CELEBRATING THE 400 TH LANDING OF THE MAYFLOWER

F

our hundred years ago, a small ship carrying 102 passengers came in sight of Cape Cod, after 66 grueling days at sea. The Pilgrims, as they would be called, had left England in search of religious freedom in the new world. The first land sighted was present day Chatham, but the treacherous shoals made a landing there impossible. The ship headed north and landed in Provincetown, where the Pilgrims signed the Mayflower Compact, then spent the next five weeks exploring the shores along Cape Cod Bay before eventually deciding upon Plymouth as a permanent settlement. Towns on Cape Cod are marking this historic event with numerous activities, events and celebrations throughout the year and the MidCape area is the perfect mid-way point to trace the Pilgrim story, be it on Cape Cod or with a drive to Plymouth. Indeed, the historic MidCape towns of Barnstable and Yarmouth, both incorporated in 1639, have much history to share. The Greater Hyannis and Yarmouth Chambers are ready to accommodate your needs, whether it’s with directions, advice on what to see and do, where to shop or stay and dine.

Our Visitor Centers have a wealth of maps, brochures and knowledgeable staff to make your stay a memorable one. Barnstable and Yarmouth have much to offer and a multi-layered experience at that. Barnstable includes seven unique villages — Barnstable, Centerville, Cotuit, Hyannis, Marstons Mills, Osterville and West Barnstable — while Yarmouth is made up of a trio of villages —West and South Yarmouth on the Nantucket Sound side and Yarmouth Port on Cape Cod Bay. Our beautiful beaches, from the Sound side to the Bay, are unparalleled destinations, but the MidCape is more than just the beach and boating. Consult this guide for a list of hiking trails to explore the area’s diverse natural beauty or enrich your stay through art galleries, concerts, museums or a Cape Cod Baseball League game. Maybe you’d like to play a round of golf while you’re here, or take in a local stage production, or need a few ideas about where to get some local seafood? This guide is packed with information to make your decision making easier. Welcome to the MidCape! Enjoy your stay and let us know how we can make your vacation special.

Remembering 400 YEARS LATER BY C A ROL K . DU M A S

Take a day trip to Plymouth or Provincetown to celebrate this U.S. history milestone

P H OTO C O U R T E S Y O F P L I M OT H P L A N TAT I O N

Historians surmise that if the treacherous shoals off Chatham hadn’t deterred them, the Pilgrims may have landed closer to the MidCape area rather than Provincetown where they spent over a month before sailing across Cape Cod Bay to Plymouth. This year marks the 400th anniversary of the Pilgrims’ landing and many communities are marking this historic milestone with special events all year long including a visit of the Mayflower replica ship to Provincetown in September. If you’re visiting the MidCape, you’re within easy drives of both “Pilgrim” towns, Provincetown and Plymouth.

PILGRIM MONUMENT IN PROVINCETOWN

Start your history tour on Cape with the Pilgrim Landing Trail, which traces the experiences of the Pilgrims on Cape Cod. The 55-mile trail includes Pilgrim Monument and Provincetown Museum; Corn Hill in Truro; First Encounter Beach in Eastham; Chatham Light; Atwood House and Museum and Nickerson Family Homestead in Chatham; and Mashpee Wampanoag Museum. A driving tour CD and map are available at the Atwood House and Museum. Most history books overlook the fact that the Mayflower anchored in Provincetown Harbor on November 11, 1620. The Mayflower Compact was written aboard the ship. The Pilgrims spent five weeks exploring the Outer Cape. They found a stash of corn hidden by the Native Americans in Truro (marked by a plaque on Corn Hill). A landing party, led by Myles Standish, sailed a shallop down as far as Eastham, where they went ashore to explore, only to be beaten back by Native Americans firing a slew of arrows. They continued around Cape Cod Bay, looking for suitable harbors for a settlement. Perhaps if the weather had been better, they may have settled on the Cape instead of in Plymouth, as Yarmouth historian Duncan Oliver says: “On the Pilgrims’ last exploration of Cape Cod, after fighting with Indians at First Encounter Beach, they sailed west looking for a likely harbor around which to build their settlement. A snow squall prevented them seeing Bass Hole and Barnstable Harbor and they sailed on by, ending up in Plymouth. Otherwise, they might well have settled in Yarmouth.” The towns of Yarmouth & Dennis are commemorating this event, known as “Sail on By Day” on Dec. 8 at noon at Gray’s Beach in Yarmouth Port. The Pilgrims spent about a month on the Cape, then decided the land wasn’t suitable for farming and set sail across Cape Cod Bay for Plymouth, where the previous shallop exploration had discovered a suitable harbor. The top destination to learn about the Pilgrims on Cape Cod is Pilgrim Monument and Provincetown Museum. New in 2020 is a renovated exhibit focusing on the Mayflower Pilgrims and Wampanoag native

peoples. “We also want to show visitors how this history has sometimes been obscured,” explains museum Executive Director David Weidner. The exhibition will feature an interactive piece where visitors will be asked, “What’s Wrong with This Picture?” where one of the current panels that depicts the first encounter between the Pilgrims and the native Wampanoags will remain and will pose questions for visitors to point out the inaccuracies in the panel, to encourage visitors to delve further into what happened in 1620.

MIDCAPE GUIDE 2020

The cornerstone of Pilgrim Monument was laid in 1907 by President Theodore Roosevelt. President William Taft dedicated the completed tower in 1910. On a clear day you can see Boston from the top of this 252-foot granite monument. An estimated 4,000 Native Americans lived on Cape Cod when the Pilgrims landed in 1620 and the Mashpee Wampanoag Museum presents the history and culture of the Wampanoag from the Stone Age to present day through exhibits and programs. View artifacts and other Native American heirlooms, tools, baskets, hunting and fishing implements, weapons and domestic utensils. The focal point in the exhibits is a large diorama depicting a typical scene from an early Wampanoag settlement.

FOUR-NATION CELEBRATION Plymouth 400’s mission is to present an “historically accurate and culturally inclusive” celebration of the quadricentennial of the Pilgrim landing in 1620 by partnering with Mayflower 400 in the UK, Leiden 2020 in the Netherlands and Wampanoag Nation, encompassing the federally recognized tribes of Aquinnah and Mashpee. A full list of signature and partner events can be found at plymouth400inc.org which encompasses towns outside of Plymouth, all the way to Boston. Plymouth 400 is also offering an official tour through Tour Trends Ltd. that goes from Boston to Cape Cod with stops at historically and culturally significant sites along the way. The best place for Pilgrim history, though, is just about an hour from the MidCape at Plimoth Plantation, a living history museum that realistically conveys the life in the Wampanoag and English communities in the 1600s through a replica village and interpreters. The 17th Century English Village offers a glimpse into the worldview, faith and lifeways of the Pilgrims. The Wampanoag Homesite portrays the traditions, lifeways and culture of the native people. There’s also a gristmill to visit. Pilgrim Hall Museum contains a fascinating collection of Pilgrim possessions including William Bradford’s Bible, Myles Standish’s sword, the only portrait of a Pilgrim (Edward Winslow) painted from life, the cradle of Peregrine White, and the earliest sampler made in America (by Myles Standish’s daughter). The Mayflower II, a full-scale replica of the original Pilgrim ship, is docked near Plymouth Rock in downtown Plymouth and visitors can clamber aboard to marvel over the narrow quarters that carried the Pilgrims across the Atlantic for 66 days. One of the signature events for the 400th celebrations is the sailing of Mayflower II from Plymouth to Provincetown, tentatively scheduled for Sept. 7, 2020 (weather permitting). A historical re-enactment of the signing of the Mayflower Compact in Provincetown Harbor in 1620 will also be conducted. Mayflower II will remain in Provincetown, open to public visitation, Sept. 10 through 14. Plymouth Rock, located at Pilgrim Memorial State Park on the shore of Plymouth Harbor, is the symbolic landing place of the Pilgrims. Surrounded by a stately columned portico, it’s a must stop on your Pilgrim journey in this historic year. As Massachusetts Gov. Charlie Baker opines for Plymouth 400: “Plymouth 400 is an American story and a National Legacy. So much of what has defined our Nation is found in this iconic tale of exploration, innovation, self-governance, religious freedom, immigration and thanksgiving. The cultural contributions and American traditions that began with the interaction of the Wampanoag and English peoples have significantly shaped the building of America and continue to provide lessons for our future. In fact, we have yet to realize the many legacies sparked by these historic events.”

Dogs Just Wanna Have Fun Agway of Cape Cod’s ‘Paw Palooza’ promises Fun for the whole family

P H OTO S B Y S TA C E Y H E D M A N , C O U R T E S Y O F AG WAY C A P E C O D

BY DOU G K A R L SON

Billed as the ultimate festival for dogs, Agway of Cape Cod’s “Paw Palooza” is a tail-wagging extravaganza that includes events ranging from dock diving competitions to police K-9 demonstrations, and much more. The biennial event is held, appropriately, in the dog days of summer, August 1 and 2, at Dennis-Yarmouth Regional High School.

T

his year marks the fourth canine convention put on by The Agway of Cape Cod Charitable Foundation and supporting the Animal Rescue League of Boston’s Brewster Care and Adoption Center and the MSPCA-Cape Cod. To date, the event has raised more than $110,000. “Dogs really are part of the family and you want to be able to celebrate them and give them fun experiences, just as you would take your kids to the County Fair,” explains organizer Jessica Thomas, Vice President and Co-Owner of Agway of Cape Cod. “Paw Palooza has become one of the largest dog festivals on the East Coast and that’s a

testament to how powerful the connection between the people and their dogs is, especially here on the Cape.” The main attraction of the festival is a dock diving competition organized by NADD, or North American Diving Dogs. A hugely popular sport among dogs and their owners, dock diving involves dogs running off docks into a 40-foot pool of water, where they compete for height and distance. And while the event attracts some of the sports’ top competitors nationwide, amateurs are also welcome (and encouraged) to compete. “Dock diving is definitely an attraction, both for competitors and spectators,” said Thomas. “We’re drawing crowds from all over the country.” If your furry friend is straining at the leash to compete, but maybe not ready for the big leagues, he can get his paws wet at a “try-it-out dock and pool”— a great way to get introduced to the sport. Who knows, maybe your puppy pal might be a future champion? Thomas also recommends checking out Canine in the Clouds Stunt Dogs, which have been featured on the David Letterman Show and Animal Planet. “They put on an amazing stunt dog show, it’s unbelievable what these rescued dogs can do” she says.

Let Your Dog Take the Leap! Want to let your pup make a splash? Register him or her at northamericadivingdogs.com Day of show registrations may also be available.

MIDCAPE GUIDE 2020

Also not to be missed: demonstrations of police K-9 units in action, a “radar run” so you can find out how fast Fido is, a professional lure course where your pup chases a plastic bag attached to a lure that whizzes along a speedy rope and pulley system, and an interactive agility course. There’s also a puppy spa zone, a canine kissing booth, a Kids Zone, food trucks, and more. If it’s too hot, there is a cool zone for Rover, with splash pools, misting tents and doggie ice cream. Those cool zones are important in August, says Thomas. “It’s really important to us at Agway to promote responsible pet ownership.” With more than 70 vendors coming from all over, there are also great shopping opportunities, with items for sale from handmade collars, gourmet dog treats, health and wellness products, to apparel and products for the humans. “You’ll find not only some of your everyday canine staples, but so much cool stuff that you don’t find at your local pet shops or even online. And a lot of fantastic local services and businesses are there as well, it’s like Comic-Con for dog lovers.” says Thomas. Agway formed a nonprofit charitable foundation and came up with Paw Palooza after Thomas had worked on several other dog-friendly fundraising events. “It’s really important for our shelters to remain funded which is why we chose our two local shelters to benefit from the event,” says Thomas. Sponsors quickly stepped up

to help too. “It’s a beautiful mix of our national pet product companies and local businesses,” said Thomas. Kudos to the event’s volunteers and to Agway of Cape Cod, a local family-owned garden and pet supply store with three locations who donates about half the staffing for the event. “The Cape is a dog loving community,” says Thomas. “It’s an overwhelming feeling to see so many people who want to come out and celebrate their dogs.”

Your event program will include a map and full schedule, but here’s a peek at things not to miss:

8

1

The Pool

The “Main Event” and your chance to say “I saw dogs fly on Cape Cod”! Competitions take place all weekend as dogs compete for distance and height. You’ll see amazing leaps from veteran competitors and record holders. And you’ll see pups who are trying for the first time and need a little crowd encouragement to make the leap!

2

The Mini Dock

So your pup’s not quite ready for the big stage? Let him dip his paw in dock diving by taking a leap off the mini dock.

3

Stunt Dog Shows

The team of all rescue dogs from Canines in the Clouds performs agility, frisbee catching and jaw dropping tricks and stunts.

4

Lure Course

Let your dog chase lures around a professional course. They’ll love using their natural instincts to chase prey, while working on agility, focus and sportsmanship.

5

K-9 Demos

Have you ever seen a working police dog take down a criminal and refuse to let go until commanded? K-9 teams will offer demos that include a mock narcotics search and simulated criminal apprehension.

6

Spa Zone

Doggie massages, blueberry facials, temporary tattoos and pawdicures are just a few of the treatments your pup can indulge in!

7

The “Other” Pools

Head over to the “Puppy Pool Pavillion” where he can cool off in one of the kiddie pools. Next to the pool pavilion, humans (and pups) can beat the heat in the misting tents.

8

Retail Therapy for Dog Lovers

Dog Lovers and owners can get some retail therapy by scoring great new products for yourself and your pup from our 75+ vendors

A Twist On

CAPE COD CLASSIC FARE BY J OH N F. C A R A FO LI

T

There’s been a shift in the type of new restaurants opening on Cape Cod over the past several years. In addition to the wonderful, classic clam shacks that serve fresh, local seafood, visitors can now find a variety of ethnic cuisine, including Peruvian, Brazilian, Mexican or French, all made with Cape Cod’s signature fresh ingredients. Take for example, Tumi, a Peruvian restaurant in Hyannis, which features a variety of ceviche. The chef uses fish from the Cape’s ocean waters. For oysters served French style, head for Hyannis and The Naked Oyster’s stew, with oysters direct from Chef Florence Lowell’s own oyster

farm in Cape Cod Bay, just a few miles away. If it’s lobster you crave, try the Yarmouth House’s seafood-stuffed baked lobster. For a casual lunch, choose stuffed quahogs, a salad and a cold beer at Captain Parker’s Pub in West Yarmouth. If you’re looking for an elegant Italian dinner, try Alberto’s on Main Street in Hyannis. Depending on your taste, you can’t go wrong ordering fresh, local food on the Cape, sometimes with a twist from a different region of origin. John F. Carafoli is the author of “Cape Cod Chef ’s Table,” “Great Food Finds Cape Cod,” and “Great Italian American Food in New England.”

Anejo Mexican Bistro & Tequila Bar 599 Main Street Hyannis 774-470-5897 anejomexicanbistro.com

Guacamole (Serves 4)

Anejo Mexican Bistro and Tequilia Bar and one of a kind Beechtree Taqueira in the rear. The bar has over sixty-five different brands of tequila to choose from, ranging from Bianco (silver) and Reposado (aged), to the Añejo (extra-aged). The menu runs the gamut. Choose from the freshly made tableside Guacamole in an authentic molcajete served with plenty of fresh, crisp tortillas to house specials like the recipe shown here. Both offer fun, sophisticated atmosphere for cocktails. Take full advantage of authentic Mexican foo with a Cape Cod twist.

Ingredients: • 4 Hass ripe avocados, halved, pitted, and peeled • ½ white sweet onion, peeled and finely chopped • ½ bunch fresh cilantro, finely chopped • 1 jalapeño, stemmed, seeded, and finely chopped • 2 tablespoons fresh lime juice (from 1 lime) • Cotija cheese, for garnish

Smash avocados to desired consistency. Add remaining ingredients and mix well. Transfer to a serving bowl and press a sheet of plastic wrap directly against the surface of the guacamole until ready to serve. Remove plastic wrap and sprinkle with cotija cheese before serving. Serve with tortilla chips and a margarita.

The Yarmouth House 335 Route 28 West Yarmouth 508-771-5154 yarmouthhouse.com

The Yarmouth House was founded by Gerry Kounadis who was born in Greece. He founded the restaurant in 1978 and employed his three children to help run the restaurant. With hard work and dedication, the restaurant is one of Cape Cod’s favorite. Garry passed away in August of 2006. His son Chris runs the kitchen. The dining room is run by Angie, his daughter. It is an inviting and friendly atmosphere just the way Gerry started it.

Seafood Baked Stuffed Lobster (Serves 2) Ingredients: • 2 (1½ pound) lobsters, split and cleaned • 4 large sea scallops, minced • 4 medium shrimp, minced • ½ cup breadcrumbs • ½ cup sherry wine • ¼ teaspoon fresh tarragon or thyme, minced (optional) • ¼ cup butter, more for drizzling over lobster before baking • Salt and pepper to taste

60

Preheat oven to 450 degrees. Place the lobster on its back on a large baking sheet. With the tip of a sharp knife, plunge it between the eyes and run the knife all the way to the tail fan. Open up the cavity with your hands. Remove the intestinal sack between the eyes, intestinal vein that runs down the tail, green tomalley and coral, if female. This can be done easily with a spoon. Remove rubber bands and run a skewer from the tail to the head of the lobster to prevent it from curling in the oven. In a bowl, mix together the scallops, shrimp, breadcrumbs, sherry, herb and butter, salt and pepper. Lightly fill each lobster with the mixture. Do not pack it! Drizzle more butter on top and bake in oven for 25 minutes.

Ceviche (Serves 2) Ingredients: • 8 (ounces) of white firm fish, cubed (haddock, halibut or cod) • 8 limes juiced and zest of 1 • Pinch of salt and pepper • ½ red onion, thinly sliced • ½ cup roughly chopped cilantro • ½ teaspoon fresh grated ginger • 3 ribs of celery chopped • 1 cup fish stock • *½ cup each Peruvian white corn and dry corn, toasted • 1 cooked sweet potato, cut into large pieces

Tumi Ceviche Bar & Ristorante 592 Main Street Hyannis 508-534-9289 tumiceviche.com

The restaurant became Peruvian Italian because of the owners. Jorge Siguencia who is an Australian with a love for Italian food and his wife Deisy who is of Peruvian background, together they decided to mix the two cuisines to create their restaurant. There is a combination of different flavors to experience on the menu but one of the specialties is the variety of ceviches done with local fishes.

Directions: Place the fish in a medium bowl, lime and zest, salt and pepper. Set aside for 20 minutes. Mix in cilantro. In a blender add the ginger, celery and fish stock and puree to a liquid. Mix this juice into the marinated fish. Divide the mixture between two bowls, garnish the plates on one side with the corn, potato on other side. * You can purchase the two corns at the International Food Market, 338 Main Street, Hyannis.

Alberto’s Ristorante 360 Main Street Hyannis 508-778-1770 albertos.net

Chicken Saltimbocca (Serves 4) Ingredients: • 4 boneless chicken breasts (approximately 6 ounces each) • 4 slices of Fontina cheese • 4 Thin slices of Prosciutto di Parma • Flour to dredge chicken • 12 leaves of sage • 1 pound of baby spinach • 1 pound of sliced white mushrooms • ½ cup minced shallots • 2 cups Marsala wine • 1 cup Chicken Stock • 4 tablespoons unsalted butter • 2 /3 cup olive oil • Salt and pepper to taste

62

Alberto’s Ristorante was established in 1984 at which time, Northern Italian cuisine and fresh homemade pasta were introduced to Cape Cod for the first time. Since then, they have continued a tradition of all fresh ingredients and in-house preparation of every course from the soups to the desserts. Their reputation for casual elegance arises from an emphasis on decor, service, the pride they take in food preparation, and affordability. Alberto’s is open seven days a week for lunch and dinner. During the summer months, dinner is served outside.

Directions: Pre-heat your oven to 400 degrees Sauté spinach until slightly wilted in 2 tablespoons olive oil, 2 tablespoons of water, add salt and pepper to taste. Set aside. Place chicken breasts between 2 pieces of plastic wrap on top of a large cutting board. (Make sure the plastic wrap is about twice the size of the chicken breast.) Gently pound the chicken until the breast is the same thickness throughout. Repeat this for all the pieces of chicken. Remove the plastic wrap, salt and pepper the breasts and lightly flour chicken on both sides. Put olive oil into large frying pan. Warm the oil until slightly shimmering. Cook either 2 or 4 at a time depending on the size of your pan. If making the chicken in batches add more olive oil if needed.

MIDCAPE GUIDE 2020

Cook chicken on each side until slightly browned. Do not discard any oils or chicken pieces left in your frying pan. Remove the chicken breasts from the frying pan and put off to the side. Add the mushrooms and the shallots to the same frying pan you have been using and sauté until the mushrooms are partially cooked. Add the Marsala wine and chicken stock to the mushroom and shallot mixture. Reduce the liquid to half, stir in butter. Put chicken back into pan with the sauce. Reduce until mixture has thickened slightly. Pour everything in your frying pan into an 8x12x2 inch baking dish. Now arrange the sage evenly on the chicken, then layer the spinach, prosciutto, and fontina cheese over the chicken. Place the chicken in the oven until your cheese is melted (chicken should be 165 degrees in the center). Serve and enjoy.

Captain Parker’s Pub 668 Route 28 West Yarmouth 508-771-4266 captainparkers.com

Captain Parker’s Pub is a family-friendly, family-owned restaurant overlooking Parker’s River in West Yarmouth. Open year-round, Captain Parker’s has been serving Cape Cod for close to 40 years. They are most well known for their multi-award winning New England clam chowder, which is now available in markets around New England, but you’ll find plenty of variety on the menu including steaks, seafood, salads and classic fried seafood entrees which can be enjoyed on the outdoor patio in the summer or by one of several fireplaces in the winter.

Stuffed Quahogs (Yields about 6 servings) Ingredients: • 12 large clams or quahogs in the shell • Salt and ground black pepper to taste • 2 Tbsp. olive oil • ½ stick sweet butter • 1 medium onion, diced • 2 stalks of celery, diced • 1 red bell pepper, diced • 3 cloves of garlic, minced • ¼ cup Portuguese chorizo, diced • ¼ cup linguica, diced • ½ tsp cumin • ¼ tsp cayenne pepper • 1 tsp dried parsley • 1 tsp lemon juice • 1 tsp clam juice • 1–3 dashes of Worcestershire sauce • 1–5 dashes of Tobasco sauce (to your liking) • ½ loaf of sweet bread • 1 cup of breadcrumbs • ½ cup of crushed Ritz Cracker crumbs

Directions: Preheat oven to 350°F. Scrub quahog shells to remove any debris. Fill a pot with about ½ inch of water, and bring to a boil, add the quahogs in one layer and cover. Steam the clams for about 5 minutes, as soon as the shells open, remove the clams from the pot. Discard any clams that don’t open and set aside the liquid that the clams were steamed in for later. Once the clams have cooked, remove the meat from each clam and dice the meat into small pieces. Set aside the clam shells to stuff later. Heat a skillet with butter and olive oil, then add bell peppers, celery, linguica, chorizo and onions, and cook over medium heat until the onions and peppers soften. Then, add the garlic, cumin, cayenne pepper and parsley and sauté for another minute or two before removing the skillet from the heat.

MIDCAPEGUIDE.COM

In a large bowl break up the bread and combine with breadcrumbs & crushed cracker crumbs. Add ½ cup of the reserved cooking liquid from the quahogs, lemon juice, Worcestershire sauce, Tobasco sauce and clam juice and mix with your hands. Let the mixture sit for a few minutes to soak up the liquid then drain the excess liquid. The mixture should be moist enough to stick together, but not too wet. If needed, add more clam liquid or more breadcrumbs. Add the chopped quahog meat and the sautéed meat/vegetable mixture to the bread mixture and adjust the seasonings to your liking. Mix until completely combined. Stuff each clam shell with an ice cream scoop of clam stuffing then bake on a rimmed baking sheet until heated through — about 20–25 minutes. Broil on high for an additional 3–5 minutes to achieve a crispy outer layer. To serve, top with a pat of butter, a slice of lemon, and hot sauce on the side (optional).

Naked Oyster Raw Bistro and Bar 410 Main Street Hyannis 508-778-6500 nakedoyster.com

Several years ago, Florence and her husband, David, bought an oyster grant in Barnstable Harbor. Florence grew up close to the Atlantic Coast of France, near Bordeaux, and spent summers in Arcachon, a major oyster-farming center. Becoming an oyster farmer strengthened her commitment to using local ingredients and brought back childhood memories. “It all made sense; now I could supply my own restaurant with these local, extremely fresh, tasty, and delicious oysters!”

Oyster Stew (Serves 4) Ingredients: • 1 tablespoon light olive oil • 1/4 cup minced shallots • 2 tablespoons brandy • 1/2 cup sherry • 4 cups heavy cream • 24 fresh oysters, shucked, juice reserved • Salt and pepper to taste • 1/4 cup minced chives or chopped parsley for garnish

64

For the stew: Heat the oil in a 2-quart, straight-sided sauté pan over medium-high heat. Add the shallots and cook until translucent, about 4 minutes. Add the brandy and quickly and carefully wave a long lit match just above the surface to light it. When the flame dies down, add the sherry, simmering to reduce the sherry slightly. Add the cream, bring to a boil, and

MIDCAPE GUIDE 2020

reduce by half. Add the oysters with their juices and poach for 45 seconds; do not overcook. Season with salt and pepper. To assemble the dish: Divide the stew evenly among 4 warm bowls, garnish with chives, and serve immediately.
