Ways to Integrate Coffee in your Beauty Routine
Coffee is a popular beverage loved by many, but did you know it can also work wonders for your skin and hair? A lot of people spend money on luxurious beauty products, without knowing that they can achieve similar results with ground coffee. Natural products tend to get the job done better at a fraction of the price, coffee is very versatile and can be easily integrated into your beauty regime. While we’re all stuck inside during lockdown, it’s a perfect time to experiment with a few DIY beauty coffee treatments. To help you turn your morning coffee into your beauty saviour, product expert at Coffee Direct, Casey Spencer, has shared the top benefits that coffee can bring to your beauty regimen.
1) Boost hair colour If you’re a brunette, you can boost your hair colour with coffee grounds. Simply mix 240ml of coffee grounds with 240ml of water to create a paste and apply sparingly to damp and freshly shampooed hair. The coffee will add depth to your colour and leave it looking vibrant and fresh. This is due to the acidity of the coffee which also smooths the cuticle of your hair for extra shine. 2) Revive eyes Many eye creams that claim to de-puff your eyes contain caffeine in their ingredients. The area under your eye is a lymphatic channel that drains poorly, the caffeine helps to remove any water from the channel. Through the aging process, the under-eye skin gets thinner which makes it easier to see the blood vessels. The vessel-constricting impact of coffee delivers visible results that last from 30 minutes to 1 hour. 3) Exfoliant Coffee grounds make a great exfoliant since they don’t dissolve in water. They are perfect for scrubbing away dead skin cells. To make an exfoliating coffee scrub, mix 60ml of fresh coffee grounds, 60ml of brown sugar and a few drops of lemon juice. Scrub the mixture into your skin every few days after a body wash and let it sit for a few minutes before rinsing it off.
4) Foot soak Coffee is an excellent way to cleanse the skin on your feet and leave them feeling soft. The coffee grounds remove the dead skin cells from the soles of your feet and the stimulating effects of caffeine can increase blood flow and circulation in the area. To make a foot bath, add 470ml of coffee grounds to 1 gallon of water and let them soak for 10-15 minutes, rinse feet, dry and moisturise, this treatment works well with warm or cool liquid. 5) Boost hair growth Coffee increases circulation when it is absorbed into the scalp, this encourages growth by providing nutrients to follicles. Coffee suppresses DHT which is the hormone that causes hair loss! To create a treatment, mix 240ml of coffee grounds with 240ml of coconut water and massage directly onto the scalp and rinse thoroughly. The circular motion helps to increase hair growth and the coconut water contains vitamin B which strengthens strands to reduce breakage. 6) Soft lips Chapped lips are most common in winter, but it is best to take care of them all year round. Coffee grounds can be mixed with coconut oil to create a nourishing lip mask. Mix and massage the 60ml of both ingredients lightly over the lips and remove with a damp washcloth. Coffee stimulates blood flow to the area so your lips will end up looking full of natural colour.
7) Brightening Coffee wakes you up for the day ahead, and it can do the same for your skin! When applying your DIY coffee face mask, the stimulating properties of coffee improve blood flow and help to remove the dead outer layer of the skin leaving you feeling radiant, bright, and revived. Make a paste by combining 240ml of coffee grounds and 240ml of milk, apply to your face and leave it on for 10-15minutes then wash your face with lukewarm water to discover your new glow. www.coffee-direct.co.uk

10-min Daily Zen Routine to Beat lockdown blues
T
his calming, happiness-boosting, energising daily routine stemming from the ancient Japanese art of zen is the perfect way to beat lockdown blues. First practised over 1,000 years ago, zen is one of the key sources of the meditation and mindfulness trend that has swept the West.
Plus with meditation, you get to know yourself on a deeper level and the inward connection can sometimes lead to states of elevated consciousness - naturally blissful experiences that hardcore meditators sometimes refer to. Here is a simple Zen routine you can practise daily to beat those blues:

1. Cultivate Gratitude In Zen, there is an emphasis on cultivating an attitude of gratitude. Being grateful and focusing upon the blessings in our life helps to change our perspective about how we see life in general.

follows attention. Instead, if we bring our attention to all the positiveness in our life, then that will attract more of it.
So spend a few minutes per day thinking about what you’re grateful for in life. This will elevate your happiness levels. We can even learn to be grateful for our most uncomfortable circumstances in life as they ultimately reveal what we need to heal and how we can grow. And as the Zen proverb goes, 'No mud, no lotus'. 2. Boost your energy In Zen, it is believed that when the hara (the belly area) is strong and energized, you are powerful and grounded. When it is weak, we can feel overly emotional and susceptible to stress. There is a powerful breathing exercise you can do to cleanse the hara and immediately release stressful emotions (which are often stored in our gut area).
Simply inhale deeply through the nose and, as you exhale, make a strong ‘ha’ sound, gradually opening your mouth as wide as it comfortably goes. Repeat this 10 times.
3. Meditate This can be either first thing in the morning or before you go to bed. Meditation reduces the stress hormone cortisol. It also alleviates existential angst – feelings of separation and isolation. It’s best to learn zazen (sitting meditation) working with a Zen teacher but you can still begin on your own. Find a peaceful spot where you won’t be disturbed. First, stretch, wriggle, shake the body. Allow as much stress to discharge as you can and then return your body to an upright, balanced alignment. The key aspect to correct form is the relaxed poise in your trunk, spine long, chin drawn slightly back, hands in your lap, eyes soft and lowered.
When the body is poised and upright you can breathe well. In Zen we rest the attention on the movement of the abdomen, not trying to force or manipulate the breath but simply staying with the sensations generated by this rising and sinking. Start by mentally counting in-breath, one…out-breath, two. In-breath, three…out-breath, four. And so on, up to ten, when you can start again at one. It’s very simple. Just counting. Just breathing. Any thoughts, feelings, memories, anything at all, can arise, stay around and pass – but your focus point, the centre of your attention, is the breathing
deep down in your body. Any time you get distracted and lose count, just come back to your breath and start again at one. As your mind becomes more focused and concentrated, naturally you’ll find your breath softens. As your breath becomes more light and gentle, your body becomes more and more relaxed and comfortable. 4. Let go of any emotional pain For many people, painful emotions have a more prominent place in life than physical pain. Guilt, lack of confidence, grief, anxiety and despair can colour our life. The Zen secret to working with emotional pain is found in the acronym AA – awareness and acceptance.
With Zen, we simply treat our emotions like floating clouds that come and go. When we stay aware of our emotional pain, without avoidance or judgement, simply accepting it as it arises, extraordinary transformation and healing can happen. We can view pain as a messenger trying to communicate with us and point out disharmonies in how we are living. Sometimes the acceptance is enough to heal the suffering and sometimes there’s a further step - acting in a kinder, wiser way going forward. Try practising this routine every day and see how it makes you feel…

Midlife Madness I have always appreciated the gift of sight – not least as my sister is blind so I can honestly say I have felt grateful every day that I am able to see. One of the cruel impacts of ageing is loss or diminishment of some of our senses. Stereotypically, hearing and sight in particular, we’d hopefully never be rude about anyone’s disability but when you are old and senses diminish you seem fair game to bear the brunt of ridicule. ‘Deaf old twit’ is a phrase that comes to mind – not referring to myself of course. But it is a cruel cross to bear. I started to wear glasses in my 40s and my eyes seem to have been on a steady decline ever since! I am used to the family laughing at the size of the font I have on my phone, at occasionally waving enthusiastically to people that I realise as I get nearer, I don’t actually know, they just bore a passing resemblance to someone I did know.
I now take strict steps to guard against mishaps that happen when glasses aren’t on, like when I get out of the shower and reach for deodorant only to find its actually hairspray – I now make a mental note of the colour of the relevant container. After a few mishaps I will positively never try to reply to a text or WhatsApp without glasses too many disasters there, message misread, reply mistyped sent to wrong person – just disastrous.
But the risks/disasters continue – I found a pot of cream left by daughter on her last visit assumed it was body butter (you are right, I didn’t have my glasses on) but I discovered a few hours later that it was fake tan! Those of you have used fake tan will appreciate it needs a much more careful application that your usual body lotion!!
Then there is the particular challenge of finding your glasses – when you don’t have your glasses! Just let that sink in for a moment! So I regularly run around the house looking for glasses, especially when it’s sunny as I have prescription sunglasses so I often take of my usual glasses in all sorts of random places then when I complain its getting dark early I am helpfully remined by my family that it might appear that way as I am wearing my sunglasses indoors I then have to start the search, in the dark created by my sunglasses or occasionally with no glasses at all for the very thing that will help me find them – if you see what I mean.
But it doesn’t happen this way for everybody. My dear hubby who has needed glasses since he was a teenager but in fact uses contact lenses mostly, started saying over recent months that his sight was improving, which I genuinely think it his. However, over a period of a few weeks when he became utterly convinced that a veritable miracle was occurring he then discovered that somehow he had left contacts in his eyes. In case you are wondering these are dailies and they were in for about 8 weeks – yes not good for the eyes I am sure! Now our evening routine includes the question ‘have you taken your contacts out’ which I can tell, because I am super observant that it is irritating him. Although to be fair if I’ve taken my glasses off he could be pulling all kinds of faces at me and I wouldn’t notice, and as for hearing as I now need the TV volume on 35 and still sometimes I need subtitles he could also be muttering all sorts of insults and I would assume he was saying goodnight darling!

One of the things that recent weeks and months has probably shown us is that there are a lot of very simple pleasures that we take for granted, or at least can easily take for granted. It’s not an understatement to say the world has changed and some of the things that were regarded as a normal part of life have been denied to many people. But one of the dynamics is that we often find things we take for granted become especially appealing or exciting when we can’t do them for a while.
Who would have thought a few months ago that we’d get such a kick out of meeting up with a mate in the garden or other outdoor space and enjoying spending time together while staying 2 metres apart? Yet that has been the reality for many of us. While recent times may have brought loss, sadness, anxiety and all kinds of stress for many people they may also have provided us all with a chance to revaluate what is important to us, and if any good can come out of what has been an awful situation then maybe that can be a change in our priorities. The Power of Now Some of you will have read the book ‘The Power of Now’ by Eckhart Tolle and far be it from me to offer any kind of synopsis of such a great book but as you can gather from the title the central theme is of being present in the moment, letting go of past and future and focussing on the here and now. This is what is beneficial for us in terms of health and wellbeing and is a great antidote to stress which, unless we are under threat, usual comes from thoughts about the past or the future. In times of recent uncertainty and change, many of us have found solace in just concentrating on the moment taking a few deep breaths, practicing some mindfulness or meditation or doing a simple grounding exercise like the one below. You can do it anywhere but one of my favourite places is in the woods.
Grounding Exercise Take a few deep breaths to calm your mind then look around and identify: 5 things you can see. 4 things you can hear. 3 things you can feel 2 things you can smell. 1 thing you can taste. Conscious Gratitude Much has also been written about the power of gratitude in terms of attracting abundance, creating positivity and promoting mental and emotional wellbeing.
Gratitude is not really about our situation; it is about a conscious decision to focus on certain things. So, if we
decide each day to focus on things that we have, that we can be grateful for then not surprisingly we will find those things. If we choose instead to focus on the stuff that irritates and annoys us, all things we haven’t got or can’t do then finding things to be grateful for might seem tougher. As with so many other aspects of life it starts with our mindset, or conscious decision to choose to be grateful. If ever you struggle finding things to be grateful for then give this gratitude ‘game’ a try it’s a great way of shifting perspective. Gratitude Game: Name a person you are thankful for. Name a food you are thankful for Name a place you are thankful for. Name a thing you are thankful for Name anything of your choice that you are thankful for.
Simple Life Mindset Living, and for many of us being brought up in the West, with largely capitalist philosophy, and arguably materialistic mentality there is immense pressure to have ‘things’. Not only to have them but to replace them regularly for better or bigger things and for many there is a feeling that the things give them worth.
Of course, there is nothing wrong with possessions it’s about the importance we attach to them over the importance we attach to other things. Many of us during recent times would have gladly sacrificed some possessions for a few close hours with loved ones. The re-evaluation many of us have found happening has perhaps helped change our mindset and made us realise that there are many simple things that can be enjoyed which we have overlooked. Many of us would have loved eating out, and hopefully can enjoy that again, but after weeks of lockdown the pleasure of having a simple drink in the garden with someone who matters (2m apart) brought immense pleasure.
Many shops were closed and somehow we survived, life slowed down and for many of us tuned back into the simple pleasures of life, a walk, a coffee outdoors, watching nature, connecting with friends virtually, baking a cake or a whole variety of other things that we may not have had the time or inclination to do before. I know some people who are thinking long and hard about the balance of their life when we do return to a ‘new normal’ perhaps not wanting to return to the busy stress filled lives they had before, other are chomping at the bit to get back to that life.

Chilli Salt squid, with Nectarine Fragrant Salad
Ingredients
Chilli salt squid 400g cleaned squid and tentacles 200g cake flour 4tbs salt 2tbs ground white pepper 8tbs red chilli powder
Method
Nectarine salsa 4 x South African nectarines peeled Nectarine salsa dressing 2 chilli minced 2 cloves garlic minced 100ml lime juice 60g palm sugar 80ml fish sauce 20ml rice wine vinegar Sweet and sour herbs 20g coriander 20g Vietnamese mint 20g Thai basil 20g basil 20g mint 20g holy basil 40g bean sprouts 40g thinly shaved radish 40g carrot julienne
Nuoc cham 2 long red chillies seeded and chopped 1 garlic clove minced 1 tbs palm sugar 2 tbs lime juice 3 tbs water 3 tbs Thai fish sauce 2 tbs rice wine vinegar Lime aioli 2 eggs Juice of ½ lime
Mix together the chilli salt ingredients (not the squid) and set aside. Peel and cube the South African nectarines. Mix and emulsify the salsa dressing ingredients and set aside.
Toss together the sweet and sour herbs. Mix together Nuoc Cham ingredients and cook down slowly. Dice the preserved lemon. Blend together the lime aioli ingredients – eggs, lime juice, garlic and mustard and then gradually add oil until emulsified and thick Fill pan with oil and allow temperature to reach 180 degrees C. Dip squid and tentacles in chilli salt and deep-fry in oil until crisp and drain on paper towel.
Dress the nectarine with salsa dressing. Dress plate with aioli and Nuoc Cham, preserved lemon and lime slice. Gently place salad on plate, top with nectarine salsa, top with squid. Recipe by Reuben Riffel (Head Chef at Reuben’s Restaurant, South Africa)

Nicola Millbank’s Pea and Pecorino Quail Egg Arancini “A quaint and dainty quail egg nestled in a pea and Pecorino centre, encased in crisp coating.”
Ingredients
6 Clarence Court quail eggs 1 white onion, diced 1 garlic clove, minced A splash of white wine 200g of pearl barley 600ml of vegetable stock 50g frozen peas, thawed and roughly chopped 50g of butter 50g of Pecorino, grated 2 tablespoons plain flour 1 Clarence Court egg, whisked 4 tablespoons breadcrumbs Vegetable oil for frying
Method Boil the quail eggs for 2 minutes, peel and set aside. In a pan over a medium heat, sweat down the onion in a little oil until softened but not browned, add the garlic and cook for a further minute before adding the barley stirring well. Add the wine and stock one ladle at a time until all the liquid has been absorbed and the barley is cooked through. Add in the chopped peas, butter and Pecorino and season to taste. Spread the mixture onto a tray and allow to cool.
Lay out the flour, beaten egg and breadcrumbs in 3 separate bowls. Take a handful of barley risotto and with wet hands, gently lay a quail egg into the middle and mould into a ball. Roll in flour, dip into egg and roll into the breadcrumbs. Cook two at a time in oil at 160C for 3-4 minutes until golden brown. Drain onto kitchen paper and serve warm.

Summer Berry and Lemon Semifreddo
“Summer brings long lazy days and lots of outdoor entertaining, just perfect for this sweet and tangy dessert�
Ingredients
300g fresh or frozen summer berries (a mix of strawberries, raspberries, blackcurrants, red currants and black berries works well) 150g good quality lemon curd 1 tbsp limoncello (optional) 50g caster sugar 3 Large Clarence Court Burford Brown eggs, separated Zest of 2 unwaxed lemons 400ml double cream 50g shelled unsalted, pistachios (blanched if you can find them) 50g good quality shortbread biscuit Method
Line a 2lb loaf tin with a long strip of greaseproof paper that lines the base and goes up the shorter sides of the tin to leave overhang, this makes it a lot easier to remove or you can fully line the tin with cling film. Then place the tin in the freezer to chill.
Place 150g of the berries into a small saucepan. Simmer on a low heat for around 20 minutes until the fruit has broken down, strain through a sieve into a bowl and allow to cool.
Mix the lemon curd with the limoncello (if using) and place to one side.
Meanwhile place the egg yolks and sugar in a large mixing bowl and whisk until pale then stir in the lemon zest. In a separate bowl whisk the cream to soft peaks. Then in another bowl whisk the
egg whites to stiff peaks. Carefully fold with cream and egg whites into the egg yolk mixture using a large metal spoon. Remove the tin from the freezer. Spoon half of the semifreddo mixture into the lined tin ripple in half of the blitzed berry mixture and scatter in some whole berries then spoon over the lemon curd mixture. Spoon over the remaining semifreddo mixture and ripple in the remaining berry mixture. Reserve the remaining whole berries for serving. Place the semifreddo in the freezer uncovered for 4 hours, then cover and freeze for at least another 4 hours or over-night. When you’re nearly ready to serve, remove the semifreddo from the freezer and place in the fridge for 20 minutes. In a food processor blitz the shortbread and pistachios together to make a crumb. Turn the semifreddo out onto a serving plate or board and scatter over crumb. Slice and serve with the remaining fruit.

Firstly, I hope you are staying fit and healthy during these times. The one thing that everyone should take from these unprecedented times is the importance of family. Whether that be close relatives, or your inner circle of friends, it is important that we don’t take things for granted.
With regards to the football family, at Peterborough United, it has been difficult with our season curtailed and the opportunity to get into the Championship denied. Therefore, we have had to have our football fix through Project Restart in the Premier League. It has been strange to see football played in front of empty stadiums and you can certainly see a difference in the intensity in most games, most games that is apart from the top sides and the new champions of the Premier League, Liverpool. The energy that they have played with throughout this season, coupled of course with the quality, work-rate and desire means that they are worthy winners of the title. It is their first league title in over 30 years and both the earliest and latest time in the year that a side have ever lifted the silverware.
They invested well in the summer after going close last term and their spine of the XI is the reason behind their success. A fine goalkeeper in Allisson who has won them points on his own this season, the best central defender in the world in Virgil Van Dyk, an English general in Jordan Henderson and of course a pure goalscorer in Mohammed Salah. And of course, when you have success, other important and talented cogs emerge, from the incredible talents of Trent Alexander-Arnold, to the class from Sadio Mane, from the surging runs from the Scottish fullback Andrew Robertson, to the unselfish front man that is Roberto Firmino. They are Champions of England, Champions of Europe and can also add the World Champion title to their ever expanding trophy cabinet.
They have deserved to win the league there is no question about that. They have been the most consistent, they have been the most entertaining and they have set the benchmark for next season for teams like Manchester City, Chelsea, Manchester United, Tottenham and Arsenal to try and reach. It is going to be an interesting summer in the transfer market following Covid-19 – who will be able to spend and how much. Hopefully the fact we are talking about those issues means that the world can try and get back to some kind of normality. Let’s keep everything crossed that happens.
