Master the 5-4-3-2-1 technique

4…….Find four things you can touch. Feel the texture of your seat, the in-flight magazine, or even your clothing.

3……Listen for three different sounds. This could be the hum of the engine, the chatter of passengers, or the announcements over the intercom.

2……Identify two things you can smell. Although this can sometimes be more challenging on a plane, you might notice the scent of food or your hand lotion.

1……Focus on one thing you can taste. This could be the food you're eating, or the lasting taste of chewing gum or mints.

By actively engaging the senses, the 5-4-3-2-1 technique helps redirect the mind away from anxiety-provoking thoughts and towards the present moment. This method of sensory focus is known to reduce the intensity of the anxiety response by interrupting the cycle of worry and rumination.

Choose a seat over the wings

Where you sit on a plane can significantly impact your comfort level, especially if turbulence triggers your anxiety. To help reduce anxiety, it’s recommended to choose a seat over the wings, as this part of the plane typically experiences less turbulence compared to the front or rear sections. Additionally, sitting over the wings can provide a more balanced ride, which can help soothe frayed nerves.

Time your meals wisely

Eating at the right time can play a crucial role in managing flight anxiety. To help calm your nerves, it is recommended to avoid meals during the flight and instead eat before or after your journey. Eating before a flight can help you feel more settled and reduce the risk of an upset stomach due to nerves.

Get some sleep

Lessons in Sun Care

With summer and sunny days around, we’re all tempted to spend some time outside in the sun. Sunshine is good for mental health and gives us the chance to get a nice tan.

However, there are some do’s and don’ts for keeping skin protected this summertime, we caught up with cosmetic skin doctor, Dr Miriam Adebibe who shares her lessons in sun care

DO consider anti-inflammatories your skin’s best friend

You’ve heard of the all-important microbiome, the essential layer of goodness that when balanced, keeps skin in tip top health. Unfortunately, excess exposure to the sun’s harmful rays can upset its function. To fix a compromised skin barrier or one that’s becoming vulnerable, anti-inflammatory products are your best friend. Aloe vera contains several chemicals that are antibacterial, antifungal, and antiviral while products that contain ceramides, hyaluronic acid and B5 are also key for balancing summer skin.

DO load up on healthy foods to increase antioxidants

Antioxidants help enhance our skin’s environmental protection and self-repair, protect against skin damage and reduce visible signs of ageing so are vital when you’ll be exposed to lots of sun. Consuming foods that are high in Vitamins A, C, and E will help to protect surrounding cells from free radical damage caused by UVA rays. This means fewer wrinkles and a more youthful complexion over time. For Vitamin A, make sure to include plenty of red bell peppers, sweet potato (with skin!), and spinach in your summer salads. For Vitamin C, alongside your classic citrus fruits, you will find higher levels in watermelon, sweet yellow peppers, parsley and kale.

DO add a Vitamin C product into your morning skin routine to boost the efficacy of your SPF

If you’re prone to hyperpigmentation, just one hour in the sun, unprotected, can undo months of hard work you’ve put in looking after your skin. This is why it’s extremely important to use an antioxidant serum followed by sunscreen every day to maximise your skin’s defence and help stabilise the pigment producing cells. Not only this but research has shown that when paired with SPF, Vitamin C boosts sun protection.

DON’T use sunbeds and remember that SPF is the most important step in your skincare

It may seem tempting to book in a few slots at your local sunbed shop to build a tan before a big event or ahead of a summer holiday, but sunbeds are terrible for your skin. Essentially, you’re exposing your skin to the harmful UV wavelengths that we need protection from. Every single person that walks into my clinic has sun damage. Most of this in place by the age of 18 and as the ageing process is 90% caused by UV, we need to make sure we’re protecting skin from this damage to the best of our ability. To avoid or lessen the effects of UV associated skin complaints, photoprotection in the form of a physical or chemical high SPF sunscreen is key. You should opt for a minimum SPF 30+ and reapply every couple of hours

DON’T forget the dangers of light reflection

You need to be aware of the sun’s reflection which rebounds off sand, water and phones. This light is even more damaging that the sun and electric devices in particular increase the penetration of light. A simple rule is that if you can’t read your phone outside in the sun due to the reflection then it’s a sign to put it away or head indoors.

Coping with ‘Stressisodes’

We’ve all experienced them those episodes when stress, worry, or anxiety seem to overtake us. Sometimes the cause of the stress may be very real and frightening, health scares, financial issues, fear of redundancy or conflict in relationships but if we are honest, there are probably also times when we seem to let stress take over and the matters we stress about, in general, will be things we probably won’t even remember in a month or even a week!

Yet although we might we tell ourselves the matter isn’t so important in the long term our brains seem to go into a very unhelpful overdrive.

Now we all need to be thankful that we have certain survival instincts when we perceive a threat – that’s the fight, fright or freeze response caused when something activates the amygdala in our brain. This is the alarm system of our brain and it flips us into a fear response. Often this part is beyond our conscious control – we might assess the situation but often it is an immediate response to something our brain tells us is a threat. It can be a very real threat, hearing footsteps behind us in a dark alley for example BUT it also activates in response to previous threats we may have known – someone who has previously been mugged in an alley may feel that fear more acutely than someone who hasn’t.

Someone who has grown up in a situation of violence within the home may experience terror at the sound of raised voices - that’s what their past experience has taught them. That might not be an entirely rational fear if they are now grownups and not in a home with violence but it is certainly understandable. Many of us can also be terrified by things that pose no real threat at all – but try telling that to someone who doesn’t want to go into a bathroom because a spider is there. I have yet to read of a person in the UK killed by a spider indigenous to the UK but that doesn’t matter. Sometimes we ARE safe but don’t FEEL safe.

If we don’t feel safe then our brain shuts down the thinking bit getting us ready for physical action by dumping stress hormones, cortisol and adrenaline into the brain, getting us ready for fight, flight or freeze to manage the threat

When it comes to the stressisodes (stressful episodes) the situations are often less dramatic but there is something that steals our peace – perhaps something that was said and we analyse it for every possible meaning or perhaps a challenging situation looms and it would be appropriate to consider it and think of different scenarios but what happens is that our brain thinks ‘oh no’ and kind of flips us into an indepth overthinking with elements of that fear response.

But we all know stress, worry and anxiety aren’t just things that we think of – they have a very physical impact. Now if that impact is short lived as it would have been for our

ancestors facing a physical threat, from a sabre-toothed tiger for example, then that response might save their lives – we can fight, or flea or freeze. But that response is less likely to be helpful when what we are facing a difficult conversation with a colleague or some work that we feel sure we’ll not quite manage or rehashing conversations and ‘what if’s’ in our head! In fact, in those situations it can be very unhelpful as the fear response often stops us thinking rationally. Our thinking brain goes into a tail spin and it’s hard to concentrate or think rationally. At worst a full-blown panic attack could occur - definitely NOT helpful.

Stress has a very physical impact as well as an emotional and sometimes social impact too. In some ways handling the physical feelings might be the easiest. The racing heart, sweaty palms, tight chest, butterflies in the tummy or any of the other physical stress responses.

When the survival response is activated we need to activate the vagus nerve (which connects with almost every organ in the body). Activating the vagus nerve really helps and one of the easiest ways to do that is by breathing. You have probably had all come across different techniques that aim to activate the vagus nerve and bring calm through managing our breathing. Do a YouTube search and find someone that you can enjoy listening to and practice some breathwork techniques.

In some ways the emotional and mental aspects can be harder to manage as our brains flips into over thinking. Analysing the issue from every possible angle and then doing it again and again with lots of what if’s and Dr Pepper (what’s the worst that can happen) moments.

That can help here is simply distracting yourself – change position and what you are doing and that can often deal with it until you find yourself with time to think again. Getting outdoors can help and meditation can definitely help although some people find if they try to mediate when worried it makes it worse. A better approach is to build meditation or at least some mindful moments into your everyday life. Writing things down can also be helpful especially if you find yourself beset with worries when you want to sleep.

In some cases, especially where the problems are real and significant and not just a feature of our overthinking mind (though I am not minimising the impact of these) talking to a friend can really help. In the longer term a bit of a mind reset may be needed – as with everything else we get into habits and that’s the same with our thinking so practice some new patterns to deal with these issues.

Gin-tastic Summer

With summer well and truly here, it’s time to pimp your regular gin and tonic into a summer cocktail to enjoy alfresco with friends.

Take a bottle of Mermaid Gin (£41, John Lewis) and create a Mermaid Seaview Sour:

50ml Mermaid Gin | 25ml Lemon Juice | 25ml Lime Juice | 25ml Peach Syrup | 35ml Orange Juice | A dash of Vegan Foamer

Apple Cider Vinegar Goes Upscale

Who would have thought that humble apple cider vinegar, that tart kitchen staple, would become the next trendy artisan obsession? But in recent years, a new crop of craft apple cider vinegar makers have started treating the fermented beverage more like a fine wine than distilled white vinegar's humble country cousin.

1000 Stories Wine Journey

1000 Stories is the first winery to bring bourbon barrel-aged wines to the market and expand to American oak with its unique ageing process, giving each sip of wine an expressive and bold taste on the pallet. Summertime Charcuterie

Sweet Chilli Salmon Rice Spinach Salad

“Summer is the time to roll out the picnic blanket and take lunchtime outdoors. Ditch the sandwiches and bring a fresh feel to midday dining with this delicious recipe”

Ingredients

200g aborio rice

2 salmon steaks, 240g skin on

1 tbsp vegetable oil

300g frozen edamame

4 spring onions, sliced

200g spinach, roughly chopped

3 tbsp sweet chilli sauce

1 tbsp toasted sesame oil

2 tbsp soy sauce

Method

Cook the rice as per the pack instructions.

In the meantime, pan fry the salmon steaks in a little oil for 3 minutes, skin side down, flip and cook for a further 2 minutes. Remove the skin and flake up when cool enough.

Add the edamame to a pan of boiling water and cook for 3-4 minutes. Drain.

To make the dressing - add all the ingredients to a jar and mix to combine. Add the cooked rice and edamame, spring onions and chopped spinach to a large bowl and add the flaked salmon. Pour over the dressing, toss lightly to combine and serve.

Kale Crustless Quiche

“This delicious crustless quiche is an easy low-carb dish that can be served for any meal. You’ll love the delicious combination of kale, onions and feta cheese”

Method

Ingredients

2 red onion, sliced into strips

1 tbsp vegetable oil

3 cloves garlic, sliced

125g of kale, stalks removed

6 large free-range eggs, whisked

150g Greek light salad cheese, broken up Green salad

Pre-heat your oven to 180C. Add the onions to a frying pan along with the oil.

Fry for 6-7 minutes, then add the garlic and kale. Cook for a further 2 minutes.

Transfer to a bowl along with the eggs and salad cheese. Season with salt and black pepper. Lightly spray and line, a 15 cm round ovenproof dish or non-stick pie tin with cooking oil.

Pour in the egg mixture. Bake for approx. 25 minutes, or until just set and golden and serve with a fresh green salad.

Mangomisu

600ml double cream

500g good-quality mascarpone cheese

2 egg yolks

50g pure icing sugar, sifted

1 vanilla bean, split, seeds scraped

3 mangos, flesh sliced 1cm thick

Juice of 2 oranges

125ml Grand Marnier

300g sponge finger biscuits

Raspberry sauce

55g caster sugar

250g fresh or frozen raspberries

Juice of 1 lemon

Method

Line the base of a 22cm springform cake tin with baking paper, leaving 2cm overhanging.

Place the double cream, mascarpone, egg yolks, icing sugar and whisk until stiff and well combined. Chill until needed.

Combine the orange juice and Grand Marnier in a separate bowl. Dip half the sponge fingers into the juice mixture and layer in the base of the prepared tin. Spread with one-third of the mascarpone mixture, and top with one-third of the mango slices. Repeat the process, then top with the remaining mascarpone mixture, reserving the remaining mango slices to serve. Cover the cake and chill for 2 hours or until firm.

Meanwhile for the raspberry sauce, place the sugar and 2 tbs water in a small pan over medium heat, stirring to dissolve the sugar. Add the berries and lemon juice, crushing berries slightly. Stand to cool completely. Pass through a sieve set over a bowl and chill until ready to serve.

To serve, carefully remove the sides and base of the cake pan and transfer the mangomisu to a platter. Decorate with curls of the reserved mango, then slice and serve with berry sauce.

Late at night . . . Abi and Ben are driving home down foggy country roads, arguing about having had to cut short their weekend away when they take a wrong turn.
