4 How lucky have we been with such glorious weather, let’s hope it continues through the rest of the summer. August is the month when we’re all in holiday mode, whether it’s just taking some me time, jetting off for a weekend or a two-week indulgent beach break, it doesn’t matter as long as you manage a little R&R – we certainly did when we took a little break to Malta, staying within the 16th century fortress wall of Cugó Gran Macina Grand Harbour Hotel, turn to page 53 to read our full review.

Summer is also a time when we all make the most of outside living, it’s when we decide to pour ourselves a chilled glass of wine and just enjoy. It’s an extension of our indoor living space, and most of our dining is done alfresco, we have some great recipes (page 38) that are perfect to serve to family and friends this summertime. Spot the ‘Right’ Time

For all of us there are some things that just happen and other things that we plan, and then there are things that we might ‘want’ to do or think that we will do but we somehow tell ourselves that we need to wait for the right time.

But what exactly is the right time and how are we to know when to wait and when to just take action? Of course, it always depends on the situation – if you are struggling with your health it may not be the best time to take on a new challenge – but even then, depending on the issues, a new challenge could be just what you need. It is very individual and very circumstance dependent this notion of a right time. So, while there might not be hard and fast rules, as always there are probably a few guiding principles.

How Important is it to YOU? Some things are so important to us that timing becomes secondary. We are often prepared to respond or react to what happens. If it is something that we have hoped for then that is more important than timing. So if you’ve had your eye on a particular home that then comes up for sale or rent then most people would just jump in, even if the timing wasn’t what you’d call perfect. If it is a chance of promotion that you’ve waited for then similarly often you’d would jump right in – unless there were very compelling reasons not to. On the other hand, is it something that others have made you feel you should do or want then that is an entirely different situation and really requires us to think about why we may have thought we wanted to do it. If it is something that you are not so bothered about then unless the time felt just right many people may be more reluctant to take a risk and would therefore give more consideration as to whether or not the time was right at that moment. One good way of noticing how important something is to you is to see how you’d feel if you imagined that you didn’t do it. If you wouldn’t feel bothered, then it might not be something you would put yourself out for.

The Peace Principle When faced with decisions it can often be useful to ‘listen’ to both your body and mind. How does the decision feel? Is it something that makes you so excited that it keeps you awake at night? How would you feel if you didn’t do it, as above? This

can be helpful in knowing if its right. And if you decide to do it – whatever it is – do you feel at peace or do you feel a nagging doubt? None of these ideas give categorical answers BUT they can be helpful in making decisions that might be tough. Both our body and subconscious can be helpful.

Is it Something that you Know you will do Sometime? Often we can have ideas of things we’d like to do and we can keep on putting them into the future, and the fact is that for some things there may never be a right time. The right time is simply when we decide we are going to do it. The only thing to be wary of is not to keep putting it off. If it is something we really want to do, then we ought to ask ourselves ‘why not now’, every so often. It is quite usual for people to feel apprehensive, or fearful about exciting things, even if they are things that we have dreamed of, but if we really want to do it then there will come a time, however right or not, that we simply jump right in. Has the Right Time Passed? There are sometimes things that we think we want to do that are based on our situation at the time. If our situation changes then sometimes our desire to do whatever it was changes as well. For example, some people may decide to go travelling when they leave university, then find they are offered a dream job and somehow those previous plans may take a back seat. Many people can identify with some plans that have been in their mind but then the practicalities of life with children, for example, mean they go off our horizon, at least for a time.

Life is all about embracing change and constantly adapting to our situation – however there is also an element of us creating our own future. If we have a dream, then it is up to us to make it happen. Yes, we can wait around for the right opportunity to land on our lap BUT the chances are that may never happen so if something is important then it is up to us to make it happen. So if you have a future that you dream of then the only person who really can make that happen is YOU and you can start today, there is no reason to wait any longer for the ‘right time’. Midlife Madness There are to my mind all sorts of widening gaps, the ‘gap’ between when I was born and now and the ever increasing gap between the size clothes I’d like to wear (but the gap round my waist is too big) and the size I must wear to avoid those gaps. But the gap I want to talk about this month is the everwidening gap between my expectations, generally not unrealistic in my view and the reality I am faced with in all sorts of situations. Let me tell you more.

When I am asked to make an appointment online, I can do this. I may be advancing in years but I’m as techie as anyone that isn’t techie for a profession, so I expect to be able to make said appointment. Not unreasonable surely? Why have a system if it doesn’t work? But for both a utility supplier and a hospital this has been completely farcical. It was simply impossible with the utility company, so eventually I had to ring them (there lies another tale of irritation that I won’t bore you with now) then to add insult to injury they tried to tell me that I wasn’t a customer – half an hour later they acknowledged that I was but they had taken my name down incorrectly!!! With the hospital actually it seemed to go smoothly and I was thinking what a great system it was but then I got the confirming letter – you’ve guessed it – it bore no relation to the appointment I had actually made – different day different month and actually different place!!

Then there is the expectation that people will deliver the service they advertise – or at least tell you if they can’t, but a fifty five minute wait in the rain (even if with an umbrella) for a taxi that asked was I ready when I phoned, so they would come immediately doesn’t seem OK. During the various calls I had one operator actually said –“you didn’t leave us your number so we couldn’t

call you to tell you your car hadn’t been dispatched” as if it was my problem, so I did venture to suggest that as I was calling form a mobile to a mobile the chances were my number would show up – they did agree that was the case but somehow it still seemed to be my problem! Until they actually picked me up – then it was all theirs – poor driver!

I must state that travelling by train quite a bit I have adjusted my expectations, which were broadly that you paid for a seat – emphasis on the word seat, that trains ran on time and stopped where they said they would all of which have been proven to be completely unrealistic expectations, hence my adjustment down. Sadly after a few terrible car journeys my expectation of travel by car may need similar adjustments, roads are really more akin to huge car parks if you are south of Watford! But the most puzzling gap is between my expectations of myself and my reality. I’m aware I’m getting older, obviously, but I expect to still be able to do all the things I have enjoyed doing up until now, but I must confess I find some activities increasingly challenging. And I’m not talking triathlon or marathons type activities but rather things like getting out of low cars, drinking more than 2 glasses of anything vaguely alcohol without making a complete idiot of myself and even applying makeup! Darn it with varifocals both eyeliner and lipstick are a challenge I used to think older women just didn’t care – now I realise they just can’t blooming well see. The weird thing is the wrinkles, I can see them alright! You’d think nature would give us hand and at least let me labour under the illusion that I don’t look a day over 40! So, my expectation of stylishly sliding into my dotage is probably going to need some adjustment too!

Delectable Dining at

Cedar Restaurant

ocated just outside of London in the heart of Buckinghamshire is the recently opened The Langley, a Luxury Collection Hotel that seamlessly blends historic country manor grandeur with modern convenience.

L

Set within a former royal hunting grounds, the hotel oozes historic splendour and elegant luxury, the perfect place for a staycation, but it wasn’t a stay that had brought us to this beautiful hotel it was the food. Occupying a grand and bright space within the historic Main House and offering expansive views over the grounds and serpentine lake, is Cedar restaurant, named after the Lebanon cedar tree at the front of the hotel and showcasing the finest British fare, alongside natural, seasonal produce sourced from European markets.

First an aperitif in The Churchill Bar, reminiscent of a gentleman’s cigar lounge, surrounded by floor to ceiling bookcases, atmospheric lighting and of course a portrait of Winston Churchill. An intimate retreat serving a curated selection of fine spirits, cognac and cocktails, the ideal place for us to enjoy the hotel’s signature cocktail a Langley Spritz, a refreshing combination of sherry, jasmine tea and rosemary liqueur – a definite hit. The Cedar restaurant is a stylish, elegant space, complemented with neutrals and greys with added hues of gold and green that shout sophistication and comfort.

The chef had devised a tasting menu for us so we could get a feel for most of the dishes on the menu. Beginning with appetisers of lobster and beetroot, sandwiched between two thin wafers, this literally melted in the mouth, as did

the wholemeal cracker topped with burrata and pickled celery, a definite explosion of textures and flavours, paired perfectly with a light Italian wine.

Roasted parsnips, nashi pears and spiced almonds was an intriguing delicious dish and the seared scallops in a coral butter sauce served with confit lemon were cooked to perfection. The sea trout with pickled damsons and butter milk was incredibly delicate and light and the veal sweetbreads, with barbucine, pomegranate and black garlic was a work of art not only on the plate but also on the palette.

Service here is attentive and knowledgeable and the wine pairings were excellent. Good food and great service combined is the basis of a good restaurant and so far we couldn’t fault either.

Next came the snow crab risotto with pistachio, asparagus and lemon peel, this was a real show stopping culinary delight for me and needless to say my favourite, although the Trenchmore Sussex beef short ribs were a close contender, the meat literally fell apart in the mouth it was so tender.

The lemon-miso charred stone bass, was wrapped in a charred burnt outer layer that had to be unwrapped and scooped out, utterly genius and of course delicious. It’s evident from all the dishes that a lot of thought has gone into each and every one of them, ensuring flavours complement each other, textures and tastes amalgamate together effortlessly, the ingenuity and innovation of a chef whose main focus is on bringing great food to his customers. Dessert followed with a dreamy peanut and chocolate cake served with sesame & miso cream, this was heavenly and the Mille feuille, almond mousse, with a peach and fennel compote was just as appetising, although both dishes looked far too pretty to eat! The restaurant follows the best culinary principles, excellent quality ingredients, honest cooking and first-class service. The food was authentic and flavoursome, the perfect location for a date night, special occasion, or family gathering - I’m already planning our next visit. Salmon and Cashew Pad Thai A quick summer supper, that’s great for any alfresco dining this summertime

Ingredients

200g rice noodles 1 tbs peanut oil 2 large salmon fillets, cut into 3cm pieces 200g snow peas, thinly sliced lengthways 1 carrot, peeled, cut into matchsticks 1 bunch baby bok choy, thinly sliced lengthways 1 long red chilli, seeded, thinly sliced 1/2 cup (125ml) pad Thai paste 2 eggs, lightly whisked 1 cup (65g) bean sprouts 1/2 cup coriander leaves 1/2 cup (75g) toasted cashews Lemon wedges, to serve

Method Place noodles in a heatproof bowl. Pour over boiling water and set aside for 5 minute to soak. Drain well. Heat half the oil in a wok over a high heat until smoking. Add salmon and stir-fry for 2-3 minutes or until golden brown and just cooked through. Transfer to a plate.

Heat remaining oil in wok over a medium heat. Add snow peas, carrot, bok choy, chilli and cook for 1 minute. Add the pad thai paste stir-fry for 1 minute. Make a well in the centre, add the egg and stir-fry for 1 minute or until egg is almost cooked. Add noodles, salmon, bean sprouts and noodles; stir-fry for 1 minute or until well combined. Remove from heat. Add coriander and cashews and toss to combine. Serve immediately with lemon wedges.

Enchilada Zucchini Boats

Ingredients

1 tbsp olive oil 1/2 a sweet onion 1/2 red bell pepper 3 cloves of garlic, minced 1/4 tsp cumin 1/4 tsp dried oregano 1/4 tsp paprika 1/4 tspof salt 15oz can of black beans, drained and rinsed 3 medium zucchinis 1 1/2 cups of enchilada sauce 1 – 2 cups grated cheese (optional)

Method Pre-heat oven to 400F / 200C / Gas 6 and lightly grease a baking dish. Prepare the zucchinis by cutting them in half long ways and gently scooping out most of the inside and discarding. The shell of the zucchini should be about 1/4 inch thick once the insides have been removed. In a skillet over a medium heat, heat olive oil and add in the onion and pepper to sautĂŠ for 5 minutes. Add in garlic and spices and cook for an additional 2 minutes. Add the black beans and cook for about 3 more minutes until the black beans are heated through. Take off of the heat. Dividing evenly, spoon the mixture into the zucchinis and place them in the greased baking dish. Top the zuchinnis with the enchilada sauce. Sprinkle the cheese and bake for 30-35 minutes at 400 degrees.

Strawberry & Watermelon Shortcake Summer was made for this dessert it’s so delicious, you’ll definitely have more than one slice

Ingredients

2 cups cubed watermelon, divided 1 cup strawberries, hulled and quartered 1/2 cup sugar For the Biscuits 2 cups strong flour 2 1/2 tsp baking powder 1 tsp salt 1 tbsp + 2 tsp sugar 1 1/2 cups + 2 tablespoons double cream For the Whipped Cream 1 cup whipping cream 1 tsp vanilla extract 3 tbsp sugar

Method

In a food processor, combine 1 cup of the watermelon and sugar. Mix until smooth and transfer to a large bowl. Add the quartered strawberries and remaining 1 cup cubed watermelon, toss to combine. Cover with cling film and leave for 30 minutes to 2 hours. Meanwhile, make the biscuits. Preheat the oven to 425F / and line a baking tray with parchment paper. In a large bowl, whisk flour, baking powder, salt, and 1 tablespoon of the sugar together. Add 1 1/2 cups of the cream and stir just until the dough comes together. (It will be ragged at first but will smooth out as the dough is kneaded.) Turn dough onto a lightly floured surface and gently knead until the dough is mostly smooth. Pat into a 3/4-inch-thick round. Using a circular biscuit cutter cut out 3 or 4 rounds in 3-4 inch circles and place them on the baking sheet. Bring the scraps together and pat out to make more biscuits. Repeat until all the dough is used. You should end up with 6 biscuits. Brush the tops of the biscuits with the reserved cream and sprinkle with the sugar. Bake the biscuits for 15 minutes or until golden brown on top. While the biscuits bake, make the whipped cream. In the bowl of an electric mixer, combine the whipping cream and vanilla. Beat at medium high speed until soft peaks form, then, with the mixer running, slowly add the sugar until the soft peaks become slightly firmer. To assemble the shortcakes, cut the biscuits in half. Place the bottom half on a plate and top it with whipped cream, followed by a spoonful of the strawberry-watermelon mixture. Cover with the top half of the biscuit and top with one last scoop of cream and strawberry- watermelon mixture. Serve immediately.

English Summer Raspberry Tart Whittlebury Park’s Head Pastry Chef, Ben Clark is this month sharing a recipe using seasonal raspberries combined with a rich crème patisserie filling.

Method:

Ingredients:

Crème patisserie: 300ml whole milk 3 large egg yolks 120g sugar 17.5g plain flour 2 drops vanilla essence Sweet Pastry: 500g plain flour 250g butter 200g icing sugar 1 whole egg 2 large egg yolks

For the crème patisserie separate egg yolks from whites, then place the milk and vanilla essence into a pan and bring to the boil. Put the yolks into a bowl and mix with sugar and flour. Pour milk over the egg yolk mixture and combine. Transfer back in to the pan and keep cooking until the mixture is a thick custard consistency. Chill and save for later. For the sweet pastry, mix flour, icing sugar and butter until incorporated, add the eggs and mix until dough has started to form. Take out of the bowl and knead until a smooth dough is formed. Chill in the fridge for around 30 minutes. Using 4 x 8cm tart rings, roll out the pastry thinly, and tease into the tart ring. Repeat until all 4 x 8cm tart rings have been lined. Using cling film, double line and make a little bigger than the tart and place into it either baking beans or rice. Bake In the oven at 320F / 160C / Gas 3 for 12-15 minutes. Once baked remove rice or baking beans and bake the inside until fully cooked. After removing from the oven, leave to cool. Using a piping bag, pipe the crème patisserie into the cooled tart shells and flatten off with a pallet knife. Finish by decorating with the fresh raspberries.

*You can always use frozen raspberries as an alternative to fresh for extra convenience, and serve with a scoop of sorbet, Chantilly cream or clotted cream ice cream.

An Italian Twist

fternoon Tea, one of our favourite pastimes, a quintessential English tradition and one that is now offered in all sorts of curious guises has now come to The Sharnbrook Hotel in Bedfordshire, adding a quirky twist they are bringing to your palette ‘The Vesuvio Italian Afternoon Tea’.

As the name suggests there is a definite Italian influence, the finger sandwiches and mini cakes have been replaced with traditional Italian favourites such as bruschetta and tiramisu.

Our experience began with a cool glass of prosecco (no afternoon tea is complete without accompanying refreshments, either a wonderfully warm cup of tea, glass of bubbles or both) as we looked over a menu that was full of Italian savoury and sweet delight, all served with a choice of different teas or Italian coffee, a combination that was definitely sent to tempt our senses. The food certainly didn’t disappoint with everything freshly prepared - the chicken mayonnaise & spring onion panini, being a particular favourite. An amalgamation of tastes and textures followed with the other paninis which included, Parma ham, mozzarella, tomato & basil as well as smoked salmon, arugula and cream cheese.

Bruschettina, toasted Italian bread topped with chopped tomatoes, basil, onions and olive oil was a mouth-

watering array of flavours and the homemade arancini was just like Mamma makes.

After devouring our savoury selection, it was time for the sweet treats, all creatively designed to keep with the theme. Classic tiramisu along with limoncello posset were both presented in miniature glasses, a dessert lovers heaven. Nonna’s chocolate tartufo (think chocolate ganache covered in even more chocolate) was chocolate lovers dream and the chocolate lobster tail was faultless. Freshly baked warm scones followed, accompanied with clotted cream and strawberry jam (there has to be one traditional element). These were truly scrumptious and I am assured no calories were counted when I indulged in just a small helping of clotted cream!

Maltese Elegance at Cugó Gran Macina Grand Harbour

n exotic luxury escape conjures up images of The Maldives, Seychelles and the like, but what if you only have a weekend to relax and explore, is there anywhere closer to home that ticks the right boxes? There is – Malta.

A

Nestled in the Mediterranean Sea, just south of Sicily and only three hours from the UK, this island is the perfect place to enjoy clear seas, sandy beaches and sunny weather mixed with beautiful architecture, complex history and authentic food. We were staying at the architecturally striking Cugó Gran Macina Grand Harbour a 16th century Maltese landmark originally built as part of the Bastion to protect the town from invaders and now converted into a beautiful luxurious boutique hotel with large communal spaces, high vaulted ceilings, spacious rooms and the most spectacular views across the Senglea harbour and marina. Checking into the large open reception area, we are greeted by warm friendly faces and a cool glass of Maltese wine, before being led through corridors lined with exposed stone to our suite.

There are 21 suites in total, most have views over the harbour and range from 40 to 130 m². All with high vaulted ceilings, luxurious furnishings and natural materials. Our suite – The Senglea Suite was certainly impressive, a huge two storey open plan space encompassing four areas, a dining/kitchen space, lounge, upstairs bedroom and outdoor terrace with of course stunning views. The spacious living room, includes a wall mounted flat screen TV, and enormous comfy sofa, with doors leading out onto the beautiful terrace, the most perfect place to sit with a glass of wine and watch the harbour and its life float by. Black iron handrails and shelving are a reminder of the industrial past of the building and lead up to the mezzanine floor where the bedroom includes a king-size bed with a canopy reminiscent of a ships sail, a neutral colour palette and finest natural materials that complement the modern white walls and exposed brickwork effortlessly.

There’s something that appeals to everyone here, if you want to do nothing but laze around the pool, then head up to the rooftop where the intimate pool offers unparalleled panoramic views of

the Grand Harbour and the historic cities of Cospicua and Vittoriosa, laze on the loungers - only getting up to dip your toes in the cool blue water and order some poolside food and drink via a telephone on the wall. If exploring’s more your thing, venture out of the hotel and step into the cobbled Maltese streets with its stone houses and steep steps, climb to the top of Upper Barrakka Gardens where the views are breath-taking, grab a coffee or some delicious seafood at one of the many harbourside cafes and restaurants, and spend hours watching the boats sail past. The restaurants and bars around Cugó Gran Macina Grand Harbour offer a delicious varied selection of food, but you do need to eat in the hotel’s award winning Hammetts Macina Restaurant at least once. The food here is outstanding, restauranteur Chris Hammett and his team have put together their own menus fusing British inspiration with classic Mediterranean flavours, giving a modern twist, using local, seasonal produce. Our dining experience began in the ground floor bar with a Ginsalis cocktail (Bombay sapphire, fresh orange, fresh lime, fresh physalis, brown sugar and syrup) before we made our way into the dining room - soft lighting and art deco elegance was the perfect backdrop to enjoy some culinary delights that included raw tuna cubes marinated in soya and topped with foie gras, tomato risotto, veal and a delicious chocolate dessert, all paired with wines from the hotel’s cellar. All the dishes were fresh and flavoursome using ingredients that complement each other perfectly and textures that add a little extra to the palette. Service was impeccable as was the food served, finished off perfectly with a glass of sherry that we took yo our room and enjoyed on the terrace under the moonlit sky.

After a blissful night’s sleep in the heavenly King-size bed, it was time for breakfast where we enjoyed the most delicious Banana Short Stack (homemade pancakes, bananas, crushed hazelnuts, maple syrup and cinnamon) along with fresh fruit and coffee, the perfect body fuel to set us up for another day of relaxing, exploring and eating!

Fry’s Footie Corner The football season is in full swing and I am glad it’s back! Don’t get me wrong, it is sometimes nice to have a little bit of a break, but for someone who lives and breathes the game like me, there is nothing better than football every night of the week!

The Premier League starts a week after the EFL and those clubs would have been able to have a good look at some of the more disheartening stories outside of the top division. The financial woes suffered by Bolton Wanderers and Bury have hit their supporters hard and it has had an impact on the division they play in.

Both Bolton and Bury were hit with a -12 point deduction for going into administration but for Bury, they had their first two fixtures suspended after failing to meet requirements set by the EFL. Both the EFL and the Bury chairman released counter statements, but the facts are that the supporters of the Shakers have been left in the dark. At the time of writing this column, I have no idea how it will play out. It could be that the first club in the EFL go to the wall, something I have been predicting for some time. I always felt if one club fell out of existence, it could lead to a domino effect and I really hope that I am wrong. For Bolton, their takeover story has been rumbling on for nearly a year. For a club the size of Bolton, with its heritage and history, to find themselves in this position is really disappointing. We at Peterborough United are hugely fortunate to have owners that care about the football club and are willing to back it financially. Not all clubs are that fortunate.

On the pitch, it will be interesting to see how things play out in the Premier League. Liverpool and Manchester City are still the favourites for me, but I am looking forward to seeing how Chelsea do under Frank Lampard. They have a transfer embargo so are unable to bring players in, so I hope they give their younger players the opportunity to shine because there is no doubt there is a lot of talent at Stamford Bridge Enjoy your football!
