Food as medicine That nutrition is the essence of health was a firm tenet of Hippocrates, philosopher and father of Western medicine. He placed the emphasis on hygiene for both the patient and the physician. Healthy eating and drinking habits, the importance of fresh air, the self-healing capacity of the body and ensuring proper balance (homeostasis) were the pillars of the therapeutic approach advocated by the Greek physician (c. 460 – c. 370 BC). Hippocrates famously said: ‘Let food be thy medicine’. Mother Nature gives us foods that contain powerful and health-giving properties. The principal causes of Western ailments are food and lifestyle, while refined ingredients probably contribute to the root of most diseases and poor health suffered in the West. For example, when whole-wheat flour is refined into white flour, 80 percent of all minerals, 90 percent of all vitamins and nearly all the fibre are removed in the process. As a result our energy levels can no longer cope with our fast pace of life. Until the start of the 20th century healthy food underpinned all curative treatments. The radical schism between nutrition and health that occurred in the 20th century is why, in spite of massive advances in medicine, we are unable to prevent 70 percent of premature fatalities that result from Western diseases. I would like to conclude with a quote from the two-time Nobel Prize winner Linus Pauling: ‘Optimum nutrition is the medicine of the future’.

How it all started In 1999 I sold my share in a medium-sized enterprise that specialized in petroleum products and kerosene heaters. I gave myself a seven year sabbatical, read 600 books on nutrition, attended conferences on nutrition, became a vegetarian and wrote articles on food and energy for journals both at home and abroad. I started Amanprana because my daughter had ▲ Bart Maes serious concentration issues at school and had developed an allergy to cocoa. After devoting much blood, sweat and tears to research and by switching to omega oil, a cacao-free diet and exclusively eating organic foods, we managed to solve my daughter’s concentration disorder and her cocoa allergy. That proved to be a revelation, and I wanted to use this experience and the knowledge I had gained on nutrition to find a balance between commerce and giving something back to the community. Amanprana launched with Okinawa Omega Oil. I improved the omega composition of the omega oil my daughter took, enriched the omega blend with herbs, and introduced eight naturally-occurring types of vitamin E and a large amount of carotenes. My wife and I started off on a small scale in our livingroom and garage, but it was not long before our home became too small and we were gradually given more shelf space in the shops. Then a friend gave me some literature on saturated fats and palm oil. My first thought was, ‘but surely saturated fats are unhealthy?’ I approached the reading material with scepticism, but within a few months my opinion had changed. I took an in-depth look at saturated fats and came to the conclusion that they contained many properties that were unknown to most people. In fact, I realised that saturated fats were actually extremely healthy. This conclusion was diametrically opposed to the conventional view in nutrition, but I decided to transfer that knowledge to anybody willing to listen. And so we started off with coconut oil and palm oil, and then the products followed each other in quick succession. Profits had ceased to be the primary motivation for me, with the concept of healthful nutrition now being the objective. Our ‘Save the Sea’ promotional campaign was a logical next step. In Sanskrit ‘aman’ means peace or tranquillity, while ‘prana’ refers to life force, which brings us to ‘serene vitality’. We were also one of the very first companies to use biodegradable labels.

What you should know about good health

Yin&Yang and balance Marc Elsen’s polarisation therapy Yin and yang are polar opposites yet complementary 0 balance balance and dependent on each other. Indian and Chinese medicine teaches that a person is in drift drift balance when both these forces are approximately equally present. ORAC and antioxidants Antioxidants protect you against aging by attacking the aggressive free radicals. The quantity of antioxidants in food is expressed as an ORAC (oxygen radical absorbency capacity) value per 100 g = 3.53 us oz = 3.67 uk oz, with fresh vegetables, especially legumes, and fruits having a high ORAC value. Substances with the highest score are herbs and some essential oils. The less an ingredient is processed, the higher its ORAC value. It is generally believed that we must consume 3,000 to 5,000 ORAC units a day in order to protect our bodies against free radicals. Glycemic index The degree to which carbohydrates (sugars) in foods increase your blood sugar levels is expressed as a GI value. Low GI food (less than 50) keeps your blood sugar level in balance, but high GI food (over 70) causes dramatic upward and downward fluctuations. Dates, white bread and parsnips all have an extremely high GI, giving you immediate energy but causing your sugar levels to dip soon after. In general we recommend that you consume low GI food. Above 9,000 and the foods actually have a cleansing and curative effect.’

Gula Java is more than sugar

What is ‘Gula Java’? Gula Java is coconut blossom sugar from Java. The sweet nectar of the coconut blossom is a much-cherished product that is harvested by tappers from high in the coconut trees. Heated in cauldrons over a wood fire, the nectar is stirred until it gradually turns into a delicious unrefined sugar with a sweetness and gentle caramel flavor you can enjoy at any time of the day.

Isolated sugar contains hardly any nutrients or minerals, and for your body to absorb these empty sugar calories it relies on saliva, gastric and intestinal juices and enzymes. In his book ‘The Secret Life of Plants’ Peter Tompkins relates that the fresh juice of sugar cane contains 8,500 units of healthy nutrients. In fact, the roots of a sugar cane plant can extract nutrients from the soil at a depth of 4.5 meters, about 14ft. That’s a true superfood. But once it is processed into white or brown sugar, the number of healthy units goes down to zero.

How to use Gula Java? Gula Java coconut blossom sugar can be used as a healthy substitute for cane or beet sugar, agave, maple syrup and other syrups. US and Japanese scientists have studied some 600 of these centenarians over a period of 25 years. The book based on this study, The Okinawa Program, revealed that the 100-year-old Okinawans were lean and agile

with strong bones. They had supple and un-aged arteries, low cholesterol and homocysteine levels and were in good overall condition. Their minds were sharp and they suffered little from memory loss, while they had a healthy libido and the female members had successfully negotiated menopause. They looked youthful and were energetic and bright-eyed.

'It’s easier to fool people than to convince them that they have been fooled.' -Mark Twain▲ Bart Maes, founder of Amanprana: ‘Science is decisive for me, and not one population study has demonstrated an imbalance between omega-3 and 6, nor an excess of omega-6. I have had to explain thousands of times why Amanprana recommendations with regard to omega-3 and 6 differ from what the crowd says, which is misinforming us by stating we consume too much omega-6 and too little omega-3. This stance has been largely instigated

by the fish oil industry and their numerous pawns. They are moreover trying to exaggerate the importance of DHA and EPA (omega-3 derivatives). These are not essential fatty acids, and your body can make them itself, so let us not exaggerate their value. Amanprana advocates more plant-based omega-3 (ALA) and more unrefined omega-6 (LA). The quality of the oil is more important than its origin.’

The term ‘essential fatty acids’ is frequently misused ‘Your body is the hero, and it manufactures some 50 fatty acids itself as it needs them. It converts the two essential fatty acids at a ratio of 5 percent to 30 percent into other fatty acids. The body can also manufacture saturated fatty acids from unsaturated fatty acids (omega-3, 6, 7 and 9) and vice versa. The body uses elongase and desaturase enzymes to make all the fatty acids it needs, except for two that it cannot manufacture – alpha-linoleic acid (ALA) and linoleic acid (LA). Without these two fatty acids it is impossible to be healthy, and because we do not make them we must get them from our food. They are called the ‘parent essential oils’ by Amanprana and scientists such as Prof. Brian Peskin. ALA is the parent essential oil of omega-3 while LA is the parent essential oil of omega-6. The World Health Organisation (WHO), Prof. Brian Peskin, Amanprana and many others all agree – parent essential oils are at the foundation. They can be found in plant-based sources before being partially extracted by fish and other animals. The 100 billion cell membranes in our bodies require these parent essential oils for a great many functions, one of which is ensuring that each cell absorbs enough oxygen.

Okinawa Omega Balance Delight: Cannabis sativa oil for omega balance Udo Erasmus, the pioneer behind omegas, wrote in his book Fats that Heal, Fats that Kill that: 'Hemp oil can be used for long periods of time to maintain a healthy omega balance without resulting in an omega deficiency or imbalance. Hemp oil has a better "long-term" composition, namely three parts omega-6 and one part omega-3. Besides, hemp oil contains nearly two percent GLA (gamma-linolenic acid)'. The hemp oil in Balance Delight is enriched with sustainable red palm oil and wheat germ oil, as both are abundant in carotenes and vitamin E.

The importance of the parent essential oils, ALA and LA Why do we call them parent oils? Because ALA is the ‘mother’ of the omega-3 family and LA is the ‘mother’ of the omega-6 family of fatty acids. ALA and LA are the mother sources that the body can use to manufacture all the other fatty acids. And so they are the parent fatty acids or oils. We also call them essential because we need them but cannot manufacture them, and so get them from our food. Together they are the only two ‘parent essential oils’ that human beings require. Fish oil manufacturers and their pawns often call EPA and DHA essential or semi-essential oils. This is not true, and they are only two of the 50 fatty acids that we require, but that our bodies can manufacture, and so are not essential. Their importance is exaggerated, and many studies have provided contrary results. EPA and DHA are derivatives of the parent essential oils, and derivatives are no essential fatty acids. Fish oil contains very little of the only two parent essential oils LA and ALA, and only contains the omega-3 derivatives EPA and DHA. This is why fish oil is a poor source of the omega-3 parent essential oil ALA. Plant-based omega-3 and 6 is consequently superior to the fatty acid derivatives in fish oil. Let there be no doubt about this.

How to take it and how much to take? You can take as much Okinawa Omega as you like, but 1 teaspoon (5 g = 0.2 oz) will suffice for the recommended daily allowance of ALA and LA. For the optimal allowance and if you are suffering from a deficiency, you can take 1 to 2 teaspoons a day. If you take 1 teaspoon a day and are also eating healthily, then you will be super healthy and also have absorbed the optimal allowance in a good proportion. How do you take it? ▲ RECIPE Walnut pesto: Roast 100g = 3.5 ounces of pine nuts in a pan. Combine with 150g = 5.5 ounces of walnuts, 3 sprigs of chopped parsley, leaves of three sprigs of thyme, 1 tablespoon of organic apple cider vinegar, 2 cloves of garlic. 1. Healthy oils are just as important as fruit and vegetables We have to completely get rid of the idea that oils are just tools for preparing food. We actually need more calories from healthy oils than from proteins. 2. The quality of the oil is more important than what type it is Only use extra virgin (unheated, only mechanically pressed, with a naturally low acidity). Refined oils are more harmful than refined sugar. You can recognise refined oils because they taste neutral and the refining process has deodorised them. 3. Vary oils just like you vary your fruit and vegetables A carrot is not the same as lettuce, and eating only wholesome carrots is too one-sided. The same holds for oils. What we say is that you must vary your intake, and that includes varying your oils. 4. Some oils can be heated, others can only be used cold Oils with a high PUFA content (polyunsaturated fatty acids) must only be used for cold dishes. They are not stable and become very harmful when heated. Oils that are heated should contain as little PUFAs as possible. NB: Margarine is often referred to as plastic butter. Never use it. It is a cheap imitation invented during World War II when butter was too expensive. The healthy substances in the oil are sold at a high price to the pharmaceutical industry, with the remainder deodorised, refined and bleached to serve as the basic ingredient for margarine. 33

Is red palm oil healthy or unhealthy? Sustainable or unsustainable? Amanprana and many others believe that white palm oil in both organic and nonorganic products is unhealthy. The oil is obtained using solvents, and is degummed and processed using base substances, bleached to get rid of the grey color and deodorized to get rid of the smell. What are the most suitable oils for baking, stir-frying and deep frying?

Deodorized coconut oil is made from copra. Small companies in Asia dry the coconuts in the sun or smoke them to turn them into copra. You can smell the overwhelming copra odor from a long way off. Chickens and other birds as well as goats and dogs walk all over the copra, while the humidity and frequent storms slow the drying process, causing it to mold and ferment. The copra is then sent to the refinery where it is pressed, refined, bleached and deodorized. Amanprana has witnessed the process in Indonesia, Sri Lanka, the Philippines and elsewhere. The high temperatures generated when pressing caramelises the sugars, which bind to the proteins (this is the Maillard reaction). The coconut oil, which has now turned brown, is then bleached using carbon filters, after which the odor is pressed out of the oil using high pressure steam. It is a cheap process as enormous volumes can be produced without the health factors given any consideration. It doesn’t just destroy the fungi and bacteria, it also destroys the many nutrients. The process for obtaining extra virgin or cold-pressed coconut oil starts with freshly-peeled coconuts that are ground and immediately dried in drying cabinets at a low temperature. The desiccated coconut is cold-pressed into extra virgin coconut oil.

Extra virgin coconut oils are the safest oils for deep frying and heating. They are healthy and they lose very little of their health properties, even when reheated multiple times. You can use the same oil for deep frying for up to two years, as long as you filter it regularly (max. 50 times). They are very easily digestible, tasty and lightly flavour your dishes and French fries. The idea that one should bake, fry or deep fry quickly at high temperatures is completely wrong. A slow bake at lower temperatures is much healthier. The maximum baking, stir-frying or deep frying temperature should not exceed 180°C/356°F. Heat changes both the structure of the oil/fat as well as that of the food. When the temperatures exceeds 180°C/356°F or when the oil starts to smoke, then toxic substances are created, not just in the oil or fat but also in the food. While some oils and fats are better able to withstand high temperatures, the toxic substances that are created multiply as the oil or fat gets hotter than 180°C/356°F.

Do we need saturated fats? Every oil, plant, animal and human is a combination of saturated, monounsaturated and polyunsaturated fatty acids. If saturated fats did not exist, life would be impossible. Because saturated fats are so important to our immunity, over 50 percent of the fat in breast milk is saturated fat. There are over 50 types of fatty acids in our bodies, each of which performs a specific function. If you follow a healthy eating pattern you should be consuming twice as many healthy fats as proteins. Most health organisations recommend that 30 percent of our calories should be derived from healthy fats, divided equally between three types. So a third of these healthy fats should come from saturated fats. For a long time it was believed that saturated fats did not play a specific role, and were actually bad for us. A healthy mouth means a healthy body When you brush your teeth you only reach 60 percent of the tooth surface and 10 percent of the entire oral cavity. There are some ten billion microorganisms (bacteria, viruses, molds and protozoa) living in your mouth, and they can infect your gums and play a role in plaque and cavities. Poor oral hygiene allows these microorganisms to enter the bloodstream through tooth abscesses, cavities and gingivitis, where they can damage every organ and every cell (focal infections). You are especially at risk when you have low immunity levels, are fatigued, eat unhealthily and are under stress. Hippocrates actually suggested that arthritis could be cured by removing a bad tooth.
