Qatar Solar Technologies (QSTec) has announced it will be building a polysilicon production facility, worth approximately US$1 billion in Qatar. QSTec’s plant will manufacture 8,000 metric tons per year of highpurity solar grade polysilicon and is scheduled to commence operations in 2013. The site, chosen with future expansion in mind, is located on 1.2 million square metres of land in RasLaffan Industrial City in the northeast of Qatar, the heart of Qatar’s liquefied natural gas refineries and exports. Driven by Qatar’s long term vision for sustainability, QSTec aims to leverage the country’s natural resources and advanced research facilities to manufacture and develop solar technologies locally that will benefit both Qatar and the global environment.

REgiOnAl tRAnspORtA tAti tA AtiOn COnfEREnCE lAunCHED Sheikh Saoud Bin Nasser Bin Jassim Al-Thani, Deputy Chairman of the Board of Directors of the event organizers, Qatar Railways Company, officially announced the launching of the GCC Transport and Railways Conference. The event was held under the patronage of H E Sheikh Hamad Bin Jassem Bin Jabr Al Thani, Prime Minister and Minister of Foreign Affairs of State of Qatar, between the 17th and 19th October, 2011. The conference gave participants the platform to discuss ways of developing maritime and air transport systems, logistics, transportation, railways systems, as well as the much talked-about plans to link the road and railway networks of countries across the Gulf Cooperation Council. During the conference there will also be the Qatar International Exhibition for transport & Logistics (TRANS4) held at the Doha Exhibition Center.

On this occasion, the airline also unveiled a series of commercial initiatives including the Falcon Corporate Plus, a package designed exclusively for corporate travelers. Marking the moment, Gulf Air Chief Commercial Officer Mr Karim Makhlouf said, “Qatar has a special place in the history of Gulf Air, as it was not only a founding member of the airline, but also has the distinction of receiving our very first flight into Doha on 24 March 1950. kOREAn EmBAssy HOsts BEAutiful HARmOny COnCERt The Beautiful Mind Charity (BMC) held a charity concert named “Beautiful Harmony Concert” in Qatar at Katara, featuring seven talented musicians from Korea who played classical pieces from Korea and around the world. The event was held over two days in September and was hosted by the Embassy of Republic of Korea in the State of Qatar, in cooperation with the Social Rehabilitation Center of Qatar. The concert was performed for those in need from Shafallah Center for children with special needs, Drieema Orphanage, Noor Institute for the Blind, Qatar Institution for the Welfare of the Aged and Amal Hospital. Korean Ambassador CHANG See-jeong introduced the musicians and asked the audience to experience a beautiful mind and feel inspired. Also included was a short play performed by the students from the Al-Noor Institute. The concert concluded with the performance of an Arabic song “Ya Tayyeb al-Galb”, played with Korean traditional musical instruments.

JORgE BEn JOR ROCks in DOHA The first Latin American Cultural Festival (LACF) hosted at Katara ended on a spectacular high with a show stopping performance by world renowned Jorge Ben Jor who electrified audiences with his musical talents. The ten-day festival ran from 6th – 15th October and brought together 230 artists and performers from Argentina, Brazil, Costa Rica, Cuba, Dominican Republic, El Salvador, Peru, Uruguay, and Venezuela. Showcasing the best of Latin dance, music and film from nine Latin countries saw over 5,000 visitors stepping through the gates of Katara.

tHE OnE wins ACCOlADEs A At tHE REtA t ilmEE Aw tA AwARDs At the Retail Middle East Awards 2011 ceremony THE One won awards for Most Admired Retail Personality, Most Admired Store Manager and Most Admired Responsible Retailer. The ceremony was an exclusive affair held on October 12 at the Meydan Hotel in Dubai. Commemorating retailing excellence in the Middle East, the RetailME Awards recognizes the top performing retailers and retail practices in the region, rewarding brilliance in outstanding innovation and pioneering initiatives during the past year across various retail categories. While THE One’s Thomas Lundgren received the Most Admired Retail Personality of the Year award, Colin Burrows (from THE One’s Bahrain Theatre) was recognized as the Most Admired Store Manager of the Year. The award for Most Admired Responsible Retailer of the Year is the home-fashion brand’s tenth Corporate Social Responsibility accolade since 2006. Invented by Thomas Lundgren, THE One Total Home Experience opened its first store in Abu Dhabi in 1996. Today the brand is present in five countries across the Middle East, including THE One theatre in Doha, and Al Mana Interiors, a franchise of THE One Total Home Experience.

Having started his diplomatic career 15 years ago at the age of only 22, His Excellency Mr Ridi Kurtezi, Ambassador of Albania, is one of the youngest Ambassador holding office in Doha. He is also serving in his country’s first such posting in the region. ABODE was honoured to meet this remarkable Ambassador, together with his wife Ina Kurtezi.
I
f given a chance, Ambassador Kurtezi would like to have dinner with Abraham Lincoln, Nelson Mandela, Mahatma Gandhi, Václav Havel and Teng Hsiao Ping. But for now, he has a busy calendar in Qatar, working endlessly to promote ties between Qatar and Albania. That he loves what he does and is passionate about his country is obvious from the conversation he had with ABODE. Within a short span of time, Ambassador Kurtezi and his wife Ina have immersed themselves in Doha and they proved to be affable hosts and delightful interviewees. Here are excerpts from our visit:
ABODE: Please tell us about yourself. RK: I was born in Tirana, Albania in May 1974. I was educated in Russia, graduating from the Moscow State Institute of International Relations. I also graduated from NATO Defence College in Rome, and the Centre for Security Studies in Garmisch, Germany. I started my diplomatic career when I was 22. I have served in the Permanent Mission of Albania to international organizations in Vienna, and as the Charge d’affaires of the Embassy of the Republic of Albania to Madrid. Before coming to Doha, I held the position of the Director of State Protocol in Albania. ABODE: How is your family’s experience in Qatar? RK: My wife Ina goes to Qatar University, following the Arabic Language Course for Non-Native Speakers. Our daughter Maja attends the Newton International School.
They both are very happy and enjoying the great hospitality and social life in Doha. ABODE: How has your own experience been in Qatar? RK: In 2010, the Albanian Government took the decision to open its diplomatic mission to the State of Qatar, by sending a resident Ambassador to Doha. Since January, I have been engaged in establishing and [ensuring the] wellfunctioning of the Albanian Embassy in Doha. This has been a difficult task but I am grateful to the Qatar Authorities for helping and facilitating with this process. ABODE: How can Albania contribute to Qatar? RK: The Albanian community is very small here. We are working hard to negotiate the Manpower Agreement to open the way for Albanian manpower to come and contribute in several fields of the Qatar society. The Albanian manpower is relatively young and well-educated with professional and linguistic skills. ABODE: This is your first posting in the region. Is that unnerving? RK: Doha is my first ambassadorial posting and this is the first-ever posting in the region. Since my arrival, I have been in close contact with the Qatar high officials, the representatives of the business community and the accredited diplomatic missions. It has been a busy but very interesting time introducing my country Albania,
reiterating our commitment to enhance and further develop bilateral relations. ABODE: What are some of the ways you would like to promote your country? RK: My primary objective is the promotion of Albania: its valued and well-educated people, economic and trade opportunities, historical and cultural heritage and geographical and landscape beauties. Albania has gone through a very difficult past. During the last 20 years, it is one of the countries that has developed most rapidly. We Albanians are working hard to build a friendly environment for foreign investors and to remove all bureaucratic obstacles. Today, investors can register their business in Albania in one hour and the country has the most favourable tax regime in Europe, with the profit tax of 10% and the personal income tax of 10%. A few years ago, Albania did not exist on the map of European and world tourism. This year we have had nearly three million visitors and tourists. ABODE: If you had the chance to have dinner with five famous people, who would they be? RK: Abraham Lincoln, as he abolished slavery in America; Nelson Mandela, a symbol of wisdom and forgiveness; Mahatma Gandhi, a great nationalist leader who contributed in the birth of the largest democracy in the world – India; Václav Havel for his contribution in establishing democracy in a postcommunist society, which bore deeply rooted divisions and hatred; and Teng Hsiao Ping, who pioneered the transformation of the [Chinese] centralized economy to a market economy. ABODE: What are some of the passions in your life? RK: I like taking care of my family – sharing concerns, pleasures and free time, travelling and getting to know other people’s culture and values. I love to read, though it’s mainly politics and history. Sports-wise, I like swimming and soccer.•

She is someone who believes in not following the herd, but is intent on paving her own path, as she says, “to live a life of passion aligned to values.�

o live in abundance is an idea all of us aspire to. This is a blissful state where we live out our dreams, in a career and life that are fulfilling, creative and productive. Carolin Zeitler is doing just that. A business entrepreneur, writer, coach, dancer... she is a powerhouse of talent and motivation. In a candid interview I get to know Zeitler and her inspirations, challenges and successes. More importantly, I also learn how she manages her growing business whilst maintaining a healthy work-life balance. abOdE: What inspires you? cZ: It inspires me to see people living their dreams, living a life that is determined by conscious choices and aligned to their personal and cultural values. abOdE: Is this the foundation on which you created Arcata? cZ: That was part of it. The other part is that everything I do is a step towards my bigger vision. With Arcata, we are concentrating on the challenges of high staff turnover, lack of commitment and enthusiasm and other very real challenges that companies face here in Qatar. We connect employees to the vision, mission and values of the company, show them how they can become ambassadors for their company and how that leads to more joy in the work they are doing.
‘Wouldn’t it be amazing if they all came together in one room? Imagine what could happen…’ I founded These Ladies Mean Business, which started with eight to ten women, from different cultures, different professional backgrounds and ages. We all shared our inspiring stories, gave presentations and bounced business ideas off each other – it was like a ‘Master Mind’. Then I thought, how amazing this experience would be if offered to more women to exchange and be inspired. The idea of the conference came up; one and a half years later we launched the first conference in Doha on April 22, 2010 with more than 100 participants and 20-plus presenters. Today, our conference is organized by a team of 15 volunteer women all wanting to contribute to enhancing women’s lives. Our conference is unique, as it is a highly interactive format provided by women living and working in Doha. This format gives women a chance to hear about how women have succeeded here, in this very special environment, and it gives participants direct access to the speakers, an opportunity to ask questions and share experiences. The participants come away with concrete learning, feeling all fired up and empowered to move forward. abOdE: What can we expect from the How Women Work conference in March 2012?

cZ: From the feedback of previous conferences, we have learned that the content was spot-on; however, participants tended to feel a bit rushed, therefore we have decided to spread the conference over one and a half days to offer more networking opportunities, breaks and time to digest between workshops — while continuing the interactive and local concept that makes our conference so popular. abOdE: Running your business and the conference, how do you manage a balancing act between your business and life? cZ: I see work-life balance over a longer period, for example one week could be quite hectic and another quiet. Quite often I prepare for, say, six weeks of busy workload due to a project delivery and then follow it up by a couple of quiet weeks to catch my breath; this is my model of work-life balance. Having said this, one of the most valuable things that I have learned over the years is that at some point, no matter how stressful things are, I need to take a break. For example, earlier this year, just four days before the HWW conference, I felt so tense that I just couldn’t be productive anymore. So I dropped everything and just went down to the beach for three hours with my dogs. When I returned, I was so much fresher
abOdE: What is your big vision? cZ: To establish a physical community, like a village, which promotes authenticity, continuous growth and sustainability. The community will provide access to wonderfully healthy food, to exhibit crafts, and plenty of opportunities to make true human connections and to live a life of passion aligned to values. abOdE: To assist people to live their values, is this how the How Women Work Conference began? cZ: In a way yes, although we came at it from a slightly different angle. It all began when I first arrived in Qatar and I wanted to meet other women who had aspirations and ambitions like I had. So I networked and grew friends with similar mindsets. One day I thought about my great privilege to know so many inspiring women and I thought

and so energized that I made up for more than those three hours with that new drive.
abOdE: yo y u are launching a new book, can you tell me more about it?
I’ve found it important to find something that I can lose myself in, something that makes me forget time and lets me just ‘be’. My experience has taught me that for most people it is either a form of creative expression or some kind of exercise that will do the trick.
cZ: It has always been our desire at HWW to reach all the women out there who have aspirations and ambitions. However, there is a segment of women in Doha who cannot afford to pay for the tickets to the conference and will not be reached by this offer. So we have created this corporate social responsibility project, the proceeds of which we use to provide free coaching to women of lower incomes. At the same time, the book also benefits the reader, as she can work on her own growth and authenticity. So everyone benefits, all round.
abOdE: What do you immerse yourself in? cZ: Personally, I love to dance or to be out in nature somewhere quiet and serene. These two things are really essential to me. abOdE: Being a working mum, what advice would you have for others? cZ: Family does come first. Career is very important, of course, but you will never get those years back with your children, so organize the day in such a way that you can do most of your work while the kids are at school. When Zoe, my daughter, is home from school, I ensure we can spend the evenings together. I work from my home office in the afternoon, so that I can do some work while Zoe is doing her homework. If she needs me I’m there and when it’s time for dinner, we sit together in the kitchen and I quiz her while she is chopping the vegetables or she tells me about her day while I am cooking. We laugh a lot together – that is so important to me.
abOdE: Who contributed to the book? cZ: The book is a collection of success stories. Half of the authors are working or living in Qatar and the others are around the world. Every woman was asked to define success in her own way. These stories serve as inspiration and in between there is a ‘Your Turn’ section where you have five to ten questions and an activity to coach yourself towards more authenticity and continued growth. abOdE: Can I ask your advice for women who are thinking of or are starting a new entrepreneurial venture? cZ: The most important thing is to believe in yourself and I found that when you are really passionate and believe in what you are doing, you

can overcome anything. It is not smooth sailing, you do need some resilience to be able to fall on your face, dust yourself off and continue on towards your dream. abOdE: How valuable is it to you to have a mentor and support network around you? cZ: Extremely valuable! There is only so much you can do on your own and when you work with a mentor or support network, they get to know you, understand your strengths and resources and then help you build on these. They might also see things that you don’t see yourself. abOdE: With creating a new company in Qatar, you have received client rejections or opportunities that fail. How do you manage this? cZ: The important thing is to keep the bigger goal in mind and it is my passion for the bigger goal that helps to always try again. Once I had a few successes, it made it easier, as I could look back at and remember the challenges I had then and reassure myself that it did work out and it will again. I have to thank my mother and grandmother for that, as they always said “it will all work out in the end – it always does.”•

I love what I do Sk: I was in Mumbai, India for a year and I reopened The Oberoi (after the tragedy of terrorist attacks in 2008). Obviously there was a lot of emotion in opening a property where many people had suffered because of what had happened. One instance I will always remember from that opening is that we had a prayer service for the employees, and we had brought clergies from the different religions for it. It was quite an emotional experience. abOdE: How do you go about achieving your goals?

rmed with an inspiring quotation for almost every question we asked, Sheraton Doha’s new General Manager Steven Kalczynski is geared towards success. During our interview, he said, “Success is a place on a road where preparation and opportunity meet, but too few people recognize it because it comes disguised as hard work. So if you work hard and are honest you will be successful.” His own achievements include the Tiffany Award for highest overall quality scores in North America, where he served as General Manager of the Starwood Hotels & Resorts, Luxury Collection(2008). He also achieved AAA Four Status and Mobile Four Star while converting a Preferred Hotel & Resort into
a Starwood Luxury Collection property. Having won multiple awards by travel magazines including Travel & Leisure and Executive Travel Magazine, Kalczynski has a track record of turning great hotels into world class resorts. Here, he shares some of his advice on how to be an achiever in life as well as career. abOdE: What is your definition of success? Sk: Those who have been successful in life are passionate about it twenty-four hours a day. I think it was Henry Ford who said that. abOdE: What is a learning experience that has stayed with you?
Sk: Personally I am a believer in taking risks. In order to be successful you can’t go with the status quo. If you look at the people who have taken risks, whether it was for business or for personal reasons, those are the ones who are fairly successful. In my life probably the biggest risk I took was when I went from the United States and got on a plane and flew to Hong Kong, Thailand and Singapore without knowing anyone and looking for employment opportunities because I realized that in my business I had to become more international. abOdE: Did that work? Sk: Well, I ended up staying in China for nine years with a couple of very well respected names like Shangrila. If I hadn’t taken that risk, it wouldn’t have happened. abOdE: How do you know you are taking too much of a risk? Sk: I think if you can talk to people who are closest to you and if you can convince them that it’s not that bad an idea then maybe the risk is not so great. Sometimes you have to find a bigger challenge. abOdE: What is the importance of hobbies/passions in your life? Sk: I like to exercise for an hour and a half every day and my family shares this, so it can [be] joint effort at times. I also love to travel but I think it’s more fun to go to a country or place and work for a few years, experience the local culture, than just visiting a place for ten days and leaving. I’d like to go to South America, Buenos Aires, Peru and probably Europe.•

With a design philosophy that is quite simply to realize every client’s vision, Sara has a design solution to every problem and she shared some tips with us in an small side tables with huge sofas, or exclusive ABODE interview. abOdE: Most of us are eager to know what is the “latest” colour, design, and furnishings trend. Can you comment on trends vs personal style? Sc: Home ‘trends’ do not tend to move as quickly as fashion, but increasingly there is synergy between the two worlds. Block colours, for example, at the moment are hot for both the home and your wardrobe. I think it is important to spend a lot of time at the beginning of any interior design project developing the concept
of your interior. Inevitably you will be influenced by some trends but by taking the time to really think about it, you’ll have a much better chance of creating a more timeless interior that suits your personality, yet offers lots of longevity. abOdE: What are some of the decorating mistakes that you notice when you walk into a home? Sc: Scale and proportion are the ones that usually stick out first. For example,

Another common oversight is mismatched colour combinations — these is another area where things can go wrong. abOdE: What tips do you have on themes, fabric and colour choices, window treatments, furniture, etc. when decorating in the Middle East? Sc: There is such great light in the Middle East, it can work for you or against you. Light exposure can eat up fabrics like silk if these are left in direct sunlight. However,

his month we had the opportunity to work on the home office of a Forum Design’s client. The hodgepodge of an office she used she was ready for a change. Natalie wanted a space that was inviting yet functional where both she and her husband could work, read books and surf the web. Versatility was important as well, as she also wanted a room that could double as a peaceful, comfortable and

relaxing spare bedroom when relatives from overseas come to visit. Here are a few pointers and ideas we considered: MAkE IT COzy: PERSONALITy + FuNCTION • The Desk as the focal point. We eliminated the “corporate” like desk. Instead, Megan chose a beautiful writing
• Storage Matters. For additional storage, Megan suggested two enclosed Schnadig Bunching Curio Cabinets. They are ideal for keeping books protected from dust plus they each had a built in spotlight for ambiance and extra light in the room when needed. The TV console was replaced with a Schnadig nightstand with drawers for guests to store essentials. • Choose an ideal Office Chair. In a space that is an office by day and a guest bedroom by night the furnishings need to be cozy and homey. To add a more homey feeling, Megan replaced the extra dining chair with a beautiful padded Schnadig chair. • Eliminate Clutter. To add more space

and reduce clutter, we eliminated the second sofa. The existing sofa bed was cornered and a night stand was placed behind it to serve as extra storage space as well as to hold a lamp for reading at night.

ligHting tip If possible, your workspace lighting should be multidimensional. The light should come from above ( chandelier) in addition to a desk lamp and floor lamp.
• Customize Vertically. Additional shelving was placed next to the sofa to provide a little extra storage for books and pictures. COLOuR Walls, Accessories, and Curtains Colour research shows that people are stimulated in specific ways by different colours. This is why it’s important to pick a colour based on the tasks you will be performing. The original paint scheme was bright pink and gold walls with a floral and gold curtain. Natalie knew she needed to change the colour to a more neutral one that both her and husband could agree upon. Natalie and I discussed her needs and decided on a very pretty yet soothing blue-green. Fortunately, her husband was also really keen on the colour. While Natalie and I worked on the colour scheme for the room, Megan found us a beautiful silk teal green fabric that matched the colour we had chosen and served as inspiration for selecting the paint for the room. Megan had her team at Forum Design make the curtains and matching pillows for the sofa with other coordinating fabrics.
After the room was painted and the new curtains hung, we had the task of decorating. Inspired by a silver mirror Natalie had bought at the Home Center, we shopped her house for additional silver pieces to use to decorate the wall behind her new desk. We also added a teal and green area rug Natalie had in another room and finished filling the rooms with items of interest – lanterns, a collection of

Thinking about revamping your home office space? It turns out that the biggest difference you can make is the kind of furniture you use. Ben Woods, general manager of Jaidah Furniture, tells ABODE why ergonomic furniture is the key to a happy and healthy office environment.

en Woods knows his furniture. Woods, who became the general manager of Jaidah Furniture in December 2009, is fully engaged in knowing everything there is to know about the products the company sells. As general manager, it is his role to “ensure that Jaidah are the experts in furniture and ergonomic tools within Qatar and the Gulf,” Woods said. He also considers it a part of his job to not only offer the best products but to introduce new ideas and products to the Qatari market. Woods is a firm believer in the benefits of creating an ergonomic workspace, stating

the many benefits, such as less eye strain, less repetitive strain injury and fewer back problems. Bringing together an ergonomic workspace is about more than just buying ergonomic furniture. An ergonomic office is one that is full of tools that help reduce strain on your body and keep you moving, explained Woods. Making your home office ergonomic is about more than just buying the right chair or desk. “A lot of chairs will claim to be ergonomic because they have such-andsuch a feature but that’s not really what it’s about,” Woods said. A chair is ergonomic when it is designed to work in the way you need it to - if you move a lot, the chair should
follow you; if you need to sit a lot, you want to be supported all the time, so you need a different kind of support. What you need to focus on is the function of the chair, said Woods. “Even when you are in your office, you should always be moving,” Woods said. “Our bodies are designed to move.” Some essential items for making your home office an ergonomic working space include a good quality ergonomic task chair, accessible storage, correct lighting and a non-glossy working surface. Even your desk itself can be made ergonomic, said Woods. Your desk should be the right height to lessen arm strain and eye strain. If your desk is too short or tall for your body, consider getting a different one.

For this festive holiday season, the Sheraton Doha Resort & Convention Hotel’s team of talented chefs namely, executive chef Josef Gschwandtner and executive sous chefs Marc Rueegg and Mahmoud gave us the recipes for two very special dishes to welcome the occasion!

Herb Crusted Pan Roasted Rack of Lamb with bateel date mustard, mille fucille of couscous, spinach tomato salsa and lamb gravy.
INGREDIENTS: ½ cup fresh bread crumbs 1 tbsp garlic minced
PREPARATION: • Preheat oven to 190°C. Move oven rack to the centre position. In a large bowl, combine bread crumbs, garlic, rosemary, salt and pepper. Toss in 2 tablespoons olive oil to moisten mixture. Set aside.
1 tbsp fresh rosemary and parsley, chopped • Season the rack all over with salt and pepper. Heat two table spoons of olive oil in a heavy oven proof 5 g salt and pepper skillet over high heat. Sear rack of lamb for one to 75 g baby spinach two minutes on all sides. Set aside for a few minutes. 75 g tomato salsa Brush rack of lamb with mustard. Roll in the bread crumb mixture until evenly coated. Cover the ends of 75 g couscous the bones with foil to prevent charring. 2 tablespoons olive oil 20 ml lamb jus 4 bone rack of lamb, trimmed 1 tbsp date mustard 1 potato, sliced fine

• Arrange the rack, bone side down in the skillet and place in the preheated oven for 12 to 18 minutes. Check done-ness with a meat thermometer after the 10-12 minutes. Let it rest for 5-7 minutes, loosely covered, before carving between the ribs.
• On the plate, arrange the couscous with baby spinach, tomato salsa on the top. On the side, put the rack of lamb and drizzle the sauce on top. Garnish the couscous with some fried potato.
Originally from Switzerland, Sous Chef Marc Rueegg finds his profession extremely interesting since it changes every day and new food trends are constantly emerging in the market. For him ‘healthy and tasty’ is his success mantra. “I like South East Asian food as it is very healthy, has vegetables and is crunchy,” he said adding the he knew the Malaysian, Indonesian and Indian cuisines and liked them for their healthy tasty. “I love food overall!”, refusing comically to cite any specific instance why and one could certainly see it in the way his eyes lit up. With decades of experience, for Chef Marc, happy smiling guests are the reason why he is still motivated to come to work everyday. And given a chance he loves to cook with ingredients like ginger, lemongrass and spices. We guessed happy occasions like the Thanksgiving and Eid definitely deserve a feast like our amazing chefs had prepared!

Chef Josef Gschwandtner Executive chef of Sheraton Doha Resort & Convention Hotel A conversation with Chef Josef, turned out to a list of interesting stats. To start with he said the Sheraton can host banquets for up to 5,000 people. When we ask how much is cooked every day; he advised that the hotel goes through 80 kgs tomatoes and onions, 120 kgs of potato, between 350-400 kg chicken, 300 kgs of beef, 200 kg of lamb and 100 litres of oil on a daily basis! Ensuring that all this is turns into lip smacking delectable dishes and happy satisfied guests, every day is for sure a huge responsibility. Chef Josef, does it with passionate perfection and flare since he loves to cook, entertain and make people smile. Something he said, he learnt from his parents, who ran a 40 room guest house and restaurant single handed, as he was growing up in Austria. Speaking about the Sheraton’s Thanksgiving plan, he said that an event has been planned at the at Al Hubna Restaurant –a complete buffet with all the trimmings. A look at the turkey, and we realized that even we can’t wait for the day to arrive!

Traditional Oven Roasted Turkey INGREDIENTS: 27-9 kg Turkey 50 g oil 10 g salt 7 g pepper Stuffing Ingredients 1 kg minced veal 600 g minced turkey breast 400 g minced chicken liver 400 g bread toasted and diced 150 g celery green 500 ml whipped cream 120 ml grape juice 200 g raisins 100 g shallots chopped 30 g garlic chopped 30 g parsley chopped 200 g cashew nuts roasted and crust 300 g chestnuts roasted and crusted 200 g prunes dried, thinly sliced 150 g liquid butter 15 eggs, fresh
PREPARATION: • Begin thawing the turkey in the refrigerator 1 or two days before. Remove the neck and the giblets and set aside to make gravy later. Wash the turkey and pat dry. Rub bird with oil, salt and pepper. Prepare the stuffing in a separate container. Just before baking, loosely stuff turkey with the stuffing mixture. Place any remaining stuffing in a greased baking dish; and bake. Tie drumsticks together with kitchen string. Place breast side up on a rack in a roasting pan. Roast the turkey for ca. 2.5 hours in the oven on 175°C. Preparation for Stuffing: • Mix all the ingredients together, use some to stuff the bird’s cavity and the rest place in a covered dish and bake for an hour. • Suggested side dishes to serve along with the turkey are: Honey roasted pumpkin, caramelized chestnuts, new baby potatoes, chipolata sausage fresh mixed vegetables, cranberry and giblets gravy sauces.

PREPARATION: • Preheat oven to 425°F. • Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell. • Bake for 15 minutes. Reduce temperature to 350°F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.

1/2-1 cup canned pure pumpkin puree
1/3 cup honey or maple syrup
1 tsp pure vanilla extract
A pinch of cinnamon
PREPARATION: • Pour about a cup of the cream into a medium pot and sprinkle the gelatin over the surface. Let it sit for about 5 minutes to let the gelatin soften. • Set the pot over medium heat and stir, bringing it to a simmer, until the gelatin is completely dissolved. This should take 2-3 minutes. Whisk in the rest of the cream, the pumpkin and honey or maple syrup. Remove from heat and stir in the vanilla and cinnamon. • Pour the mixture into individual small dishes or ramekins. (If you want to unmold them onto a plate to serve them, spray the ramekins with nonstick spray first.) Put them in the fridge for at least 2 hours, until set. Serves 6.

1 litre half & half or 18% coffee cream
3/4 tsp salt
1/2 cup mascarpone (125 ml)
1 teaspoon vanilla extract

1/4 cup honey (62.5 ml)

2 cups vegetable oil 1 cup granulated sugar 1 cup packed light brown sugar 1 1/2 tsp cinnamon 1 1/2 cup raisins PREPARATION: • Heat oven to 350°F. Line cookie sheets with parchment paper. • Mix flour, baking powder, baking soda, cinnamon, and oatmeal in a medium bowl. Beat eggs, salt and vanilla in a small bowl. Mix butter, oil, and sugars in a large bowl. Stir in egg mixture until smooth. Stir in flour mixture, then stir in raisins. • Using a 2 – 3 tsp spring action ice cream scoop, scoop 6 balls onto each of the cookie sheets. (You might want to squish them down just a tad.) Bake until golden brown, 12 – 15 minutes. (Don’t let cookies get too brown remove when they still look a bit undercooked in the center.) Let cool on cookie sheets, 2 – 3 minutes, then transfer to wire racks.

(If you want to unmould them onto a plate to serve them, spray the dishes with nonstick spray first.) Refrigerate for at least 2 hours, until set. (These can be made up to a few days in advance; cover each dish with plastic wrap to avoid having them dry out and wrinkle on top.) • Serve your Panna Cotta in the ramekins or unmoulded onto a small plate, topped with fresh fruit, any fruity sauce. Serves 6-8.

PREPARATION: • Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9x13 inch pan. • Chop nuts and toss with cinnamon. Set aside. Unroll phyllo dough. Cut whole stack in half to fit pan. Cover phyllo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 2 - 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be about 6 - 8 sheets deep. • Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows the make diagonal cuts. Bake for about 50 minutes until baklava is golden and crisp. • Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for about 20 minutes. • Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Leave it uncovered as it gets soggy if it is wrapped up.

When it comes to men’s fashion we all know that it can either be a hit- a well tailored suit, or possibly a miss- socks and slippers! ABODE’s fashion team have dissected the key A/W trends with a round-up of menswear’s greatest hits; with something for everyone, and more importantly pieces that can be worn repeatedly.
Patterns
If there is one pattern that transcends each season making it the recurrent trend in menswear, then PLAID is the pattern of choice. For autumn/winter 2011-12, designers have showcased this pattern in a variety of shapes; whether it be the extreme example in the form of the tartan print or in smaller gingham checks and all else in between.
WHY INVEST IN PLAID With the introduction of the ‘Heritage’ and ‘Country’ trends, the plaid print very much nestles itself as this seasons key print. Each year checks, ginghams, hounds-tooth and tartan are continually seen as a wardrobe staple for men – it will seem like most men(and women) posses an item with this print, however if this does not include you, latecomers are still welcome! The autumn/winter trend round-up would not be complete without mentioning the seasons main event; coats. Many shows made one outerwear style their chorus and displayed it in various fabrics and colours, with the key ones being either the trench or the DUFFLE coat. For a great investment piece, the duffle coat is certainly hardwearing long lasting and comes in a range of designs and lengths to suit all.

Continuing with the breakdown of the key pieces required in order to be bang on trend for this season, the duffle is a perfect trend to follow if you’re looking for a coat with great aappeal; ppeal; durable, warm but with a certain rustic luxury. And this is why the Duffle coat has become such a men’s fashion staple – great fabric meets classic design: large hoods and toggle fastenings. Modern day duffle coats still retain the element of practicality to which the duffle was initially created for-however they are now cut a lot slimmer for a sharper th silhouette, ilhouette, whilst still retaining their utilitarian feel.
As iconic as the duffle coat may be, this outerwear however does come with its very own ‘caution’ sign! MAGDY: Diabetes is a chronic disease so I have to consider it as my enemy. If I do not keep on fighting, sure enough it will kill me. I have to always be mindful of this and adjust my diet and lifestyle accordingly. ABODE: what is the easiest part of managing it? MAGDY: Getting into a diet plan and organizing my nutritional habits has been the easiest thing for me. ABODE: what’s most difficult about having diabetes? MAGDY: I’m constantly watching my weight and trying always to lose some weight. I have a long way to go on this, as sometimes my weight is up, sometimes it’s down. ABODE: what are your symptoms? MAGDY: I am lucky in that I have almost no physical or mental symptoms that I am aware of, yet. ABODE: what is people’s general reaction when you say ‘’I’m diabetic’’ MAGDY: I feel like their first reaction is a kind of sympathy.

ABODE: what coping methods help you to manage your condition? MAGDY: I have to be strongwilled and deprive myself of many pleasures, such as sweets...! ABODE: Do you speak to others about your condition?
MAGDY: Yes! Lots! Actually my colleagues often call me ‘’Dr. Magdy’’ as I’m constantly giving them a lot of medical advice and analysis. ABODE: how is the treatment in Qatar? MAGDY: I’m receiving my treatment at the Airport Medical Health Centre here in Qatar. I have the great pleasure of saying that it’s a five- star service and is almost free, which is great. ABODE: have you heard of the Qatar Diabetes Association? MAGDY: Yes, of course! I’m a member of QDA and actually I heard about it from the radio. I would like to seize this chance to send my best regards, thanks and appreciation to all the staff there. They really helped me a lot to learn about my disease and they also taught me how to live with it. They also provide us with the test strips and devices at the cost price. ABODE: Do you think there is enough support for diabetes sufferers from government and health institutes here in Qatar? MAGDY: Yes, I think there is enough support for diabetes suffers from the government and health institutes here in Qatar, through Hamad Hospital and the medical health centres. ABODE: what’s your advice to anyone who may be at risk? MAGDY: My best advice is to go on a balanced diet and practice some exercise.

ABODE: Describe your lifestyle. has it changed since you were diagnosed? YASMEEN: Diabetes IS my life. It makes life complicated but I have grown up with it that way. ABODE: Describe your diet. YASMEEN: When I was a younger, I just wanted to eat junk food like other kids! My diet is even more limited though, as I also have ‘celiac disease’ which means I’m gluten intolerant too. ABODE: what’s the easiest thing about managing your condition? YASMEEN: Nothing is easy! Everything is difficult. I’m only 15 and I have to ‘micro-manage’ my own life, think of the pressure. The hardest thing is controlling my blood sugar levels and trying to maintain a routine with my insulin. Some days I just don’t feel like pulling out a shot and giving it to myself. ABODE: Describe your symptoms. YASMEEN: I get depressed and often feel isolated. I get headaches, feel sluggish, lazy and get flushes too. Some days my mood is really dark and my Mom and Dad can spot it right away. ‘’Go check your sugar!’’ they say.

I used the Omnipod insulin pump and that pump was not used in Doha. My parents would take me back to Florida to have treatment because I felt like they knew more about juvenile diabetes and I was comfortable with my endocrinologist. I recently began being treated by Dr. Amin Jayyousi at Hamad Hospital. He is very nice. I now have a specialist doctor here that can treat a 15-yearold girl like me with this condition. ABODE: Do you think there is enough support for diabetes sufferers here in Qatar? YASMEEN: I never see adverts or campaigns that target kids on this subject. They should do more advertising on Facebook, magazines and the newspapers.
ABODE: what are peoples’ reactions when you tell them you’re diabetic?
ABODE: what’s your advice to anyone who may be at risk?
YASMEEN: Some ask questions like, ‘’will you die?’’ or ‘’what is THAT?’’ and ‘’can you eat cake?’’ I try to tell as many people about it at once to avoid repeating myself or I kiddingly tell them to ‘’ask GOOGLE!’’
YASMEEN: If you find out you’re sick, get a second opinion from a couple of doctors to get the best advice and treatment. Work out, eat well and take control of your life. For any young people already suffering from diabetes out there I’d like to say ‘’keep your head up high’’.

DiABEtEs: tHE fACts ¡ Diabetes is a condition in which the pancreas produces little or no insulin. ¡ Insulin is a hormone that transports the sugar, after a meal, into the different cells of the body, where it is converted into energy and used by these cells to perform their daily functions. ¡ There is currently no known cure for diabetes. ¡ Diabetes can have many complications such as heart disease, eye and kidney disease along with a decrease of blood flow and nerve sensation in many parts of the body. ¡ Symptoms such as excessive thirst, excessive hunger and frequent urination can indicate a presence of the condition. ¡ These symptoms may or may not be obvious at the time of diagnosis in Type 2 diabetes. ¡ Proper medical care, healthy diet and regular exercise will help patients manage their diabetes, avoid complications and live a long and healthy life.

JOHN: Diabetes has greatly changed my day-to-day life. There is no typical day, it depends on the night I’ve had with my neuropathy, which is a related disease that causes severe pain in my feet and toes. I am 53 at present, and specialists say insulin-dependent diabetics can have a reduced lifespan by up to 10 per cent. This is due to the serious associated health impacts of the condition such as heart disease, liver, limb and kidney problems. ABODE: what is the easiest part of managing your diabetes? JOHN: Just knowing that I have the condition makes it easier to manage. Knowing that I have to live with it, that it won’t go away, and being conscious that I have to manage it properly for my own good is the reality. ABODE: what symptoms do you have?

JOHN: It affects me both mentally and physically. I get depression and can often feel unsociable and insular. I’m always in pain, especially in the toes. I get hot and cold sweats, chest pains, anxiety, blurry vision, headaches, tiredness, energy fluctuations and rather annoying continual trips to the bathroom to pass urine! This happens especially all through the night which can be very hard to cope with in the daytime. I try and treat this through medication, walking and circulation massage. ABODE: what coping methods help you manage it? JOHN: Knowing my limits, especially with what I’m eating. It’s a balancing act. The BIG challenge is resisting temptation! ABODE: have you ever faced any prejudice due to your condition? JOHN: I lost my heavy goods driving licence as a result. I pay higher life insurance and car insurance premiums and in the UK, was even elbowed out of a job because I was diabetic. I took them to an industrial tribunal – and quite rightly won the case. A small victory for us diabetics!

When you want to change the way you are eating, take steps to lose weight, or simply create more awareness of what you ingest, there is no better option than to keep a food diary . STARTING A FOOD DIARy: The little things we do everyday have an impact on our lives. Our food choices effect our bodies in many ways we might not be aware. It is important to know if we are messing up our own body because of the poor food choices we make daily and there is only one way to stay accountable- writing it down. A food diary can be as simple as a small notepad you carry around in your purse or as detailed as an online calorie counter offered on many diet and calorie-counting websites, such as FitDay.com You have to choose a version you’re most likely to use every day. If you’re constantly on your Blackberry or iPhone, you’ll probably find an online food journal most convenient. If you find technology complicated or are rarely near a computer or a nice paper journal is probably a better option. The main thing is to choose a method that you can access at all times. whAT TO wRITE IN ThE FOOD DIARy: The key to a useful food diary is to write down everything that goes into your mouth and to be accurate with the amounts. No cheating allowed. It’s also a good idea to include the time of your meals and the reasons for eating. Writing these down as well will enable you to identify emotional eating triggers. If you suffer from chronic ailments such as hypertension, diabetes, allergies, and obesity; write down the times when you take medication, any unusual symptoms felt after eating and blood glucose values. REVIEw yOuR FOOD DIARy: At the end (or beginning) of each week, sit down and look over what you ate over the past seven days and determine what modifications you want to make. Being diligent about writing everything down is the first step– taking time to understand the changes you need to make is the second. Making small modifications at first is what will make you successful. Look to cut back on the handfuls and nibbles here and there. yOu CAN DO IT. Keeping a food journal may seem silly, tedious and more work than fun. However, it is an excellent tool to use if you want to keep weight down. It is also a great way to help manage conditions such as food allergies, obesity, diabetes, and hypertension. Even if you are not suffering from these conditions, try keeping a diary of your daily meals for a week and you’ll find interesting information about your personal food habits and food culture. ow is actually the best time to visit Cairo. Not only are the temperatures becoming mild, but the prices are excellent as well. The recent events in Cairo – part of the “Arab Spring,” or what the locals simply call, “The Revolution” - have put off many western tourists from visiting Egypt. This has made touring in Egypt a real buyer’s market. But The Revolution has also made the man on the street optimistic about the future and Cairo seems more upbeat as a result. Here are a few places not to be missed on your next visit to Cairo: A GREATNESS. The Giza pyramids, on the GIzA western outskirts of Cairo, are a must-do excursion. If the only thing you do in Cairo is visit the pyramids, it would be a worthwhile trip. You can easily spend all day exploring here. There is plenty to see in Giza, but it is best to get a guide. The Giza street vendors have been cheerfully separating tourist from their money for thousands of years and a guide can be very helpful in this respect. You can book a reputable guide, driver, and all day transportation from about 600EP – Egyptian Pounds - or 367QR, through most hotels or travel agencies.

The Egyptian Museum – officially known as the Museum of Egyptian Antiquities - should be a priority on the list of things to see when visiting Cairo – even if you are not a ‘museum person.’ Like Cairo itself, this big pink building on the north side of Tahrir Square (next to the Nile Hilton Hotel) is old, dusty, un-air conditioned, but still delightfully charming. It would actually take months to see all 136,000 items in the museum’s collection, but a brief visit can still provide a glimpse into the world’s greatest repository of ancient.
Adjacent to the pyramids, the Sphinx is the last thing before leaving the pyramid complex. But the best time for photos is morning.

According to tradition, this is where Pharaoh’s daughter found baby Moses hidden in the reeds along the Nile. Now it’s all cement and a wall, but with a little imagination, you can picture the scene.

ChRISTIAN CAIRO. The Mar Girgis metro stop puts you directly in the Coptic Christian area of Cairo. There is a lot to see in this quiet, compact area, making a very pleasant afternoon outing. The “Hanging Church” is built (or hangs) over the old Roman fortress. Nearby the crypt of the Holy Family under St. Sergius Church is supposedly one of the

Near the Citadel sits Sultan Hassan Mosque. It was noted as a “wonder of construction” when built in 757.
Proceeding south from the Khan, head for the Citadel. This is Cairo’s most popular, nonpharaonic attraction. Cairo’s post-Roman rulers selected this location because of the cool breezes and great view, but when Salah adDin established his headquarters in Cairo, he immediately recognized the strategic importance of the location and built fortifications there to defend the city. The Citadel has not been without a military presence since.
ISLAMIC CAIRO. This area isn’t actually more Islamic than anywhere else in Cairo, but it is like walking through a time machine that transports us back to Cairo’s Islamic heritage, to a world of medieval mosques, 1,500 hundred-year-old markets, ancient forts, and the city of Salah ad-Din. Comfy shoes are a very good idea, and if you want to stop at any of the several historic mosques in the area, please dress appropriately - legs and shoulders should be covered, and scarves for the ladies. The Khan el Khalili market once known as the Turkish bazaar, but now usually just called ‘the Khan’ is an excellent place to begin your exploration of Medieval Cairo.
