So many of us have got into the habit of online shopping, but now that restrictions on entering shops has changed, let’s all think about supporting local and independent businesses that rely on us (the general public) to get them back on track and into a growing economy. Just remember, love it or hate it, the new norm is wearing face masks in shops, so make them along with hand sanitiser a must in your handbag or pocket.
If you enjoy exploring the UK, then Sussex is a great place to visit, whether it’s for a few days or a week or two, a relaxing getaway or an action-packed adventure it has it all and more. Known for its vineyards and wines, it’s perfect for a food & wine adventure, turn to page 50 to read more.
Talking of food, I’m loving this months’ recipes they’re so easy to make and are perfect for those autumn evenings when you can’t be bothered to spend hours in the kitchen preparing dinner (page 32) and if we twist your arm you can always open one of the wines from this months’ selection (page 35).

Relax your Mind with Plants
Houseplants should be integrated in your house to create mindfulness. An environmentally rich addition to you house will ease stress levels and relax your mind. In this current climate it is normal to feel anxious and overwhelmed, creating a plant space or filling each room with plants will subtly ease you into meditation. Active plant care is a small but effective way to look after your mental wellbeing. By bringing your attention to caring for your plants, you can focus solely on the present moment and distract your brain from anxious thoughts. Plants are also a great way to take a much-needed technology break, focusing on your plants even if it is a few minutes a day, forces you to stop. To help you learn just how effective plants are, the experts at Forest Healthcare have described the 7 ways they can relax your mind.
1) Reduces background noise If you live in a busy area, you might be constantly hearing sounds of cars and passers-by, this makes it increasingly difficult to relax and rejuvenate. Creating a stress-free indoor plant sanctuary will help to reduce noise levels indoors. This is because large plants carry a large surface area, making it more effective at absorbing sound and providing tranquillity. Place your larger plants around the perimeter of your rooms so the sound bounces from the walls straight into the surface area of the leaves.
2) Eliminates harmful toxins and improves air quality Plants are natural air purifiers and help to remove toxins from the atmosphere. Depending on your exposure, chemicals in the air could lead to negative health effects depending on your exposure. Plants can take carbon dioxide from the atmosphere and produce oxygen which improves the air quality. They also have properties which help to reduce airborne dust levels and increase air humidity so you can eliminate coughing, fatigue and itchy eyes.
3) Increases productivity Research has proven that people perform better at attention-based tasks when surrounded by plants. Everyone has certain days in which they spend a lot time staring at a screen, unable to be productive, all you need to solve that is plant therapy. A research study conducted at Exeter University found out that indoor plants can improve concentration, productivity and staff well-being by 47%. These effects come from stimulating plant colours, calming aromas and oxygenating abilities. Since many of us are working from home, when the weather isn’t great, we spend several hours indoors and are being exposed to high amounts of CO2, which make it harder to
concentrate and think clearly. The oxygen that is created by indoor plants helps to balance the level of CO2 in our bodies.
4) Helps you sleep We all need enough sleep to have a positive effect on our health and be productive for the day ahead. Plants can help you get a good night’s sleep by purifying the air in your bedroom and producing a scent that helps you to relax. Plants such as aloe vera give out a lot of oxygen at night that help you to breathe better as well as removing the toxins from the air.
5) Reduce the risk of headaches Plants have air-purifying properties that can counter headaches. Research has revealed that plants can help to remove benzene, trichloroethylene and formaldehyde from the air. Formaldehyde is a gas that is used in the production of leather and wood products, which is why its present in many indoor environments, it is a common cause of headaches due to the strong odours.
6) Brings in nature Many of us live in busy cities contacting the modern world every day but have very little interaction with nature. By bringing the nature into your home, our minds can sub consciously benefit from the soothing effects of greenery. This provides a great opportunity to switch off from your daily tasks so you can enjoy nurturing your new plant sanctuary. Adding a potted plant to a bedside table for example, can instantly make your space look more appealing.
7) Relieve stress and anxiety Taking care of your plants as you finish your day can help reduce any feeling of stress and anxiety. Even a simple gesture such as touching the leaves of your plants for 2 minutes can have a positive impact on your stress levels. Pothos are a great house plant for beginners because they’re easy to maintain and help to cleanse the air around you. Coffee Lover What makes that first cup of coffee so wonderful? When we drink coffee, caffeine binds to our brain’s adenosine receptors, which prevent us from being tired. As well as this, it also stimulates the production of adrenaline and dopamine in the brain, making us feel happier and more energetic throughout the day. From the anticipation of brewing your morning espresso to the absorption of caffeine throughout your body, coffee has complex and intriguing effects on the brain.
We spoke to coffee expert, James Carter from Coffee Direct, who highlights 5 surprising ways your first cup of coffee affects your brain. The Anticipation - Coffee is the most popular beverage in the world, with more than 400 billion cups consumed each year. A lot of people wake up to the anticipation of drinking their first cup of coffee, and it makes them look forward to their day. Anticipation is rooted in the brain’s cerebellum, which controls automatic thinking. When we anticipate a positive situation, such as drinking coffee, our brain desires more dopamine (aka ‘the happy hormone’) as feelings of excitement arise. That means you will feel good even just knowing you’ll soon be drinking your first cup of freshly brewed coffee. The Preparation - Pavlovian theory dictates that certain objects or events can trigger a conditioned response. When we prepare coffee, our conditioned response is that of pleasure, so our brain reacts by releasing even more dopamine into our system. This explains why we feel excited when waiting for our coffee to brew or driving to collect one at our favourite local coffee shop. The Aroma - Smelling the ‘right’
aromas can help us feel happier. For example, we know lavender can help reduce stress, but how does the aroma of coffee help boost our mood? The smell of coffee hits our scent receptors and acts as a powerful brain trigger, generating good memories and feelings. Some studies have found that the scent of coffee can cause a placebo effect of enhanced responsiveness and an increase in performance. No wonder the saying goes ‘wake up and smell the coffee’.
The Taste - Drinking coffee has been unfairly demonised in the past, but moderate consumption can be very healthy. When drinking coffee, the caffeine enters your bloodstream and quickly finds its way to your brain, where it works as a stimulant. As well as boosting your alertness and energy, studies have also connected caffeine consumption to boosting memory and combating diseases such as Alzheimer’s. Ultimately, coffee can improve our reaction time, vigilance and attention throughout the day. The Aftermath - After you have finished your first cup of coffee, you should achieve a state of peak performance. The caffeine will block the inhibitory neurotransmitters, such as adenosine, which would otherwise make us feel sleepy and increases the levels of feel-good chemical dopamine. Therefore, you will notice an increased alertness and an improved mood. We recommend timing drinking your first cup of coffee so you can efficiently maximise the energy you gain. Midlife Madness I must confess I am not a rebel. If there is a rule, 9 times out of 10, I am willing to comply. I’m not saying I never disobey rules but I absolutely hate being told off so if I do disobey it is likely to be through negligence rather than disobedience. However, I do need to KNOW what I am meant to be doing! And frankly at the moment that is proving difficult for me. And if I do feel that I know what I am meant to be doing and do it then I become perplexed when I notice lots of people not doing it – is it because I’ve got the rule wrong?
Whatever our political persuasion or view of the government, I think many would say their pronouncements often lack clarity!! So frankly I have spent recent weeks in a quandary – I wear a mask in shops – but actually I think it can be a face covering instead, so sometimes I’ve done that but then folk seem to look at me a bit strangely. I don’t use public transport much at the moment but if I did, I’d wear a mask, but I see people travelling alone in a car wearing a mask and I don’t get why? When I go for a walk, I don’t wear a mask – or face covering and where I walk, I don’t see many people but sometimes I do and sometimes they are wearing masks. Help what should I be doing!
I’ve found distances puzzling too – first I think social distancing is a misnomer – it’s not social distancing we can be as social as we like – it might have to be virtual but it is physical distancing that we are trying to achieve – I think! But how distant – 2 metres, 1 metre or does it vary? And folk that we might bubble with how many from how many households and presumably it depends on where we are with regional laws. All a bit confusing.
But it’s not just those kind of instructions – I’ve been reconnecting with my creative side and as a teenager I used to do a lot of crocheting. To be honest I thought it would be like riding a bike as in once learned never forgotten but I can tell you that it is not and the written instructions - well, what can I say! It’s like reading a foreign language. Thank goodness for YouTube! But what I really need is plain English instructions on every instruction carrying item. And for items that shouldn’t need instructions I need them to work! I know it sounds silly but I bought a water bottle particularly for use when I’m in bed as I often wake thirsty, yes then wee, yes then be thirsty again- all part of the rich pageant of advancing years. Now it’s a water bottle, not exactly high tech! It’s one of those where a tube kind of pulls up! Problem is when I drink it leaks so much it’s like being water boarded in your own bed in the middle of the night!! Not that I ever have been water boarded, obviously it’s one experience I feel I can happily miss, but I imagine it’s what it’s like and frankly when you are in bed and get a good dose of water leaking all over your face and front it ends up causing a lot of ‘difficulty’. Basically, I’m not quiet, so hubby cottons that something is wrong – possibly the loud screams, coughing and spluttering give it away! Then of course there is a damp bed or at least nightie – more commotion! Could a water bottle be cited as grounds for divorce?
My plea to the world then is if you are going to issue a rule – make it clear! If you are going to offer instructions make them clear. If you think no instructions are needed make sure the darned item works. In the words of our Meerkat friends ‘simples’!

Why Embracing Emotions is
Good for Wellbeing

f I’m honest I think emotions have had a bit of a bad press. Yes, they can be messy and upsetting at times but they can also be wonderful! Imagine for a second what life would be like without emotions, sure you would haven’t the gutwrenching sorrow but, also you wouldn’t have those moments of utter joy.
The fact is that emotions are a part of life, we are essentially stuck with them. How we handle them however can either support our wellbeing or detract from it contributing to all sorts of mental and physical ill health.
One of the keys to understanding our emotions is to accept there aren’t good or bad emotions, they might feel good or bad but they are responses to a stimulus, something that happens. Sometimes our response is predictable sometimes it might surprise us but it wells up from within it is not something we ‘decide’ to manufacture.
We also know that the way that we deal with emotions is important – if we hit out at people every time we were upset; life would become difficult! So, at times we ‘hold’ our emotions and that is fine as long as at some point we acknowledge them and deal with them, more on that in a moment. “You wouldn’t pretend it didn’t hurt if you stubbed your toe. Emotional pain is just as valid as physical pain and you should never be ashamed of it. You are allowed to feel your feelings too. Your emotions are valid”. Lindsay Adkinson
We all know we cannot control what happens in life, as the recent pandemic has shown all of us but we can control how we react to what happens, it might not be easy but it is possible. However, we also know that bottling up our emotions can have harmful consequences leading to physical problems like high blood pressure, skin conditions, stomach issues and many more AND mental/emotional health issues like anxiety, depression and poor self-esteem.
Learning to embrace our emotions is good for us. We recognise we are integrated, whole people and for far too long we have somehow tried to separate out physical and mental health but of course they are intertwined. We are discovering that very many physical conditions have their roots in emotional issues, like stress and how we respond to it. Follow the steps below to make sure you embrace emotions in a way that is healthy and will promote wellbeing.
Acknowledge the emotion The first step is simply NOT ignoring the emotion but acknowledging it. Noticing what you feel, it can be helpful to try and label the emotion – which might be harder than you think. We often get stuck into talking about just a few emotions.
See emotions as an asset We have emotions for various reasons – one is they help with survival. Once we can change our thinking and see emotions as beneficial something that can help us rather than something that is irritating or a weakness, then we can start to manage them in ways that won’t damage us but rather be something that supports our wellbeing. Allow time to feel It can be a temptation to ‘distract’ ourselves from uncomfortable emotions – get busy -fill our lives to the max just to stop feeling. And that can be useful. But if it becomes our only strategy then emotions sort of pile up! We don’t deal with them but they don’t disappear – or many won’t and then we’ll get to a point where they will spill out. Either in some kind of emotional outburst, some mental health issues or physical symptoms. It’s a good idea to build in some regular times for yourself because it will give you a chance to connect with your feelings.
Expressing Emotions Safely Moving through emotions is expressing them – we express emotions in different ways and the key is to find ways we can express them that don’t do harm to ourselves or others. Imagine being very angry about something – you could maybe take your anger out on someone or you could choose instead to do something calming, maybe go for a walk have a long hot bath or indeed do some thing energetic like boxing or go find a place to sing or even scream. Regulation is a word we hear lot these days and it refers to how we calm ourselves when we feel pushed out of our emotional comfort zone. Build regulation into your routine The kind of things that help us regulate are things that are calming, like taking a few deep breaths, mindfulness or meditation, doing things we enjoy, sensory things like listening to music, enjoying a bath with some lovely aromas, creative activities painting, sewing, baking, soothing activities like reading and many more. Seafood and Chorizo Paella “ The perfect dish to share with family and friends alongside a cold glass of crisp white wine”
Ingredients
300g Basmati Rice 1 Red Onion 450g pack Mussels in White Wine Sauce 150g pack Cooked and Peeled Prawns 400g tin Chopped Tomatoes 1 Pepper 2 Lemons 1 200g Chorizo Ring 2 cloves of Garlic 1 heaped tsp Paprika 30ml Olive Oil Salt and Black Pepper
Method
Peel and finely chop the onion. Then, chop the green pepper into small chunks, discarding of any seeds. Also, peel and mince the garlic. In a large saucepan, sauté the onion, pepper and the garlic for 2 minutes. Add the tinned tomatoes, juiced lemon, paprika and the rice. Pour over 300ml of boiling water and cook gently for 15 minutes, stirring as you cook. Chop the chorizo into small chunks and dry fry in a frying pan for 5 minutes on a low heat. Add the mussels to the pan with their juices and simmer for 5 minutes. Then, add the prawns and cook for a further minute. Stir the chorizo mixture through the rice and serve with wedges of lemon. Beef Bourguignon
“A hearty dish which is just perfect for Autumn suppers” Ingredients
700g British Diced Beef 85g Smoked Pancetta 150g Shallots, peeled and halved 2 x Carrots, peeled and cut into chunks 2 x cloves of Garlic, crushed 75ml Red Wine 1 x Quixo Stock Cube 2 tbsp Rapeseed Oil 1 x sprig Fresh Rosemary 1 x sprig Fresh Thyme ½ tsp Salt ½ tsp Pepper Optional - 1 tbsp The Pantry Cornflour and 1 tbsp cold Water 1 tbsp Butter 200g Button Mushrooms
Method
Pre-heat the oven to 170°C/150°C Fan/Gas Mark 3. Heat 1 tablespoon of the oil in a large, hob-safe, casserole dish. In small batches, brown the beef and then place on a plate to one side. Next, add the remaining oil into the pan, followed by the pancetta. Cook for a couple of minutes until the pancetta has started to crisp, then add the shallots and cook for 2 to 3 minutes until they have browned and the pancetta is crispy. Add the crushed garlic and the carrots to the pan and then, over a medium heat, pour in the red wine. Next, add the beef back into the pan along with 150ml of boiling water and the stock cube, rosemary, thyme, salt and pepper. Place the lid on the casserole dish and transfer to the oven, then cook for 2 hours. After 2 hours, heat the butter in a small frying pan and sauté the mushrooms for 5 minutes until they have browned. Add the mushrooms to the stew and if the sauce is thick enough then cover with the lid and roast for 20 minutes more. If you want to thicken the stew, mix the water and cornflour and add to the stew along with the mushrooms. Serve the beef bourguignon hot with fresh crusty bread or mashed potato. Upside Down Plum, Peach & Almond Cake “Juicy plum and peach flavours combine with almond to create this delicious upside-down cake”.
Ingredients 4tbsp golden syrup or honey 6 South African plums, halved and pitted 2 South African peaches or nectarines, pitted and sliced 150g butter, at room temperature 150g light soft brown sugar 3 large eggs, beaten 1tsp almond extract 150g ground almonds 150g self-raising flour 2tbsp milk 12 whole almonds Method Preheat the oven to 180°C, 160°C fan, Gas Mark 4. Grease and line a 20cm round cake tin.Spoon the golden syrup or honey into the cake tin and spread over the base. Arrange the halved plums on top, cut sides down. Tuck in the peach or nectarine slices.In a large bowl, beat together the butter and sugar until light and fluffy. Gradually beat in the eggs. Stir in the almond extract and ground almonds. Fold in the flour using a large metal spoon, then gently stir in the milk.Spoon the mixture into the tin and level it out. Bake for 45-50 minutes, until
risen and golden brown. Check with a fine skewer inserted into the cake – it should come out clean. Cool in the tin for 20 minutes, then invert onto a cooling rack and remove the lining paper. Cool completely. Serve with the almonds placed into the middle of each plum half. Cook’s tips: Bake the cake on a foil-lined baking sheet, in case the syrup seeps out. For a dairy-free version, use dairy-free margarine instead of butter, and use almond milk as an alternative to regular milk.

Fry’s Footie Corner The new season is upon us. A very different season. One that nobody could have predicted, but you have to move with the times that we live in and we at Peterborough United are ready, we are looking forward to the challenge and we will see where it takes us.
Games will come thick and fast, there is no rest period, it is going to be Saturday, Tuesday, Saturday for the foreseeable, in fact, by the end of September, the Carabao Cup fourth round will be on the agenda. I have spoken previously about the transfer market and the unpredictable nature of it, but one thing is for sure, Chelsea have money and they are not afraid to spend it. After the conclusion of the transfer ban, Frank Lampard has been spending millions to strengthen his squad with Leicester City defender Ben Chilwell and German striker Timo Werner among the arrivals.
I think Chelsea will push for that title with Manchester City and Liverpool, but it is a season that is hard to predict. Arsenal lifted the first silverware of the campaign with a penalty shoot out success against Liverpool and they will feel they can challenge for the Champions League. As a member of staff at a football club, make no mistake, we know that we are fortunate to be watching football. Football without fans is a completely different game to one with fans. We found in pre-season what it was going to be like inside the stadiums and it is eerie, you can hear the players, you can hear the management barking out the orders. It will take a little getting used to that is for sure, but life has to go on and the EFL need their clubs to survive and this is the only way that can happen. At Peterborough, we were really disappointed with how last season ended, but we have to use that frustration to have a good campaign this year and hopefully get promoted to the Championship. Ivan Toney left us to join Brentford for an undisclosed fee and I would like to wish him well. He was superb for us in the two years he was with the football club, he led the line wonderfully well, scored some great goals and at times, was our best defender. He will be a success at Brentford and I am sure will help them get promoted. Stay Safe

exhill-on-Sea, a tranquil, picturesque seaside town, that still retains much of the charm and style that made it a favourite of the Victorian and Edwardian aristocracy. Housed between Eastbourne and Hastings this quaint town is part of Sussex Modern, a collective of contemporary art, vineyards, foodie havens and landscapes in and around Sussex and with UK Staycations being the norm this year, it’s a definite trip to add to your list.

Walk along the beach dipping your toes in the sea, or sit on the sand watching the world go by, grab a coffee and relax at one of the promenade café’s or restaurants, and for lunch there really is no choice, book an outdoor rooftop table at the Café Bar & Kitchen situated within The De La Warr Pavilion (a Grade One listed building that has been turned into a cultural centre for contemporary exhibitions, music, events and entertainment directly on the sea front), the views are simply stunning and if you just want to sit quietly looking out to sea, there’s always the traditional deck chairs dotted around the roof, you can spend a few hours or all day here, it really is a seaside town of the past.
Sussex has so many places to stay, whether it’s a self-catering cottage, luxurious hotel, a glamping pod, historic country house, or if like me you’re partial to a glass or two of wine then what could be more perfect that staying at a vineyard, not literally within the vines but at The Flint Barns, a historic building nestled in the Cradle Valley, surrounded by miles of rolling vineyards within the Rathfinny Wine Estate. Staying in a vineyard means not only do you get to surround yourself with rolling countryside you also get to enjoy some wine tasting paired with fine dining without worrying about how you’re going to make it home!
The aptly named Tasting Room Restaurant was a dining delight. Led by Michelin Star chef Chris Bailey, who has taken his inspiration from the Sussex coastline and countryside to create a six-course tasting menu - choose from land, sea or garden and optional wine pairings, which of course we opted for. The menu changes depending on the season, but highlights when we visited included red onion & olive tart with smoked burrata and truffle, sea trout with smoked-eel croquette, a radicchio and green apple risotto and a beetroot crisp, quince & wood sorrel, all served in an elegant relaxed atmosphere, with views overlooking the vineyards, definitely fine dining at its best. If you’re looking for a more intimate wine tasting experience then Oxney Organic Wine Estate, located on the East Sussex and Kent border is the place to visit, looking like a regular farm from the road it is the largest single organic vineyard in the UK and produces award-winning still and sparkling wines. A wine tasting tour is a must, even if it’s just to stimulate your tastebuds with a cool glass of Oxney Classic Sparkling Rose, the fresh flavours of wild strawberries are a delight and still one of my favourite sparkling wines to date. If you only visit one thing that isn’t wine related whilst you’re in Sussex make it the Long Man of Wilmington, Britain’s tallest chalk hill figure that has baffled archaeologists and historians for hundreds of years.
Many people are convinced that he is prehistoric, whilst others believe that he is the work of an artistic monk from the nearby Priory created between the 11th and 15th centuries. There has been much speculation as to his purpose. Fertility symbol? Ancient warrior? Early 18th century folly? Who knows? Whatever he is you can take a look from afar or walk across his form on the side of the Downs, either way the fresh air will certainly clear your head ready for your next wine experience

Ours was at The Bolney Wine Estate in rural Sussex, one of the oldest and most beautiful vineyards in England, perfect for enjoying a stroll through acres of vines and marvelling at the many different varieties of grapes that go into creating the fabulous collection of Bolney wines; Sparkling, Bacchus, Pinot Noir and Blanc de Blancs. You can enjoy panoramic views from the restaurant balcony as you enjoy a glass of wine over lunch, alternatively you can order a picnic box and head off to enjoy it within the vines.

Built from 1730, Half Moon Street was a colourful haunt for bachelors, bohemians and artistic types in Victorian London.
