THE KOENIGSEGG JESKO SUPERCAR The Koenigsegg Jesko is a limited production supercar produced by Swedish automobile manufacturer Koenigsegg; its founder, Christian von Koenigsegg, wanted to produce a “world-class” sports car like no other. In 2019, the launch of the Koenigsegg Jesko Geneva Motor Show turned out to be an outstanding success with 83 cars sold a week prior to the show. With a combined 1600 horsepower and a top speed of greater than 278 mph, this incredible performance hypercar feels as wild as it looks. Jesko production will begin at the end of 2020 at the rate of one per week.

arry Caplin and his organization, CF Charities of Philadelphia, Pennsylvania, reveals his 2020 SSC Tuatara, a decade of design, engineering, and development coming to fruition. The public has its first chance to witness the product at SSC North America headquarters in Richland, Washington, the first of one hundred exclusive units to be produced, on February 7th, 2020 at the Philadelphia Auto Show. The hypercar, a project which internally at Tuatara received the code-named “Exceed,” began in 2009 with Jerod Shelby, SSC North America Founder, and CEO, assembling a collaboration of industry-leading individuals and firms to further succeed the company’s record-breaking SSC Ultimate Aero. This car held the Guinness World Record for Fastest Production Car in the World from 2007 to 2010 to which Shelby noted that this, “team had to reflect the achievements that we set out to accomplish [and] has not only achieved that original vision, but has surpassed it by an incredible margin,” said Shelby.

aunched in 2010 McLaren Automotive is now the largest part of the McLaren Group with a portfolio of GT, Supercar, Motorsport and Ultimate models. Just announced, The McLaren 720S GT3 will join the grid with Jenson Team Rocket RJN, the team established by 2009 Formula 1 world champion Jenson Button. As a pioneer that continuously pushes the boundaries, McLaren announced itself to the market in 1981 when it introduced lightweight and strong carbon fiber chassis into Formula 1 with the McLaren MP4/1. They were the first to deliver a hybrid hypercar, the McLaren P1™and in 2018 announced the Track25 business plan to invest £1.2billion in research and development to deliver 18 new cars or derivatives by the end of 2025. The British team which saw Jenson Team Rocket RJN debut in the GT World Challenge Europe in 2019 – and taking a season-best 4th-place finish in the Silver Cup at the Total 24 Hours of Spa – sees the latest team to join McLaren Customer Racing, switching to the 720S GT3. McLaren enters its second competitive season in 2020, contesting the GT World Challenge Europe for the first time with its latest GT3 racecar.

Iconic Dutch shipyard Heesen debuted newly launched 50m Home, the world’s first fast displacement superyacht equipped with hybrid propulsion, at Monaco Yacht Show between 27-30 September 2017. Leading the field in innovation, her ground-breaking technology enables her to offer the ultimate luxury: a silent cruising mode. Heesen worked closely with sensory expert Professor Barry Smith, Founder of the Centre for the Study of the Senses and Director of the Institute of Philosophy, who found that many of the activities during an outing at sea involve enjoying good food and wine. In a recent study examining the effect a silent cruising mode would have on guests’ on-board, Smith concluded: “Our research has shown that the brain’s processing of taste is affected by noise, which reduces the tongue’s ability to detect salt, sweet and sour. The beauty of Home is the ability to run at a sound of around 46 decibels — the sound level of softly falling rain - enabling those on board to enjoy food and drink to the full, with no diminution of taste”. Heesen continually strives to complement technology and design and believe that in a world full of noise, ‘silence is the ultimate luxury’. The first of a new breed, Home is quieter, cleaner and more fuel-efficient. The Fast Displacement Hull Form offers fuel efficiency due to the use of lightweight aluminum and the silent cruising mode can reach up to 9 knots. Propelled by a hybrid of both diesel mechanical and diesel electrical, her power sources can be used simultaneously or independently, reducing noise, vibration and again increasing efficiency. He studied architecture at Newcastle University before starting his yacht design career in London in 2000. Having sailed since the age of 5 and coming from an architectural family background, Ben has combined these two passions in yacht design. Having already notched up eight prestigious Neptunes at the World superyacht awards, their interior and exterior design in Yachting, Residential and Aviation are setting the benchmark for others to follow. Based in London with a team of eleven, their philosophy is to remain small, and only take on the most prestigious projects, delivering to their clients a totally bespoke and turn-key service. Hand-sketching remains at the core of their business with clients welcomed to sit with the team and dream. After the extraordinary success gained from the SX88 at the 2017 edition of the Cannes, Genoa, Düsseldorf and Miami Boat Shows, as evidenced by the sale of 13 units to date, of which three have already been launched, Sanlorenzo, officially presented the SX76 crossover yacht, designed by Lissoni & Partners, Piero Lissoni’s international architecture and design practice. A range of products that is characterized by unprecedented intelligent, rational and practical solutions and, as always, is marked by Sanlorenzo’s unmistakable style, based on moderation, a balancing of volumes and masses that maintain, in this latest addition, the characteristic elegance that has become an immediately recognizable signature style of the brand. The concept behind the project starts once again from the company’s desire to propose a completely innovative approach to onboard space, an approach by which the Zuccon studio, for the exterior lines, and Piero Lissoni, as it pertains to the interior design, have interpreted the first version of the SX76. Piero Lissoni is also the Art Director of the company. The SX76 project proposes, on a smaller scale, the idea presented for the first time in the SX88, of an open-space yacht, a ‘social’ boat, that this develops into a unique and continuous environment from stern to bow where the interior living space is maximized with the open kitchen, adjacent to the dining room, next to the living area, with seamless continuity between the interior and exterior, thanks to the large windows overlooking the sea. The décor of the first unit is a perfect example of Lissoni’s clean and elegant style that combines elegance and simplicity, in a space characterized by soft and neutral colors flooded, on each side, by natural light that creates a warm atmosphere with a homley feel. “The interior is designed with a versatile and customizable layout. I like to call these boats ‘elastic yachts’ where you can create your own model, decide where to place the owner’s cabin, or choose from a wide catalog of materials and features”, says Lissoni. F
lorence, the capital of the Tuscany region, embodies the spirit of ancient Italy in richness of art, culture and years of celebrating and creating beauty. The Uffizi gallery, the world’s best collection of Italian Renaissance art, and the Galleria dell ‘Accademia, home to the statue of David, are in the same heavily concentrated area of authentic restaurants, boutiques, hotels and cafes. Florentine people are at one with modernity and history, and there is a place that exemplifies this beautifully, the Antico Setificio Fiorentino. A tree canopies a large iron gate as you walk into the Antico Setifico, a textile mill that was built in 1786 by noble Florentine families with the original looms are still in use. In the Fourteenth century, the art of silk weaving reached its peak during the heir of the Medici and continued to thrive as a symbol of status and as a means of currency. The Antico Setificio houses a loom designed by Leonardo da Vinci himself.
Entering the silk mill, you first notice the rhythmic sound of the artisans working the looms. I met with a woman who had been working for a decade at the Antico Setificio, creating beautifully spun silk fabrics for interiors and clothing. It’s a physical process creating these intricate designs, and one that is requires a steady hand and eye to determine if each thread is properly in place. Draped across the looms there are subtle patterns in shades of neutrals, and also with rich jewel tones in shades of sapphire, ruby and emerald – all in various states of production. There’s a calm atmosphere that permeates throughout the mill, perhaps because of the garden-like setting or the sense of history here. In 2010 Stefano Rici company purchased the mill and assured its future. After acquisition, Stefano Ricci Home launched, and the production of textiles brought the work of this centuries old mill to life in the homes and yachts of the elite around the world. Stefano Ricci, the Italian menswear designer renowned for his custom suits made of ultra-fine wool, got his start in designing ties at a very young age. In 1972 Stefano and his wife Claudia launched Stefano Ricci Company and expanded the company to suits, sportswear and following ancient Florentine goldsmith tradition, began creating fine cufflinks. Knitwear, done with a fresh hand, in dreamy lightweight yarns are the brands answer to modern casual wear. Now with stores the world over, the brands heart and heritage remain in Florence. Stefano Ricci acquisition of Antico Setificio Fiorentino is in line with honoring the past while looking towards the future.

ART OF PERFECTION The Perfect Canvas between Rolls-Royce and artist, Refik Anadol

Turkish-born and Los Angeles-based media artist, Refik Anadol, has created a unique work of digital art for Muse, The Rolls-Royce Art Program, using data sets relating to the color of every Rolls-Royce motor car created at the home of RollsRoyce in Goodwood, England.
T
he artwork, titled “Art of Perfection” conveys a unique data painting derived from data captured at Rolls-Royce Motor Car’s Surface Finish Center. The custom visuals created for this project have been precisely designed to complement the “canvas” and surrounding space. Artist Refik Anadol noted, “As an artist who utilizes data as pigment, I am very excited that Rolls-Royce is sharing their complex computational painting data with me, to use as the raw material for this artwork. This project will be very collaborative as there is a direct correlation between Rolls-Royce process and mine, in that we harness machines and machine intelligence to help actualize our vision of beauty.” Art of Perfection: Data Painting will be presented on permanent display at Rolls-Royce’s global headquarters, with an edition of the piece traveling to international showrooms this year.

BEST OF THE RED CARPET The Watches that Defined the 2020 Awards Season

The unofficial time frame of a new year’s awards season is bookended by the Golden Globes – which this year took place on January 5th – and the Academy Awards, which was held in Los Angeles on February 9th. In between and including those two gargantuan events, there are a plethora of red carpet moments with which to swoon over, and there is certainly no shortage of delicious jewelry and wow-inducing watches.
T
he 2020 awards season saw everything from an Oscar-winning actress (Renee Zellweger) styled in David Webb jewels to a band of (Jonas) brothers draped in strands of white pearls during a musical performance at the Grammys. It provided the world with sights such as a two-million-dollar Le Vian diamond
necklace on Camila Cabello as well as a Bulgari Serpenti diamond and malachite necklace on her boyfriend, Shawn Mendes. But the red carpets of the season also showed off a lot of important, iconic, and in some cases, even rare mechanical timepieces, which is a good sign that, no matter many Apple watches are currently
sold, traditional watches are still in demand and won’t be going anywhere anytime soon. Here are a just handful of the eye-catching watches that showed up on red carpets as well as on our television screens during the 2020 awards show season.

NIKOLAJ COSTER-WALDAU’S IWC SCHAFFHAUSEN PORTUGIESER CHRONOGRAPH The name is likely not as recognizable as the face, but Game of Thrones fans will know this actor as none other than their beloved Jaime Lannister. The 49-year-old Coster-Waldau (seen on the right in the accompanying image) recently attended the Screen Actors Guild Awards along with many other members of his GoT cast. The Danish actor chose to accompany his mixed-look tuxedo with a classic Portugieser Chronograph by Swiss watch brand, IWC Schaffhausen.
JOSH GAD’S CHOPARD ALPINE EAGLE What would the Oscars be without style, grace, and a little bit of fun? Actor and comedian Josh Gad – better known to the younger set as the voice of Olaf in the movie, “Frozen” – introduced his co-star Idina Menzel (“pronounced exactly as it is spelled”) using all three of the aforementioned attributes. Looking smart in a black tuxedo and his iconic thick-framed glasses while on stage at the Dolby theatre, Gad had enough of his shirt cuff pulled back that one could see the glimmer of his watch; the newly released Alpine Eagle by Chopard. Chopard jewels have been a staple on Hollywood’s red carpets for years but their watches seem also to be getting more air play as of late.
NICK JONAS’ BULGARI OCTO L’ORIGINALE The Jonas Brothers are back in a big way for 2020 and on the Golden Globes’ red carpet, Nick Jonas made sure he shined just a little brighter than his siblings. Or at least, that his wrist did. The once-teen idol and now husband to Priyanka Chopra sported an 18K white gold Octo L’Originale watch by Bulgari which is set with over 50 carats of near flawless white diamonds (1172 of them to be exact). The watch dial’s bright blue metallic markers were a perfect complement to the color of Jonas’ tuxedo shirt and in keeping with the Italian theme, Jonas added a bolo tie by Prada to complete the look.
That closes out some of the best watches of the 2020 red carpet season as spotted at the Oscars, the Golden Globes, the pre-Grammys, and the SAG Awards. What’s unfortunate, however, is that these timepieces were only seen on the wrists of men. Note to stylists for the 2021 season: men could do with wearing a little more jewelry and women look lovely in watches, too. 36 | UPSCALE LIVING MAGAZINE | MARCH 2020

JAY-Z’S JAEGER-LECOULTRE GRANDE REVERSO ULTRA-THIN TRIBUTE TO 1931 While technically, Jay-Z and Beyoncé didn’t show up in the audience of the 2020 Grammy Awards, they did hit the red carpet of the Clive Davis pre-Grammy event (because, let’s face it, they can go wherever they want to go and do whatever they want to do). It is widely known that Jay-Z is a major watch enthusiast and has been spotted wearing everything from a Richard Mille 56 custom made in a blue sapphire case to a Patek Philippe Grandmaster Chime 6300G, but that doesn’t mean every one of his watches costs millions of dollars. Jay-Z wore the classically designed Jaeger-LeCoultre Grande Reverso UltraThin Tribute to 1931 in rose gold to the pre-Grammy event which paired perfectly with his off-white ensemble.
OSCAR ISAAC’S OMEGA SPEEDMASTER APOLLO 11 50TH ANNIVERSARY EDITION Actor and presenter Oscar Isaac may play a Rebel fighter pilot on the big screen, but on the 2020 Academy Awards’ red carpet, he paid homage to his time in an alternate universe’s space by way of his watch. Isaac wore a classic black Tom Ford tuxedo which he topped off with a limited-edition Omega Speedmaster watch. The timepiece – the Apollo 11 50th Anniversary LE – was released in 2019 to commemorate the 50th anniversary of the moon landing.
COLIN JOST’S TAG HEUER MONACO CALIBRE 11 Weekend Update’s co-anchor is not your everyday comedian. Jost, who has been with Saturday Night Live for fifteen years now, is a Harvard Graduate who once won on the syndicated version of the game show, The Weakest Link. Today, however, he may be just as well known for being Scarlett Johansson’s fiancé, which is why his face has been appearing more and more on Hollywood’s red carpets. To the 2020 edition of the Screen Actors Guild Awards, Jost wore the TAG Heuer Monaco Calibre 11 with his tuxedo, which, might be a bit odd to some because – while a fine looking piece – the watch is considered to be more of a racing watch, having been named by Jack Heuer following the Monaco Grand Prix (for which TAG Heuer is still a partner). However, Jost and his stylist must have really fallen in love with the look because he wore the watch again a couple of weeks later on the Academy Awards’ red carpet.

She is the owner of Greece’s oldest fashion house, established in Athens in 1906. Hand beaded detail and flowing, feminine lines are signature elements of her designs which are beautifully wearable. We were travelling twice a year to Paris to watch all defiles, from Chanel to Cristian Dior and Yves Saint Laurent. It is such a precious heritage. Colours are “words”, they are emotions that connect people, they act as a means of communication and they emphasize the universal truth: history is a circle that encompasses us all and in it we all move in unison upon this planet. COUTURE IS AN ART FOR THAT IS SUCH A POWERFUL EMBODIMENT OF THE DESIGNER’S VISION BROUGHT TO LIFE BY THE SKILLED HANDS OF SEAMSTRESSES WHO EMBROIDER, EMBELLISH AND FESTOON THE FABRICS IN LACE AND JEWELS. WHEN YOU ARE COMING UP WITH A VISION FOR A COLLECTION IS IT COLLABORATIVE WITH YOUR TEAM? I’D LOVE TO KNOW MORE ABOUT YOUR PROCESS. It is only about collaboration with my team. Having an idea is a good start but there is a lot of work required to execute it: picking the right fabric, embellishing, embroidering. Usually, I have a main theme in my mind, a mood-board or maybe some clothes and then I start developing the idea: colours, fabrics, designs. Couture is an art that needs many working hands. I love that your Paris Couture AW 19-20 opened with a ballerina who set the tone for the mix of femininity and strength that came next. The delicate tulle skirts paired with the strong lines of the tops and then the flattering silhouettes of the gowns with the gorgeous fringe, crystal or pearl accents were all so interesting and intricate. All of the looks represent such an artistic vision and importantly, they simply look so fun to wear. There’s a similar radiance

ZERO Emission Plane | BY JARONE ASHKENAZI
New York-based designer, entrepreneur, inventor and creative director, Joe Doucet envisioned ZER0 during one of his countless work trips thousands of feet in the air. Knowing about the growing impact flying is having on our environment – although it doesn’t come close to the meat and car industries – flights account for 2.5% greenhouse gas emissions globally, and Doucet decided to do something about it.
T
he sought-after designer who holds numerous patents for his designs and inventions, thought of this new concept ZER0. Yes, that is a zero at the end of the new concept plane which is designed to have no emissions and instead of speed, designed for efficiency. Doucet makes clear that he is a designer, not an engineer or electric power specialist, but that ZER0 will pose a question in frequent fliers minds about their impact on the environment. Instead of relying on jet fuel for power, ZER0 uses electric motors to drive propellers and runs off electricity using batteries and/or electric generators on board. With the potential to be charged with solar or wind turbine energy, ZER0 will be roughly 20% slower than typical jets. Hampi is a beautiful village in Karnataka one that has historical significance. Inhabited since pre historic times, this is a place full of ruins, stone artefacts, pottery shards and rock paintings making it a dream come true for history buffs. An ancient rural community in the south Indian state of Karnataka, Hampi has various ruined temple complexes from the Vijayanagara Empire. A UNESCO World Heritage Site in India located near Hospet town in the Karnataka state in India, Hampi boasts of numerous tourist attractions such as temples and ruins, there are remains of aquatic structures, ancient market streets, royal pavilions, bastions, royal platforms, treasury buildings, enough to keep a tourist or pilgrim busy for four five days. Most travelers are spellbound by the magnificent ruins, giant boulders, banana plantations and paddy fields. This World Heritage Site is definitely one of the most popular tourist destinations in India. THE RESORT Fortunately there are direct flights now from Bangalore to Hampi now so one need not travel for six hours by road. I travelled from Pune to Bangalore and then from Bangalore to Hampi by air. As one reaches the luxurious resort, it’s impossible to not stare in awe owing to it’s grandeur and magnificence. To my pleasant surprise I was upgraded to the Jal Mahal suite which is a Private Pool Villa. These 2600 Sq.ft. private pool villas located adjacent to the main palace are individual villas that feature a separate living and dining area, a spacious sleeping area, a bath with a bathtub and a shower cubicle, an open-to-air shower, a private pool with a jacuzzi, a romantic gazebo and courtyards. This restaurant is named after the most notable and cosmopolitan dynasty of the Vijayanagara Empire of Southern India. Tuluva was the third Hindu dynasty that ruled the famed empire during the late 15th and 16th Century, attaining its highest glory during the leadership of emperor Krishnadevaraya. The restaurant has such a beautifully unique setting that I often spent time enjoying a cup of tea during the evenings here. The Bahamani is a restaurant in a regal setting which interestingly gets its name from the Bahamani Sultanate, the Northern neighbor and principal rival of the Vijayanagara Empire. Hyderabadi cuisine originated from this Sultanate which is an amalgamation of Persian and indigenous influences. The art of luxurious dining is what Bahamani showcases owing to its rich décor elements and presentation of food as I experienced during a meal here. Must see must do: The hotel organized for me to go for The Raya Trail during my stay. This trail takes you back over hundred years and gives you an insight into the life and times of the Rayas (Maharajas) of Vijayanagara. It is interesting to learn about their lifestyle, culture and the unique social and political dynamics of the period along with the magnificent structures of the royal city. The Raya trail consists of a visit to the Devaraya’s Palace, Royal Mint, Audience Hall, Secret Chamber, Stepped Tank, Mahanavami Dibba (Great Platform), Hazara Rama Temple, Queens’ Bath and palaces, Elephant Stables and Kamala Mantapa (Lotus Mahal) and it lasts for 3.5 hours. Apart from the Raya trail there are other interesting trails, treks and walks for those who enjoy going for sightseeing. Located in the southernmost tip of Puglia known as Salento, Cas-tello di Ugento has watched over the town of Ugento for more than a thousand years. This 17th-century castle has now been lovingly restored by Massi-mo d’Amore, 22nd descendant of the d’Amore family and his partner Diana E. Bianchi, converting the monument into a nine-bedroom boutique hotel. Offering so much more than just a hotel, the Castello and its sister property Masseria Le Mandorle has been the culinary hub of the region. Food is truly embedded within the DNA of the property, and it is now home to destination restaurant, Il Tempo Nuovo and world-renowned cookery school, the Puglia Culinary Centre. It is so prestigious, it is the official Italian partner of the renowned Culinary Institute of America (CIA), hosting students from September to March for a Concentration in Italian Cuisine.

Pictures of the Queen and photographs and prints from the days of the Indian Raj point to the hotel’s proud British and Indian sense of shared history. ROOMS The hotel has 329 rooms and suites with three main varieties of room: classic, executive and premier. Our very large Premier room was stylishly decorated with rich fabrics, houndstooth carpets and a large King sized bed with Indian linen sheets. On a very cold evening the room was lovely and warm. The huge marble bathroom comes with a bathtub, walk-in rain shower. Toiletries are courtesy of Indian Forest Essentials Luxurious Ayurveda range. Soft cotton bathrobes and slippers only add to the feeling of luxury comfort. DINING AT THE BISTRO The hotel has several restaurants. The Bistro has an eclectic seasonal menu that includes traditional British dishes and classic Indian cuisine. You can choose from dishes such as starters of Dorset crab cakes or seekh kebabs and mains of Angus fillet steak or lamb rogan josh. There are many vegetarian options such as Italian risottos and gnocchi. We opted for the ‘Global Bento Lunch’, which is proving something of a popular hit. This express bento menu is served daily from 12.30pm to 4pm. We had a choice of six international three-course meal selections. These include an ‘English Classic’, based around a main of battered cod with sides of a scotch egg with curried mayonnaise and a desert of sticky date and walnut pudding with a Calvados sauce; and an ‘Eastern’ bento box consisting of a starter of Korean kimchi and cucumber salad and a main of chilli fish with pak choi with sesame steamed rice. We started with an appetiser of freshly made houmous and freshly baked bread and chose the Indian ‘Bharat’ Bento box. This delicious lunch came with a starter of samosas with tamarind chutney and cucumber raita and a main of mouthwatering chicken tikka masala with naan bread, spicy potatoes and a desert of chocolate rasmalai (A cheese curd and cream dish flavoured with cardamom). Breakfast at the Taj St. James Court Hotel is a large international buffet with a British / Indian slant. Hot plates of full English breakfasts sit beside Indian staples such as paneer. Eggs are made to order so you can spice up your omelette with ginger and chilli. Unlike many hotels breakfast is a relaxed affair that rolls on past 11am. THE JIVA SPA The Taj Hotel’s Jiva Spa opened in 2019 and is the first of its kind in Europe. The spa concept was born out of a collaboration between Taj’s award winning Jiva and the British lifestyle brand Temple Spa. Located across the delightful courtyard garden of the hotel with its dramatic fountain, you enter the spa through a lift that brings you down into a warm, softly lit area. The main spa area centres around a strikingly designed large vitality pool. The steam room, large sauna and showers are located beside it. There are two treatment rooms and even a couple’s suite with its own bathtub. The spa is open to guests and non-guests alike. The Jiva Spa offers enlivening holistic treatments and eastern rituals that are rooted in India’s rich heritage of wellness. One of Jiva’s signature experiences is a two hour treatment called ‘Sushupti’ or ‘Dreamless Sleep’. The treatment begins with a relaxing footbath using a natural blend of 22 herbs, honey and fresh cream. This is followed by a soothing scalp massage. The treatment continues with an indulgent warm bath of milk enhanced with rose essence and rose petals. To top it off you have a full body scrub and a relaxation massage, in which hot packs are placed on your body, and it ends with an invigorating face massage. The Jiva Spa also has a couples-only therapy that includes Indian aromatherapy massages followed by a rose petal bath. Next to the spa is a newly renovated fitness centres that includes weights and cardio machines and a hairdresser led by celebrity hairstylist Dar. Highly recommended!

A four-hour drive takes you along the scenic Garden Route, or the beautifully landscaped inland direction where the ultimate destination is the 26,000 acre Gondwana Game Reserve in Mossel Bay. With the emphasis on family fun and conservation, this incredible 5-star lodge is a shining example of what it takes to incorporate different animal species and to ensure the longevity of a multitude of fynbos genus. Opting for the picturesque inland route through Worcester, Bonnievale, Swellendam and Albertinia, we stop for a well-deserved leg-stretch and break at the wonderfully hospitable Spanspek Se Plek Farm Stall on the R60 between Ashton and Swellendam en-route to Gondwana Game Reserve. Reaching our destination at lunchtime, we feast on the most delicious food at Kwena Lodge: The kids love the juicy Gondwana burgers, made up of hand-ground beef patties on homemade buns & fries. My husband and I order the chargrilled 200g sirloin with rustic fries and to conclude our meal, we all delight in the decadent chocolate brownie with vanilla ice cream. We try not to overeat as High Tea is another indulgence, saving space for the delectable treats served with coffee or tea. The accommodation choices at Gondwana Game Reserve are plentiful. Guests can opt to stay either at the Khoi San inspired Kwena Lodge, which offers a luxurious and modern twist on the traditional African ‘hut’; private bush villas which are ideal for families, groups, or guests who want more space and exclusivity or at the ultra-luxe Ulubisi House, a fully-staffed exclusive use safari villa. In addition to this, Gondwana’s Tented Eco Camp and the brand-new Pioneer Trail offer tangible, authentic wildlife experiences. We are staying in spacious a 4-bedroom Bush Villa with plunge pool situated in the Red Rocks part of the reserve, where four mountain bike trails, graded from novice to advanced, are demarcated in the 2,500 acre protected area, and fenced from dangerous game. Gondwana has recently introduced mountain biking as an additional nature activity. Guests will get a healthy dose of outdoor exercise while enjoying game viewing from a different and fun perspective. It’s overcast and drizzling, and we’re contemplating whether or not to go on our first game drive with field guide Coolman. The answer is a resounding yes! – it’s very entertaining braving the elements and getting caught in the rain, which doesn’t dampen our spirits as we encounter some unique animal sightings – two hippos out of the water feeding on grass and elephants with rain-stained backs. The kids are giddy with excitement seeing these gorgeous animals, snapping away with their cameras. At Gondwana, children from seven years old may join regular morning and evening game drives, with children over the age of 12 able to partake in guided walks. Families with younger children can book a dedicated safari vehicle, giving them the freedom to accommodate their schedule and those of their small children. Returning to our spacious Bush Villa sized at 2,600 sq. ft., we take in the amazing views of the undulating Langeberg mountains from our expansive outdoor deck. Scattered in scenic spots throughout the reserve, the well-equipped villas are surrounded by lush fynbos and offer plenty of space and privacy, with thatched roofs and large outdoor decks for family barbeques and game viewing. The generous open plan living area comprises of an elegant, yet comfort-able space for the whole family to while away the day and to watch passing wildlife. For dinner, we enjoy the perfectly prepared beef fillet, with brown lentils couscous mixed, pan fried onions, green beans and finished with roasted marrow jus, concluding our meal with mouthwatering malva pudding. Tasty meals are served in the charming Kwena restaurant, with striking sunset views at dinnertime, or on warm summer nights, dine by candlelight under starry skies in the boma. Back at our villa, we call it a night as our morning game drive is scheduled for 6am. We spot a wide variety of animals – zebra, buffalo, impala, baboons and waterbuck. After our game drive and a hearty breakfast, the kids are excited to try out Gondwana’s special Junior ranger program, a fun way to show kids of all ages the African bush and to help them gain a greater understanding of conservation. The hands-on program offers educational game drives, fun scavenger hunts, junior rangers packs and completion badges. Kids are taught how to identify mammals, birds, fynbos species and even stars. Following that, we embark on a very informative guided fynbos walk and hands-on botanical conservation experience, hosted by resident botanist, Kevin. With its rare and endangered Fynbos biome, we are able to get up close to see
the wonderful indigenous plant species that exist at Gondwana Game Reserve. Favorites are the colorful Erica and the lovely Pincushion, part of the protea family. “The growing popularity of our Eco Camp Conservation program has confirmed that guests love getting a behind-the-scenes view of the conservation efforts on the Reserve,” Wendy explains. “We have been inspired since day one by the Fynbos found on the Reserve; its beauty, diversity and rarity is astounding, but we needed the right individuals with the expertise and passion to help us get more of a handle on it scientifically to not only better protect it, but also better share it with our guests. By making our Fynbos conservation part of our tourism offering, it enriches our guests’ safari and makes its conservation more sustainable – a win-win." After a tasty lunch and High Tea, our late afternoon game drive yields the extraordinary sighting of the Gondwana lioness and her three cubs. The cubs have become very playful and bound over to their dad, the most magnificent male lion. At 15 years of age, he has sired many litters of cubs and seems very tolerant of these youngsters climbing all over him, ending our game drive on an absolute highlight. Dinner is a gastronomic delight, with gemsbok steak served with potato fondant, pan fried baby marrow and glazed carrots. It’s time to head home, but not before our morning game drive, where we spot the

dazzling Cape mountain zebra, and the cutest plains zebra calf standing alongside its mother. We have enough time to eat breakfast, consisting of a buffet selection and warm breakfast to order. Saying our goodbyes, it’s evident that the Rutherfoords have really gone to great lengths to build and sustain a piece of property so pristine, Gondwana Game Reserve is definitely worth a visit. * Views expressed are the author’s own. Coriander Kitchen, the all-day restaurant offers an interactive culinary journey with multiple live counters serving a range of Indian, Asian and Mediterranean street food inspired cuisine. With a dramatic 40 feet fully-glazed wall overlooking an outdoor waterscape, this restaurant offers an inspiring venue for a breakfast meeting; and a leisurely lunch or dinner with friends, family or business partners or a quick bite with colleagues. For an indulgent evening, Zeera, the specialty Indian grill fine-dining restaurant, with a display kitchen and sweeping wine wall is a good option. Zeera offers regional thaalis which are elaborate platters of Indian cuisine. Koji, the Asian speciality restaurant, serves the best of Japanese, Chinese and Thai cuisine; I tried several preparations dished up by the talented Chef Birender while I was a guest in the hotel. Pune Sugar Box, the delicatessen that offers freshly baked pastries and savouries, as well as hand-made chocolates also features a section with a great collection of books for those who enjoy reading at leisure while sipping on a refreshing cup of tea. I was delighted to notice Christmas goodies such as mince pies, plum cakes and Dundee cakes on display along with cute Santa Clauses in the hotel’s lobby. The festive spirit definitely managed to bring out the child in me! The hotel features a dedicated rejuvenation floor with the city’s first outdoor temperaturecontrolled pool, a dedicated kids’ pool, whirlpool, a 24-hour fitness centre, a fullservice Conrad Spa where I enjoyed a relaxing massage as well as an Ayurvedic treatment by an efficient therapist. The two days I spent recently at Conrad Pune during Christmas were truly memorable thanks to a friendly team in the hotel, beautiful Christmas decorations, delicious food and efficient service! Of all the times I have found myself surrounded by Italy’s beautiful landscape, the island of Sardinia is arguably one of the most fulfilling. Being the second largest island in the Mediterranean, almost 300 kilometers from North to South, it would take months to fully explore everything it has to offer. A perfect mix of luxury, authenticity, unforgettable food, and a unique archaeological heritage, there is almost 200 km of coast line with over 100 white sandy beaches featuring crystal clear waters that attract summer visitors seeking the richness and quality of life known within Sardinia. Just a quick 30 minute ride from the Olbia airport, is Cannigione where I visited Villa de Golfo. Upon arrival you are greeted by the lovely ceramic artwork hung on the walls. Placed perfectly around the hotel, they highlight the light fixtures, another artistic creation by talented local artist Caterina Cossy. A life-long artist splitting her time between Sardinia and Australia, she was provided free artistic range to create ocean inspired pieces bore from local clay in her nearby studio. Anyone wishing to purchase her art can easily find her work at a boutique in the hotel or online. Each morning breakfast is served at Mira Luna overlooking the Cannigione Bay with local fare ranging from fruits and cheeses to pastries and honey, all displayed in an artistic fashion to match the grandeur and beauty of the island itself. Aside from a carefully curated spread, traditional Italian coffees are available to enjoy as warm breakfast is prepared by chefs on request. The ham and cheese omelet that I enjoyed each morning, by request, used local cheeses creating a rich and creamy texture that is unlike anything I’ve experienced in recent memory. One of the more notable gastronomic experiences is a cooking class at La Colti Farmhouse. Villa del Golfo’s owned traditional farmhouse, while offsite is perched atop a hillside where you can choose to dine on local fare or learn to make traditional Sardinian dishes. Ravioli Galluersi pasta, Chuisoni Galluersi pasta and Seadas desserts, just to name a few. Using local ingredients, these regional dishes that have been handed down for generations and continue to serve as a reminder of the culinary traditions of Sardinia. After an afternoon of local shopping and swimming on the white sandy beach, we walked a few steps and enjoyed lunch while overlooking Cannigione Bay at the resort’s The Cutter Lounge. Serving pizza and salads, everything is created with organic and locally sourced ingredients, using homegrown and bottled olive oil to provide a nice touch and bring the flavors alive while providing the option to dine indoors and or along the open air patio to enjoy the beautiful ocean breeze. Provided with numerous excursion opportunities we opted to depart on the BonAria, one of the resort’s owned private yachts, also available for private nighttime dining experiences. During the six hour excursion you are provided options to sail, snorkel and dine on traditional Italian treats of cheeses, cured

meats and fruit (oh…the pancetta wrapped honeydew!) while sipping prosecco and enjoying the sights of Spiaggia Rosa (the world famous pink beach) and singular rock formations of Cala Corsara. Many of the islands are impossible to reach by land and therefore seldom touched by tourists. The resort’s private yachts and local captains ensure their guests receive experiences off the beaten tourist path and experience the true beauty of the islands as they have been enjoyed by locals for hundreds of years. Upon return, we had the pleasure of returning to La Colti Farmhouse and enjoyed many of the same recipes we learned the day before. This time prepared by their professional chefs, we were treated to a traditional Italian farmhouse experience with open fire cooking and the smell of Chiusoni alla Campidanese, Sardinian dumplings in tomato and sausage ragu. With a traditional Italian four course meal served with regional wines, the presentation of the third course was a traditional meat of suckling pig with myrtle leaves served on a rustic cork tray. The fourth course of dessert was a deep fried sweet ravioli with mild cheese and hot honey, served alongside a Mirto liquor, creating a perfect ending to an amazing day in Sardinia. I had the opportunity to dine with the owners of Villa del Golfo, Luca and Bonaria Filigheddu. In true Italian family tradition we enjoyed a traditional Mediterranean dinner ranging from octopus and potato appetizers to Spaghetti lobster and seared turbot main courses, complete with cream beignet and cappuccino. The attention to detail and care with which the resort was laid out, and each meal expertly prepared, highlights the excellence and commitment to luxury the Filigheddu family has put into their family’s estate. Departing the grounds of Villa de Golfo, I was taken aback at the lushness and beauty of the inland areas of Sardinia. From wineries and orchards to archaeological wonders and lakes, there is so much more than sitting on a beach and sipping champagne. As we worked our way site-seeing along the island, We stopped at the Siddura winery to taste award winning wines that have become world renowned. Founded in 2008 and located in the village of Luogosanto, the soil is a mixture of clay, sand and the degrading granite from the surrounding cliffs. This unique mixture of soil composition and
climate provides an ideal environment to create a unique family of wines that have won 450+ awards and medals. With the entire process of vine to bottle, taking place on the 200 acres of ground and using diverse containers from concrete tanks to wooden barrels, it’s no surprise to learn their wines are exported all over the world and rival the top wines from Napa Valley to France. With wines to fit almost anyone’s palette, this alone could warrant an entire day learning about their unique fermentation and aging processes. Another natural wonder of Sardinia is the archaeological sites, including the Nuraghe Majori, featured in numerous documentaries including The History Channel and National Geographic, yet remain one of the lesser known tourist attractions on the island. There are expertly crafted temples that rival modern engineering tactics, yet have been dated over one thousand years old and continue to puzzle scientists today. Situated next to the church of Santa Maria Navarrese, with an age estimated of 4,000 - 5,000 years old, is a Millennial Olive tree with a trunk circumference of 8 meters that has been declared a National Monument. Given their longevity and grandeur, some locals still worship these trees and continue to hold ceremonies and festivals nearby. Sitting alongside the lake of Liscia we were able to see cork trees. Today, cork is considered one of Sardinia’s most characteristic natural resources and manufactured products. The stripping of cork trees can be traced back to pre-Roman

Italy and is a process that does not harm the tree itself. Seasoned in outdoor vats for up to two years, it is boiled and disinfected, then dried, cut and packaged. Used to produce everything from trays to stools, local artisans continue to find creative ways to utilize cork, one of Sardinia’s most versatile raw materials. If you happen upon Atelier non solo Sosa, a local cork shop in the town of Tempio Pausania, you are able to shop for anything cork. Ranging from purses and handbags to jewelry and clothing, even a wedding dress can be found crafted from local cork! Pulling into Gabbiano Azzuro, a family run estate for 50 years, it is easy to see that luxury and excellence are a cultural tradition with Sardinian families. Open from May to October, there are views across the Gulf to the island Tavolara overlooking the crystal-clear azure sea. Using the Nuragi and sacred wells as inspiration, each detail including stair design and light placement were completed with painstaking detail to ensure the continuity of flow and aesthetic appeal to the human eye, all while incorporating the energy and history of the island of Sardinia.

A ground-breaking environmental project pioneered by Glenmorangie has seen Native European oysters reintroduced to coastal waters around its Highland home after a century’s absence. The project’s vision is to restore long-lost oyster reefs to the Firth, to enhance biodiversity and also act in tandem with the anaerobic digestion plant to purify the by-products created through the distillation process – an environmental first for a Distillery. As opposed to using rodenticides to rid their fields of critters eating their grapes, Chandon have owl boxes to encourage owls to nest & work as a natural pest control strategy Chandon monitors the water content in the soil and vines, allowing parsimonious use of their water resources. Their vineyards are irrigated almost entirely by reclaimed or collected water.

CHEF ETTORE BOCCHIA Leading The Way in Molecular Cuisine

As Executive Chef of the two restaurants at the Grand Hotel Villa Serbelloni in Bellagio on Lake Como, Chef Ettore Bocchia has spent more than two decades perfecting the art of cuisine. In 2002, he launched the first Italian menu of molecular cuisine, which comprised of 7 unprecedented techniques in the kitchen, including ice cream cooled with liquid nitrogen and frying in sugars. In 2004, he was awarded his first Michelin star.

areful scientific research has allowed him to master the technique and achieve a realization: to sublimate the product, it is necessary to search for raw materials of the highest quality and through his forward thinking, he is on a continuous search for excellence. He was a consultant for the Costa Crociere group and has signed the menus of all their gourmet restaurants. Among the many events he has curated is the standing dinner for the launch of the Large Hadron Collider at CERN in Geneva in 2008. He has collaborated with the Research Centre of Ferrara (CFR), Studio Ambrosetti, Festival della Scienza di Genova, the National Institute of Matter Physics (INFR), Brera Academy (Trattoria Salvatore). Among his publications are “Il gelato estemporaneo” (The extemporary ice cream) written with Davide Cassi (Sperling & Kupfer) and “L’essenza dell’invisibile: Capire la cucina molecolare” (The essence of the Invisible: Understanding molecular cuisine) (Aliberti Publishing Company). “Food has been an integral part of human culture since the dawn of civilization, and with each era we find cuisine enthralled with certain trends,” says Chef Bocchia. “The popular movement we’re amid now is embracing the rediscovery of molec-
ular cuisine. Molecular cuisine is not as convoluted as some may imagine it to be – something as simple as when we boil water involves molecules which means cooking pasta can technically be considered molecular cuisine.” As a Chef, he is pushing the method to the next level by utilizing four integral pillars: Every innovation must expand Italian culinary tradition, not destroy it; techniques and dishes must enhance natural ingredients and quality raw materials; a new cuisine must pay attention to nutritional values and the wellbeing of those who eat, not just aesthetic factors; creating new textures designed at a microscopic level are imperative to new cuisine. “We’re using molecular cuisine to pull Italian food out of its comfort zone,” Chef Bocchia concludes. “When guests are coming from far and wide to visit, they deserve a meal they’ll remember forever.
