It’s our Birthday! We’re 10 years old, and what a strange time to be celebrating. We had so much planned for all our lovely readers – Travel Giveaway’s, A Massive Summer Party, Cocktail Tasting and so much more, but unfortunately just like the rest of the world we have had to put our celebrations on a temporary hold, we’re looking on the positive of this, it just means it gives us longer to plan!

Last month the weather was amazing, who’s made their garden into their very own sunbathing hot spot? Our fashion pages are just for you with swimsuits to beach bags, earrings to sundresses and everything else you need to chill by the paddling pool in your very own Costa del Garden!

Summer wouldn’t be summer without strawberries and cream, we’ve got our very own take on this with a delicious recipe for ‘Eton Mess’ (page 49), just add a bottle of summer rose (page 47) and you’ve got the perfect alfresco treat. During isolation it’s become a popular trend to avoid makeup and take on the au natural look but that doesn’t mean that our skin routines should also stop, page 26 gives us tips to ensure you’re still replenishing and moisturising daily.

Let’s not forget that special man in your life – your DAD! WAYS TO STAY MENTALLY ACTIVE DURING ISOLATION

The fitness sector has consistently grown as more people realise the many benefits of physical activity and the effects it has on their well-being. Now, more attention is shifting to being mentally active too – the perfect complement your overall activity.

Going for a run or completing another HIIT session indoors becomes part of your daily routine, but what are some more creative ways to keep your brain engaged, healthy and sensibly occupied when in isolation? The International Authority for Professional Coaching & Mentoring is the leading accreditation body for professional coaches. With that in mind, we caught up with IAPC&M accredited coach Rima Dahdah who shares with us 5 ways to stay mentally active during isolation.

1. Challenge your Brain – Chances are, there are many people with an instrument or two collecting dust in their homes. Now might be the time to revisit this, not just as a way to keep occupied but playing an instrument or even learning a new language can keep you mentally active, learning a new skill along the way. These methods have also been proven to improve memory retention and cognitive function. 2. Deal with Stress – Keeping your brain active is one thing, but when stress and worries out of control, it’s time to change the pattern. Consider meditating. There are

many techniques that you can try which don’t require specialist equipment – just you. If that doesn’t appeal to you, reading a book is a good distraction technique so your mind doesn’t wander back to the things you’re looking to manage.

3. Connect with Friends and Family – If you find yourself in the position where you can’t actively see friends or family, there are various ways to get in touch such as Skype or Zoom. Engaging in topical conversations, small talk and venting opens new paths of discussion, keeping your interest and maintaining a healthy, active mind. 4. Stay Active – The mind and body need to be in unison. A moderate 30 minutes of exercise per day will have both short-term and long-term effects on your well-being. There are so many activities you can do that you could do something new every day! You may find it easier with a training partner, so consider checking out the video resources on YouTube that are free and have the coaches doing the exercises along with you.

5. Maintain Basic Good Health Habits – a healthy balanced diet is key to a healthy mind and body. Avoid junk food, fizzy drinks and alcohol and eat from a wide range for the best benefits. One area not to neglect, of course, is sleep. Too much or too little of it is not ideal however, so stick to a solid 8 hours of quality rest per day at reasonable hours.

Lockdown Spa at Home

hat are you missing as a result of the rules governing lockdown? Meals out, cocktails with friends, the gym or exercise classes or just getting some pampering?

A great number of us are pining for our favourite treatments, whether that’s a regular massage or facial or getting our nails or hair done. Despite the memes on social media joking about how we are all going to emerge from lockdown looking like yetis or similar, for many, these treatments are their way of relaxing and getting a little me time, which is of course, is much harder for those stuck at home!

Isla Hannah Knight, founder of JustUWellness, an online booking service, that gives you the power to book a wide range of wellness treatments with the click of a button shares with us her ways to have a lockdown spa at home. She tells us “For me, the ultimate way to access luxurious treatments is to go to a spa for a day and I bet many people are looking forward to being able to do that again. But, in the meantime, why not set up your own home spa? You could put aside some time and space for yourself to relax and rejuvenate”. “So, close your laptop, turn off your phone and thoroughly switch off. Here is my advice for creating your very own home spa, one which will stimulate all of your senses to ensure you emerge feeling fabulous”.

1. Smelling Sensational

It’s no good retiring to the bathroom for your home spa experience if it smells of bleach or other cleaning products. Create the perfect ambience by airing the area well before-hand and then adding some scented candles or essential oils. Decide what you want from your home spa and select your scents accordingly. If you want to emerge calm and relaxed, try some lavender; if you’re feeling anxious or stressed and need something to uplift you, bergamot is the scent for you; to invigorate you after a hard day, I would recommend grapefruit. If you have, or can get hold of, an aromatherapy diffuser, you can combine

scents for specific outcomes. For example, for a sense of happiness, you might want to combine equal measures of frankincense, bergamot and orange. You only need a few drops to create the right ambience, so be careful not to overdo it. You’re looking for a serene environment, not to leave with your nose begging for mercy!

2. Sounds Tight

The background noise is also essential to set the right mood. Make sure you can block out intrusive noise such as next door’s TV, dogs barking and the competing music choices from your own household. Again, decide on your mood and pick your home spa backing track accordingly. For example, if you have the lavender scent for relaxation, choose something gentle in the background. It may be a cliché, but whale songs really are relaxing, or you might choose meditation or healing gong music. If you are trying to lift your mood and energy, try something a bit more

vibey and upbeat. If you don’t want to spend ages planning a playlist, there are some great Apps on both iOS and Android, such as Musicovery and 8Tracks.

3. Looking good

Making sure your sense of vision is appropriately stimulated is also key to putting you in the right mood. Clear away any clutter and products that you are not using before-hand. Staring at a messy room or the toothbrush holder is going to detract from the authenticity of the home spa experience. Ideally the area you are using should be calm and muted in colour but, either way, low lighting is relaxing. Again, candles are a winner here, although if you’re not a candle fan you could try LED or fairy lights in a clear jar (battery powered only in the bathroom, of course) or go retro with a lava lamp.

4. Touchy-feely

Once you have the ambience right, you can get to the most important part which is the sense of touch. Why not start with a gentle, dry body brushing session, followed by a shower, alternating between warm and cold water to stimulate and invigorate your skin and then relax in a deep, warm bath. If you’re using exfoliators or face masks, use ones that cleanse gently and without leaving you feeling red-raw. When you leave the bath, make sure you have chosen your softest towels and bathrobes to relax in afterwards, plus fluffy socks or soft slippers. And make sure you apply topquality moisturisers or oils that feel silky and luxurious against your skin.

5. Taste Sensation

Whether you associate a spa day with health and healthy treats or with decadence and luxury, you can pick food and drink to accompany you in your home spa experience. Make your favourite fruit smoothie or green / chamomile tea or have a bottle of bubbles on ice. You could snack on sweet grapes, dark chocolate and mixed seeds and nuts or mock-up your favourite cream tea treats. While you’re stocking up on essentials, why not pick up a fruit you’ve never tried before, such as lychees, star

fruit or papaya. If the purpose of your home spa is to pick you up and invigorate you, what could be better than a party on your taste buds to really liven you up and send you back into lockdown life stimulated and revived?

Hopefully, these tips help you to enjoy a home spa experience which will break up the rhythm of lockdown and make the time spent that much more pleasant both during and after your home spa. However, if you’re experiencing more serious concerns and, nice as a spa is, it’s not really going to help solve them, then I’d suggest getting some outside, remote help.

There’s a range of implications for people’s mental wellbeing at this time. Some people are very anxious about the whole situation and worrying about the health of their loved ones, others might be concerned about their career and financial future, some are simply struggling with not being able to go out and see friends, particularly those who live alone. By the same token, as much as some families are enjoying spending more time together, there are many that will find it very stressful being with a partner or other family 24/7, especially if they are balancing homeworking and / or already have a difficult relationship with a partner or household member.

A lot of counsellors are now offering their services online or on the phone. You can even get counselling over text messaging, if you feel that is a better option for you. Be sure to do your research before-hand and find a counsellor that has appropriate qualifications and experience. Also consider where you have the space and privacy to talk to a counsellor within the confines of lockdown.

I’m sure we are all looking forward to the end of this time, when we can emerge safe and well and look forward to a healthier future – even if still in need of a bit of a trim! www.justutime.co.uk

Learning to be

Sure in Uncertainty While we may all be individuals and approach uncertainty differently it is probably true to say that it is something many people find challenging. We tend to feel more secure and comfortable when we know what is happening, what to expect and have some ideas about timescales. However much we may tell ourselves about the importance of remaining present and living in the moment we still seem to spend a lot of time focussed on the future. Whether that is the next event that’s about to happen or plans for future ventures some weeks or months ahead. Planning is of course important for a whole host of good reasons not least because it helps us feel and often be, organised and in control.

But as recent times have shown us there are many situations where planning is difficult because there is a lot we don’t know. As humans we tend not to manage uncertainty very well especially when circumstances are well and truly beyond our control. As humans we like a degree of certainty and not having that can be stressful, and as we know stress can be a healthy motivator but when prolonged it can also cause damage. Our brains are hard wired to react to uncertainty, which our brains interpret possible danger. This may have been useful for our ancestors’ eons ago, in fact uncertainty could mean death if faced with predators for example, but that response is not as useful in our lives today. We still must cope with the unexpected but it is less likely to be life threatening than it may have been for our ancestors. Facing the unexpected and dealing with uncertainty is something we all have to do and we will manage it better if we keep the following in mind.

Be kind to yourself You might find coping with uncertainty tougher than others but so what? You are a unique individual and being hard on yourself is never likely to help. Our brains can often seem to drift into self-criticism without us noticing so, manage your self-talk and make a conscious decision to be kind to YOU.

some things that are under your control. Try shifting your attention away from the bigger issue that might be outside of your sphere of control down to the decisions and actions you can control. Part of this might also be limiting what you expose yourself to, if the news, or particular people fuel your anxiety, then avoid them for a while.

Keep Going It might not feel nice when things are tough but often, we have no option but to keep going and that in itself can be a surprise to us. Sometimes our view of our own strength and capabilities is very inaccurate, in that we are stronger than we think, and we do have what it takes, as long as we just keep on keeping on. Take your own advice Not only are we often stronger than we think, we know more too. Sadly though, we usually save all our good advice for others. It can help to put yourself in the position of being a friend – what nuggets would you give them if they came to you for support. Somehow that shift in perspective can be really helpful. Sometimes our brain is able to pull out the stops helping others solve problems in a way we find hard when immersed in the emotions we feel about the situation we find ourselves in.

Acknowledge what we feel Sometimes it can be helpful to sort of ignore feelings and just get on with things. We all do it at times. But if we keep on doing it sometimes it can increase our stress and reduce our ability to problem solve. The danger is that when faced with uncertainty there is a temptation to keep ourselves busy, rushing around trying to control what we can and keeping ourselves busy sometimes to avoid uncomfortable feelings. Remind yourself of your strengths

Ask for help It is also important to remember that we all need a hand and asking for help is not a sign of weakness. Go to those who you know support you either for practical help or for a listening ear, there is an amazing power in voicing our worries and fears. It can make them seem concrete and that may make them seem easier to deal with or bring us greater clarity on what the main issues are.

Focus on what you can control In almost every situation there are some things you can do,

If you are an adult reading this then the chances are that you have coped with uncertainty before and survived. That tells you that you can do it. Think back to what might have helped you cope in the past, perhaps there are things you can try now. Remind yourself that these times too will pass.

Midlife Madness We all read a lot of stuff that make sense and resonates with us but there are also times when we read things, that if we are honest with ourselves, we’d admit is a lot of unmitigated twaddle. One such topic that much twaddle has been written about is multi-tasking.

Trust me, as a woman, I think women have borne the brunt (sorry guys) of the myth of multi-tasking! We have been expected to work like we are single career women while caring for children, if we have them, AND parent like we are earth mothers extraordinaire as well as hold down a job. So, we get it. But that doesn’t mean that we should make single tasks deliberately difficult OR pile on an unreasonable number of tasks just to prove the point to ourselves OR whoever. Now there are some things I really would never NOT give my entire attention too, like riding my bike – foolish if you try to text as well, obviously, or driving a car, but there are many other things that I have thought were okay to give less that whole hearted attention too! To my cost!

The first was running a bath, if you like them hot, deep and full of bubbles then it does take a while so I simply wandered away but then somehow got involved in sorting out a draw that wouldn’t open and…well you can imagine what ensued.

Then there was the time, which isn’t even really multitasking it’s kind of filling a void – just the choice of filler wasn’t brilliant. I knew I had to wait at home for a delivery – they said in the morning, so I thought to myself that’s great – I can do a morning yoga session. Got my favourite youtube yoga teacher on the TV and got myself into the zone! It was very exerting and so when it came to the end bit (which I must confess is my favourite the lie and relax) I somehow drifted off. I honestly can’t believe he rang the

bell 3 times – unless of course the battery had gone – which means it wasn’t really my fault at all!

Cooking, I generally give my whole hearted attention too and thankfully there are timers that beep etc so pretty safe…….unless the phone rings. In our house it has to be the land line as my mobile works well when I’m mobile but at home is about as much use in connectivity terms as a bar of soap! But the land line was in the lounge it was a friend I haven’t spoken to for ages and well – let’s just say the family thought ordering pizza was a better alternative to my incinerated shepherd’s pie.

I guess what I can learn from it all, which I believe is increasingly being backed by science is that often we do things better when we do them one at a time. Our brains though massively complex and effective do function better (or a t least mine does) when concentrating on just one thing. I bet we all know this yet we insist on trying to do several things at once. I mean some combos work – a crossword while drinking coffee, listening to music while cooking or working (that even works for driving as long as not too much energetic dancing takes place) and a few other things but if we just forget our massive to do lists for a moment and concentrate on the thing we are actually doing maybe we’d all be a lot happier. I cannot count the times I have started to make a coffee – then thought it would be a good plan to go and do something else, while the kettle boils – then half an hour later still haven’t had my coffee. So, I try again maybe even get the water into the coffee pot. The just pop to do something else and then go to pour the coffee and its lukewarm. It would have been much better to spend 10 mins simply making a coffee whole heartedly! In fact, I have started to wonder lately what the captain and look out of the Titanic were doing! Health Mistakes you could be Making

During Self-isolation e are currently in the centre of a global pandemic, many of us are inside self-isolating. Having your entire schedule altered and steering away from your normal routines results in habits developing that may seem harmless at first but will later be detrimental to your health. During your daily walks and hours in your garden, the sunshine is out – even if you can’t see it. It is important to still wear your SPF, it may seem unnecessary as you only spend a ratio of your day outdoors, but the UVA rays are still strong enough to lead to skin damage. SPF also gives your skin extra protection if you’re working near a window, unfortunately, glass doesn’t block all ultraviolet or UV light. Another factor is video calls, that isn’t great for your skin either. Blue light is neither UVA or UVB light but it can arise from natural sources but also devices such as computers, smartphones and LED. Too much blue light can affect sleep by suppressing the secretion of melatonin. Look for sunscreens that contain a mineral blocker ingredient, like zinc oxide with extra antioxidant serums, they may be useful in blocking blue light.

Excessive Alcohol Consumption With virtual drinks becoming the new norm, it’s not a surprise that everyone has been consuming more alcohol than their daily intake. People are turning to alcohol to escape from the uncertainty of the lockdown but having more than you should has consequences for your immune system. Excessive drinking can lead to an increased risk for infectious diseases and can take you longer to recover.

Alcohol can also rob your skin of its natural radiance and leave it dehydrated. This because it’s a diuretic. Diuretics are substances that increase the production of urine, which dehydrates the body and causes the skin to look drier, feel less plump and makes your fine lines more visible. Alcohol increases the inflammation and changes the hormonal

milieu in the skin, this worsens acne and rosacea. If you begin to see these changes in your skin, avoid wines, cocktails and chasers that have excess sugar or consider having a detox.

Growing your Nails It is not known how long coronavirus can live on skin and nails, but we do that if your nails are not cleaned and are too long, it can harbour germs. Bacteria, dirt and debris can collect under your nails which is then transferred into your mouth if you bite your nails. Repetitive hand washing can dehydrate your nail beds too. Keep your nails trimmed so that the nail does not reach over the top of the fingertip and avoid using artificial nails because germs can live on the crevices post hand washing. If you want to care for your nails, use a cuticle oil every night to keep it moisturised, less prone to splitting and prevents them growing weak.

Over Cleansing Whilst we are having a skin detox in order to achieve perfect skin, you might be washing your face too many times, increasing the chances of your skin breaking out. Excessive washing will interfere with the normal pH balance of the skin, which will corrode and strip your skin of natural oils. These are on your skin to keep it soft and supple during the entire day.

To avoid altering the natural glow of your skin, wash your face in the morning and before bed. If you must wash your face more than twice daily ensure it’s after a workout, this reduces any unnecessary skin damage. Aggravating your Skin It is no surprise that picking your spots, dry skin and eczema will only end in disaster for your complexion. Picking can turn a small spot into a larger and permanent problem. Now is more important than ever to keep your hands away from your face so ensure you know the risks you take when your hands meet your face. If you wish to target a whitehead, use something other than your hands to limit the chances of bacteria entering the wound when your skin is trying to heal. Ensure you don’t resort to picking your skin out of boredom as this can lead to dire long-term effects for your skin.

Potato & Wild Garlic Flat Breads with Fried Eggs & Olive Oil “Makes 8 potatoes flat breads which you can flavour with all sorts of tasty toppings!”

Ingredients

About 200g potatoes, peeled and cut into chunks 400g Strong white bread flour, plus extra for kneading 1 large bunch of wild garlic leaves, finely chopped 2 teaspoons instant dried yeast 1 teaspoon fine salt

To Serve 1 knob of butter 4 chicken or duck eggs 4 tablespoons extra-virgin olive oil wild garlic leaves and flowers, if available (chive flowers also work well) Salt and freshly ground black pepper

Method

Bring the potatoes to the boil in a large pan of salted water. Cook for 15–25 minutes, until tender. Drain in a colander, then leave for 15 minutes to allow the steam to evaporate. Mash until smooth. Combine the flour, mashed potato, chopped wild garlic leaves, yeast and salt in a large bowl, then gradually stir in up to 250ml of water, until the mixture forms a soft dough. Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until it feels smooth and elastic, sprinkling on a little more flour only if the dough feels very sticky. Cover and set it aside somewhere warm to double in size. This should take 2–3 hours. When you’re ready, divide the dough equally into 8 pieces. Flour your hands and roll each piece into a ball. You can either use a rolling pin to roll out little rounds or simply flatten the balls with your hands. Use plenty of flour, as the dough will be soft and sticky. Heat a large frying pan over a high heat until hot. Shake off any excess flour from one flat bread and lay it in the hot pan. After a minute or so, check the underside – if you can see dark brown patches, flip it over. Cook the second side for 30–45 seconds, then remove and set aside to keep warm. Repeat for all the flat breads. To serve, heat another large frying pan over a medium–high heat. Add the butter and, when bubbling, crack in the eggs and fry them to your liking. I prefer them easy-over, so I flip them for a moment. Top the warm flat breads with the fried eggs. Trickle over the olive oil and season with salt and pepper. Pan-fried Duck Breasts with Peach and Cinnamon “Duck breasts taste sensational with this spiced peach sauce”

Ingredients

Finely grated zest and juice of 1 small lemon 1 garlic clove, crushed 1/4tsp ground cinnamon 1/2tsp ground cumin 2 duck breasts, skin removed if preferred 1tbsp olive oil Salt and freshly ground black pepper Chopped fresh parsley, to garnish Peach, cinnamon and lemon sauce: 1tbsp olive oil 1 garlic clove, crushed 2 South African peaches, pitted and sliced 2tbsp apricot jam 1/4tsp ground cinnamon 1tbsp lemon juice 2tbsp pomegranate seeds

Method In a shallow bowl, mix together the lemon zest, lemon juice, garlic, cinnamon and cumin with a little salt and pepper. Score the duck breasts, then add them to the mixture, turning to coat. Leave to marinate for 10-15 minutes. Preheat the oven to 200°C, fan oven 180°C, Gas Mark 6. Heat the olive oil in a frying pan that can be transferred to the oven. Over a high heat on the hob add the duck breasts, searing on both sides. Transfer to the oven and cook for 5-6 minutes. Meanwhile, make the sauce. Heat the olive oil in a large frying pan. Add the peach slices and cook over a high heat for 1-2 minutes to sear them on both sides. Add the garlic, apricot jam, cinnamon and lemon juice with a splash of hot water (3-4tbsp). Turn the heat to low and simmer gently for 2-3 minutes. Add the pomegranate seeds and adjust the seasoning, if needed. Allow the duck breasts to rest for a few minutes, then slice and arrange on serving plates. Serve with the sauce and garnish with parsley.

Smashed Chinese Cucumber Salad

“Not only will you never beat a cucumber any another way again but it will become simply the quickest and tastiest cucumber salad ever�

Ingredients

6 small cucumbers For the sauce: 30 g soy sauce 40 g honey 40 g sesame oil 10 g rice wine vinegar 1 tbsp toasted peanuts 1 tsp crushed ginger 1 tsp crushed garlic 2 tbsp chopped fresh coriander 1 small red chilli

Method Wash and cut the cucumbers lengthways in half. Beat them and bruise them until they are slightly tender and broken. Make the sauce by combining all the ingredients for the sauce and tasting it for sweetness, saltiness and sourness. You can balance this the way you like by adding more of one or the other. Mix the rest of the ingredients with the sauce and cucumbers. Let it stand for a few minutes so that the flavours can mingle a bit and become good friends. Serve by itself or as a side for grilled meats, fish, fried rice, curries or even hearty stews. Notes If you are allergic to peanuts or don't like hot chillies then just leave them out. Plum and Nectarine Cheesecake “This amazing baked cheesecake tastes divine topped with luscious South African plums and nectarines”

Ingredients

For the biscuit base: A little melted butter or vegetable oil, for greasing 60g butter 150g digestive biscuits, crushed 1tbsp caster sugar For the filling: 3 x 250g packs full fat soft cheese 200g caster sugar 3tbsp cornflour 1 lemon 1tsp vanilla bean paste or vanilla extract 3 large eggs 150ml double cream

For the decoration: 2 South African plums, pitted and sliced 2 South African nectarines, pitted and sliced Mint sprigs (optional)

Method

Adjust the oven shelves – you need to bake the cheesecake in the centre of the oven. Preheat the oven to 180°C, fan oven 160°C, Gas Mark 4. Brush the base and sides of a 20cm (8 inch) spring-form cake tin with melted butter or vegetable oil, then line with baking paper. Melt the butter in a saucepan, taking care that it doesn’t get too hot. Add the biscuit crumbs and caster sugar and stir well to mix with the butter. Tip into the cake tin and press into an even layer. Transfer to the oven and bake for 10 minutes. Remove and leave to cool on a wire rack. Increase the oven temperature to 220°C, fan oven 200°C, Gas Mark 9. In a large bowl, beat the soft cheese for a few seconds with a hand-held electric mixer on a low speed. Gradually add the caster sugar on a medium-low speed. Sprinkle in the cornflour and beat again for a few seconds. Using a fine grater, grate in the lemon zest. Add 1tbsp lemon juice, stir it in, then add the vanilla bean paste or vanilla extract. Add the eggs a little at a time to the cheesecake mixture, beating between each addition on a medium-low speed. Add the double cream, folding it in with a large metal spoon to give a smooth, light, quite thick consistency. Tip the filling over the biscuit base. Bake for 10 minutes, then reduce the temperature to 110°C, fan oven 90°C, Gas Mark ¼. Bake for 35 minutes. The cheesecake should wobble slightly in the centre. Turn off the oven and leave the cheesecake in the oven for 1 hour. Cool at room temperature, then cover and refrigerate. When ready to serve, decorate the cheesecake with the sliced South African plums and nectarines, adding a few mint sprigs if wished.

Eton Mess Semifreddo “Perfect for British strawberry season this easy Eton Mess is a delicious summer treat”

Ingredients

175ml Shaken Udder Strawberries & Clotted Cream milkshake 225ml thick double cream 125ml crème fraîche 280g strawberries, leaves removed and cut into halves 1 tbsp caster sugar 2 meringue nests, crushed For the strawberry sauce: 12 strawberries, leaves removed 3 tsp icing sugar To decorate: 1 meringue nest, crushed Sliced strawberries

Method Line the bottom of a 22cm x 12cm loaf tin with greaseproof paper.Place the Shaken Udder Strawberries & Clotted Cream milkshake and thick double cream into a large bowl and whisk with a stand mixer, or an electric whisk, on a high speed for 710 minutes until the mixture is thick and airy. Fold in the crème fraîche, sugar, strawberry halves, and crushed meringue, then transfer into the loaf tin. Cover with clingfilm and place in the freezer overnight. To make the strawberry sauce, place the strawberries into a food processor and blitz to a smooth purée. Add the icing sugar and pulse again. Alternatively, this can be done with a stick blender. Pass the strawberry purée through a sieve then place to one side. When you’re ready to serve, take the semifreddo out of the freezer and run a knife around the edge of the tin. Turn out onto your serving plate, remove the greaseproof paper, and top with the crushed meringue, sliced strawberries and strawberry sauce. Recipe Credit: Matilda Bourne

Fry’s Footie Corner It continues to be a very tough time for every club within the EFL. For us, in League One, at the time of writing this column, we have no idea what is going to happen and that is both in the short term and in the long-term. I have gone on record and said that I fear for a lot of clubs within the football pyramid and I am amazed that no help has been forthcoming from the Premier League, which is awash with cash, or the PFA who are sitting on about £50 million which could help their members protect their livelihoods. This world crisis gives us the opportunity to put our own house in order and we must grasp that with both hands otherwise we will see half the league go out of business and that will be a crying shame for the communities of those clubs because so much work is done to support the local area. Football really needs to return soon and that is across all levels and naturally the lower that you go down the pyramid, the more financial assistance we will require because we don’t have the fans inside our stadiums, which is the lifeblood of our clubs. Players want to play football. Manager’s want to play football. Supporters want to watch football via online streams, and it is the fairest way to complete the campaign. We just need a bit of help to get to that point and I hope those authorities realise that they can play a massive part in the game’s future and if they will not get involved, then the government should step in to save football from a collapse.

I have been in the game a very long time and have held numerous positions within a football club including Director of Football, manager and owner and I know exactly how much money it takes to keep a club going month to month with income from matches. We are entering our third month without that revenue and if it goes on any longer, it doesn’t take a rocket scientist to work out what will happen. The help is required now. Not next week, not next month, now. I hope and pray that help is forthcoming.

The Premier League and Championship are back in training, there is no reason with a bit of support why we can’t be too.

The historic Manor House dates back to 1879 and is home to 12 beautiful bedrooms, whilst a further 30 bedrooms can be found throughout the Estate along with 4 stand-alone sumptuous selfcatering cottages and finally the ideal accommodation for a romantic escape, the luxurious ‘Loft Suite.’ Located within the main hotel this suite is just spectacular, why would you want to leave when you have everything you need all behind the closed door?

Walk through the Loft Suite door directly into a small entrance area, complimented by a colour palette of yellow and grey Laura Ashley wallpaper, coat hooks that spell out Highbullen and your own private infa-red sauna, complete with colour changing mood lights and sound system, it’s a wonder we made it up the stairs to the first floor to explore the rest of the suite, but I’m glad we did, the contemporary luxe feel just kept on flowing.

The grey palette continued up the stairs into the main bathroom complete with a monsoon shower, White Company toiletries and a steam room - this isn’t just a suite it’s like your own hideaway apartment hidden away inside the historic walls of this beautiful country house. The lounge is spacious with a charcoal grey velvet sofa, Nintendo Wii, 3D Blu-ray player and even 3D glasses! Then there’s the bedroom, absolutely gorgeous, from the sumptuously comfortable bed, floor to ceiling window complete with window seat to the freestanding bath, everything here was beautifully indulgent – the only problem was to steam, sauna or bath!

I chose to bath and hubbie chose to steam, it’s just like having your own private spa, one of which we would have happily luxuriated in for the duration of our stay but bellies were rumbling and food was calling in the form of dinner in the hotels Devon View Restaurant, aptly named because of the stunning scenery that is visible from every angle of the room thanks to the vast windows surrounding the restaurant. But first pre-dinner drinks served in the cellar bar,

a cosy space for a drink, bar snack or game of billiards, which of course we played and of course I didn’t win!

We pursued the menu (one that uses locally sourced produce as much as it can) as we relaxed in the atmospheric cellar, G&T in one hand, menu in the other, until our starters were ready and we were lead through into the restaurant.

An amuse bouche of leek and potato soup began our culinary journey, full of strong delicious flavours a sure sign of the delightful meal that was to follow. We had both opted for the free-range chicken thigh for starters, which was served with a poached hen egg (cooked to perfection) on top of a sage crumble. The meaty flavours of the chicken were enhanced further by the egg and sage and proved to be a perfect combination of flavours for the palette. Mains were a Tarragon mustard fillet of hake with crushed potatoes, broad beans, courgettes and bok choy. Colourfully presented, this dish reflected the flavours of springtime effortlessly and was a mouth-wateringly delicious treat for the taste buds. Hubbie’s mains was a roasted duck breast with fondant potato, roasted artichokes and braised red cabbage, a flavoursome dish that was cooked to perfection, a definite hit.

I decided to end the evening with a Belgian milk chocolate marquise which was served with banana and lime ice cream and toffee popcorn, the crunchy popcorn textures complimented the smooth delicious chocolate marquise effortlessly and the ice cream brought a refreshing after taste to the palette. Hubbie opted for the pineapple soufflé which was served with toasted coconut ice cream – the soufflé was light (as it should be) with the pineapple adding a delicious fruity kick. Suitably full from some fabulous food, we debated another game of billiards (I could try to win at least one game), but the pull of our unique Loft Suite was too great, so we retired to our room for a little more spa-ing before retiring for a blissful night’s sleep. Breakfast the next morning was a delightful assortment of buffet and freshly ordered dishes from the menu. I highly recommend the pancakes with maple syrup and hubbie loved the full Devon breakfast, everything was so fresh and tasty.

It was a beautiful sunny day so we decided to head out to Woolacombe for a walk on the beach and some fresh sea air. If

you’re not a beach lover there’s plenty of other things to entice you to explore, from pretty Devon villages with cosy country pubs and old churches to lovely gardens such as Castle Hill and RHS Rosemoor, the latter being home to the largest rose garden in the southwest. For walking enthusiasts, the South West Coast Path, Exmoor and Dartmoor are perfect for rambling walks, horse riding or simply taking in the wild and rugged scenery. The smell of fresh seaside fish and chips was so tempting, but we didn’t succumb (we can always come back tomorrow) as we were heading back to Highbullen and its newly opened Laura Ashley Tea Rooms for a Great British tradition – Afternoon Tea. Designed in the distinctive Laura Ashley style, the room is just perfect in every way. From its spectacular scenery, lofty ceilings, stunning lighting and relaxing fire, the colour palette of light greys, yellows and whites accentuated with turquoise blue velvet chairs and accessories is the ideal place to enjoy afternoon tea, served of course on Laura Ashley crockery.

The afternoon tea itself was a decadent delight of savoury treats (hot fish goujons with tartare sauce and homemade warm duck and quail scotch egg, served with a mild curried chutney). Finger sandwiches, thinly cut without the crusts with fillings of egg mayonnaise, ham & mustard, cucumber & smoked salmon, and plain cream cheese as well as the tastiest smoked salmon crostini and Mediterranean savoury tart. Then there was the appetizing selection of handmade cakes and warm buttermilk scones, one plain and one with golden raisins, served with Devon clotted cream and strawberry jam. Lovely fresh food served in a beautiful relaxing room, what more could you want?

Well maybe a massage, to melt away all the aches in my body from doing nothing! The spa is a tranquil haven, perfect for a swim, unwinding in the jacuzzi, sauna or steam room or just relaxing in the sun on the terrace. I left hubbie chilling on the terrace whilst I spoilt myself with a massage that the highly trained ELEMIS therapist tuned to my bodies needs perfectly. Highbullen is a mix of contemporary touches and modern luxuries, a peaceful and calming haven away from all the hustle and bustle of wedding prep, honeymoon planning or post wedding blues. ounging by your own private pool, in the mid morning sunshine, hidden away from the outside world in a little haven of peace and tranquillity, is exactly how it feels when you stay at The Desert Palm Hotel in Dubai. Just minutes away from the airport, and a mere 15 minutes from the buzz of Dubai, this intimate boutique hotel is set amidst a 160-acre polo estate, complete with over 400 horses and with just 38 luxurious rooms, suites and villas, it is just perfect for a honeymoon or romantic getaway. Some rooms have views over the polo fields, which is a truly magical experience, you can sit on your own private terrace, a glass of chilled champagne in your hand gazing out over the fields as a polo match takes place, it really is spectacular. Not only did we have these views we also had our own private courtyard complete with pool, sun loungers, dining area and outdoor rain shower and that was just the outside. Inside is elegantly styled with a vast living space, complimented with

dark wood, marble floors and neutral surroundings. A small kitchen area complete with a Dallmayr Coffee machine, JING tea selection and a fully stocked minibar completes the living space. The same neutral and dark wood tones carry on into the bedroom and the crisp white sheets add that extra bit of luxe. The bathroom is marble, with his and her sinks, a large bath and of course separate shower - big enough for a whole family to fit! All rooms in the villa have floor to ceiling sliding doors so you can laze in bed, on the sofa or in the bath and just gaze out over the pool.

And laze we did, not inside, but outside in the gorgeous sunshine, dipping in and out of the pool, until it was time to walk through the beautiful hotel gardens to Epicure, the brasserie style restaurant, that overlooks the shimmering turquoise waters of the infinity pool, to indulge in a Desert Palm Jewel Afternoon Tea. on white bread and home smoked salmon on a bagel and then there were the mini french pastries - mini doughnut with custard stuffing, fruit mousse cone, fruit tartlet and of course freshly made scones with jam and clotted cream. Not only did it live up to it’s name and look like a jewel it tasted like one too, and as for service – it was impeccable. Epicure not only offers afternoon tea but also all day dining. Whether it’s a la carte breakfast, or brasserie-style classics that include artisan cheeses, home smoked meats, wood fired pizzas and luxurious pastries and desserts. Could it get any more perfect? It certainly could. Dinner was served in Rare, Desert Palms signature dining restaurant. Seated on the outdoor terrace overlooking the retreat’s polo field, proved to be a memory-making romantic dining experience.

The food was divine, a tasting menu with such things as seafood ceviche, pumpkin gnocchi and norwegian salmon all served with matching wines recommended by our highly knowledgeable sommelier – textures and tastes were a pleasure on the palette and the ambience was magical. A meal here is one to take your time over, savor each mouthful as you gaze in the distance at the glittering Dubai skyline. Dessert was just as delectable, a baked marble cheesecake that melted in the mouth, followed by artisan cheeses washed down with a glass of port.

Walking back to our villa, it’s hard to imagine you’re in Dubai; it is just so peaceful and serene a real arabian hideaway that we just couldn’t get enough of.

Peace and serenity isn’t just limited to lying by the pool or in your villa, there’s also Samana spa, a place to retreat to and enjoy a relaxing treatment or if you’re feeling a little more energetic you can always visit the fully equipped gym or try out the different fitness classes that are on offer during your stay. I wasn’t feeling energetic though and treated myself to a Samana Aromatherapy Signature massage that had me all too easily drifting into a gentle sleep as the therapists hands gently massaged essential oils into my skin, leaving me feeling completely rejuvenated. Not only is the Desert Palm perfect for newlyweds it’s also ideal for a destination wedding, with so many gorgeous parts of the estate available for you to hold your wedding in, whether it’s by the fountain, outside on one of the tree covered terraces, on the vast lawn space, the choice is endless and the end result priceless.

The Desert Palm is said to be one of the finest honeymoon hotels in Dubai, and we can see why – It ticks all the right boxes and more – from the accommodation, to the polo fields to the exquisite cuisine this really is an Arabian dream, one you need to experience at least once in your life. I’ve been lucky enough to stay in some amazing hotel rooms across the world, so why did a stay in The English Riviera at the Cary Arms and Spa have me wanting to stay forever? Situated in the sunny, sheltered haven of Babbacombe Bay on the South Devon coast, and brimming with coastal charm Cary Arms and Spa has an outstanding setting along with breathtakingly beautiful views all year round.

A Beach Suite was our home for two nights and what a suite it was. With steps leading down to our own private decked terrace, suspended over the beach with aweinspiring views across the bay and beyond, the most magical serene place to sit, whatever the weather, breath in the sea air, take in all the beauty surrounding you, and listen to the lapping of the waves on the rocks.

Inside was just as lovely - stylish and decorated to be reminiscent of a beach hut, but on a much larger scale. Whitewashed wood panelling, along with floor to ceiling bi-fold doors on both the lounge and the bedroom, nothing beats waking to the morning sun shining through the glass as you embrace a new day in this wonderful place.

The lounge has all the mod cons, including quirky touches such as a flickering virtual fire (no heat comes out, but that doesn’t matter as the ambience it creates is perfect). A bottle of wine, soft drinks and some sweet and savoury snacks awaited us as did a decanter of sloe gin that was left on the unique coffee table, handmade from stones and driftwood from the east coast of Scotland. On the back of the comfy sofa are thick blankets and throws,

so whatever the weather you can wrap yourself up and disappear outside to snuggle up on the wooden loungers

and watch the world go by. Although the weather wasn’t blissfully sunny, and we did have a little rain, that wasn’t going to deter us from enjoying the outdoors as much as we could – morning coffee, afternoon/evening wine and bedtime hot chocolate were all consumed on the terrace, whether it was watching the morning waves, the late afternoon sunset or the evening stars it was just too magical to not indulge and take advantage of. As well as two Beach Suites, Cary Arms offer an assortment of various other accommodation including ten elegant sea-facing rooms and suites in the main Inn, three restored fisherman’s cottages and six deluxe beach huts all furnished and decorated to reflect cool, contemporary, beach-side living. Dining takes place in the relaxed and cosy inn, the perfect place for walkers, families, friends and travelling foodies to grab a drink or enjoy some of the fresh seasonal dishes from the kitchen. Wonderfully cosy and oozing with charm, after a day of coastal walks and sea air, it was the perfect place for us to fill our rumbling bellies.

It seemed only right that as we were in Devon to start our dining with Devonshire crab and crayfish cocktail, so fresh and full of flavour, I’m sure the chef popped down to the water’s edge and caught it especially for us! A cool glass of the citrusy Cotes de Gascogne paired with this dish perfectly. We were there Saturday night, which meant the resident pianist was adding to the whole ambience as he played quietly in the corner.

Mains were rack of lamb served with sweet potato fondant and tender stem broccoli, a mouth-watering array of texture and taste. Oven baked fillet of hake with crushed new potatoes and a basil pesto was full of flavour and certainly didn’t disappoint.

All meals can be enjoyed inside or out, whether it’s in the comfort of the wooden beamed bar or restaurant, the conservatory with its amazing views, the outdoor gardens, the secluded enclosed dining pod or, a must in the summer months, the Captains Table, where you can dine above an artist’s studio with an unparalleled view of the bay (I knew there’d be a reason for us to return!) Hubby chose the sticky toffee pudding for dessert, which of course drew top marks, but I was saving myself for toasting some marshmallows in the specially created marshmallow fire outside on the patio. It may have been a cold, damp winter’s evening but you can’t beat getting all wrapped up, huddling round the fire and toasting marshmallows –it’s these little quirky touches that makes Cary Arms even more special.

The glass fronted sea-facing spa at Cary Arms is another bonus to the hotel, offering a relaxing haven of luxury within the facilities that include a steam room, sauna, relaxation area and - the piece de resistance - a waterfall hydrotherapy pool, that offers rugged Devonshire coastal views. For sunny days there’s a private sunbathing terrace that again offers spectacular views out to sea and is decorated with exclusive American Art illustrations from Peter de Savary’s (the hotel’s owner) private collection and if you’re looking for that extra bit of pampering book yourself in for a treatment (I needed no persuasion whatsoever and indulged in a tailor-made body massage, leaving my body floating back to my suite for even more energetic lazing on the terrace).

Cary Arms doesn’t only offer you the perfect coastal retreat, it also affords a great place to explore, just follow the path along the shore line, manoeuvre your way over rocks and paddle your feet in the sea as you take in breathtakingly beautiful scenery before you reach the site of the beachside cafe and water sports centre, where you can hire out boats, enjoy an ice cream as you sit on the beach or take a ride to the top of the cliffs on the historic funicular railway, where you can see the whole bay for miles around. It took all my effort to drag myself away from the pool terrace, but needs must and dinner was calling. Served in The Phoenix fine dining restaurant, a jewel in the hotels crown, large ornate windows, and colonial carved columns take centre stage around the room, with glistening chandeliers and ornate plaster mouldings bringing the room together to create a space of sophisticated charm. We dined on starters of crab crumpet topped with cured salmon and tomato sauce, and goats cheese with beetroot, green beans and walnuts, both dishes were beautifully presented and were a mouth-watering delight of delicate flavours.

Lamb rump served with an aubergine moussaka was next, the lamb was cooked to perfection and the other dish of beef fillet with a spring garlic pesto was both delicious and filling and showcased contemporary Maltese cuisine effortlessly. Paired with local Maltese wines, the flavours were faultless.

Desserts here are a dream, so make sure you save room, the strawberry and rhubarb tart served with milk ice cream is a must, a sweet sensation to finish off an evening of delicious food. Before retiring for the evening be sure to take a nightcap in the smaller wood panelled bar just off the main restaurant, think gentleman’s, members club, originally opened in 1952, the warm décor of this bar is inspired by Malta’s colonial past, with Maltese history adorning the walls, you can almost feel the past living in the room with you. After a restful night’s sleep, and breakfast enjoyed the only decision you’ll have to make for the rest of the day is ‘will it be a day of serene reflection lying around the pool or will you venture further into the city walls to explore the history that oozes out of every part of the cobbled streets of this island?’
