Co-produced with Quinta Communications, Black Gold is the first major international production for DFI and Qatar. Starring Antonio Banderas, Freida Pinto, Tahar Rahim, Mark Strong, Riz Ahmed and Liya Kebede, the film is an epic adventure adaptation of Hans Reusch’s classic novel The Great Thirst.The Festival is the culmination of Doha Film Institute’s year-round activities and a celebration of film, education and community. Estée Lauder kicks off its annual Breast Cancer Awareness Campaign throughout the month of October with a range of beauty products including DKNY Be Delicious Fresh Blossom, Bumble and Bumble Classic Hairspray, Creme La Mer, and many others, to help fund breast cancer research. Since its establishment in 1993, the founder of The Breast Cancer Research Foundation (BCRF) Mrs. Evelyn Lauder has continued to spread the message that “knowledge is power and the purpose of the campaign is to reduce fear in the minds of women all over the world” who must remember that early detection saves lives. In support of the campaign, every year Mrs Lauder and Spokesmodel Elizabeth Hurly work together promoting the iconic Pink Ribbon, which today has become the ubiquitous symbol for breast health. This year the focus theme is unity; pulling together as many people as possible to raise funds and create a bigger impact in spreading the message.

mA hAF prEsEnts cAi mAt GuO-QiAnG’s First sOlO ExhiBitiOn in mE breaking artistic talent from across the globe, Mathaf: Arab Museum of Modern Art recently announced an exhibition of new and recent works by the internationally renowned Chinese-born artist Cai Guo-Qiang. The exhibition entitled Cai Guo-Qiang: Saraab will be the artist’s first solo exhibition in the Middle East and will feature more than 50 works, including newly commissioned pieces, recent artwork, and documentary materials that illustrate the artist’s unique creative process. Sixteen new pieces have been created for the show, including large-scale, site-specific installations and new examples of his signature “gunpowder drawings.” On view from December 5 to 2011 to May 26, 2012, this is the first single-artist exhibition at Mathaf since its grand opening in December 2010.

Another of the film’s tracks, a traditional Bedouin song, was recorded by Al Kubaisi with Qatari composer Abdulla Al Mannai. Al Kubaisi became associated to Horner through the Doha Film Institute (DFI). Upon hearing Al Kubaisi’s vocals, Horner offered him the film’s opening track. In a statement, Al Kubaisi said, “To record with James Horner was a great privilege for me and I would like to thank Her Excellency Sheikha Mayassa and the Doha Film Institute for providing me with this once in a lifetime opportunity. It has allowed me to learn so much about the international industry and explore world music with a person who has made immense contributions to the global music scene.”

pOrschE kiDs DrivinG schOOl tO cOmmEncE in OctOBEr 2011 After a successful debut, Porsche Centre Doha, will commence the second season of the popular Porsche Kids Driving School beginning October 2011. The local importer of Porsche cars concluded the programme’s first season with a record of 2,000 children participating from January till June 2011. Many Qatari schools, such as the Doha English Speaking School, Ali Bin Abdulla School and Massaied International School, sent many of their pupils to to the school. The Porsche Kids Driving School combines educational objectives with an entertainment approach. It includes theory lessons on basic traffic rules and road signs as well as a practical driving session on Porsche 911 pedal cars under professional supervision. For this, an indoor training park with traffic lights, road signs and a zebra crossing is available to children between five to eight years.

Upon completion of the cleanup initiative, Starbucks Qatar presented the Al-Wakra Municipality with symbolic gifts from Starbucks as a gesture of appreciation for the collaborated efforts. Al-Wakra Municipality officials and members from the local neighbourhood appreciated the efforts of Starbucks partners. These activities are part of Starbucks Community Connections program which aims to connect, discover, and respond to the environmental and social needs in local neighborhoods & communities.

Khaled AlKhamissi’s recent work, Taxi, has been described as the ‘the novel that predicted the uprising’. Taxi transports the reader to the Cairo streets with his collection of hilarious encounters with the city’s taxi drivers. The novel consists of fifty-eight fictional monologues with Cairo taxi drivers that have been recreated from the author’s own experience, taking the reader on a rollercoaster of emotions as bumpy and noisy as the city’s potholed and chaotic streets.

The relationship between Qatar and Peru is a new one, with the Peruvian Embassy only recently opening its doors in Qatar. His Excellency Ambassador of Peru, Julio Flores is here to make sure that the relationship between the two countries grows and becomes stronger.

B

y the look and feel of the space, you would never know the Embassy belongs to a cheerful Latin American country known for its famous Mountain range and colourful textile. However, upon meeting the Ambassador, Julio Flores, and his team, it become obvious that the reason behind the sparse environment is that they are still in the process of putting things in place. In a candid interview, Ambassador Flores told us why he has fallen in love with the country he now calls home and how he plans to create a cultural bridge between the two countries. abodE: Can you share a few experiences or new things you have learned in your short time in Doha? Jf: This is a completely new experience for me. I have never been in this part of the world, so I had to learn many new things and learn how the country works. Qatar is completely different to any other country I have worked in. At the beginning, it was difficult, because in order to set up the embassy and start an official life here you need your visa and ID card and getting it took quite some time. For a period, I felt a sense of unease. But after I received my visa and ID card, everything went very smoothly. I think those kind of details are the experiences that you cherish because they teach you so much about the country and the culture. I have enjoyed so much learning about Qatar and the Middle East. I find Qatar incredibly beautiful. I know the entire city, I have driven all around. The desert is just astonishing. I find the peace and quiet of the dunes so unique and extraordinary. My experience here so far has been great.

abodE: What does your role as Ambassador to Qatar encompass? How has it enriched your experience? Jf: My primary role in Qatar is to promote Peru and work on the development of bilateral ties in all fields. I am particularly interested in creating a cultural bridge between the two countries. I want Qataris to know more about Peru, what we can offer and the many ways we can cooperate with each other in many areas. I want to prove that a geographical distance is not an obstacle in order to unite nations. In South America, there isn’t a clear understanding of the Middle East and I have learned that this region is amazing. Living here has enriched my life in so many ways because I have learned about a culture I didn’t know much about and now I can teach my people about the Arab world. I think what separates nations is not the distance but the ignorance. This country is secure and Ramadan is really inspiring, that connection with religion is something that most of the world is losing and here is so relevant. The knowledge and understanding about the Middle East that I have acquired here has no price. abodE: What are some of the ways that you’re promoting your home country here in Qatar? Jf: We are focusing on promoting the cultural aspect of our country. We had a photography exhibition in Katara a few months ago and I could see how Qataris were impressed with our nature and cities. We are also involved in the up-coming Latin American Festival at Katara. Furthermore we are

bringing a famous artist in November and a food festival next year. abodE: Who has been a source of inspiration for you? If you could have dinner with five famous people from history, who would they be? Jf: My father was a great source of inspiration to me, as well as an Ambassador I worked with long time ago named Felipe Valdivieso. If I had the opportunity to gather five people on my dinner table I would like the company of Jose de San Martin, Mother Teresa, Margaret Thatcher, Maoma and Princess Diana of Wales, who I actually met twice while I was working in London. abodE: What are some of your passions in life ? Jf: I enjoy reading and keeping in touch with technology. I also like to take my car and just drive around, I have driven around the entire city and soon I will start exploring the whole country. Listening to music from the 60’s is also a great passion of mine. abodE What are you most proud of? Jf: I am very proud of the fact that my three children are professionals and that I was able to give then a proper education that prepared them to face any challenge. I am also proud of reaching the highest post in diplomacy. abodE: How would you like to be remembered? Jf: I would like to be remembered as a person who gave everything for his country and kept all of his promises. abodE: If they made a movie of your life story... would it sell? Jf: I hope so. I have had a very rich and interesting life. After spending a few delightful hours with Ambassador Flores, we are left with the impression that very soon the empty space and unpacked boxes will transform into a colorful and welcoming environment. •

Doha Film Institute’s Executive Director Amanda Palmer speaks about what she loves best... new and exciting films, the filmmakers to watch out for this year, the year-round film education program she runs in Doha, the third Doha Tribeca Film Festival which will run between October 25 –29, 2011 at Katara Cultural Village and the highly anticipated release of Black Gold, Qatar’s first full length international feature film.

ith the Arabian epic Black Gold, Qatar is making a blockbuster entrance in the world of feature films in this region. The third Doha Tribeca Film Festival is all the more special with the premiere of the home grown production, directed by Jean-Jacques Annaud. Starring Antonio Banderas, Freida Pinto, Tahar Rahim, Mark Strong, Riz Ahmed and Liya Kebede, the film is an epic adventure adaptation of Hans Reusch’s novel The Great Thirst. And that is just the opening night offering at the Festival. As we settled in for the interview, Amanda Palmer, smartly dressed in tailored pants and a beautiful long sleeve shirt, smiled. As we asked her our first question regarding the film festival, she reflected for a moment and then her face immediately lit up and the passion she possesses for her work was unmistakable in her voice as she answered. As the interview continued, we were in awe of the logistics involved in bringing this year’s film festival together. Below are some excerpts of our lengthy interview:


ABODE

abodE: How will this year be different for the Doha Tribeca Film Festival 2011? aP: This is the year we wanted to make Katara Cultural Village the hub. The idea is for people ...not just to watch one film, go to a restaurant and then leave the venue ... so we are creating mobile screenings and other types of places including more intimate screenings. One of the key highlights of this year’s Festival will be the screening of Black Gold which is going to be held in the Katara Open Air Theatre. The big outdoor screening will happen with the community with the VVIP’s being part of the screening unlike last time, when it was disconnected. We want everybody together this year. abodE: What were some of the challenges in going about a home grown production as Black Gold? Where there any difficulties behind the scenes due to culture biases? Or was the merge successful? aP: Last year when the festival finished in October, no one was able to take a holiday, as we all went into pre-production for this film; which involved putting a team in place for the casting, finding everything from camels to working with ministries to making sure that we could get ammunition into the country and scaling out the desert because nobody had shot it in this way before. There is a lot of blood sweat and tears in this film. abodE: What about the challenges of shooting in a place like Qatar, which is a first? aP: If you talk to Jean-Jacques Annaud, who has filmed in every part of the globe, he would say that if there is no difficulty, it’s not fun. The very reason that Annaud wanted to come to Qatar was that besides the fact that the script is located in the Gulf, he loved the idea that he was the first one ever to film this desert. He said that this desert looks very different from the one in North Africa, where he filmed before. He went to the Inland sea and said that the sand granules look different on screen. For the more hostile parts of the film, he wanted the desert to look like a graveyard, which he was able to achieve and was very happy about it.

understand that though all the titles were in Arabic, they didn’t know that a lot of our events were bilingual. Also, we learned that it’s very important to plan events that attracts our female audiences. We have also programmed films that resonate with the local Qatari male community so you will see a very strong documentary that involves cars. abodE: How was the casting of Antonio Banderas come about as he is not Arab? aP: For the filmmakers it was never a question whether Antonio was not going to play this role. Antonio was very curious to work in the Arab world. The interesting thing is that he himself talks about his Spanish descent and he believes that he is part Arab. So there was a lot of personal connection for him, since he saw the Tunisian revolution. It is an incredibly important film. So there is a whole other layer to what this film means for us. abodE: Are any representative of the Arab freedom movement that the world has witnessed throughout this year? aP: What we do know is from the opening of Egypt is that people could make films in ways they could never do before. It is a new time for independent filmmakers in Egypt. People shouldn’t expect to see as many films this year as they are still being written and I think in the next two three years you will see many films come out of this year... just like it took years to make films on Iraq. I’m expecting a lot more on that in the Arab short film competition. What has happened in Egypt has caused a shift in the films not just there, but there is a shift in other North African countries as well. There has been a monumental shift because the media opened up. When Benali left Tunisia, within 24 hours the television was liberated. And we will show new films from our student film makers. And then we have the popular Family Day, where we have planned various events to engage the local community through film and education. . abodE: Looking back on the first two years, what are you most proud of? aP: What I am really proud about is that so many of the films that were seen here have gone on to other festivals and won awards and even now touring festival circuits. To see Grandma A Thousand Times on a Oscar campaign now in USA and winning four awards, that’s the true measure of success. •

DOhA triBEcA Film FEstivAl’s ArAB Film cOmpEtitiOn The Doha Film Institute’s 2011 Arab Film Competition will feature a diverse and wide ranging lineup, including seven narrative films and seven documentaries, which centre around childhood and love, the turbulence of revolution, the inner world of Arab life and films which reveal the true nature of the lives of contemporary Arab women from the Middle Eastern and North African (MENA) region in the past year. Featuring eight world premieres, the Competition, in its second year, has been expanded and split into two juried segments of narrative and documentary films. All films at the Festival will be subtitled in both Arabic and English, aiming to provide full cinematic access for audiences. Leading the five-member Narrative Film Competition Jury will be award-winning Syrian director Mohammed Malas, a filmmaking auteur widely recognized across the Arab World for his critical and socially engaging cinema.

I Love What I Do with the Sheraton brand. He came to Qatar in 1982 to open the Sheraton Doha. When he moved to Doha, there were only three hotels here. “All of the hotels were always fully-booked because there were not enough hotel rooms in the market,” Foltin said. Now, Doha is full of hotels and competition is much fiercer. Still, Foltin’s extensive experience means he is capable of staying at the top of his game. He retired from the Sheraton Doha in May 2011 but his retirement didn’t last long. Soon after he left the Sheraton, Foltin was asked to be The Torch’s general manager prior to the hotel’s opening this fall.

Everyone’s seen The Torch, the massive, hard-to-miss monument in Aspire Park. But few people realize that inside this remarkable torchshaped building is a modern hotel and business centre. An intriguing concept? Sure, but if anyone can pull it off successfully, it’s The Torch’s general manager GERHARD FOLTIN, a hotel pioneer in Doha. An airy, light-filled reception area. Dark, wood-panelled interiors. A state-of-the-art business centre. A picture-perfect view. This is what greets us when we arrive at one of Doha’s newest hotels and mostrecognized buildings. The energy level is high the day we meet Gerhard Foltin, general manager, there. Foltin walks through the lobby, greeting employees by name as they pass. The hotel veteran is warm and down-to-earth. He has spent more than 25 years in Doha and a total of 40 years in the hotel industry, so Foltin is used to cultivating relationships with people.

Born in a small tourist village south of Munich, his career path was an obvious one as he did his apprenticeship at a hotel in his home village before traveling the globe for his career. He learned every aspect of what it takes for a hotel to run. “The hotel industry has so many different types of jobs that you have to do,” Foltin said. “You have to have a good knowledge of accounting, you have to be an engineer, a housekeeper, a salesman, a front office manager and you have to understand food and beverage.” Foltin joined the Sheraton hotel in Munich in 1972. This move resulted in a 40-year career

The secret to his longevity? His warm and humble personality. People in the hotel industry must be social, and Foltin certainly fills this requirement. “My advice is if you want to work in the hotel industry, you have to be an outgoing person. You must like to deal with people,” Foltin said. “You must like the atmosphere. You must like the surroundings and you want to deal with the people and provide a good quality of service to the customers. That’s the most important aspect.” His passion for The Torch fills his spacious office with electricity. “It is so unique. You see the tower from the outside and you don’t know what’s inside. Inside it has so much modern technology. It’s a modern building and it has everything in one tower,” Foltin said. “Everyone who has seen it so far has loved it.” He is certain the hotel’s revolving restaurant on the 48th floor will become a big draw for visitors. His time spent in working in hotels has taught him many valuable lessons about how to have a solid career in the hotel industry, the most important being patience. “To be patient, to look after your customer – I would say this is the most important – and to have the right team wherever you work,” Foltin said. The friendly hotel expert has obviously settled comfortably into his role at The Torch – he confides that he has no intention of leaving anytime soon. “In five years, I will still be here.” •

Thankfully for our design efforts, our homeowner had already chosen a great sofa and table, from Megan. The furnishings were all in the right scale for her apartment at the Pearl. ortunately for our client, Kathleen, her beautiful apartment in Tower 31 at the Pearl Qatar was the perfect backdrop for Forum Design to help her decorate and add the touch of old Hollywood Glamour she was longing for, but was not sure how to tackle alone. Although Kathleen had already purchased a few amazing basic furniture pieces from us she needed advice on how to bring out the best in the furniture and the space. Starring attraction LoveLy Lacquer

To start, the six Maitland Smith mahogany chairs she had purchased had already been repainted in a metallic Chinese red, reminiscent of the bright colour styled lacquer that made the Hollywood style famous. These chairs became the inspiration for the design makeover. The dining table, custom built by the design team earlier, had also been finished with a reptile skin leather glossy finish. The dark reptile skin gave the table a quirky yet elegant look and allowed us to draw out the dark chocolate colour Continued on page 28

of the table top in the selection of the brown and white area rug. Here are the ideas that were implemented in guiding our homeowner on how to adapt a few Hollywood glamour elements to her home décor. Faux Paint The walls of the apartment had already been professionally treated in a brown and taupe luxurious faux finish accomplished with embedded glazes and plaster. The different glazes gave the walls a mother of pearl effect, expensive looking yet affordable. Note: this four layers process takes four days to apply. The brown and taupe colour scheme is simple yet dressy and can easily be mixed with red and green hues.

Picture PerFect - FiLm Star Finding the leading lady to cast as the main highlight on our walls was a little tasking, however, when we spotted her, we knew she was expensive – but perfect. For the living room we selected a beautiful painting from THE One, that pulled in all of the décor’s colour schemes and gave the living room the right balance. For this project we worked with classic brown, taupe and red accents to add Hollywood glam. Dark chocolate brown is a great colour to use in rooms where there is sufficient natural light. Since the apartment had large windows lighting was not a problem. However, light brown and taupe are a warm and cozy choice to put throughout the house in various shades, so although the space seemed quite large, the colour reduced the empty feeling and made it more inviting. DEsiGn DEtAils: This is where you can really put your own stamp on the occasion: the trees in Westminster Abbey for Kate and William’s ceremony are now a much emulated idea that will for evermore be associated with them (we’ve already used the idea to great effect in a small country church). The key design areas to focus on are: where guests will arrive (an entrance hall or doorway for example), where you’ll host cocktails, where you’ll dine, where entertainment takes place and where guests will freshen up (an often neglected area which everyone will visit). Flowers are of course a popular design tool and a way of linking and theming an event. They can be used for their look, fragrance and meaning. But think too of what is already in place that you can use: we’ve covered swimming pools with transparent flooring to create dance floors, built decks to extend over lakes and designed vertical indoor gardens to bring the outdoors in. Think too how areas can be re-designed during an event – perhaps as guests are dining – to transform for example what was an elegant cocktail area to a dancing area with a nightclub feel. Using illuminated furniture and ‘chill out’ seating is a simple way to achieve this. Consider too whether your party goes from day to night time and how you can embrace that with lighting and candles: even a simple lining of a path or driveway with lanterns will ensure that the lingering image of your event is a stylish one.

mEnu plAnninG: Only very good and very poor food is remembered, so make menu planning and delicious food a top priority. Give special consideration to your choice of caterer and listen to their advice – especially if you’ve a significant number of guests to feed, which requires expertise. Consider at least one food being memorable (foie gras lollipops have been the fashionable canapé this year at our society parties). And if it is a wedding or celebration, have a spectacular cake (Kate and William had two)!

plAcE sEttinGs: For a seated dinner, the design starting point for the overall event should be your table styling – that’s where you’ll be for a significant amount of time. Make the tables the focus in the room as that’s what guests will be looking at. The remaining design details should complement the table styling (that does not necessarily mean match). Reflect the setting of the room and the building: contemporary, boutique chic, period, traditional etc. Dress your tables with pristine crisp linens, polished silverware, sparkling crystal and a stylish centerpiece; it’s often all you’ll need to achieve a magnificent and luxurious look. There is something about Monica Tunjunsari that commands immediate attention. For one, the tall and strong 27-year-old Indonesian sous chef of the Jazz Club, Oryx Rotana, is extremely easy on the eyes. But, it is her silent resolve to excel in a largely maledominated culinary world that charms. ABODE speaks to this talented chef to find out what drives her to excel every day.

ABODE: Tell us about your culinary background. MT: I grew up in a family who are in the catering business, and that is what inspired me later on to work in the hospitality industry as a chef. I have a diploma in Food Production Management from the Bali Hotel and Tourism Training Institute. My professional culinary career started in 2003, working daily with fivestar hotel chains such as the Grand Hyatt, the Ritz Carlton, and the Sheraton. My day would start with studies from 7 am to 2 pm, continuing to work later that day from 3 pm till 11 pm. ABODE: What is your favorite cuisine and why do you love cooking it so much? MT: I have always loved Indonesian food. My specialty is modern Asian cuisine. I won’t call it fusion food because people get confused with the meaning of fusion. So I would simply say that modern Asian cuisine is my style of cooking. Cooking is my passion because both my grandmother and my mother are the best chefs at home. ABODE: What is your culinary forte? MT: I love to create new sauces by trying to mix each ingredient, and the results are usually awesome! Never fear to try and create new items.

ABODE: A top chef is someone who inspires others to work for her. Do you consider yourself a top chef? MT: I do not consider myself a top chef. Mostly I am proud when I can share my knowledge with a junior chef and that knowledge is useful for their career in this industry. ABODE: How do you define “good service”? MT: If I can provide what my guests need and I can fulfill their expectations, then for me, that is good service. We rewrite the menu every three months, given that we check the performance of the menu for that period. If the menu is not moving well, we remove it and change the items. ABODE: What are your favorite ingredients? MT: Lemongrass and ginger.

ABODE: What is more important to you – presentation or flavour? MT: Presentation and flavour are like husband and wife. They always come together. Presentation is important because it gives the first impression of the dish, like its visual appeal, which is then led on by flavour. For me, I believe flavour is everything. In my experience, a lot of food stalls served simple food with great taste. Simplicity is the best. ABODE: Tell us about the food served in Jazz Club. MT: Food that I serve in Jazz Club are very simple dishes. You’ll find the ingredients all over Doha. Serving Asian food to customers who aren’t Asian is quite challenging for me. So when I cook for them, I cook like I would cook for myself. The taste should appeal to me. I also rely a lot on feedback from the customers. ABODE: Finally, what advice do you have for people who want to excel in the culinary industry? MT: A real chef cooks from the heart. My advice is to love what you do and be willing to accept positive criticism and feedback to improve your skills.

ABODE: What was the first dish you ever prepared? MT: It was Nasi Goreng, or Indonesian fried rice. I was eight years old when I made this! As Indonesians, we eat it for breakfast, and I still remember when I made it and served for my family, and at that time my mother commented that it needed more salt! •

For the rice cake:

Cook both ingredients with water until it get mashed like porridge. Arrange into a mould and keep it cold and hard into fridge, cut it into squares and reheat in microwave before serving.

in a rare shift of events, the young and dashing Mövenpick Hotel’s General Manager, Fabien Chesnais, who has been setting new records in economic performance and development in his hotel, donned the Chef’s cap for precisely 20 minutes and invited us in to the kitchen. That was all the time he needed to create one of his special Flambé dishes.

Frenchman by birth, Fabian was just 25 when he became the General Manager of the busy Mövenpick hotel located in West Bay, Doha. His fast rising career started in 1994 as a Food and Beverage Management Trainee in Egypt. He joined Mövenpick Hotels & Resorts in 2007, as Executive Assistant Manager in charge of Food & Beverage and transferred to Jordan before taking over as General Manager at Mövenpick Hotel Doha. Getting Fabian to pull away from the confines of his desk for a different kind of interview proved to be a surprisingly simple task. Cooking is in Fabien Chesnais’ blood. As we followed him into the well organized hotel’s kitchen, and while he began to prepare the surface and gather the ingredients for his special dish, Flambé Beef Fillets, we asked him about his love for food, what keeps him going, and tips for busy professional like himself. We’ve been told you love to cook, what inspired your interest in cooking?

My mum’s food! She was an excellent cook. Although, as part of my F&B studies I had a culinary class and I really enjoyed it, I do not like to follow a recipe, I like to be creative and in the moment. What keeps you going despite being part of the hectic hospitality industry? My family of course; my wife and my two boys are the joy of my life. I am blessed with a very understanding and supporting wife, who understands the nature of my job and has stood behind me over the years and without her I would not be where I am today. I also do a lot of sports; it’s a great way to de-stress. In fact, I run 10 Km every other day, works like a charm.

Fabian went about creating the delectable dish with three of his favourite ingredients, butter, cream and milk. No shortage of calories here. His energy was infectious and he looked completely at home in the kitchen of the hotel, chopping and sautéing mushrooms at lightning speed, flattening steaks slightly with a meat mallet and whipping crème. What should a well-stocked pantry have?The basics for any good dish are olive oil, garlic, onions and herbs. Being French, I am a big fan of butter, cheese and cream. And my personal favourite is coconut milk. As for main ingredients, I like cooking beef and chicken. Do you have cooking ingredients prepared and stored in advance or do you like being spontaneous? Not really, I love being spontaneous, chopping and preparing is part of the joy of cooking. What is your favourite quick and healthy solution to cure hunger pangs? A platter of French cheese and fresh bread! We watched Fabian sprinkle the fillets with cognac and ignite them in the pan. When the flame died out, he transferred the filets to a warm serving platter and proceeded to make the sauce. The aroma in the kitchen was divine. As we feasted on the most delicious and tender beef I have ever tasted, the avid hotelier continued to speak to about his passion for his work and his dedication to the Mövenpick brand. He also shared his recipe with us.•

What types of food are both fast and easy to prepare? There are some easy French dishes which are delicious and quick. Italian as well, there is nothing faster than a plate of pasta. And since we are in Qatar and have the option to eat outdoors during the cooler months, a fresh barbeque is the way to go. Fabien Chesnais, General Manager,Mövenpick Hotel.

INGREDIENTS: 80 g Beef tenderloin 40 g Parmesan cheese 20 ml olive oil 10 ml Balsamic vinegar 30 wild rocket 30 cherry tomatoes

PREPARATION: » To make the cheese basket: Spread the grated parmesan on butter paper approximately 12 cm round and place in the microwave for 40 second then take out and put in a cupcake mold for one minute. » Cut the beef into paper-thin slices and place on the serving plate, fill the parmesan basket with rocket and tomatoes and drizzle the olive oil and balsamic vinegar over it. Sprinkle a bit of salt. Serve.

» Make the tempura batter as per the instruction on the packet.

» Clean the prawns and leave the tail on. » Season with salt pepper and dust with the flour. » Dip the prawns in the batter and deep fry in hot oil until golden.

» Serve with sweet chili and soya sauce. To make the batter

» Combine all ingredients and keep aside.

PREPARATION: » Heat the frying pan and add olive oil and beef fillets. » Turn on both sides and cook until nearly done. » Remove the beef and leave on the side, add the butter, garlic, mushrooms and onions cook for 5 minutes than add the red wine and beef stock. » Stir for five minutes, add the beef and flambé with the cognac add the liquid cream cook for 5 minutes and serve hot with steamed white rice and a fresh salad.

PREPARATION: » Cut the lobster in to half take out the meat. » Sauté the onions with butter add the lobster meat cherry tomatoes and basil. » Add the white wine, reduce and add tomato sauce and cream. » Season with salt and pepper and cook for five minutes. » Put the shell of the lobster in the oven for five minutes and after fill the meat ragout in this shell. » Top with cheese and gratin in the oven or salamander until the color is golden. Serve with sautéed asparagus and potatoes.

Up for a fight:

October is Breast Cancer Awareness month. This devastating disease, is the most common cancer of all, and it affects both women and men, regardless of nationality or social status. It’s a sobering fact that one in eight women will be diagnosed with breast cancer in their lifetime. ABODE speaks to one Doha resident who’s taken on the disease - twice.

bb I was first diagnosed with breast cancer in September 2005 when we were living in Jeddah. I had chemotherapy, radiotherapy and a lumpectomy which was completely successful. I was able to be given the preventative drug Herceptin, too, which was released that year. My treatment finished in 2007, but you obviously have to keep going for check-ups. abodE How did you break the news of your diagnosis to your children? bb When my children were small, my father in law died very quickly of pancreatic cancer, and to explain it, we spoke to them about good soldiers and bad soldiers in the body, and told them that there are good and bad cancers, ones you can fight and ones you can’t. So, when I got a lump in 2005 and the tests came back positive, my eldest child said to me “Mummy, is this a bad

abodE Getting that diagnosis for a second time must have been a tremendous shock… bb I must admit I couldn’t believe it, I was gobsmacked. There have been complications, too. I had surgery to remove what they thought was the primary cancer, but they couldn’t find it. However, my prognosis is very good because the cancer hasn’t spread; it all depends on how I react to this chemo.

abette Rousseau is the type of woman who doesn’t take a challenge lying down. The 49 year old South African, who has three children, has already beaten breast cancer once, and is currently being treated for a reoccurrence of the disease. Many people faced with this kind of challenge would curl up into a ball and opt out of normal life, but not Babette; on the contrary, she’s still working as a school librarian, and she’s keener than ever to increase awareness of breast cancer in Qatar. abodE Babette, tell us about your first diagnosis with cancer. How did it make you feel?

cancer or not such a bad cancer?” I told him that it wasn’t such a bad cancer, that you can fight it and not die. abodE When did you find out that you had breast cancer for a second time? bb I went for a routine check-up at Al Amal Hospital, part of Hamad. The radiologist saw something that looked odd, and referred me for more tests. Unfortunately, the tests showed it was sinister - I had cancer again. But it’s in the other breast this time, and

bb My doctor in South Africa says the b care I’ve been given here is spot on. The nurses and doctors are friendly and compassionate. The only thing I think could be improved is the isolation attached to chemotherapy here, so it’s very quiet and so hidden, and you feel people don’t want to speak about it. It would be good if we had more openness. abodE What advice for women who suspect they might have breast cancer? bb You must check yourself and listen to your inner sense. The first time I was diagnosed I found the lump myself. I knew I couldn’t ignore it. You have to take control of your disease, then you have ownership, and for cancer I think that’s really important. abodE Y You’re clearly a women who is determined to fight this. Where do you get your strength from? bb When you’re dealt a card like this, you’re dealt strength as well. You can’t just go, “Well, that’s it, I’m done”. I said to my 14 year old son recently that I really want to see him married and having kids one day. He said “oh, that’s so far away!” To which I replied, exactly! There’s so much that I’ve got to live for.•

(Rhona) A: Firstly, networking is not about a direct job interview or making that sale, it’s about collecting information. You don’t even have to be at a network specific function, you could be anywhere, sporting events, social gatherings, even sharing a taxi. Most of us are nervous and a little anxious when we first arrive at an event. A great starting point is to confidently walk into the room and find the person who invited you: this person will be aware that you probably don’t know anyone else and will automatically introduce you to the people they are already speaking to. As soon as you speak you can feel those anxiety levels decreasing. Introduce yourself including the company you are representing and your role. Remember, most of the people in the room are in the same situation as you right now. Now continue the conversation by asking for information and relax. Q: I am afraid that there will be awkward silence, what shall I do? (Amihira) A: If you do find that there is silence during your conversation or after your elevator speech, that’s fine. 5. coLLect caRds Of course, give out cards when people ask or to reinforce your conversation, but more importantly, collect cards from the people you want to follow up with. Try: some people just stick other people’s cards in their pocket, but that’s an easy way for them to get damaged or forgotten about. I recommend a two-compartment business card holder or an organizer so you keep these little gems protected. You’ll also want to have a pen handy and make some brief notes on the back of their card, to help you remember details for follow up.

After a night of roughing it, my body requires some serious relaxation time to feel fresh again. I head to the spa at RitzCarlton Doha for some pampering to put my body back on track.

out and aBout. The coastal scenery of southeast Australia is pure eye-candy with a postcard like landscape waiting around every curve. The drive down the Great Ocean Road to the “Twelve Apostles” – so named for some small columnlike islets just off the coast – will take about three-hours. In the interest of accuracy, there are actually only nine small islands, and there never has been more than nine. At first, these islets were simply called ‘the Apostles,’ but somehow the ‘twelve’ became attached and is now the official name. Renting a car and driving yourself is the best bet as there is so much to see. Plan on an all day outing and bring a picnic lunch to enjoy at one of the many beaches along the way.

It’s also a great place to enjoy the excellent food and wine produced in the Yarra Valley. Volunteers provide free guided tours from 10:30am until 3:30pm. Bring your camera and chances are you will come away with some wildlife photos that rival those found in National Geographic or Smithsonian magazines. Circling the CBD, the city circl e tram provides a free tour of downtown – but beware, it is always crowded.

ADVANCED VEHICLE SIMULATOR TECHNOLOGY Since 2001 Williams F1 has used simulation technology to train and improve the performance of their drivers on the race track. The new simulator systems that Williams has developed in Qatar immerses the driver in a sensory environment with an extended focal length screen, control interface and advanced audio giving the driver a dramatic realworld experience. The level of realism is extraordinary, providing exact repeatability of driving scenarios, but the best part is that there is no risk of injury. While training on the simulator, drivers have the advantage of being very accurately assessed and the opportunity to test new vehicles before they are constructed. Using the simulator as a training tool allows a driver to safely be exposed to simulations of dangerous or rare situations. Aston Martin is celebrating its ‘motorsport-inspired’ road cars with a special edition of the V8 Vantage N420 model. The 2011 Aston Martin V8 Vantage N420 is an impressive two-seater sport car that sits low and close to the road, available in two body styles: a Coupe and the convertible Roadster. ADOBE took it for a spin around the streets of Doha to find out what makes the new Aston Martin model so unique.

hen we picked up the new V8 Vantage N420 model for our test drive, we immediately knew why James Bond movie directors used the Aston Martin models as agent 007’s car of choice; the sleek and smooth body style coupled with the look of awesome performance. Like its predecessor the N400, the V8 Vantage N420 is a new and improved version that is impeccably crafted. We immediately fell in love with the car. This new model is a combination of automotive theatre, comfort and practicality that is not easily found in other sports cars or roadsters on the market today.
