When will Mr. Toad’s Wild Ride be over, you ask? Heck if I know. What we all DO know is that it’s gonna take quite some time and effort to recover- world-wide- from the ravages of COVID-19. The last issue of Appalachian Country Living Magazine was the February/March 2020 edition, after that I discontinued publishing until now. Back then we weren’t sure if the virus could be transmitted on surfaces, so I thought it best not to risk spreading COVID by distributing magazines. Once the pandemic came into full swing I simply could not, in good conscience, hold my advertisers to their contracts. However, all of those ‘projects’ that are now about half way done will have to wait until I finish the mag. But hey- at least those projects are started. I also realized during this time off that we are all slowing down. Maxine must be at least 11years old now, I turned 63, and I have no idea how old my Billy Zoom is except that he is now ailing with age. He can’t jump or run, I carry him up and down the stairs, give him lots of meds and let him sleep as much as he wants. He’s still a crazy, happy little feller (for now), snoring in my ear every night. And, here we are approaching fall. Nearly all festivals and fairs have been cancelled, so the calendar is a little short. One thing that can’t be cancelled is the natural beauty of our mountains as the leaves turn to red and gold. There are still apples to be picked, pumpkins to be carved, trails to be hiked and evening campfires to be lit. Play some golf at Old Toccoa Farm, look for that special treasure at Black Bear Antiques in Ellijay. Have lunch at Poole’s BBQ, and then take a tour of Covered Bridge Estates to get started on your mountain dream home. It’s the perfect time of year to answer the call to come to the mountains. November brings us right into December and all of the holidays to be celebrated. Usually the December/January issue is brimming with festive events and promises for the New Year, I can only hope the same is true this year. Our mountain towns are full of specialty shops, art galleries, antiques, and just about anything you’d want for finding that special holiday gift. Our restaurants, brew pubs, wineries and community theaters will be open, following social distancing guidelines and mask wearing, of course. Make your holiday shopping fun, skip those box stores and come to the mountains for some brief relief from the world’s worries. Maxine, Billy Zoom and I wish you a safe and healthy fall and Holiday season!

The Baby Boomers are at it again! With the bulk of them hitting retirement age, they find themselves healthy and in good shape. Their prospects are that they will live longer than their parents. And they will live on a fixed retirement income longer than any previous generation. We have spent years working hard for what we have and are mostly comfortable in our own homes. Surveys of all sorts show that most seniors would prefer to spend their golden years in their own home. Retirement homes and communities are great but are less personal and very expensive. According to a survey AARP conducted in 2014, 87 percent of adults over the age of 65 want to age in place, we want to stay in our own home that is comfortable and familiar. Our design studio has focused on this trend and requirements needed for a supportive and well-designed retirement home for the past 15 years. With the large number of retirees moving into the southern Appalachians, we wanted to get familiar with all aspects of how to help our clients prepare. There is so much that retirees can do to make sure that their homes are ready to support them as they age. Even though you may be very healthy now with no limitations, that day may come where you need a ramp (zero step entry) or a shower with no curb. If you are building from scratch, regardless of your age, we are now recommending including some of these features in the event someone in your family becomes disabled in some way. The Fallout of Falls: Per the CDC, the number one reason a person’s life begins to deteriorate, regardless of where they are living is a serious fall. Older people do not heal as well and as fast as younger. Preventing falls is the most critical action you can do. The number one place people slip is the bathroom. Make bathrooms safe! Install plenty of stabile elements to grab when someone. Today, towel bars and Toilet Paper holders are made to perform like grab bars. Make sure all tile meets the strictest of slip OCTOBER/NOVEMBER 2020
Easy to reach cabinets and drawers are a must.
resistance tests in a wet condition. Do not use tile on a shower floor that is larger than 2” X 2”. Every grout joint is a speed bump when slipping! In kitchens, (the 2nd most dangerous room) avoid sharp corners on countertops – curved edges and corners are best when falling. Same as bathrooms, avoid any slippery floors. In fact, installing softer floors are better than hard tile. Cushioned vinyl or wood is best. Doors and Pathways: It is best to make all doors and hallways at least 36” wide. Avoid thresholds whenever possible. Doors to the outside should be step free, including front doors and doors to decks and patios. There are drains and weather protection tricks you can use to keep water from coming in while having a zero step. Kitchen Design: First, retrain your brain to reverse everything you knew about kitchen storage. Change all lower cabinets to drawers or pull out inserts rather than cabinets with shelves. You want to install all heavy items (plates, glassware, APPALACHIAN COUNTRY LIVING
casseroles, etc.) below the countertop to make it easy for you to get to. Placing heavy items overhead is dangerous – they will fall out on someone and hurt them. Same with the placement of microwaves, place them below your countertop or on a countertop in your pantry. Do not place them over a stove or in the upper cabinets. This placement has caused many elderly to get burned when they pull something out and it falls on them. Colors: The specific hue of colors is not important. What is important is that there is a visible / dramatic contrast or change in color at all level changes (ie: steps or stairs). The aging eye can see a contrast in the lightness or darkness of a color. Lighting: As we age, the more light we need to have to see! Our eyes fill with debris, floaters, cataracts, etc. making clear vision more challenging. Identify all task areas and make sure they have ample lighting for doing your work, whether reading, cooking or doing a hobby. TV Placement: The trend for the past 10 years has been to place the TV over the mantle. This is coming back to haunt us. What happens is that the height of the TV is so high that we angle our necks in a way that is creating more work for the local chiropractors! Don’t do it if you can avoid this. It was on Labor Day weekend last year, when over 150 members, staff, family and friends gathered in the early morning fog as a kilted figure emerged over a hill with the sound of bagpipes playing the old tune “Flowers of Scotland.” It was quite a surreal backdrop as the dedication began announcing the muchanticipated opening of all 18-holes of golf at Old Toccoa Farm, and it was that moment that launched the community into a new level of positive momentum. A year later, and working through the challenges of a pandemic, Old Toccoa Farm is thriving with a robust pipeline of new home construction, a significant increase
in memberships, record setting rounds of golf, and the golf course has been nominated for Golf Digest’s “Best New Course” in 2020. The age-old question of annuals vs. perennials is often asked of me when I am out meeting with clients . My answer is both, I love annuals, as they are a great splash of color for different times of the year. I recommend using them in a limited capacity, mainly to fill in areas during the winter months that are lacking in color. I also recommend a spot or two in the garden where one can enjoy some seasonal color year-round. There are so many to choose from and many are great, but you can end up replacing them up to 3 times a year. This is a lot of effort, work and money. The other option is to use perennials that flower on a seasonal basis, as the name implies, perennially. This is usually a onetime install and ongoing flowering for years. Perennials normally disappear in the winter and come back every year and bloom for our enjoyment. Sometimes perennials die out due to lack of water, light, fertilizer, but for the most part, are very hardy and require only minimal attention. Pruning the finished flowers off of the plant (dead heading) usually makes the plant produce more flowers for a longer period of time. Perennials are a great compliment to your trees and shrubs and the overall garden. Many of the plants I am going to mention here may be evergreen or evergreen with a seasonal bloom. Some do not bloom at all but give a nice texture and foliage for the garden, and some are actually biennial and re-seeding annuals, these designations depend on your planting zone. For the sake of this conversation, we are going to refer to all of these as perennials. Here are some of my favorite perennials that do well in this area and require little attention. Some take a little more care, but all would be a great compliment to your garden. Please keep in mind that many of these are not deer resistant so you might be taking a risk on using them. The following letters and symbols represent specific attributes to the individual plants:

Treasure Abounds at Black Bear Antiques Are you searching for elusive vintage baseball cards, early 20th-century tools, handcrafted Amish furniture or a giant bronze black bear? If you are driving on the Georgia Mountain Parkway 515 through Ellijay, the giant bronze bear is hard to miss, but you can actually find all of these things and thousands more at Black Bear Antiques and Interiors on Old Orchard Square in Ellijay. With more than 50 dealers and 20,000 treasure-packed square feet, this amazing venue attracts discerning collectors, bargain hunters, and a growing number of creative DIY types who can look at a dark old granny cupboard and imagine what it can become with a little paint. “We have something for everyone and any budget. Our inventory includes a wide array of elements, small and large, that can work with a range of different decors and tastes—not just cabin or farmhouse styles,” affirms Lynn Asher, longtime manager of this time-honored 12-year-old business. “And we are not just for the ladies. We allow and encourage husbands to come on in and browse,” she adds smiling. 18
“We have knives, old tools, a couple of sports memorabilia sections and some booths which feature items that are especially for men and man caves. The assistant manager, Jacob Padgett, is our resident coin guy. Not only does he help to grow existing collections, he eagerly assists in creating new ones for young collectors. This isn’t the type of assortment that visitors can just breeze through. Often, someone will step in just to check us out or pass some time and end up spending several hours or a whole day milling around looking at all the merchandise.” In addition to the vintage items and cabin/farmhouse accessories, Black Bear offers a popular selection of Amish-built log furniture, distinct, locally handcrafted pieces, and wood slabs for the do-it-yourselfer. Some of their repeat customers say that they’ve furnished most of their homes with items that they’ve found here. In addition, their dealers work hard to keep their booths stocked with the items that customers are looking for, often trekking, tracking, junking and picking across the country for those coveted harder-to-find

primitive and rustic antiques and other unique and unusual stock. Accordingly, they go to estate sales, buy boxed lots and sometimes dig through a lot of junk looking for the best pieces and great deals that they can then pass along to customers. “Our dealers do a phenomenal job of keeping their best-selling items in stock, especially considering many such items become discontinued. They go the extra mile to find comparable pieces to keep the more discriminating customers coming OCTOBER/NOVEMBER 2020
back. Many of our dealers live out of town and some live out of state. So, they are able to find some truly distinctive pieces to bring here. We have had some amazing, one-of-a-kind objects,” says Asher. “Most notably, people still ask about the Beefeater Gin Bar, the 7-foot-tall carved teak Eagle, and, of course, the massive 15-foottall bronze bear in front of the store that has become a local landmark.” As the giant bear out front suggests, Black Bear is naturally home to all things bearish— OCTOBER/NOVEMBER 2020
kitchen towels and other linens, an array of artwork, dishes, do-dads, etc. embellished with bears. “Cabin décor is one of our most popular selections. We sell lots of affordable bear accessories—rugs, pillows, pictures, figurines—and for some reason, moose items are popular, even though there aren’t any actual moose this far south,” Asher notes. The bear out front has been a constant, but the inventory has changed considerably in the 12 years since they opened. “Our best dealers have learned to adapt to changing trends in our market. We listen to our customers and let the dealers know what they are looking for and help them transform their merchandise to meet the customers’ needs. That’s one of the reasons that we’ve thrived despite competition from a local Walmart.” And unlike Walmart, at antique malls like Black Bear there is usually not a warehoused backstock of duplicate items waiting to be shelved. As most antique store shoppers and vintage connoisseurs know, the best time to buy something at an antique store is when APPALACHIAN COUNTRY LIVING

There is something significant yet familiar about autumn. The air is sharp and clear. Leaves turn brilliant shades of red, orange and yellow and float to the ground. Despite the inevitable winter, we toast the harvest with a hardy cheer for the abundance of our favorite fall fruit– the apple. Cozy days with the smell of apple pie in the oven, a mug of hot apple cider, and the first bite into a crisp red apple freshly picked from the orchard are all fondly remembered and enjoyed once again. Apple Time in the mountains is a glorious celebration of our area’s history, culture and heritage. We hope you all enjoy these recipes from the Gilmer Chamber of Commerce and The Ellijay Lions Club.
Fall Applesauce Spice Cake with Maple Buttercream Icing This fabulous cake, submitted by Karla Haege, will surely be the hit of any party! Make the Cake 4 layers as pictured 5 cups all purpose flour 3 teaspoons baking soda 2 teaspoons salt 2 teaspoons ground cinnamon 1 ½ teaspoon ground nutmeg 1 teaspoon ground cloves ½ teaspoon baking powder 1 cup butter or margarine 4 cups of sugar 4 eggs 32 oz of applesauce 6oz box of raisins 8oz shelled walnuts chopped
Make the Frosting 6 tablespoons butter 4 ½ cups sifted powdered sugar ¼ cup of milk ½ teaspoon vanilla ¼ cup of syrup ½ cup of brown sugar
Preheat oven to 350 degrees. Grease and flour four 9 inch round baking pans. Combine the first seven (dry) ingredients. In a mixer bowl beat butter with electric mixer for 30 seconds. OCTOBER/NOVEMBER 2020
Add sugar and beat till well combined. Add eggs, one at a time, beating 1 minute after each. Add dry ingredients and applesauce alternately to beaten mixture, beating on low speed after each addition. Turn into pans. Sprinkle nuts and raisins on top of batter in the pans. Bake for 20 minutes or till done. Cool on wire rack.
In a mixer bowl beat butter till light and fluffy. Gradually add about half of the powdered sugar, beating well. Beat in the milk and the vanilla. Gradually beat in syrup, then remaining powdered sugar and brown sugar until thick and creamy.

Once cake layers have cooled, stack each cake layer with a layer of frosting in between. Make the Caramel Topping 14oz or 1 can sweet & condensed milk 1 cup light brown sugar packed 2 tablespoons butter ½ teaspoon vanilla Put can of milk and brown in medium saucepan. Bring to a boil on medium heat whisking continuously. Reduce to simmer for five minutes whisking continuously. Whisk in butter and vanilla. *Do not prepare ahead as caramel will thicken quickly. Drizzle over cake. Add the Apples on Top Put a skewer in the bottom of the apple and a broken stick in the top. Slide the skewer into the cake leaving the apples on top of the cake then drizzle caramel over the apples.

Apple Cream Cheese Torte Fabulous Recipe by Merle Howell Naylor from the Ellijay Lions Club Ingredients ½ cup butter, softened 1 cup sugar, divided 1 cup all-purpose flour 1 8oz. pkg. cream cheese, softened 1 large egg ½ tsp. vanilla extract ½ tsp. apple pie spice 1 tbsp. all-purpose flour 5 Gala or sweet apples, peeled and sliced Preparation Pre-heat oven to 425 degrees. Beat butter and 1/3 cup sugar until light and fluffy. Add 1 cup flour and beat well. Line bottom of a 9” cheesecake pan with parchment paper. Spread flour mixture on bottom and 1” up sides of pan. Beat together cream cheese, 1/3 cup sugar, egg and vanilla. Spread on top of crust. Add remaining 1/3 cup sugar, apple pie spice and 1 tsp. flour to apples. Spread mixture on top of cream cheese layer. Sprinkle nuts on top. Bake 10 minutes, then reduce temperature to 375 and bake for 35 minutes. Cool on wire rack, then refrigerate over night. 28
Remove from pan and place on serving plate. Drizzle top, and let drip down the sides with caramel sauce. Caramel Topping ¾ pound (3 sticks) butter 2 cups brown sugar ¼ cup milk Heat all ingredients together over medium heat. Bring to boil, stirring constantly. Let boil for about 2 minutes. Pour over warm cake.

Honey Crisp Apple Roses These lovely Apple Roses, from Thanna Chadwick, make a delightful addition to any occasion.
Apple Cider Floats Bottoms up! These Apple Cider Floats, by Paige Green, can be a dessert all on their own. Ingredients Local Apple Cider Sparkling apple cider French vanilla ice cream (I prefer vanilla bean) Whipped cream, ground cinnamon, caramel sauce, apple slice, cinnamon stick- all optional
Ingredients 1 large apple, cored and very thinly sliced 1/4 cup white sugar 1 teaspoon ground cinnamon A pinch of my secret spice (allspice) 1 sheet frozen puff pastry, thawed 1/4 cup melted butter 1 egg 2 teaspoons water 1/8 teaspoon of vanilla 1 teaspoon confectioners’ sugar (optional)
Drizzle caramel sauce on sides of glass. Place 2 to 3 scoops of ice cream in your favorite float glass. Pour equal parts apple cider and sparkling cider over ice cream. Top with whipped cream, sprinkle ground cinnamon on whipped cream. Place cinnamon stick in glass and place apple slice on glass rim.
Preparation Preheat oven to 375 degrees F. Use cooking spray on metal muffin pan and dust with white sugar. Place apple slices on a plate, overlapping slightly if necessary. Microwave on high about 45 seconds, just until slices have softened a bit. Cover plate with plastic wrap and a kitchen towel. Mix together sugar, allspice, & cinnamon in a bowl. Roll puff pastry sheet to less than 1/8-inch thickness. Using a pizza cutter, cut two 3-inch

by 12-inch rectangles. Reserve remaining pieces for another use. Spread melted butter over dough; top with a generous amount of spice-sugar. Place apple slices along 1 long edge of dough, about 1/4 inch beyond edge of dough, overlapping slices slightly. Fold bottom half of dough over the apple slices to form a long “folder” of dough with rounded edges of apple slices exposed. Beat egg and water together in a bowl. Paint surface of dough with egg wash. Sprinkle with more spice-sugar, to taste. Starting from one end, roll dough not too tightly to form a rose-shaped pastry. Seal roll with end of dough strip. Transfer roses to pan. Sprinkle with a little more spice-sugar. Place directly on middle rack of preheated oven. Bake until well browned, about 35 minutes. Remove from oven, cool 5 to 10 minutes. Remove apple roses from pan and finish cooling on rack. Dust with confectioners’ sugar before serving. ACLM

In 1735 the Wesley brothers and evangelist George Whitefield sailed to the colony of Georgia, where they served in various capacities. Charles Wesley served as secretary to James Edward Oglethorpe and as chaplain at Fort Frederica on St. Simons Island, while John Wesley served as Anglican rector to the colony. Whitefield was an itinerant evangelist. During their time in Georgia, the three men came in contact with the Moravians, who had also arrived in the colony in 1735. The Moravians had formulated in 1457 and were of Bohemian origins, in what was considered the Czech Republic and not German as some consider them, although most of their records are in German. In 1547 they suffered severe persecution and migrated to Poland. They found religious persecution similar to all Christians across Europe. In 1735 they came to the Georgian Colonies, as part of General Oglethorpe’s philanthropic promotions for the welfare and humanitarian aspects of the Natives. Ups and downs in their history they found themselves in Pennsylvania by 1741 working with the evangelist George Whitefield. Their missionary efforts spread to New York, New Jersey, and Maryland. Around the same time, they established missions amongst the Native Americans, especially here in Georgia. Given permission to live amongst the Cherokees at Spring Place near Chatsworth in 1801, Chief Joe Vann insisted that they teach the arts of “civilization” by teaching useful skills such as weaving, sewing, farming. He was adamant though, that they do not try to convert the Cherokee to the religion. 38
In 1737 the Wesley brothers left Georgia under difficult circumstances and returned to England. After attending a Moravian meeting in London on May 24, 1738, John Wesley recorded in his journal, “I felt my heart strangely warmed. I felt that I did trust in Christ, Christ alone for salvation, and an assurance was given me, that he had taken away my sins.” This affirmation of salvation by faith alone became the foundation of future Methodist teaching. As Wesley began to foster the growth of Methodism in England, the Methodist movement in America also grew over the next several decades, partly through the persistent evangelical efforts of Whitefield. The Methodist Episcopal Church, the supreme legislative body of the Methodist denomination in America, was formally organized at a meeting known as the “Christmas Conference,” which was held from December 24, 1784, through January 2, 1785, in Baltimore, Maryland. Thomas Coke and Francis Asbury were ordained as bishops during the conference to organize the work of the Methodist Church in the United States. The formal introduction of Methodism into Georgia occurred when Coke and Asbury assigned Beverly Allen to Georgia in 1785. Allen was an itinerant minister who had been elected elder at the Christmas Conference and ordained a year later. In 1786 Thomas Humphries and John Major, both of the Virginia Conference, were sent as missionaries to Georgia. Bishop Asbury held the denomination’s first annual conference in Georgia on April 9, 1788, at the
