A View from the Experts:
Back to the Future of Afternoon Tea
Did you know that you can enjoy a delicious afternoon tea in a historic setting, where it all began?
Service plates and fine tea sets became treasured family possessions and were passed from generation to generation.
Duchess Anna Maria (1783-1857), the wife of the 7th Duke of Bedford and one of Queen Victoria's ladies-in-waiting, is credited with popularising afternoon tea and the format it is widely enjoyed in today. While it was customary to eat a light lunch and enjoy a later dinner, around 9pm, the Duchess is
After the Second World War and up until the late 1990s, the popularity of afternoon tea waned in the United Kingdom. The end of rationing and a faster pace of life meant people struggled to find the time in the working day to pause for tea and cake with friends. Afternoon tea became a rarity for most and was largely only enjoyed by high society. In the early 2000s, tea rooms and hotels throughout the country saw a boom in demand for afternoon tea. The fashion to offer wacky and creative permutations of this centuries old tradition reflected trends in fine dining restaurants. Recently a change in consumer tastes and a desire for simplicity and quality has driven a return to the once widespread traditional format. Tiring of the more inventive themes, many cherish the resurgence of menus that would be recognisable to those early pioneers of the afternoon tea like Woburn Abbey’s Duchess Anna Maria.
reported to have suffered ’a sinking feeling’ mid-afternoon. At first, Duchess Anna Maria asked her servants to bring a pot of tea and a few light morsels into her dressing room. Woburn Estate sales receipts from the time show that she would have been served Souchong Tea which is likely to have been accompanied by bread and butter, this soon became a habit and she would invite her friends to join her. The menu for this new social occasion centred on small cakes, bread and butter sandwiches, assorted sweets and, of course, tea. This was quickly picked up by other social hostesses including Queen Victoria who by 1855 was regularly hosting formal afternoon teas. It is here that the addition of the famed Victoria Sandwich is likely to have become a staple on the menu. Later during Queen Mary’s reign, for whom afternoon tea was a cherished past time, the format was perfected. Dinner at Buckingham Palace by Paul Fishman describes ‘sandwiches, cakes and biscuits invitingly set out on gleaming silver dishes’.
This style of afternoon tea can be enjoyed at the Duchess Tea Room within the Grounds of Woburn Abbey, made that little bit more enjoyable by role the Estate has played in the history of this popular British past time. Afternoon Tea at The Duchess’ Tea Room including a visit to the beautiful Woburn Abbey Gardens is £15.95 per person, please book in advance www.woburnabbey.co.uk/afternoontea

Did you know feeling stressed makes us hungry for all the wrong foods – bad news in our quest for healthy living. So what can we do? We’ve all done it. Mindlessly wolfed down a triple by-pass burger and chips in front of the computer as we try to meet a work deadline. Or polished off a tub of cookie dough ice cream after hearing bad news. Finding comfort in food is very human. And the trouble is, the more indulgently sweet, salty or fatty it is, the more rewarding we find it – and the more we crave it. It may even help us feel better – at least for a minute or two, until the guilt and discomfort creeps in. Which means that if we’re watching our weight or trying to eat healthier, high-pressure lifestyles are bad news. What’s more studies suggest stress isn’t just a state of mind – it triggers chemical changes in the body that can have long-lasting potentially damaging effects on our health too.
Hormone Rush In stressful situations, our brain signals that we are under threat and floods our body with stress hormones such as adrenaline and cortisol. At first we may be too busy fire-fighting to think about food – part of the body’s natural ‘fight or flight’ response to danger. But if stress goes on, or remains high, cortisol hangs round in the body long after any initial adrenalin rush is over, and tells us to stock up on energy rich foods. A study last year showed that after a challenging morning meeting, or an interaction with an upset client, workers were more likely to go for that extra chocolate bar at lunch. It’s the brain’s attempt to balance out the physical and mental demands of stress. And where better to get that rush of energy and pleasure than salty, sweet and high-fat foods? Which is all well and good if we have used up a lot of energy dealing with a physical challenge. But not so good if we’re slumped in our chair, stressing over a work deadline or worrying how we’re going to pay the mortgage.
Bad News for Our Waistlines As if this wasn’t enough, cortisol can actually affect how fat is distributed around our bodies. And unfortunately, in health and weight terms, it builds up in the very worst place – not underneath the skin, but more centrally around 17
our middles. Not only does this make it harder to shift (fat stored for the long haul!), it raises our chances of health problems such as type 2 diabetes and heart disease. And that’s not even mentioning other knock on effects of too much stress. We all know that when our stress levels are high we’re more likely to feel anxious and have disrupted sleep. This can be a further drain on our willpower – and more encouragement to indulge in comfort eating. Stress Buster So if this is something our bodies are naturally programmed to do, what’s the answer? The obvious one is to lead a less stressful life. However, this isn’t always easy without a major overhaul of our lifestyles. A better option is to change the way we respond to stress.
There are many ways to do this, but if you turn to food whenever you are stressed, here’s one for starters. Next time you feel under pressure and you have an all-consuming desire for a double-chocolate brownie, try this to stop you in your tracks and relax you at the same time. Take 5 (and we don’t mean chocolate brownies!) Before you give into your craving, step back and press the pause button. Tell yourself to wait for 5 minutes – or if that feels too hard, start with 1 minute. You’re not saying you must deny your craving – there’s nothing like a ban to trigger an all-out binge! You’re simply telling yourself to hold on for a minute or so to see if you might be able to deal with your stress in a different way. Now move away from temptation and do something relaxing. Take a walk outside, listen to your favourite music or get some sunshine on your face. Or find somewhere quiet to sit and do some slow breathing exercises. The nature of cravings is that they go in a wave, so use this as a way to ride this one through. While you’re doing this, check in with yourself. How are you feeling? Can you feel your stress levels going down? Even if you end up eating, you should find it easier to go for a healthier option. Continue to ride your cravings through in this way – taking the opportunity to do something pleasurable and relaxing that doesn’t involve food – and you’ll not only feel more relaxed, you’ll break the habit of comfort eating. Which is good for your health, your wellbeing – and of course your waistline. www.vavistalife.com

Midlife Madness I
must confess I love jewellery - all different kinds. The expensive gold bracelet I had for my 21st birthday, the engraved ring, my mother’s pearls, my Pandora bracelet complete with various meaningful charms, and costume jewellery - statement necklaces and rings are not pricey yet they make a big impact, but recently I have seen their hidden dangers.
top, a distinct disadvantage when driving a manual car which requires a left hand to change gear - even if the right hand could reach - you need that one for steering. I pulled my left arm but found that clearly my top was made from some sort of polyester because I couldn’t break the thread. So I pulled harder, panic rising then thankfully noticed a layby so I slid into it in 5th gear and disentangled myself - letting my poor racing heart calm down before driving off - having safely removed the offending murderous bracelet!!
One day I was getting changed for the gym - I’d put on my ‘kit’ and was tying up my trainers when somehow my earring managed to attach itself to the fabric of my gym shorts! I couldn’t lift my head up and actually trying to disentangle it was almost impossible. I must confess to feeling a moment of panic - I spent a few moments wondering whether to ask for help before I suddenly thought that instead of trying to untangle it I should take the earring out of my earlobe, which I managed to do with relief, untangle said earring and then proceed, in a cool, unruffled manner to an exhaustive workout.
Mishaps don’t just happen with jewellery though. Frankly handbags can be a bit of a nightmare too. I divide handbag mishaps into two categories, those that cause damage to others and those that do harm to me. Where handbags are concerned I find that the first category sadly often inadvertently leads to the second. I have also noticed that the size of a handbag these days closely resemble the size of a holdall. The concept of hand luggage seems basically flawed - implying that it can easily be carried but in fact hand luggage bags these day all have wheels which seems to suggest that carrying them is blooming tough.
Then there was the time when I was being really helpful to a colleague (female) at work, as I had noticed a tiny spider in her hair, which I kindly offered to remove. Unfortunately somehow one of my bracelets managed to get completely entangled in her hair - which I didn’t realise until I moved away and she yelped. While entanglement may take milliseconds, disentanglement takes a lot longer, may involve pain and almost always causes embarrassment. But far and away the most dangerous jewellery experience happened when I was driving. There has been a lot of publicity about distractions when driving - no phones for example, but I swear I have never seen a warning about jewellery being dangerous! The other day however I simply lifted up my left arm to rub my itching right ear then found to my alarm that I couldn’t lower my arm, charm from bracelet caught fast on thread from lacy
Anyway, leaving travel aside my handbag mishaps have happened mostly in ordinary places like shops, one involved a rather nice display of candles on a table in a shop at Christmas. All I did was turn round to tell my mate about the display of candles when I heard this rather scary tinkle of breaking glass!! Embarrassing and costly! Then there was the time at a school fete when I turned and a lovingly prepared tower of beautifully decorated cupcakes ended up ……well, being a mess on the floor basically. Not my finest fete moment and I suspect it will take a while to repair my reputation as a good grandma. So I have decided that from now on I will go jewellery free and use only a clutch bag - surely the world will become a safer place. 24

Anger Learning About
lid off - far better to learn how to let some steam escape safely and avoid an ‘explosion’.
Anger is an emotion almost everyone will have experienced and in many ways it has had a bad press. Certainly the feeling is not a comfortable one and sadly some people behave in inappropriate or hurtful ways when they feel angry but it also serves a valuable purpose.
But before we think about safe ways to express anger let’s think about what anger does for us - it’s purpose. Why do we get angry? The root cause of the anger is often one that can be justified. Usually there has been an injustice or (real or perceived) things seem or are unfair.
Anger The way this emotion is experienced differs from person to person, or at least the way people express this emotion differs. Some will shout, slam doors or become aggressive, others may be quieter in their expression but will ‘seethe’ inwardly.
Well there is certainly nothing wrong with that feeling. It is right to stand up to injustice and if we never felt angry about such things then we would be walked over or live our lives as victims. So the feeling is in many ways a good one. It can protect us from being used or taken for granted. Feeling anger is a way of us saying to ourselves ‘I deserve’ better’ or ‘I am worth more than ’. So actually anger can be of value to us, it is good to experience it because usually it means we can see that something isn’t right. Some people seem to anger quickly over what others would see as minor frustrations, and while it is
What we have learned about emotions is that if we don’t find a way of expressing them, hopefully in a way that is safe and doesn’t hurt others, then the suppressed emotions WILL end up causing damage to us. All manner of physical and mental or emotional problems are thought to be caused by suppressed emotions, which is hardly surprising - it’s a bit like trying to push a lid down on a boiling pan - eventually the rising pressure will force the 26
july2016master.qxp_Jan 2014 Aff 23/06/2016 14:59 Page 25
it hard to manage the emotion effectively, but also if we don’t accept the feeling we can often be in danger of really beating ourselves up over it. Our internal voice will be telling us that we are terrible for feeling angry, that somehow it is our fault, or that this is what we deserve. Acknowledging what you feel is the first step in dealing with those feelings in a safe and effective way.
2. Distinguish between feelings and actions. You can ‘feel’ whatever you happen to ‘feel’. Feelings are not good or bad, they just are. They may not be pleasant but they exist. It is how we choose to act because of those feelings that can make a difference to both others and ourselves. Feeling angry doesn’t make you hit someone, or be unkind to someone or even tell yourself you are no good. There are elements of choice in that. We have a feeling but that in itself is not a behaviour - we have elements of choice in that, it may not always seem that we do because sometimes the feelings are very powerful and we end up acting on impulse, which is a bit like a reflex - we don’t choose to blink when something comes near our eyes that is a reflex, beyond our conscious control. Impulse reactions happen when we respond to things with the non-rational part of our brain but we can learn how to manage anger in such a way that we allow ourselves time to consider our response. 3. Put some space between the action and your re-action We have all probably had moments when we have reacted angrily to a situation and later regretted what we did or said. Particularly where anger is concerned it is wise to put some space between the event and our reaction. I know it isn’t always possible but even taking a minute or two to consider your response can be useful. Walking away from the situation just for a few minutes, or taking a few deep breaths can help and, of course, sometimes we have a longer time to consider our response.
true that everyone has their own threshold; if you examine frustrations often they are to do with, if not an injustice as such, things not working out the way we wanted. Being held up in a queue for example when we are on our way to an important event. But the anger we might experience over these more minor situations is often related to other instances of anger, which we haven’t dealt with and they may well have been linked to issues of more importance.
4. Express the feelings safely Some situations require a response, explaining that you felt hurt by something, that something was unfair or standing up for yourself in another way. But the response isn’t the same as letting out the feelings. At some point you have to let out the feelings. It can help to tell someone about the situation or to be upset, allow yourself to cry for example. When it comes to anger some people find physical exercise a good way of expressing their angst.
How to deal with anger 1. Accept & value the feeling and yourself. As we have seen anger serves a purpose, so pretending it doesn’t exist is not really helpful at all. We will all have to contend with unfairness in life and many of us will definitely experience what we perceive as injustice. ‘Stuff’ happens that we can’t control but what we are always in control of, though it may not feel like we are in control at the time, is how we respond to that ‘stuff’.
Anger is a valuable emotion and learning to handle it in a way that doesn’t bottle up the feelings, or hurt ourselves or others is vital for own health and wellbeing and we all need to value the emotion, AND learn to manage it effectively. If you’d like to learn more about how to manage anger contact attuned education on 07921193479 or email infor@attunededucation.com or visit our website www.attunededucation.com

Wining & Dining at The Waterfront W
ith views overlooking the lake, you couldn’t ask for a more idyllic dining location than The Waterfront Restaurant at Wyboston Lakes, whether it’s a cosy meal for two, a family get together, business meeting or girlie catch up you’ll be guaranteed some delicious food and a warm and friendly atmosphere.
Homemade breads with black olive tapenade, olive oil and balsamic teased our tastebuds, whilst we studied the culinary delights of a menu that certainly didn’t disappoint.
After a hectic weekend in London it was the ideal setting to take a step back and enjoy a relaxing meal for two. The fresh strawberry in the prosecco was a nice touch, if the rest of the menu was delivered with as much thought we were in for a real treat.

After changing my mind about four times, choices were made and included free-range Cotswold Chicken Liver Parfait with shallot, tarragon toast and bacon jam – the delicate flavours of this dish blended together perfectly. Pan seared Scottish North Coast King Scallops with bacon-crumbed cauliflower was the other choice, the scallops were so fresh and tender, the crunchy cauliflower was a complete comparassion to the smooth sauce but

both complemented the other A Trio of Welsh Lamb followed, which included loin, crispy belly and slow cooked shoulder – with deep aromatic flavours and a slight kick to the sauce, this was a real delight on the tastebuds. Steak was the other choice and this was cooked exactly as I requested (sorry to any chef’s reading this but I do have steak well done!) accompanied with a skewer of Portobello mushrooms, peppers and oven roasted vegetables – this has to be one of the best steaks I have ever eaten, the vegetables were full of flavours that all blended with each other effortlessly. The dessert menu was just as varied, but for me there was no choice to make. When I saw the symphony of pistachio my mouth was already watering, it certainly didn’t disappoint Presentation was excellent and the texture and flavours of the macaroon, sponge and baklava, all so different from each other yet combined beautifully. Hubby chose sticky toffee pudding (one of his favourite desserts), again a big hit. Dessert was washed down (literally) with a glass of Moet & Chandon Champagne, served in vintage champagne glasses (which I always find more elegant than flutes) – the perfect end to a perfect evening. The whole menu was simply divine; presentation was a work of art, service impeccable and food delicious. The Waterfront Restaurant 0333 7007 667 www.wybostonlakes.co.uk

Add the lemon wafers to a food processor, blend into a fine crumb mixture. Next whip together the cream cheese and cool whip, then add the zest and juice of two lemons. Cream together and begin preparing the jars. Place a large spoonful of the creamy filling in the bottom of a ½ pint jar, then add a layer of the lemon wafer crumbs. Add another layer of creamy filling, and top with another layer of lemon wafer crumbs. Zest the third lemon on top of the jars and serve. Add fresh fruit or mint if you prefer. www.whitneybond.com

Cocktails, Canapés and Cars S
un shining, an Aston Martin DB5 on the lawn, cocktails on the terrace and fine food exquisitely served in the dining room - James Bond eat your heart out!
You could be mistaken for thinking we were extras on a 007 movie, but no we were attending the launch of the new summer lunch menu from Phil Fanning at Paris House in Woburn. Cleverly incorporating award winning British beverages from Chase Williams into a unique 6 course menu and drinks pairings.
Sipping on a Chase Vodka cocktail (shaken not stirred of course) we meandered around the two Aston Martins that were there for us to admire and enjoy and I could but hope that one would be in my goodie bag to take home at the end of the day! Once we were prised away from the cars and the sunshine, we were led to our table in the light and airy dining room to begin our voyage of taste. The experience began, as with all menus at Paris House, with canapés, which included smoked salmon and beetroot lollipops these were simply divine and melted in the mouth, and were followed by fresh Artisan breads - delicious Trout cured with Chase Rhubarb Vodka, Rhubarb Gazpacho & Yoghurt was paired with a Lubéron Rosé (Maison Williams Chase, France, 2015) the textures and tastes combined together effortlessly creating a real treat on the palette. Pea and Elderflower (Peas, Globe Artichoke & Micro Leaves) followed and was paired with Lubéron White, “Papillon” (Maison Williams Chase, France, 2014) – with fruity flavours this dish was complimented perfectly with a wine that was light and fresh. Next up was Ham, Egg & Chips (Pineapple, Egg Yolk & Chase Smoked Vodka) and a Chardonnay, (‘Wild Yeast' 48

Presentation on all dishes was perfection itself, with each dish looking as if it was a priceless piece of art! The final savoury dish was BBQ Lamb Neck (Sweetbreads, Aubergine, Sesame & Courgette) paired with a Lubéron Red, Cuvée Amphorae, (Maison Williams Chase, France, 2014) – the lamb was tender with the other ingredients blending together to create a strong flavour, and the wine again a perfect choice to accompany. allowing us to continue to admire the cars and reflect on an afternoon of exquisite food, unrivalled service, a welcoming atmosphere and a highly recommended pairing! At the EFL (the Football League for those unaware of the rebranding) conference in Portugal, a number of new ideas were floated and passed via a vote with the EFL clubs, including the restructuring of the EFL Trophy (formally the JPT).
address the decline of the competition and this was the offer on the table. Financially, it is more of a fillip for clubs too – the pot to be shared among the EFL clubs has increased as a result of this restructure.
The results of that vote have caused a lot of discussion as clubs have voted in favour of a oneyear trial to include a number of Premier League under 21 clubs. The trophy will now give you a minimum of three fixture, including one against that Premier League under 21 side in a group format.
It is also important to stress that this is a one-year trial and at the time of writing, not all of the restructure has been released to the media. As former winners of this particular competition, we are well aware of the impact it can have on a city. We took over 15,000 supporters to Wembley Stadium for that final against Chesterfield and it was a special day.
This creates the possibility of playing at a Premier League ground, as this was one of the stipulations made on those under 21 teams. All of the clubs in EFL 1 and EFL 2 felt that the competition was dying because of the lack of interest from supporters and also from the football fraternity as a whole, so we felt that something had to be done.
We feel that by changing the competition in this way for one year could give us some answers moving forward to keep it alive. If you don’t try these things, you will never know whether it will be successful. Let’s wait and see.
We know that this won’t be a popular decision, but by the same token, something had to be done to

Aston Martin
A Beautiful New Concept for
A
ston Martin and Italian design-house Zagato unveiled the latest creation from their longstanding partnership. The Vanquish Zagato Concept. This is the fifth car to emerge from a collaboration that stretches back over five decades, pairing Aston Martin's acclaimed sporting, dynamic and material qualities with Zagato's signature design language. From the iconic DB4 GT Zagato of 1960 through to the V12 Vantage Zagato of 2011, every collaboration has accentuated key aspects of Aston Martin's design journey and brought them together with Zagato's own race-inspired design language. The result is a group of four sports cars that represent some of Aston Martin's most avant-garde expressions. The concept features proportions that remain
quintessentially Aston Martin and emphasises a dynamic, forward-looking stance. The new bodywork is entirely shaped from carbon fibre, with the split lines on the body reduced by the use of large one-piece panels. New lights include round tail light reflectors that evoke the classic rear view of a Zagato design, incorporating the same 'bladed' LED technology as the Aston Martin Vulcan track-only supercar. Aston Martin Executive Vice President and Chief Creative Officer, Marek Reichman said 'Over the years, we have developed and refined our own design language and we have always gone that little bit further with our special series cars like CC-100, One-77 and Aston Martin Vulcan. The Vanquish Zagato Concept shows how our two companies can come together and push the definition of Aston Martin design.' 60

the need to accommodate racing helmets with a minimum impact on the aerodynamic profile. To match the bold new exterior, the concepts normally aspirated V12 engine has been updated to 600 PS, along with enhanced driving dynamics.
The Vanquish Zagato Concept features One-77 inspired wing mirrors and a sculptural rear end similar to DB11's aerodynamic profile, complete with retractable spoiler and rear hatch for access to the luggage compartment. A quad-exhaust nestles in the rippling carbon fibre sills that run around the lower body, creating a pronounced line from front to rear.
Inside, the Vanquish Zagato Concept embodies the fine tradition of Aston Martin craftsmanship, replete with many singular touches. Herringbone carbon fibre is paired with shadow and anodized bronze and aniline leather to give the facia, vents and rotary dials a rich material quality. The Vanquish Zagato Concept is also defined by the unique ‘Z’ quilt pattern stitch used on the seat and door sections, as well as the celebrated trademark Zagato ‘Z’ embossed on headrests and stitched into the centre console.
The glasshouse wraps around the bodywork like a visor, enhancing its aggressive stance. A new evolution of the classic side strake runs from wheel arch to door just like the new DB11 and a detail originally showcased on the celebratory CC-100. A sharp crease on the rear wheel arch transforms into the rear flanks, where it meets the cascading roofline. The roof features the iconic 'double-bubble', its shallow radius dipping into the rear window glass to give the car an unmistakable rear silhouette. A Zagato trademark since the early 1950s, originally arose from

Cars and Classics Last month we were lucky enough to be amongst a select few invited to Elms BMW in Bedford to get up close and personal to the Classical Brit Award winning group ‘Blake’, who will be appearing on Saturday 6th August at this year’s Bedford Park Proms. The trio, Oliver Baines, Humphrey Berney, and Stephen Bowman, wowed us with their amazing voices when they treated us to four songs including ‘Chasing Cars’ (Cold Play) and Nessun Dorma. The small audience were mesmorised, Blake were truly amazing and it is easy to see why they have sold over a million albums, and performed in concert and on TV the World over.
The guys mingled and chatted with the audience, posing for photographs, and drooling over the new BMW i8! It is easy to see how they continue to build their reputation as one of the most eclectic and exciting popharmony groups in the world, and why The Bedford Park Proms is nearly sold out! Tickets are priced at £31 each for general entry or £90 each for VIP into The exclusive Park Lounge, whatever ticket type you buy you can be assured you will be witnessing one of the best classical concerts of the year. www.bedfordparkconcerts.co.uk

Sailing Adventures Around the Greek Islands
july2016master.qxp_Jan 2014 Aff 23/06/2016 15:07 Page 65
Clustered across the Aegean Sea from the mainland, the Greek Islands evoke images of blue domed churches and huddles of marshmallow-like white buildings, contrasting with the rocky outcrop and the dazzling blue of the seas, which sparkle below the sun. Much admired for their picturepostcard beauty, the Greek Islands are just as popular for their historic ruins, friendly locals, beaches, rugged landscapes…and for their sailing opportunities. Favoured by sailors for their excellent conditions for sailing, and regaled by many skippers as a unique part of the world, perhaps the best way to discover and experience the Greek islands is by sailing. If you’re looking for a sense of adventure, an authentic local experience, and stunning destinations, then look no further than a sailing trip round the Greek Islands with G Adventures. Even for those who do not have the best sea legs, the rewards of this experience are brilliant. Sailing on a 50ft sailing yacht with an experienced skipper and a maximum of eight in your group (but sometimes as few as one or two people), G Adventures offer an intimate, small group experience, during which you really gain a sense of camaraderie, and a memorable adventure. With no set itinerary in place, skippers have the freedom to tailor each trip to the general interests of the group they’re looking after, whilst ensuring that the journey taken is safe for the wind, weather and sea conditions. No two sailing trips will be the same, so it’s
entirely possible that you could go on more than one G Adventures sailing trip – whether it’s from Athens to Mykonos (or vice versa), between Mykonos and Santorini, or one of their longer Greek sailing trips between Athens and Santorini, or a Santorini round trip – and not visit the same islands! After my recent sailing trip, I felt enriched by the whole experience. I had met people from all over the world, I had visited some incredibly charming little islands, and felt like I had experienced a level of local authenticity which I probably would have been unable to experience otherwise if I was either in a larger group or visiting by ferry or cruise ship, or any other mode of transport (and, indeed, it would probably have been impossible to visit some of these islands with these methods of transport). Not knowing too far in advance what your next destination would be added to the adventure, and it’s important to have an open mind – the journey was just as important and exciting as each of the destinations, and the flexibility, for me, added a special dimension to the trip, as it means that each sailing trip is unique to that group of travellers. Elegance, History and Luxury
at The Stafford, London
Our monthly visit to London this time saw us unearthing the epitome of traditional British Luxury at The Stafford, London. Tucked away in the heart of historic St James’s and despite being one of the finest luxury hotels in London, the surroundings are so quiet it is reminiscence of being in the middle of the countryside, it is so marvellously quiet and with its private cobbled courtyard you almost expect to see groomsmen harnessing the horses in the stables but no, even the stables have been transformed into luxury, charming guest rooms. It is evident as soon as you walk through the doors that this hotel is different, there are no stuffy doormen (they smile) or a receptionist who feels her make up may crack if she smiles, no this is a hotel where you are greeted by warm welcoming faces and you genuinely feel the staff are pleased to see you. Our room was a Junior Mews Suite and as the name suggests was housed in the Mews building (opposite the Carriage Rooms) which was previously office blocks - there was nothing reminiscent of an office block as we made our way through the sleek modern lobby into the lift to be whisked to our suite. The Suite was elegant, spacious and luxurious, overlooking the cobbled courtyard where if you chose to you could just sit and people watch all day – with stylish toiletries from Floris in the bathrooms, a Nespresso coffee machine in the lounge area and for
for those of us who do have to do a little work when we’re away, complimentary WiFi! Every attention to detail has been carefully thought out and the mix of history and new blend together effortlessly. And history is exactly what lies beneath The Stafford, London in its 380-year-old Wine Cellars. Built in the 12th Century by Lord Francis Godolphin, the cellars are a must-visit – home to over 8,000 bottles of the finest wines including a 1982 Bordeaux Chateau Mouton Rothschild priced at £3450 (think we’ll stick to a glass of Pinot!) Master Sommelier, Gino Nardella, oversees the running of the wine cellars that have an amazing atmosphere, shut your eyes and you can imagine London in Victorian times happening above your head! The cellars can be

used to host private events as well as wine tasting and special dining organised by the hotel. But that isn’t it for the cellars, carry on to the far corner until you can go no further and the history just keeps coming, the cellars were used as an air raid shelter in World War II discarded newspapers, gas masks, propaganda posters, sandbags, and helmets lay here having been virtually untouched since the 1940’s. Following our history lesson, a cocktail in The American Bar seemed like a perfect idea – although there’s even more history here - an institution in its own right, one of only two bars in the capital to retain a name that became famous during the 1930s as a means of attracting North American visitors, The American Bar continues to do so long after World War II has ended. Every bit of wall and ceiling space in this bar is taken up with an endless collection of signed photographs and memorabilia from friends, patrons and even a few famous faces. One of the most striking pieces of memorabilia is the ceiling full of hanging baseball caps. Whether on your own or with friends boredom is not a word that would enter your vocabulary in this bar, there is just so much to see, after every sip of drink or gap in conversation you realise you notice something you hadn’t before – so a “Spitfire” and “White Mouse” cocktail accompanied with complimentary bar snacks of green olives, hand cooked crisps and Japanese crackers were the ideal accompaniment to just sitting back and drinking in the ambience of the bar. An evening of culinary delights was awaiting us as we left the bar and made our way to the Lyttelton Restaurant, named after former residents of the Main House of The Stafford London, Lord and Lady Lyttelton, the restaurant provides an elegant dining experience and has been awarded Two AA Rosettes for culinary excellence - we can see why. Beef Carpaccio and Leek & Potato Soup were our starters, the beef Carpaccio just melted in the mouth and the soup was a real treat on the taste buds. I had already decided I was going to have the catch of the day before I even knew what it was and so it was an added bonus when I was told it was salmon (my favourite) and Pork Belly (Hubble’s choice) – both dishes were presented perfectly, and completely delicious. Dessert was rhubarb and Madagascar vanilla panna cotta and white chocolate crème brulee with dark chocolate ice cream and milk chocolate espuma, both were light and divine, leaving us just enough room to finish with tea and coffee and the indulgent sweet treats we were treated to. Our plan was to return to the American Bar for another cocktail after we’d had coffee but we had spent so long savouring the atmosphere and food we decided to just retire for the night and enjoy the luxury of our suite. After an uninterrupted blissful night’s sleep it was time to pay another visit to The Lyttelton, this time for breakfast; offering a selection of perfectly prepared breakfast options including cereals, pastries, yoghurts as well as made to order dishes off the breakfast menu, where I indulged in the scrambled egg, avocado and tomato on sourdough – all I can say is “will the chef come and prepare my breakfast every day?”
