Self-regulation has become a bit of a buzz word in certain circles. What it means is the process by which we regulate ourselves – not rocket science but going one step further it means how we get ourselves from functioning with our ‘primitive’ or survival brain when there is a threat for example - to behaving in a calm and measured way, which is usually easy when we feel safe and secure.

Like almost everything in our body and brain things happen for a reason. When we are under threat lots of chemicals are released causing us to respond – usually in a fight or flight way. But in modern society, here in the Western world usually there isn’t an actual threat but a perceived threat, so we become aroused and emotional and our bodies are flooded with chemicals, even when the ‘threat’ is not real.

Think about when you are afraid, or extremely angry or sad. With a few exceptions, as adults we usually manage to calm ourselves down, though depending on the level of distress this may take a little while. We also probably all know that there are some people who find this a bit more difficult than others or some occasions when for other reasons we find it harder. It is thought that self-regulation is essential for health and happiness. It is the mechanism we use to soothe ourselves, calm ourselves and cheer ourselves up. It allows us to not just concentrate on immediate reactions but respond in a more planned way. But self-regulation doesn’t mean we should ignore our emotions, hard to do anyway, or never show or acknowledge our emotions. What it means is having good mechanisms to manage them, so we can use what they give us, remembering that emotions can be a great motivation to action.

How do we learn to regulate ourselves? Like any other skill it is learned. Look at a baby or toddler and you will see that they are not able to selfregulate at all. If they are hungry, tired, cold, or want comfort, they let you know. When they are in that state their heart rate is up they may be red in the face and there is no doubt at all they are not happy. What then happens, providing there is a caring adult around, is that usually they will pick the baby up soothe them and rock them and give them what they need, food or clean nappy etc.

Gradually when that is repeated hundreds of times neural pathways are formed and it means that over time most people learn to calm themselves. Though that process takes years.

Self-regulation as an adult Personality plays a part and we all have some situations where it is harder to regulate ourselves than others, for example we may find something causes a lot of anxiety if alone but if with others, especially people we trust, we may not be so anxious. Our ability to regulate ourselves may also depend on our physical condition, if we are in pain or feeling ill

or even if we are hungry or tired we may find it harder to regulate ourselves than we would at other times.

But almost every adult who can regulate has developed strategies that help them, and these vary depending on the emotion, but will often involve • Pausing for a moment BEFORE reacting to a situation

• Viewing difficult situations as a challenge that can be overcome

• Using specific calming strategies like mindfulness or deep breathing to calm yourself • Choosing to see the good in others

• Concentrating on what is good and going well, not things that aren’t

• Spending time with people that are trusted and talking about any problems or about feelings

• Understanding that thoughts and especially fears are not always accurate e.g. worries may rarely come to fruition

• Acknowledging emotions and identifying them before you begin to ‘regulate’ Developing Practice But in some ways the best way to get better at selfregulation is to practice. By that I mean not waiting for a situation when you must summon the strength to regulate yourself but building into your life and habits things that will help and it’s no surprise these are things that will have a beneficial impact on health and wellbeing in general. In short looking after your body and your mind, so, it’s back to healthy diets, getting enough exercise, having balance in your life so you aren’t always feeling stressed, and doing things that help you like having hobbies, spending time with people that are positive and share your values and making a determined effort to be grateful and optimistic. But it can also help to develop a regular practice where you still your mind. Learning to be in the present and focus on the here and now will help you be able to put a few minutes space between an event happening and then reacting to it. In essence this is the first step to effective self-regulation as an adult. Recognising and feeling the emotion but choosing the way we respond in a more rational and measured way. 1) Your comfort zone is anything but comforting – ensconcing yourself from your dreams for the sake of ‘comfort’ involves learning to expect the worst from life. This allows us to avoid disappointment. The sense of suffocation from living in your comfort zone (it practically charges you rent now) does more harm than good. Solution – Try something new: it could be as simple as going home via another route, buying different clothes, drinking different things, or dining at a restaurant you’ve had pinned for months. 2) You’re stuck in a rut – thumbing through your Facebook feed, you feel everyone is loving their best life but you. You know you should feel grateful for the things you have, but you feel everyone is speeding ahead in the rat-race of life.

or pick-up an instrument. Find new passions and interests to reinvigorate your daily life.

3) You look back on your life and feel you haven’t achieved anything – side-barring your own dreams and giving them a permanent residency on the backburner.

Solution – Get a life coach: welcoming someone who is armed with the tools you desperately need to hit the refresh button on your life – to offer you the guidance and strength to find your greater purpose in life and rekindle your aspirations. 4) You watch the days drift by– the feeling of disconnection and discomfort can make anyone feel misaligned from the daily rhythm of life. Playing it safe has become the go-to and wanting something more than what you have makes you feel uncertain.

Solution – Think of your dying day: what would you do on your final day on this Earth? Who would you see? What would you do? What do you want to have achieved? These questions allow us to figure what is important in our lives and set the goals to make this happen. 5) You always feel low-level bored with everything and have zero motivation to get going – the weather forecast might be sunny, but it always feels grey and overcast.

Midlife Madness

I love travel and I love food so one of my real pleasures is enjoying food from all over the world. I find it fascinating how people’s attitudes to food are very varied. When I go on holiday one of the things I hate is to find an ‘English’ fish and chip shop. I mean what is the point, there you are holidaying in another place, so embrace it and enjoy the cuisine on offer – or at least some of it. I have to confess that snails, frog’s legs, eyeballs or any reptile are definitely OFF my list, but I haven’t visited a country yet where there is nothing on the local menu that I can enjoy. In fact. many of my favourite dishes were first tasted when I was abroad, halloumi and spanakopita for example and while I have always enjoyed Madeira cake and yoghurt the idea of having them for breakfast happened in Turkey and Greece. I love the fact that we all have bread, but actually we all have different bread. There are so many different types, baguettes and naan or focaccia to mention just a tiny few which sums up what I love about the cultural differences in food.

What I also find interesting is having people from other countries staying with us and introducing them to some of our favourite or at least traditional dishes. Their responses can often be humorous, or irritating, depending how you look at it.

We introduced our current students to a traditional roast – their response was mixed. Obviously, nothing particularly new in meat and vegetables, but Yorkshire ‘pudding’ is a different kettle of fish (not literally obviously). Confusing not only in name - yes, it is a ‘pudding’ but yes, we eat it with our main meal! Then of course there was the comforting delicacy that is gravy. Yes, it is a sauce, sort of, but then it is different from other sauces because it is GRAVY. Imagine my shock when they

went to the fridge to get mayonnaise …to add to the gravy – what?

Then what about breakfast – I mean I like fruit and yoghurt, and pastries definitely have their place but to my mind nothing beats a full English – clearly, I don’t have it every day, it is a bit special isn’t it. But lately our visitors complain it is a heart attack on a plate! So, we try to accommodate by making a healthy alternative egg and ‘avo’ but that doesn’t take account of the fact that teenage boys, apparently from around the globe, don’t mix well with green and healthy. They say when they arrive that they eat anything, and they want to try British dishes, but I have learned that the translation of that in teenage speak is they like pizza and fried chicken, chips and coke! But of course, in common with British teenagers they also like almost anything chocolate, any variety of crisps, and almost anything processed.

The thing is that I want them to like our British food which, of course includes pizza and curry and a part of me feels a little let down when they weren’t rapturously delighted with our traditional offerings. We explained but didn’t eat, faggots, tripe, haggis and toad in the hole – another confusing name for a Frenchman who thought it was a variety of frogs legs!

I think many of us would be lost without pasta, which I didn’t taste till I was 18 – I did grow up in the North mind you – and all the other favourites we have included from other countries, but I also feel a bit sad that rice pudding and tapioca and even, spam fritters ( I do see why) Pease pudding and spotted Dick ( no I didn’t try to explain that one) are becoming extinct in many circles, but maybe it is just matter of time before they make a resurgence. I was delighted to notice on a menu the other day a fishfinger sandwich – now that really is a delicacy!

Naturally glowing, healthy and youthful looking skin often starts with your diet - even if you are using the most expensive anti-wrinkle or collagen boosting creams! We’ve asked the experts for top tips on eating your way to beautiful skin:

Firstly, how can food impact our skin? “Our skin gets everything it needs to stay healthy from the food we eat. This includes protein and vitamin C to build collagen, which gives strength and elasticity to the skin, vitamin A and zinc that help to combat acne, and those super-important healthy fats that help retain moisture in the skin to stop it becoming dry. “Things in the food we eat can also have a negative impact on our skin health. Additives such as flavourings, colourings and sweeteners often found in processed foods can add to the body’s ‘toxic load’ and contribute to dull, lifeless skin. Too much sugar in our diet can be our skin’s worst enemy. It can upset hormone balance, triggering breakouts, and in the long term it can speed up skin ageing too,” explains Nutritionist & Fitness Instructor, Cassandra Barns.

‘Sashimi’ your way to glowing skin “One of my favourite choices for your skin is itsu’s Mixed Sashimi (£9.99, www.itsu.com). It’s loaded with omega3 from the salmon, which, as well as helping retain moisture in our skin, helps control inflammation – a factor in skin problems such as rashes and acne. Wakame is rich in vitamins and minerals including manganese, a key antioxidant mineral to help protect the skin and ward off ageing. And because the whole meal is low in carbs, it won’t spike your blood sugar – so you’re avoiding any ageing and hormone-disrupting effects of blood sugar dips and peaks,” explains Cassandra.

Axe sugar to aid acne Sugar does not only affect general health but it can also ruin our skin. How? “Firstly, sugary and processed foods contain little in the way of vitamins and minerals that nourish and protect the skin. Secondly, sugar and refined carbohydrates (which are quickly absorbed, just like sugar) cause a surge of the hormone insulin, which can then increase your levels of testosterone, which in turn can contribute to breakouts and acne,” explains Dr. Marilyn Glenville, author of Natural Alternatives to Sugar.

Choose the ‘cabbage-family’ “Cruciferous vegetables are the ‘cabbage-family’ vegetables including broccoli, cauliflower, kale, red and green cabbage, chard, watercress and brussels sprouts. They contain lots of sulphur compounds, which can support detoxification in the liver (adequate liver detoxification is just as important as healthy bowel for getting rid of toxins). They may also be supportive for hormone balancing, especially in women, because they contain a substance called indole-3-carbinol that has been found to balance oestrogen levels. Therefore, if you are a woman who is prone to skin breakouts around your period, you may find it helpful to eat one to two portions a

day of these vegetables – but make sure you vary your choice so you don’t get bored,” explains Marilyn.

Perk up your skin with pumpkin seeds “These nutritional gems are excellent sources of zinc, one of the most important minerals for maintaining healthy, happy skin. It is thought that as much as 20% of the body’s zinc is stored in the skin, and it has a major role in growth and healing. Deficiency in this mineral is linked with acne; dry skin, dermatitis and poor wound healing,” explains Marilyn.

Forgo oily skin by cutting down on fatty foods “Try to avoid oily, greasy foods which can aggravate oily skin conditions. Cut out unhealthy fats in the likes of sausages, butter, beef, and fried food. Replace them with healthy fats found in foods like nuts, seeds, avocados, and fish,” suggests Cassandra. Ditch Dried fruit “Shockingly, dried fruit such as raisins and dried cranberries can be up to three-quarters sugar! So a 25gram serving – two tablespoons – can contain the equivalent of three to four teaspoons of sugar. If you like dried fruit, halve your serving and combine it with the same amount of unsalted nuts or seeds to get the sugar intake down and the protein and healthy fats up,” explains Cassandra.

Opt out of wrinkles with Ombar “If you thought chocolate was your skin’s worst enemy, think again! Raw cacao – the main raw ingredient used to make chocolate – is high in plant compounds called flavanols. These stimulate our body’s own antioxidant defences, and research suggests they have a protective effect for the skin, including against the effects of ageing and sun damage. But to reap the benefits, go dark – at least 70% cacao – and choose raw chocolate, which eliminates the roasting process that can damage those powerful flavanols. Blemishes ‘be gone’ with avocado “Avocado is a good source of vitamin E, which is thought to have several roles in skin health. Like vitamin C, it works as an antioxidant so may protect the skin cells against damage from free radicals. It is also thought to help protect the skin from UV rays, and have anti-inflammatory activity in the skin (inflammation is involved in skin rashes, blemishes and acne). Although avocado is relatively high in fat, the majority of this is healthy monounsaturated fat like that found in olive oil, and the omega-6 fatty acid linoleic acid. As we have already seen, omega-6 fats are helpful for preventing moisture loss from the skin; and monounsaturated fats may also have this benefit. On top of this, avocadoes also contain good levels of carotenoids, those same antioxidants that are found in the orange vegetables,” explains Cassandra. Summer Sizzlers to get you holiday ready and bikini confident:

Holiday preparation almost always includes waxing; legs, underarms etc. But my most popular summer holiday treatment has to be intimate waxing. Advanced bikini waxes are made for bikini season and leave the skin feeling super-soft, smooth and hair free for up to a month. These days we have become more adventurous with our downstairs defluffing requirements and treatments have advanced beyond the simple tidy-up bikini wax to specialist services like the Hollywood and Brazilian landing strip, removing pubic hair is fast becoming the norm. Most salons offer waxing but not all of them do it well. Intimate waxing shouldn’t be intimidating, and you'll want to find a therapist who's had specific training. I was trained by The Beauty Guru Sam Marshall who specialises in intimate waxing, as well as working with the beauty industries leading mentors and brands. We only use hot wax for intimate waxing, it’s a thick wax which is applied with disposable spatulas and removed using a finger to pull off the wax. Hot wax only grips the hair and not the skin so it’s excellent for sensitive areas. Like all waxing, it is uncomfortable but the treatment is very quick. And the more often you have it done the less painful it becomes, and the more you have it

done the more hair-free weeks you will have. Next we move onto lashes. Lashes are now officially part of today’s essential beauty regime. Pinterest, one of the world’s largest websites, has declared lashes as the front runner of this year’s beauty trends. My favourite lash treatment has to be LVL by Nouveau Lashes, this lash lifting treatment loved by journalists, influencers and celebrities worldwide, allows you to enhance your natural eyelashes, creating the appearance of added length, volume and lift, without mascara or extensions. Queen of Pop We catch up with the beautiful Poppy Delevingne who introduces us to her new Jo Malone London ‘Queen of Pop’ collection and talks bathtime, bubbles and Fleetwood Mac I wanted to spotlight my favourite thing in the entire world, which is bath time. So, we created bubble baths in some of my favourite fragrances and, in order to celebrate Jo Malone London’s art of Fragrance Combining™, incorporated candles and colognes for the perfect bath time package. Describe Queen of Pop in one sentence. Bath time for the bold and brilliant!

How did you come up with the colourful aesthetic? We were inspired by 60’s prints and pop art. We wanted to make the packaging super fun and playful which I think is perfectly captured with the polka dots, graphic black stripes and plenty of pink and gold! What makes the perfect bath? It has to be night-time. I always prefer to bathe in the evening. I draw a long hot bath, use lashings of Queen of Pop bubble bath play a little bit of Fleetwood Mac in the background, and have a candle burning (maybe three) and a rubber ducky. Preferably the Queen of Pop rubber ducky with black polka dots to keep me company. Perfection. Who is your favourite bath time partner? Without a doubt my husband James.

What inspired you to make the collection, and how long have you been working on it? I wanted to do something that capitalised on the creative momentum of Poptastic, my first collaboration with Jo Malone London, whilst keeping that sense of fun. It’s taken about 18 months of meetings and playtime to come up with the full collection and I am obsessed with the results.

Why did you choose these specific scents for bubble bath? We wanted the bubble baths to be particularly luxurious. I wanted the fragrances to create that indulgent, transportative feeling. Velvet Rose & Oud, Black Cedarwood & Juniper and Nectarine Blossom & Honey all have this sensual side and are also very relaxing.

What is it you love about the cologne collection? I chose the three colognes because they are my all-time favourites and I have a story and an attachment to each of them. When I first met my husband, when I was 21, he was wearing Amber & Lavender Cologne. He still wears it to this day. Red Roses was the first fragrance I ever wore at 18 and I like to go back to it from time to time, it holds some wonderful memories for me- it’s like my oldest friend.

Whilst Peony & Blush Suede is a new firm favourite. I love it because there’s something very feminine about it, but it also has a bit of an edge. Besides being my favourite threesome and that they look so pretty all together, I love that they are the smaller 30ml size. They are perfect to take away with you or have in your handbag to top up during the day. You could start the day with Red Roses and then add Amber & Lavender for a delicious night time fragrance . How do you recommend using the candles? They add an amazing layer of fragrance and atmosphere to bath time! But the designs are so striking they would equally look beautiful on any mantelpiece or bedside table. I chose to work with Basil & Neroli as it seems very British; a real London scent that somehow reminds me of wet pavements. Blackberry & Bay is again very British but also very sumptuous. And then the Grapefruit cuts through anything to add zingy freshness. How do you combine all of your products, how do they work together? We designed the collection with all these wonderful scents so as you can create your own bespoke indulgence depending on your mood. Firstly, I light an abundance of candles, so as soon as I walk into the bathroom it smells amazing and is all twinkly. Plenty of bubbles are a must, and then when my skin is all warm and soft, smelling glorious following my bath I add a generous spritz of cologne so as my scent lingers right into the evening.

Which other Jo Malone London scents would you recommend using with The Queen of Pop collection? All Jo Malone London fragrances are designed to be worn alone or combined with other scents – that is the foundation of the art of Fragrance Combining™. So, anything from Queen of Pop works beautifully alone or with existing products. My recommendation would be to hop into a Queen of Pop bath using Velvet Rose & Oud Bubble Bath and then use Tuberose Angelica Body Crème, then I would jump straight to Red Roses Cologne. All the roses – an English rose with all the roses, what a dream! If you were Queen for the day what would you do? What wouldn’t I do?! I would play sardines in Buckingham Palace and throw a festival in every single park – for free!

Pimm's POPS, which contain just 32 calories, will be exclusively available at nearly 700 Tesco stores across the UK. The move should please the UK's growing army of adult ice lolly fans as in the last year demand has grown by 10 per cent. Tesco ice cream buyer Sonia Morland said: “These refreshing ice lollies are a guilt-free treat and represent a glass of Pimm's in frozen form. “With the present heatwave showing no end we think this great tasting ice lolly is set to be a hit at BBQs for the rest of the summer.” The limited edition Pimm's POPS, which will cost £2.50 for a pack of two lollies.

Tickets Please Murder, Mystery and Mayhem on The Murder Express

ll aboard! It’s time to board the ‘Murder Express’ and be transported back to the grandeur of the 19th century and immerse yourself in a little murder, mystery and thrills.

A

Brought to you from Funicular Productions the ‘Murder Express’ is a theatre and dining experience, reminiscent of an Agatha Christie who dunnit type mystery, the only difference is you’re involved!

Once you’ve made your way past the mock up ticket office and onto the platform at Pedley Street Station, you’re transported back in time, to an era where trains were the main form of transport and where you can indulge in a steam train themed cocktail or two from the station’s ‘Seven-Sins Bar’. Cocktails for us were a Loco Motive (an intense raspberry blend with gin and a hint

of lemon) and The Conductor (vodka, elderflower, prosecco and a touch of lemon) – they were lush and easily drinkable, but we’d better keep our wits about us if there was going to be a MURDER!

Mingling with us on the platform were not only the other passengers but also the characters from the production including Frank, an East End Costermonger, trying to tempt us with his wares, Tilley, a music hall star, Vera, a widow in search of adventure and Cliff, a local antique dealer.

A few cocktails later, choice words between Frank and Cliff and a little flirting from Tilley and the conductor blows his whistle for us to board the train and begin our fictional journey to the town of Murder in France.

Once on the train we seat ourselves in the elegant dining carriage with its plush seating, period table lamps and atmospheric lighting that sets the scene perfectly, add to that a delicious menu designed by BBC One’s MasterChef 2016 finalists, Billy and Jack and we’re ready to begin our journey.

The story unfolds before our eyes as we enjoy three courses of delicious cuisine that consists of spicy mulligatawny soup accompanied by mini Indian spiced open cucumber sandwiches. Butler’s steak, with stuffed and pressed scallop potatoes and savoy cabbage. Followed by apple tart and clotted cream – a foodie’s dream, divine tastes along with perfect presentation - interrupted quite often by a little shouting, canoodling and Murder!

Alas my lips are sealed, apart from to say that it really is a fabulous evening, the food and production are amazing, something slightly different from the norm that’ll have you talking about it for days to come. There’s lots of opportunities for the audience to participate, an evening full of fun and laughter, plus maybe a few detective skills – the rest you’ll just have to get yourself along to Pedley Station and find out for yourself, who knows you may meet Hercule Poirot himself! Sausage Tortellini with South African Gala Apples “With a mixture of salty, sweet and sharp flavours, this dish is perfect for a family supper or a dinner party”

Ingredients

For the Pasta dough 280g of strong flour 3 free-range eggs Extra virgin olive oil

For the pasta filling 3 good quality pork and apple sausages 50g of freshly grated parmesan 1 free-range egg For the purée 1/2 a head of celeriac, peeled and chopped into chunks 1 South African Gala apple, peeled, cored and cut into chunks 50ml of single cream A knob of butter 1/2 a South African Gala apple 100ml of white wine vinegar Fresh sage leaves A few walnuts, roughly chopped Salt and pepper

Method

To make the pasta dough, tip the flour onto a work surface and crack the eggs into a well in the middle. Using a fork, whisk the eggs, slowly incorporating the flour until it forms a paste, then using your hands, bring the dough together, adding a little water if necessary, into a ball. Drizzle the work surface with a little olive oil and kneed for 15 minutes until smooth. Cover in cling wrap and leave on the side for 2 hours. After the dough has rested make the filling. Break the sausage meat into a pan. Fry over a medium heat until browned. Allow to cool, then transfer to a food processor with the parmesan and egg. Blend until you have a grainy mixture, then spoon out into a bowl and allow to cool. For the purée, boil the celeriac for 15 minutes until soft, add the chopped Gala apple and cook for a further 5-10 minutes. Drain and add to a food processor with the single cream and a generous pinch of salt. Blend until smooth then transfer to a small pan to reheat once the pasta is cooked. To make the tortellini, cut the dough in half (save the other half for another time) and either pass through a pasta machine or roll by hand, scattering with a little flour if necessary. Roll out until thin enough that you can see your hand through it but not so thin it will break. Trim the ends so you have a rectangle, then cut into equal 2x2inch squares. Add a pinch of the sausage filling to each square then bring the opposite corners together to make a triangle, squeezing out the air and sealing. Put your finger in the middle and wrap the two corners around your finger and press down to seal into a tortellini; repeat until all the squares are done. To pickle the apple, cut 1/2 a Gala into thin matchsticks and pop into a bowl with the white wine vinegar and a pinch of salt. Mix and set aside. Reheat the celeriac purée. Bring a large pan of salted water up to a hard simmer then gently drop the tortellini in. Cook for 2-3 minutes until they rise to the surface. Whilst they’re cooking, add the butter, sage leaves and chopped walnuts to a small frying pan and fry until the butter starts to brown and the sage leaves start to turn crispy. Gently drain the pasta. To serve, spread the celeriac and apple purée onto the plate, top with 5-6 tortellini per person. Drizzle with the sage and walnut butter and top with the picked apple. Mandarin Chicken and Cashew Asian Salad “A delightful, light salad that goes perfectly with summertime alfresco dining”

Ingredients

200g pot Nature’s Finest mandarin segments 2 tbsp rice wine vinegar 1 tbsp runny honey 1/2 tbsp soy sauce 1 tbsp sesame oil Pinch of salt 1 small garlic glove 1/2 red chilli 3 spring onions 1 head pink radicchio 1 carrot 1 cooked skinless chicken breast 50g cashew nuts, toasted 1 tsp black sesame seeds

Method Drain the mandarin segments, retaining 1/2 tbsp of juice. Place the juice in a small bowl and set the segments aside. Add the rice wine vinegar, honey, soy sauce, sesame oil and a good pinch of salt to the juice. Whisk with a fork. Set aside. Crush the garlic clove and chop the chilli, then add to the dressing. Finely slice the white parts of the spring onions and add to the dressing. Slice up the green section of the spring onions, and place in a large salad bowl. Wash and dry the radicchio and add the leaves to the bowl. Peel the carrot, then use the peeler to shave thin ribbons of carrot straight into the salad bowl. Tear up the chicken and add to the bowl. Add the cashew nuts, sesame seeds and mandarin segments. When ready to serve, pour the dressing over the salad and toss so that everything is well coated. Serve immediately. Pineapple and Coconut Cakes “These soft and fluffy cakes are just perfect for an afternoon treat”

Ingredients 100g Nature’s Finest pineapple, drained and patted dry 125g coconut oil 125g raw coconut sugar 2 eggs 125g plain flour 1 tsp baking powder For the icing 400g thick coconut cream 1 tsp maple syrup 25g desiccated coconut

Method Place the coconut cream in the fridge the day before you plan to make the cupcakes. Heat the oven to 170°C / 150°C fan. Line a cupcake tray with 12 paper cases. Place the pineapple chunks in the bottom of each case. Place the coconut oil and sugar in the bowl of a stand mixer, fitted with the cake paddle attachment. If you don’t have a stand mixer, you can mix by hand using a wooden spoon. Beat the oil and sugar for 2-3 minutes, until well combined and pale. Beat in the eggs. Once smooth, sieve in the flour and baking powder, and mix to combine. Spoon the cupcake mix into the cases, covering the pineapple. Carefully place the tray in the oven, and bake for 20-25 minutes, until the mixture is evenly risen and golden. Transfer to a cooling rack to cool completely. Remove the coconut cream from the fridge. Drain away any water. Place the thick cream in the bowl of a stand mixer and whisk up until fluffy. Add the maple syrup to taste. Ice the cupcakes, then finish with a sprinkling of desiccated coconut.

The World Cup seemed to go on for such a long time, but didn’t that gap between the conclusion of Russia 2018 and the start of the Premier League and EFL season take ages! I hate pre-season. It is a necessity for friendly games to take place, but nothing can replicate the competitive nature of a league game or a cup fixture. At Peterborough United, we spent a week out in Portugal where we played two fixtures with different qualities. That is what pre-season is about, finding an opposition that tests you in different ways. I am writing this column prior to the transfer window closing, but I have to say at this moment in time I am stunned by the lack of activity across the leagues. Aside from Liverpool in the Premier League, who have recruited well and invested plenty into their squad to build on last season, there hasn’t been too much movement. At Peterborough, we have been the biggest mover with 14 in and 14 out but in the EFL a lot of teams have waited a while before making their moves. When you have a big

turnover of players, it can take a while to gel, but I have already seen a togetherness in this squad and hopefully that will bode well for the future.

There was a lot of discussion during the summer about VAR and in the main I thought it worked really well out in Russia. Of course there are going to be teething problems and we saw one or two decisions that were controversial, but it has to be good for the game to use the technology that is available. The challenge now is to adapt the system for the Premier League and the EFL because we are just as important. It will take time, but I think it can be done. It is the same with goal-line technology. Anything that helps the officials reach the right decision gets a thumbs up from me. Here's to great football

Concours of Elegance

Aston Martin’s at the

n the 70th anniversary of the very first Aston Martin DB-badged models, the Concours of Elegance at Hampton Court Palace will be hosting a display of some of the finest Aston Martins ever produced. From 31st August – 2nd September, over 100 icons from the legendary British marque will be on display, including four very special examples in the Main Concours.

Chief among them is a 1967 Aston Martin DBSC by Touring – the only road-going version in existence. Only two cars were built by Touring as a potential replacement for the Aston Martin DB6, and this lefthand-drive 4-litre, straight-six powered rarity comes finished in Dubonnet Rosso paint, with a tan pigskin interior.

Also on display is a 1937 Aston Martin 15/98 Long Chassis Tourer by Bertelli – probably the best example of this rare and interesting model in the world. One of only 24, the four-seat luxury touring car was designed as a departure from Aston’s racederived sports cars. The vehicle presented at this year’s Concours has gone through a comprehensive restoration by pre-war marque specialist Ecurie Bertelli, to bring it up to Concours standard. Concours of Elegance will also be playing host to the ‘Royal Aston Martin’, one of the first six Aston Martin DB2 DHCs, produced in 1950 and bought by Prince Bertil of Sweden. The car performed in the parade lap at the 1951 Le Mans 24 Hours race, accompanied by Aston Martin legend David Brown.

A DB5 Convertible will be appearing in the Main Concours line-up as part of Concours of Elegance’s broader 70th anniversary celebrations of the first DB-badged Aston Martins. The exceptionally stylish and rare open top DB5 represents one of the small number of models produced in Newport Pagnell, and this example is one of just 83 right-hand-drive cars ever built. To cap it all off, the DB 70th anniversary celebrations will include a gathering of around a hundred Aston Martin DB-badged vehicles in the beautiful gardens of Hampton Court Palace, collated with the

help of the Aston Martin Owners Club. The show-stopping parade of vehicles will include an example of every DB model created from the ‘DB1’ through to today’s DB11. But the Aston Martin focus doesn’t end there, with a strong presence from the Aston Martin factory, including a display stand featuring the very latest models. Aston Martin specialists Nicholas Mee & Co will also be bringing along examples of their finest stock as part of the Concours of Elegance’s ‘Specialist Showcase’. This year’s event is the largest and most diverse running yet, not only featuring one of the most incredible collections of vehicles ever seen in the Main Concours display but also a number of other special motoring features still to be announced.

The Desert Palm, Dubai ounging by your own private pool, in the mid-morning sunshine, hidden away from the outside world in a little haven of peace and tranquillity, is exactly how it feels when you stay at The Desert Palm Hotel in Dubai. Just minutes away from the airport, and a mere 15 minutes from the buzz of Dubai, this intimate boutique hotel is set amidst a 160-acre polo estate, complete with over 400 horses and with just 38 luxurious rooms, suites and villas, it is just perfect for a honeymoon or romantic getaway.

Some rooms have views over the polo fields, which is a truly magical experience, you can sit on your own private terrace, a glass of chilled champagne in your hand gazing out over the fields as a polo match takes place, it really is spectacular. Not only did we have these views we also had our own private courtyard complete with pool, sun loungers, dining area and outdoor rain shower and that was just the outside. Inside is elegantly styled with a vast living space, complimented with dark wood, marble floors and neutral surroundings. A small kitchen area complete with a Dallmayr Coffee machine, JING tea selection and a fully stocked minibar completes the living space. The same neutral and dark wood tones carry on into the bedroom and the crisp white sheets add that extra bit of luxe. The bathroom is marble, with his and her sinks, a large bath and of course separate shower - big enough for a whole family to fit!

All rooms in the villa have floor to ceiling sliding doors so you can laze in bed, on the sofa or in the bath and just gaze out over the pool.

And laze we did, not inside, but outside in the gorgeous sunshine, dipping in and out of the pool, until it was time to walk through the beautiful hotel gardens to Epicure, the brasserie style restaurant, that overlooks the shimmering turquoise waters of the infinity pool, to indulge in a Desert Palm Jewel Afternoon Tea. A selection of the most delicious, fresh sandwiches, that included grilled vegetables on a brioche bun, sundried tomato and artichoke cheese mousse on white bread and home smoked salmon on a bagel and then there were the mini French pastries - mini doughnut with custard stuffing, fruit mousse cone, fruit tartlet and of course freshly made scones with jam and clotted cream. Not only did it live up to its name and look like a jewel it tasted like one too, and as for service – it was impeccable. Epicure not only offers afternoon tea but also all-day dining. Whether it’s a la carte breakfast, or brasserie-style classics that include artisan cheeses, home smoked meats, wood fired pizzas and luxurious pastries and desserts. Could it get any more perfect? It certainly could. Dinner was served in Rare, Desert Palm’s signature dining restaurant. Seated on the outdoor terrace overlooking the retreat’s polo field, proved to be a memory-making romantic dining experience.

The food was divine, a tasting menu with such things as seafood ceviche, pumpkin gnocchi and Norwegian salmon all served with matching wines recommended by our highly knowledgeable sommelier – textures and tastes were a pleasure on the palette and the ambience was magical. A meal here is one to take your time over, savour each mouthful as you gaze in the distance at the glittering Dubai skyline.

Dessert was just as delectable, a baked marble cheesecake that melted in the mouth, followed by artisan cheeses washed down with a glass of port.

Walking back to our villa, it’s hard to imagine you’re in Dubai; it is just so peaceful and serene, a real Arabian hideaway that we just couldn’t get enough of, and if you feel like escaping all this wonderful serenity and indulging in a little retail therapy in one of Dubai’s many designer malls, then it’s only a short 15-minute car ride away.

Peace and serenity isn’t just limited to lying by the pool or in your villa, there’s also Samana spa, a welcoming haven of relaxation, the spa offers a selection of classic treatments from facials to massages. My favourite was the Samana Aromatherapy Signature massage which included a special blend of essential oils being massaged into my skin, leaving me feeling completely rejuvenated . The Desert Palm is said to be one of the finest hotels in Dubai, and we can see why – it ticks all the right boxes and more – from the accommodation, to the polo fields to the exquisite cuisine, this really is an Arabian dream, we couldn’t love it any more than we do. Having recently watched national treasure Jane MacDonald on her epic voyage on Silverseas luxurious Silver Muse in South America it bought back fond memories of our own Cruise a few years ago on Silversea’s Silver Whisper.

We flew to Buenos Aires, a City which I knew very little about so decided to have a few nights there to explore. What a rich history this fascinating and vibrant place has. The Paris of South America is alive, and we loved it.

We took a guided city tour with our own English-speaking guide which was invaluable. He showed us the colourful history of the various quarters, each one with its own distinct character. We were fortunate enough to visit San Telmo on Sunday, so the famous antique fair was in full swing, fascinating. One of the iconic sights of this area are the Tango Dancers who set their own impromptu stage on street corners and pavements where they place a CD player on the ground and start dancing! What better way to enjoy an ice-cold beer. In La Boca neighborhood we saw the colourful ‘shacks’ of The Camonito which reflect the areas early immigrant days.

The Casa Rosada synonymous with the reign of the infamous Perons is a fascinating stop and I can still recall seeing old news footage of Eva Peron waving from the Balcony. The Evita influence is still evident, it gives the City a very personal edge and a visit to the Recoleta Cemetery to see her grave is surprisingly moving. We ate at the newly reclaimed and modernised Puerto Moderno at a quayside Restaurant where the steaks were the size of a Sunday Roast, the red wine was delicious, and the bill was extraordinarily cheap.

Buenos Aires is worth a visit in its own right, it felt safe and had so much to explore, I would go back in a heartbeat. However we only had 3 nights there before boarding our luxury Cruise ship Silver Whisper for a week as we plied our way to Rio de Janeiro.

We stopped in several beautiful beachside ports en route including the Uruguayan Capital of Montevideo. Famous for the scuttling of the German Battleship Admiral Graf Spee during WWII, whose anchor can still be seen in the Centre of the Port. Here we experienced the extraordinary lively Mercado Del Puerto which is an old port Market filled with colourful Steakhouses, Stalls and Churrascaria. Delicious, buzzing and fascinating

alking into The Landmark London Hotel, you can’t help but think you’re a Royal Princess from days gone by, with its sophisticated style and lavish attention to detail this hotel is ranked amongst the finest of the Capital’s leading luxury hotels, having a distinctive style and ambience that makes it unique and elegant.

Complete with its own clock tower, the hotel is indeed as iconic as its name suggests. Having originally opened its doors in 1899 as The Grand Central Hotel – The Landmark London today still combines classic British elegance and grandeur with deluxe facilities.

Walking through the doors, the timeless luxury hits you, with attention to detail second to none, and the Jewel in the Hotel’s Crown being The Winter Garden, a stunning eight storey high glass Atrium of marble column, wrought iron lanterns and palm trees all housed within a glass roof that allows the outside in. The Landmark London boasts some of the largest hotel rooms in the capital, and we were lucky enough to be staying in the luxurious Marylebone Suite, comprising of an elegant and expansive bedroom area with frosted French doors discreetly separating it from the lounge. Decorated in soft hues of greys and neutrals, with historic pictures on the walls and bold cushions featuring elephants as accents on the crisp white bed linen, this was luxury at its best. The lounge with its feature fireplace, antique brass and gold

accessories, executive desk and of course flat screen smart TV (there’s one in the bedroom as well) has you feeling you are in a luxury apartment not a hotel room.

The bathroom tempts you to relax for hours in the deep bathtub with a selection of full size Molton Brown toiletries to choose from (my favourite, I can just take the lid off and sniff them all day – weird I know!) and soft white fluffy monogrammed towels to wrap yourself in. Back in the living room is the ever important (well it is for hubby as he’s Italian) Nespresso coffee machine!

Within minutes we’d changed into the cosy robes and slippers and were curled up on the sofa, sipping champagne and luxuriating in how the other half live. It is the thoughtful touches that make a hotel stand out and The Landmark London are very good at these, from an umbrella for rainy London days to a fresh fruit platter, 24-hour room service a complimentary newspaper and even an overnight shoeshine.

Dinner is served in the atmospheric Winter Gardens with predinner drinks being enjoyed in the aptly named Mirror Bar. Created in a style reminiscent of the hotel’s Victorian heritage and finished with a selection of decorative mirrors adorning the walls, you almost feel that Hercule Poirot is going to come hurtling in trying to solve a murder!

Dinner for us though, was The High Palms High Tea, a new dining concept the hotel has introduced until the 2nd September, a twist on their classic, awardwinning Afternoon Tea. High Tea differs from Afternoon Tea in that it’s served as a more substantial meal often over three courses, that’s similar to dinner. Our High Tea was divine, beginning with a glass of rose champagne followed by starters of sandwiches of lobster and prawn cocktail, pimento humus and courgette, and Cajun spiced chicken. The mains were a warm mezze that included a feta, spinach, red onion and olive quiche, chicken, lamb with couscous and pomegranate, falafel with hummus and an Arabic salad with flatbreads and tahini, all dishes were presented like a work of art and tasted utterly delicious. To accompany the High Tea, not only is there an extensive tea list, there is also iced tea, which in my opinion compliments this High Tea perfectly – Pomegranate and Lime iced tea was my choice, so refreshing, it was like having a cocktail (minus the alcohol), hubbie chose the Chamomile, Strawberry and Orange cold brewed tea, which proved a big hit.

Dessert was a trio of sticky toffee pudding, topped with clotted cream, passion fruit, mango and ginger cheesecake, and strawberry and mint tartlet (all in miniature form), such an array of tastes and textures on the palette a real dessert delight.

After dinner we retired to our suite for what can only be described as the best night’s sleep awakening feeling refreshed and ready for the day ahead. Breakfast was another individual delight. Again, served in The Winter Garden, but this time buzzing with breakfast meetings, families and couples, thus creating a completely different atmosphere from the night before. Bright daylight streamed through the glass atrium creating a feeling of eating outside on a sunny day.

Different displays of perfectly prepared breakfast options greeted us with something to suit even the fussiest of palettes ranging from a sumptuous spread of freshly baked Danish pastries and breads, fruits, granola and organic porridge, meats and cheeses, salads including asparagus and salmon (yummy), scotch eggs (just as yummy) fresh smoothies and my favourite a small pot of guacamole with salmon, I could have sat and ate pot after pot of this all day and then there’s the made to order breakfasts that includes full English, eggs Benedict, and Belgium waffles, you really won’t go away hungry from a breakfast at The Landmark London, it really is a truly indulgent end to a momentous 5 star stay at this historic hotel. War Horse Gallops back into the Theatre The National Theatre’s acclaimed production of War Horse, visits Milton Keynes Theatre this September and runs from Wednesday 19th September to Saturday 6th October 2018.

The tour of War Horse coincides with the Centenary commemorations of the end of the First World War and follows the production’s enormously successful tour of the UK and Ireland in 2013-2014. War Horse, which has been seen by over seven million people worldwide, has won 25 awards including the Tony Award for Best Play on Broadway. Directed by Marianne Elliott and Tom Morris, Nick Stafford’s adaptation of Michael Morpurgo’s remarkable story of courage, loyalty and friendship, about a young boy called Albert and his horse Joey, set against the backdrop of the First World War is the most successful play in the National Theatre’s history. It features ground-breaking puppetry work by South Africa’s Handspring Puppet Company, which brings breathing, galloping horses to live on stage.

War Horse received its world premiere on 9th October 2007 at the National Theatre, where it played for two seasons before opening at the New London Theatre in March 2009. Since then, War Horse has been seen in 97

cities in 10 countries, including productions on Broadway, in Toronto and Berlin, with touring productions in the UK and Ireland, North America, the Netherlands and Belgium. A Chinese-language production opened in Beijing last year, and is currently running in Shanghai.
