Back on May 21, 2021, Latin America reached a grim milestone as it surpassed 1 million deaths
El 21 de mayo de 2021, América Latina alcanzó un sombrío hito al sobrepasar el millón de muertes from COVID-19, with many more potentially unrecorded. The region is also one of the least vaccinated in the world.
The situation has many Latin American countries on edge when considering their futures with COVID-19.
It did not, however, stop the celebration of Corpus Christi across Latin America on June 3.
From Mexico to Venezuela, men dressed as diablos, children and their families and priests hit the streets to recognize the holiday 60 days after Easter, with some even amid government warnings. z por COVID-19, con muchas más sin registrar. ful consomme sauce is then also cooked for hours on end to give it that deep red look.
The family uses two fried corn tortillas that are filled with either meat or cheese. They then add onions and cilantro before lightly soaking the taco in the consomme sauce. The dipped taco is then served with a cup of the consomme on the side for dipping.
“The cheese tacos are the quesabirria tacos, which are also popular,” said De Los Santos.
The handcrafted tacos are made the traditional Jalisco way.
“I know that a lot of people are doing it now, but most of them are from Puebla, Tijuana, but ours are traditionally Jalisco style, where the dish was made,” she said.
The family recently changed their food truck’s location from Fishtown to Pennsport amid the COVID-19 pandemic.
“When the pandemic started, we had some customers stop by, but it wasn’t the same as before, so we moved to our new location in South Philly,” said De Los Santos.
Ever since their spot became a part of the South Philly food scene, business has been booming.
Her family is now searching for a modest storefront to keep the cooking going and expand.
“Hopefully we can find something soon because we want to add more to our menu, but we need the space for it first,” said De Los Santos.
Mi Pueblito is open Saturday through Sunday, 12 p.m. until 5 p.m. Despite the limited hours, customers continue to flock to Front and Dickson Street for the Jalisco staple. z

La familia usa dos tortillas de maíz fritas rellenas de carne o queso. Luego agregan cebolla y cilantro antes de remojar ligeramente el taco en la salsa de consomé. Luego, el taco sumergido se sirve con una taza de consomé a un lado, para mojar.
“Los tacos de queso son los tacos de quesabirria, que también son populares”, dijo De Los Santos.
Los tacos caseros se elaboran a la manera tradicional de Jalisco.
“Sé que mucha gente está haciendo lo mismo ahora, pero la mayoría son de Puebla, Tijuana, y nosotros lo hacemos al estilo tradicional de Jalisco, donde se originó el plato”, dijo.
Durante la pandemia de COVID-19, la familia cambió la ubicación de su food truck de Fishtown a Pennsport.
“Cuando comenzó la pandemia, algunos clientes seguían pasando por allí, pero ya no era lo mismo que antes, así que nos mudamos a nuestra nueva ubicación, en el sur de Filadelfia”, explicó De Los Santos.
Desde que su camión forma parte de la escena gastronómica del sur de Filadelfia, el negocio ha ido en auge.
Su familia ahora está buscando un local modesto para mantener abierta más tiempo la cocina y expandirse.
“Ojalá podamos encontrar algo pronto, porque queremos ampliar nuestro menú. Pero primero necesitamos el espacio”, dijo De Los Santos.

“More still needs to be done to help those hurt by the policy and we look forward to working with the Administration on those efforts,” they added.
Biden has faced criticism over his immigration policies from both the right and left — from one end for letting go of Trump’s restrictive approach and from the other for not moving quickly enough to dismantle it.
Lately, the administration has sped up the pace of reform, drawing praise for ending the MPP, family separations and for providing sanctuary to Haitian immigrants in the U.S.
“This is a huge victory. The forced return policy was cruel, depraved, and illegal, and we are glad that it has finally been rescinded,” said Judy Rabinovitz, an attorney for the ACLU who led the organization’s legal challenge against MPP.
Advocates still insist that obstacles for a return to a broad application of asylum law remain in place, including a measure known as Title 42, which permits U.S border officials to rapidly expel anyone crossing the border without authorization — including potential asylum seekers — under the guise COVID-19 safety precautions.
In a statement, Rabinovitz said the administration must see this all the way through and ensure everyone subject to MPP can now pursue their asylum cases safely and “without additional trauma and delay.”
“It must swiftly move to dismantle the Trump administration’s other attacks on the asylum system, including the unconscionable ‘Title 42’ order,” she said. z
