Korean Health Functional Foods Fascinate the World

Due to the worldwide spread of COVID-19, food consumption has increased exponentially, and interest in health functional foods with immune-improving effects such as red ginseng is on the rise. In fact, the annual sales of Korea Ginseng Corporation has grown 20% in 2016 with increased demand for red ginseng during the Middle East Respiratory Syndrome(MERS). The global health functional foods market size is projected to reach USD 155 billion this year, which is a 6.4% increase from the previous year. In addition, the Korean government has formed a functional food export support group to look for ways to expand export of health products with proven functionality, including ginseng and red ginseng, perilla leaves, and dangjo pepper.

Korean Ginseng

he Korean ginseng has long been used as T a panacea, regardless of East and West, and is one of the most studied plants in the world to this day. It is proven by the scientific name of Korean ginseng, the ‘Panax Ginseng’, which is derived from the Greek meaning allhealing. It is also well-known fact that ginseng was cherished and habitually consumed by King Yeongjo of the Joseon Dynasty, the

longest-reigned king of the era. As Korean ginseng has high saponin content, it has excellent efficacy including recovery of body, immunity improvement, and blood circulation. Recently, clinical tests have been conducted to determine whether ginsenosides in Korean ginseng have the effect of strengthening memory and cognitive enhancement.

erilla leaves are rich in rosmarinic acid, P which is beneficial for cognitive improvement. There are already numerous confirmed studies including systematic reviews(SR). Rosmarinic acid, mainly contained in herbal plants such as rosemary, has been reported to academics as antibacterial, anti-inflammatory and antioxidant compounds, and has recently

been effective in preventing dementia due to protection of the brain nerve. According to the analysis of Rural Development Administration, the rosmarinic acid known to be antioxidant, anti-inflammatory, and dementia-preventive effects in perilla leaves were present 76 mg/g per dry leaf, which is about 7 times more than rosemary(11 mg/g).

Korean Functional Food Export Support Group Established

he private and public sectors of T Korea are making a concerted effort to support the export of Korean functional food products. As part of the effort, they established a functional food export support group. Korean authorities and related organizations including the Ministry of Agriculture, Food and Rural Affairs (MAFRA), the Ministry of Food and Drug Safety(MFDS), the Rural Development Administration(RDA), the Korea National Food Cluster(or Foodpolis), the Korea Food Research Institute(KFRI), and the Korea Agro-Fisheries & Food Trade Corporation(aT) will take part in the initiative. The export support group will arrange and carry out plans to reinvigorate the export of Korean agricultural products in the short term, and establish scientific grounds and conduct information research in the medium and long term.


It is currently making thorough preparations for getting recognition for the functionality of ginseng, which is Korea’s representing health food, from some countries advanced in terms of functional food including the United States, countries in Europe, and Japan. The export support group will conduct various activities for each country. For Japan, it will help some Korean agricultural items including perilla leaves, perilla oil, and ginseng be registered in the functional food reporting and labeling system in Japan, and conduct marketing strategies to promote Korean functional food to consumers and buyers. For China, it will conduct marketing strategies for Korean food items that help strengthen immunity by making the best use of online and offline sources. For South-East Asian countries, it will reinforce online and offline promotion-

al events and marketing strategies to promote the excellence of ginseng products especially in some emerging markets such as Vietnam. For American and European countries, it is planning to conduct in-depth analyses on related functional food policies or regulations of each country and collect related information, and arrange joint research between domestic and foreign research centers or institutions. After the COVID-19, the global market for health and functional foods is expected to grow further. So the export support group will provide systematic support from overseas system registration to marketing so that Korean agricultural products and food can advance into the foreign markets that are renowned for health functional foods including Japan and the United States.

The Farming Cooperative Corporation of Boseong Horticultural Products Processing Center exports tomatoes with removed leaves, which is sought-after in overseas markets such as Japan.

Exports of leafless tomatoes are gaining popularity The Boseong Horticultural Products Processing Center has recorded the exports of USD 466,500 in 2019. Although it is a small amount compared to the total sales of USD 2.455 million, the export performance is expected to develop significantly in the future. The President Kim said, “Since only the medicinal substances approved in the exporting countries are used and thoroughly managed by GAP in the cultivation process, there is virtually no residual pesticide exceeding the standard. We have installed additional insect screening facilities in the greenhouse to use less pesticide, and use heat from incinerators to reduce production costs to increase our competitiveness.”

Produce various sizes of tomatoes to expand exports The Boseong Horticultural Products Processing Center is planning to customize production for individual market in the overseas to expand exports. While tomatoes are mainly exported in 4kg boxes, each country desires different sizes of their preference. The President Kim said, “Usually, 18, 20, and 24 pieces of tomatoes are generally exported based on a 4kg box. We are working on trading 22 tomatoes on the same box as well. This is because tomatoes in different sizes must be distributed to fully maintain the equal quality of exported tomatoes. Since Taiwan prefers small-sized tomatoes such as 28-32 sizes, not like Japan, we are selecting several varieties to meet the demand.” Meanwhile, as of 2019, Korea’s tomato exports amounted to USD 17.486 million, which shows a yearly growth from 2016 to USD 13.341 million. Along with GAP safety certification, and hard flesh with a good storage advantage, the demand for Korean tomatoes continues to increase in Japan, major importer.

For fresh farm produce, keeping it as fresh as possible is a vital matter because it has a short shelf life, unlike processed food products. And for consumers, how fresh the produce is comes first to their minds when they pick up one. When it comes to exporting farm produce, the preservation of freshness is a core issue because the produce needs to travel a long distance and endure an extended period of time to be used for distribution. Amid such a challenging situation, exported Korean farm produce has been recognized for its freshness and tastiness. There are some techniques of their own. <Korea Agrafood> introduces these brilliant ideas.

MAP, A Core Idea for Preserving Freshness Fresh farm produce can change greatly and abruptly in their quality depending on an environment because they still breathe after harvested. So, during the distribution, the produce may lose their freshness or be perished along the line. Fresh produce to be exported has to go through longer and more complicated processes for distribution compared to when they are distributed domestically. Thus, it is not a stretch to say that how to preserve freshness makes or breaks the export. There were, in fact, some cases where Korean farm produce got too soft or rotten during transportation. Further, the preservation of freshness has emerged as a critical issue all the more because flights are grounded in recent months due to the COVID-19 pandemic. There is another way to export fresh produce, and it is to export the produce by ships instead of planes which require a shorter time to carry the produce to another country. However, shipping out the produce using ships requires a greater amount of time.

In the meantime, a Korean technology for keeping the freshness of fresh produce is receiving attention. The spotlight is on Modified Atmosphere Packaging(MAP). A core idea of the technology is adjusting the respective densities of oxygen and carbon dioxide in a package of agricultural products. In addition, through a chlorine dioxide processing-based complex process, it is possible to extend the storage period of the agricultural products. Hong Yoon-pyo, the head of the Postharvest Research Division of the National Institute of Horticultural and Herbal Science(NIHHS), said, “MAP is applicable to all types of agricultural products, but the most important part of applying it is maintaining temperature. In addition to this, efforts to use packaging materials suitable for each agricultural item and pay attention to the advice from experts are also important.”

Favorable Responses from Buyers Importing Korean Fresh Farm Produce MAP is applied to Korea’s main fresh produce items that are to be exported abroad. By applying this advanced technology, it is possible to keep the freshness of the items and draw a favorable response from overseas buyers. This technology is used to prevent a distribution process from being prolonged and the freshness from being degraded due to the decay of the items during the distribution process. For instance, by applying MAP to strawberries that are in good condition for seven to nine days in general, the fruit can remain fresh for 13 to 17 days. Thanks to MAP, even though being exported by ships, the strawberries maintain their freshness even in overseas markets. As for Korean melons, they tend to change in color just in four to five days after they reach overseas markets. However, by applying MAP, the Korean melons can be fresh without browning.

There have been many good responses that applying the technology is more effective in exporting Korean fresh produce to countries with high temperatures. An official of Wolhang Nonghyup exporting Korean melons said, “We apply MAP to Korean melons to be exported to Singapore or Malaysia and maintain a low temperature throughout the whole process for distribution. So, the shelf life increased greatly. It is more effective when it is applied along with thorough temperature control.” Cha Wan-soo, the head of the Agricultural Products Processing Center(APC) of Nonsan Nonghyup exporting strawberries, said, “Taiwanese importing companies highly evaluated that strawberries exported by applying MAP do not get too soft and are not rotten. MAP enabled us to promote the excellence of Korean strawberries abroad with the fruit intact, and we can still harvest strawberries just at the right time without reaping them late in the fear that they go bad halfway.” He showed a high level of satisfaction with the technology.

I met the company thanks to the support from chairman Noh and aT in some events like product consultations and promotional events. And their support was of great help to the company to succeed in exporting processed laver products to Vietnam. We were able to expand the sales of laver-related products by harnessing all the distribution networks we already secured in addition to


the support. We have solidified our trust and cooperative relationship with JAYEONHYANGGI as our partner, and we have been able to import processed Korean laver products for seven years now. Why is Korean laver sought-after in Vietnam?

A few years ago, Korean seasoned laver has become a popular import item as it has been branded as a health food in Vietnam. Meanwhile, the exports of fresh produce, which declined until February was recovered and recorded USD 328.9 million at the end of March, turning to a 2.7% increase over the previous year, thanks to a rapid surge of ginseng and kimchi exports. Rice farming in Korea starts with rice transplanting. The transplanting is now done mostly by machine in place of human labor. However, it was done by hand in a traditional way passed down from Korean ancestors. The photo depicts terraced paddy fields for which a machine called a rice transplanter cannot be used. A farmer would have planted rice seedlings by hand one by one, in the hope that the seedlings would be grown well to dye the fields yellow in the autumn and he could then harvest the crops and send rice to his children living away from home. There is a saying that half the farming depends on the sky, and another half depends on all the sweat farmers shed wishing for a good harvest.

Sub Ingredients marinade: 1 tablespoon of chopped garlic, 1 tablespoon of soju, 2 tablespoons of doubanjiang, 1 tablespoon of lajojiang, 1 tablespoon of brewed soy sauce, 2 tablespoons of red pepper powder, 1 tablespoon of sugar, 1/2 tablespoon of sesame oil, some sesame seeds

Put the pork in a bowl and add minced garlic and soju. Mix two tablespoons of doubanjiang, one tablespoon of lajojiang, two tablespoons of red pepper powder, one tablespoon of sugar, 1/2 tablespoon of sesame oil, and one tablespoon of brewed soy sauce. Cut the onion and green onion to a big size, and chop the perilla leaves. Add the cut vegetables to the prepared pork and mix with marinade. Put the pork and vegetables in marinade to a refrigerator for 20 minutes. Put cooking oil in a hot-heated pan and add marinated pork and vegetables over medium heat to stir fry. Serve in a bowl, and Doubanjiang Jeyukbokkeum is now ready to eat.

Tip Do not use up all the sauce to marinate at one go, as putting it slightly while cooking makes the dish more juicy and moist.

Origin of Jeyukbokkeum

Jeyukbokkeum was born at a restaurant in Jung-gu, Seoul, which has a relatively short history compared to its popularity. Jeyuk refers to pork(dweji), and the menu is called in numerous ways, including dweji jumulleok, dweji gochujang bulgogi, dweji bulgogi, and so on. At the time it was first made, soy sauce, green onions, black pepper, and salted fish sauce were used for seasoning, then gochujang was added to remove the pungent smell of pork, which is how jeyukbokkeum of present day was created. Thanks to its spicy taste and affordable price, its reputation has gradually increased, making it one of the iconic Korean foods that can be found everywhere. Now, the menu has become indispensable at Korean restaurants, so anyone can easily taste it in another country.

Even Americans who used to watch the big league in the US where baseball is from are watching the KBO league, and Mookie Betts who is a representative player in the major leagues voluntarily came forward to play the role of a evangelist for Korean baseball. So, the Korean baseball culture and Korean baseball clubs, in addition to the KBO league, are also gaining worldwide attention.

Culture of League Not Like Major Leagues

The KBO league is one of pro-sports leagues to which the greatest number of Korean sports fans visit to see games themselves. The secret of popularity is a unique cheering culture and events that can be only seen at baseball parks and stadiums in Korea. For instance, Lotte Giants renowned for the enthusiastic cheering uses newspapers and orange-colored plastic bags as tools for the cheering. The plastic bags, which are provided by the baseball team to encourage spectators to dispose of garbage themselves, are used as the tool during games they watch. In addition, there are assorted events such as a dance time in which one dancing most passionately and happily among the audience is selected and shown on a big screen, a fast beer drinking competition, and the like.
