Learning to
Embrace Emotions
july018.qxp_Jan 2014 Aff 02/07/2018 23:20 Page 9
A view seems to have become accepted over recent years that we can divide emotions into positive and negative. In some ways this might be a step forward, there was a time in our history that it seemed emotions were either denied or seen as something no one should ‘attend’ to. The ‘stiff upper lip’, carry on regardless philosophy, which at times can serve a useful purpose, was the commonly held view. Emotions, or at least a display of emotions, was something that was a sign of weakness at worst and inappropriate at best. Yet it is our capacity to feel and to respond to our emotions that makes the best of human behaviour possible, the parent who fights danger to protect their child, or the hero or heroine who acts selflessly to defend others. The capacity we possess to put our own needs on hold and help others usually stems from the emotions we ‘feel’. Of course, emotions can also stimulate different reactions – destructive acts of ‘passion’ or revenge for example, almost every hurtful act from unkind words to hate crimes are stimulated by some sort of emotion. But if we aspire to live lives that are full and satisfying then emotions are part of the package, so we need to learn not only to accept them but to embrace them. Emotions make us human. Denying them makes us beasts. Victoria Klein
Understanding our Emotions The fact is, as humans we have emotional responses to stimuli. Emotions are not consciously controlled, and in fact are based around the need to survive. It is the limbic system in the brain that deals with emotions, this is often regarded as the primitive part of the brain. Emotional responses can be very powerful. An easy one to consider is our response to something that makes us afraid or threatens us – it is both a physical and mental response getting our body ready to fight or run away. But emotions are also strongly linked to memory and experience. If we have a memory of something ‘bad’ that previously happened to us, our emotional response to the same kind of stimulus is likely to be strong. Emotions are also linked to our values, those things we see as important, so if we think it is wrong to pollute the environment or be cruel to animals and we are likely to respond strongly if we see this happening.
Emotions Exist The fact is emotions just ARE. Everyday we will experience a whole range of emotions. In themselves emotions are neither good nor bad. They exist originally to protect us. Of course, nowadays the ‘threat’ we might feel that stimulates an emotion may not be a real one e.g. the ‘fear’ of a roller coaster ride or horror movie. But the response exists for a purpose, at least historically.
We may categorise them as good or bad in terms of
how they make us feel, but even that varies. There are times when crying feels wholly negative and other times when we can almost ‘enjoy’ a good cry. The important thing is accepting that the emotions themselves are neutral, it is our interpretation of them and response to them that may be positive or negative.
Managing Emotions So how do we manage these emotions we face every day? We know for example that feeling stressed constantly every day c,an cause us physical and mental harm, so it is important that we manage them in a way that helps us live life to the full and enjoy all the positive aspects of being emotional human beings, whilst making sure we are not battered about by every emotion that might surface through the day.
So, what is the right way to manage emotions and how can we do that? Well it is not helpful to bury them, though there is a difference between fighting back tears in response to some news UNTIL you feel in a place where you can express your emotions and simply squashing down all the feelings because they are uncomfortable. The trick is to find ways to express them appropriately. Unexpressed emotions will never die. They are buried alive and will come forth later in uglier ways. Sigmund Freud
Appropriate Expression Emotions do need to be expressed but as adults who have learned to ‘regulate’ there are elements of choice about how and when we do that. Feeling anger for example, is not necessarily a negative thing. It is a reasonable response to feeling hurt or betrayed. However, we have probably all had occasions where we have ‘’chosen’ to respond in a way that is measured. We also know that there are more general things we can do that help us manage emotions effectively, for example, exercise or mindfulness. Breathing exercises can help us to regulate our emotions, as can taking care of ourselves, finding time to relax and having friends to talk to. These and other strategies, will all help us to find ways of expressing emotions appropriately. While it remains true that the impact of some emotions can be negative or positive, emotions in themselves simply exist, and we may experience contrasting emotions at the same time in response to one stimulus, feeling happy for example about a new job but sad that we’ll have to leave old friends.
By accepting emotions and learning to manage them in ways that limit the negative impact we can enjoy the ‘colour’ of emotions and what they bring to our lives, whilst not suffering the potentially damaging effects that unregulated emotions bring. 5 Signs You’re Lonely & How to Feel Less So
You can have over 1,000 friends on Facebook and still feel lonely. Those feelings of disconnection and isolation is something we all experience at some point but aren’t always aware of.
could be in person, at work, on social media, wherever you are – you don’t fit in.
Emotional pain Being lonely is emotionally painful. You may feel as if you’re looking through the window of life at everyone else having fun, but you’re not there with them enjoying it like they are.
On the edge You might look as if you’re involved but you’re never fully part of the gang or community. You’re always on the edge of everyone else’s groups. You could be in a crowd but still feel lonely. Happiness comes from connections and having support in terms of relationships.
Top Life Coach Carole Ann Rice knows the difference between having no plans on a Friday night and loneliness. So, here are her top five signs you may be lonely, and her tips to combat it:
Solution - Why: Find out why you’re lonely; do you not have many colleagues at work, you’re not close to your family? Or is it simply that you live in a remote location where it’s hard to socialise? Once you know the source of the loneliness, you can take steps to overcome it.
Physically on your own People enjoy being on their own and having their own company and this can be extremely pleasant. But loneliness is more than that – it is isolation, feeling completely disconnected from the world and other people. Loneliness can be as big a killer as physical diseases, such as diabetes or obesity, as it’s hugely linked to depression. Solution – Do something: If it is that you’re a stranger in a strange town it’s time to start looking for meet-ups or groups of people that share your interests, whether that’s reading, dancing, Spanish, drama, singing. Networking with people where you know you can chat to people with your interests.
Outsider The sense of being an outsider from the people around you, and feeling completely removed from that. That
Solution - Shyness: – if you’re shy, try learning a few ice breakers to help you start conversations. Equally, being a good listener is a good way to make friends. Just by paying attention to other people, and letting them talk about themselves. This means you don’t have to be confident, just interested in others.
Solution – Get out of your comfort zone: everyone gets shy, especially during new experiences. But the more you do the more you grow! Decide to do something new, even if it’s scary! This could be singing lessons, dancing, drama. If you go somewhere once, you’re a stranger, but go twice and you’re known, and three times – by then you’ll have made contacts and relationships. Don’t assume people are unfriendly – spark up a conversation and, if in doubt, just smile.
Not truly happy True happiness is having connections and having support in terms of relationships. If you feel you don’t have someone you can turn to when you’re feeling at your most vulnerable, you may be lonely.
Solution – Online relationships: Facebook group discussions are a great way to start connections if you can’t quite bring yourself to make them in the real word yet. Of course, this isn’t as good as face to face connections but it’s a way to build your confidence up or make friends that you will eventually meet in person. www.realcoachingco.com

Midlife Madness
Middle Aisle Madness
I think most people would agree that shopping has undergone a process of radical transformation over recent decades. I remember as a child I would walk to the shops in our small town with my mother and when we did the weekly shop (accompanied by the trusty wheely bag) we would literally visit the butcher, the baker and the ……greengrocer – obviously I am way too young to have visited the candlestick maker – though of course now I do as candles are a massively popular decorative item. Anyway, back to the weekly shop, that was how shopping happened. You visited shops and then I remember the excitement of a supermarket opening, albeit one that was tiny by today’s standards, in fact, probably wouldn’t even meet the criteria for a mini market, but it was ‘super’ for us. Things, as you know, have moved on a pace – we now have mega supermarkets, out of town retail parks and of course, internet shopping – which means I can shop from the comfort of my bed in the middle of the night. I am not saying I do, well not regularly anyway, but I can if I want to.
But what has also happened over very recent years is that there has been a change in our supermarkets. We had developed a particular model which we’d all grown accustomed to and could easily go shopping for food, clothes, household items, toys, garden equipment, electrical goods and even buy travel money, do banking or buy insurance. We could also go to the café and have, not just a coffee, but any meal we fancied including a Sunday lunch.
I remember when the family were all living at home I traded the pleasure of a visit to the supermarket for the convenience of internet shopping – I didn’t even mind paying a bit for it (not very much if it is delivered at 10pm – yes that has its drawbacks, but kids were in bed so at least it wasn’t raided before it hit the cupboard shelves).
While I didn’t personally hand pick veg and made the occasional ‘gaf’ (1 carrot when I expected 1 bag and 5 bags of bananas when I’d expected 5 bananas but I got used to the system and generally it worked well. Then came the ‘others’, the new European style supermarkets, who have drawn us away with their no frills, economy conscious approach, and have sucked many of us away from internet grocery shopping as well as more traditional supermarkets. Many of us have adapted to this and no longer get coffee while we shop and will often trade the need for a particular brand for the feeling of pleasure we get at the checkout when the total is considerably less than it may have been in the more traditional rival store.
Then of course there are the ‘middle aisles’ in such stores. Those absolute treasure troves of random items that we never even realised we needed. Now to my mind this has made shopping very exciting! What it means is that I can go shopping with a list – get most of what is on it but also come home with a wooden dolls house (well there might be a granddaughter one day) a fishing kit (no I’ve never tried it but I might and it was very cheap), various kitchen goods ranging form toasters to tapas kits, books, thermal underwear (always handy), shoes (I haven’t bought clothes yet but was tempted by a flowery raincoat) and heaven knows what else.
The thing is it is illogical and it’s not just me, I have talked to lots of people who go shopping in such stores, not least for the excitement of what will be in the middle aisles – yes, they’ll tell themselves they are going for cheese, eggs, bread and broccoli and, of course, they are competitively priced and in my opinion there are some darned good wines too, but let’s be honest we all know the secret pleasures really lie in the randomness of the middle aisle.

10 ‘Healthy’ Foods that may not be as Healthy as they Seem Planning on shedding a few pounds before your holiday this summer, or want to give your skin a youthful boost for make-up free days at the beach? It may be time to detox your kitchen cupboards for some seemingly healthy foods, which could actually be doing more damage than good to your waistline and skin.
july018.qxp_Jan 2014 Aff 02/07/2018 23:21 Page 19
1. Gluten-free packaged foods “If you’re going gluten-free, don’t be taken in. Gluten-free breads, baked goods and treats can be higher in sugar and additives and have a higher glycaemic index (they’ll spike your blood sugar more) than their gluten-containing equivalents. “A better approach to healthier baked foods – whether you’re gluten-free or not – is to make your own with recipes that use minimal sugar and alternative whole grain flours, coconut flour or ground almonds. Or as an easy everyday alternative to bread or crackers, go for gluten-free wholegrain oatcakes such as Nairn’s Gluten Free Super Seeded Oatcakes (RRP £1.79, Sainsbury’s),” explains Nutritionist, Cassandra Barns.
2. Rice Cakes “Rice cakes are often thought of as a low fat, gluten free health food. However, most rice cakes are made from white refined rice, leaving them with a glycaemic index close to 91 (pure glucose has a rating of 100). “This means that rice cakes breakdown into sugar rapidly within the body, resulting in blood sugar imbalances and weight gain,” explains Cassandra.
3. Soup “You might think that a can of soup would be a light and satisfying meal but again you have to read the ingredients on the label. Many of them will have added sugar and some also have glucose syrup. Both the sugar and glucose is going to cause a rise in blood glucose and then an increase in release of insulin which triggers to store fat,” explains Dr. Marilyn Glenville, the UK’s leading Nutritionist, author of Natural Alternatives to Sugar(www.marilynglenville.com). 4. Vegetable oil spreads Perhaps the worst thing you can eat if you want to maintain young-looking skin! Vegetable oil spreads and margarines are made by bubbling hydrogen through liquid vegetable oils, which can create damaging and ageing trans fats. Butter is actually a much better alternative as a spread, as it’s a natural solid fat and contains vitamin A, which is vital for our skin. For cooking, cold-pressed olive oil, coconut oil, butter and ghee are all great. Ghee is especially good for cooking and roasting as it has a high smoke point, tastes delicious and provides vitamin A,” says Cassandra.
5. Almonds “When it comes to nuts, almonds can be very moreish, and it’s easy to polish off a small 100g bag whilst racking in nearly 600 calories within minutes. Portion control is absolutely vital with a handful being the optimal portion size,” says Cassandra.
6. Fruit yogurt “The label might say ‘low fat fruit yogurt’ and so you would think it would help with controlling your weight, but the yogurt can contain up to 8 teaspoons of added refined sugar. Often sugar is the next ingredient after milk in highest amounts in the yogurt. This type of yogurt will be a high GI food causing your body to release more insulin to deal with the quick rise in blood sugar (blood glucose) and
insulin is your fat storing hormone of the body,” explains Dr Marilyn.
7. Popcorn “It’s often considered a healthier alternative to crisps, but popcorn is still high in fast-absorbed carbohydrates that can spike your blood sugar. And because sugar damages proteins, high blood sugar is your skin’s worst enemy. It can be a better option than some other snacks, but popcorn should still be a treat rather than a staple food in your diet. For some additional benefits, switch your popcorn for lotus seed snacks such as Karma Bites (RRP £1.59, www.karmabites.co.uk). Lotus seeds contain skinprotecting antioxidant compounds including flavonoids like those found in vegetables and fruit,” explains Cassandra.
8. Cereal bars They can seem like a healthier option, but cereal bars can be as bad for you as the chocolate bars or sweets they seek to replace. Some are around one-third sugar, and they can contain artificial flavourings and sweeteners and unhealthy vegetable oils, too. All of these things are bad news for your skin and can encourage ageing. As a better alternative, go back to the chocolate! But make it a good-quality dark chocolate with at least 70% cocoa, avoid artificial additives and go raw if you can. The antioxidants in raw cacao can have extra anti-ageing benefits for our skin! Try OMBAR 72% Cacao (RRP £1.99, www.ombar.co.uk) or OMBAR 90% Cacao (RRP £1.99, www.ombar.co.uk).
9. Tomato Pasta Sauce “You would think that tomato sauce would be healthy as it is low in fat but unless you make it yourself it can also be high in added sugar. And if you then pour this over white pasta, which in itself is a high glycaemic index food, because it is a refined carbohydrate like sugar, then you have a double whammy on your weight gain,” says Marilyn. 10. Skimmed milk “For years it seemed like common sense to choose the low fat, low calorie milk option. But in reality by choosing skimmed milk, we are missing out on much need fat soluble nutrients like vitamins such as D, A, E.
Fat really isn’t the health villain we have been led to believe. It has now been disproved that full fat milk leads to weight gain and heart disease. In fact organic full fat milk provides us with many essential fatty acids like omega 3’s and conjugated linoleic acid, which have powerful inflammatory and brain health benefits,” explains Cassandra.
“Some people don’t produce the enzyme lactase, which helps them breaks down lactose, a sugar found in milk. You need this enzyme in your body in order to break down the lactose, otherwise it ferments in the gut causing pain, gas and bloating. Try taking the brand new GI Natural from Natures Plus (£33.75, naturesplus.co.uk) to promote digestive ease and comfort,” adds Cassandra.

Beauty Secrets
T
Fiona Quinn, owner of Dollyblue Beauty and Advanced Skincare, is a Beauty Therapist, Educator and Obsessed Skincare Nerd who shares the latest beauty industry tips, products and updates with us each month.
he sun is shining; our skin is glowing, well almost, until that spot appears…
Major breakouts can be daunting especially this time of year when we are hoping to look cool and fresh and to cut down on the many make-up items we have hoarded over the winter months. Last month (June) just happened to be Acne awareness month; which meant most of my time was spent finding solutions for this skin condition. I never tire of seeing what the impact of treating my client’s skin can have, the results can be amazing.
According to the NHS 80% of people aged 11 to 30 are affected by acne, with 5% of women and 1% of men suffering from the condition over the age of 25. And it’s not just us mere mortals that can suffer; some of our favourite celebrities have or had acne. Emma Stone’s blemishes were ‘kindly video airbrushed out’ when shooting Easy A. Victoria Beckham resorted to eating salmon daily to combat her acne skin and Natalie Portman cut out dairy. But what is acne? The oil (sebum) in our skin is made by sebaceous glands that reside in our pores. When cellular debris blocks pores, the sebum becomes trapped. Bacteria multiply, which feed on sebum, which then multiply further resulting in comedones and spots. There are many available treatments that help to combat acne and the key ingredients you should look out for are
salicylic acid to exfoliate inside the pore, hinokitiol to control acne bacteria, retinol for improved cell turnover and zinc oxide for UVA/UVB protection.
Adult skin is different to teenage skin as it produces less oil, has a slower rate of cell turnover, and heals at a different rate (oh the joys of growing old)! Products designed for teenage skin are often too harsh for adults, so using them can lead to irritation and dryness. At the same time, adults are concerned with visible signs of ageing like fine lines, wrinkles and uneven skin tone. So until the fountain of youth has been found, my preferred skincare is AlumierMD which is what I use and retail at Dollyblue. I know when skin is oily we feel the need to scrub and clean obsessively, DON’T DO IT! When sebum builds up under the plugged pore it causes an inflammatory response. Keeping skin moisturised is an important way to balance sebum production. If skin dries out due to excessive washing or harsh chemicals, it will produce more sebum to compensate.
My top tip may sound obvious but makeup brushes, phone screens and pillows can be the biggest offenders when it comes to spreading acne causing bacteria. Clean your brushes change that pillowcase and wipe those screens. See you next month Fiona x

Old World Glamour meets
Fresh Faced Flavours t Pancras Brasserie and Champagne Bar by Searcys has recently marked the 150-year anniversary of St Pancras Station by unveiling its first ‘champagne school’ and a fresh new look.
S
The venue is synonymous with excellent champagne and is famously home to the longest Champagne bar in Europe – with an extensive bottle selection, including 9 champagnes available by the glass, it is the perfect place for a champagne lover like myself, which means I didn’t need asking twice if I would like to go along and experience a dinner paired with different champagnes. There’s something magical about stepping off the train and walking through St Pancras station, it’s a little like
stepping back in time (especially on the upper level where St Pancras Brasserie and Champagne Bar by Searcys is situated), which is the same feeling you get when you step inside St Pancras Brasserie by Searcys. With a décor that consists of old station clocks, private booths lit by vintage-inspired lighting, Herringbone oak floors and gold ceilings you are effortlessly whisked back to the golden age of travel. While the station buzzes beneath you, this is somewhere for you to unwind in style, before you embark on your next adventure. We began our food adventure with a chilled glass of Searcys Selected Cuvee Brut, fresh, crisp and light just perfect for tempting our tastebuds for the culinary journey in front of us.

And what a journey it was, starting with Celtic sea prawn cocktail and dressed Portland crab, the prawns were fresh and meaty, accompanied with a sauce that left a slight kick on the palette – delicious. The crab was another hit, presented in a shell, this was a real mouth-watering success. Perfectly paired by our knowledgeable waiter/sommelier Kevin with a cool glass of Taittinger.
Next came the Rump of Herdwick Lamb served with a goat’s cheese tart, whipped aubergine, broad beans and peas, full of flavour with a variety of tastes and textures all coming together to make this a winning dish.
Cumbrian saddleback pork T bone with grilled field mushrooms and watercress was the other mains, cooked to perfection the pork was succulent and delicious. Both dishes were paired with a refreshing glass of Furleigh Estate Brut, with its lingering citrus taste this was perfect for complementing the rich flavours of the meats.
Desserts were a real treat, Rainy Lane natural yogurt mousse with meringue and Yorkshire rhubarb along with summer berries cheesecake. The rhubarb dish had a slightly tart taste, which when taken with a sip of the Nyetimber classic cuvee produced a slightly nutty, almondy taste to the palette, a pure delight. The cheesecake was divine and literally melted in the mouth, the base was made from shortbread with a violet jus and was a whipped-up assortment of deliciousness. Classic sophistication with a relaxed atmosphere best describes our fabulous dining experience. The food, service and setting were faultless. St Pancras Brasserie and Champagne Bar by Searcys offers a multitude of options, whether it’s just meeting friends for a glass of champagne or a bar snack. A champagne pairing dinner or booking a place in their newly launched champagne school (guests can take masterclasses to learn all about champagne and English sparkling wines), either at ticketed events, as part of a private party accompanied by a delicious meal, or as a one-of-a-kind celebration at the stunning new Tasting Room or Kitchen Bar. Pesto and Chicken Meatball Bake “This pasta bake will soon become a firm favourite with family and friends, and great for some alfresco dining”
Ingredients 400g pack chicken sausages 500g conchiglie pasta 2 sweet pointed ramiro peppers, deseeded and cut into 1.5cm strips 2 tbsp olive oil 4 spring onions, trimmed and roughly chopped 300g frozen spinach, defrosted, excess moisture squeezed out 60g pecorino (or Italian-style hard cheese), finely grated 150ml vegetable stock 30g pack basil 125g half-fat mozzarella, sliced
Method Preheat the oven to gas 9, elec 240°C, fan 220°C. Bring a large pan of water to the boil. Squeeze the sausage meat out of its casings and roll into cherry-sized balls. You should be able to make 4-5 balls from each sausage. Cook the pasta in the boiling water for 7 mins until al dente, stirring occasionally. Drain, reserving 100ml of the cooking water. Meanwhile, heat 1 tbsp oil in a large frying pan over a medium heat and cook the meatballs for 4 mins. Add the peppers and cook for 5-6 mins until the meatballs are browned and the peppers are starting to char. To make the pesto, blitz the spring onions, spinach, pecorino, vegetable stock, most of the basil and the remaining oil in a food processor until smooth; season with pepper. Return the drained pasta to the saucepan. Stir in the pesto, reserved cooking water, meatballs and peppers. Tip into an ovenproof dish, top with the mozzarella and bake for 15 mins. Season with black pepper and serve scattered with the reserved basil leaves. www.tesco.com

The Acqua di Parma Afternoon Tea fternoon Tea is an indulgent pastime of mine and I’m always amazed at the innovative twists that are put on the traditional afternoon tea, so imagine my excitement when Baglioni Hotel London introduced their partnership with iconic fragrance brand Acqua di Parma and created the Acqua di Parma Afternoon Tea.
A
Alongside a selection of scones and sandwiches that have an Italian twist, there is also colourful treats inspired by Aqua di Parma’s Colonia fragrance, including citrus fruit from Sicily, lavender, bergamot, verbena and Bulgarian rose.
On arrival we were shown to our seats in an alcove by the window, before being poured a cool glass of Ferrari Maximum Brut (I think every afternoon tea should make champagne a necessity), whilst we looked over the elegant menu, that was not only full of the delicious savoury and sweet delights we were going to be served but also all the teas that were sent to tempt our senses – We chose the Calabrian Bergamot and Mint which was delicately refreshing and the Rose and Lime, fruity, floral and lightly refreshing all at the same time. The food certainly didn’t disappoint with the homemade rosemary focaccia with bresaola and buffalo mozzarella cheese, being a particular favourite, so much so our lovely waitress brought us extra. An amalgamation of tastes and textures followed in the different sandwiches that included sun dried tomatoes and ricotta cheese, Scottish oak-smoked salmon with fresh cream and chives, Classic egg, fresh rocket salad and mayonnaise and Turkey, with fresh lettuce and mayonnaise. After devouring our savoury selection, it was time for the sweet treats, all creatively designed to keep with the theme. Classic tiramisu along with floral verbena and lime zest panna cotta with rose coulis were both presented in miniature glasses and a dessert lovers heaven. The Sicilian cannoli with candied orange, crunched perfectly and the Lavender meringue and bergamot cream just melted in the mouth. The Colonia lemon tart, had a slight sharpness, which was complimented with the sweet pastry and the pistachio tuiles just faultless, all served alongside what else but violets of Parma and edible flowers.
Freshly baked warm scones followed, accompanied with not your usual clotted cream and strawberry jam, but with of course Italy’s famous Nutella chocolate spread, Sicilian blood orange jam and English clotted cream. These were truly scrumptious and I am assured no calories were counted when I indulged in a combination of chocolate spread and clotted cream!
This has got to be one of my favourite afternoon teas to date, from the exquisite presentation, quirky extras and delicious taste – An elegant experience made all the more special by the piano being played in the background, the chic luxurious surroundings (think 1920’s glamour), champagne and a gift bag that includes Colonia perfume samples. The Acqua di Parma Afternoon Tea is available until the end of July 2018 at Baglioni Hotel London from £47 per person. This includes a glass of champagne and a luxury sample of Colonia. Whole Seabass with Coconut Chilli Jam & Fresh Herbs Ingredients 1 seabass, roughly 250-300g, cleaned, gutted and scaled with bloodline removed 5 tbs nham jim 10g picked Thai sweet basil 10g ginger, peeled and julienne 10g picked and washed coriander 2 teaspoons fish sauce 1 teaspoons thick tamarind water For the Nham Jim 2 tablespoons coriander root 8 garlic cloves, peeled 8 green bird’s eye chillies (scuds) A pinch coarse sea salt 2 tablespoons caster sugar 5 limes, juiced 2 mandarins, juiced (or clementine) 4 tablespoons fish sauce
Method
Firstly using a pestle and mortar, pound the coriander root, garlic, then chillies (in that order) to a coarse paste, using the pinch of salt as an abrasive, if necessary. Next add the sugar and pound for a further few seconds. This should leave you with a relatively smooth paste, though a little chunk is not the end of the world. Finally, add the lime and mandarin juices and the fish sauce. The sauce should taste sweet, salty, sour and hot. An exact recipe is impossible, as ingredient strengths vary, depending on where they are grown, so adjust the seasoning to suit your tastes.
Next deep fry the seabass in 180 degree oil for 6 minutes until crispy and golden on the outside and soft on the inside, remove and allow to rest for 2 minutes. Serve the fish scattered with julienne ginger, sweet basil and covered in the nham jim dipping sauce. For a big meal eat accompanied with sticky rice to mop up all the juices. High Palms High Tea The Landmark London at
The Landmark London an oasis of luxury in the heart of London and one of our favourite hotels to spend time in, whether it’s a cocktail or two, a romantic dinner or just a coffee, we can’t resist its sumptuous surroundings that do actually make you feel like Royalty, and now we’ve been given another reason to visit with the introduction of their High Palms High Tea, a twist on the classic British tradition of afternoon tea.
Afternoon tea in the evening? Not as strange as it seems, a few tweaks here and there, add some Middle Eastern influences, and your traditional afternoon tea has been turned into a high tea. It all sounded very enticing, so hubby and I decided to try it out for ourselves. The High Palms High Tea is served in the Winter Garden Restaurant, a stunning eight-storey glass atrium with palm trees and elegant plants (hence the name High Palms), a setting that creates a serene ,relaxing atmosphere.
To begin, a glass of rose champagne was poured for us to enjoy alongside sandwiches of lobster and prawn cocktail, pimento humus and courgette, and Cajun spiced chicken, perfectly presented, and so tasty, the pimento hummus and courgette was delicious, if I didn’t know there were more delights coming I would have said yes when the waiter asked if we wanted more sandwiches. To accompany the High Tea, not only is there an extensive tea list, there is also iced teas, which in my opinion compliments this High Tea perfectly – Pomegranate and Lime iced Tea was my choice, so refreshing, it was like having a cocktail (minus the alcohol), hubbie chose the Chamomile, Strawberry and Orange cold brewed tea, which proved a big hit. The mains are described as warm mezze and include a feta, spinach, red onion and olive quiche, chicken, lamb with couscous and pomegranate, falafel with hummus and an Arabic salad with flatbreads and tahini. The chicken was moist and tender, the quiche literally melts in the mouth, and the lamb has a slight kick which is cooled perfectly by the pomegranate cous cous, everything was faultless, a real foodies dream.
I had decided that I really wouldn’t be able to manage dessert, but when I saw the tempting delights (all in miniature form) of sticky toffee pudding, topped with clotted cream, passion fruit, mango and ginger cheesecake, and strawberry and mint tartlet my resolve faulted and the temptation proved too much – they were all an absolute delight – the sticky toffee pudding was soft, fluffy and utterly delicious, the passionfruit cheesecake was sweet, with a slight kick from the ginger and the strawberry and mint tartlet, just divine.
And just when we sat back to relax and enjoy another of the refreshing iced teas, the music changed to Happy Birthday and the staff and other guests all started singing as a cake complete with a candle was brought over to our table for hubbie – (I’d only mentioned it was his birthday casually as we were toasting with the champagne) the attention to details here, the gorgeous setting, exceptional staff and the most delicious food is why we always visit this fabulous hotel when we are in London and now the High Palms High Tea has given us another reason to visit (as if we needed one). The High Palms High Tea is being served from 9th July - 2nd September 2018 and is £55 per person inclusive of tea. Champagne is available at an additional charge. A Spanish Twist e always love an afternoon tea that has a slight twist to it, so imagine our excitement when we found ourselves heading to COMO The Halkin, a 5-star hotel in Belgravia to try the Ametsa with Arzak Instruction Spanish Afternoon Tea, a menu created by the Michelin-starred team at Ametsa, that draws on the principles of Basque cuisine.
W
The entrance to COMO The Halkin was draped in the most stunning tropical floral archway (in association with this year’s Belgravia in Bloom), with the same floral theme continuing inside the lobby and lounge bar area, it looked beautiful.
Our afternoon tea experience began with cocktails, for me Fernanda, inspired by Ascot, a fresh summery mix of champagne, gin and raspberry puree. Hubby chose the Frida Kaho, inspired by Belgravia in Bloom, a passion fruit margarita with passion fruit purée, lemon juice, passion fruit liqueur and tequila, this was a real hit, and I it seemed only right that as my hubby he should share! This special summer cocktail menu is inspired by London’s summer social calendar, from tennis at Wimbledon to rowing at Henley, and was created in collaboration with Chelsea-based milliner, Jane Taylor London.
The savouries were beautifully presented, and looked like works of art, just perfect for lots of Instagramable foodie posts, no traditional sandwiches here just Spanish inspired tapas that was mouth-wateringly delicious, a real treat to the taste buds. Egg on Waffle (a fried quail egg on top a mini waffle), Txangurro’ in a Shell (a pink tempura-like shell garnished with crab meat and foam), Garlic Pintxo (a miniature stack of caramelised onions and fresh anchovies), Tomato and Raspberry soup that was so refreshing on the palette, I wanted more, Iberco Ham Croquets that literally melted in the mouth and finally Txistorra Granary Sandwich, but not a sandwich as we know it, thin white seeded crackers filled with sausage from the Basque Country, a real foodies delight.
Desserts were just as delectable, starting with the Spanish classic, Chocolate with Churros, a little pot of heaven, Mango Torrija (similar to French toast), Catalan Cream, a decadent jar of creamy delights (similar to panna cotta), Ametsa Cheesecake, Passion Fruit Cake topped with a gooey meringue, and finally, the jewel in the dessert crown - Smoked Pineapple, yes it was actually under a glass dome smoking! These desserts really were a dream to your palette.
Dessert was accompanied by a refreshing pot of tea (well you can’t have an afternoon tea without it), chosen from the JING Tea selection. My choice refreshing Mint Tea, and hubbie (he’s more adventurous) a herbal infusion of whole rose buds. It is evident from the array of tastes and little touches that a lot of care and thought has gone into producing the food on this menu, full of imagination and fabulous flavours, a masterpiece in both taste and presentation.
Ametsa with Arzak Instruction afternoon tea is available every day between 2.30pm - 5.00pm, priced at £34 per person, the afternoon tea includes a summer cocktail inspired by COMO The Halkin’s summer partnership with milliner Jane Taylor, and is available until 30th July 2018. Ingredients 300g (10oz) raspberries 2 tbsp icing sugar 100g white chocolate, broken into pieces 250ml Tesco Finest Cornish custard 125ml (4fl oz) whipping cream

Fry’s Footie Corner
As I write this particular column, we are about half way through the FIFA World Cup and what a tournament it has been. There were no goalless draws until the very last group games and the use of VAR has certainly split opinion, although personally, I think it has certainly improved the game in terms of those match-changing decisions.
There are always going to still be inconsistencies, the VAR is a human after all, but it is does clean up a lot of the obvious errors and certainly a big bearing on Germany being knocked out following a late defeat to South Korea with the technology correctly overthrowing an incorrect assistant referee’s offside call. Elsewhere, England safely progressed from their group with a big win over Panama and a last gasp success over Tunisia and everyone has certainly been behind the country as they attempt to go further. Domestically, it has been a very busy summer for us at Peterborough United with ten new signings already secured and many other departures.
I expect that the transfer madness will continue right until the end of July and I am sure there will be a mad scramble for players both in the Premier League and the EFL. We
start our League One campaign at home with a game against Bristol Rovers and in the main, the calendar has been relatively kind to us in terms of the scheduling.
We have a tricky trip to Championship side Queens Park Rangers in the first round of the Carabao Cup to look forward to in the first week of the season. Away from the playing side of things, a lot of work has been undertaken both at the ABAX Stadium and at our training ground, the Mick George Training Academy.
The board and owners have spent a lot of money in improving the facilities and the pitches in preparation for the new season. The dressing room has been improved, the mentality has changed and we are hoping for a push for promotion! Let’s hope we can do it! Enjoy the football!

The design of the new 205mph Rapide AMR has changed little from the concept that was shown at the Geneva motorshow in 2017, with a large and aggressive front grille that is reminiscent of the extreme track-only Vantage AMR Pro. Meanwhile the circular daytime running lights recall the recent Zagato models.
To help harness all of this power and to launch from 060mph in just 4.2 seconds (0-100km/h in 4.4 seconds), the Rapide AMR has 21-inch wheels – a first for any Aston Martin – paired with ultra-high performance Michelin Super Sport tyres. The large, forged wheels have a multi spoke design that is not only very stiff but also aids brake cooling. To further aid thermal management of the brakes, the Rapide AMR utilises an evolution of the cooling system on the Vanquish S, with modified brake ducts and dust shields.
AMR stands for Aston Martin Racing and the brand draws a direct engineering and aesthetic link between the company’s successful race team and its road cars. As such the Rapide AMR is a sports car capable of comfortably transporting a team of race drivers to a circuit on the other side of a continent and then tackling the track when they get there.
The Rapide AMR’s aerodynamics have been tuned to reduce lift while retaining a neutral balance and the extra aerodynamic bodywork such as the splitter, sills, rear diffuser and boot lid lip spoiler are all carbon fibre. The
At the heart of the Rapide AMR is a naturally aspirated drivetrain that draws much of its technology and character from the potent Aston Martin Vantage GT12. Larger inlet manifolds with tuned length dual inlet runners enhance the airflow into the 6.0-litre V12 engine and, combined with new engine and gearbox calibration, this results in an increase in power. The legendary V12 now puts out 603PS and 630NM of torque, while a new quad exhaust ensures a raucous sound befitting of the AMR badge.

As standard, the Rapide AMR comes fitted with carbon ceramic brakes. Measuring 400mm at the front with six piston calipers and 360mm at the rear with four piston calipers, this is the first time that a Rapide has been fitted with such stopping power. The carbon ceramic discs are also part of AMR’s ethos to use lightweight components whilst reducing unsprung mass they have a noticeably beneficial effect on the driving experience.
Alongside the new tyres, brakes and aerodynamics, the Rapide’s suspension has also received considerable attention. The new Rapide AMR rides 10mm lower than a Rapide S and although the three stage adaptive dampers remain, they have been thoroughly reengineered to create a car that is more focused, agile and dynamic. Much of this development work has been completed at the newly opened AMR Performance Centre at the Nürburgring.
The Rapide AMR will be available in three different design schemes. The Standard and Silhouette schemes offer four colours – Mariana Blue, Scintilla Silver, Lightning Silver and Onyx Black – with the Standard scheme adding AMR Lime accents to the splitter, sills and rear diffuser. The Silhouette scheme eschews the Lime accents and instead adds a fulllength contrasting stripe in China Grey or Clubsport White.
The Signature scheme matches Stirling Green paint with Lime accents and a Lime stripe for the definitive AMR look. This draws the closest visual link to the Aston Martin Racing team and the liveries of its race cars.
The interior of each Rapide AMR reflects the design scheme chosen for the exterior, with either AMR Lime or Galena Silver welting and stitching. There is a full-length carbon fibre centre console and the seats are trimmed in Alcantara - both firsts for a Rapide. Also available for the first time as an option is a One-77 style steering wheel. Every car has discrete AMR logos stitched into the seats in Galena Silver and each car will come with a limited-edition AMR inspection plaque as well as AMR branding on the carbon sill plaques. In addition to the three design schemes, customers will also be able make use of Q by Aston Martin to further personalise their car. The Aston Martin Rapide AMR will be available globally with the exception of China and Russia and is available from £194,950 in the UK, $240,000 in the US and €229,950 in Germany, with first customer deliveries in Q4 2018.

The Big Green Fairytale is Back Believe all ‘ogre’ again with SHREK THE MUSICAL®. Following the unprecedented success of the first UK and Ireland tour, the big green ogre is back, with his true love Princess Fiona following not too far behind! We’ve caught up with Princess Fiona AKA Call the Midwife star Laura Main to talk all things green and swamp living.
For those who don’t know, can you give a brief overview of the story of Shrek and your character, Princess Fiona? Shrek is the story of a misunderstood ogre who has lived a solitary life until a talking donkey befriends him. When his swamp is overtaken by banished fairytale characters, they go to meet an egomaniac Lord and ruler of the land, who sends them on a quest to rescue a princess locked up in a dragon-guarded tower – and that’s where I come in. Princess Fiona has read all the fairytale books and is waiting for her handsome prince to rescue her to live happily ever after. So, when an ogre turns up, it's not as she had planned. But she is hiding a secret and is not your average fairyland princess. Shrek is about not judging a book by its cover, about being true to yourself and celebrating yours and others’ uniqueness. It is a
fairytale, but not as you've previously known them!
You’re a star of both stage and screen, how do the two differ and are there any skills you take from one to another? In theatre you have to make sure that your performance works for those in the front row and those in the back of the stalls. Being on stage is much more expansive, and even more so in a musical, with the physical elements of singing and dancing. People that watch Call the Midwife find it hard to believe it's the same person. But that is what acting is about, taking on different characters and working in different ways. But I think ultimately it's about being truthful and although you have to project more in theatre, it’s the same for screen and stage. How is it performing in such an iconic role, in such a well-loved story? It's lovely. All of the characters are so well known and loved that there's an immediate connection for the audience in recognising them and the warmth that is felt for them all. The audience are smiling throughout and I can hear they are laughing lots. It's a joy to be involved in.
july018.qxp_Jan 2014 Aff 02/07/2018 23:24 Page 69
How are you and your character similar? We all have different sides to our personality and I love how fiery and feisty Fiona is - as a Scot, I can be both of those things too! I love how there is so much more to Princess Fiona than just trying to look attractive in a dress, I think that’s a great message for young girls.
song ‘I Think I Got You Beat’ which involves Shrek and Fiona falling in love through the medium of burps and farts. Far from conventional! And I know a big favourite for audiences is the 14ft dragon - not that you have to look out for her, you can't miss her!
Without giving too much away, are there any moments in particular we should look out for in the show? I particularly enjoy opening Act 2 in a song that involves tap dancing with giant rats! That is quickly followed by the
Shrek runs from Wednesday 25th July – Saturday 5th August at Milton Keynes Theatre. Tickets are available from www.atgtickets.com
If you could be any other character in the show, who would you choose? Each and every one of the characters is adorable, even Lord Farquaad has his redeeming features - well, he’s very funny! It’s such a strong cast and the ensemble are brilliant in portraying the various fairytale characters. I think whoever you got to play in this show, just like the audience, you’d have a good time.
How are you finding life on the road and what do you most look forward to or enjoy when going to a new place? It’s interesting getting to work in a new theatre every fortnight – no two places are ever the same - and it’s a great way to visit different cities in the UK. I love discovering new places and being able to spend two weeks in a new city gives you time to explore what it has to offer and get a good feel for each place which is a nice aspect to touring.

Jason Bateman and Rachel McAdams star as Max and Annie, whose weekly couples game night gets kicked up a notch when Max’s charismatic brother, Brooks (Chandler), arranges a murder mystery party, complete with fake thugs and faux federal agents. So, when Brooks gets kidnapped, it’s all part of the game…right? But as the six uber-competitive gamers set out to solve the case and win, they begin to discover that neither this “game”— nor Brooks—are what they seem to be. Over the course of one chaotic night, the friends find themselves increasingly in over their heads as each twist leads to another unexpected turn. With no rules, no points, and no idea who all the players are, this could turn out to be the most fun they’ve ever had…or game over. Release Date: 2nd July
