, Sunny Guava, Flamingo and Cool Pink. And for all you lip gloss lovers: Smashbox Be Legendary Lip Gloss in the shades Coraline, Rosette and Pout.

A.

False eyelashes are quite a challenge to use and actually master. Brand-wise, my two favourites are Ardell and HudaBeauty. Note that the eyelash strip should not go beyond your natural lashes on the inner corner of your eyes. Be sure to trim the false lashes before applying them so as to maintain the visibility of some of your natural lashes at the aforementioned inner corner. When you’re ready, apply a small amount of eyelash glue onto the strip and wait around 20-30 seconds before application (depending on the brand of the eyelash glue used). Get as close as possible to your natural lash line, but make sure you don’t glue your eyes, or your eyelashes, together. It’s advisable to look down or close your eyes.

he word "macrobiotic" comes from the Greek words macro, which means "large" or "long", and bio, which means "life". A Japanese philosopher called George Ohsawa, who believed that we could live in harmony with nature by eating a simple, healthy diet, introduced the macrobiotic diet in the 1920s. He also believed that his macrobiotic diet could cure cancer and other serious illnesses. The aim of the macrobiotic diet is to avoid foods containing toxins. Many people follow a completely vegan diet with no dairy products or meats, while some choose to eat small amounts of organic fish and meat. More than just strictly a diet, the macrobiotic "lifestyle" also means being strict about what you eat and how you cook your food. When a macrobiotic practitioner plans your diet they take into consideration your age, gender, where you live and how much exercise you do.

People who eat macrobiotic diets for many years often have low fat and cholesterol levels, which may lower their risk of getting: Heart disease Breast cancer Other cancers linked to a high fat diet


THE MACROBIOTIC DIET IS MORE LIKE A LIFESTYLE 1)

GRAINS. Grains are the basis of a macrobiotic meal. Grains should make up 50-60% of your meal. Brown and wild rice, barley, millet, whole wheat etc. are recommended.

2) VEGETABLES. Veggies are the next most

important part of your macro meal. Cooked and raw veggies should make up at least 30% of your plate. Leafy greens are strongly recommended (except spinach which is very yang and should only be consumed occasionally). Local and in season veggies are also preferred. When eating, keep in mind the yin/yang properties of certain vegetables.

3) BEANS. Beans, especially fermented bean products like tempeh and miso are

important to your meal. Beans should make up about 10% of your meal. Tempeh, whole beans or legumes like lentils, chickpeas and more should be on your plate. Tofu is also a good choice as it contains natural probiotics and aids digestion.

4)

FRUIT. This may be a shock to you but actually fruits should rarely be eaten in a macro diet. They’re perfect as snacks or desserts but should not be eaten more than 3 times a week. Tropical foods, like bananas or pineapple, should be avoided.

5)

SEA VEGETABLES (SEAWEEDS). Another important part to your macro meal would be sea veggies. Dulse, kelp, kombu, arame and more are healthy choices for your meal. Sea veggies are rich in vitamins and minerals and excellent for health.

6)

SOUP. Soups are a very important part of a well-balanced macro diet and should be eaten daily. Soups that contain grains, veggies, sea veggies and beans are an ideal macro meal in a bowl. Miso soups are pretty popular.

7) FERMENTED FOODS. Tempeh is ideal but you can also try

pickled veggies, which bring lots of good probiotics in your diet.

8) CONDIMENTS/OILS. Oils like sesame oil and corn oil are the

best (be careful, corn oil mustn’t be GMO) Miso paste, sea salt, brown rice vinegar, tamari, tahini, brown rice syrup, veggie broth, dried mushrooms etc. are also welcome.

9) FISH. The macrobiotic diet allows you to eat white meat fish 1-3 times a

week. Of course, if you are vegan or vegetarian you can just skip it, it will not affect the diet in any way

WHOLE FOODS. The less processed foods are, the better. This is one of the most important principles of the macrobiotic diet.

Repeat this circuit training five times with one minute rest in between, thrice a week to see amazing results on your body.

PUSHUP – BURPEE – PULL UP (GIANT SET )

KETTLE BELL SQUAT – SQUAT JUMP (SUPER SET) SINGLE KETTLE BELL SQUAT Grab the handle of the kettlebell with both hands in an overhand grip in front of your chest. Stand tall with the feet about shoulder-width apart. Descend down into a squat position until the crease of your hip drops below the knee and thighs are parallel with the floor. Explosively drive hips and knees upward to return to the starting position. SQUAT JUMP Pressing mainly with the ball of your feet, jump straight up in the air, using the thighs like springs. Exhale during this portion of the movement. When you touch the floor again, immediately squat down and jump again, repeating twenty times.

PUSHUP Lie on the floor face down and place your hands about 36 inches apart while holding your torso up at arm’s length. Next, lower yourself downward until your chest almost touches the floor as you inhale. Now breathe out and press your upper body back up to the starting position while squeezing your chest. BURPEE From the pushup position, we will quickly transition into a burpee by pushing your hips up. Jump your feet under your hips and stand up. Now jump in the air throwing your hands over your head. PULL UP Using the burpee jump, grab the pull-up bar with the palms facing forward using a medium grip. Bring your torso back around 30 degrees creating a curvature on your lower back and sticking your chest out. Pull your torso up until the bar touches your upper chest while you exhale. After a second on the contracted position, start to inhale and slowly lower your torso back to the starting position. Repeat ten times.


BENCH DIPS BENCH DIPS Hold on to the edge of a bench behind your back with the hands fully extended, separated at shoulder width and legs extended forward. Slowly lower your body as you inhale by bending at the elbows until you lower yourself far enough to where there is an angle slightly smaller than 90 degrees between the upper arm and the forearm. Using your triceps, lift yourself back to the starting position. Repeat ten times.

REVERSE LUNGE – BENCH JUMP (SUPER SET) REVERSE LUNGE Stand tall with your hands overhead and the bench in between, separating your legs. Take a large and controlled step backward with your left foot. Lower your hips so that your right thigh becomes parallel to the floor with your right knee positioned directly over your ankle. Your left knee should be bent at a 90-degree angle and pointing toward the floor with your left heel lifted. BENCH JUMP Return to starting position and jump vertically high using your legs like a spring and turn your body to the right in the air to step on the bench. Go back to the lunge and repeat ten times on either side.

REVERSE CRUNCH - LEG RAISE (SUPER SET) Lie down flat on the bench holding on to the top of the bench and your legs parallel to the floor. While exhaling, move your legs towards the torso as you roll your pelvis backwards and you raise your hips off the bench. Leg raise Now kick your legs up vertically to throw them in the air. Lower them back and repeat. Repeat ten times.

I often like to upholster or slipcover large sofas and chairs in monochromatic whites in order to minimize the feel of large-scale furniture; white also creates a modern contrast when paired with antique furniture. It’s easy to change the look of a predominantly white room simply by adding pops of colour with pillows, accessories, art or even a lamp shade. Using different textures and materials (as well as different shades of white) an all-white room can be anything but sterile or boring. Most of us miss our home country, but we cannot just fly-off for a visit over the weekend. Is there another option? “Yes”, says Sous Chef Ambrim Mahat of Hwang, a restaurant specializing in Pan-Asian cuisine. “We're here to bring 'home' to the plates of our guests”. He shared one of his dishes with ABODE, and we can’t wait to try it in our kitchens!

This beautifully seasoned baby chicken is very popular and sold at roadside food stalls all over Malaysia. The recipe can be grilled or baked. The coconut milk is used to tenderize and make the chicken succulent and flavourful.

STEP 1

PREPARE THE INGREDIENTS: > 600 grams Poussin (Baby Chicken) Sauce: 100 ml Water > 300 ml Coconut Milk > 50 g Tamarind Paste > 5 g Salt > 5 g Black Pepper Marinade: 50 g Shallot > 30 g Garlic > 30 g Ginger > 30 g Lemongrass > 45 g Chili Paste > 5 g Cinnamon Powder > 5 g Candlenut Cucumber and Pineapple Salad: 50 g Japanese Cucumber > 50 g Pineapple > 30 g Onion > 30 g Sugar > 30 ml Vinegar > 15 g Red Chili Julienne > 5 g Salt

Clean the chicken and cut in half. Set aside.

Grind marinade ingredients into a paste and rub half of it into chicken. Set the other half aside for the sauce.

Chop the spice paste ingredients and blend finely.


STEP 3 Heat oil in a pot and fry the spice paste for 3 - 4 minutes until fragrant. Add water, tamarind juice and coconut milk and simmer, stirring, until reduced by half. Season with salt and cook for 5 - 7 minutes.

STEP 4 Coat each piece of grilled chicken in the sauce and then finish cooking by roasting at 250 C for 30 minutes, or until cooked through. Baste a few times with more sauce as it cooks or bring remaining sauce to simmer in pot and serve alongside chicken once cooked. For Cucumber and Pineapple Salad on Side (Optional), thinly slice cucumber and pineapple, mix together all the ingredients and keep inside the fridge before use.

Poach the chicken inside the sauce until fully cooked. Set aside.

We started with Rock Shrimp, crispy and creamy with a kick of chilly flavour, the perfect appetizer; Smoking Sashimi, a bliss of fresh fish; and the Chef’s selection Nigiri (sushi wooden plate with Nigiri and Maki). Each piece of Nigiri and Maki grabs a hold of your palate, and when it’s over you'll wish you could have more! We followed with the mains. First up was the Black Cod. Ginger Tomato Pickle Avocado Salad INGREDIENTS > 400g plum tomatoes > 80g ginger > 30g sugar > 30 ml water > 5g garlic > 3g red chili > 150 ml sushi vinegar > 150 ml water > 2g fresh coriander > 120 ml corn oil > 2 whole avocados > 1g ginger powder > 1g cajun spice > 40g flour > Salt and pepper > 80g mixed salad leaves > 40 ml lemon dressing

PROCEDURE 1) Make the marinade by mixing rice vinegar, water, half the ginger, garlic, black pepper and salt and bring it to the boil. 2) Add the plum tomatoes and marinate for at least 24 hours. 3) Once marinated, remove the skin and seeds and dice the tomatoes. 4) Mix the diced tomato with corn oil, salt, pepper and julienne of coriander. 5) Finely slice thin strips of the rest of the ginger and cook for 5 minutes in the 30ml of water and sugar to make a confit, then deep it until crispy. 6) Deep-fry the avocado in flour seasoned with ginger powder, Cajun spices, salt and pepper.

Ginger Coconut Chicken Blanquette INGREDIENTS > 1200g whole chicken - cleaned > 100g onions - peeled > 100g ginger > 10g garlic > 160 ml coconut milk > 160g sweet potato, peeled and cut into cubes > 140 broccoli florettes only > 18g cold butter > 18g flour

PROCEDURE 1) Prepare the stock by combining the cold water, half of the ginger (with skin on), white onion, garlic and the whole chicken. Cook slowly (the water should only be covering the chicken) for about 20 minutes. Skim off the scum that forms on top of the stock. 2) Meanwhile, infuse the other half of the ginger (julienned) in warm coconut milk for 30 minutes. 3) To make the sauce, use the stock and reduce it to three quarters of the original amount. 4) Next, create the white roux, a classic flour and butter mixture that will serve as the base for your sauce. Melt the butter, add a tablespoon of flour and cook over medium heat for five minutes. Add half of the ginger-infused coconut milk and reduce slowly until you get the consistency of sauce. 5) Cook the diced sweet potato and the broccoli florettes in this sauce.

7) Mix the leaves with the lemon dressing.

6) Remove the chicken meat from the bone. For 1 portion, serve half a leg and half a breast and cover with the sauce and vegetables

8) To plate the salad, place the tomato salsa first, then the mixed leaves and pan-fried avocado, and finally top with the julienned ginger.

8) Finish by pouring the rest of the reduced coconut milk infusion on the top of the meat.

Ginger Brioche French Toast INGREDIENTS > 4 thick slices of brioche (2 cm) > 100 ml milk > 100 ml of cream > 2 eggs > 20g sugar > 1g salt > 40g ginger > 120g mango – finely diced > 1g fresh mint chopped very finely > Syrup ( 50 ml water, 50 gr sugar, 20 gr ginger - julienned) > 30g butter

PROCEDURE 1) Infuse half the ginger in warm milk and cream. Cook for 30 minutes.

2) Allow to cool down until cold, and add the whole eggs, salt and sugar to the mixture.

4) Blanche the julienned ginger three times before infusing in boiling syrup. Cook for 5 minutes. 5) Allow the syrup to cool down before adding the mango and mint. 6) Warm the butter in a pan and cook the French toast slowly over a medium heat.

7) Present the toast cut in half diagonally with the minty ginger mango syrup poured on top of the toast.

Jordan

From the archaeological treasures of Jerash to the world-famous and prehistoric Petra, from the bustling cities of Aqaba to the capital Amman, there's wonder everywhere in Jordan. The cuisine was excellent too, although on that score there was just one blot on an otherwise cloudless horizon...

Intercontinental. The hotel was nice: opulent surroundings, indoor/outdoor pools, a spa and six restaurants. Our room was large and well-equipped, including free and fast WiFi.

We arrived in Amman after a superb flight in Royal Jordanian’s Crown (business) Class, but our luggage did not arrive with us (it actually wasn’t the airline’s fault). Bagless, we transferred to the Amman

Prior to this, our tour guide had taken us north of the capital to Jerash, to see the incredible Roman architecture of the old city. The site is extensive and beautifully preserved, dripping with character and utterly captivating. It’s easy to see why the Roman remains are a big draw. Back in Amman, we showed ourselves around but struggled in the searing summer heat so the malls were a welcome

It can't be denied that the ill-fortune that dogged our trip made a massive impact on both our schedule and our enjoyment of the country.

respite – and also the place to pick up some fresh underwear as we waited for our luggage to turn up. Our trip coincided with Ramadan, and the highlight of our time in the capital was a superb Iftar that our guide took us to in the courtyard of an unfinished mall. The location wasn’t lavish, but the food was fantastic and I put away a delicious plate of grilled chicken and rice. The following night, we dined at the Intercon’s ‘Cinco de Mayo’ (Mexican) outlet. The food tasted fine and we enjoyed a memorable evening.

ASTONISHING PETRA We eventually left Amman, driving south to the jewel in Jordan’s tourism crown – Petra – the prehistoric city which dominated the area some 2,400 years ago, a desert oasis that employed cuttingedge architecture and water control for its time. The centre of the city is approached through a deep, narrow gorge. Suddenly, you enter an arena hewn from the vertical rocks, and are faced by the incredible Treasury. Words alone cannot do it justice, which I suppose is the clearest recommendation to go see Petra.

In terms of breath-taking architecture, there’s plenty more to see in Petra besides the Treasury, including an amphitheatre, also carved from the rose-coloured stone, and numerous royal tombs, alleyways and temples. You could spend a day here, several in fact, exploring the massive site. We had only a half-day, but thankfully this was enough to cover the essentials. Leaving Petra, we drove to the port city of Aqaba, at the southern tip of Jordan where the Red Sea laps at its northern shore. We were given a tour of the city by car and there was a really vibrant, bustling feel about the place.

SOMETHING FISHY That evening, we dined at a superb seafood restaurant, one of many in this port town. I polished off a plate of fresh shrimp and fried rice but my wife didn't eat a thing. We spent the night at the Radisson Aqaba. Supposedly a five-star property, I was amazed by how tatty it was. Our sea-facing room with balcony was rendered obsolete, as we arrived at night, and the ill-fitting curtains meant that the room was bathed in light by 5 a.m., waking me. Our penultimate day in Jordan saw us head back up to the Dead Sea. We

escapes checked into the Crowne Plaza Hotel. This was much more like it – superb location, superb facilities and a superb room. Once the sun had set, we went down for a swim. The Dead Sea’s buoyancy is well documented. It was a strange yet delightful sensation to be able to lie completely still and feel the water holding you afloat. Quite an experience. Dinner and breakfast were buffet affairs. Buffets are often hit and miss but the Crowne Plaza served up a hit with chefs at live cooking stations preparing a bewildering array of fresh and flavoursome food. The selection was extensive, with European, Arab and Asian dishes available. I’m a creature of habit, so my plate was piled high with grilled chicken, rice and hot sauce, while my poor wife pushed a few grains of rice weakly around her plate. By this point she was more-or-less existing on 7 Up. The following morning we returned to Amman airport. There were certainly mixed emotions as the plane left the tarmac. Nonetheless, the Jordan we saw was beautiful, with three or four ‘blue chip’ cultural attractions, superb cuisine (with one exception), friendly locals and a rich, historical culture. So the $64,000 question is: Would I recommend a visit to Jordan? The answer is an undoubted “yes”. We

hope to return one day – not in summer – and, all being well, avoid the various misfortunes that soured aspects of July’s visit. THE ROYAL TREATMENT We flew from Heathrow, London to Amman with Royal Jordanian Airlines (RJ), a five-and-a-half-hour flight. RJ very kindly agreed to upgrade our economy seats to ‘Crown Class’ subject to availability. Both there and back, we were lucky in that there were a few unoccupied seats in the premium cabin, so while we didn’t get to sit together, we did get the royal treatment!

So how was it? We were in a brand-new Boeing 787 ‘Dreamliner’, which was a great start. Before take-off there was the offer of fruit juice or house beverage (I opted for the latter!) with a little bowl of nuts, along with a selection of Jordanian and international newspapers and magazines. The in-flight entertainment was seriously impressive with a huge array of current Hollywood and Arabic films, a massive music library and a selection of games. The food was excellent. Royal Jordanian brings out a trolley with all the main courses on it so one can ‘mix and match’ if they like. The food was accompanied with a selection of soft and house beverages and the sweet trolley came out about 30 minutes later. The standard of the food was top-notch, as was the service. Nothing seemed like too much trouble for the flight attendants. I’ve been lucky enough to travel business class with all of the ‘big hitters’ in the Gulf: Qatar Airways, Emirates, Etihad, Oman Air, Gulf Air and so on. RJ’s business class was right up there with the best of these. RJ is a smaller outfit, the service is perfect. The airline flies daily from Doha to Amman.

S: It’s been three years since the first edition of Qatar Success Stories. Can you tell us why it was time for another installment? CC: Qatar Success Stories is meant to be informative and accurate. Qatar is changing fast; new economic leaders are emerging, new companies are being created and great projects are initiated. The companies and institutions that were featured in the first edition have evolved and their corporate profile and vision have to be updated. Moreover, several CEOs have changed positions since then and we need to give a tribute to the newlyappointed decision-makers.

CC: Our objective is to inform about Qatar’s economic and social environment and to give foreign delegations visiting Qatar a ‘guide’ to get to know businesses and their leaders. It’s informative and it shows some of the most successful ideas and projects ‘made-in-Qatar’. So our audience is mainly businessmen and women, diplomats, journalists and visitors who want to know Qatar better. AS: Highlighting the local entrepreneurs and educators who are making a difference in Qatar has become a passion of yours –Qatar Success Stories, Inspiring Women, etc. What attracts you to these kinds of projects? CC: I think that most of the time, international media treats Qatar unfairly and I want to share my own experience (almost eight years in Qatar) and my own observations about Qatar and its people. Inspiring Women of Qatar was needed because foreigners do not know that women here are valuable, active and supported to be entrepreneurs and to work. I wanted to highlight these remarkable women who I have met over my years in Qatar and give them a tribute to express themselves. ‘Leading Institutions’ is about informing – it’s much more ‘corporate’ about the economic climate, how we work in Qatar, what is the vision or work ethic of the decision-makers, what company could be a partner for a foreign business, etc.

Except for some vast documents which were very detailed and more like a directory, there was no book that compiled information at a glance for the most relevant and successful entities. So I created Qatar Success Stories with an esthetic, too, as a ‘corporate gift’. All the books are also the work of a team: Sacha, our graphic designer Caroline Coens who is project manager, our editors and translators, Nibu, from Aspire Printing Press and their people who do a great job. I thank as well the Ministry of Culture for giving me, each time, authorization to publish, and of course my Qatari friends, including Mr. Ahmed Hassan Bilal, Chairman of AHB Group, who have supported and helped me over the years to make my books a success! AS: What’s next on the horizon for Caroline Carpentier the author? Will you continue to do more books that are centred on Qatar – or do you have other concepts in the pipeline? CC: I started to know Qatar quite well and I would like to keep on updating my previous books in order to give continuity to the information. Inspiring Women of Qatar will be updated for publication in 2017! As for Qatar Success Stories: Leading Institutions, we plan to celebrate the launch with a big event in Doha and Paris, and to develop the website in order to offer the largest visibility to Qatar's leading institutions, providing the international business community and international media with accurate information about Qatar.

Brazilian para-athlete’s incredible rise to the top against impossible odds The Doha 2015 IPC Athletics World Championships was held in Doha’s Suhaim bin Hamad Stadium at Qatar Sports Club from 21 to 31 October 2015.

T

his was the first time in history that the event was hosted in the Middle East, and it left a lasting legacy as the stadium, hotels and other facilities were further upgraded to better cater for persons with disabilities.

ABODE brings you the inspiring story of Brazilian multiple Paralympic and World Champion sprinter Terezinha Guilhermina who had every reason to fail, yet succeeded beyond all measure. Guilhermina grew up in an economically disadvantaged household, with the income of her two working parents unable to sustain her and her 12 siblings. Young Guilhermina had much to dream about; the Brazilian was also born with retinitis pigmentosa, an eye disease which has essentially rendered her blind – as well as

making her an easy target for school bullies, who pursued 7-year-old Guilhermina relentlessly. It was through this cruel bullying that she discovered her true talent - running. “The artist was born to paint, and I was born to run. I love running and I run with joy.” Rather than crumbling under the weight of these exceedingly difficult hardships, the arduous circumstances instead solidified her resolve. Although Guilhermina's will to succeed was strong, she faced ever-more challenging obstacles. “I wanted to run, I would run anywhere and everywhere, but I didn’t have any trainers.” Her mother was eventually able to buy her a pair of trainers, kick-starting the career of the current world record holder in the 100m, 200m and 400m T11 events. As a runner in the T11 class events, Guilhermina competes with a guide, Guilherme Soares de Santana, who serves as her eyes during the race. According to IPC rules, the guide must remain behind the runner at all times – this in itself is an astounding feat of coordination and athleticism: to run 100m in 12.01 seconds all while blindfolded and

bound to a guide. “I consider athletics a team sport, not an individual one," says the Paralympian. "It’s me and Guilherme. Some people have green eyes, blue eyes, brown eyes… mine are called Guilherme." The Brazilian duo train 5 hours every day, Monday to Saturday, with routines that include track and fitness work, stretching, and Pilates. Yet Guilhermina attributes their success to their willingness to win, and the drive to challenge herself constantly. “Sport has had an amazing impact on my life.” she says, adding, “I went from being Guilhermina the one who dreams, to Guilhermina the one who achieves her dreams.” In her case, that includes three Paralympic gold medals, as well as an astounding seven gold IPC World Championships medals. To others in need of support and advice, she offers her hard-won wisdom: "Be as big as your dreams. You yourself accomplish your dream, not your children, friends, or neighbors. So be the main protagonist of your story. There are no impossible dreams. If you can dream it, you can achieve it.”
