Riding a bike is regarded as one of those skills that once learned can’t be forgotten. As a parent and now grandparent, I have had the privilege of watching several children learn to ride a bike. It is both frustrating and satisfying. The frustrating bit is that it is hard to teach things that you do automatically, and the satisfying part is when they have that ‘eureka’ moment and crack it. Learning the mechanics of riding the bike though in some ways is the easy part. There will be lots of times when they are ‘tested’ by the weather, new terrain or seeking to learn more advanced skills like ‘wheelies’ and these are the parts that remind about ‘life’. Stress is a part of both life and learning. It can be a good thing that helps us to take on new challenges and learn new skills, and I saw this in action the other day when my bike riding grandson decided to take on the challenge of a bike track at the park, with steep descents and banked corners. I could tell he was a bit nervous as he waited at the start but over the first hill he went ( I looked away I confess) but he managed it and returned triumphant and wanted to repeat the experience. Undoubtedly he had a bit of stress hormone but it was good stress, it enabled him to rise to the challenge – it was what we all cope with when we are put in new or difficult situations and the fact that he was successful, in this case not falling off or giving up because it was too scary, means that his brain will remember that success. In turn that means in bike riding terms at least, he will probably be confident about his next challenge, safe in the knowledge that even though he is a bit scared it is okay because from this experience his brain will have learned that a bit of stress is ok and he will be successful. But of course, what we know is that kids do fall off bikes and numerous other things but generally unless it is particularly painful, they will get back on and be prepared to have another go. In many ways we seem to regard stress these days as something entirely negative, but it is essential if we want to develop. Learning something new is often stressful though usually it is what we could define as good stress. But we know not all stress is good. There is also tolerable stress – when things feel a bit out of control but, if we have experience of good stress situations in the past and we’ve handled them then we can often react positively to this stress too. The stress that is harmful is the stress that seems to go on and on, stress where we feel out of control or unsupported in. To stick with the bike analogy, it would be like ending up riding through a thunderstorm when it’s getting dark and being faced with a huge hill or maybe a bike that isn’t

working properly or as the rider not feeling well. Of course, in this situation we could jump off the bike to reduce the stress, make a call and ask our personal cavalry to come and rescue us. But we all know some stresses aren’t like that – we or our loved ones might be ill, we might suffer loss of another kind or face the stress of job loss, or harassment - in those instances, it can seem like the stress is out of control. But what we also need to remember is that in every situation there are some elements of control, even if only our own reaction. The tips below will help you to make sure that if the stress is not good it can be maintained as tolerable rather than toxic, but it is up to you. Take care of your body Like an athlete, we function better when we take the time and effort to look after our bodies, get enough sleep, take regular exercise and eat a healthy diet. But these are all the things that become difficult when we are under stress, so it is important to make a big effort even when we don’t feel like it – doing these things will help. Take care of our minds Looking after our bodies will also help our minds but so too will doing nice things that we enjoy, making sure we socialise with folk we care about and allowing ourselves some treats like reading a good book or watching a film, even enjoying a relaxing bath can help. But guess what? - those self-care habits are often the first things to go when we feel stressed. Accepting the stress and working on our response Simply accepting that you are in a difficult situation can help. Acknowledging that this is outside of the usual, or what you have coped with before, can help you realise that it is okay to find it tough. The other important thing is to recognise that sometimes we can’t change the situation, but we are always able to consider our reaction to it and generally we are stronger than we think. Allowing ourselves to be helped We all like to support others but sometimes we seem to have a hard time accepting support from others, let alone asking for it. But that is what friends and family are all about – we all have times when life is like cycling along a country road and other times when it is literally such an uphill struggle that it is hard to keep going, but it is possible and may help us grow stronger in the long run. Midlife Madness I had to travel to another part of the country the other week and was rather dismayed to find my car had been booked in for a service (by me, and yes clearly there is more work to do on the organised super woman persona). But helpful hubby said, ‘no worries take mine’. Very kind! But actually that car is, in fact ,mine – somehow as life moved on since we bought the cars at the same time, he has ended up driving the convertible Audi and I generally use the very practical Focus. It happened so imperceptibly that I barely noticed, and it is only on occasional moments like the one I describe, where I feel duty bound to remind him that ‘his’ car is in fact mine, within the ‘all my worldly goods’ context of marriage.

All this frustration has left me rather warm and yes, you’ve guessed it, more frantic knob twiddling. I do manage to turn down the ‘blower’ so car air gets cooler, eventually, though I wish my tea had been iced. But the button I can’t find is for the warm seats! I remember regarding these as such a treat in winter and at the beginning of the journey, even while driving in circles and shouting at the pair of sat nav’s to behave and play nicely, I noticed the warmness under my posterior. An hour into the journey however I worried I might combust! I opened the window but of course that doesn’t cool the bottom! And as the drivers among you will now there’s little alternative to sitting on your bottom when you are driving.

My initial concern was about the sat nav – there is one built into ‘his’ car but I know it isn’t always as up to date as the one on my phone, so I express this, and his helpful suggestion is that he will set the car one and I should set my phone one! Correct! - that plan was flawed. Half hour later I have driven round the locality in circles as conflicting sat nav’s tell me to turn right, go straight on, turn left and the inimitable ‘do a U turn’, so obviously I turn ‘his’ off, yes ownership has reversed as it does with troublesome children. Problem is, having turned off sat nav, I can’t get radio back on and I will be driving for 2 hours so this is distressing. And for most of the first hour I press buttons and twiddle knobs, so much so my cup of tea which always accompanies me in its little stay-warm cup remains untouched – a sure sign that this journey is not going as planned. Eventually I manage to get CD mode going and it’s Paulo Nutini – I can live with that, but somehow it’s not changing track so more futile button pushing then I resign myself to ‘New Shoes’ on repeat. A great track but if I ever hear it again someone will get hurt!

I would never have attempted to push the button to put the roof down as I know that there is a lever in the boot that kind of has to be the right way for it to all work well, but you’ve guessed it somewhere, thankfully not on the motorway, but as I was trying to find the paper in my bag that gave the name of the building I was heading to it got pressed! Yes, panic ensued, paper was blown out, carefully styled hair developed the windswept look, which has always born a close resemblance to the dragged through a hedge backward look on me, and it was just lucky I could pull over safely and compose myself (and put roof back up, comb hair and get out of car for a moment to allow some bottom cooling!). Without wishing to offend any women who do have this skill, it has always amazed me that men somehow seem able to jump into any car and get it to do what they want, whereas honestly that has never been my experience. So, relieved to have arrived, I reversed into a parking bay and now I know the solid beep sound when reversing means you are going to hit something!!!

“Hot-spiced chickpeas give this salad a delicious twist. It contains fruits, veg, nuts and feta to provide your body with a well-balanced, nutritious meal”.

Ingredients 1 South African pear, peeled, cored and chopped 1 South African apple, such as Pink Lady, cored and chopped 2tbsp lemon juice 2tbsp olive oil 400g can chickpeas, rinsed and drained 40g whole almonds ¼tsp ground turmeric ½tsp dried chilli flakes ½tsp whole cumin seeds or ground cumin 80g mixed salad leaves 2 cooked beetroot (vacuum packed, not in vinegar), chopped 1tsp wholegrain mustard Salt and freshly ground black pepper 60g feta cheese

Method Toss the South African pear and apple chunks in 1tbsp lemon juice. Set aside. Heat 1tbsp olive oil in a frying pan and add the chickpeas. Cook over a medium heat for 1-2 minutes, then add the almonds, turmeric, chilli flakes and cumin. Cook gently for 2-3 minutes, stirring often. Cool. Share the salad leaves, beetroot and chickpea mixture between 2 serving plates and scatter the pear and apple chunks on top. Mix together the remaining olive oil, lemon juice and mustard. Season and drizzle over the salads. Serve, sprinkled with crumbled feta cheese. Cook’s tip: To serve as a vegan meal, replace the feta with some tofu – or just leave it out. Chicken, South African Apple & Lentil Casserole “A perfect mid-week supper, the apples add a subtle sweetness to complement the warm spicy flavours of this slow-cooked chicken dish”

Ingredients 2 South African apples, such as Pink Lady or Granny Smith 1tbsp vegetable oil 8 chicken thighs (or 4 chicken legs) 1 red or brown onion, sliced 1 large carrot, chopped 2 celery sticks, sliced 1 red pepper, deseeded and chopped 150ml dry cider or unsweetened apple juice 400ml chicken stock 2tsp ground coriander 400g can green lentils, rinsed and drained 2tsp chicken gravy granules Chopped fresh parsley, to garnish

Method Core and chop the South African apples. Heat the vegetable oil in a flameproof casserole dish and add the chicken thighs. Cook for 4-5 minutes, turning occasionally until browned on both sides (this is important for a good flavour). Add the apples, onion, carrot, celery and red pepper and cook for 2 minutes, then pour in the cider or apple juice and stock. Stir in the coriander, then add the lentils. Cover and cook on the hob over a low heat for 1 hour 15 minutes, or cook in the oven for the same time (preheated to 190°C, Fan Oven 170°C, Gas Mark 5). Just before serving, stir in the chicken gravy granules to thicken. Serve garnished with parsley Cook’s tip: Serve with baked potatoes (cooked in the oven for 1 hour 15 minutes) or with creamy mash. Whittlebury Park's Head Pastry Chef Ben Clarke has combined two classic desserts to create a delicious dessert masterpiece.

Ingredients:

Choux Mixture 100ml milk 100ml water 4g salt 8g sugar 90g butter 125g plain flour 4 medium eggs Craquelin 75g butter 90g Demerara sugar 90g plain flour

Hazelnut Praline 250g roasted peeled hazelnuts 150g white caster sugar 15ml water 25g glucose 1/2 teaspoon salt

Method: For the Choux - In a saucepan, bring to boil the milk, water, salt, sugar and butter. Once boiled, sift flour into pan to make a panada and cook through for 1-2 minutes. Put the dough into a bowl and beat a little and let it cool it down. Add the eggs one by one and then pipe using a round tip piping nozzle into 5” lengths. For the Craquelin - Mix all the ingredients together in a mixer until it forms a dough. Roll out the dough between to sheets of paper. Freeze for 2 hours. Cut out the dough to the same size as the éclair and place on top of the raw choux pastry. Cook for 23-25 minutes at low-medium oven (180°C) – Once cooked. Leave to cool. For the Hazelnut Praline - Mix the sugar, glucose and water in a pan. Roast nuts in the oven on a low-medium setting for 15 mins or until golden brown. When sugar is at a caramelised stage, add the hazelnuts. Pour out onto greaseproof paper. Put another sheet on top and then roll as thinly as possible. Once roasted, chop into smaller pieces and use to garnish. Split the buns in half and spoon the filling into a piping bag and carefully pipe the filling into each cooled bun For the Chocolate Shard - Melt chocolate in microwave, stirring continuously until all has melted. Spread chocolate on to the acetate sheet and leave to set, break into small pieces and garnish the éclair.

A Devonshire Delight I’ve been lucky enough to stay in some amazing hotel rooms across the world, so why did a stay in The English Riviera at the Cary Arms and Spa have me wanting to stay forever? Situated in the sunny, sheltered haven of Babbacombe Bay on the South Devon coast, and brimming with coastal charm Cary Arms and Spa has an outstanding setting along with breathtakingly beautiful views all year round. A Beach Suite was our home for two nights and what a suite it was. With steps leading down to our own private decked terrace, suspended over the beach with awe-inspiring views across the bay and beyond, the most magical serene place to sit, whatever the weather, breath in the sea air, take in all the beauty surrounding you, and listen to the lapping of the waves on the rocks. Inside was just as lovely - stylish and decorated to be reminiscent of a beach hut, but on a much larger scale. Whitewashed wood panelling, along with floor to ceiling bi-fold doors on both the lounge and the bedroom, nothing beats waking to the morning sun shining through the glass as you embrace a new day in this wonderful place. The lounge has all the mod cons, including quirky touches such as a flickering virtual fire (no heat comes out, but that doesn’t matter as the ambience it creates is perfect). A bottle of wine, soft drinks and some sweet and savoury snacks awaited us as did a decanter of sloe gin that was left on the unique coffee table, handmade from stones and driftwood from the east coast of Scotland. On the back of the comfy sofa are thick blankets and throws, so whatever the weather you can wrap yourself up and disappear outside to snuggle up on the wooden loungers

and watch the world go by. Although the weather wasn’t blissfully sunny, and we did have a little rain, that wasn’t going to deter us from enjoying the outdoors as much as we could – morning coffee, afternoon/evening wine and bedtime hot chocolate were all consumed on the terrace, whether it was watching the morning waves, the late afternoon sunset or the evening stars it was just too magical to not indulge and take advantage of. As well as two Beach Suites, Cary Arms offer an assortment of various other accommodation including ten elegant sea-facing rooms and suites in the main Inn, three restored fisherman’s cottages and six deluxe beach huts all furnished and decorated to reflect cool, contemporary, beach-side living. Dining takes place in the relaxed and cosy inn, the perfect place for walkers, families, friends and travelling foodies to grab a drink or enjoy some of the fresh seasonal dishes from the kitchen. Wonderfully cosy and oozing with charm, after a day of coastal walks and sea air, it was the perfect place for us to fill our rumbling bellies. It seemed only right that as we were in Devon to start our dining with Devonshire crab and crayfish cocktail, so fresh and full of flavour, I’m sure the chef popped down to the water’s edge and caught it especially for us! A cool glass of the citrusy Cotes de Gascogne paired with this dish perfectly. We were

dining on a Saturday night, which meant the resident pianist was adding to the whole ambience as he played quietly in the corner. Mains were rack of lamb served with sweet potato fondant and tender stem broccoli, a mouth-watering array of texture and taste. Oven baked fillet of hake with crushed new potatoes and a basil pesto was full of flavour and certainly didn’t disappoint.

Cary Arms doesn’t only offer you the perfect coastal retreat, it also affords a great place to explore, just follow the path along the shore line, manoeuvre your way over rocks and paddle your feet in the sea as you take in breathtakingly beautiful scenery before you reach the site of the beachside cafe and water sports centre, where you can hire out boats, enjoy an ice cream as you sit on the beach or take a ride to the top of the cliffs on the historic funicular railway, where you can see the whole bay for miles around. Once at the top Babbacombe is a charming little seaside town, well worth exploring and stopping, of course, for a Devonshire cream tea!

Hubby chose the sticky toffee pudding for dessert, which of course drew top marks, but I was saving myself for toasting some marshmallows in the specially created marshmallow fire outside on the patio. It may have been a cold, damp winter’s evening but you can’t beat getting all wrapped up, huddling round the fire and toasting marshmallows –it’s these little quirky touches that makes Cary Arms even more special.

Fry’s Footie Corner

At the time of writing this column, the season is reaching its climax so I won’t delve too much into results in the Premier League or at League One level, but talk about the finances involved in the game and how it affects clubs like Peterborough. Last summer we signed over 20 players under our previous manager and although the next few months will be busy, it certainly won’t be at that level in terms of incomings and outgoings because ultimately we are a League One club and cannot be spending heaven and earth to reach the Championship. You have to be prudent and box clever. More than ever these days, free transfers and out of contract players are available and that is where you have to be active to get those deals over the line from an early period. We have already signed a couple of players for next season who were free agents in the summer. You talk to agents, the clubs involved to get a deal over the line. For us at Peterborough, players’ know that we won’t stand in their way. There are so many examples of stars that our football club have produced with Ryan Bennett, Dwight Gayle, Britt Assombalonga, George Boyd and Jack Marriott just a handful that have gone on to play in the Premier League or the Championship with their reputations enhanced at the Posh. There will be many more. We love unearthing young gems from the non-league and our philosophy won’t change on that front. We have also invested heavily in our Academy system to try and bring through the next star from our training ground. Clubs outside of the top two divisions have to do that and often rely on home-grown players being sold for big money. We did it with Leo Da Silva Lopes and would have done it with Jermaine Anderson had injuries not curtailed his progress. In my role, when the transfer window opens, that is when things will get busy in the media world with signings being announced left, right and centre, but in reality a lot of that work has already been done behind the scenes. We know the players we want that have been identified by our management team, it is down to me with the chairman’s support to get the deals over the line. Let’s hope whatever the summer brings, it can bring us optimism moving forward.

uilt to celebrate one of the most illustrious moments in Aston Martin’s motorsport history, ‘DBS 59’ is a limited run of 24 special edition DBS Superleggeras, the first of which has just been built at the company’s global manufacturing headquarters, Gaydon.

‘DBS 59’ was a special commission through ‘Q by Aston Martin’, the luxury brand’s unique personalisation service that allows for the creation of iconic sports cars through close collaboration with the Aston Martin design team. Commissioned by Aston Martin Cambridge, the project honours Aston Martin’s historic 1-2 finish in the DBR1 at the 24 Hours of Le Mans. Each car represents one hour of this iconic victory in Aston Martin’s history, in which Roy Salvadori and Caroll Shelby took the chequered flag ahead of the sister car piloted by Maurice Trintignant and Paul Frére. ‘DBS 59’ honours the DBR1 through specially engineered styling cues, showcasing the expertise of ‘Q by Aston Martin’. Following a careful study of the DBR1’s own paint exterior, Aston Martin Racing Green was the outwear chosen for ‘DBS 59’. Gloss finish carbon fibre on the roof

panel and strakes add a striking juxtaposition against the lustrous green. Bronze details such as the ‘Superleggera’ bonnet badging, bespoke front grille, brake callipers and 21” forged Y spoke satin duotone wheels nod to the bronze switches and dials on the Le Mans winner. Further exterior details, such as the individually numbered roundel painted on the fender, and the bespoke tyre wall arrow decal, breathe the spirit of racing into the already impressive performance of the DBS Superleggera. On the Aeroblade of ‘DBS 59’, ‘Q by Aston Martin’ has added a foil inlay – also in bronze – that outlines the original shape, chassis number and engine number of the DBR1 that won Le Mans in 1959. For the design of the interior space, ‘Q by Aston Martin’ analysed the original seat material used on the DBR1 and recreated that same weave with each seat back and door insert trimmed in heritage style material. Bronze details continue in the hand-crafted interior space with unique bronze shift paddles and a bespoke ‘59 Edition’ logo embroidered on the seatback.

Finally, the interior combination of Obsidian Black and Chestnut Tan leather creates a calm sophisticated space that includes embroidery of the 1959 Le Mans circuit on the rear speaker cover. Also, embroidery on the sun visor gives the exact date the race took place and celebrates the 323 laps completed within the 24 hours. Accessories are also considered with a replica heritage racing helmet, 1959 blue race suits and replicas of Carroll Shelby’s race gloves. The DBS Superleggera was launched in 2018 and features a 5.2-litre V12 engine, DBS Superleggera can reach a top-speed of 211mph making it the fastest Aston Martin series production in the company’s award-winning range. Bold styling cues and astonishing performance, make DBS Superleggera highly-desirable with ‘DBS 59’ the ideal machine for
