Korean Pear Export Status Pear, a typical Korean autumn fruit, is generally harvested from September. The peak of the harvesting season falls around Chuseok (Korean Thanksgiving), so pear is often associated with the holiday. The merits of the Korean pear include its refreshing sweetness and crispness. The sugar content averages 12 to 14 Brix. Thanks to its sweetness, Korean pear is widely processed into extract, juice, and jam. The main production regions are Naju (South Jeolla Province), Cheonan (South Chungcheong Province), and Anseong (Gyeonggi Province). The sweetness and high quality of the Korean pear have opened the doors of 30 markets around the world, including the US and Taiwan. Among the different kinds of pears cultivated in Korea, Singo pear is the one most popular overseas.

February with Valentine’s Day is the month of love in which a lot of people around the world extend their love and gratitude to their lover, family, and friends. Westerners usually give chocolate and candies together with cards conveying their love. In East Asia where the lunar calendar is often consulted, February more often than not includes the lunar New Year’s Day. It is called Seol in Korea and Chunjie (Spring Festival) in China. The Korean Seol Culture

In Korea, Seol signifies the start of a new year. On the day, all in the family, who are scattered across the country, get together in one place. Usually, children who are gone to city head home to spend time with their parents. And the family now home prepare food together. They make food for the ancestral service early on the day of Seol. On the morning of Seol, all in the family, now dressed in seolbim, arrange the food prepared and give the ancestral service. Seolbim refers to the dress for Seol. Yut Nori, which is about moving tokens (called mal) on a board by casting four wooden yut-sticks, is a representative folk game which all in the family can enjoy. Other major folk plays enjoyed on Seol include Neolttwigi, which has two persons jump into the air from each end of the long plank seesawing over a bale of paddy straws or a straw bag, and jegichagi, a Korean traditional outdoor game in which players kick a jegi, made with a coin or iron stick wrapped with sturdy paper or cloth, into the air and attempt to keep it aloft. Those who want to feel the traditional culture around Seol in Korea may want to visit Folk Village in Yongin, either of the Hanok Villages in Seoul and Jeonju, or Hahoe Village in Andong.

farms affiliated under the Nosong Nonghyup Co-selection and Shipping Organization in Nonsan, Chungcheongnamdo are exporting ‘Kingsberry’, a strawberry variety launched late last year to six Southeast Asian countries. ‘Kingsberry’ is emerging as a promising export product for its superior taste, sugar content, size, color and price competitiveness than Japanese strawberry.

‘Kingsberry’, a high quality strawberry variety developed in Korea ‘Kingsberry’ is a strawberry variety originated from Korea at the end of nine years of research at the Nonsan Strawberry Laboratory in Chungcheongnam-do. This variety is expected to lead the premium strawberry market with its 2-3 times bigger size and sugar content than existing Seolhyang and Maehyang varieties. Park Hyung-gyu, the president of Nosong Nonghyup Co-selection and Shipping Organization said “Since the distribution of the Kingsberry variety to strawberry farms last year, many farms started growing it, but many of them suffered loss due to malformed fruits, diseases, pests and weak texture”, and explained the success story from cultivation to export saying “But from trial-and-error, we successfully grew it by using chlorella, seaweed microorgan-

With its products exporting to the US market at six times higher price than Calrose in US, the company is emerging as a leading player in the high quality functional rice export market.

Began exporting functional GABA rice to US in 2014 GABA rice has its name from a high content of GABA in the ‘Golden Tower’ variety developed by the academic-industrial research team at the Yeungnam University. Doobo Agricultural entered an exporting contract with the LA Korean Market in US in 2014 for GABA rice produced from contract cultivation over approximately 230ha of land with farmers in Goseong, Gyeongsangnam-do. In 2015, the company also entered a contract for exporting over 100 tons per year over three years with an online telemarketing company in US. Based on this contract, the company has continuosuly increased the export volumes year over year including 180 tons in 2015. How to Make Makgeolli with The Makgeolli Things to Prepare: 10L container, water 5L, 1 set of The Makgeolli, foam maker, strainer

Pour 5L of water into the container and add the whole set of The Makgeolli.

Put the lid gently on and let the mix ripen at room temperature (25-28℃) for 3 or 4 days. Do not close the lid tightly. As the gas produced during fermentation inflates, the content may overflow.

Use the foam maker to stir rice powder, yeast, and leaven together so that they may dissolve in water.

3 or 4 days later, when you see the separation into clear and opaque layers, you see that makgeolli is completed. Then, use the strainer to filter the yeast.

Keep the purified makgeolli refrigerated in a suitable container. A week or so of ripening in refrigeration delivers the finest taste. As fermentation may proceed further, do not close the lid tightly but leave it loosely closed.

In the Joseon literature, laver first appears as a local specialty product of Taeindo Isalnd in Gwangyang-gun, Jeollanam-do. From this, we can see that the culture of wrapping rice and side dish in laver began in the Joseon Dynasty. It is estimated that there have been many cuisines using laver in the Joseon Dynasty, and following the development of laver related food culture, Gimbap was born in the modern times.

Basically, Gimbap is made by rolling carrots, cucumber, eggs and spinaches into laver and rice. But its biggest advantage is that Gimbap can be made by personal preference. Pork belly Gimbap, grilled saury Gimbap, rolled omelet Gimbap, anchovy Gimbap and cheese Gimbap are some of the many. Depending on the appearance, Gimbap can be classified into ordinary Gimbap, mini Gimbap and triangular Gimbap.

Chungmu-style Gimbap is a representative local food of Tongyeong, Gyeongsangnam-do, where rice and side dish are separately served. White rice is rolled into laver and served alongside seasoned squid and radish kimchi. In Tongyeong is a Chungmu-style Gimbap street where they specialize in Chungmu-stype Gimbap.

In rice cooked over small amount of water, add salt and sesame oil. Mix well and let it cool down for a while.

Ingredients and Amount of Gimbap (Serves 4) 4 bowls of white rice (920g), 1 tsp. salt, 2 tbs. sesame oil, 4 sheets of roasted laver, 200g minced beef, 4 strips of pickled radish (90g), 2/3 cucumber (100g), 1/2 carrot (100g), 3 eggs, vegetable oil, salt and sesame oil

Marinate minced beef in meat seasoning for 20 minutes. Then, stir-fry on a hot pan until meat is cooked.

Cut pickled radish in thickness of a pencil in the length of laver. Cut cucumber in the same length and thickness as pickled radish. Soak cucumber in vinegarsugar-salt water for 30 minutes, then remove moisture.

Salt finely julienned carrot, stir-fry and allow it to cool. Beat salt into eggs and make a thick omelet. Like other ingredients, cut into a pencil-sized width.

Place laver with smooth side on top onto a bamboo mat. Place 1 cup of seasoned rice at the center of laver and spread onto laver except top 1/4 part of laver.

According to taste, add kimchi, cheese or salad to make a special Gimbap.

rom few years, video clips that show foreigners eating Korean hot spicy chicken fried noodles

have been often posted in the world biggest video site YOUTUBE. Videos of this product receiving an attention for its strong hot taste have been posted after taking them for the challenging purpose. Besides such hot chicken fried noodle considered as the representative of Korean Ramen, there are diverse dishes and food ingredients that have hot flavor. Among those, Kimchi, Bibimbap, Kimchi stew and stir-fried rice cake are good examples. They are dishes made with the basic food ingredients that flavor hot taste such as Korean hot pepper and hot bean paste. Maria Monserrat Rangel Jaquez from Mexico who came to Korea in marriage about 2 years ago also has been fascinated with Korean foods. <Korea Agrafood met Maria Monserat Rangel Jaquez and listened to her story about Korean food and her determination about aT supporters’ activities.

What made you like Korean food and when did you come to Korea?

Mexicans love hot foods. I came to know Korean friends in the language school in Mexico and to experience Korean foods, and became to love Korean foods. I met and got married with Korean man in the language school in Mexico and came to Korea with my parents on December 2016. In Korea, I have been learning diverse Korean foods through my mother-inlaw.

Tell me your favorite Korean food.

My most favorite Korean foods are Rabokki and port feet. Carnitas is the fried meat inside taco which taste is similar to Korean pork feet. I love Rabokki so much for its hot taste. I also enjoys Sundae (Korean sausage) because it is similar to the cooking process and taste of moronga in Mexico. There is no Korean foods I don’t like. I have learned from mother-inlaw how to make side dishes such as napa Kimchi, Kkakduki, and Japchae, and seasoned bean sprout. I am also making baby food directly for her 12 months baby after she started making diverse Korean foods. My baby likes not only laver but also less hot Kimchi. My baby eats so well when I mix Korean foods with Mexican foods. You have become a member of the Taste-K unit. Tell me your resolution.

My parents also love Korean dishes and have a great interest in Korean agricultural foods. I happened to know Taste-K through the event posted on SNS and applied for the event because I loved Korean foods. I think there is an ample possibility of exportation of Korean rabokki and pork feet which are similar to Mexican foods. I will engage diligently in the promotion of Korean foods and the opinion presentation for the products of export companies.

What is the World Supporters, Taste-K? The Taste-K launched in 2017, is the world supporters, which consists of foreigners in Korea to support diverse changes in export market of agricultural foods. Last year, aT selected 200 foreign students from 20 countries including Brazil, Kazakhstan and Poland as supporters. They have been working for Taste-K supporters since July 2018.

Gyeongbokgung Palace yeongbokgung Palace is the largest legal palace in the Joseon Dynasty, built during the reign of King Taejo. Here you can see Geunjeongjeon Hall, the best wooden building in existence, beautiful Gyeonghoeru Pavilion, Hyangwonjeong, the first source of electricity in Korea, and Gwanghwamun, the front gate of Gyeongbokgung. From these historic sites, we can peep into the state affairs facilities of the Joseon king and officials as well as living space of the royal family. Traditional performances, tea ceremony and royal guard-changing ceremony are held for tourists.

Neobiani (Marinated Grilled Beef Slices): Neobiani, also known as royal bulgogi, is cooked by mincing beef sirloin or tenderloin, seasoning, shaping into slices and grilling. Neobiani is especially full of flavor. It originated from Maekjeok, and in Gaeseong, there was grilled meat dish called Seokhamyeok. Later on, it is known that the recipe of Neobiani was known mainly in royal cuisine. It is known as a favorite dish of King Sejong who especially liked meat among Joseon kings.

Deoksugung Palace eoksugung Palace was originally called Gyeongungung Palace. It was named Deoksugung in memory of the virtue and wish for longevity of the late king (King Gojong) by King Sunjong. Although the Deoksugung Stonewall Walkway is a famous dating site, it is also a site in remembrance of the fierce time in the modern history of Korea during Korea refuge at the Russian legation, proclamation of the Korea Empire and the Japan-Korea Treaty of 1905. Likewise, Deoksugung Palace remains the modern history of Korea in a place that combines the medieval and modern times with a modern pavilion and a western-style garden.

Japchae: Japchae is made by mixing vegetables such as spinach, carrot, mushroom and onion with glass noodles and meat and is served warm. From old days, it was a favorite dish in birthday parties, wedding banquets and feasts for its colors and dignity. It is said that Japchae was first served in the royal feast during the reign of Gwanghaegun in the Joseon Dynasty. Also, Gilgyeong Japchae, known to be served to King Jeongjo during his honored going to Hwaseong, is a mixed vegetable dish made from white balloon flower roots, burdock and cucumber for the flavor of balloon flower roots and crunchy taste.

hangdeokgung Palace is a palace during the Joseon Dynasty, located at the foot of Eungbong Peak, the left peak of Bugaksan Mountain. Changdeokgung Palace that served as a legal palace of Joseon until all palaces were burnt during the Japanese invasion and Gyeongbokgung Palace was built, was the only palace in Korea to be listed as world heritage in 1997. You can see Donhwamun Gate, the front gate of Changdeokgung, Injeongjeon Hall where the inaugurations of many kings during the Joseon Dynasty were held, and Gwollaegaksa, a government office in palace to assist the king and the royal court.

Naengmyeon: Naengmyeon, globally known when served in the banquet during the 2018 inter-Korean Summit, was originally a winter folk food in the Pyeongyang region since Goryeo Dynasty where they served noodles in cold soup. When it was spread across the country during the Joseon Dynasty, kings of Joseon including King Gojong, King Yeongjo, King Jeongjo, King Sunjong and King Sunjo enjoyed it. Famous Naengmyeon styles include the Pyeongyang style with bland and refreshing soup, the Hamheung style with chewy potato starch noodles and the Jinju style with seafood stock and colorful toppings.
