Why is it when the sun is shining we always feel more upbeat and raring to go whether it’s work, family commitments, days out, it all just seems a little easier when the sun is shining. We seem to have a more positive outlook on life, although being positive doesn’t mean that we no longer experience difficulties or challenges but it can certainly change the way we view those challenges it’s all about the mindset, turn to page 12 to see how you can implement steps to help you cope with a break-up.
Mother’s Day is once again upon us (30th March) a time to show all those amazing mums out there how much we love and appreciate them (and dads who take on the role of Mum and Dad) – We’ve been busy finding our favourite gifts (page 28) that we know will bring a smile to your mum’s face.

Spring is also a great time to get outdoors and start walking, but not any old walking, this is yoga walking (page 16) which encourages you to pay attention to your surroundings, senses, how the walk feels in your body, and how to synchronize your breathing. It helps you walk mindfully, enjoying the little things and finding happiness in the details.

Mindful eating and drinking
We rarely pay attention to food or the action of eating during meals as we tend to be talking with others or watching television. Food brings joy and is worth paying attention to. Try these steps during your next meal:
- Pay attention to where you are eating, whether you are in your room, restaurant, garden, or kitchen.
- Find a comfortable position and visualise your food.
- What’s on your plate? Look and smell the food and drink before you taste it.
- Bring attention to yourself. Are you hungry? Thirsty? Are there other feelings present? Focus on your sensations.
- Now, mindfully taste the food. Chew each bite slowly with joy. Bring your attention to your sensations. How does it taste? Enjoy the food you are eating. Gently ask yourself how you feel. Is it enough or do you need more?
- Practice gratitude towards the food as you finish eating.
Mindful communication
Increased mindfulness about how you communicate can create a safe, secure, and nourishing relationship with others where your needs and wishes are both seen and heard. Try these exercises to engage in mindful communication:
- Join the conversation with a full focus on the communication.
- Realise where you are. Are you sitting or standing? What is the weather like?
- Recognise the tone of the conversation and the emotions it is making you feel.
- Listen to the other person with full attention, really digesting the conversation and the message they’re trying to convey.
- Identify your feelings and reactions during the conversation.
Mindful movement and outdoor activities
When we exercise, we tend to distract ourselves from our heightened heartbeat and sore muscles to get it over with, to move past the more difficult parts. But just as in life, the more we escape from the uncomfortable feelings, the more we carry their stress within ourselves. Moving mindfully is a nice reflection of our mindset in our daily lives.
- Visualize yourself. Try to imagine how you would look if you were able to watch yourself from afar.
- Push through the ground with your feet, standing tall and still.
- Open your chest up to the sky.
- Roll your shoulders back.
- Take a few very slow steps, monitoring each component of those steps as if you just learned how to walk, as if you were describing it to someone who has not walked yet.
- Ask these questions of yourself with the curiosity of a child: Are you comfortable moving? How does your body tend to move? How does it feel to move?
- Explore the constant change. Notice how your body adapts to those changes and how it fluctuates within a movement.
- Notice if the movement in your body coincides with the shifts in your mind. The posture of your body might help you to get a stronger and more confident perspective.
Being mindful of your body will enable you to realise what it needs at that moment and to treat yourself with compassion and patience during movement. Practice moving mindfully during the day, not just during exercise, and try to see if there’s any difference.
Yoga, Pilates, running, dancing, and other forms of exercise are also great opportunities to practice mindfulness as all of them require you to be present and pay attention to your breathing. Focus on activities that make you feel good and bring you joy.
Mindfulness is the practice of being in the present moment and experiencing what is happening now. Mindfulness does not have to be limited to a certain period or activity; it can be embedded in all aspects of your life. The more you practice mindfulness, the more it will come naturally to you and ultimately guide you through difficult times in your life, such as a breakup.
Based on research carried out by Bumble, the standard timeframe to heal from a breakup is around three to six months. This allows for you to put these self-care tips into practice.
Mindfulness may not work for everyone, but for those experiencing a tough time, it may be the way forward.

and finding happiness in the details. Additionally, you can advance your practise by adding in some yoga poses that help your body stay flexible and ease any tension that many arise while you walk.
Physically the benefits of walking yoga are muscle strength, help with weight management, improved cardiovascular health, increased flexibility and mobility, as well as helping to reduce pain and stiffness.
Mentally the benefits are reduced stress, improved concentration, positive mood boost, enhanced mindfulness and lowers anxiety.
Start small, a short walk, perhaps one you have done before or know well. So you can focus more on your body and the sensations of how the walk feels first. This is going to be really beneficial when you synchronise your breath to the movement of walking.
Walking yoga gets you out in nature, you are moving with more mindfulness and kindness to your body. Having greater awareness of how your moving and how it feels is going to lower the risk of injury.
If you’re more of a walker than a yogi it’s going to improve your breathing and help create space in the mind and if you’re more of a yogi than a walker it's a nice alternative to getting off the mat.
If you struggle with motion sickness or vertigo it may not be a great option for you.

Ingredients
4 Chicken Thighs or Legs
500g small New Potatoes (halve larger ones)
3-4 stalks of Rhubarb
8 Opies Sliced Lemon Slices
6 cloves of Garlic
2 tbsp Opies Cocktail Onions
1 tbsp Opies Cocktail Onion brine
Few sprigs of Rosemary
2 tbsp Olive Oil
Heat oven to 200°C / 180°C fan / gas 6 and place the potatoes in a roasting tray. Slice the rhubarb into thin slices, scatter over the potatoes and nestle in the chicken pieces and garlic cloves. Place two lemon slices on each piece of chicken and scatter over the cocktail onions. Drizzle over the olive oil and rosemary and season well with salt and pepper. Roast for an hour, basting the chicken with the oil halfway through. Once the potatoes are golden and the chicken is nice and crispy, remove from the oven. Serve straight from the tray with a handful of salad leaves.

Combining the delicate yet distinct flavour of seasonal asparagus with the rich, nutty taste of Gruyère cheese this is sure to be a treat to the taste-buds.
Ingredients
320g sheet of ready rolled shortcrust pastry
4 eggs
100g gruyere cheese, grated
100g mature cheddar cheese, grated
130ml milk
1 tsp dijon mustard
50g Opies mini silverskin onions
80g asparagus, ends trimmed
Method
Pre-heat oven to 200°C / 180°C fan / gas 6. Unroll the pastry sheet and drape over a flan dish or shallow tin approximately 25cm in diameter. Trim off any excess pastry that overlaps the edges.
Line the pastry with baking beans and bake blind for 15 minutes or until the pastry is lightly golden, then remove to cool slightly.
Beat the eggs in a large mixing bowl then add the gruyere, cheddar and milk, reserving a small handful of each cheese for later. Mix well and season to taste. Pour the egg and cheese mixture into the pastry shell, then scatter over the cocktail onions.
Top the mixture with the asparagus spears, arranging in any way you like – if they don’t quite fit inside the dish, dice up the ends of the asparagus to shorten them and sprinkle the chopped pieces over the quiche too, along with the spears.
Top with the reserved cheese and cook in the oven for 25-30 minutes until golden and set in the middle.

Poke cakes are single-layer cakes baked in a deep-sided pan, then poked full of holes. This cake has colourful blue streaks in each lemony slice of cake.
Ingredients
Cake
3 cups sifted self-raising flour
1 tbsp+ 1 tsp baking powder
1/4 tsp salt
4 egg whites
1 cup buttermilk
1 tsp almond extract
6 oz unsalted butter, room temperature
1 1/2 cups sugar
1 lemon, finely zested, divided
Fresh blueberries, for garnish
Blueberry Sauce
2 cups blueberries, fresh or frozen
Juice of 1 lemon
1/3 cup sugar
2 1/2 tsp cornflour
1 pinch salt
Topping
2 cups thick cream
1/4 cup caster sugar
1 tsp vanilla extract
1/2 cup lemon curd
Method
Preheat oven to 350℉. Grease a 9×13-inch cake tin.
Whisk flour, baking powder and salt together in a medium bowl; set aside. Lightly whisk egg whites, buttermilk and almond extract together; set aside.
Set aside a small amount of the lemon zest for garnishing the cake. Cream the butter, sugar and remaining lemon zest together in a stand mixer until light and fluffy; scrape down the sides of the bowl. Add flour mixture in 4 additions alternately with buttermilk mixture, starting and ending with the flour mixture.
Bake for 30 to 35 minutes. Remove cake from oven and transfer (in the tin) to a wire rack. While cake is still warm (but not hot), poke holes in the cake surface (about 1/2 inch apart) using the handle of a wooden spoon.
Mix blueberries, lemon juice, sugar, cornflour and salt in a medium saucepan over medium heat, stirring occasionally; bring to a simmer. Remove from heat once the mixture bubbles and thickens. Pour the Blueberry Sauce over the cake, making sure to fill each hole as much as possible. Spread remaining sauce evenly over the cake surface; let cool completely.
Whip double cream, icing sugar and vanilla until medium stiff peaks form. (Do not over beat.)
Place lemon curd in a separate bowl and fold 1/4 of the whipped cream into the lemon curd. Fold lemon curd mixture back into remaining whipped cream until fully mixed. Spread topping evenly over the cake and refrigerate until ready to serve.
Before serving, garnish the cake with fresh blueberries and sprinkle with a small amount of lemon zest.
