The Challenge of Challenge nowhere. Suddenly we are in a difficult situation or we need to rise to some challenge that we didn’t choose or want and that can be a bit daunting or perhaps completely terrifying.
In many ways humans thrive on challenge - that’s what makes so many TV shows popular - it doesn’t matter if its baking, dancing, singing, doing up houses or even surviving in the jungle, being faced with a challenge is something that can make us grow - IF we are not defeated by it.

Of course in the example above people choose themselves to face a challenge and in everyday life we sometimes do that - we decide to take on a course that we know will challenge us, or we decide to learn a new hobby or to run a marathon or raise money for a worthy cause. For a whole host of different reasons we set ourselves a challenge, something that we know will be tough. At other times in life though challenges just appear as if out of

But there are aspects to challenges that are not just about challenging ourselves. Life is what it is today because some people have not shied away from a challenge. This has often involved extreme challenge to themselves but also a challenge to others or to society when things have not been ‘right’. Whether it was Ghandi and Independence in India, Rosa Parkes fighting against racial discrimination or the suffragettes fighting for the right to vote - and of course many other besides, the world was in some way changed because of what they did. They saw something that wasn’t right and they stood up for what they believed was right, or fair or just, sometimes at great personal cost. If and when we see things that aren’t right, or fair or just, as humans we can challenge. I wouldn’t dream of suggesting that we should all become activists or lobbyists of some sort, though for some that may well be the case, I am talking about a level of personal integrity in a day to day sense, that means we’re actually liberated, secure and confident enough in ourselves to make sure we are not walked over or forced to accept things that don’t seem right by either being silent or turning a blind eye. I’m sure many of us will have had situations where we see people doing things or saying things that don’t seem right and there will no doubt have been times when we want to say something, but either because of our own lack of confidence, fear of reprisals or even perhaps a feeling that we haven’t the right to say something, we have kept quiet. The ultimate measure of a man is not where he stands in moments of comfort, but where he stands at times of challenge and controversy. Martin Luther King
What has happened then? Well, I guess some people are able to forget about it and move on swiftly but others will find they either feel guilty or feel that they have in some way let themselves down. Those feelings are often about our personal integrity. Some people don’t feel they have to put right every wrong, after all there were plenty of women at the time of the suffragettes who didn’t feel the need to fight, but there were some who did. When faced with either a personal challenge OR something we feel we should challenge it is personal. Not everyone will feel the same thing but if YOU feel you should either rise to the challenge of throw down a challenge to others, even if it feels like something quite small like maybe challenging a racist joke or a demeaning comment, then you will feel satisfied when you do, even if it may take courage to stand up for what you believe to be right.
may well be important - but very often the ‘growth’ comes not from the completion or end point, though that may bring great satisfaction, but rather from the process. Someone climbing a mountain will need to train physically, and mentally, they will probably need to learn a lot of new skills and they may need to gather support from others. All of those aspects of the challenge can cause growth - whether or not the ultimate ‘end’ is achieved. Indeed how we respond to a challenge that we don’t ‘achieve’ can also cause us to grow, if we can allow ourselves to have a ‘long view’ - perhaps disappointment in the short term but growth and development in the longer term. You learn something valuable from all the significant events and people, but you never touch your true potential until you challenge yourself to go beyond imposed limitations. Roy T. Bennett

Midlife Madness The Power of Ignorance Growing up as a blonde girl in the North of England with a brother who won a scholarship to a prestigious grammar school ( and then on to Cambridge University), I spent a lot of time convincing myself and others that despite my blonde hair and femininity I was, in fact, very intelligent. Apart from one memorable occasion in a Maths class with Mr Stephenson when I insisted repeatedly that I hadn’t got a clue about simultaneous equations - because I knew that if I let slip that the penny had dropped I would have 25 to complete like the rest of the class. I could confess to a slight bit of guilt when he embarked on his eighth explanation in the same patient tone but somehow on that particular afternoon pretending I didn’t get it seemed preferable to admitting that, in fact, I did.
Now before you start grumbling about the fact that I allowed myself to be disempowered remember that is what some folk have done all their lives. How many people swear blind they don’t know how to use the ironing board, or a dishwasher, in fact there was a time in our house when I seemed to have to put considerable effort into getting people to realise that dirty laundry was what was meant to go in the ‘dirty laundry’ baskets and even longer convincing them that there was no magic fairy who got all the clothes clean, washed and back into drawers. Feigned ignorance clearly has a precedence. It’s a tool I have long used over certain things - like when warning lights come on in the car - how on earth would I know what they mean?? But as I age I find it is a strategy I am using more and more. The other day I went to a particular restaurant with a friend and we always tend to sit at the window table, so we sat down, and honestly I hadn’t noticed the reserved sign on it! Anyway when the waitress came up to tell us it was, in fact, reserved (we were thoroughly installed) and after a moment of her considering all our bags, coats and scarves she told us not to worry and moved the reserved sign to the next table - in the rather dark alcove - so it was a stroke of good luck that neither of us had noticed the sign!!!
Apart from that memorable incident, which might be further understood by the fact that Mr Stephenson, besides being an educator was also an Adonis, most of the time I got ‘it’ whatever ‘it’ was and whilst never thinking of myself as a rocket scientist, I was often amazed at how some people seemed to struggle to get what seemed fairly simple things. All that seems recently to have changed however. In fact, I delight now in not getting things as I have finally understood the truth that a bit of ‘ignorance’ can go a long way.
Then, when at an airport recently I had popped to the ladies in the boarding gate area and came out to find lots of people queuing up to board so I joined them well I hadn’t heard the call was just for priority boarding had I? Anyway when I reached the gate the very nice lady told me that was the case and I said sorry I didn’t hear, meaning the announcement, so she said it again a little louder but then smiled and said ‘never mind’ and let me through! There might be a lot of things I don’t hear, see or understand in the future!
It began when I got a new phone a while ago - yes it came with the helpful instruction book that would take ages to read but instead I looked at it with a half puzzled expression (maybe I held it upside down as well, I really can’t remember), but within minutes one of the children (now adult) whipped it out of my hands and passed it back in the blink of an eye in full working order with photos on the screensaver, funky ring tone and a whole host of apps (admittedly some more useful than others) installed. 22

Clearing needy hooks Those who are needy or lacking confidence will naturally be looking for ways to gain more vitality. Energetically they hook into you and suck your energy. To clear the hooks sweep your hands over your body and intentionally clear away them away. Cut the cords from your end by chopping imaginary links.

Angry outbursts Visualise a garage door that you slam down when you come under any form of strong negative attack. Then step back. Don’t get involved in angry arguments as emotions do not engage the brain and you will be the one to suffer if you try to win the verbal battle. Emotional outbursts are draining so pull down the barrier and step back.
Keep your energy vital and strong Use quality essential oils in your bath, on your pillow or as a fragrance. Sandalwood and sage are protective and lavender will help to keep you calm when others are losing their heads! Wear crystals such as obsidian or tourmaline to create a defensive shield. Fresh air, good food, good uplifting company and exercise will help you to restock your energy reserves. Clear the atmosphere Spray around all the rooms with a mix of water and essential oils such as peppermint, lemon and sage. If the energy is very heavy following an argument, clear by burning frankincense or sage. Waft the smoke into all corners. Fresh flowers, uplifting music, opening the windows and drawing back the curtains to allow fresh air and light into every room, will also help. De-clutter Old magazines or newspapers sitting in piles are creating stagnant energy. Clutter in the home will lower the vibrations so regularly get rid of broken or unused household items.
Clear your own energy field At the end of each day sweep your hands through your energy field and around your body to release any negative vibes that have attached to you during the day. Use lime or lemon shower gel, or Epsom salts in the shower or bath to neutralise negativity. Spray yourself with peppermint or lemongrass essential oils.
Managing controllers and bullies If a family member, whether a child, parent or partner throws tantrums, sulks, bullies, or deliberately puts you down; you need to take evasive action. When they use words that are intended to harm your confidence say to yourself “DUCK”! See their thoughts, words and energy stream flowing over your head. Check your level of responsibility Carrying other people’s burdens is a quick route to exhaustion. If you are picking up or trying to fix your family’s personal problems, they will become burdens that drag you down and give you aches and pains in your shoulders and upper back. Sweep your shoulders every day and take a step back to see if you are taking on responsibilities that are not yours to carry.
When you enter your home spend a few moments radiating out positive vibes. Visualise streams of smiley faces floating around the office. Face every member of your family, even the teenagers, with a smile and hit them with your own bright and positive vibes - smiles are infectious! By protecting yourself and your home you can ensure you feel energised all day long.

Ingredients
Turkey Tetrazzini
12oz mushrooms, sliced 8 tbsp unsalted butter, divided 3 tbsp, 4 tbsp, and 1 tbsp 1/4 cup all-purpose flour 12oz egg noodles, spaghetti, linguini or other pasta 1 1/2 cups of milk 1/4 cup cream 2 cups chicken broth 1/4 cup dry sherry (or vermouth or dry white wine) 3 cups coarsely chopped cooked turkey 1 cup peas 2/3 cup freshly grated Parmesan(divided into 1/3 and 1/3 cups) 1/3 cup shredded Swiss cheese 2 tbsp lemon juice Salt and pepper Ground nutmeg (optional) 1/3 cup fine fresh bread crumbs Freshly chopped parsley for garnish (optional)
Method
Preheat oven to 375F/190C/Gas 5 and heat water for pasta Cook the mushrooms in 3 tbsp of the butter over medium-high heat, stirring, until all of the liquid the mushrooms give off has evaporated, 5-7 minutes. Set aside. In a large saucepan, melt 4 tbsp of butter. Stir in the flour, and cook the mixture over low heat, stirring, for 3 minutes. Add the pasta to the boiling water, cook until al dente. Put the butter and flour in a saucepan and slowly whisk in the milk, cream, chicken broth, and the sherry. Bring to a simmer and cook over medium-low heat, stirring constantly, for about 5 to 8 minutes. In a large bowl combine the pasta, the sauce, the mushrooms, the turkey, and the peas. Stir in 1/3 cup of the Parmesan and the 1/3 cup of Swiss cheese. Stir in the lemon juice. Add salt and pepper to taste and a pinch of ground nutmeg to taste. Transfer the mixture to a buttered 3quart casserole. In a small bowl combine the remaining 1/3 cup Parmesan and the breadcrumbs. Sprinkle the mixture evenly over the tetrazzini, and dot the top with the remaining 1 tbsp butter, cut into bits. Bake the Tetrazzini in the middle of the oven for 30 to 40 minutes, or until it is bubbling and the top is golden. Garnish individual servings with chopped parsley www.simplyrecipes.com

Turkey & Sweet Potato Shepherd’s Pie Ingredients 2 tbsp extra-virgin olive oil 2lb ground turkey or chopped leftover turkey Salt and freshly ground black pepper 2 tsp poultry seasoning 2 1/2lb sweet potatoes, peeled and cubed 1 onion, cut into 1-inch dice 2 carrots, peeled and grated 4 ribs celery, chopped 4 tbsp butter, divided 2 tbsp all-purpose flour 2 cups turkey or chicken stock Couple dashes Worcestershire sauce 10oz frozen peas 1 very ripe banana Couple drops hot sauce 2 cups mature grated Cheddar 1 1/2 cups all apple sauce 1/2 cup whole berry cranberry sauce (ie: Ocean Spray) 2 pinches ground cinnamon
Method Preheat oven to 425F/220C/Gas 7. In a deep skillet heat 2 tbsp oil over high heat. Add meat and break up with a wooden spoon, season with salt and pepper and poultry seasoning. Place sweet potatoes in a pot, cover with water, bring to boil, add salt and cook 15 minutes until tender. Add onions, carrots and celery into the turkey. Stir, and cook for 5 minutes. While vegetables are cooking, heat 2 tbsp butter in a small pot over a medium heat. Add flour to the melted butter and whisk for 1 minute. Whisk in stock and season with salt, pepper and Worcestershire sauce. Cook for a few minutes to thicken. Stir peas into meat and turn heat off. Drain potatoes and return pot to the heat. Add remaining 2 tbsp of butter and melt over medium heat. Peel and slice banana and add potatoes to the pot. Season the potatoes with salt and pepper and a few dashes of hot sauce. Mash potatoes and banana to combine, adjust seasoning. Top the meat with the potatoes. Cover potatoes with cheese and place in the oven to melt cheese, for about 5 minutes. Serve. www.foodnetwork.com

Candied Popcorn Stars We're loving these popcorn stars that make for charming edible ornaments
Method Combine sugar, corn syrup, water and butter in a large sauce pan. Cook over medium-low heat, stirring often, until butter melts and sugar dissolves. Increase heat to medium; bring to boil. Cook, without stirring until a candy thermometer registers 255 degrees F. Remove from heat; stir in salt and vanilla. Quickly pour mixture over popcorn; toss gently to coat. Add the edible decorations, tossing gently to combine. Moisten or grease hands. Working quickly, press the mixture into 5-inch star-shaped cookie cutter. If the corn becomes too hard to shape, place in a warm (200 degrees F) oven for a few minutes to soften.

was utterly divine. The sweetcorn relish complimented the chunky pieces of chicken in the terrine to perfection. The taste and presentation of both dishes was faultless. For the main event I had the sirloin steak, the meat was excellent, tender and cooked perfectly – a serious melt-inthe-mouth moment. Breast of Guinea Fowl served with gnocchi and petit pois, the combination of tender meat with soft flavorsome gnocchi was another dish that was full of flavour and cooked to perfection. The food is presented beautifully and the chef clearly takes pride in his work. We were comfortably full, but purely for research we bravely ordered dessert in the form of raspberry cheesecake (dessert of the day) and a lemon meringue dome. The cheesecake was light, fruity and a real treat on the tastebuds. The lemon meringue dome was deliciously refreshing on the palette and the perfect end to an amazing meal. With its contemporary surroundings, welcoming staff, delicious food and relaxing dining Olivier’s is an absolute must. We’re already planning our next visit! First and foremost, I must congratulate my daughter Jane on her fifth annual charity gala ball. I know all the hard work that goes into such an event, she worked morning, afternoon and night to make sure everyone had a wonderful time. Like the other four, it was a full house and a very successful occasion. Everybody thoroughly enjoyed the event, the fireworks were a wonderful addition and I would personally like to thank all the people for coming and supporting an occasion like this and for everybody’s participation in the auction items. The auction helped raise great needed money for Cancer Research. All the many photographs that were taken in the evening will appear in the January edition of Affinity 70
so make sure you all get your copy! The ladies looked beautiful and the gentlemen looked very smart! Before we see the awaited January edition, I would like to take this opportunity to wish you all a very Merry Christmas the most successful New Year you have ever had. I am sure you will enjoy the festivities. See you in 2017 – Where The POSH will have hopefully gained some points to see them climb the table into the top three of League One!! Merry Christmas!

If it’s good enough for Royalty then it’s good enough for us! Hartwell House stands within 90 acres of beautiful parkland in the Vale of Aylesbury, in Buckinghamshire. Owned by the National Trust and managed by Historic House Hotels this country retreat is steeped in history that stretches back to almost a thousand years and was once home to the exiled Louis XVIII of France. As you make your way down the sweeping driveway you can almost hear the horse drawn carriages of days gone by and dream you are Elizabeth in Pride and Prejudice being greeted by the doorman as your carriage draws to a halt in front of the large imposing front door! Walking through the above-mentioned door into The Great Hall it is evident that the building’s architecture is as impressive as its history. Full of original Jacobean and Georgian features, with it’s ornate stone fireplace, intricately carved ceilings and gold framed portraits, this was just one of many rooms that took our breath away. A staircase lined with extraordinary carved figures leads us up to our room, a Royal Room. Tastefully decorated in traditional country house style with antique furniture, fine art and an amazing tapestry adorning the wall above the bed, it is easy to see how you can slip back into being ‘Elizabeth’ waiting for Mr. Darcy to call on you! A visit to Hartwell House wouldn’t be complete without enjoying the pleasures of the spa, which is situated just 100 yards from the main house. Whether you want to lie peacefully around the Grecian inspired pool, or try out the gym, steam room, sauna or hot tub it is entirely your choice, I opted for the lounging round the pool (it’s hard work waiting for Mr. Darcy to arrive) until it was time to be pampered just a little more with ‘The Ultimate Aromatherapy Experience’ a treatment that helps to release tension held in every part of the body, leaving you feeling deeply relaxed and re-charged, this is a luxurious treatment that certainly did what it said on the tin and left me floating along in a bubble of calm. Dinner was served in the Soane dining room, which is styled after a room at 11 Downing Street as a tribute to John Soane, yet another example of history and elegance combined. The menu was full of tempting dishes but after much deliberation we opted
for the Brixham crab with Avruga caviar, avocado and red pepper sorbet and the duck liver parfait with flavours of apples and toasted brioche – both dishes were impeccably presented and were infused with flavours and textures that had our tastebuds wanting more. The mains consisted of Aylesbury duckling served with salt-baked celeriac and confit potato on a bed of spinach – the duck was tender and melted in the mouth and the duckling jus was just divine. Venison loin and braised shoulder was the other choice and was served with parsnip puree, red cabbage, and duchess potato – the parsnip puree and red cabbage complemented the meaty venison perfectly creating an explosion of tastes on the palette. There’s always room for dessert and the strawberries, vanilla cream, meringue and strawberry sorbet was heavenly as was the Mango meringue soufflé We retired to the Drawing Room for our coffee before climbing the Grand staircase to bed, getting held up along the way as we noticed yet another detail on one of the carvings. The sun came up on another day and we enjoyed a breakfast feast of croissants, pastries, fruits, yoghurts, jams and of course a full English accompanied with freshly brewed tea and coffee. After breakfast we went for a wander round the grounds, marveling at how magnificently grand the house looked from a distance. Hartwell House makes you feel like Royalty. It’s a place where you can enjoy some peace and tranquility and immerse yourself in the luxury of your surroundings – somewhere that is definitely fit for a King. BOOK IT! This Italian, family owned business, features a fleet of eight small ships and provides exceptional standards of service and comfort.

Embarking at Piraeus, Athens, along with our bulging suitcases, my mother and I were enchanted with our first view of the sleek lines of the Silver Spirit, which was launched in 2009 and carries 540 passengers, served by a dedicated crew of 376.
There is no shortage of on board dining venues and we took advantage of the open seating option offered by the ship’s main dining room, The Restaurant, which serves modern Mediterranean and regional dishes. I sampled the mouthwatering broiled lobster tail with drawn butter, vegetable vermicelli, parsley potatoes and lobster coulis, and served with a glass of Vincent Girardin CortonCharlemagne 2011, it was perfect.
The simple and efficient check-in procedures ensured that no time was wasted and we were promptly escorted to our luxurious and spacious suite, sumptuously furnished with a plump sofa, two leather tub chairs, soft carpeting and comfortable beds swathed in crisp white linens with soft feather filled pillows. We took a moment to relax on our private veranda, admiring the view across the glittering ocean, and our charming butler arrived. Graciously introducing himself, he poured two glasses of chilled champagne with a flourish, and presented us with a selection of Bvlgari and Salvatore Ferragamo toiletries. He then requested our preferences for keeping the fridge fully stocked with complimentary soft drinks, wines and spirits, and the contents of our fruit basket. The luggage was swiftly delivered, and whilst our butler unpacked, we headed for the deck to watch ‘anchors aweigh’ as we sailed sedately on the sparkling waters of the Aegean, bound for Santorini, Rhodes, Aghios Nikolaos, Katakolon, Argostoli, Corfu, Dubrovnik and Venice. The Silver Spirit offers eight passenger decks, with interiors adorned with an imposing art collection including works by Rembrandt, Chagall and Picasso and several Salvador Dali sculptures. The decor follows modern and Art Deco themes with a soothing palette of colours and there are several lavishly furnished bars including the Panorama Lounge
Other socialising spots include the Connoisseur’s Corner, a clubby cigar and cognac lounge where guests are welcome to relax in low-slung leather chairs and enjoy their preferred cigar, fine cognacs, vintage wines, ports, and a selection of the world’s finest caviar including Royal Oscietra.
Up with the larks the following morning and our ship had docked in Santorini, which was a dazzling sight from our veranda. After a delicious in-suite breakfast, served by our butler with much aplomb, we hurried off the ship to explore our first port of call. Back on board in time for luncheon we dined in La Terrazza, which offers a buffet style extravaganza. Temptations included a choice of meat or fish, pasta or pizza, a salad bar and indulgent desserts that just cannot be ignored. We dined ‘al fresco’ on the back deck, cool in the shade of the overhead canopy, and then an afternoon snooze in the sunshine was just the ticket. For water babes, the pool deck features an impressive swimming pool with three bubbling Jacuzzis surrounded by ultra comfortable sun loungers and the pool bar and grill serves light fare for luncheon, which means that those of us who prefer not to be disturbed during our sun bathing sessions may dine ‘in situ’. After a pre dinner tipple on our veranda we made our way to The Bar, where Captain Mino Pontillo’s Welcome Reception was in full swing. Tasty canapés, hors d’oeuvres and cocktails were served by a bevy of dapper waiters and our fellow passengers were simply dazzling in their elegant formal wear. Ladies, dressed in stylish, flowing evening gowns and gentlemen resplendent in their evening attire.

For those keen on activities, a daily programme is delivered to each stateroom with details of events held during the day and included a stretch class, Pilates, Yoga, table tennis, shuffleboard, golf putting and a number of enrichment lectures, seminars and cooking demonstrations.
Later we dined in the Stars Supper Club; a retro experience, which recalls the romance and opulence of Manhattan’s legendary Rainbow Room. Delectable small plate selections are served on food sensitive dishes whilst guests are entertained by the ‘live’ jazz band and a cabaret vocalist. And in the likely event that diners are overwhelmed with the desire to display their nifty footwork on the dance floor mid-course, the food remains at the right temperature. Other dining options include Le Champagne, the only Relais & Châteaux restaurant at sea, which features a small walk-in wine room. For fans of Asian fusion cuisine, Seishin, offers sampler menus or a nine course degustation and by night, La Terrazza, presents a wide range of authentic Italian dishes. For those seeking the utmost privacy, there is the option of in-suite dining, selecting dishes, course by course, from The Restaurant menu, or from the room service menu, available around the clock.
Entertainment choices include the Show Lounge, which presented a striking performance by four soloists and a pianist from Milan’s Academia Teatro alla Scala. The audience was treated to a selection of enigmatic, evocative and beautiful librettos from the world’s most magical operas and the soaring voices of the soprano, mezzo soprano, tenor and baritone were magnificent. Another highlight of the cruise was a performance by Moss Hills, the talented cruise director. A first rate entertainer and a master drummer, guitarist, saxophonist, keyboard player and singer, he soon had the audience singing along to his repertoire and some took to their feet in the aisles with fervour.
And for those of us with a passion for doing as little as possible, the Spa is the place to be. Covering 8,300 sq ft, there are nine treatment rooms, interior and exterior relaxation areas, and an outdoor whirlpool.
Or, you may prefer to select a good book from the ship’s library, sink into one of the chairs in the Observation Lounge and whilst admiring the view of the ocean blue over the ship’s bow you may recall the words of Mark Twain who once said; ‘twenty years from now, you will be more disappointed by the things you didn’t do than those you did.
