August is the month when we’re all in holiday mode, whether it’s just taking some me time, jetting off for a weekend or a two-week indulgent beach break, it doesn’t matter as long as you manage a little R&R – We’ve got some fabulous places to add to your bucket list from The Maldives to Santorini, Austria to France or staying closer to home in Devon, the choice is yours!

Summer is also a time when we all make the most of outside living, it’s when we decide to pour ourselves a chilled glass of wine and just enjoy. It’s an extension of our indoor living space, and most of our dining is done alfresco, we have some great recipes (page 32) that are perfect to serve to family and friends this summertime.

We’ll have all heard of the phrase Carpe Diem –usually translated as seize the day – I’ve even seen several people who have the phrase as a tattoo, presumably to remind of the importance of the sentiment. Turn to page 12 and take a look at the reasons why it is such an important sentiment.

As if we need an excuse to drink a glass of bubbles, but just in case you do it’s time to celebrate National Prosecco Day (13th August) and open a bottle or two of our favourite prosecco (page 35).

Stress is a word we all know too well, an emotion we've all felt. according to The Mental Health Burnout Report 2024, 9 in 10 adults in the UK (91%) experienced high or extreme levels of pressure or stress at some point in the past year.

While often viewed as the enemy, stress is a powerful force that has shaped human evolution. However, our modern lives have complicated its role, making it crucial to understand how stress works and how we can manage it effectively.

Jane Ollis, medical biochemist, environmental scientist and founder of Mindspire, explains how it’s crucial to understand how stress works and how we can manage it effectively.

Outdated Brain Programming: The Origins of Your Stress Response

Our stress response originates from ancient brain programming meant for survival. When faced with danger, our ancestors' bodies released adrenaline and cortisol, triggering the "fight-or-flight" response and increasing glucose levels for energy. This response, ideal for short-term threats, is less suited to modern stresses like work deadlines, which still activate the same physical reactions.

Boosting this system creates more buffer before the stress response activates. Track your progress by measuring Heart Rate Variability (HRV). Higher HRV indicates a healthier balance between the sympathetic (stress) and parasympathetic (relaxation) systems, showing better health and stress resilience.

Breathing Magic: Boosting Your HRV

Improving HRV doesn’t need costly treatments. Practices like slow-paced breathing boost the vagus nerve, vital for the parasympathetic system. 1. This day is the only one we have – tomorrow isn’t promised. Developing the mentality that every day is a gift is something that can change your entire mindset. We all know life is not infinite and we will all die one day but understandably we often block that thought from our mind and assume that tomorrow and the next day is promised. So, by seizing the day we are acknowledging that the future is unknown but today is before us – ready to be seized

2. When the notion that each day is a gift becomes embedded in us, it somehow frees the way for us to appreciate all the good we have today. The small things – which are often overlooked- as well as the bigger things, it can help us not to take anything for granted. Gratitude serves a number of purposes – it changes our outlook, makes us appreciate all that we have but can also have positive physical impacts too.

3. It is also important to acknowledge that life is full of ups and downs for everyone. People get ill, suffer misfortunes of all kinds, often not at all their fault. Relationships break up – things just don’t go as planned, accepting that there is little we can do about that can be very helpful. But it is also important to acknowledge that there is something we can always control and that is our response to what is happening. Sometimes emotions appear to come from nowhere, we may not be able to control their source but we can control our response to them

4. Learning to ‘go with the flow’ is a bit of a cliché but it embodies an important truth. How much time have we all spent worrying about things, people or situations that we have no control over. I’m not saying it’s easy but acknowledging the things you have no control over and letting them go can be immensely releasing.

5. Another important element of seizing the day is making a conscious decision to live as much as possible in the moment. Obviously, we have to make plans, we have to learn from the past but it is also very important to savour the moment we are in and not let worries about the future or past detract form the present. After all the current moment is the only one we can really be sure of! It doesn’t come easily but it is something we can work on through mindfulness, meditation and other strategies.

6. Forgiveness can also help develop happiness and there are two important aspects to this. The first is forgiving others - not always easy but living with unforgiveness isn’t easy either. But the other aspect is forgiving ourselves. So often we berate ourselves for things we may have done or said in the past but beating ourselves up is not the way to a peaceful life or one where we can seize each day.

7. When it comes to seizing the day, many people may interpret this as a call to activity or busyness but hopefully from the above you can see this isn’t the case. Seizing the day is about acknowledging the gift it is and living a life of happiness and fulfilment. Perhaps one of the greatest elements of that is selflove. Learning to practice self-love, not just talk about it, and looking after yourself is vital to living a happy fulfilled life. It means prioritising your own health and wellbeing, saying no when you need to, responding to the signals your body gives you, so resting when you are tired, treating yourself (and talking to yourself) with kindness, doing things that you enjoy and much more besides.

So, when it comes to seizing the day it is a lot more about being than doing, it’s about our mindset and inner state – they are the things that will really help us to live each day with fulfilment and happiness even when the situations we find ourselves in may be far from happy.

The Dos and Don’ts for Looking after your Hair this Summer

Warm temperatures and humid conditions can make your hair more susceptible to damage, so as well as protecting your skin from the sun, it’s also crucial to be mindful of your hair care over the next few months.

Rising temperatures can cause hair to become frizzy, damaged, and discoloured. To prevent any lasting damage this summer, experts at the beauty and wellness marketplace, Fresha.com, have created a guide on how to protect your hair during the warm months ahead.

Don’t skip the conditioner

Hydration is essential over the next few months to prevent your hair from becoming dry and damaged. As the temperatures rise, the warm weather can strip away the hair’s natural moisture, so it’s crucial to ensure you’re not skipping out the conditioner in your hair-care routine.

Deep conditioning treatments can prevent the hair from looking dried out and will defend against any breakage, keeping your hair sufficiently hydrated this summer.

Try out a hydrating hair mask

Hair masks can also boost your hair’s hydration, making them an essential part of your summer hair care routine. It’s advised that a hydrating hair mask should be used around once a week during the warmer weather to prevent dry and brittle hair.

Once applied, leave the hair mask on for about 3-5 minutes before rinsing as usual.

While it’s incredibly tempting to wash your hair after a long day in the sun, experts recommend that you resist this urge over the next few months. Washing your hair daily over the summer can strip it of natural oils, making it extra dry.

Because of this, your hair will become more susceptible to damage and breakage, such as split ends. As the sun is already drying out your hair enough this summer, experts advise you to wash your hair every other day during the warmer months ahead.

Use sun-protecting products

It’s not just your skin that needs protecting this summer; intense UV rays can also significantly damage your hair and scalp.

A badly sunburnt scalp can result in typical symptoms of sun poisoning, such as headaches and nausea. To prevent this, it is essential to use scalp suncream when working on your tan over the next few months. Wearing a hat in the warm weather will also effectively protect your hair and scalp from any nasty sun damage.

After-sun shampoo products are also essential to pack with you on holiday this summer. The products contain UV filters, which aid rehydration after sun exposure, making them a necessary part of your summer hair-care routine.

To prevent these risks, it is recommended to wash your hair in cool, fresh water before and after swimming. Pre-soaking your hair reduces the amount of chlorine or saltwater it absorbs. Applying water directly after swimming also helps to rehydrate the hair as quickly as possible, which is essential after swimming in the sea.

It's also advised to try out a conditioning hair spray after swimming. This helps restore moisture to your hair, preventing split ends and breakage. You can also make your own conditioner spray at home by mixing fresh water with your daily conditioner, which works to restore healthy-looking hair as soon as possible.

Invest in a silk pillowcase

As the humidity rises, it’s natural for your hair to start feeling slightly frizzy. However, to keep the frizz under control, experts recommend using a silk pillowcase at night. Silk absorbs less moisture than other materials, preventing your hair from becoming dehydrated.

Zucchini and Mozzarella Bruschetta

“A tasty twist on the classic bruschetta adding zucchini and mozzarella creates a mouth-watering delight”

Method

Ingredients

500g zucchini, halved, sliced on an angle

2 tbs extra virgin olive oil, plus extra to drizzle

Juice of 1/2 a lemon

1/2 cup mint leaves, chopped, plus extra leaves to serve

4 thick slices mixed seed sourdough

1 garlic clove, halved

250g buffalo mozzarella ball, torn

Place zucchini in a bowl and sprinkle with salt. Toss to coat and set aside for 30 minutes to draw out excess liquid. Rinse, then pat dry with paper towel.

Heat oil in a large frypan over medium heat. Add zucchini and season. Cook, stirring occasionally, for 10 minutes or until softened and sweet. Remove from heat, drizzle over lemon juice and extra olive oil, and toss with mint leaves. Meanwhile, heat a chargrill pan or barbecue to high heat. Grill bread for 2 minutes each side or until charred. Rub hot bread with the cut sides of the garlic.

Divide mozzarella among toast. Top with zucchini mixture and mint to serve.

Ingredients

Gorgonzola, Mushroom and Leek Crespelle Bake

This vegetarian oven bake dish is full of rainbow colours and delicious flavours

15g dried porcini mushrooms

150g plain flour

3 eggs

300ml milk

250ml olive oil

3 leeks, sliced into 1cm rounds

2 garlic cloves, thinly sliced

1/2 bunch thyme, leaves roughly chopped

1kg mixed mushrooms, roughly chopped

240g ricotta

100g creme fraiche

1/4 cup (35g) hazelnuts, crushed

105g ciabatta breadcrumbs

100g Gorgonzola, crumbled

Method

Soak porcini in just enough boiling water to cover for 30 minutes. Drain reserving 1/4 cup (60ml) liquid, and roughly chop. Meanwhile, whisk flour, egg, milk and 1/2 tsp salt in a food processor until smooth. Heat 1 tsp oil in a non-stick frying pan over a medium heat. Pour 80ml batter into the pan and swirl to cover base. Cook for 1-2 minutes each side until golden and cooked through. Transfer to a plate. Repeat with remaining batter to make 9 crepes, layering each between baking paper to prevent them from sticking. Return the frying pan to medium heat with 2 1/2 tbs oil. Add leeks and cook, stirring occasionally, for 15-20 minutes until soft. Season. Transfer to a bowl to cool.

Heat 1/4 cup (60ml) oil in a large frying pan over a medium heat. Cook the garlic and two-thirds thyme for 1 minute or until fragrant. Increase heat to medium-high and add mushrooms and porcini, and cook for 10-15 minutes until light golden and liquid has evaporated. Season and add porcini soaking liquid. Set aside to cool.

Preheat the oven to 180°C and grease a 32cm x 25cm ovenproof dish. Add ricotta to the mushroom mixture and stir well to combine. Divide the mushroom mixture evenly amongst the crepes, then fold each crepe into quarters. Place folded crepes into dish, overlapping slightly.

Stir the creme fraiche into the leeks and spoon the mixture over the crepes. In a bowl, combine the crushed hazelnuts breadcrumbs, Gorgonzola and remaining thyme. Scatter over crepes, drizzle with remaining 2 1/2 tbs oil and cover with foil. Bake for 30 minutes, then remove foil and bake for a further 15-20 minutes until golden.

Ingredients

115g cake flour

5g baking powder

5g salt

3 eggs, separated

1 pinch cream of tartar

175g sugar

15g unsalted butter, softened

5g vanilla extract

125ml milk

For the topping:

500g strawberries

1 lemon

75g caster sugar

1 pinch of ground pink peppercorns

Method

Sift and combine all the dry ingredients, then rub the butter into the flour mix. Whisk the egg whites and sugar together until they form medium peaks. Combine the egg yolks and milk with the dry ingredients. Separate into equal-sized balls and bake at 180ºC until golden.

Quarter or roughly dice the strawberries, cover with the sugar, pepper and lemon zest and leave to sit for 15-20 minutes in the fridge.

Place a few of the shortcakes at the bottom of a bowl or on a large plate. Top with a dollop or two of whipped cream or thick yoghurt, cover with the fresh strawberries and drizzle with the strawberry syrup. Finish by crumbling a shortcake or two over the top.

For extra flair: Baste the halves of two peaches and sear in a pan with beurre noisette and a sprig of thyme on a medium heat. Serve on the side of the strawberry shortcake.

Hairspray The Musical

Redefining French Country Hospitality

Located just 45 minutes from Paris, hidden deep within a forest in the Chevreuse Valley, stands Abbaye des Vaux-deCernay – a former 12th-century Cistercian abbey which has been restored and reimagined as a country house hotel, marrying the spirit of a rural British estate stay with the refined gallic elegance typical of its owners; The Paris Society.

Echoing with the stories of nine centuries, the genesis of the Abbaye began in 1118, when a community of monks transformed the site, hidden within the forest, into a Cistercian Abbey.
