Cover Story Melon is a nutrient-dense fruit which contains iron, niacin, vitamin A, vitamin C, and betacarotene, with high sugar content, soft texture and sweet scent. Because of the perception of high quality fruit, melon is also known as ‘luxury fruit’ or ‘noble fruit.’ In Korea, melons are produced all year round and only the highest quality melons considering taste, color and shape, are selected and distributed. The melons produced in Korea have been recognized by foreign buyers as saying that it is exceptional in terms of quality such as taste and flavor. The melons are currently exported to Japan, Taiwan and Hong Kong, and are strictly managed from cultivation to selection, which are mainly produced from Naju(Seji-myeon) and Gokseong-gun of Jeollanam-do, and Gochang-gun of Jeollabuk-do.

A Simple Way to Enjoy Melon

Melon Smoothie 1. After cleansing the melon, cut off the tail, and part in half to remove the seeds. 2. Slice the melon into 4 sections into wedges. 3. Put a knife between the rind and flesh to cut it to a good size. 4. Add milk and honey into a blender, and grind it together with melon.

Tips

How to Pick a Perfect Melon 1. The net pattern is even and dense, which is carefully raised up to the top. 2. Regardless of size, the sugar content remains constant. 3. The sweetness hits the peak after 5 days from the indicated date of harvest. After the harvest, it will take 3 days to mature at room temperature.(The melon tastes sweet if the bottom part of the melon is soft.)

Melon is the most common ice cream flavor in Korea! ‘Melona’, an ice cream that Korea’s Binggrae introduced in 1992, is referred as the legend of the domestic ice cream industry. It was the first ice cream with melon flavor, which was a synonym for high quality fruit at that time. The Temptation of Refreshing Yellow,

Korean Melon

A palm-sized, bright yellow Korean melon may be a bizarre fruit for foreigners, but it is a representative Korean summer fruit with a long history. Unlike other melons, it is characterized by crisp texture. Not to mention the abundant juice and its sweet taste as well. The ‘Korean Melon’ is the name used internationally which was given by Codex Alimentarius International Food Standards in 2016, and is exported to Japan, Hong Kong and Singapore. The most famous Korean melon-producing area in Korea is Seongju-gun in Gyeongsangbuk-do, which accounts for 70% of domestic production. According to a recognized scientific magazine ‘Nature’, Korean melons are a top source of cucurbitacin, which cleanses liver and inhibits cancer cell proliferation.

A Simple Way to Enjoy Korean Melon

Pickled Korean Melon 1. Put all the ingredients for pickle water in a pan and boil them in a high heat until they are all melted. 2. Thoroughly wash the Korean melon with salt. Cut it in 4 sections, and scrape the seed out. 3. Fill up a glass container with chopped Korean melons. Pour the pickle water. 4. Close the lid and keep it in a cool place for a day, then store it in the refrigerator. Serve it chilled.

Korean Melons should be eaten unpeeled to be healthier! While it is common to serve the Korean melon peeled, it is better for health when eaten with the skin on as a copious amount of cucurbitacin for cancer prevention is concentrated under the rind. The crunchy taste also doubles. You can also grind the whole Korean melon and drink like juice. You can enjoy it smooth and the nutrient is absorbed faster, especially when milk is added.

How to Pick a Perfect Korean Melon 1. Choose a smaller Korean melon than something too big, as its sugar content is higher. 2. The bright and deep yellow color unique to Korean melon, is well ripen. 3. When you tap, you should have a full shallow sound. aT Branch in Vladivostok is expected to prime the pump in increasing the Korean agricultural product exports to the new northern regions.

he new northern region is emerging as a new export market for Korean agricultural products. The population of 14 countries including 12 CIS and Poland and Mongolia is 289 million, which is about 6 times that of Korea. The GDP is also worth USD 2 trillion, making it one of the latest growth engines to expand Korean agricultural exports. Recently, the export performance of the new northern region is showing a positive sign. Last year, the exports of Korean agricultural pro-

ducts in this area totaled USD 340 million, an increase of 17.3% over the previous year. Thus, a decent result is also anticipated this year. The Korea Agro-Fisheries & Food Trade Corporation(aT) branch office in Vladivostok opened in July is expected to play a role as a link in expanding the exports. The Russian Far East region, where the Vladivostok branch office is located, is a major market in the new northern region, so it is suitable to carry out a trial for confirming the preference for Korean agricultural

Gyeongsan peach farm cooperative called Gyeongsan Boksunga Yeonguhoe has built up its experience and technique in cultivating peaches of world-class quality through field trips to advanced agricultural countries and outstanding domestic farms having skilled peach cultivating techniques over the last 20 years. With this valuable experience and technique, it is now recognized for the highest equality of peaches it produces. The peaches of the cooperative are not only selling at the highest price on the domestic market but also capturing the tastes of locals in overseas markets including Hong Kong and Taiwan. The fruit is receiving favorable responses from Southeast Asian consumers, and Taiwan is emerging as a new export market followed by Hong Kong.

Innovation of Chili Pepper, Dangjo Chili Dangjo Chili is a cultivar jointly developed by Rural Development Administration(RDA), Kangwon National University, and Jeil Seed Bio in 2008. With 2 to 3 times the size of ordinary chili peppers, it is sold only in light green color when it contains relatively low sugar before turning red. The texture is crunchy and softer; it also tastes similar to paprika which are distinctive characteristics found only in Dangjo Chili. Kim mentioned, “We kicked off our business as Wanju’s local specialty, and the aT was the first to suggest expanding to Japan, which has advanced health functional food market. In general, dates are harvested when they are still green. However, Cham Mat Daechu harvests dates when they are sufficiently ripen. That’s the secret of keeping a high level of sugar content at over 30 brix. The harvested dates are naturally dried, and then stored at low temperature before made to a processed date product. Lee said, “I had gone through many trials and errors over the last five years to produce high-quality dates since 2009 when I came to the county.”

Date Snacks and Juice Made with High-Quality Dates Lee was finally able to cultivate jujube fruit that is currently pro-

duced after many trials and errors. However, as dates produced by other producers were distributed and sold stably, she turned her eyes to processed date products. Lee explained how she produces date products. “Most major date producers distribute dates in their raw state, and use dates of a relatively lower quality as an ingredient to make processed date products. To win the competition against these major date producers, our company started using highest-quality dates to make processed date products.” So the date juice and date slice chips, which are representing processed date products of Cham Mat Daechu, were born. She is thorough about the whole process from selecting raw ingredients while checking a finest flaw with her own eyes, to sorting out dates with her own hands one by one three times and cleaning the dates thoroughly. Only the dates passing through this rigid process can be used as an ingredient for processed date products.

Lee explained how she started producing in earnest processed date products a year after 2015. “When I was selected for a national public contest-based project in a field of ‘female CEOs participating in processing and start-up businesses’ organized by Gyeong-sangbukdo Agricultural Research & Extension services(GBA). Approximately 12 tons of dates(dried dates) are produced annually and only 60% of which selected for their high quality is used to make processed date products of Cham Mat Daechu.” The company is now gearing up to produce more various processed date products including, date sugar, date spread, and date vinegar.

Dates Go Viral, Increasing Domestic and Overseas Sales As processed date products of Cham Mat Daechu including date snacks and date juice made with only a select few ingredients go viral, domestic sales of the products are also increasing. These products are sold to consumers mostly through direct dealings. Lee said, “an amount of date products sold online is merely 2 to 3% of the total sales, and this is because most of consumers who purchased once the date products of Cham Mat Daechu buy the date products again and most of the purchases are made through direct dealings.”

Cham Mat Daechu is making efforts to promote Gunwi dates little by little even to overseas markets. In 2007, the company exported some samples of its date snacks worth of USD 1000. In addition, the company met some buyers to discuss the potential exports of its products to Japan and China, with the export to Indonesia being just around the corner. What’s more, it is also preparing for the acquisition of the certifications such as, for example, the Hazard Analysis Critical Control Point(HACCP) certification and the halal certification. Lee said, expressed her belief, “I cannot make processed date products irresponsibly, because my nephews and nieces, or even myself, may be the ones who eat the date products. Overseas buyers are making inquiries about our products, showing their interest in our products. And I will make continued efforts to be able to go into the global market, putting emphasis on the contribution of dates to health that four to five dates a day can make you live a longer life.”

How to cook onions According to Chef Baek Jong-won, caramelizing is the basic way of cooking onions. It is a technique to stir fry food until it turns brown―when onion is caramelized, it will add a whole lot of flavor quite different from sugar. It is also advised to use cooking oils as butter or olive oil is strong in fragrance, which is mostly used for western dishes. So to say, caramelize with cooking oils to easily blend with diverse dishes such as Korean food. To caramelize onions, heat the pan on high and cook onions for 10-20 minutes, and another 30-40 minutes at medium heat. What’s important here is not the time, but the color of the onion. Watch until the moisture is cooked away, and onions are left in rich and dark browned color. Cool down the caramelized onions at room temperature and freeze them in an air-tight container or zipper food storage bags, then you can use a small batch each time to boost the sweetness in cooking.

J&S Global Co., Ltd. was founded in January 2012 and has been around for 7 years now. As soon as I graduated from college, I started to work for a public corporation trading company at Jeonbuk Trade, established by Jeonbuk provincial government office. As the company was liquidated in 2003 after 7 years, I had a chance to work for the Jeonbuk provincial government office where I supported the export of agricultural and marine products, and overseas marketing for 6 years from 2009. I have been in this business for 13 years and I started trading business based on my practical experience.

After 2 years of establishment, we have exported USD 1 million and received an award of export accordingly. We have been steadily growing and received another award of USD 5 million export last year. In addition, this year we have been selected as a Certified Trading Company by Korea International Trade Association(KITA), and as a promising small-and-medium company by Ministry of SMEs and Startups. Beginning with mere 200 boxes of frozen dumplings at first, currently we export about 280 items to 13 countries mainly in USA and Russia.

We aim to export about USD 10 million to 20 countries by 2020. As beverages are our main items, we are developing healthy tea beverages which have an easier access to the local market, and ready-to-eat instant food which is a trend in the global market. Moreover, we are constantly attending related fairs and supporting promotion. Recently, we are doing our best to enhance the product competitiveness by actively utilizing the development of product and packaging materials, and design support projects by various local government and government agencies.
