Dear readers, I would like to welcome you to our latest issue by wishing you Eid Mubarak. The Muslim community will celebrate Eid Al-Adha, also known as the Greater Eid, the second most important religious festival in the year, during which families and friends get together to thank God for all the blessings. Therefore, I hope you will all make the most of this joyous time, whether you are staying in Doha or are jetting off on a holiday break.

Perfection is the right word for this month’s fashion spread! Thanks to the entire team (Lydia’s makeup is simply flawless and Eric of Franck Provost for those edgy hairstyles) who put all the effort to make it a success and of course our biggest thank you to The Westin Hotel & Spa for allowing us to use their hotel as our exclusive venue for the shoot (they are not yet open but opening very soon, so watch out!) -- My oh my, what a glamourous hotel!

THE CHANEL JACKET INNOVATED! Chanel is one of the most recognized names in high-fashion, and nothing may be more synonymous with the brand than the beloved "Chanel jacket". Mayra Sapiens reports on its latest incarnation. By mayra sapien

Gabrielle Chanel redefined fashion upon opening her first shop at 21 Rue Cambon in Paris. Initially a hat shop, casual sportswear followed, and by the time she opened her first Couture House at 31 Rue Cambon, she was a bona-fide visionary who broke patterns and revolutionized fashion by liberating women from the structured and asphyxiating hourglass silhouette. Inspired by masculine attire, Chanel championed functional, comfortable yet flattering garments where clean and straight lines predominated. Along the way she created iconic signature elements such as the little black dress, the chain-link belt, quilted leather bag, and of course the

"Chanel suit", with it's embroidered tweed cardigan jacket. The Chanel jacket was designed to give women freedom of movement from the constraint of the wasp-waisted silhouette of the 1950s. "The hardest thing about my work," Chanel once explained, "is enabling women to move with ease, to move like they're not in costume, Not changing attitude, or manner, depending on their dress. It's very difficult. And the human body is always moving." While the jacket is reinterpreted and reinvented year after year for the Chanel label by Karl Lagerfeld, key elements remain much the same: Four real pockets, braid in


matching tones or contrasting, buttons stamped with the symbol of the house, and especially, new for the period, no buttons without button holes. Finally, sewn into the silk lining, a delicate chain to ensure that the jacket falls perfectly. It is a wardrobe staple that can be worn by anyone, adapted to each women’s personal flair. The diverse array of women who have worn it are testament to that fact: Princess Diana, Linda Evangelista, Jackie Kennedy, Elizabeth Taylor and Grace Kelly to name just a few. For this season’s Fall-Winter 2015/16 Haute Couture show was inspired by an Art-Deco casino, Karl Lagerfeld once again proves himself a visionary by combining new technology with the traditional classics of Haute Couture. He renovates the house’s iconic suit in a sumptuous 3D version showcasing the “Selective Laser Sintering” technique, where instead of fabric and stitches, the jacket’s structure is produced using 3D printing, in one piece, used as a canvas, the padded quilting texture is then embellished with sequin embroidery and braiding, painted, beaded, satinlined or edged with leather, it is the call for Haute Couture’s future. From architectural and graphic silhouettes punctuated with masculine details for the day to sumptuous evening looks with asymmetric lines, airy fabrics and a sophisticated palette, the Fall-Winter 2015/16 Haute Couture collection encompasses the limitless creative force of Chanel. The show closed with the surprising and unconventional tuxedo bride look worn by Kendall Jenner in the white satin wedding suit, with its wide-shouldered, double-breasted jacket – sporting epaulettes, four pockets and two rows of buttons, with a camellia tacked to its lapel. The only nod to tradition was the long embroidered “train” tulle veil, giving a feminine twist to the silhouette. Innovatively renovated over and over again in each collection, the handmade tweed jacket has become one of the iconic elements of the Fashion House and the “Chanel style”, for that reason they have devoted to its legacy an entire book, a short movie “The Jacket” and a photography exhibition “The Little Black Jacket”, where we saw the timeless piece styled over a hundred different magnificent ways on international celebrities. Coco Chanel mastered taking a gentlemen’s piece of garment and making it very feminine, as Lagerfeld has said: “The Chanel jacket is a man’s jacket which has become typically feminine, which has definitely come to symbolize a certain nonchalant feminine elegance that is timeless, and so for all times”. Since 1983, Karl Lagerfeld, in Gabrielle Chanel’s honour, has played in infinitive ways with the coats of the house, through the seasons the jacket have been seen with the matching skirt, mismatch with jeans, embroidered and in color, pastel, bright or black n white, cropped or over-all coat, the jacket lends itself to all metamorphoses and adapts to all daring creations. Today almost 60 years after it creation by Gabriel Chanel, the jacket has become the cornerstone of contemporary, and we will always be enthusiastically excited, waiting to see the next extraordinary creative and innovative reinvention of the unique Chanel jacket. "There are things in fashion that never go out of style: jeans, a white shirt and a Chanel jacket", concludes Karl Lagerfeld.

‘HURRAY TO MUM’ The inspiration of the Dolce&Gabbana Women’s Fall 2015 collection was THE MOTHER (mamma in Italian).

The mother is the heart of the family and in this way Mr. Dolce and Mr. Gabbana developed the theme of the women’s collection, which was, in fact, the family. The designers had a very intimate, personal approach when creating this collection, because the image of the mother that inspired them, comes from their own memories as children. From the invitations to the show (three drawings of Mr. Dolce and Mr. Gabbana themselves when they were little) to the latest details on the dress, with this collection they explored the love for the mother from both an emotional and aesthetic point of view. On the stage, real, young mothers with their kids from all over the world. Models with their kids also walk the runaway. 11 mothers on stage and three mothers walked the runway. Real models with their real children. Working alongside real mothers and observing the way they interacted with their

children and with themselves, changed their perspective on femininity. The collection has a great amount of creativity (new shapes, embroideries, prints, collage) and it featured 89 looks (plus the finale). Mothers are of course mums, women, managers, they embody different figures and roles. And, therefore, they wear different things according to these “roles�. The collection is very sensual, but at the same time iconic of the DNA of Dolce&Gabbana. There where the classic black dresses enriched with fur and in new fluid and sensual shapes, the exquisite embroideries in the shape of red roses and love messages to every mothers from their children, the original drawings of kids printed on dresses (some of them were made also by the nephews of Mr. Dolce), furs and printed dresses a multitude of colours, crocodile

ensembles and mother and daughter matching outfits. The drawing are a special insight into the world of children because of the different way the young ones see reality, that is in an almost basic, bi-dimensional way, and their peculiar use of colours, different from the way an adult uses them. Very important, the use of the technique of COLLAGE. Collage is typically the first thing kids learn how to do. For Mr. Dolce and Mr. Gabbana today fashion has to send a message and tell a story. A message of love, positive, but also a social message. The family is the most important value for everyone, no matter the age, gender or nationality. We all have a family and to our own family we go back to in both happy and sad moments. Our family is the safety net, is the place of unconditional love.

3rd Vogue Fashion Dubai Experience

The world’s who’s who of fashion will once again descend on Dubai for what will be a spectacular celebration of fashion and emerging designer talent at the third edition of Vogue Fashion Dubai Experience, the largest of its kind fashion event in the Middle East. “Instinct & Identity” Razan Alazzouni grew up in Saudi Arabia with a family that encouraged her early love of art and crafts and nurtured a journey that has since taken her to the pages of Vogue Italia. This month ABODE has the pleasure of sitting down with this remarkable designer and business woman.

A: From where do you draw inspiration? hen, as a little girl, Razan would RA: Mostly from nature. From shadows and light, wrap ribbons around plastic from art and my travels. A: What is your greatest achievement to date? RA: Being featured in Vogue Italia as one of the new designers of the world.

A: You were raised in Saudi Arabia. What is the fashion scene like there? RA: Oh, it is absolutely amazing . I don’t think I would have had the opportunity of seeing such decadent clothing anywhere else in the world. Here a wedding rivals couture-week runways.

A: Name your fantasy fashion collaboration and why? RA: That would be a collaboration with Buccellati . I love their craftsmanship and artistic designs. They made cutlery look beautiful.

A: Define "style". RA: Style is a form of expression. It's following your instinct and staying true to your identity. To me, style is the unique way someone wears a look. A: If Razan Alazzouni Studio were a gemstone, which would it be and why? RA: I don’t know if a pearl is a gemstone, but it’s always been my favourite . I think the way it exists in different textures and colours, as well as the many different ways it's used, make it my favourite.

A: What is the hardest lesson you have learned in business? RA: Things will not always work out, but even though it sometimes seems as though you’re taking two steps back, you need to push forward. A: What’s next for Razan Alazzouni? RA: We have two new items that we will add to our accessory line. We are also working on a very special new line that we will hopefully announce very soon.

They say the camera never lies. Well, it adores this month's featured blogger! At just 22 years old, Qatari Kholoud Al Ali, or "Koodiz" as her Instagram tribe know her, is a whiz behind and a fascination in front of the lens.

oodiz "wired" into social media long before the crowd. In 2009 she set up her Instagram account with a simple intention: share her love of photography and fashion through intriguing, stylish and cleverly edited images. Since then this charismatic and talented young woman has amassed over 170,000 doting followers who impatiently await her every upload. We now ride with them!

ABODE: Tell us about yourself K: My real name is Kholoud "‫ "دولخ‬but you can call me Koodiz. I created this nickname for social media and now even my friends call me it! I'm into photography, fashion and am obsessed with shoes, perfume and all things pretty. I'm a Pisces and a big-time dreamer.

A: How did you first get into blogging? K: I started using Instagram in the early days, before it was popular. I’d tag things and let followers know where I bought the items, so then people naturally started calling me a blogger because I’d share what I wear and what I do. I’m a visual person, so I love sharing things with my followers. I don’t write much, I let the picture speak for itself.

A: Where does this love of photography come from? K: I just love it. I got my first camera when I was 12. Photography is amazing, especially if you have a flare for it. I love working on my angles and creativity. When I am getting ready to shoot something, I visualise the final picture in my mind and keep on trying until I capture it exactly as I envisage it. This takes lots of practise and patience. You don't need an expensive camera to do that, you just need the eye, the right angle, the perfect edit and it's ready to be served.

A: Who is "Koodiz" the person as opposed to the brand? K: Just a normal girl who loves her life and lives every moment of it.

A: What are your ultimate goals? K: To be someone to look up to. I am going to study media in the fall and then hope to graduate and become a film director. I want to travel the world, but ultimately I want my country to be proud of me.

K: I think social media is where people live and practice their lives. It is everything. It is so powerful because it allows people to stay connected with each other and with the rest of the world. Qatar is a small country with big ambitions, great achievements and great people. Being creative will generate new ideas but we need to encourage and support people who think out of the box.

A: How can blogging help positively represent women in the Middle East? K: Middle Eastern women are so into fashion that it has become a hot topic. Other countries have started to get inspired by it. It is thanks to bloggers that we can show the rest of the world that we have what it takes to be successful in this field.

A: What’s your advice for new bloggers out there? K: Be proud of what you do and accept criticisms humbly. You're always going to face criticism but believe me, if you deal with it in a mature manner it will just make you stronger.

A: What do you think is it about you that attracts so many followers? K: My dad was checking my Instagram and he said to me: "Now I know why you have so many followers. People never get bored because each picture is totally different and beautiful." He always boosts my confidence and that's what encourages me to show more of what I can do.

A: And the best advice that you’ve ever been given? K: Be yourself no matter what. Nobody can be you except you!

Putting Your Best

Face Forward Today’s approach to cosmetic surgery is so much more sophisticated and less invasive than in the past. Abode spoke to leading Doha plastic surgeon Dr. Ahmed Makki from the Plastic Surgicentre about the latest trends. By Dawn Gibson

D

o you want to get a fresher looking face in your lunch hour? How about getting rid of those stubborn love handles that refuse to budge, no matter how much exercise you do, in a procedure so easy you will be back at work the very next day? What sounded like science fiction just a decade ago has become reality thanks to the latest developments in cosmetic surgery, reducing recovery time for many operations from weeks to days or less. Combined with an obsession in the popular media about celebrity makeovers, and the fixation we now have for taking Instagram-worthy ‘selfies’, it’s no wonder that many people are contemplating getting a bit of work done.

Top Trends More than 20 million cosmetic procedures were performed worldwide in 2014, according to the latest report from the leading International Society of Aesthetic Plastic Surgery (ISAPS). Surprisingly, the most popular surgical procedure is eyelid surgery, followed by liposuction, breast augmentation, fat grafting and rhinoplasty (nose jobs). Less surprisingly, Botox is the number one non-surgical cosmetic procedure. Other popular procedures include hyaluronic acid (filler), hair removal, chemical peels and laser skin resurfacing. Also unsurprisingly, eight out of ten procedures carried out worldwide are on women.


Dr. Ahmed Makki, a Senior Consultant in Plastic and Reconstructive Surgery, is the Managing Director and Founder of the busy Plastic Surgicentre in Doha. He says that demand for cosmetic surgery in Qatar is on the rise and trends here generally reflect wider international trends. Botox is the most common procedure overall at the Plastic Surgicentre, while the most popular types of surgery are ‘Mommy makeup procedures’ – tummy tucks, breast surgery and other forms of surgery requested by women to get their pre-baby bodies back after pregnancy and breastfeeding. Also in demand are procedures to get rid of excess skin after weight-reduction surgery, and facial procedures such as eye lid lifts and rhinoplasty. Faster recovery Dr. Makki says many of the procedures at his clinic can be done under local anesthetic and the patient is able to go home the same day. Even cases where a patient needs general anesthetic may only require an overnight stay. “Recovery is so much faster because of the advances we have witnessed over the past few years in anesthesia and surgical techniques,” he explains. "For example, a person who had a tummy tuck 10 or 15 years ago would stay in hospital a few days, even up to a week or two weeks. These days, they may just be in for the evening or overnight. Surgery has become less invasive, recovery has become much quicker and downtime has become less – and there are many procedures that are ‘lunch break’ procedures like Botox and fillers.” Dr. Scot Glasberg, the President of the American Society of Plastic Surgeons, says medical advancements and improvements in technology were leading to a wider array of options for patients. “Subtlety has been the keyword I’ve heard from patients over the past year,” Dr. Glasberg says. “Minimally invasive procedures typically produce subtle aesthetic results and, for many people, that is all they want or need at the time.” The Celebrity Look Social media is having a huge influence on demand for cosmetic surgery in a number of ways. Firstly, we are ‘publishing’ photos of ourselves to a wide audience on a regular basis through Instagram and Facebook, so we are much more aware of our image than back in the day when the only self portraits we encountered were in family albums. Secondly, social media channels give us access to the lives of celebrities like never before. We can see what the stars are up to 24/7, whether they are on the red carpet, having a coffee in a café or jogging around the block. In the plastic surgery office, society’s obsession with celebrity translates to clients who demand lips like Angelina Jolie, eyes like Myriam Fares and the curves of Beyoncé. Dr. Makki confirms that the celebrity trend is as common in Doha as anywhere

else in the world.“Women come with a picture [of a celebrity they want to look like] on their phone, whether they want a nose job, a breast augmentation or body contouring,” he says. “Nowadays, I get given a lot of pictures of Kim Kardashian and Jennifer Lopez.” The increasing popularity of the ‘Brazilian Butt Lift’- a bottom augmentation procedure which gives a client perkier buttocks – is a direct reflection, fuelled by larger-than-life curvy celebs like Kim K and Nicki Minaj. Taking a Surgi-cation Another big trend is the surgical vacation – many of us have at least one friend or work colleague who has gone overseas for a holiday and come back looking ‘refreshed’. Countries offering medical services at discount rates abound, though the quality of clinics varies markedly. Well-known hotspots include the Czech Republic, Spain, Egypt, Mexico and Thailand, while Turkey, Croatia and South American countries such as Argentina and Brazil are rapidly cornering a larger slice of the market. However, venturing to another country for an operation can obviously be a risky affair. Even if the procedure goes smoothly, you need to bear in mind you will be many miles from your regular circle of support. “My advice to anyone thinking to travel for surgery is that you should be very careful in selecting where and to whom you are going,” Dr. Makki says. “If you look for the cheapest deal, you may end up paying more to correct the results, and in some cases, it may not be possible to correct them. There are many medical tourism surgeries that have ended in disaster. Another

important point to consider is the follow up after-surgery - who is going to do the follow up when you go back to your country?” Keeping Expectations in Check When considering any kind of cosmetic procedure, Dr. Makki warns that clients need to be realistic about results – just because you think Natalie Portman’s nose is gorgeous, there’s no guarantee a similar nose will look right on you. “It sometimes needs some effort from the surgeon to educate clients, to talk to them and look at what is right for them,” Dr Makki says. “Many times I have tried to convince clients that maybe they don’t need the surgery – what they already have is much better than what they may get if we try to change them.” There is widespread misunderstanding about what can be achieved through common procedures. For example, liposuction is not a solution for obesity – it works best on people who have already lost excess weight through diet and exercise and want extra help to get rid of remaining stubborn fatty deposits. Dr. Glasberg points to client-surgeon communication as crucial to ensuring the best results. “Today, more than ever, patients are empowered with choices to achieve the results they are seeking,” he says. “Through open communications and a mutual understanding of expectations, patients work closely with their surgeon to determine the procedures most appropriate for them to achieve their optimal outcomes.”

eptember in Doha feels like a fresh start. The roads are filling up again as we welcome many new expat arrivals finding their feet as well as long-term expats and Qataris returning from long summer holidays. This is a great time to start a new plan for healthier living or to reset your health, fitness and lifestyle “Doha New Year’s Resolutions”. Lots of us find it difficult to maintain a workout schedule during the summer break while providing an entertainment and taxi service for the children. Just having them around the house can prove distracting. Your commitment to fitness can also easily go astray as you catch up with friends and family; add the inevitable extra meals out, and it’s easy to pile on the kilos. Never fear! Here are Adobe's top tips on putting the summer lull and those extra kilos behind us. Get back on track, living and eating more healthily - and happily!

1. Don’t Quit! You've just finished your first workout. After a break it can feel like starting out fresh all over again, with sore muscles and a tired mind. This is when most people decide to quit; DON’T! Push through this barrier. The first weeks are always the hardest, but after two weeks or so you’ll get back into the swing of it. Experiencing the progress you’ll make month after month it makes it worth the effort. We promise.

2. Don’t Expect to Jump Straight Back In It’s important that you realise your body isn’t going to be at the same level of fitness it was before the holidays, so don’t get frustrated with yourself if you can only run for 5 minutes before you’re breathless. Stick with it and within a couple of weeks you should be back to previous fitness levels.

3. Eat Clean Nutrition and exercise go hand-in-hand, and during the summer break it can be easy to fall off the food wagon. Whether you’ve eaten out every day, visited the ice cream van a few too many times, or been sampling all the new top Doha restaurants, you just have to draw a line in the desert sand and get back to eating clean, healthy food again. Everyone thinks that my best friend is perfect, but they’re not. They rave about their achievements, which frustrates and brings out the worst in me. It makes me compete with them and highlight their mistakes every chance I get. Apart from this, we’re really close. I wish I didn’t act like this, but people should know that I’m just as good as my friend at some things.

A.

It sounds like your friendship reveals certain insecurities within yourself. The competition may end up destroying your relationship. You seem far more concerned with your friends’ progress than your own. Stop - you’re not responsible for correcting their mistakes or their behaviour, you’re responsible for correcting your own. You need to get to the core of this issue. Ask yourself: why does this bother you? Where does the resentment come from? I also assume that since you two are close, you have positive intentions but aren't expressing them appropriately. What are you trying to reveal? Are there some old wounds from the past that need to heal before you can move forward? You need to look into yourself in order to address these questions. Then an honest conversation can be had with your friend or with another close confidant to help you work through your discoveries. This will be a challenge, as you will no doubt feel vulnerable, but some honest self-reflection could create an increased mutual security in your relationship and end the competition. Good luck.

People seem to have a problem with me taking selfies. I admit that I take lots everywhere, doing anything. Some friends are annoyed, others call me vain. What's the problem? Everyone takes selfies. Why not just lighten up and get involved with the fun?

A.

Are selfies fun, convenient or an example of vanity? The answer is probably all three. When we’re having so much fun we can get lost in the moment, but we also want to document it so sometimes it's easier and more convenient to take the picture yourself rather than ask a stranger. Then there are others who just want to pout their lips, check their hair and get their "best side" for a picture ready-made for social media. Neither example is wrong, but selfies are not for everyone. Don't immediately assume that everyone wants to pose in one, and don't get angry if they refuse. This doesn’t mean that they’re not having fun; they may not feel photogenic, or they may not feel comfortable with the concept, especially if you post it on social media. Appreciate their perspective. Making someone do things that they don’t want to do is never fun. You don’t want anyone impinging on your choices, so be decent and extend them the same courtesy. Having said that, don’t stop taking selfies. Keep having fun with them. Just remember that your fun may not be the next person’s fun.

My partner doesn't give me what I need; he won't commit to our situation. It's great when we're together, but when we're apart he acts like a stranger. He is such a nice person that I can’t get angry with him, but I always feel on edge. He always avoids talking about it, so I try to push him to talk, but then it gets worse.

A.

Your partner doesn't make you feel safe and secure mentally or physically, so you find yourself doing all kinds of things that are out of character, such as incessant texting and calling, in search of that security. This can frustrate him and widen the gap between you. Try to give the situation space and not force it. Spending time together needs to be natural for both parties, fuelled by mutual desire and intent. It is difficult to admit when feelings are not reciprocated, especially when you feel emotionally compromised by the other. Problems are inevitable if both parties aren't putting in the effort. Communication is essential, and it tends to be better in a relaxed environment. Each partner should get a better idea of where they stand so that they can move forward either together or alone. After giving the situation a little space and time, see what naturally occurs and take it from there instead of trying to force things.

Preparation of Tamarind Sauce Ingredients: > 200 gm fresh tamarind paste > 190 gm white sugar > 190 gm palm sugar > 10 gm salt > 500 ml water

step 1 Soak fresh tamarind paste in water for 30 minutes.

Cronut is a croissantdoughnut pastry invented by Chef Dominique Ansel and trademarked by his Bakery in New York City.

step 1 PREPARE THE ingredients: Fermented Dough: 500 gms Bread flour > 10 gms Salt > 25 gms Yeast > 350 ml water (Prepare the fermented dough 3 hours ahead) Cronut Dough: 800 gms Bread flour > 225 gms Fermented dough > 20 gms Salt > 100 gms Sugar > 40 gms milk powder > 40 gms eggs > 150 gms soft butter > 420 ml water > 35 gms yeast > 525 gms butter to fold

Cronut dough: • Combine and mix all the dry ingredients • Add water and eggs • Add the softened butter • Add the fermented dough and knead for 4 minutes at slow speed first • Increase the speed to medium and knead for 4 more minutes • Scale the dough in 1 kg pails • Cover entirely with food plastic film and keep the dough at room temperature until the volume has doubled • Rest the dough at -2°C for minimum 3 hours or overnight. • Do not allow the dough to prove

step 2 Folding the Dough: • Add 250 gm of sheet butter per 1 kg dough pail • Apply one double fold. Rest the dough for one hour in the chiller. Apply a second double fold. Rest the dough for one further hour in the chiller. Roll the dough down to final thickness • Cut to shape. Prove on a baking tray at 28°C until 3rd of final volume is gained • Heat vegetable oil in a deep fryer or a deep saucepan over medium heat to 350°F (175°C) • Carefully lift a cronut and gently drop into oil. Fry 2 at a time until golden brown, 1 1/2 to 2 minutes per side; Cronuts will puff up as they cook; Drain on racks over paper towels; Let cool • Pick up a fried cronut • Dip tops of cronuts in glaze as described above, and let cool on racks to let glaze set up about 15 minutes

step 3 Fillings: CHOCOLATE GANACHE 500 gms dark chocolate > 100 gms butter > 450 gms cream • Warm the cream, add into chocolate and butter • Blend with a hand blender, ensure to get nice emulsion • Keep in a container RASPBERRY JAM 300 gms Frozen raspberry > 150 gms sugar > 8gms gelatine • Place the frozen raspberry and the sugar, boil • Simmer until 102°C • Remove from the heat, add the gelatine • Let it cool, keep in a container CINNAMON SUGAR 5 gms cinnamon powder > 200 gms sugar • Mix the cinnamon and the sugar in the mixing bowl • Dip the cronuts in the mix when it is hot

After a one-month "refurb", Market by Jean-Georges is once again open for business. The new design follows the original concept of international cuisine meets local Arab flavours and represents a beautiful mĂŠlange of East and West; geometric and minimal; and organic and ornate, all with a modern aesthetic twist. The colours of the new Market restaurant design remain warm, atmospheric and vibrant whilst adding fresh and inspiring ideas to modernize this most important aesthetic. New Calcutta marble steps and worktops offer a polished and refined image that is consistent with the brand and its culinary offerings, whilst oak and ribbed timber paneling showcases

a rich and rustic side to the restaurant. Antique bronze metalwork has also been incorporated into the interior, helping to reinforce a contemporary but classic feel. namesake burger the MARKET (that's all capitals on the menu, no less) Burger Truffle Dressing and Brie. New dishes have also been included to modernise things a bit, such as the Quinoa salad with mango, cucumber, arugula, cherry tomato and curry vinaigrette. We started with their made in-house bread, a selection of different varieties of warm, delicious and irresistible bread. We couldn’t stop with only one bite! The highlight of the night for me were the starters: Tuna Tartare, done to perfection, with avocado, fennel mignonette and crispy wild rice on the top, and the Yuzu Infused Shrimp Tempura, a delicious spicy sushi plate, which lives up well to the reputation Market by Jean-Georges has for some of the best sushi in Doha. We followed this with the Grilled Lamb Chops, glazed with smoked chilli and served with oyster mushrooms, leek and broccoli. Further joy to come: a juicy Grilled Prime Sirloin, accompanied with gingered shitakes and soy-caramel emulsion.

Finally we come to dessert. How could we possibly have room? Well, we'd make room for their Warm Chocolate Cake with vanilla ice cream and the Market Cheesecake with glazed cherries and sour cherry sorbet. Both would provide a perfect ending for a wonderful dinner. We’ve always been big fans of Market by Jean-Georges in Doha, but the revamped version definitely improves upon even a good thing.

> Large eggs > Tuna, canned in olive oil > Mayonnaise > Fine salt > Olive oil For decoration: One egg > Tuna > Lettuce > Cherry tomatoes

> 1 kg potatoes > 200gms Turkey Chorizo > 6-7 Fresh, large eggs > Salt > Extra Virgin olive oil

Procedure

1) Peel, wash and cut the potatoes into medium-sized cubes. Fry the potatoes well on all sides in a hot pan with olive oil.

1) Fill a pot with water and bring to boil. Once boiling, add the eggs. Adding eggs to boiling water -as opposed to cool water - allows for the yolk to be centered when cooked, which is ideal for this recipe. The eggs should be cooked for approx. 11-13 minutes. Once the eggs are done, let them cool. 2) Carefully peel the shell off without breaking the white, rinse the eggs and cut them in half, length-ways. Reserve one whole cooked egg for decorating. 3) Remove the egg yolks carefully and place them into a mixing bowl. Mash the yolks with a fork and once smooth, mix in the tuna, mayonnaise, salt and extra olive oil. 4) Fill the half egg whites with a generous helping of the mixture. Use two teaspoons; one to scoop the filling and the other to push the filling off the other teaspoon. 5) Once the eggs have been filled, place them on a serving platter. 6) Decorate the platter and garnish the eggs with lettuce, tomatoes, the spare egg and tuna. 7) Place the platter in the refrigerator to cool before serving.

Procedure

2) While the potatoes are frying, cut the chorizo sausages and fry separately in olive oil. Once the chorizo is slightly crisp, remove and place onto absorbent paper. 3) Whisk the eggs well with a pinch of salt and place on the side. 4) Once the potatoes have been fried well, allow them to drain and cool slightly before adding to the chorizo and beaten eggs. Mix the ingredients well in a large bowl, allowing the potatoes to absorb the egg mixture. 5) Heat the pan and add olive oil. Once the pan is hot, pour the mixture into the pan and cook on medium heat. 6) Ensure the sides are tucked in so the omelet doesn’t become flattened. Once the mixture is cooked on one side, take a plate (same diameter as your pan) and place it over the top of the pan. 7) Flip the omelet onto the plate and then place it back into pan with the uncooked side facing the stove. Do this as many times as needed to ensure the omelet is properly cooked and sealed. 8) Finally, place the omelet on a plate and serve warm.

Crema Catalana Ingredients > 750 ml milk > 200 gms sugar > 40gms of corn starch > 6 egg yolks > the peel of one lemon > Vanilla > Cinnamon stick > Sugar for garnish

Procedure 1) Dilute the cornstarch in a glass of milk, and place it on the side. 2) Separate the egg yolks from the whites, keeping the yolks. Beat the sugar with the egg yolks together until creamy in texture; place it on the side. 3) Pour the remainder of the milk into a pot. While waiting for the milk to boil, add the lemon peel (only the yellow part), cinnamon and vanilla. Once the milk begins to boil, reduce the heat and remove the lemon peel and cinnamon. 4) Add the beaten egg yolk and sugar mixture. Add the glass of milk with the cornstarch in to the simmering milk. Whisk the mixture until it begins to thicken. 5) Remove the pan from the heat and pour the mixture into individual containers. Traditionally we would use very characteristic clay containers, but any heat resistant dish is suitable. 6) Sprinkle a layer of sugar on top of each dish, and with a kitchen torch burn it to give the typical colour of the Crema Catalana. 7) Place the desserts in the refrigerator for several hours to cool and set. Serve cold.

On the southern tip of Mexico sits the town of Bacalar, home to the bluest of blue lagoons, surrounded by limestone, rural roads and wild jungle. Said to be a place where magic unfolds, it waits, ready to enchant.

T

hree hours south from the Cancun airport, Bacalar is located within the municipality of Othón P. Blanco in an area the locals call Pueblo Magico (Magic Town). The town and laguna (lagoon, or freshwater lake) both share the name of Bacalar, or b'ak halal, Mayan for "water surrounded by wetlands". The namesake lake of this sleepy hamlet stretches out into the lush and wild jungle for 26 miles. It contains seven different limestone sinkholes, or cenotes, which are responsible for its celebrated seven different hues of blue. En route to Laguna Bacalar one can stop

to try the homemade pozol drink sold mostly by indigenous women on the side of the road. It predates the arrival of Columbus, and is made of corn dough, water, cocoa and a pinch of sugar. It's a thirst-quencher that the locals say also wards off disease. Another legend states that if you drink some pozol you will always return to these parts. It’s got a hearty taste and a milky consistency— certainly worth trying if your intention is to return to paradise. A must-see as either a day-trip or an overnight stay is Akal-ki, a wellness holistic retreat that overlooks the laguna.

The Grand Hyatt Doha has always been a majestic property, but it lacked serious personality until Christoph Franzen and Noha Belhaj took over respectively as the new GM and the new marketing manager. Today the Grand Hyatt is not only one of the most astonishing looking hotels in Doha, but is also a hot spot where the city's "crème de la crème" gather. Arriving at the Grand Hyatt Doha feels like entering an arabian palace. The hotel's majestic entrance amazes with its spectacular floor-to-ceiling 17 m glass window that looks onto the bay. In addition, the Grand Hyatt is walking distance to the The Pearl and offers a staggering view of beautiful surroundings and gardens. Spanning 155,000 sq. m of beachfront, the hotel and residential complex is any vacationer’s dream come true. I had the privilege to stay during a weekend and my experience could not have been any better.

furniture, the Presidential Suite was a sanctuary of comfort and extreme luxury. It's the ultimate pampering, with a balcony so massive that one could host a party there for 100 of your friends. The view of the hotel gardens plus the dramatic backdrop of Doha’s skyline is just brilliant. Each morning I enjoyed a refreshing shower in the brilliantly designed marble bathroom with separate bath and shower. Coffee and tea machine, in-room minibar, high-speed internet access, i-Pod docking stations and over 45 TV channels made my suite a home away from home.

LUNCH AT ROCCA Rocca is the first of the four restaurants I visit. Located by the hotel pool, its mediterranean menu reflects the cuisine of France, Italy and Greece. I recommend starting with their Mushroom and Gorgonzola Bruschetta, Beef Carpaccio with roquette salad or the deliciously fresh Buffalo Mozzarella Caprese with basil pesto. For the main courses I would highly recommend trying any of

the pizzas. It is in my opinion one of the best pizzas in town. The Rocca pizza with fresh tomato, mozzarella cheese, onion, capsicum, bacon and rocket leaves is particularly delicious. The Quattro fromaggio with tomato sauce, taleggio, gorgonzola, mozzarella and parmesan cheese is also a winner. The Spaghetti Carbonara with cream, beef bacon, onion, parmesan cheese and egg is a delight, and the "Tagliata style” beef tenderloin with roasted pumpkin butter sauce and parmesan cream spinach exceeds expectations. Finally, a warm chocolate fondant dessert makes the end that much sweeter. HATS OFF TO THE THAIS The Issan is a scintillating culinary journey through authentic and delicious Thai dishes. The à-la-carte menu includes succulent small portions of Fried Vegetable, Grouper Red Curry Sauce, Minced Beef with Hot Basil, Roast Duck Curry, Shrimp Cakes with Sweet Chilli dip and Shrimp Spring Rolls. I particularly enjoyed the minced chicken. The concept behind Issan is to order small portions of different dishes in order to get a taste of different dishes. I've said in the past that Issan is the best Thai restaurant in Qatar, and I stand firm - whatever you try there is simply extraordinary.

PARTY TIME AT DUNES I must admit that up until some time ago, I wasn’t a big fan of Dunes. The lounge was boring and merely a location where one savoured a couple of beverages before going to dinner. But now Dunes is one of the hottest spots in town, especially on Thursday nights with its "House of Groove" parties when the lounge turns into a magnificent nightclub and Doha’s glitterati gather here to party all night long. Also amazing are Friday's "A1 Nights at The Grill", when the restaurant turns into a fabulous party hub with loud music and a top-notch entertainment including international DJs and dancers. It is a bit different from Dunes because the space is bigger and the music is louder. Also it is darker than Dunes. BRUNCH AT THE GRILL All five-star hotels in Doha host brunch on Friday, but no one does it better than the Grand Hyatt with their unique "themed" brunches at the Grill. Whether it's an ABBA brunch or a Hawaiian brunch, you'll be sure to have a memorable time. I absolutely love the brunches at Hyatt; I have probably been to 10 so far this year. This contemporary restaurant also offers the

ABODE just interviewed the finest musicians in town – the Tango Nuevo Project, made up of musicians who met as members of the Qatar Philharmonic Orchestra. Patrizia (violinist) gives us an insight into their lives and their music.

ABODE: What is it you wish to communicate to listeners through your music? PATRIZIA: Our goal is to communicate our innermost emotions. We live in a world that’s so fast and connected yet sometimes people tend to forget what it’s really all about. We try to bond with our audience and share a beautiful emotional experience with them. A: How difficult was it to get identified as entertainers in Qatar? P: It just happened naturally. Our music is very accessible, perhaps because tango music goes straight to the heart. So we started with a small but very dedicated audience, and soon after it just became bigger and bigger. We truly love what we’re doing and I think our audience can see that it’s real! A: Coming from different parts of the

world, how do the group's members embrace each other’s culture? P: All of us are very open to different cultures. Life in Qatar enhances this outlook, as you meet so many people from all over the world. It’s truly enriching, and we try to use those influences in our music. People usually think about Argentina and Uruguay when you talk about the tango, but we went looking elsewhere as well, so you will hear also Indian, Arabic, American and French influences in our music. For example, a friend of ours from Syria wrote this amazing piece for us, so we have a Syrian tango as well! A: Having travelled all over the world, do you have a favourite place? P: That is not easy to answer. Each country has its beauty. I try to live in the moment, so I'm happy wherever I am. Qatar was for many years my

favourite place. I have an amazing job at the Qatar Philharmonic Orchestra, and we founded Tango Nuevo Project in Qatar! I have met very lovely and interesting friends here, as well as my husband, and my daughter was born in Doha. Qatar will always have a very special place in my heart. A: How and when did you first come together as a group? P: The first few months we were all living in Ezdan Towers, and one lazy afternoon in the jacuzzi we found out that all of us share this immense passion for Astor Piazzolla and his tangos. A: What’s next for the Tango Nuevo Project? P: To conquer the world! We have a few more concerts planned in Qatar and the GCC (Gulf Cooperation Council) but from 2016 onward we plan to tour Europe and the United States. Hopefully that's just the beginning. We’d love to share our music, our passion and our emotion everywhere!

ounded in Italy in 1925 by Edoardo and Adele Fendi, the house of Fendi was primarily a fur and leather shop based in Via del Plebiscito, Rome. However, by 1946, Edoardo and Adele’s five daughters, Paola, Anna, Franca, Carla & Alda joined the company, bringing with them a keen sense of fashion and an enthusiasm that would soon drive Fendi into the iconic status it has today.

This year marks Fendi’s 90th birthday, and to celebrate, we’re taking you on a retrospective journey to 1925, sketching out Fendi’s humble beginnings and the birth of the iconic ‘Baguette’.

The first of many Fendi atelier’s was opened in 1964 in Via Bogognona, Rome, a street renowned for its artisans, and thrived as creators of exquisite pieces of clothing, fur and accessories. It was then when, in 1965, Karl Lagerfeld joined the business, that the Fendi double FF logo was born. Karl went on to display Fendi’s first ready-to-wear fur collection in 1969, reshaping the way the fabric was worn and at the same time, revolutionising fur as a stylish, wearable must have.
