The end of the cold, rainy and gray season of the year is celebrated as an official German holiday May 1, called “Tanz in den Mai,” or dance into May. Like many other European countries, many towns in Germany honor a 2,000-year-old tradition on this day — the raising of a community maypole. People living in the pre-Christian eras honored nature with the festival of Flora, the goddess of flowers. The spring maypole continues to be widely practiced by townspeople in Bavaria, England, Finland, Sweden, Austria and the Czech Republic. Maypoles are constructed of different materials, depending on the resources of the specific community. Traditionally, it is made from a tree trunk that was formed into a long pole that people then decorate with a series of colorful ribbons, flowers and even carved figures. Sometimes, a “Maibaum,” or May tree, a small pine tree, is placed at the very top of the pole, almost like a Christmas tree star. The pole is then set up somewhere in a square or on an official building. Many locals contribute to the decorations and the process of putting up the maypole. Often, local organizations or guilds place their symbols and signs on the maypole and local craftsman display their skills. Maypoles are widespread still in Bavaria, and visitors to Munich can see the permanent Maibaum standing at the Viktualienmarkt. The raising of the maypole serves as the centerpiece for the afternoon of celebration, as well as a season of more light, outdoor activity and possibility. There is another tradition where an interested young man places a maypole with a love symbol on it on a young woman’s front yard. It remains there for a month as a token of his affection and hopes. To return his affection, she traditionally welcomes him in her home for a meal. In this area,

females sometimes anonymously place heart shaped objects at the doorstep of their love interests on this day as well. In America, some of the spirit of May Day has been adopted. In several areas, neighbors prepare baskets and fill them with flowers, leaving them on each others’ doorsteps. May Day is a holiday that offers us an opportunity to celebrate the pleasures of spring together, wishing everyone more light and more life. Use this holiday to start a maypole tradition of your own. To make your own family maypole you will need: 1) Cardboard tubes (internal role of wrapping paper) or a tall pole 2) Decorative tape 3) Streamers or ribbons (four, eight or 12 at twice the height of your pole) 4) Flowers or decorations for the top 5) An umbrella or flag stand or a volunteer to hold the umbrella while people dance around it Decorate the pole with decorative tape. You can then color the base of the pole or affix stickers to it. Staple ribbons or streamers at the top in equal distance and denominations of four (four, eight or 12, depending on how many people/children will be dancing around the pole). Decorate the top of the pole by stapling or gluing flowers, a wreath or other handmade decorations on top. It’s spring cleaning time! by Nicole Karsch-Meibom Contributing writer My calendar is screaming that it’s time for some spring cleaning! The minute the weather starts getting nice, this massive project presents itself. But spring cleaning doesn’t have to be such a chore. So, grab your cleaning products and join me! There are a couple things that can make this chore a success, rather than the dull and arduous burden it appears to be. The first step is getting organized. Some great websites help get the job nicely arranged and subdivided into manageable tasks. Make a list of what really needs to be done. Don’t hesitate to put major jobs on your list, too. Be realistic about what can be managed within a day, but don’t forget your other duties and obligations. There is no point in planning to tidy your garage in one day from 8 a.m. to 5 p.m., when there are children, pets and husbands to care for, too. Find out why there’s a mess and look for a solution. Maybe your doorway is always blocked with shoes.

Buying a new shoe closet might solve that issue permanently. Start by looking at the problems that annoy you most. Work step by step, because trying to fix all your problems at once will inevitably lead to frustration. Another fundamental fist step experts recommend is de-cluttering.

Easter in Baumholder Children collect eggs during last year’s Easter egg hunt at Baumholder’s Iron Soldier Park. This year’s Easter celebration will be on the field next to Wetzel Elementary School (west side) and is combined with a “kinderfest,” or children’s festival, that will offer numerous activities for the children. The festival takes place from 11 a.m. to 3 p.m. Saturday. The kinderfest activities will be in and around the area of School Age Services. Three bouncy castles, a boxing ring, sumo wrestling, a zombie factory and a stunt factory are a few of the activities lined up for children. There will also be stations set up where children can build “Harry Potter” wands, princess crowns and make super hero capes. Emerald City surprises await all the children who visit the “Wizard of Oz” room. Members of the 501st Legion will roam the festival area dressed in authentic “Star Wars” costumes.
Most of us have more than we really need. Psychologists actually say letting go of things is easier in spring than during winter times. Box up items you don’t need. See if you can organize a garage sale. If not, the “Kaiserslautern Garbage Guide” can help you to find the proper place for

It is essential to create manageable tasks in order to make sure you succeed and end up feeling that sense of accomplishment. Positive stimulation is the key word. Don’t forget to treat yourself after each step. Little rewards help break up the pile of work into easy bits. Finally, there is no point in cleaning if your loved ones keep trampling on your cleaned spaces. While it often appears much quicker to do any tidying job yourself, your spring cleaning will have a long lasting effect if you’re not the only one cleaning in your home. Storks at The Stork’s Nest

In Germany, the white stork is also called “Adebar” or “Klapperstorch” (clatterstork). With a wing span of up to 2 meters, the white stork is one of the largest birds in Germany. The stork grows up to 1 meter in length and approximately 80 centimeters in height, weighing between 2.5 and 4.5 kilograms. The storks’ feathering is white, except on the back and wings, where the feathers are black. Their bills and legs are red. Storks can be found across Europe in
wet, swampy areas. They mainly survive on frogs, lizards, snakes and insects. Storks love building nests made from twigs and branches on top of roofs, trees and rocks. The nest can be up to 2 meters in diameter up to 4 meters high. A pair of storks migrate to Africa for winter. During migration, they avoid the Mediterranean sea due to the lack of up winds in the air. Upon their return, a pair of storks always come back to their old nests where they raise their young from the beginning of April until the end of August. Playtime important for family bonding by Krystal White Contributing writer As the days get longer and the temperature rises, many of us get in the spirit of playing more. Too often our busy schedules and overwhelming to-do lists prevent us from doing what matters most: connecting with each other. There’s something about spring, however, that entices us toward fun. This is where play comes in. Play is a critical part of a family’s health. Developmental Pediatrician Maj. Lynne Kramer encourages parents to spend a minimum of 15 minutes a day just playing with each of their children. “Play gives kids and parents a chance to bond. We know that this important activity boosts language, social skills, creativity and thinking skills,” she said. Kramer specializes in developmental delays at Landstuhl Regional Medical Center, and points out that play is crucial for learning. Play bonds families together. How you decide to have fun together as a family, from visiting castles to going on a hike to playing card games, reveals your family values, culture and identity. Play can be the antidote to conflict as well. It allows our brains and bodies to relax, think clearly, solve problems, sleep better, eat better, breathe efficiently and feel more grateful. For our children, the act of fun time with other people is social skills training. Children learn best in play, learning to listen to directions, cope with setbacks, manage feelings and communicate clearly. Play is crucial for growth. It is practice for developing knowledge, creativity, self-confidence and problem solving skills. Adults need to play with their children to create a supportive environment and help them benefit from it the most. You think it would be easy to just play with your children. But often it’s not. Kids are cranky, or
adults are cranky. Attention spans are short, or we don’t have “enough time.” But play doesn’t have to be complicated or a big fuss. Take 20 minutes a few times a week to spend with your child without the distraction of electronics. The goal is to enjoy each other. When family members play, they are building positive feelings and bonding, which is required for us to tolerate being told what to do later on! We all need fun and relaxation time in order to effectively work and be productive. All too often, the only fun time we make for ourselves and our children seems to be TV/video time, extracurricular activities or playing on the computer. In order to build healthy habits, and decrease arguments, follow the simple rule of three. Every month, mark your calendar with three dates and times for the next month. This scheduling (not just saying it) makes children feel special and important. • Parent Date Night. Arrange a sitter, take advantage of the child development center on a weekend, or swap with a friend. Spend two to three hours child-free (no running errands) just going for a walk or out to coffee. • Dad & Me, Mom & Me Dates. Schedule two hours one on one for each child with each parent once a month. Give them a choice between two activities to do together. • Family Night. Once a month, spend a night or afternoon interacting (not watching TV). Go bowling, play games, go to a museum, go on a hike, go bike riding or visit a castle. Here are some other general guidelines for play with young children • It is better to play with unstructured toys, such as blocks, trucks, dolls, etc. • Some adults find it helpful to play at
the same time every day. • Put away the phone (this says that spending together is important). • If there is more than one child in the family, try to play with each child separately, if possible. It is difficult to go back and forth between two or more children effectively, plus, everyone loves one on one attention. • Follow your child’s lead and interests. • Pace at your child’s level. • Don’t “teach” during “play” — just focus on having fun! • Don’t criticize. • Be creative and make-believe with your child. • Try not to ask questions (“what color is that?”) but describe their actions (“you’ve got the red one!”). • Don’t over-help in order to encourage your child’s problem-solving. • Reward quiet play with your attention. • Don’t compete (until they are older). ••• Dr. Krystal White is a pediatric psychologist at Landstuhl Regional Medical Center who specializes in community assets and developmental disorders.

Seeking Sunny Getaways by Nicole Karsch-Meibom Contributing writer Even poet Goethe felt what most of us do when spring brings rain and chilly weather: Let’s go somewhere nice! Centuries ago, the inhabitants of Northern Europe were drawn to warmer, nicer, more pleasant locations at this time of year. While it took the people of Goethe’s age many weeks of traveling in an uncomfortable carriage, modern man can simply hop on a plane and see the sea within a few hours. SICILY In his poem “Mignon,” Goethe was referring to Sicily. The Italian island is a holiday hotspot much loved for its baroque architecture, delightful cuisine, Mediterranean ease and aquamarine coast. Due to its proximity to the African coast, spring is the most pleasant time to travel there. Many scientists come to visit Mount Etna, the biggest active volcano in Europe. One crater, Silvestri, is no longer dangerous and is even open for tourists. Likewise, several antique towns dating back to Greek-Roman times are fascinating witnesses of ancient cultures. SOUTHERN SPAIN Goethe would have enjoyed Southern Spain just as much. Andalusia is the epitome of historical and architectural holiday locations. There is Granada with its unrivaled Moorish Alhambra; Seville, the cradle of vivacious flamenco dance and tapas snacks; or little Ronda, one of the famous “White Villages” situated around a 330-foot-deep gorge; not to mention the “Costa del Golf” with its 60 courses within the region and the adorable beaches of Andalusia.

CANARY ISLANDS A destination Goethe never traveled to has now become one of the most popular places for holiday makers: The Canary Islands. The archipelago is located off the northwest coast of Africa, but belongs to Spain. Many of the islands are household names for reliable sunshine and good weather vacations. Fuerteventura, Gran Canaria, Tenerife, Lanzarote and La Palma are the largest islands and offer a subtropical climate. Divers find it a paradise, and the waves of the Atlantic Ocean are much loved by surfers. The Canaries offer more than 1,500 kilometers of coastline.

On the other hand, the island is home to some stunning natural parks with lonely regions and breathtaking sights. The most quintessential of culinary experiences — the one responsible for my reticence to get back on the slopes — is dining in a mountain hut. Not only are they quaint venues with rustic interiors and limited seating, but they are known for the farm-totable freshness of their menus. The polenta was creamier and the meat tastier than seemed possible. There were delicate mountain herbs in the seasoning that I’ve never tasted before. I can’t wait to taste them again. I lingered over dessert, an airy profiterole filled with buttermilk mousse and sprinkled with dried wildflower petals. If I were in Switzerland, Austria or even France, maybe I would feel compelled to get back on my skis and make the most out of the remaining afternoon. But after all, this is Italy.

trawberries, or as the Germans call them, “Erdbeeren!” This delectable fruit is not only chock full of vitamins, but also very healthy; 100 grams of strawberries only contains 37 calories — much less than most other common fruits. Strawberries are also easy to find, inexpensive and, best of all, you usually don’t have to force your child to eat them! There are so many desserts and other recipes you can make with strawberries (from cakes to jams), but nothing beats eating them straight from the field! Harvesting times usually start in late May, weather depending. The “Queen of Fruits” is loved the world over for its bright color and sweet flavor, also combined with its nutritional advantages. “Eating strawberries right from the panicle is a great experience,” said Katharina Heckel-Funck, owner of Erdbeerland Funck. Her company maintains many fields in the vicinity of Kaiserslautern. “On the fields you can see and learn where and how these fruits are grown. They are like vitamin bombs and a culinary experience.” To enjoy them properly, just keep a few things in mind. Ripe berries need to be consumed quickly. They should be stored in small portions. Avoid bags
but keep them cool and side by side on a flat plate to avoid bruising. The flavor enfolds best at room temperature. Easter Baking Delights by Nicole Karsch-Meibom Contributing writer After this long and cold winter, spring is finally promising warmth and sunshine. So, it’s time to enjoy nice food with friends. Classic Easter baking ranges from the popular carrot cupcakes to bunny cakes (find suggestions for recipes at www.thebakingpan. com/recipes/cupcakes/carrot-cupcakes.html.) However, the most traditional dessert in Germany is the Easter braid, or “Osterzopf.” The Osterzopf is usually served on Sunday afternoons and can be creatively decorated with colored eggs and formed into a loaf or wreath. Preparations are easy and effortless. The Easter braid is best eaten when still warm, and children love it with a spoonful of honey spread. Beautifully ornamented with colored eggs or ribbons, it is a pleasant herald of the upcoming spring season.
EASTER BRAID 2 teaspoons sugar or honey 1/2 cup warm water 1 1/2 tablespoons yeast 4 cups flour 2/3 cup flaked almonds for topping
1/4 teaspoon salt 1/2 cup sugar 1/2 cup milk 1/2 cup butter (unsalted)
1 teaspoon vanilla extract 1 cup raisins 2/3 cup flaked almonds 1 egg for egg wash
INSTRUCTIONS Heat oven to 200 C. Dissolve 2 teaspoons sugar in warm water and mix with yeast to form a paste. Then,
slowly add flour, salt, sugar, lukewarm milk and butter. Depending on individual taste, you can add vanilla extract, almonds and raisins. After kneading all ingredients into a soft dough, cover it and leave it in a warm spot for one to two hours until the dough has doubled. Divide the dough into three parts and roll them into long rolls. Braid and form as you like. Some recipes suggest plac-
ing a small braid on top of a large braid. Create little dells where you want to place the Easter eggs after baking. Transfer your creation onto a greased baking sheet to let it rise once more. Before baking, brush the dough with egg wash and sprinkle with flaked almonds. Bake in the oven for 40 to 50 minutes, keeping an eye on the braid. If it browns too quickly, cover it with tin foil.

by Michael J. Meese Contributing writer Germany’s seas, rivers, lakes and streams are home to a multitude of fish that aren’t only a challenge to catch, but also a tasty main dish. Such fish include brown, brook, lake and rainbow trout and lake char, taimen, grayling, pike, walleye, perch and carp. Like most anything in Germany, you need a license to fish. Though obtaining a license is not as easy as receiving one in the states, it is still accessible for military members serving in Germany. Generally, in order to legally catch a fish in Germany you need two important documents: a “Fischereischein,” or fishing license, and a “Tageskarte,” or permit. The fishing license confirms that you attended and passed a special course and exam. The license allows you to obtain a permit for fishing a specified body of water for a specified period of time. Obtaining a German fishing license is time consuming and pricey. Its process entails taking a 30-hour course followed by a comprehensive fishing exam that tests what students learned. A good understanding of the German language is a must. The cost of obtaining the license is around $200. The license needs to be renewed annually for about $22. But anglers and their family members who are part of the U.S. military in Germany have another option to complete the German fishing course and exam. Rod and Gun Clubs are located on almost every major U.S. installation in Germany, and these guys are the ones to hook up anglers with a fishing license. They offer the course and exam in English and help military members get their standard German fishing license once they have completed the exam. Another method of legally fishing in Germany is getting a 90-day visitor’s license called a “Besucher-Fischereischein.” This method involves anglers presenting a valid stateside fishing license accompanied by an
official German translation of the license to the local German government agencies in the desired location for fishing. These agencies are called “Kreisverwaltung” or “Ordnungsamt,” which can be found in the “Rathaus,” or city hall. You must also present identification such as a passport or driver’s license and one passport photo for placement on the fishing license card. No course or exam is necessary, and the cost of a visitor’s license is around $28; the license needs to be renewed for the same cost every 90 days. Once a fishing license is obtained, the next step is getting a permit, which can be purchased for a day, week or month. These permits are available from a variety of private businesses and organizations that own or lease the rights to favorite fishing holes in a desired angling area. These businesses and organizations are usually regional fishing clubs called “Angelvereine,” private landowners, campsites, hotels or tackle shops. Permits generally cost around $15. Within and around the KMC, there is an abundance of lakes and streams for fishing with a license — either permanent or a visitor’s. Also, the Rhein, Neckar and Mosel rivers are close by for fishing opportunities. In France, there are artificial lakes where anglers can fish without any license at all. These small lakes are filled with trout and other species, and the cost of dropping a line in its waters is around $10. These privately owned lakes even rent out fishing lines and sell bait; they are located throughout France, but there is one across the border from Germany just outside the French town of Bitche. Bitche is a little more than an hours drive from the KMC. There are many options for the American angler stationed in Germany to cast out their lines and reel in some of Europe’s finest fish. The options vary in price and time needed to accomplish them, but nonetheless, fishing in Germany and in France is not out of reach.

One of the simplest ways to help yourself, your family and the environment is to stop pouring expensive chemical cleaners all over the things you own and down the drain.
It’s easy being green by Stephani Hinderliter Contributing writer “Going green” is a phrase that is on the tip of everyone’s tongue these days, but being green can be overwhelming when there are so many options and opinions and information pulling you in different directions. How can you be more “green” without having to overhaul every aspect of your life? By taking small steps to lessen your impact on the environment. One of the simplest ways to help yourself, your family and the environment is to stop pouring expensive chemical cleaners all over the things you own and down the drain. When you clean your bathroom with bleach cleaner, your floors with pine cleaner or your carpets with chemical-laden foam cleaners, those chemicals all get rinsed down the drain and into the water supply at one point or another. Making your own household cleaners not only helps the environment, but it saves you cash and rids your house of items that can be potentially toxic to pets and children. Your toilets, floors and carpets all come in contact with your pets and family, and residue left behind from those harsh cleaners can be dangerous to one or both of them. Items you already have in your pantry can clean your house just as well as or better than expensive chemical cleaners, and for a fraction of the cost and little effort. Check out these common household items that pull double or triple duty as cleaning products. WHITE VINEGAR Easily the most versatile natural cleaning product, white vinegar can be used to clean surfaces in your kitchen and bathroom, at full strength for
tough jobs or diluted half and half with water for lighter cleaning, and can be used in a carpet shampooer instead of chemical shampoo, or for mopping tile or wood floors. It can also be used to dissolve hard water stains and soap scum in the bathroom. It cuts laundry detergent residue and softens clothes, so use one cup in place of fabric softener or dryer sheets, which can contain formaldehyde, in the rinse cycle. For a glass and surface cleaner, mix onefourth cup white vinegar and 1 tablespoon cornstarch with one quart of water and put in a spray bottle. Use newspaper to wipe it off windows and glass surfaces — paper towels leave lint. White vinegar is a natural deodorizer — it absorbs odors, rather than covering them up, and the strong smell disappears as soon as it dries. BAKING SODA Baking soda is mildly abrasive, so it can be used in place of scouring powders. Sprinkle it onto a damp sponge and clean the stove and counter tops in your kitchen or your bathroom surfaces. Mix it into a paste with water and let sit on heavily soiled surfaces, such as tile and grout, for 10 to 15 minutes to loosen up grime before scrubbing. It is also a natural deodorizer, so it will absorb odors anywhere in your house you place a box. Sprinkling baking soda on your carpet before vacuuming will absorb odors. To clean out slow drains, dump one cup of baking soda on the drain, then pour one cup of hot vinegar on top. Let sit for five minutes, then flush with hot water. Repeat if necessary. Use baking soda that has already served its purpose of absorbing odors in the fridge for clearing gunky drains to get more bang for your buck. LEMONS Lemons are naturally anti-

bacterial and they are also deodorizers. Rub a lemon on the surface of a wooden cutting board to disinfect it before washing or toss a few cut up lemons in the garbage disposal to neutralize odors and disinfect. If you accidentally leave your coffee maker on and the coffee burns to the bottom of the decanter, squeeze some fresh lemon juice in, add a little salt and some crushed ice and swish it around. The burnt on coffee residue will dissolve. You can also mix 1 cup of lemon juice with 1 tablespoon olive oil and 1 tablespoon water (mix the water and lemon juice together first, then mix in the oil) as a wood furniture polish. Let it sit for a few minutes and then buff with a soft cloth. BORAX Borax has many household uses. Adding it to the washing machine boosts the cleaning power of your detergent and lets you use less of it, which saves you money and decreases the amount of chemicals going down the drain. It also acts as a water softener. Make a paste of Borax and warm water and apply to carpet or mattress stains and let sit until dry, then vacuum. Clean soiled garbage cans with Borax and water, then sprinkle Borax
in the bottom of the clean, dry trash can to absorb odors. Mix equal parts of Borax and baking soda for a natural, inexpensive dishwasher powder — use between 1 1/2 and two tablespoons of the mix per load. Make sure to add white vinegar to the rinse aid dispenser to avoid a white cloudy residue. You can also add two drops (no more or you will end up with a foam party in your kitchen) of regular dish soap to boost the sudsing power of the detergent. You can buy a gallon of white vinegar, a box of baking soda, a few lemons and a box of Borax for about the same price as one bottle of chemical household cleaner, and you can get many more uses out of those items too, both in terms of versatility and quantity. As you can see, doing something to further the green initiative doesn’t have to be time consuming, overwhelming or expensive. It can actually save you money in the long run and, more importantly, keep harsh, dangerous chemicals away from your family. Hopefully, adopting this one small aspect of being green will inspire you to make changes in other areas of your life at a pace that is comfortable for you.

The English Theatre Frankfurt Advertisement
The English Theatre Frankfurt has gained fame as the largest English-speaking theater in continental Europe. It has become a major player in the RhineMain region’s cultural scene since its foundation in 1979. The theater audience is the youngest, most cultivated and wealthiest amongst all theater audiences in Frankfurt. More than 80,000 visitors per season enjoy its wide range of classics, comedies, thrillers and musicals — all produced in-house to the highest professional standards. Auditions and initial rehearsals take place in London and New York. Only then does the ensemble come to Frankfurt for final rehearsals and performances. The auditorium seats 300 and makes use of the latest audio-visual technology. The house bar, James, has two floors outfitted with cosy but contemporary furniture. The theater is famous for its musical productions. Last season’s musical “The Who’s Tommy” (Pete Townshend and Des McAnuff) was a massive hit and drew a huge audience. More than 36,000 people saw it, which makes it the most successful musical in the history of the theater. After having been extended for another two months, “The Who’s Tommy” went on international tour. In 2010, the theater staged the German premiere of the musical “Spring Awakening.” Further musical highlights of the previous years are “The Full Monty,” “Hair,” “Rent” and “Cabaret.”

Eat healthy this spring! by Krystal White Contributing writer Longer days, warmer temperatures and signs of new life in nature remind us to take care of our physical health. Research has demonstrated that eating more whole foods (think strawberries) and less processed foods (think strawberry Pop-Tarts) can lead to better behavior, happier moods and more productivity. We all know that we should be getting more fruits and vegetables, but with busy schedules, stressful work loads and picky eaters, our eating hab-
its easily fall short of our green intentions. Take for example how we all tend to get sluggish in the afternoons. Capt. Rachel Morgans, a registered dietician from the 212th Combat Support Hospital, encourages people to understand their bodies’ natural cravings for fuel and plan accordingly. “Many people reach for chips or candy, or think they’re making a good choice by going for 100 calorie Snack Packs — all of which are simply refined carbohydrates and likely to lead to a sugar crash,” she said. Morgans suggests stocking yogurt,
fruit and nuts to enjoy as afternoon snacks. “The fiber, good fats and protein will take longer to digest, give you lasting energy, and keep you more alert and satisfied until dinner,” she said. Spring is the perfect time to get your “veggies on.” Food has been shown to impact our moods, from turkey feasts that often make us feel sleepy, to chocolate that enhances our sense of positivity. Eating more vegetables, loaded with vitamins, antioxidants and water, can help fill you up (reducing your tendency to munch on tempting
treats) as well as boost moods and put more spring into your step. “Eating vegetables with beans or a healthy meat makes a power meal,” Morgans said. “The combination of fiber and protein slowly fuels your body, keeping a person more level.” Vegetables can be easy to hate. Some people, particularly children, detest their bitter flavor. Researchers have shown that up to 25 percent of the population are “super tasters,” who naturally may despise vegetables. If you follow a few tips, however, getting your veggies down may not be such an ordeal. You can add them to foods you already enjoy, choose naturally sweeter ones or dip them in fun sauces. Here is a whole day’s menu to get your veggie on. SPINACH OATMEAL Servings: 2 Sweet and subtle, you’ll hardly notice the spinach! This also makes a great breakfast. Thaw 1 cup frozen spinach, add to blender with 1.5 cups of skim milk, 1/2 teaspoon vanilla, a sprinkle of cinnamon and two packets of Splenda (a no-calorie sweetener). Once mixed, add to 1 cup of quick oats or 2 packages of instant lower sugar oatmeal. Add water to preferred consistency. Prepare in Tupperware overnight and heat in the morning with a dollop of peanut butter on top. Oatmeal contains a lot of soluble fiber. This will lower blood sugar levels, which will reduce irritability, and keep them down. It also helps reduce hunger. Spinach has high levels of folic acid and magnesium, and both of these nutrients are linked to mood. A deficiency of either of these nutrients can help cause depression and anxiety. BLACK BEAN, TOMATO, PEPPER, CORN SALAD A sweet and salty lunch Find a salad bar and mix together a 1/2 cup of black beans, a 6 cherry tomatoes, a heaping of mixed peppers and corn. Toss with salt, pepper and a drizzle of olive oil and a splash of hot sauce for a satisfying lunch. Black beans are rich in anthocyanins, powerful
antioxidants that provide neuro-protective benefits like bolstering short-term memory and reducing mood-killing inflammation. Their skins are also loaded with iodine, an essential nutrient that helps regulate your thyroid. Tomatoes (technically a fruit) are high in lycopene (which, combined with an oil, has been shown to reduce various types of cancer). Peppers are high in vitamin C. Corn is a sweet vegetable higher in carbohydrates, as well as protein (a large ear of corn has almost 4 grams of protein). MANGO CARROT SHAKE A balanced snack (or breakfast, if a sweet start is desired) Blend 1 cup frozen mango, a jar of baby carrot food, 1 whole fresh orange, a container of greek yogurt, 1 tablespoon shredded coconut and a sprinkle of cinnamon Prepare the recipe the evening before and enjoy mid afternoon the next day. Mangos are a good source of dietary fiber and vitamin B6, which help you feel alert. Carrots are high in vitamin A and oranges are high in vitamin C. Culturing of yogurt increases the absorption of calcium and B-vitamins. The lactic acid in the yogurt aids in the digestion of the milk calcium, making it easier to absorb. Coconut is a healthy fat in moderation and may lower heart disease risk factors. More than 50 percent of its saturated-fat content is lauric acid. A recent analysis of 60 studies published in the “American Journal of Clinical Nutrition” reports that even though lauric acid raises LDL (bad) cholesterol, it boosts HDL (good) cholesterol even more. Overall, this means it decreases your risk of cardiovascular disease. Cinnamon reduces LDL cholesterol levels and regulates blood sugar.
March 29, 2013 ASPARAGUS SPREAD Servings: 6 A great dinner companion (to serve with tacos or burritos) If you like guacamole, you’ll love this! Trim the ends of 25 asparagus spears and chop. Place in 1/2 cup of boiling water until tender, about 5 minutes. Drain under cool water. Blend the veggies with 1/2 cup salsa, 3 garlic cloves or 1 tablespoon chopped garlic, a few tablespoons of fresh cilantro, and 2 chopped green onions. Process a few times on pulse mode until incorporated. Widely available in the KMC during springtime, asparagus is an excellent source of tryptophan, which serves as a basis for the creation of serotonin — one of the brain’s primary mood-regulating neurotransmitters. Asparagus also boasts high levels of folate, a nutrient that may fight depression. AVOCADO CHOCOLATE PUDDING Servings: 6 A tasty dessert Blend 8 tablespoons cocoa powder with 1 1/2 cups skim milk, 1 chopped banana, 3 chopped avocados, 2 teaspoons vanilla and 4 tablespoons honey. Freeze for 20 minutes. Avocados are healthy in antioxidants, vitamin c and healthy fats. Chocolate contains serotonin and improves endorphins, that feel good chemical. German or American scholarship applicants must: • Be studying business or business-related courses at the University of Kaiserslautern OR be studying business –related courses at any accredited university but having a home residence within the area surrounded by Kaiserslautern, Pirmasens, Saarbrücken, Koblenz and Mainz. • Have a minimum of one year remaining before completion of degree • Submit a 500-750 word essay – in English – on how the applicant plans to use his or her business studies to further German-American relations. Concrete examples and rough outlines of business plans are encouraged. • Submit a cover letter – in English – which includes the applicant’s name, current address, home address, e-mail address, current school, year expected to complete degree, and a brief outline of current course of study, as well as any pertinent cross-cultural experiences.
