Y culminamos en la belleza de Formentera, que no tiene comparación. El mundo del vino se nos hace familiar con el apreciado sommelier alicantino Nacho Coterón. Nos adentramos sin timón en el mar con Ramón Huertas y sus inigualables patines de vela, disfrutamos una vez más de la potencia creativa del escultor Víktor Ferrando, que parece no tener límites. Y en un plano mas práctico, seguimos nuestro recorrido con Jane Quincannon Stanchich, quien nos muestra cómo preparar un plato a la vez integral, macrobiótico, nutritivo y de calidad. Y en restauración, volvemos una y otra vez a La Maja, Les Artistes y el restaurante del Hotel Palau Verd, en Denia —todos ellos, plenos de deleite y de relax. La llave para lograr esta experiencia alto standing es el espíritu de la innovación. On a journey round this Mediterranean Sea of ours, home to so many cultures, we stopped to see the Balearic Islands. The architecture of Mallorca –a fusion of many periods– brought us many surprises. Here we found Miguel Aguiló, a Majorcan painter whose works are now a fundamental pillar of Spanish art. We went on to Ibiza to celebrate a culture reaching back to the dawn of history, lively and cosmopolitan, paying tribute to the sun and the supreme, transparent beauty of the island. And we capped it off with a peek at the unparalleled beauty of Formentera. The world of wine was brought to our door thanks to the valuable contributions of Alicante-born sommelier Nacho Coterón. And we plied the waves with Ramón Huertas and his unique, rudderless sailboats called patins, followed by another look at the powerful creations of sculptor Víktor Ferrando, whose creativity knows no limits. For something really practical, we invited Jane Quincannon Stanchich to tell us how to prepare some of her wholesome, macrobiotic dishes for great nutrition and great looks! And to cater to readers looking for great tips, we went back to La Maja, Les Artistes and the restaurant of Hotel Palau Verd in Denia —all of them full of delightful concoctions for discerning palates. The keynote in all these experiences within the pages of alto standing is a spirit of innovation. If we open ourselves to this spirit, we can sail across this sea of opportunities, combining natural and human-made beauty, with no limits to our pleasure. And we can enjoy all the delights of two regions: Altea and the Balearics, in a marvellous exercise in communication that makes us feel we are part of something much larger than ourselves.

a 200 millas A dos es un reto durísimo para los competidores, no solo por las condiciones climatológicas que se presentan a ﬁnales del invierno, con vientos de Levante de hasta 20 nudos, tremendas encalmadas y fuertes temporales, sino además, porque la competencia admite solamente dos tripulantes en embarcaciones que normalmente son gobernadas por 10 y hasta 12 personas. Las naves realizan un recorrido que va de Altea a Ibiza por estribor, pasando por el paso de Freus, Baliza de Formentera y vuelta a Altea. Total, doscientas millas cuya complejidad obliga a los participantes a prepararse a fondo. Un viaje que implica para los tripulantes aproximadamente 50 horas en estado de vigilia, día y noche, bregando con las condiciones del tiempo y con las propias fuerzas interiores. Muchas embarcaciones se retiran, exhaustas, pero las hay que permanecen, las que luchan a viento y marea en una relación hombre naturaleza en la que la fuerza y la esperanza son protagónicas, porque se sabe que todo pasa, aún aquello que por momentos, parece ser demasiado aplastante. Esos son los que llegan a puerto ﬁnalmente. Los que no se doblegan frente a la adversidad. Los campeones. En una escala propia, la Regata 200 milla A es una demostración de lo que el ser humano es capaz de hacer cuando tiene claro su propósito. The “200 Millas A Dos”, as it is called in Spanish, is a tough challenge for competitors, not just because of the weather conditions still present at winter’s end, with Levante winds of up to 20 knots,

sudden calms and strong storms, but also because the race only admits two crewmembers on vessels that are usually manned by a crew of ten to twelve. These brave boats, however, ply the waves from Altea to Ibiza on the starboard side, via the strait of Freus, the beacon of Formentera and then back to Altea. In all, that’s two hundred miles of complex manoeuvring that calls for participants to be in the best of shape. This is a journey in which the two sailors have to stay awake for 50 hours, day and night, struggling against the weather and their own exhaustion. Many boats have to give up due to fatigue, but a few remain ﬁghting against wind and storm in a challenge of man against nature in which strength and staying power are the name of the game, because even though one knows that the struggle will eventually end, at some point along the way even the bravest lose hope. Those who don’t will ﬁnally come to port. The ones who shirk at nothing. The true champions. In its own way, the 200 Mile Doublehanded Race is proof that human beings are capable of incredible feats when put to the test.

La Catedral de Santa Maria También conocida como La Seu, esta iglesia , levantada a la orilla del mar, es un monumento al arte gótico levantino y está considerada como una de las catedrales góticas más hermosas del mundo. Su construcción se inició en el año 1230 encima de mezquita de Medina Mayurca, y está dedicada a Santa María. La Seu posee la nave más alta de España y la segunda de Europa, y a su fama se añade el mayor rosetón del mundo gótico, enclavado encima del altar mayor. Mística y mágica, cada solsticio de invierno, y por solo unos instantes, la Seu es testigo de un hechizo de luz, en el que el rosetón, con sus miles de cristales, se proyecta y magniﬁca sobre una de sus paredes, acaso en homenaje a esa divinidad de la cual es testigo.

SANTA MARIA CATHEDRAL Also known as La Seu, this cathedral erected practically at the sea’s edge is a monument to Levantestyle Gothic art and is considered to be one of the most beautiful Gothic cathedrals in the world. It was begun in the year 1230 on top of the mosque of Medina Mayurca, and was dedicated to St Mary. La Seu boasts the highest nave in Spain and the second highest in Europe, and it is also famous for containing one of the world’s largest Gothic rose windows, over the high altar. Mystical and magical, this window in La Seu is witness to a few ﬂeeing moments of reﬂected light at each winter solstice, when the thousand glass panes of the rose project their rays on one of the cathedral walls, perhaps in homage to the divinity after which it is named.

Palacio Almudaina Al lado de la Catedral se encuentra este magníﬁco palacio de construcción árabe, directamente al lado del mar y maravilla arquitectónica de todos los tiempos. Con veinte mil metros cuadrados de extensión, el Palacio de Almudaina alberga la jefatura militar de las Baleares, y es, además, residencia oﬁcial de la familia real de España.

THE MOORISH BATHS The strong inﬂuence of the Arabic world across the Balearic Islands is undeniable. The Moorish baths of Palma stand witness to architectural treasures dating back to the 10th century. They say these baths not only served for bodily health, but also for spiritual cleanliness. Still surrounded as they are by the noises of the city, the Moorish baths of Palma are an invitation to enjoy peace and quiet, with an idyllic garden surrounding them, in a relaxing atmosphere full of beauty and silence.

Palma posee buenos museos y galerías de arte, que apuestan por el arte Mediterráneo, principalmente del siglo XX. Obras de Miró, Picasso, Ginovart, Barceló, Santiago Rusiñol, o algunos otros pintores mallorquines menos conocidos para el gran público, son sus mejores atractivos. Uno de ellos, importantísimo, es el museo del grandioso pintor Jean Miró. Residente de Mallorca durante muchos años, Miró legó tierras y pinturas a la ciudad, materializadas en lo que es hoy la Fundación Museo Miró. El Museo Miró está compuesto por pinturas, dibujos y obra gráﬁca principalmente, e incluye también un importante fondo documental. Otros museos de importancia son el Museo de la Catedral de Palma , la Almudaina, el Museo de la fundación Caixa y los Museos de Mallorca del vino, calzado, artilugios rústicos, entre otros.

THE ALMUDAINA PALACE Close to the cathedral stands this magniﬁcent palace of Arab construction, right next to the sea – an architectural marvel from yesteryear. With its 20,000 square metres of space, the Almudaina Palace now houses the military headquarters of the Balearics and is also the ofﬁcial residence of the Spanish royal family.

PALMA MUSEUMS Palma has fantastic museums and art galleries, mostly concentrating on Mediterranean art from the 20th century. Works by Miró, Picasso, Ginovart, Barceló, Santiago Rusiñol, or some of the lesser known Mallorcan painters for the public at large, are the most notable attractions here. A must-see is the museum displaying the works of the master Jean Miró. Miró lived in Mallorca for many years, and bequeathed both land and paintings to the city, forming part of what is today known as the Fundación Museo Miró. The Miró Museum exhibits paintings, drawings and graphic works by the artist, and also holds a signiﬁcant amount of family documents. Other museums of note are the Cathedral Museum of Palma, the Almudaina, the Fundación Caixa Museum and the Mallorcan museums for wine, footwear, rustic implements, and others.

La Lonja de Mallorca Otra preciosa perla del arte gótico de Palma., Sa Llojta, se construyó para albergar las reuniones de los comerciantes de la época. La exhuberancia de la construcción de uno de los ediﬁcios más bellos de España, muestra que Palma estuvo entre las ciudades de comercio pesquero más ricas del Mediterráneo. La Lonja fue creada por el arquitecto Guillem Sagrera entre 1420 y 1452. MERCHANTS’ EXCHANGE Another pearl in the crown of Gothic art in Palma, Sa Llojta was built to house meetings of merchants in days gone by. This exuberant construction has given us one of the most beautiful buildings in Spain, proving that Palma once ranked as one of the most prosperous ﬁshing cities in the Mediterranean. Sa Llojta was designed by the architect Guillem Sagrera between 1420 and 1452

Utzon eligió establecerse en Mallorca debido a su larga historia de culturas diferentes y de distintos métodos de trabajo en la construcción. A Utzon le fascinaba la edificación evocadora del mar. La pujante industria naval de Mallorca produjo una cultura que sobresalía en la realización de barcos de excelente calidad. Marino con talento, Utzon siguió inicialmente los pasos de su padre para convertirse en arquitecto naval antes de centrarse en la arquitectura, pero su interés en la forma en que se construían los barcos continuó siendo su fuente de inspiración. Can Lis está orientada hacia el sol y construida formando parte del paisaje, utilizando los diferentes niveles y elevaciones de la topografía de la parcela. El gusto de Utzon por las plataformas se lo inspiró su viaje a México en 1949, dónde observó cómo se podía cambiar la posición en un paisaje, con los pies firmemente plantados en la tierra, mientras se disfrutaba “del cielo, las nubes y la brisa”. Su propia experiencia de “emerger a la luz del sol” después de semanas de largos, lluviosos y oscuros inviernos en Dinamarca se manifiesta en la utilización de los materiales.

Construida con una piedra caliza local denominada piedra “marés”, refleja la luz mediterránea de diferentes maneras. Veinte años después construyó otra casa, Can Feliz, en S’Horta, en la costa sur de Mallorca. Al contrario que con Can Lis, es difícil de encontrar y está escondida entre las montañas, como otras casas mallorquinas tradicionales que salpican el paisaje. Su ubicación es secreta, convirtiéndola en un santuario privado. En vez de extenderse a lo largo de la cresta de una colina, la casa, construida con la misma piedra caliza local, se centra alrededor de una terraza y está construida bajo un sólo tejado. Rafael Moneo, el arquitecto español ganador al igual que Jorn Utzon del Premio Pritzker, trabajó de aprendiz con este arquitecto. Moneo recuerda cómo el punto de vista de Utzon en cuanto a la creación arquitectónica estaba lleno de “paz y seguridad”. Moneo recibió el encargo de diseñar el museo Fundación Pilar y Joan Miró en Palma, finalizado en 1992. Se le pidió integrar en un centro para las artes la casa de Joan Miró, un bello ejemplo de casa de campo mallorquina del siglo XVII y el antiguo estudio, diseñado por José Lluís Sert. Joan Miro vivió y trabajó en Cala Major durante casi 40 años. Inspirándose en la utilización de los materiales y de la luz de Utzon, Moneo recurrió a un cemento blanco con aspecto de mármol travertino. El edificio consta de dos volúmenes, un ala administrativa, que es lineal, y otra con forma de estrella donde se ubican los espacios para las exposiciones más importantes. La luz entra en las salas

trapezoidales para exposiciones a través de enormes paneles de mármol, iluminando suavemente el interior de las mismas, mientras que las ventanas abiertas capturan las vistas indirectas hacia el estudio de Sert y la casa de Miró, recordando la estrategia de Utzon en Can Lis. Se han desarrollado muchos otros nuevos edificios y proyectos de reconstrucción interesantes, incluyendo el teatro en Lloseta, construido por los arquitectos Pons Cañellas y Sagristá Ramis. Otro excelente ejemplo es el Estudio Weil en el Puerto de Andratx, diseñado por Daniel Libeskind, famoso por su plan maestro del diseño del nuevo World Trade Center de Nueva York. Casi cada semana se abren sofisticados nuevos hoteles, restaurantes, cafés y bares, especialmente en Palma y sus alrededores. Al conseguir el máximo efecto con el mínimo de medios, este diverso grupo de contribuyentes a la arquitectura mallorquina actual permanece fiel a la máxima de Mies van der Rohe, el oráculo de la arquitectura clásica moderna, "menos es más".

Jorn Utzon, the Danish architect and designer of the Sydney Opera House resided on Mallorca, first building a house in Porto Pietro in the early 1970s. Named after his wife, Can Lis is built as a series of pavilions, linked by their relationship to the sun and enjoying a spectacular view of the sea. Utzon chose to settle in Mallorca because of its long history of different cultures and different working methods of construction. Utzon was fascinated by building that evokes the sea. Mallorca’s vigorous naval industry produced a culture that excelled in making ships of excellent quality. A talented sailor, Utzon initially followed his father’s footsteps to be a naval architect before focusing on architecture, but his interest in the way ships were built continued to inspire him. Can Lis is oriented toward the sun and built into the landscape, using different levels and elevations that follow the geography of the site. Utzon’s love of platforms were inspired by his trip to Mexico in 1949, where he observed how one could change their position in a landscape, with feet firmly planted on the earth, while enjoying “the sky, the clouds and the breeze”. His own experience of “emerging into the sunlight” after weeks of long, rainy and dark winters in Denmark informed the use of materials. Built of a local limestone called the “mares” stone, it reflects the Mediterranean light in different ways. Twenty years later, he built another house, the Can Feliz, on the southern shore of Mallorca in S’Horta. Different than the Can Lis, it is difficult to find, and set apart in the mountains, like other traditional Mallorcan houses that dot the landscape. Its location is secret, making it a private sanctuary. Rather than spreading out along a ridge, the house, built of the same local limestone is centered about a terrace and built under a single roof.

Rafael Moneo, the Spanish architect and fellow Pritzker Prize recipient, apprenticed with Jorn Utzon. Moneo recalls how Utzon’s approach to creating architecture was ﬁlled with “peace and security”. Moneo was charged with the design of the Fundacio Pilar I Joan Miro museum in Palma, completed in 1992. He was asked to incorporate Joan Miro’s house, a ﬁne example of a 17th century Mallorcan country house and former studio, designed by Jose Lluis Sert, into an art center. Joan Miro lived and worked on Cala Major for nearly 40 years. Inspired by Utzon’s use of material and light, Moneo’s used white concrete that looks like travertine marble. The building is expressed in two volumes, an administrative wing, which is linear, and a star shaped one containing the main exhibition spaces. The trapezoidal exhibit spaces bring light in through huge marble panels, softly lighting the interior exhibit spaces while open windows capture the oblique views out to the Sert studio and the Miro house, recalling Utzon’s strategy in Can Lis. Many other interesting new building and reconstruction projects have been developed, including the theater in Lloseta, built by the architects Pons Cañellas and Sagristá Ramis.

Another excellent example is the Studio Weil in Puerto de Andratx, which was designed by Daniel Libeskind, famous for his master plan design of the new World Trade Center in New York. Sophisticated new hotels, restaurants, cafés and bars are opening almost weekly, especially in and around Palma. These modern buildings juxtapose harmoniously with more traditional Mallorcan architecture whose style incorporates cubic parts of structure with pent or ridged roofs, partial natural stone coverings, small window openings, folding shutters and covered terraces or porches, meaning that each part of the structure has its sense and purpose which when combined result in a well-balanced picture. By achieving maximum effect with the minimum of means this diverse group of architectural contributors to today’s Mallorca remain faithful to the maxim of Mies van der Rohe, the oracle of classic modern architecture, “less is more”.

THE TRIDOSHAS: Ayurvedic treatments start off with three biotypes or metabolic principles (doshas), which are known as: VATA, PITTA and KAPHA. These are the regulatory principles of the flow of life; they are extremely active and interact continually with one another, both in the human body and in the environment. The doshas represent the way in which energy acts in a person, giving him a certain physical aspect, a particular way of digesting, influencing the blood circulation, and even the thinking and the emotions. VATA is based on air and ether. And like air, this dosha implies lightness, dryness and cold, highly prone to movement. People with a strong dose of this dosha are characteristically slim and slender. PITTA is based on fire, metabolism and reproductive energy. It is considered to be predominantly warm, light, not dry nor humid. The Pitta type is robust and wellmuscled.

KAPHA is composed of water and earth, which when mixed give rise to mud. The governing power here is stability and body structure. It is heavy, humid, cold and stable. People with this dosha present broad, strong skeletal structures and when imbalanced tend to become overweight. Everyone has their own particular combination of the three types of doshas, which is never static, but rather interactive and reactive, thus changing in accordance with personal circumstances. Ayurvedic medicine conceives health as a dynamic process in which the human body is in continuous regeneration. But poor eating habits, emotional pressures, stress and environmental pollution all produce toxins that negatively affect cellular metabolism and the proper functioning of our organs. These toxin deposits, in combination with imbalanced doshas, are responsible for the majority of diseases. The mission of Ayurvedic medicine is to assist the individual in cleaning up these toxins and recovering a proper inner balance, a kind of cellular memory where the source of health can be found, reďŹ&#x201A;ecting the harmonious perfection of the Universe itself.

sta reflexión del arquitecto finlandés Alvar Aalto (18981976) sintetiza metafóricamente la esencia de un proyecto: encontrar las mejores soluciones para un espacio teniendo en cuenta las necesidades específicas de los clientes a los que va destinado; con ello, lo que diferencia a un buen proyecto es su capacidad de mantenerse vivo, de crecer y, en algunos casos, de reinventarse. El equipo Pepe Cabrera, en colaboración con Meg Van Amstel acometió la reforma de una vivienda recién construida en Altea Hills para adecuarla a las características de sus nuevos propietarios, partiendo del principio de realizar una intervención donde primaran funcionalidad y diseño. La construcción, de cuatrocientos metros cuadrados, se ubica sobre una parcela rectangular y se desarrolla en tres niveles a través de un juego de volúmenes de gran plasticidad con amplios espacios acristalados que permiten un óptimo aprovechamiento de la luz.

This reflection by Finnish architect Alvar Aalto (1898-1976) synthesises the essence of this project: To find the best solutions for a given space, bearing in mind all the specific needs of the customer it is intended for. After all, the difference between a good project and a great project is its ability to come alive, to grow and in some cases, to re-invent itself. The Pepe Cabrera team, in collaboration with Meg Van Amstel, undertook the refurbishment of a newly built home in Altea Hills to adapt it to the preferences of its new owners, on the principle that functionality and design should be fused to the utmost. This residence, measuring four hundred square metres, is located on a rectangular plot and is laid out on three floors, with a play of highly aesthetic volumes and large windowed spaces that enable maximum benefits to be derived from the natural daylight.

En la planta baja de la vivienda se sitúa la zona de día. Una escalera con barandilla de acero inoxidable nos conduce a la primera planta donde se encuentra la zona de noche; tanto la habitación principal, con baño, donde destaca la cabina de ducha de Megius, como los dos dormitorios restantes, con un baño de uso compartido, se comunican con una gran terraza que recorre longitudinalmente la vivienda. El sótano es el espacio en el que el equipo Pepe Cabrera realizo una intervención mas profunda. En un principio tan sólo acogía el garaje, y ﬁnalmente dispone de una gran habitación tipo suite, con comunicación directa al jardín y una ventana con una espléndida vista subacuática de la piscina, un salón, baño de invitados, sauna y gimnasio.

The ground floor contains all the daytime areas. A stairway with a stainless steel handrail leads us to the first floor, where the night-time areas are located. Both the master bedroom with its bathroom, where the Megius shower enclosure is of particular note, and the remaining bedrooms, with a shared bathroom, open out onto a large terrace that runs along the length of the house. The basement was where the Pepe Cabrera team undertook their most complex work. Initially, it only contained a garage, but now it has a large suite-type bedroom that opens out onto the garden, a window with an incredible underwater view of the pool, a lounge, guest bathroom, sauna and gym.

I don’t think Herbie Hancock is a virtuoso pianist, but rather a great composer and above all a musician of extraordinary sensitivity. And that’s the fundamental feature of River, for me: it oozes sensitivity. If I were a composer, I’d love Hancock to do a version of my songs. Joni Mitchell, also a great composer, is very fortunate to have awoken Herbie’s interest, because he has squeezed out every drop of ﬂavour from what are already beautiful musical and lyrical compositions in any case. Add to this sensitive singers of the likes of Norah Jones, Corinne Bailey Rae, Joni Mitchell herself, or a surprising Tina Turner,

who masterfully sings a slow, complex piece like Edith and the Kingpin. And follow through with a line-up of hand-picked musicians to back up all the sensations: Holland, Shorter, Colaiuta and the incredible African guitarist Lionel Loueke. To cap it all off, a word of advice from a friend: listen to River only when you feel poignant. That way you’ll understand it and enjoy to the full.

Todo empezó hace ya muchos años. Ramón Huertas y su esposa, la holandesa Mary de Kruyf, poseían una empresa de textiles en Cataluña. La primera vez que se subió a un patín de vela, Ramón tenía 28 años; lo hizo por insistencia de un amigo, un colega marino que no cesaba de empujarlo a que probara, aunque fuera una vez, el deleite de navegar de esa manera. “Finalmente acepté para quitármelo de encima”, dice Ramón, con una sonrisa agradecida. “Pero me enamoré perdidamente del patín. Era una experiencia completamente distinta a la que estaba acostumbrado a vivir en mi velero. La relación con el mar era más directa, más íntima, más intensa. Busqué cómo comprarme uno y empecé a entrenar a diario! Mil veces me caí y mil veces volví a levantarme; la sed de aprender, el placer de navegar en un patín me consumía, y poco a poco, un año más tarde, ya le ganaba a mi amigo.” Este sería el comienzo de una historia de amor y compromiso que no ha cesado desde entonces, y que asienta las raíces de un deporte iniciado a principios del siglo pasado, en las aguas de la costa catalana.

Algo de historia En sus inicios, por los años veinte, el patín no era más que un artefacto compuesto por dos flotadores unidos por travesaños, en los que el tripulante se impulsaba con un remo, y que permitía a los grandes nadadores alejarse del ruido y disfrutar la transparencia de las aguas más profundas. Pero como en todo quehacer humano, la búsqueda de superación impulsa la evolución del patín: más velocidad, mayor flexibilidad, más estética... Luego de muchas pruebas y modelos de toda clase, triunfa uno, el más veloz, el más flexible, el más resistente, el más bello! Y una vez tomada la decisión de lo que en adelante sería el único diseño del patín, se delega en Antonio Soler, artesano por excelencia, la construcción y el perfeccionamiento de los barcos. Durante casi veinticinco años, entre 1960 hasta mediados de los años 80, Antonio Soler se dedicó a perfeccionar el sistema de fabricación del monotipo del patín, creando los moldes y estableciendo milimétricamente los pasos y la metodología que iba a permitir sucesivas reproducciones de las embarcaciones. Es así como el patín se convierte en lo que es hoy: un catamarán de más de cinco metros de eslora, con cinco bancadas que unen los dos flotadores en forma de cuchillo. No tiene timón, ni orza, ni botavara. Su mástil es de aluminio y su vela tiene más de 12 m2 de superficie.

La herencia Cuando Antonio Soler decide retirarse, transfiere a Ramón Huertas el legado importantísimo de continuar con su obra. Era el final de los años ochenta. Es así como de industrial, Huertas se transforma en artesano, unificando su carrera profesional con lo que más amaba en su vida: la navegación en un patín de vela. Y es que hay que decir que cada patín se hace a mano, uno por uno. La idea de fabricarlos de manera industrial, con fibra de vidrio, ha fracasado porque solo la madera ofrece la liviandad, resistencia y flexibilidad que requiere el patín. De allí que sean hechos de manera artesanal, y la importancia suprema que adquiere su creador. “Para mí era un honor hacerme cargo de semejante cometido. Lo conversé con mi esposa y juntos decidimos afrontar el nuevo reto”- dice Ramón. “Fabricar los patines significaba contribuir al crecimiento de un deporte maravilloso, repartir felicidad. Cuando la gente prueba el patín ya no lo deja nunca. El patín crea adicción. Una adicción al mar, al aire libre, al silencio, a la sana competencia, a la camaradería. La práctica del patín de vela se asocia con un mundo más pacífico, más libre de violencia, amante de la salud, la diversión y la naturaleza. Por primera vez sentí que tenía una misión en la vida, y la acepté de buena gana, agradecido”.

It all started many years ago. Ramón Huertas and his Dutch wife, Mary de Kruyf, ran a textile company in Catalonia. The ﬁrst time he sailed with a patin, Ramón was 28 years old. He did it at the insistence of a friend, a seafaring colleague who never stopped encouraging him to try it, just once, and experience the true pleasure of sailing in a simple wooden boat. “I ﬁnally accepted just to get him off my back,” says Ramón, with an appreciative smile. “But I fell head over heels in love with the patin. It was a totally different experience from anything else I was used to in my sailboat. Your relationship with the sea is much more direct, more intimate, and more intense. I started searching for a patin to buy, and I started training every day! I fell off and got back on a hundred times. The urge to learn, the pleasure of sailing this simple kind of sports catamaran, kept me going, and little by little, a year later, I could beat my friend.” This was the start of a love story, a story of commitment that has never ceased to inspire, with roots that go back to the early 20th century, in the waters off the Catalan coast.

A little history In the beginning, around 1920, the patin was not much more than two floats joined with a few crossbeams, on which swimmers would paddle out to sea to get away from the crowd on the beach and enjoy deeper waters. But like in many human endeavours, the search for excellence obliged the patin to change: faster, more flexible, better looking… After many trials and models of all kinds, one particular design came out on top: the fastest, strongest, best-looking patin of them all! Once the decision was made regarding the best design, it was Antonio Soler, an outstanding craftsman, who first built and perfected these wooden boats. For practically twenty-five years, from 1960 to the mid-80s, Antonio perfected his own blueprint for the patin, creating the moulds and millimetrically laying down the steps and methods that would allow successive reproductions of these boats to be made. And this is how patins became what they are today: a sports catamaran over five metres in length, with five crosspieces that hold two knife edge floats in place, with no rudder, no centreboard, no boom. The mast is in aluminium and the sail area is over 12 square metres.

The heritage When Antonio Soler decided to retire, he conveyed all his knowledge and skill to Ramón Huertas so his work could be continued. It was the late 80s. And this was how the industrialist Huertas became an artisan, combining his profession with the sport he loved most: sailing his Catalan patin. For the record, it should be said that every patin is made by hand, one by one. The idea of making them on an assembly line using fibreglass failed to convince enthusiasts – because only wood can make them light, fast and flexible enough to be true patins. That’s why they are still handmade, and their makers highly respected. “For me it was an honour to get involved in this. I talked it over with my wife and we both decided to face up to the new challenge,” says Ramón. “Making patins means contributing to the growth of this marvellous sport, sharing out enjoyment. When people try out the patin they never look back. Patins are addictive. A healthy addiction to sea, fresh air, silence, good-natured competition, a feeling of camaraderie. Patin sailing is associated with pacificism, non-violence, health, fun and nature. For the first time I felt I had a mission in life, and I accepted it willingly, thankfully.”

Cada patín le absorbe unas ciento cincuenta horas de trabajo y Ramón se precia de hacer los botes a la medida de sus clientes. “Un patín es algo personal - nos dice. Es como una segunda piel. Como no tiene timón, tienes que rectificar con tu cuerpo, tu cuerpo es el timón, es como una danza, un ballet en el agua. Cuando alguien me encarga un barco, yo tomo en cuenta sus características individuales, su peso, su tamaño, la longitud de sus extremidades, todo importa y todo influye en los detalles finales. La gente se los lleva como tesoros.” Alguien podría pensar que estos “barcos de autor” cuestan una fortuna en el mercado, y considerando la forma en que están hechos, así debería ser. Igual que los violines Stradivarius. Sin embargo, en el corazón de Ramón Huertas, el objetivo es otro. “El patín de vela no hace distinciones económicas. Eso no puede ser. El patín es para todo el mundo porque en esencia, lo que importa es la capacidad del navegante. Eres tú, el mar y el viento. Ahí se miden tus condiciones,

Medicina del alma Ramón sale a navegar unas tres veces por semana y participa activamente en la organización de las constantes regatas que se llevan a cabo entre los clubes náuticos de la costa catalana. Ha ganado numerosos campeonatos, es monitor de vela, juez y jurado nacional y tiene a su haber más de 30 años de navegar en patín a vela. Pero además, Ramón Huertas es el único constructor de patines de madera existente en el mundo. Qué es lo que tanto ha amado Ramón del patín de vela? Por qué tanta pasión? Qué le da? Se lo preguntamos. Ramón sonríe como un adolescente ilusionado... Me gusta la soledad, el silencio, el mar. Cada día es totalmente distinto al anterior, tienes que estar muy alerta, muy despierto, muy presente en lo que haces. Es como si estuvieras encima de un caballo al que tienes que escuchar, entender, respetar, hacerte uno con él... Es algo indescriptible

El mar, el mar Hoy Ramón Huertas se retira de la fabricación del patín, no sin antes legar su inmenso conocimiento en alguien que ha aceptado la misión de continuar. Seguirán sin embargo las aguas catalanas brindándole cobijo a este hombre que no piensa nunca retirarse del mar porque esa es su casa y su alimento y ese es el amor que seguirá prodigando hasta el ﬁn de sus días. Cuando hablo con Ramón, no puedo sino reconocer la sencillez y la humildad de un hombre realizado y se me viene a la memoria aquella frase del insigne dramaturgo Bertol Brecht: “Hay hombres que luchan un día y son buenos. Hay otros que luchan un año y son mejores. Hay quienes luchan muchos años y son muy buenos. Pero hay los que luchan toda la vida: esos son los imprescindibles.”

“Patins are for everybody because the essential factor is your sailing skill. It’s you, the sea and the wind.” Not a business Ramón Huertas has built around one thousand patins over his thirty years of manufacturing, and has been directly responsible for the expansion of this sport across Spain and in other European countries. Each patin takes him around one hundred and fifty hours of work, and Ramón prides himself on customising each boat to match its owner. “A patin is something personal,” he remarks. “It’s like a second skin. Without a rudder, you have to use your body to change course, your body is your rudder, like a dance, a ballet in the water. When someone asks me to make a boat, I take into account that person’s individual characteristics, his weight, size, arm length… it’s all important and it all influences the final outcome of the boat. People treasure them.” We might think these “designer” boats cost a fortune, and considering the way they are made, they probably should, like Stradivariuses. But deep down in Ramón Huertas’ heart, the intention is quite otherwise. “Patins don’t make economic distinctions. That’s impossible. Patins are for everybody because the essential factor is sailing skill. It’s you, the sea and the wind. You measure up to the elements - it’s the elements and

your skills, not the money you are able to spend. That won’t help you at all. Selling patins at a good price opens the doors to anyone who wants to join us. What gives me pleasure is that people buy them and enjoy them, not the business itself.” Soul medicine Ramón goes sailing about three times a week and actively participates in regattas staged by yacht clubs along the Catalan coast. He has won lots of championships, of course, and he’s a sailing instructor, judge and national jury member, with over 30 years experience in patin sailing. But he is also the only wooden patin builder in the world. What is it that Ramón loves so much about patin sailing? Why so much passion? What does it do for him? We asked Ramón, and he just smiled like a teenager in love… “I like the solitude, the silence, the sea. Each day is totally different from the one before. You have to be alert, wide awake, very much aware of what you’re doing. It’s like you’re riding on a horse and you have to listen, understand, respect and be at one with it. It’s hard to describe it in words. Only those who have experienced it really understand it. You can’t sail if you’re not OK inside. But sometimes when you’re

feeling down, you go out sailing and you come back cured. It’s like medicine.” The sea, the sea… Today, Ramón Huertas is retiring from patin making, but not before he can bequeath his immense knowledge to someone who will follow in his footsteps. But Ramón will still ply the Catalonian waters, because he will never retire from the sea. It’s his home, his food, his love, and it will stay with him until the end of his days. When Ramón speaks, one cannot but recognise the simplicity and humility of a self-made man, and a quote from the poet and dramatist Bertold Brecht comes to mind: “There are men who struggle for a day, and they are good. There are others who struggle for a year, and they are better. There are some who struggle many years, and they are better still. But there are those who struggle all their lives, and these are the indispensible ones.”

Ingredientes: • 2 tazas de arroz integral de grano largo, o arroz integral Basmati • 3 tazas de agua • 1 cucharada de sal marina • 1 cucharada de vinagre umeboshi • 1 cucharada de vinagre de arroz integral • 1 cucharada de jarabe de arroz integral • Un chorrito de aceite de oliva • 1 cebolla roja mediana, picada • 2 tazas de granos de maíz • 2 tazas de guisantes verdes o judías verdes, cortadas en pequeñas diagonales • 2 tazas de zanahorias picadas • 1/2 taza de pipas tostadas • 1/4 taza de olivas negras sin hueso, en rebanadas • 1 cucharada de perejil o cebolla o cebollino picado • 6 hojas de col rizada, escaldada

Ingredients: • 2 cups organic long grain brown rice or Basmati Brown Rice • 3 cups water • 1 tsp. sea salt • 1 TBS. umeboshi vinegar • 1 TBS. brown rice vinegar • 1 TBS. brown rice syrup • Dash olive oil • 1 medium red onion, minced • 2 cups corn kernels • 2 cups green peas or green beans, sliced into small diagonals • 2 cups minced carrots • 1/2 cup toasted sunﬂower seeds • 1/4 cup sliced pitted black olives • 1 TBS. minced parsley or scallions for garnish • 6 leaves kale, blanched

Instrucciones de preparación: 1. Tamizar y enjuagar el arroz, añadir al agua y hervir. Añadir la sal marina. Tapar, reducir el fuego y cocer a fuego lento durante 45 minutos o hasta absorberse el agua. 2. Mientras se cuece el arroz, mezclar los vinagres, el jarabe de arroz y el aceite. Anadir las cebollas y marinar en el adobo. 3. Hervir unos 7,5 cms de agua en un cazo. Escaldar rápidamente los granos de maíz, luego los guisantes o judías, y las zanahorias. Rociar la verdura con agua tibia para detener la cocción. Escurrir en un colador. 4. Tras 45 minutos, abrir la tapa del cazo de arroz y remover el arroz con un tenedor. Colocar el arroz en un bol grande para que se enfríe. Remover de nuevo. Usando el tenedor, mezclar las cebollas marinadas y el adobo. Añadir la verdura escaldada y las pipas tostadas. Es mejor dejar reposar durante una hora para mezclar los sabores. 5. Colocar las hojas de col rizada alrededor del bol en el que se va a servir (o sustituir con hojas crudas de lechuga). Colocar la ensalada de arroz a cucharadas. Rociar con olivas negras y perejil o cebollino.

Cooking Instructions: 1. Sort through and rinse rice, add to water, and bring to boil; add sea salt. Cover, reduce heat and simmer on low for 45 minutes or until water is absorbed. 2. While rice is cooking, mix vinegars, rice syrup, and oil; add onions and marinate in the dressing. 3. Bring three inches of water to boil in a saucepan. Blanch corn kernels quickly, then peas or beans, and carrots. Splash vegetables with cool water to stop cooking. Drain in strainer. 4. After 45 minutes: Open the lid of rice pot and fluff rice with a fork. Place rice in a large bowl to cool. Fluff again. Stir in marinated onions and dressing; add blanched vegetables and sunflower seeds. It is best to let set for one hour to marinate flavors. 5. Place kale leaves around a serving bowl. (You may substitute raw lettuce leaves.) Spoon in rice salad. Sprinkle with black olives and parsley or scallions. Be creative! You may add blanched broccoli flowerettes, radish, sesame seeds, or pine nuts.

Dicen que se trata del vino de los zares, aunque probablemente podamos deﬁnirlo como el rey de los vinos. Pero vayamos despacio... THE GOLDEN CATA | They say it’s the “wine of the tsars”. But maybe we should call it the king of wines. Let’s take it step by step.

n este primer acercamiento a vosotros, queridos lectores, he pensado comenzar la casa por el tejado. Y qué mejor que acercarnos a uno de los mitos del planeta vino. Conocer el gran Cristal. La gama alta de uno de los más grandes elaboradores de champagne del mundo. Roederer. Desde su fundación, allá en los lejanos 1776 y su adquisición por la actual familia en 1809, la casa no ha dejado de crecer. Con la calidad como premisa principal. Y con un acierto pleno, de visionarios. La adquisición de la tan codiciada y cara tierra para sus viñedos, patrimonio básico en la actualidad. La gama Roederer Cristal, con su característica botella con fondo plano y color amarillo pálido - sugerencia del Zar Alejandro en 1876, para distinguirse del resto de los champagnes y aportar un plus de seguridad - es la máxima expresión de la calidad de champagne. Elaborados sólo en las mejores añadas, predomina la blanca Cardonnay sobre la tinta Pinot Noir, esta elaborada en blanco, esto es, sin macerar con los hollejos para no adquirir color.

La última cata a la que pude asistir, fue de las mejores que se pueden organizar en el mundo. Siento daros una sana envidia, pero empezamos la cata con un Cristal 99, cremoso, equilibrado, con frutos secos como piñones presentes. Un mítico 96 siguió. Piel de mandarina, mantequilla, fruta blanca. Impresionante. Un 93, complejo y reﬁnado, dio paso a un escasísimo rosado. El Cristal Rosée 2002. Notas balsámicas, de romero, ensambladas con la fruta. La pena… Su escasez y los 500 euros botella.

In this ﬁrst encounter with my readers, I thought I should start the house from the roof down. And what better way than to focus on one of the myths of the winemaking world. The grand Cristal. Top of the range from one of the top champagne makers in the world: Roederer. Founded back in 1776, this family-run business has never stopped growing since it was inherited by Roederer from his uncle in 1833. Quality has always been the watchword. And the road to success, paved by a visionary. The acquisition of

new terrain for new vineyards serves as the basis for the present-day heritage. The Roederer Cristal range, with its characteristic flat-bottomed, pale-yellow bottle –as suggested by Tsar Alexander of Russia in 1876 to distinguish it from other champagnes and provide added security– is the maximum expression of champagne quality. Made only in the finest seasons, Chardonnays predominate over the purple Pinot noirs, with a blend for a white wine, that is, without the skins so as not to add colour. The last tasting I was able to attend was one of the best organised anywhere in the world. Sorry to make you turn green with envy, but we began the tasting with a Cristal 99 –creamy, dreamy, wellbalanced and with a touch of pine kernels. A mythical 96 ensued. Mandarine orange skin, butter, white-fleshed fruit. Impressive. And then a 93, complex and refined, capped by a rare rosé: The Cristal Rosée 2002. Balsamic notes, rosemary, complex fruity flavours. The hitch? Its rarity and the €500 a bottle price tag!
