Why is it when the sun is shining we always feel more upbeat and raring to go whether it’s work, family commitments, days out, it all just seems a little easier when the sun is shining. We seem to have a more positive outlook on life, although being positive doesn’t mean that we no longer experience difficulties or challenges but it can certainly change the way we view those challenges it’s all about the mindset, turn to page 18 to see how you can turn your negatives into positives. Mother’s Day is once again upon us (31st March) a time to show all those amazing mums out there how much we love and appreciate them (and dads who take on the role of Mum and Dad) – We’ve been busy finding our favourite gifts (page 22) that we know will bring a smile to your mum’s face. So how can we look after the amazing women in our life? As a mother to two amazing grown up boys and a stepmother to two equally amazing grown up girls {Gosh, just writing that makes me feel old]! I know the importance of a good night’s sleep. It can mean the difference between a supercharged day and a slowmoving day. But getting 8 hours of sleep isn’t always possible. We’ve got people to see, places to be, kids to get to school/work on time and boxsets to binge on!!

Being Positive

We hear a lot about the power of positivity and it certainly features heavily in my new book ‘Make it Magnificent’ which is available from Amazon or from our website www.attunededucation.com

Being positive certainly won’t mean that we no longer experience difficulties or challenges but it can certainly change the way we view those challenges and this in turn can change the way we react to and frame those experiences.

But how can we do that in practice – especially when we don’t feel like or maybe we even feel that life is throwing all manner of horrors at us? In essence what we have to do at such times is ‘fake it’. We don’t feel like being positive, but we do it anyway. The reason why we do it is quite simply because it is good for us. There is evidence to suggest that people who are positive suffer less from stress and experience better physical and mental health (www.verywellmind.com/what-is-positive-thinking) Specifically the Mayo clinic (www.mayoclinic.org) suggest that people who are positive can expect • • • • • • • •

Longer life span Less stress Lower rates of depression Increased resistance to the common cold Better stress management and coping skills Lower risk of cardiovascular disease-related death Increased physical well-being Better psychological health

The argument about ‘why’ we should try to develop a more positive attitude is simple really – it’s because it is good for us. So just like making a decision to eat vegetables and fruit, or make sure we exercise each week we should make a conscious decision to be positive because it is good for us.

The ‘how’ might take a bit more work so here are a few tips you can try to get each and every day off to a positive start, however you feel.

Start the night before Let us take a bit of a reality check. We all know it is harder to be positive if we are ill, cold, hungry or tired. So making sure that every day, or as many as we can manage, we devote time to looking after ourselves in terms of our diet and exercise and making sure that our basic needs are well met. A good night’s sleep means it is much more likely that we will wake up feeling more positive and if we then make sure we have a healthy breakfast that will help too. It is an inescapable fact that our physical and mental health are intertwined. If we look after our bodies we are more likely to feel more positive. Specifically exercising, even when we don’t feel like it, causes some of the feel good hormones to be released in the brain. Inspire yourself Make sure that when you wake you have something positive to think about. A calendar with positive quotes for example or buy yourself a set of our uplifting quote

postcards and pin one on your mirror or fridge to give you that happy thought (www.attunededucation.com/shop).

Another great idea is to make sure that passwords which we all have to use are a source of inspiration. I often use positive phrases like • • • •

Today is Awesome I can do this It’s great to be alive I am in control of my own destiny

Or any one of hundreds of uplifting sentences or affirmations, you can add numbers or capitals to make sure they stick to password rules but simply having a positive phrase as you log in to a computer or device can help.

You can also look out for inspiration and often when you do that you will find it all around. Last week, I visited a school for some work I’m doing and they told me of a pupil who showed promise in rugby. Sadly, he broke his neck when diving into the sea on holiday, at 17 years old I think, and was paralysed from the neck down. How easy to be negative in that situation but actually he became a mouth artist and motivational speaker. WOW! Inspiration is everywhere if we look for it. His name is Henry Fraser – do check out his website and make a decision to be positive, it is sure to pay dividends for your health and well-being.

Identify what is negative We all have different things that can drag us down, the news can tend to have a bit of a negative impact on some people but remember we can choose what we watch and listen to, so if you find it drags you down then maybe listen to some music in the morning instead. It may still drag you down at other times of the day but it might not have such an impact on your positivity as you start out on the new day. Sometimes people can be negative too and it is their prerogative to be the way they want but it is also our prerogative to choose how much time we spend with them. If they are close family members maybe they (and we) would benefit from being challenged to be more positive themselves. Decide to be grateful I’ve mentioned this before on numerous occasions but it remains true that when we shift our focus from what is wrong to what is right, from what we want to what we have our whole outlook can change. If it doesn’t come naturally then make a point of starting each day but thinking of three things you are grateful for – give it a try just for week and see if it helps. Midlife Madness I don’t think I am overly sensitive about my age even though I have recently breached a decade border! I am at heart positive and let’s be honest age is social construct!! Can’t confess to really knowing what that means but weirdly it makes me feel better.

I can’t’ deny, as I’ve mentioned before, that my joints do feel a bit stiffer, but I persevere with exercise and yoga and there is definitely an increased tendency to put on weight, honestly science might say this is because my metabolic rate is slowing down but what I know is that I eat about half of what I used to yet my tummy gets bigger! Yes I probably forget more but I’ve never been great at remembering – although when listening to a 70’s show on the car radio on a long drive I remember clearly lyrics to whole songs yet can’t remember where I’ve put my glasses or keys! My eldest swears I’m getting more deaf by the day but I swear he is mumbling more.

But all that aside I am quite happy being the age I am. What I am much less happy with is that every data base in the land seems to know that I have entered another decade and they bombard me with stuff I’d really rather not have. Like many people I’ve got used to the PPI calls and the ‘about the accident you had recently’ which thankfully I’ve never had, (the accident that is) not the calls - lots of those which somehow seem to tempt fate and feel ethically wrong to me! Over recent years I have even got used to having various offers and advice from my apparently new best mate SAGA. But even that I can cope with . If the insurance is cheaper I’ll have a look, if the cruise looks good I won’t rule it out just because it is SAGA, so therefore with a load of other old folk, yes, ok I might revisit that decision! I have even learned that the very attractive equity release loans that are offered almost daily do in fact come with some costs that if not actually hidden are not really put in plain sight.

But none of that is upsetting me half as much as the almost daily calls I get that ask if I want to arrange my funeral.

I kid you not. There I am going about my business, usually in a fairly happy fashion, when I answer my phone and BAM I am reminded that I am hurtling towards death!! How is this morally okay! Someone of a more nervous disposition might feel they are tempting fate! Actually there can be no one of a more nervous disposition, I am the woman who has to check under the bed and the wardrobe for secret serial killers. This is a fairly new phenomena, since watching Luther actually – clearly buses are out of the question too now. When they ask about my funeral what they really want to know, I think, is am I happy/prepared to give them money each month so that my poor darling offspring don’t need to worry their little heads (hopefully by then at least middle aged or old aged heads) about the cost of burying or cremating their wonderful mother!

Where shall I start, there are so many faults to my mind with this whole approach. But I also can confess that I have actually started to plan a bit, not money, to be honest that is the least of my worries, literally how I die, when I die are of all of concern but who will pay for my burial or cremation, most definitely doesn’t keep me awake at night – got aching joints to do that! No, when I talk about planning my ‘ceremony’ I think about the songs, some which I love and those I love, the odd one simply because I love them and I know others don’t (tee hee). Then I think about the weird wonderful and fun things I can ask my dear offspring to do with my ashes – a few challenges perhaps, or some nice holidays. So next time I’m asked about funeral planning I’ll surprise the caller with a rendition of one of my ‘songs’!

ast month saw luxury appliance brand Gaggenau, once again team up with Northcote, a Michelin-starred luxury hotel and restaurant in Lancashire for their annual premier gastronomic food event, Obsession 19. Established since 2001 (it’s now in its19th year hence Obsession 19), chefs travel in from all over the world to bring guests sixteen nights of culinary excellence from across the globe. Each chef takes over the Northcote kitchen for the night and challenges themselves to produce a unique Obsession Menu for the evening's guests, with Gaggenau being a premier sponsor of the event.

Obsession provides not only a snapshot of remarkable global cuisine, but is also the perfect opportunity to explore the Northcote wine cellar and food matching with the help of head sommelier Tamas Czinki, and we were lucky enough to not only be invited to

experience an evening of culinary delights, but to experience them as guests of Gaggenau on the chef’s table, putting us right in the middle of all the action on an evening that saw Chef Niall Keating from Whatley Manor take the helm to showcase his skills. At just 27 years old, Niall Keating is one of the UK’s most exciting young culinary prospects. In less than a year from having taken over the reins he had bagged a Michelin star for the Dining Room Restaurant at Whatley Manor in the Cotswolds. During March last year, and in recognition of his amazing talent, he was also awarded the accolade of Michelin’s young European Chef of the Year 2018. I caught up with Niall for a quick Q&A before he disappeared in the kitchen to create the culinary masterpieces we were going to experience that evening:

What was your favourite food to eat as a child? Staffordshire homemade oatcakes, I can make them but not as well as anyone in Staffordshire, they’re quite a traditional thing to make. It’s over an open fire with a skillet, so you wouldn’t really have that at home and doing it in a frying pan is not the same, I have tried, they are good but they’re just not the real thing. Who was or is your inspiration? Mainly the mentors that I’ve worked for. Two names that stick out are Sat Bains and Corey Lee. I worked with Sat Bains in his two Michelin star restaurant in Nottingham and Cory Lee is the chef owner of Benu’s in San Francisco. I worked with him in San Francisco for almost two years. I love San Francisco that’s where I met my wife, we were both working in the restaurant at the same time. What’s the most memorable meal you’ve ever eaten? It was the very first meal I had at Benu’s before I started working there. It was this meal that actually made me want to work there. I went into the kitchen after eating and asked for a job, they were having none of it, so I wore them down with various emails and eventually they gave me the chance, they sorted my visa out and everything. If I came round your house, what would I find in your fridge? Steak, salad, various dairy and vegetables, my wife does most of the cooking, although we don’t eat much at home as we’re just at work most of the time. If you do have some down time and you eat out, where is your favourite place to go? It depends where I am, if we’re in London it’s either Holborn Dining Room or A Wong, Andrew Wong’s restaurant, he’s actually going to be here tonight. “Do you feel under pressure that he’s here?” A little,

there’s like two handfuls of Michelin starred chefs eating here tonight so it’s quite a lot of pressure. I’m confident in what I’m doing it’s just you want to impress everyone. I don’t get stressed I just want to know that it’s right, most of it is down to the preparation for everything to run smoothly. When you’re cooking, is there one ingredient that you can’t be without? That’s a really hard question, it could be so many things depending on what I’m making, but soy sauce is a big one for me it’s a seasoning for just about anything, I use it in most dishes. Would you eventually like to open your own restaurant? Yes, I would absolutely, but that’s kind of down the line quite a bit at the moment. I’m just enjoying doing what I do with other people at the moment, rather than going alone. It’s definitely something I’ll do in the future, I might stay at Whatley and have it as another avenue, doing both at the same time – definitely something for the future. What’s your favourite dish to cook? I get the most pleasure personally from cooking steak, “So if you had someone in the restaurant and they asked for their steak to be cooked well done what goes through your mind?” – I usually won’t do it! At Whatley we’re not a la carte we have a chefs tasting menu, it’s a journey of food and tastes for our guests to enjoy, I wouldn’t want you to pay £175 for this experience and have a shrivelled-up piece of wagyu beef, I just wouldn’t do it. Finally tell me one thing about yourself that will surprise people? Well I do amateur strong man, and I’m also an iron man athlete. I’m not doing iron man at the moment I’m too heavy. I’m concentrating on strong man training – “Can you lift a car?” A toy car I can! I’d eventually like to compete. I train for about an hour and a half pretty

much every day – it gets me out of the kitchen and clears my mind. Let’s hope it doesn’t keep him out of the kitchen for too long, especially tonight as we can’t wait for the evening’s dining to begin. The evening kicked off with a private champagne reception where the lovely Steve and Edina from Gaggenau made sure the selected few (twelve to be precise) who were dining at the chef’s table knew a bit about the history of Obsession 19 and how Gaggenau are proud to be involved, Niall even popped in for a few minutes to mingle and chat a little about the evening ahead. Making our way to the chef’s table and walking through the kitchen, it’s hard to believe Niall and his team are cooking for one person let alone one hundred, everywhere is spotless, with the chefs working neatly and precisely in their own section within the kitchen. Each course was paired perfectly with a wine that not only complemented the dish, but also enhanced the flavours. Our gastronomic journey began with Smoked Eel Tempura and Trout Roe Tart paired with a sparkling Cremant de Limoux Rose. Niall and his team were certainly setting the bar high, with the delicious tastes and textures within these dishes. And the bar continued to be kept high as each course was served, and the words ‘this is my favourite’ kept coming out of my mouth - Black Truffle Custard, Risotto with a Raw Scallop and Egg Yolk, Salmon with Aloe Vera and Caviar Beurre Blanc, Wagyu Beef with Turnip and finally Caramel Custard Tart. The accumulation of flavours, the perfect presentation and foods that you wouldn’t normally associate with putting together made this journey a real exploration that kept igniting your taste-buds at each mouthful. It is obvious from each plate that great care has been taken by Niall to create a dish that not only tantalises your taste buds but also wants you craving just one more mouthful, this was certainly true for me especially with the salmon and the wagyu beef dishes, both the fish and the meat were full of flavours and both literally melted in the mouth. As each dish was served Niall joined us at the chef’s table to talk us through the ingredients, flavours and ideas behind the dishes and to answer any questions as did Tamas our sommelier who described the reasons he chose each wine and what tastes we should be experiencing. All too soon this divine dining experience was over and it was time to retire to the bar for a nightcap or two and reflect on a culinary journey that none of us will forget in a hurry. Asian-style wild boar

“It’s lean, high protein and delicious – that’s why Wild and Game is championing game as a healthy choice this spring” Ingredients

2 Wild and Game wild boar steaks, cut into bite-sized pieces 4 asparagus spears, sliced Half a red pepper, sliced 1 small carrot, sliced Half a medium onion, sliced 100ml light soy sauce 1 large tsp garlic paste 1 large tsp ginger paste 2 tbsp honey 2 tsp cornflour Sesame oil 600ml water

Method

Pre-heat the oven to 160 degrees centigrade, gas mark 3. Heat some sesame oil in an oven-proof pot, add the meat and cook until browned. Mix the soy sauce, honey and cornflour in a small jug. Add the garlic and ginger and cook for a couple of minutes, then pour in the soy, honey and cornflour mix. Stir and cook until thickened then top up with the water. Keep on the heat until bubbling well, then put the lid on and transfer into the oven and cook for 2 - 2.5 hours. Check regularly and top up with water when necessary. You want the sauce to end up quite thick and sticky. Heat some sesame oil in a wok or frying pan and fry the vegetables for a few minutes – don’t overdo it; you want them to retain their bite. Add the vegetables to the pot of meat and stir well. Serve with noodles or rice. www.wildandgame.co.uk

Smoked Haddock Chowder Pot Pie

“Popping a pastry lid on a rich smoked haddock chowder turns this dish into the ultimate creamy comfort food the whole family will love”.

Ingredients

½ tbsp olive oil 1 onion, finely chopped 350g potatoes, peeled and diced 30g unsalted butter 30g plain flour, plus extra for dusting 500ml semi-skimmed milk, plus 2 tbsp extra for brushing 60g half-fat crème fraîche 3 tbsp roughly chopped fresh parsley 150g frozen sweetcorn 150g frozen garden peas 2 x 280g packs smoked haddock, cut into large chunks 375g ready-rolled light puff pastry

Method

Preheat the oven to gas 7, 220°C, fan 200°C. In a large ovenproof frying pan (about 28cm wide and 5cm deep), heat the oil over a medium heat. Add the onion and potatoes and cook for 15 mins until golden and the potatoes have softened.

Add the butter and, once melted, add the flour and stir for 1 min. Gradually add the milk, stirring to make a smooth sauce. Increase the heat slightly, bring to the boil and simmer for 2 mins until thickened. Remove from the heat. Add the crème fraîche and parsley. Season well. Leave to cool for 5 mins, then stir in the sweetcorn and peas, and top with the haddock. On a lightly floured surface, roll out the pastry so that it is large enough to cover the pan. Use the rolling pin to help drape it over the pan, then press down firmly around the edge. Trim around the pan and reserve the trimmings for decorating, if you like. Brush with 2 tbsp milk and decorate with the trimmings, if using. Brush again with milk, then bake for 25-30 mins until golden and crisp. Leave to stand for 5 mins then serve. Pink Lady Apple Cake “A perfect cake to accompany a Mother’s Day Tea”

Ingredients

1 South African Pink Lady or Granny Smith apple, peeled, cored and chopped 150g butter, at room temperature 150g caster sugar 3 large eggs, beaten 1tsp vanilla extract 150g polenta Pinch of salt 200g ground almonds 1tsp gluten-free baking powder (most baking powder is gluten-free) Finely grated zest and juice of 1 lemon Topping: Finely shredded zest and juice of 1 lemon 40g icing sugar 1 South African Pink Lady or Granny Smith apple, cored and thinly sliced Crème fraiche, to serve

Method

Cook the chopped apple in a small amount of water for 5-6 minutes, until tender. Drain and cool. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4. Grease and line a 20cm round cake tin. Beat the butter and sugar together until light and creamy, then gradually beat in the eggs. Fold in the vanilla, polenta, salt, ground almonds and baking powder. Stir in the lemon zest, lemon juice and cooled apples. Transfer the mixture to the cake tin and level the top. Bake for 40-45 minutes until set and golden. Cool for 20 minutes in the tin, then turn out carefully and cool completely. Remove the lining paper. Heat the lemon zest and juice with 4tbsp water and the icing sugar. Add the apple slices and simmer for 4-5 minutes. Spoon over the cake and cool. Serve with crème fraiche. Recipe from: www.beautifulcountrybeautifulfruit.com

A Taste of

Japan ith its stunning landscapes and strong traditional identity, Japan is a country with a split personality, a place where modern bustling cities sit alongside breathtakingly natural landscapes, a fusion of both identies as if it was the most natural thing in the world. A country that we were excited to visit and somewhere you need to experience at least once in your lifetime.

Our visit was a culinary and cultural adventure courtesy of Prince Hotels, and began with a quick overnight stay in Tokyo at the Grand Prince Hotel Takanawa, in one of their Hanakohoro rooms, an area of the hotel that has been designed with authentic Japanese culture in mind. Soft light spreads from the sliding paper doors, and you can smell the fresh scent and feel the softness of the tatami mats beneath your feet. Traditional low beds and beautiful views over the Japanese garden have you encompassed in your own little bubble of calm, hard to believe you are in one of the busiest cities in the world!

Time for Tea After a quick freshen up it was ‘Time for Tea’ this wasn’t your normal tea this was a traditional Japanese Tea Ceremony, a ritual that dates back to at least 9th century. Rooted in Chinese Zen philosophy, the tea ceremony is a spiritual process, where the guests seek harmony and inner peace. It takes decades for the host to master the art of serving tea.

Taking place in a room made from bamboo, amid the cherry trees in the lush green garden, sparsely decorated with tatami mats and a hanging scroll, we sit cross-legged on the floor and watch in awe as our host prepares the tea. A stir here, a little measure there, a nod and bow as she lovingly prepares the tea for us to drink. Served in small bowls and prepared for one person at a time the tea is thick matcha and when you’ve had a sip, you need to wipe where you drank from with your fingers and turn the bowl anti clockwise before you take another sip. The whole process is not about

drinking tea, but is about preparing a bowl of tea from one's heart, a unique experience, the ultimate in Japanese hospitality.

A 360-degree Panorama Japanese cuisine is renowned the world over for being fresh, nutritious and healthy and if the food at Table 9 on the 39th floor of Shinagawa Prince Hotel was as spectacular as the 360-degree panoramic views over the Tokyo skyline we were in for a real treat. A fusion of flavours alongside dishes that were a delight to the taste buds, the menu is described as photogenic Western style cuisine and includes marinated scallop and shrimp cocktail, pate wrapped in roasted foie gras, sautéed sea bass, and Japanese beef sirloin all perfection on a plate. Suitably full, after an exquisite dining experience, it’s time to grab a cocktail and wow at the night views of Tokyo, making it an unforgettable experience in the middle of this bustling city.

Sapporo The following morning, we headed to the airport for a domestic flight to Sapporo, capital of the mountainous northern Japanese island of Hokkaido, famous for its beer, skiing and annual Sapporo Snow Festival. The airport is a massive centre full of restaurants, and it’s here chopsticks, bib and spoon in hand I ate the most delicious ramen noodles (a Japanese dish consisting of noodles served in a meat or fish-based broth). I have to agree with the guidebooks that state Sapporo offers the best ramen in Japan. A little tip; don’t go on a first date and eat ramen there is no delicate way of eating this, hence the bib! The Sapporo Prince hotel in the heart of Hokkaido’s capital was the perfect base for exploring. Near to many bars, shops, and restaurants you’re never far from the action. With a wealth of accommodation from standard twin tooms, to the floor-exclusive Royal Suite Rooms located on the 22nd-27th floors, there is something to suit every budget.

Hovering Technology Located in the northernmost prefecture of Japan is The Sapporo Dome. The first stadium in the world with an impressive “hovering soccer stage” system, allowing for both football and baseball games. The full sized natural turf football pitch, slowly rolls from outdoors into the enclosed arena on 34 wheels, hovering 7.5cm by air pressure. When no games are scheduled the stage is left in the open area outside the stadium to grow the natural turf. And it’s this ‘hovering ‘pitch that will be getting plenty of use later this year when the Rugby World Cup comes to Japan and games are played at the stadium including the all-important first match for England against Tonga on Sunday 22nd September.

Seafood Delight All that hitting baseballs and pretending to be part of the New York Yankees had made me needing some body fuel, which came in the form of fresh seafood at ‘Aburiya Odori Bisse’ a local restaurant that offers food locally sourced in Hokkaido. We had to take our shoes off before sitting round a sunken table and savouring the delights of fresh sushi and sashimi. The sushi here differs from the UK, there is an endless array of raw fish including salmon, tuna, eel, shrimps, prawns (uncooked) fish roe and more. The Japanese have access to some of the best and freshest fish in the world and it clearly shows in the selections they offer. Market Madness We were off early to the local market (Curb market) to not only look around the fresh fish and produce, but to also have a traditional Japanese breakfast served at Kitanoryoba restaurant, right in the center of the bustling marketplace. Prince hotels works closely with the restaurant, to offer guests the choice to come and experience breakfast here. As is evident wherever you eat, Japan is famous as a nation that loves fish in its natural state, uncooked, but this was really too much for me to stomach first thing in the morning, so instead of fresh sashimi I opted for grilled fish, and alas, no English breakfast tea! But Japanese green tea – no wonder the Japanese are so slim and healthy their diet is an amazing mix of healthy nutritious foods and drinks.

The market itself is a hive of activity with displays of crab and fish that include sea urchin, salmon roe, squid and scallops being the main attraction, as well as local produce such as corn, melons and potatoes when in season. Melons here are b e a u t i f u l l y sweet (as you wander round the market there are lots of tastings on offer) and being one of my favourite fruits I thought I’d buy a couple to snack on later, I hastily changed my mind when informed the melons ranged from £36 - £65 depending what stall I bought from! Beer & Lamb You can’t stay in Sapporo and not visit the Beer Museum. Located in Sapporo, Hokkaido where

Sapporo Beer originated. Its red brick building has a history stretching back over 100 years and is now a Hokkaido Heritage site. The tour is an interactive experience learning about the history and journey of beer in Japan. Sapporo Beer is one of the oldest and most popular beer brands in the country, having been brewed in Sapporo since 1877. They save the best until last when the tour finishes with the tasting of two beers, the first "Fukkoku Sapporo-sei Beer", is a reproduction of the taste of the original Sapporo Beer and the second is Sapporo Breweries' core product "Black Label". I’m not a beer drinker, but even I have to agree both were pretty drinkable, especially the ‘Black Label’!

Just across the road is another historic building, built in 1890 as a sugar factory and then used as a malting plant until 1963, in 1966 it became the restaurant ‘Sapporo Beer Garden’. A restaurant that specialises in the ‘Genghis Khan’, Hokkaido's representative dish usually made with lamb and mutton that you eat after grilling on a metal skillet which has ridges going from the centre to the outer part that drain off the excess fat and marinade. This was cooked by us at our table, a great interactive experience that allowed us to cook the ingredients in a way that produced delicious tasting food. We added vegetables to the meat and the flavours intertwined with each other to create some superb food. Out & About Central Sapporo has some great hotspots to explore including the former Hokkaido Government Office, impressive in size and built in 1873 it’s now a museum offering a fascinating glimpse into the politics, geography, nature, history and culture of Hokkaido. Hokkaido Dhrine, (Hokkaidō Jingū) is one of the country's most important (and visited) Shinto religious sites. Adjacent to

Maruyama Park, the shrine became even more popular after it was dedicated to the soul of much revered Emperor Meiji in 1964. Before entering we have to cleanse ourselves with Holy Water, an easy process (there are written instructions) that involves pouring water with a ladle in a specific way over each hand. Surrounded by lush gardens, the whole place is a peaceful oasis, the perfect place to gather your thoughts and just ponder for a while at the way nature envelopes you. If its a view you want then the Sapporo TV Tower is a must, built in 1957, this 147-meter-tall tower remains one of the city's most visited landmarks and I can see why. It is 60 seconds by elevator from the third floor to the observation deck, 90 metres above ground and it’s here you can look out in awe as the entirety of Sapporo city unfolds beneath your eyes, on a clear day the mountains are visible in the distance, and whatever time of year, the city is a rainbow of colours for you to look out at.

French Fancy Located on the top floor of Sapporo Prince Hotel is the French restaurant ‘Le Trianon’ , the head chef being Yoshitsugu Hashimoto. Here not only can you enjoy some delicious food, you can gaze in wonderment at yet another stunning cityscape. The menu here was not only executed with care and precision, the presentation really wouldn’t have seemed out of place in an exclusive art gallery. We began with an amuse bouche “Gifts from the sea” a selection of fresh fish including muscles, squid and oyster, served on a bed of shiny pebbles and seaweed, a real talking point.

This was followed by scallops with a mushroom foam served in a dish that was so delicately decorated with edible flowers and vegetables. This whole menu is definitely about teasing your taste buds with the aesthetics before you even try the dish. The pan fried

fish delicately fell apart in the mouth it was so tender and the Wagyu beef was a meat lovers heaven, finally finishing with crepe Suzette, made at the table and… Oh so tasty! Train Travel Next stop Hakodate, just a two hours by train, unfortunately not the bullet train, (we’ll have to plan another trip for this). As the train leaves Sapporo behind, the landscape seems to change before your eyes, gone are the high rise buildings and bustling towns and here is vast forests of rich colours as leaves turn from summer into autumn mixing orange and yellows against a mountainous landscape. Park Time Onuma Quasi National Park is located just twenty kilometres north of Hakodate, at the foot of Mount Komagatake and is known for its picturesque, island dotted lakes and scenery.

A boat ride between the two lakes Onuma (largest lake) and Konuma (smallest lake) is a must. Separated by a half moon bridge, both lakes offer an abundance of wildlife and colour whatever time of year you visit. We were there in autumn, where colourful blends of red, orange, green and yellows filled our vision.

The park is also home to Hakodate Onuma Prince Hotel surrounded by Oak, Japanese Peach, Cherry, and Silver Ash trees. Having been designed to harmonise with the surrounding area the hotels height can not exceed the height of the neighbouring trees. across Japan. Every region of the country has them with the Onuma Prince hotel having their own. A great way to relax and rejuvenate tired aching muscles.

I love a hot bath so for me to immerse my body in the bubbling hot natural spring water was a dream. Lying there looking out over the lake and forest beyond, listening to the water softly dripping and the low tweet of birds from the forest was magical, a real spiritual experience, one of complete abandonment, (once you get over the fact you HAVE TO get naked in a pool full of strangers, although I was lucky and had the pool to myself) – pure heaven.

Seafood & Sake We began our gastronomic journey that evening with some Sake tasting, before enjoying a menu that had been devised especially for us, there was of course sashimi including squid – you couldn’t get any fresher than this – the squid was held up alive and literally cut up to eat in front of us (not for the faint hearted and something that the Japanese do a lot), unfortunately I just couldn’t bring myself to try it, but hubby did and said it was certainly fresh!! As well as raw fish and shellfish the Japanese love lamb and this was a real hit, cooked pink the meat was so tender it just literally melted in the mouth and the miso soup was a definite hit with me – I think I could live on Ramen and Miso.

Exploring Hakodate Hakodate, like Sapporo has a bustling local market, although this one is a lot bigger with over 250 stores. There’s also a selection of art and craft shops selling pottery, artwork, furniture and nick nacks. Fort Goryokaku and Goryokaku Tower are a must see. The tower is close to Fort Goryokaku and from its 107 metre viewing tower

you can look down over the Fort and take in its unique star shaped design, as well as the stunning views over Hakodate.

In the centre of the star-shaped fort stands the Hakodate Magistrate's Office, a restored building that was once used as a government office run by samurai. While visitors are free to contemplate its statuesque dignity from the outside, it is also possible to go inside and explore the rooms.

Be sure to walk round Motomachi, the historical heart of Hakodate, known for its consulate buildings and churches such as the Roman Catholic Church, the Episcopal Church, the Russian Orthodox Church and the former British Consulate building. As you walk down the cobbled streets it’s hard to imagine you’re in Japan, the houses are very colonial, painted in different colours and reminiscent New England in the fall. Tempura in Tokyo A short flight back to Tokyo and this time to the Prince Sakura Tower Tokyo Hotel, named after Sakura cherry blossom, the hotel is located in the Shinagawa area, nestled within a garden that is home to 210 cherry blossom trees of 17 different varieties.

Dining was taking place at the Japanese Tempura Wakatake restaurant, where we had our own chef cooking a traditional tempura meal. With a cooking station at each individual table, what could be more satisfying than seeing, hearing, and smelling the finest seasonal ingredients cooked before your eyes. Laid out in front of us were all the fresh ingredients including prawns, conger eel, shrimp, Shitake mushrooms, conger pike, asparagus and more – A feast for all the senses. I’m a big lover of tempura food and I have to say this was the best I had ever tasted, this was so much more than just a delicious meal, this was an immersive c u l i n a r y experience that made dining here even more memorable. One Last Thing It would be a shame to come to Tokyo and not take a walk across the famous intersection outside Shibuya Station. The only place in the world where 7 crossroads come together and the lights all turn red at the same time. Traffic stops completely and pedestrians surge into the intersection from all sides, like marbles spilling out of a box, it really is a sight not to be missed. We viewed the madness at midnight, with car lights, neon signs and so many people it was surreal. Japan is not all about skyscrapers and neon signs, it is about well preserved heritage steeped in history, beautiful landscapes, and culinary masterpieces. Somewhere you can visit on numerous occasions and still find something new to wonder at, in the words of Arnie “I’ll be back!”

There’s more to Morocco than what First meets the Eye

Emily Williams gets to know Marrakesh’s cool coastal alternative at the Mazagan Beach & Golf Resort, El Jadida Soft billowing swells of Sahara sands, sun-baked terracotta streets and bustling city souks filled my mind as I wondered what to expect of Morocco. But after spending a few days on its lush green stretch of coastline, I began to see a whole new side to this beguiling North African destination. My first revelation was the ease of getting there: just a swift threehour flight from London Heathrow to Casa Blanca and a 50-minute drive felt as though no time had passed at all. Even prior to stepping foot in the resort, I could see why it provides the ideal long weekend getaway for any European visitor.

A Mesmerizing Arrival Suspended orb lamps lining a manicured driveway led us towards the majestic ochre-toned property. As it rose out of the dunes like a titanic sand palace, its sheer magnitude was my first impression. The 250 acres of farmland and verdant 18-hole golf course make it a destination of its own – it’s no wonder why the hotel is named ‘Mazagan’, after the former title of the nearby township. We pull up at the striking vaulted porch, where a picturesque rickshaw is parked beneath a key lock cut archway; and beyond, a contemporary water feature reflects the intricately carved doors that open into the central atrium. Once inside, gleaming marble floors, towering regal pillars and giant chandeliers shaped like spinning tops catch my eye amongst the attractive blend of contemporary and traditional Moroccan décor.

Refined Design Once I had absorbed the impressive foyer interior, I followed the concierge through a labyrinth of cavernous hallways and quaint open-air courtyards towards the accommodation wings. Along the way I noticed attractive mosaic murals and flickering antique lanterns in wall recesses, each serving to retain the huge hotel’s sense of place. At the property’s epicentre lies the Grand Riad, an expansive pool plaza dotted with cabanas for cooling off from the searing midsummer sun. Room with a View The resort’s sleek sense of symmetry is both beautiful and baffling. During the shuttle to and from my room, I sometimes found myself lost in a jigsaw of identical hallways. But as long as I was heading towards the sea, I was going in the right direction - my ocean view room had a panoramic vista of the crashing waves contrasting against a calming horizon. From the balcony, it was a real treat to watch the fiery African sunset over the Atlantic. The room itself was equipped with an array of creature comforts: soft cotton sheets on the more-than-double bed, towel robes and a selection of orange-scented bathroom miniatures for a restful and sophisticated stay. Divine Dining In the region of El Jadida, the locals are affectionately known as the ‘double people’, due to the abundance of vegetables and fish allowing for second helpings. The resort serves true this nickname, as its 13 restaurants similarly allow endless culinary options.

The Marketplace, its largest buffet style eatery, has an easy come-and-go feel, with international food offerings at all meal times. Guests can try out authentic Moroccan dishes, pick a selection of hand rolled sushi, or dip into a bowl of fragrant hibiscus ice cream at the dessert bar to mention a few.

Tantalising Tagine For something wholly cultural, Morjana is the go-to restaurant. Rich fabrics drape from the ceiling in streams of burgundy and burnt orange, and the hypnotic sound of an oud player drones as a carousel of mezze starters are delivered to the table. I indulged in the seafood tagine, a delicious explosion of slowly cooked marinated flavours in an earthy clay pot, whilst a belly dancer rhythmically snake-hipped her way around the room. For a similar open-air dining experience, Al Firma is open in the summer months, where guests can dine outdoors in an ethnic Berber tent beneath the stars. Sensational Seafood If fish is your favourite, The Mazagan’s Sal De Mer restaurant is the place to find the catch of the day. The slatted beam installation on the ceiling echoes the ripple of an ocean wave, beneath which guests are submerged in an underwater world. Even the atmospheric blue lighting adds to the aquatic effect. Straight from the ocean, I relished the indulgence of the oyster-sharing platter and a creamy lobster risotto, garnished with a tasty parmesan crisp. Take a Trip to Town Whilst the resort can entertain families for days on end, the excursion to El Jadida was worthwhile. Mohammed, our charismatic tour guide, was a fountain of historical knowledge. Inside the Portuguese fort, he showed us the ancient water cistern, which was sealed for hundreds of years, only to be rediscovered by a Jewish merchant attempting to expand his shop walls. Sounds now reverberate around hollow chamber, and the oculus above casts a beam of light on the lingering puddles.

Nearby, the old medina market was a humming hive of activity and an eruption of the senses. I watched haggling souk sellers neatly pot piles of vibrant spices and shift pungent crates of salted sardines. All around them, a kaleidoscope of fruit and vegetables seemed to swell from the nourishment of the Moroccan sun.

Adventure Time With a grin tucked beneath my helmet, I zoomed through the resort’s evergreen forest and sweeping 7km of deserted dunes by quad bike – if one thing’s for sure, this resort sets the bar when it comes to activities. There is something for all ages, from horse riding along the foam-fringed shore to a calming sunrise yoga class tailored specifically to your desired style and pace. Relax and Rejuvenate To round off the stay, the Mazagan spa provides a zone of complete tranquillity. With specialised treatments suited to fit all needs, I opted for a tension relieving full-body massage. With all muscles soothed and set to rest, I felt pleasantly lighter entering the airy relaxation room, where a steaming pot of Moroccan mint tea was waiting to be poured. This blissful space allows guests to quietly contemplate, whilst enjoying the ocean air’s ceaseless caress. BOOK IT

Victorian Chic at d’Parys estled amongst the beautiful Victorian buildings on De Parys Avenue, is one of Bedford’s deluxe venues, d’Parys. There’s no lobby to check in here, you walk into a rustic industrial chic haven of wooden floors, exposed brickwork, roaring fires and cosy little nooks and crannies reminiscent of a quaint country pub but with more contemporary furnishings and quirky touches. The whole place is light and airy which is not only down to the high ceilings but also to the large floor to ceiling sash windows and glass walls in the restaurant. This is the place to come whether it’s a drink, brunch, lunch, dinner or overnight escape. There are 14 rooms in total all boasting a unique mix of antique and contemporary features, all individually designed and all having roll-top baths and bespoke antique sink units (a hint at the buildings Victorian heritage).

After prising ourselves out of the baths it was time to get ready and make our way downstairs to the restaurant area for dinner.

The space here is just as quirky, the whole ceiling of the dining area is made up of wooden shutters and doors, very Mediterranean looking and a great talking point. A mismatch of rustic and antique tables and chairs, (sounds on paper not very stylish), but it works so well and looks so chic. The menu is creative offering a mix of traditional staples with a twist. Using fresh ingredients and some of the best seasonal produce, all the dishes look as tempting as each other. We mulled over the menu whilst nibbling on some fresh bread and olives and finally opted for the crayfish bruschetta served on a bed of greens and dressed in a balsamic glaze, this was flavoursome, fresh and a real delight. Chilli breaded squid had the subtle taste of ginger from the dressing, just giving a slight kick to the back of the throat – perfect.

Mains were just as tasty, rack of lamb with a celeriac purée, buttered greens, heritage glazed carrots, and red wine jus, this certainly exceeded expectations, as did the perfectly cooked dry aged sirloin steak served with field mushroom, slow roasted tomato, seasoned fries and a béarnaise sauce.

Although it was a really busy night when we ate in the restaurant, it had no effect on the level of service or quality of the food, the great atmosphere just added to a fabulous dining experience. Never one to resist a dessert Mr F chose the sticky fig and pecan pudding served with toffee sauce and honeycomb ice cream, the perfect dish to conclude a lovely evening.

We took coffee in the bar area in front of the roaring fire before retiring to our room for a restful night’s sleep. Before heading home and back to reality it was time for breakfast where a selection of freshly baked breads, pastries, cereals and jams as well as hot options off the menu were on offer, with eggs Florentine and a full English being our choices, more great food to set us up for the day. The relaxing atmosphere, quirky rooms, delicious food and friendly staff make d’Parys the perfect place to escape for a few hours, an evening or even overnight, a little piece of Victorian heritage in the middle of Bedfordshire. *Alexandra Burke returns to the role of ‘Rachel Marron’ following her triumphant run in the show in both the West End and the subsequent sell out 2015/2016 tour. She first rose to fame after winning the fifth series of The X Factor and her debut number one single Hallelujah sold over one million copies in the UK, a first for a British female soloist. She most recently appeared as ‘Svetlana’ in “Chess” at the London Coliseum and will soon appear as ‘Roxie’ in “Chicago” at the West End’s Phoenix Theatre. Last year she reached the final of “Strictly Come Dancing”. Her other theatre credits include ‘Deloris Van Cartier’ in the national tour of the musical “Sister Act”.

Based on Lawrence Kasdan’s 1992 Oscar nominated Warner Bros. movie starring Whitney Houston and Kevin Costner, THE BODYGUARD, directed by Thea Sharrock with book by Oscar winning (Birdman) Alex Dinelaris, had its world premiere at the Adelphi Theatre in London’s West End in 2012 and was nominated for four Olivier Awards. A sell-out 18-month UK and Ireland

tour followed, before the show returned to the West End at the Dominion Theatre. THE BODYGUARD has also played in the Netherlands, Germany, South Korea, Canada, Italy, Australia, Madrid, France, and on tour throughout the US and can currently be seen in Stuttgart.

Former Secret Service agent turned bodyguard, Frank Farmer, is hired to protect superstar Rachel Marron from an unknown stalker. Each expects to be in charge; what they don’t expect is to fall in love. A romantic thriller, THE BODYGUARD features a host of irresistible classics including Queen of the Night, So Emotional, One Moment in Time, Saving All My Love, Run to You, I Have Nothing, I Wanna Dance with Somebody and one of the biggest hit songs of all time – I Will Always Love You.

The Aftermath
