he Riesling Trail is a picturesque 33km long riding track that runs between Auburn and Clare, passing through gorgeous towns and villages and, of course, some of Clare’s most renowned wineries. ince sliding into my BMW X4 I’ve become super proud when driving around South Australia. I actually find myself planning long road trips... just so I can drive! Rich in history
Delgattie’s story began in 1902 when the land was part of ‘Canavan’s Paddock’ before local accountant Alexander Walker built a single storey dolomite and limestone home on it. Chief Magistrate Carl Louis Spehr and his wife, Emma, became Delgattie’s second owners in 1905. After twenty years, they added a second storey, including an enormous billiard table and pianola that were lifted into place by a crane before the roof was added! The property changed hands several times before the Kosch family transformed it into the boutique hotel that it is today. Now a family affair, the estate is lovingly run by Evan and his three children, Michael, Tom and Lucy. “My dad Evan took four years to restore this amazing estate and, as you can see, he has an incredible eye for detail and interior styling and design,” says Lucy. No stranger to the hotel business, the family also owns Commodore On The Park Motel and Mount Gambier’s new-look The Henty.

edical professionals and friends, Dr Michael Goldblatt and Dr Aparna Lockie started Glo Clinical Hypnosis after personal life experiences. “My daughter had severe anxiety to the point where it was really impacting - 18
her life — even going to school became a challenge. We had run out of ways to help her when her GP suggested we book a hypnotherapy session with one of the partners at the clinic. As an anaesthetist, I was very skeptical until I saw the
immediate change in her confidence and mindset. It was an extraordinary change,” says Mike. Eating a large slice of humble pie, Mike wanted to learn everything he could about hypnosis — what it was, how it worked, and

how to use it so patients could benefit in the same way his daughter had. Understanding the science behind hypnosis, it’s clear that the anesthetist and GP are doing this because they genuinely love it. ight now 23,500 children in South Australia are living under the poverty line. As a mum, hearing this statistic for the first time stung me right in the heart. Poverty and homelessness can create a dangerous home environment and parents struggle to provide their kids with life’s essentials. Can you imagine a child going without clothes, toys, books and warm blankets? Visualise having just given birth and not even having a sanitary pad or a cot for your baby to sleep safely in. Treasure Boxes provide all these essentials and more to families escaping domestic violence, or children going into

And it all began after Rikki Cooke witnessed the challenges faced by children going into emergency state care, firsthand. “In 2015, I was working for the Department of Child Protection and one afternoon I had four siblings who were all incredibly distressed and scared land on me — an eight-month-old boy, a two-yearold little girl, and her four and six-year-old brothers. For the next few days, we had nothing to occupy them; no clothes and no toys… nothing. So, I put a call out on Facebook for some help — the next day my porch was full,” says Rikki. From there, Treasure Boxes was born.
“We welcome pre-loved goods like cots, car seats, breast pumps, toys and clothes to our warehouse in Edwardstown where we clean them, conduct safety checks and quality control each item, before passing them out to families in desperate need.” From humble beginnings, the charity has gained enormous community support — last year, they looked after 859 families, providing 2026 babies and kids with a year's worth of clothing, bedding and other essentials, such as feeding equipment and nappies. Helping fussy eaters, eat!
FEEL GOOD: WHOLESOME MEALTIMES
Mum of four, Emily Hayes creates digestible audio episodes to help parents of fussy eaters enjoy mealtimes. WORDS Hayley Pearson PHOTOS Click Films
A
n experienced speech pathologist and feeding therapist, Emily started Wholesome Mealtimes from a very real place. “I have four kids with eating issues. One’s a coeliac, two have food allergies, and my fourth baby was born with multiple eating challenges,” says Emily. Mealtime at the Hayes’ house wasn’t fun, with difficulty breastfeeding, constant reflux and even choking. Knowing that negative experiences with food can lead to all sorts of health and emotional problems later in life, Emily learned everything there is to know about feeding and mealtimes, and how to help fussy eaters, eat! And so, she developed a nine part audio e-course sharing fundamental and baseline skills to help with family mealtimes and, of course, fussy eaters. “My course is about creating healthy food connections, removing the anxiety and stress from mealtimes, and replacing it with a wholesome experience for all,” says this talented mum. For me, having a five-year-old with a thirst for chocolate, and chocolate

only, I was quick to jump on the Emily bandwagon. Two minutes into the first episode, I’d already realised that one of my go-to strategies is actually redundant now. The old mum hack “if you don't eat what’s on your plate, you go without,” doesn’t cut it these days as kids would actually prefer to starve than eat foods they don’t enjoy. And of course, being hungry then impacts other areas of their lives. Emily’s work also extends to helping children with disabilities and sensory problems and she approaches feeding from a motor, sensory, nutritional, social and behavioural perspective.

Sprinkles (whether they're hundreds and thousands, chia seeds or grated vegetables) are my number one tip for parents of fussy eaters. While using hundreds and thousands may sound counter-intuitive, sprinkles bring a world of fun and positivity back to mealtimes, which is exactly what a fussy eater who is wary of food needs. It also allows the child to take back some control — they can dip or sprinkle the food themselves. Sprinkles are also much less intimidating than a larger piece of food.

Stir with a metal spoon until the chocolate mixture is smooth, then remove bowl from heat and stir occasionally as it cools, until thick and spreadable (ganache). • Coat each Rollette with chocolate ganache. 50g desiccated coconut 200g sweetened condensed milk Extra desiccated coconut to garnish • Grease and line a rectangular slice tray with baking paper (approximately 18cm x 28cm). • Finely crush the biscuits in a food processor or using a rolling pin, then pour into a large mixing bowl, along with chopped apricots and halved FruChocs. • Add butter and brown sugar to a small saucepan, and melt over a low flame until combined. Pour into the biscuit mixture,
along with the coconut and condensed milk. Stir until well combined. • Spoon mixture into the prepared tray, and press down firmly with a spoon. Sprinkle with extra coconut and place into fridge for 4 hours. • Remove from fridge and cut into slices. Store in an airtight container in the fridge for up to 5 days.

Sauté the onion, garlic, and capsicum until soft. • Add the crushed tomatoes and season with salt and pepper. Stir for 2 minutes, then remove from heat and add the basil. Stir once more, then smooth the surface of the sauce with a spatula. • Arrange the sliced vegetables on top of the sauce from the outer edge to the middle of the pan in a snail shape, adding a piece of mozzarella every second round (eg. eggplant, tomato, zucchini; eggplant, tomato, zucchini, mozzarella; repeat). • Season again with salt and pepper. • In a small bowl, create the herb mixture by combining the basil, garlic, parsley, thyme, salt, pepper, and olive oil. Spoon this over the vegetables. • Cover the pan with alfoil and bake for 40 minutes. • Uncover, then bake for another 20 minutes, until the vegetables are soft. • Serve while hot, as a main or side dish.

Remove from oven and leave to cool slightly. • To make the dressing, combine olive oil, red wine vinegar, wholegrain mustard, brown sugar, and honey in a small bowl. Season with salt and pepper, then set aside. • Grill the kangaroo steaks over direct high heat for 4 minutes on each side, or until seared and caramelised. Once cooked to your liking, leave to rest for 5 minutes before slicing. • To make the salad, place rocket in a large serving bowl, add mint and toss. Add the beetroot, sweet potato, walnuts and pine nuts, then crumble the feta. Serve with kangaroo steak. • Add dressing and wedges of fresh lemon, or allow everyone to add their own.

Somehow, we convinced her to share a family favourite… Time 30 mins + cooling time Serves 8 Recipe Mrs Romeo Photos Naomi Giatas 2 cups medium grain rice 14 portobello mushrooms Olive oil 2 eggs ½ cup parsley, chopped 4 pieces short cut bacon, diced 1 leek, finely chopped 2 cups pecorino cheese, grated ½ cup plain flour • Cook the rice (following packet instructions) then strain and run cold water over it to cool down. Set aside for 2 hours, so it’s nice and dry. • Boil another pot of water. Remove the stem of the mushroom and boil for 5 minutes. Remove stems from water and leave to cool before squeezing out excess water and chopping finely. • Heat olive oil in a hot pan. Add bacon, leek and mushroom stems, and fry until golden and soft. Set aside to cool. • Add the bacon mixture, pecorino cheese, parsley and eggs to the cooled rice, and combine. Season with salt and pepper. • Peel the outside of the mushrooms and remove the gills with a spoon. Do not wash the mushrooms, or they will get soggy. • Using a handful of the rice mixture, stuff each mushroom firmly. • Lightly coat the stuffed mushrooms with flour, then place into a pan over medium heat with some oil. Allow the base of the mushroom to turn golden, then flip and leave the top to get golden and crispy. • Remove from heat and serve immediately as a side dish to your favourite Italian meal.

Japanese roast pumpkin and beef noodle salad

Healthy and full of zest, this salad is a showstopper when piled high on your guests’ plates. Time 55 mins Serves 2 Recipe Laura Bakhtiarian Photos Naomi Giatas 1kg Kent pumpkin, deseeded and cut into wedges ¼ cup Praise Japanese Style Dressing 90g dry soba noodles 350g piece scotch fillet steak 200g snow peas, trimmed, halved diagonally and blanched 50g snow pea sprouts, trimmed 50g pickled ginger 2 green spring onions, thinly sliced diagonally 1 tsp black sesame seeds, to garnish Fresh coriander, to garnish • Preheat oven to 180°C fan-forced. • Line a baking tray with baking paper and place pumpkin on the tray. Spray with olive oil and season with salt and pepper, then roast for 10 minutes. • Drizzle 3 tablespoons of dressing over the pumpkin, then continue to roast, turning once, for 20–25 minutes, until golden and tender. • Meanwhile, cook the noodles in a saucepan of boiling water following packet directions. Drain and then refresh under cold running water. Transfer to a bowl. • Heat a non-stick frying pan over medium-high heat. Spray steak with olive oil, then season with salt and pepper. Cook for 4 minutes, then flip and cook for a further 2 minutes for medium-rare, or until cooked to your liking. Set aside to rest for 4 minutes, then slice thinly. • Add snow peas, sprouts, ginger, spring onions and beef to the noodles. • Add half the remaining dressing and toss to combine. • Place pumpkin on a plate. Top with the noodle mixture, then drizzle with remaining dressing and sprinkle with black sesame seeds and coriander.

Toss the chicken to ensure fully covered in sauce. • Bake for 20 minutes, then baste chicken with sauce from the pan and bake for another 15–20 minutes. • Remove from oven and allow chicken to rest for 5 minutes. • To serve, sprinkle the chicken generously with sesame seeds, chopped parsley and enjoy with the slaw.

Spiced citrus olive oil cake A bit of spice is very nice, especially when it’s combined with cake! Time 1 hour 10 mins + cooling time Serves 8 Recipe Maria Kosti Photos Naomi Giatas 1 cup Greek yoghurt ⅓ cup Rio Vista Olives Nothin’ But Olives Classic Olive Oil ¼ cup lemon juice 3 eggs 2 cups self-raising flour, sifted 1 cup caster sugar 1 tsp salt 1 lemon, zested For the glaze ¼ cup fresh lemon or lime juice ¾ cup soft icing sugar 1 tbsp Rio Vista Olives Merchant Spiced Olive Oil (optional)
For the Candied Lemon 3 lemons, cut into thin slices 1 cup white sugar 1 cup water 2 tbsp fresh lemon juice • Preheat the oven to 180˚C fan-forced. • Grease a 22cm round cake pan with baking spray. Set aside. • With an electric mixer, whisk eggs and sugar until pale and creamy (approximately 4 minutes). Add lemon juice and zest, then whisk for a further minute. • With a wooden spoon, stir in flour, yoghurt and oil until smooth. • Spoon batter into the prepared pan and bake for 45 minutes or until a butter-knife inserted into the centre comes out clean. Allow to cool in the pan for 10 minutes before removing, then place onto a cooling rack.
FOOD: RIO VISTA OLIVES • In a small bowl, combine the spiced olive oil, lemon juice and icing sugar and stir with a fork until smooth. With a pastry brush, gently pat the glaze all over the warm cake until the glaze is fully absorbed, giving it extra tang. • To make the candied lemon slices, combine sugar, water and lemon juice in a wide saucepan, and bring to the boil over medium heat. Reduce to a simmer and add the lemon slices in a single layer once the sugar is dissolved. • Simmer for 30–40 minutes, gently flipping once or twice during the cooking process. Cook until the lemons are semitranslucent, then transfer to an oven that has been preheated to 100˚C fan-forced for an hour, or until the lemons have dried out and become less sticky. Leave to cool. • Allow the cake to cool completely, then serve with dollops of cream and candied lemon slices.

Brown butter apple tart Butter is the star of the show when it comes to this apple tart. Time 2 hours Serves 8 Recipe Laura Bakhtiarian Photos Naomi Giatas Base 230g plain flour 130g Devondale Unsalted Butter, chilled and chopped 85g icing sugar 2 egg yolks 1–2 tbsp iced water Filling 4 eggs 3 green apples, thinly sliced 200g caster sugar 1 tbsp vanilla paste 200g unsalted butter 65g plain flour Zest of 1 lemon
• To make the pastry, add the flour, butter and icing sugar into a food processor and process until it resembles fine breadcrumbs. While the motor is running, add the egg yolks and process until combined. Add some iced water if needed to bring the dough together. • On a lightly-floured surface, turn out the mixture and gently bring together to form a ball. Flatten into a disk, wrap in plastic wrap and refrigerate for 30 minutes. • Roll out the pastry between 2 sheets of non-stick baking paper until 3mm thick. • Preheat oven to 180°C fan-forced and line a lightly greased loose-bottomed, fluted tart tin with the pastry. Trim overhanging pastry edges and prick the base with a fork. Refrigerate for 15 minutes. • Line the pastry case with non-stick baking paper and fill with baking weights or raw rice. Bake for 15 minutes, remove the paper and weights (or rice) and bake for a further 10 minutes. Remove from oven and set aside. • To make the filling, add the eggs, sugar, and vanilla paste to a medium bowl and whisk, then set aside.
• Place butter in a saucepan over medium heat and stir occasionally until completely melted and foaming. Once the butter browns, set aside and cool for 10–15 minutes. • Whisk browned butter into the egg mixture, then whisk in the flour and lemon zest to make a custard. • Arrange sliced apples in a spiral pattern on the pie crust, then pour custard over apples. • Place in the oven and bake for 50 minutes. Remove and allow to cool completely before slicing and serving.

Set aside. • Lightly tenderise your chicken fillets to flatten and thin them out. • Coat each chicken breast in egg wash, and then coat in the bread crumb mixture and place on the prepared baking tray. Sprinkle with extra parmesan to garnish, then bake for 17–20 minutes or until cooked through and the outsides are golden and crispy. • Enjoy with a salad, or put together a great crispy chicken burger and enjoy.

Set aside. • Rinse the potatoes, thoroughly dry them, then dice into small squares. • Place potatoes in a greased baking tray and season with salt, cumin and sumac. Bake uncovered for 15–20 minutes or until tender. • Remove potatoes from the oven and place in a large mixing bowl. Add mustard dressing, onion, fresh herbs and capers. Gently toss, then add feta and lemon wedges to serve.

t first glance, you’ll spot a funky café sitting on the edge of Wellington Square in North Adelaide. Look closer, and you’ll discover a little more. Fare and Square has been carefully created so that between 3pm and 5pm each day, a bit of magic happens. Curtains slide to reveal an extensive wine range, menu boards flip showcasing a mouthwatering tapas menu, and the record player cranks up filling the space with sounds of the 80s. Suddenly, the café you thought you were in has become an atmospheric wine bar.

Who are the geniuses that combined our two favourite things, coffee and wine? Paul Denmead and his chef Hindarto Gunawan have plenty of experience, previously owning the well-known Pantry On Egmont. With the flexibility to transform the versatile space, they’ve maximised their hours by creating two venues in one. “When we found our space on Wellington Square it was an empty shell — but we loved that it wasn’t amongst the craziness of O’Connell Street,” says Paul. During the day, the café pumps out rich coffee using De Groot Coffee Co. roasted beans, and delicious breakfast and lunch dishes — we highly recommend the smoked trout croquettes and baked
masala chickpeas. And there’s plenty of seating inside and out, overlooking picturesque Wellington Square so you can enjoy the sunshine. At night, the offerings change to include an all South Australian wine list poured straight from the two enomatic machines, paired perfectly with tapas dishes that are designed to share. You won’t want to skimp on ordering — every single dish is to-diefor, especially the pork belly bites and grilled halloumi. “I like wine, I like matching food with wine, and the whole experience started with that,” says Paul. else do you need? We wanted to show that vegan food could be an appealing option for everyone,” says Anastasia. Creating a traditional Greek yiros experience (minus the meat) came with its challenges, but once Staazi & Co nailed their secret recipe, they hit the streets and festivals of Adelaide in their food truck. From the get-go, the Staazi & Co truck always had a long line of customers waiting to wrap their lips around a loaded lamb-style yiros, complete with perfectly seasoned hot chips. If you think we’re exaggerating, we’re not — they even took out the Lonely Planet title of fifth best vegan food truck in the whole world! While Anastasia never saw herself in a bricks and mortar store, it was the demand that decided it for her in the end. “All I ever wanted was to create something ethical
that I could make a living from — never in my wildest dreams did I think we would receive as much love as we have over the last three years.” And now, Staazi & Co calls the beautiful building at 224 Grenfell Street home, four days a week.

Well, even though their theme is yellow, they’re all green underneath. “We have a big focus on plant-based meals. Carli’s all about sustainability so we have very little waste and always cook with seasonal and environmentally-friendly food.” A lot of the menu is vegan and the meals are designed for you to add on things like meat and cheese. Regulars on offer are classic brunch options like poached eggs and smashed avo on toast (with all the sides). For something a little left of centre, may we suggest the eggs Benny with orange blossom hollandaise, or even the macadamia buckwheat granola with housemade coconut yoghurt? Everything on the menu (except the sourdough) is made in-house, including outstanding drinks, like turmeric tonic and Kombucha.

But, where’s the pickle? South Australian owned and operated, Continental Taralli Biscuits have been made by the beautiful Viscione family for over 50 years.
T
he Viscione’s secret family recipes go waaaaay back to the 1900s, when their biscuits were sold as culinary delights at a little bakery in southern Italy. You can enjoy them as a snack, on their own, with cheese, dip or antipasto, and they’re perfect for that next grazing platter — some people even like to dunk them into a glass of red wine! However you consume them, Taralli Biscuits taste even better once you know the story about how they came to be.

Continental Taralli products are not only delicious in flavour, they’re oven baked with special dietary requirements in mind, making vegans, vegetarians and diabetics very happy. John, Anna and their young family migrated to Adelaide 50 years ago and, missing the food of their hometown, John decided to build a wood oven in his backyard and started baking biscuits. Through word of mouth they became so popular that everyone flocked to the Viscione’s home to get their hands on a fresh batch. “Too many people said they loved my biscuits and that I needed to make more, so I made another 50 packets, and 50 more, and I’ve never stopped baking,” John says with a laugh. Today, they make almost 20 specialty lines of gourmet sweet and savoury biscuits, and sell them Australia wide. “I just want to feed people and make them happy,” John says. And that’s exactly what he’s doing. The family even makes sure they support local
producers — their olive oil is from Willunga, their wine from Sellicks Hill, and their flour is sourced from Strathalbyn. As the brand has grown, so have the flavours — Fennel & Olive Oil, Rosemary & Sea Salt, Sundried Tomato & Basil, Kalamata Olive & Thyme, Lemon Myrtle & Sesame Seed, Garlic & Black Pepper and, popular with the kids, Parmesan Cheese & Onion. When I visited their store, I even got to witness a brand new flavour coming out of the oven. We all sat around the table, tasting and giving honest feedback. This is how the Viscione’s work — it’s a family affair, spanning over three generations. John’s daughter, Sonia, and grandsons, Christian and Jai, are now learning the family recipes and also bring a fresh eye to the future of Taralli. n more recent years, we’ve made room in our fridges and pantries for their flavoured and long-life milks. But as you’re sipping a cool glass of this South Aussie favourite, have you ever thought about how it all began? The Nippy’s story started in the early 1930s, when local lad Alic Knispel started growing and packing citrus fruit in the Riverland. Thirty-odd years later, his sons followed in their dad’s footsteps and started collecting oranges and handsqueezing them in their mum’s Kilburn kitchen. They then sold these sweet juices to their Adelaide High School mates and even local shops. The boys were given the nickname ‘Nippy’ by their friends… which later became a household name when they called their OJ, Nippy’s! Today, Nippy’s is the trifecta. They’re the grower, the packer, and the juice factory
NIPPY’S GLUTEN FREE JAFFA BLISS BALLS Recipe Mia DeCesare These delicious bliss balls make a rich, indulgent, yet nutritious snack that will keep in your fridge for up to one week. Makes 12 balls • • • • •
1 ½ cups pitted dates 1 cup almond meal 3 tbsp raw cacao powder ½ cup unsalted almonds* Zest and juice of 1 large Nippy’s Orange • 1 tsp vanilla extract • Pinch of G-Fresh Sea Salt and all their products are delivered as fresh as possible to customers throughout South Australia and interstate. While we were in the Riverland, we went ‘backstage’ at the Moorook facility, where they make all Nippy’s long-life products, including juices and flavoured dairy drinks. Farm-grown from the tree to the table, these products are sold in Australia and also exported overseas. We managed to get our hands on a few OJs and decided to turn them into a delicious snack! @nippys_au
*You can swap the almonds for any other nut you prefer. I love using walnuts or macadamias. • Blitz all ingredients in a food processor until smooth. • Dampen your hands with water to prevent the mixture from sticking to you, and roll a large spoon full of bliss ball mixture into a ball. Repeat. • Lay the balls out on a platter lined with baking paper. • Refrigerate for at least 2 hours or until solid.

After weathering two fires and a global pandemic, the venue will reopen this summer for a unique dining experience named Gastronomo. We’re keen as mustard to get Andy’s wine tips! Even though it’s like asking who his favourite kid is, he’s shared a few faves. “The red trend is towards lighter varieties at the moment, including Grenache, Tempranillo and Pinot Noir. White drinkers are going for Pinot Gris, which isn’t as acidic as Sauvignon Blanc — Tim Adams in Clare Valley is one of our most popular. “In terms of region, locals are supporting the Hills after the fires and they’re being rewarded with seriously good drinking. Anderson Hill, Mt Lofty Vineyard, Ashton Hills, Pike & Joyce and The Other Wine Co. are all top choices. Plus, you can’t go wrong with any of the range from Murdoch Hills! “From McLaren Vale, my pick is a Tempranillo from Down The Rabbit Hole — it’s good easy drinking, not overly oaked or tannic — perfect with Friday night pizza. lena Brooks started Dandelion Vineyards in 2007 and is still pinching herself over its success, having just taken out the title of New World Producer of the Year at the Sommelier Wine Awards (UK) 2020. “I don’t think I would have ever achieved what I have, if I stayed in Bulgaria. Apart from the fact I’m an immigrant and a woman, I was only 23 when I started my own wine label. But South Australians embraced me — so to me, Adelaide is where dreams come true,” smiles Elena.

Plans have been approved to open Dandelion’s first Cellar Door in McLaren Vale in 2021. Although her wines speak of the region, the cellar door menu will be a tip of the hat to her roots in Bulgaria, serving Bulgarian-inspired food. “In Bulgarian culture, you don’t just sit at the table and drink wine. It’s food first, then wine. And with the right pairing, it’s a match made in heaven!”

Located in the heart of the Fleurieu, Dandelion is set on what Elena calls the Springfield of McLaren Vale. “Everyone thinks McLaren Vale is flat, but it’s not. We’re situated on the most magical hill, neighboured by gorgeous wineries like Coriole and Chapel Hill.” Like Elena and her all-girl team, Dandelion’s wines are feminine, elegant and perfumed. And carrying on the love story, her wines marry well with food. “My style is about accentuating the savoury characters in the fruit and creating wines that bring out the best in food.” So, let’s play match-maker! Wonderland of the Eden Valley Riesling – This beautiful wine comes from 108-year-old vines in Eden Valley. Its complex acids and sugars go perfectly with fresh shellfish or a fish terrine. Drink this wine in solitude and without any attitude. Fairytale of the Barossa Grenache Rosé – The freshness and acidity of this wine makes it the perfect match for spicy dishes like lutiniza, a traditional Bulgarian recipe made up of grilled peppers, eggplant and zucchini, served on warm bread. Lion’s Tooth of McLaren Vale Shiraz Riesling – With only 5 percent Riesling in this McLaren Vale Shiraz blend, this is one of my favourite wines bringing together the plushness of McLaren Vale Shiraz with the racy Riesling acidity from Eden Valley. armine’s founder Ray Borda has been producing SA’s highest quality kangaroo meat for restaurants and home cooks for three decades — so, making beautiful leather products was the natural progression for this SA family business. “We wanted to use not just the meat, but the whole animal, so nothing goes to waste,” says Ray’s daughter Rachael. The name Karmine is a tip of the hat to Ray’s mum who was a seamstress and keen cook back in the day. Karmine Leather began with aprons which were quickly embraced by butchers, bars and restaurants across Adelaide because of their strong yet lightweight material. It then developed into accessories and bags (we’re obsessed), footwear (also obsessed), and it continues to evolve depending on what customers want. “Our products are personalised so if there's a need for a particular style, then we make it,” says Rachael. And it’s not mass produced as you might imagine either. “We make two totes a day; everything is designed and made right here in our workshop in Athol Park,” smiles Alison, Karmine’s head leather maker. Naturally, Kangaroo hides are all unique, so no bag or boot is the same as another. “We have 16 different colours on offer that people can mix and match if they wish. Of course, we have all the earthy tones like brown, green, black and sand but we also

cater for colour-loving girls like Adelady and offer bright yellow and hot pink. We also personalise our products which makes them a wonderful gift idea for someone special,” says Alison. Kangaroo skin is known for being very strong but also extremely soft and thin. It’s great for clothing because it’s lightweight and because of that, the bag straps are super comfortable on your shoulders. At Karmine, everything is ethically sourced, locally handcrafted and also water, stain and heat resistant. Kangaroo leather is also very easy to clean — which is music to any parent’s ears. Yes, those grubby little finger marks do just wipe off!
