Korea’s Representative Revitalizing Dish for Summer,

Samgyetang In Korea, there is a unique culture called ‘Boknal’, which refers to the hottest day of the year. Since the ancient times, Koreans have been taking a warm bowl of ginseng chicken soup called ‘samgyetang’ on Boknal, to beat the heat and stay energized during the summer with the wisdom of ‘Yi-yeol-chi-yeol’ meaning fight fire with fire. Considered as an iconic rejuvenating Korean dish, samgyetang is characterized by thick broth boiled from a small, whole chicken stuffed with ingredients such as ginseng, glutinous rice, and jujubes. Samgyetang is not only packed with nutrition, but its chewy ginseng-flavored meat also blends well with rich chicken broth. No wonder, it is globally popular. In the recent years, HMR-type for samgyetang, which can be easily eaten at home, has been exported to the United States, Japan, Taiwan, and Hong Kong, and has drawn much attention as a health supplementary food for the world.

The Benefits of Samgyetang in Summer hen the heat is rising during the sumW mertime, it is the high season for chicken. In Korea, places selling samgyetang can be commonly found across the country, even if it is not a specialty restaurant, when Boknal is near. In addition to abundant protein, chicken contains ‘linolenic acid’, one of the unsaturated fatty acids, which is known to help prevent cancer, arteriosclerosis, and heart disease. Chicken also contains more nutrients than other meats such as calcium and vitamins. As it is well absorbed and digested, it is often used as a food ingredient to strengthen physical strength. In

particular, samgyetang is a great food for restoring energy in summer since it contains various ingredients that are good for your body, such as ginseng, jujube, garlic, and glutinous rice. Ginseng, which is a vital element for Korean chicken soup, helps recover from fatigue and improves blood circulation. The glutinous rice stuffing filled in the chicken’s stomach is soft and easy to digest, so it is perfect for a sick day diet. This is the reason why Koreans enjoy boiling-hot samgyetang as an energy-fortifying dish to take care of their health during scorching summer days.


The Fusion-Based Samgyetang on the Rise amgyetang is a popular Korean cuiS sine well recognized to foreigners. The fact that there is no special seasoning other than ginseng or garlic, and lightly boiled recipe does not differ much from western version of ‘chicken soup’. As much as samgyetang is enjoyed, a numerous fusion form created with impressive ideas is also gaining popularity. That chestnuts, pine nuts, and even deer horns are added, and samgyetang with a whole root of red ginseng has also appeared. There are also ‘seafood samgyetang’ cooked with octopus, flower crab, and abalone, ‘herbal samgyetang’ containing all kinds of herbal medicines, and ‘bamboo stalk samgyetang’ with steamed chicken in a bamboo stalk rather than a pot. Although the ingredients and fillings may vary, the beauty of samgyetang is that you can feel the energy immediately rising even with the chicken-infused smell.

Samgyetang Presented on the Global Dining Table n the overseas, there is a way to easily acI cess samgyetang produced in a traditional way in Korea. That is to purchase a pack of precooked samgyetang. The ready-made samgyetang are exported to 12 countries, including the United States, Japan, Taiwan, and Hong Kong. While, talks are currently under way to export samgyetang to 27 EU countries. In February, the Canadian Food Inspection Agency(CFIA) approved Maniker F&G and Harim as ‘export workshops’, making it the first export of HMR-type samgyetang in the in-

dustry. The estimated export volume for this year is 80 tons(74,000 quantity). An official from the Ministry of Agriculture, Food and Rural Affairs(MAFRA) said, “Currently, ramyeon and rice products that are easy and convenient to eat at home have become sought-after due to COVID-19. The same goes for samgyetang in retort pouch. In the Asian markets such as the Greater China Region and Japan, there is also a perception of health recovery foods, so exports are expected to increase further in the hot summer months.”


Samgyetang Export Performance Per Year

The export of samgyetang slowed down for some time in 2019 due to the small package trend in Japan. However, the export increased by 58.4% this year compared to that in the same month(May) of last year. This is because, due to the COVID-19, the interest in immunity increased and the demand for retort food such as ramyeon that can be preserved for an extended period of time increased.

Ready-to-eat Samgyetang Exporter In order to maintain the freshness of freshly caught chickens, Harim manufactures products on the basis of the ‘slaughter and commercialize on the same day’ in a HACCP-certified workspace. When it comes to samgyejuk, the finest glutinous rice is used as the main ingredient, as well as ginseng, jujube, and chestnut of best quality are prepared to make the product. Being the site of the capital of Baekje with the remains of the ancient history of the culture, Buyeo, Chungcheongnam-do has been selected as a UNESCO World Heritage City. Accordingly, domestic and foreign tourists are constantly on the move. There is another local specialty representing Buyeo. It is a watermelon traded under the brand name of ‘Goodtrae’, which is gaining popularity among Japanese and Russian consumers as it has become a famous Korean watermelon brand.

Goodtrae Watermelon goes through a strict process, its shipping is only possible after undergoing challenging procedures.

watermelon after going through a non-destructive automatic sorter by detecting Brix degree for watermelon, which must to be at least 11 Brix. Shipping is only possible after undergoing these three challenging procedures. Kim Dong-su, the President of the National Agricultural Cooperative Federation, said, “Only watermelons that have passed strict quality control conducted by us are traded. The crunchy texture and high sugar content are the strength of Goodtrae watermelon.” It is possible to harvest such quality watermelons in selective process, thanks to the hard labor by watermelon farmers. The 400 farmers spare no effort to produce the finest watermelons that suit the consumers’ tastes. Instead of using chemical fertilizers, a separate nutrient was used in the production process to increase sugar content and pleasant texture. Additionally, in order to fill the shortcomings of cultivation technology, technical training is also conducted by inviting external experts every year. Park Jong-gwan, the chairman of the Gyuam Watermelon Public Shipping Association said,

Japanese and Russian consumers give a thumbs-up for Goodtrae Watermelon Goodtrae watermelon has been unveiled to overseas consumers since 2010. The initial export kicked off with Japan in 2010 and has started exporting to Russia in 2017. Exported watermelons are as small as 4 to 5kg, which is smaller in size than domestic watermelons, yet the sugar content or texture does not fall behind. The consumers who tasted Goodtrae at overseas tasting events are satisfied with the great quality. It is rather expensive compared to watermelons grown from other countries, however, it has definitely secured quality competitiveness. Based on this competitiveness, Goodtrae is preparing to meet consumers in Southeast Asia and the New Northern Region. It is an area that has never been tried, but it has been assessed that it is not impossible. In the past, exports to Japan and Russia were also difficult, but then again, the business could succeed as safety and quality issue were indisputable. Above all, it is projected that the entry into the New Northern Region will benefit from the Korean government’s agricultural product export policy. The President Kim Dong-su said, “As Goodtrae watermelon is cultivated in an ideal environment, it has a thin peel and is strong in storage. Therefore, we are proud in terms of quality and safety concern that international consumers can enjoy our watermelon with confidence.”

Growing Awareness of Korean Garlic in Global Market arlic, which is used as a classic spice and G flavoring, is loved by consumers all around the world. It has been already recognized for its potent functions as it was selected as one of the top ten healthiest foods in the world by <Time>, a renowned American news magazine. Now, high-quality Korean garlic is stimulating the appetites of global consumers.

Special Love for Garlic Koreans’ love for garlic is proved by statistics. According to the Korean Rural Economic Institute(KREI), the average consumption of garlic per Korean was estimated as 7.4kg in 2019, which is a staggering amount considering the fact that Americans and Italians consume about 1kg on average per person a year. Koreans consume the vegetable seven times more than consumers in these nations. Such a huge consumption of garlic in Korea is attributed to Korean foods. Garlic is added to make various kinds of Korean stew or soup and is never excluded when Koreans eat various cuts of meat including pork belly. It is also used as an essential ingredient to make kimchi, adding a deeper flavor to this representative Korean food. What’s more, garlic is featured in the birth myth of Korea. According to the myth, a bear is reincarnated as a human being after eating only garlic and mugwort and gives birth to a baby boy, and the boy founds the country.

Garlic has always been part of Korean cuisine and culture. So, there are various processed foods made with garlic. To take in good nutrients without the reluctance to eat it raw, various garlic products have been introduced so far. There are garlic extract, garlic slices, and garlic powder, to name a few.

Global Attention on Korean Garlic Korean garlic is now shining in the global market. According to the Korea Agro-Fisheries & Food Trade Corporation(aT), USD 4.4 million worth of Korean peeled garlic was exported to the United States as of late May this year. This is an exponential increase compared to the export equivalent to USD 8,000 made during the same period last year. It is also exported to other countries in addition to the USA. It sells well in Taiwan. Although USD 1,600 worth of Korean garlic was exported to Taiwan last year, the export increased to USD 550,000 as of late May this year. Korean garlic owes its prosperity in the overseas markets through quality control and high marketability. Korean peeled garlic is exported after passing through the thorough process of cleaning and being packed individually. Despite all this arduous procedure, the garlic can be eas-

Korean peeled garlic to be exported needs to be dried and pass through a low-temperature process, and then sorted out again. Then, it can be finally exported while being stored in containers equipped with cold storage systems. Only when it passes through all these, the garlic can remain fresh and highly marketable even in local markets in foreign countries. Brian Kang, CEO of Chang Shin Agricultural CO., LTD. which exports peeled garlic to the USA, said, “We cannot even meet the demand because we are inundated with so many requests from foreign buyers. And, I am actually feeling the growing recognition of Korean garlic in the global market.” In addition to the efforts made by Korean exporters of garlic to maintain the high marketability, the Korean government is also pitching in. The Ministry of Agriculture, Food and Rural Affairs(MAFRA) and aT established a garlic export association to expand the export of Korean garlic, and support member companies with distribution costs. They are planning to hold various promotional events in some potential countries in addition to the United States, to export Korean garlic more. They are also planning to support various promotional activities and create videos featuring recipes for foods using Korean garlic in cooperation with famous local chefs and influencers to improve further the awareness of the benefits of Korean garlic. An official from aT said, “Korean garlic exporting companies have improved their packaging systems and transportation methods of their own. So, the shelf life and the quality of Korean garlic have increased as a whole. Korean garlic is receiving a favorable response from local markets. We expect that the export of Korean garlic will grow further in the global market.”

Korean Ginseng the Health Keeper Spread throughout the World The Korean ginseng is primarily exported to Greater China Region including China, Hong Kong, and Taiwan, where they prefer rooted ginseng; while processed items like red ginseng products and ginseng beverages account for a relatively high proportion in Japan, the United States, and Vietnam. Ginseng exports continued to grow every year, recording an increase of 12.4% year-on-year to USD 211.4 million in 2019. In the first quarter of this year, despite the tragic worldwide circumstances of COVID-19, it has produced satisfactory results of USD 52 million, up 5.9% from the previous year. The reason for the increase in Korean ginseng exports is that the global interest in functional foods is going up, especially as processed ginseng products are available in numerous forms. As the domestic brand ‘Cheong Kwan Jang’ represents the premium image of Korean ginseng, the sales of processed products such as ginseng beverages, red ginseng sweets and jelly are on the rise.

Freeze drying, one of the widely recognized drying methods, has a problem of high cost due to the specialized equipment needed for the process, and hot air drying has a risk of destroying nutrients. CEO Yeo added that he felt the need for a new drying technique to be free of tannins that give the astringent taste from persimmons. He pointed, “The Cheongdo Bansi has a higher sugar content than that of dangam, but it was difficult to taste the actual sweetness because of tannin, which gives a bitter taste. To solve such issue, a unique drying technology was developed. As a result, the astringent taste of persimmon was reduced and the shelf life was 15 times higher than that of the existing product.”

Promote Korean persimmon by export It was only in 2015 that Nature Farm entered the overseas market in full scale. At the time, overseas exports began with the first USD 100,000 worth of exports to Japan. Since then, the number of export countries have steadily increased such as Thailand, Vietnam, Singapore and Canada, reaching exports of USD 1.2 million last year. This year, it is expected to export USD 3.5 million in exports due to interest in K-Food along with KPrevention of COVID-19. Here, the fact that the company’s products were selected as a promising future product of the Korea Agro-Fisheries & Food Trade Corporation(aT) was also helpful in expanding exports by meeting foreign buyers. coined. The coinage means “how many times do you watch Gang a day?” The song and the style once ridiculed back then have become that much popular now. On YouTube, there were a great number of hilarious comments including, for example, “the world before the COVID-19 outbreak would come back once a vaccine is developed, but the world before you watched Gang would not come back.” which caught many eyes. After he appeared on the variety show and said that he needs to do “Three Gangs a Day” all the ridicules were turned into support and cheer. On the show, he showed a cool and undaunted attitude toward the recent trend of making fun of him, and netizens started showering him with praises and cheering messages. He and the other two on the show announced they would form a trio group(SSAK3) as a special event, and many are highly expecting the trio already.

Rain’s Secrets for Keeping in Shape Rain keeps working hard on self-maintenance and is still in good shape even though he is 38 years old now. He is famous for his physical shape which is as great as his strong mentality. He is also known for his love for Korean food. He ate Korean food when he felt lonely back in the United States shooting the films. When he was appointed as a public ambassador for Korean food, he revealed his affection for it saying, “Korean food is like my culture and first instinct, like the way how I think of my mom. Whenever I go on concert tours or shoot films to foreign countries, I usually have Korean dishes and I hope people around the world will also enjoy healthy Korean food as I do.”

Recently, he appeared to have lost weight considerably, and people wondered what he did. He showed how he worked out and revealed his diet regimen through YouTube as secrets for the success in dieting. He said “I eat 100g of chicken breasts for breakfast and lunch and does a highly intense workout for a short interval before a meal.”

Dak-gaseumsal Gimbap A Wonderful Combination of Chicken and Gimbap

imbap is one of the classic between-meals G in Korea that is made by spreading cooked rice onto a sheet of dried laver and putting strips of other ingredients including ham, carrot, cucumber, and yellow pickled radish on top of the rice. It is convenient to eat and has been a popular dish for a lunch box for a picnic or excursion. It is also good in terms of nutritional benefits because it includes various vegetables. Recently, there are various versions of gimbap using other unconventional ingredients such as kimchi, tuna, and cheese. These versions are also getting popular. As the summer, so-called the season of dieting, approaches, Rain, a famous Korean singer and a momjjang(Korean slang for someone who is in good shape), introduced a recipe for dak-gaseumsal gimbap(gimbap with chicken breasts) as a secret for keeping in shape.

Main Ingredients

2 bowls of cooked rice, 4 sheets of dried laver, 8 perilla leaves, 8 seasoned burdock strips, 2 crab sticks, 1 cucumber, 2 loafs of chicken breasts, 4 sticks of yellow pickled radish, 1/3 carrot, 3 eggs

Slice chicken breasts in half, and put olive oil in a pan. After the pan is heated suitably, roast the chicken breast slices until the front and back sides of them become yellowish.

Beat three eggs well and fry the eggs by spreading them on a pan. And tear the roasted chicken breasts into long narrow strips.

Add roasted sesame seed, sesame oil, and salt to cooked rice, and mix them well.

Cut yellow pickled radish, seasoned burdock, cucumber and crab sticks into long strips, and shred carrot.

Lay down rice and two sheets of perilla leaves overlapping each other on a sheet of dried laver, and put all the vegetables prepared on it.

Hold the edges of the dried laver and roll it round so that the ingredients inside are not scattered all over.

Cut the roll into bite-size pieces while being cautious not to burst the dried laver in the middle.

Sub Ingredients 1 tbsp sesame oil, a pinch of salt, a pinch of roasted sesame seed

Tip If you hesitate to take carb while on a diet, it is still good to make gimbap only using chicken breasts and vegetables without cooked rice.

Milmyeon A North Food that can be Enjoyed at the Heart of Busan ilmyeon(wheat noodles) is a local dish of

M Busan made with meat broth and noodles made of flour and starch, then garnished with boiled beef or pork slices and a boiled egg atop. The noodles contain starch that adds a gummier texture than that of ordinary noodles. The dish tastes like naengmyeon(cold buckwheat noodles). This is because some refugees from North Korea wanted to have naengmyeon back in the Korean War and they made this alternative noodle dish using flour, one of the relief supplies, to enjoy it as their comfort food. Milmyeon comes in two types―watery and spicy mixed types―like other Korean noodle dishes. Mulmilmyeon, which is the watery type, is highly popular especially in the summer season. You can get a whiff of freezing cold air right after you have it.

Dwaeji-gukbap A Soul Food Comforting Busanians

waegi-gukbap(pork and rice soup) cannot D be ruled out when it comes to Busan. It is made by adding pork and cooked rice to meat broth made with pig bones, and served with chives salad, salted shrimp, and kkakdugi(diced radish kimchi) so that you can add these to the soup to your liking. It includes plenty of pork slices in the broth and tastes deep, and thus goes well with soju, a representative Korean distilled liquor. It is a soul food for the locals in Busan, and you can easily find some places where restaurants serving this comfort dish are gathered. ‘Halmae Gukbap’ with Fifty Years of Tradition, located five minutes away from the Beomil Station, is one of the famous restaurants serving dwaegi-gukbap and serves other dishes including noodles and sundae(Korean sausage)

in addition to the pork soup. Around the restaurant, there is ‘Busan Gold Theme Street’ where a jewelry festival is held every year. It is also worth a visit after having a meal at the restaurant. There are also nearby attractions where you can enjoy a variety of things and buy some clothes at bargain prices. You can have some fun at Pyeonghwa and Jayu Market.


Mulhoe A Cold Bowl of the Sea ulhoe(cold raw fish soup) is a M sweet-and-sour dish made by seasoning and mixing various seafoods and vegetables and adding the mixture to cold water. The seafoods to be added include sea cucumber, sea squirt, sliced raw flatfish, sliced raw rockfish, and others in season. The sauce for the cold soup is made with gochujang(red pepper paste) or doenjang(soy paste) as a base, adding a deeper taste of unique Korea paste. It was originally made by busy fishermen to just fill their stomachs in the middle of the sea and has now become one of special summer dishes thanks to its unexpectedly great taste. There is practically no difference in taste, so you can try mulhoe at any place serving this dish. But, a restaurant near the beach may be a better choice because you can absorb the scent of the sea to boot while eating the mulhoe. One that is located by the sea near the Haeundae Station is highly recommendable because the sea is one of the most famous summer resorts in Korea. There are many food stalls and carts lined up around the beach in the evening, and so you can try various Korean seafoods there at night.

TIP If you choose the Gwangan Station over the Haeundae Station, you can still enjoy mulhoe along with the beautiful scenery of the sea.
