A little-known fact: winter is the official season for drinking. You’re stuck inside most of the time (bring out the wine), the Christmas holidays are right around the corner (pop open the Champagne), and the lack of daylight requires a bit more spirituous cheer (crack open the gin. And the brandy. And the aquavit). To lift those spirits, we introduce the latest Amathus Winter Promotion Brochure, with an unbeatable selection of Champagnes, wines, spirits and beers that will act as a warm pick-me-up for the cold months ahead. With a new season on the horizon, it only seems fitting to introduce our newest exclusive agency brands, featuring the latest addition from A.v.Wees: a dry yuzu gin made from a mix of distilled yuzu from Japan and distilled gin, which is even better than it sounds; the new Kings County Bottled-in-Bond; and Shrubb J.M: a marriage of aged Rhum J.M, with bitter orange zest, natural sugarcane, and a maceration of locally sourced vanilla bean, cinnamon and nutmeg. Wines Whether it's dressing the tree, cooking far too much for dinner or settling down to watch the compulsory festive movie, Christmas is a time to celebrate, and what better excuse to. Big, rich, bold, spicy, plush reds are the stars of Christmas, and most of us default to Syrah, Rioja and Cabernet Sauvignon. Classic French reds, such as Château Crabitey Rouge AOC Graves 2012 from Bordeaux and Manoir du Carra Beaujolais-Villages Non-Filtré 2016, are key contenders for the Christmas table, but that’s not to say you can’t still drink white wine as the temperature drops. At this time of year, as with reds, fuller bodied whites are called for, such as Charles Sparr Gewurztraminer Tradition 2015, Georges Burrier Pouilly-Fuissé ‘Vers Cras’ 2015 and Vivera Salisire Etna Organic White 2012. Not forgetting that Champagne and sparkling wines have a starring role over the Christmas holidays. A tawny port is a wine lover’s answer to Cognac or Single Malt Scotch. Our go-to Christmas port is Cálem 10yr Tawny Port: velvety smooth with delicious hints of chocolate and dried fruits, and perfect to wash down with the obligatory Christmas Stilton.

Spirits & Liqueurs As the evenings get darker and the nights get colder, our thoughts turn to the darker spirits: ‘the elixir of Christmas cheer, the shield against winter chill’, as the anecdotal congressman said. Cognac, Armagnac and Calvados are always welcome companions after a meal – sipped straight from a tulip glass to concentrate their warm aromas, or mixed into a cocktail – the more so as they help to extend our time at a comfortable dinner table. Thomas de Quincey considered winter to be the season of true happiness, allowing us as it does to take full advantage of what it means to be human, such as warm fires and cosy cottages; we’d likely forgo his choice of tipple in favour of the Grande Champagne Cognacs of François Voyer, the Bas Armagnacs of Château de Laubade, and the Pays d’Auge Calvados from Château de Breuil. Now is also the time of year when traditional flavours of winter return; sweet spices & citrus peel, dried and dark fruits: the heady aromas of mulled wine and warm punch that drag us by the nose into the season. The newly released Shrubb J.M, with its rich orange flavour, is suitably evocative: we particularly like it with, after or on any form of chocolate dessert! Hven Organic Winter Spirit – an oakaged vodka flavoured with orange, cinnamon and clove – whispers ‘Christmas’ as soon as the liquid touches the glass. From Scandinavia we also have the tradition of glögg, a form of mulled wine enjoyed in Sweden and Norway in the run up to Christmas, frequently at glögg parties. Included here is a recipe from Jon, our Nordic and Mexican Brand Sales Manager. He has been known to substitute the aquavit for tequila to make Mexican glögg: seasonal fusion cookery at its finest (and arguably most niche). Perhaps above all, now is the season when we subconsciously begin to celebrate: to eat, drink and be merry. In the following pages you’ll find our peerless selection of agency spirits, along with some thoughts on Martinis and a return to the Pisco Punch, all of which should help the festivities along.

TWIST & SHOUT? What the Dickens? Olive or Twist? Christmas is coming, the goose is getting fat, and everyone likes a Martini or three. Drinkers can have very strong views on the iconic cocktail, bordering on religious fervour in some cases. Bernard Devoto claimed 3.7:1 was the ideal ratio, and it had to be American gin; something that didn’t sit well with David Embury, who thundered that the extra vermouth would hide the “tinny, raw alcohol taste of most American gins”, and plumped for a 7:1 ratio with a good gin: from England, natch. We tend to be a little more relaxed, feeling that a bit of variety is a jolly good thing, so here’s a few of our favourites we’ll be drinking this festive season.

Dry Martini
Wet Martini
How dry should it be? From atomizers to pouring away vermouth, to frankly ridiculous ideas involving rays of sunlight passing through bottles, most of the stories and techniques passed down through bartending lore have focussed on removing vermouth from the drink, or avoiding it altogether. The thing is, however, that vermouth tastes great, and what’s more is having something of a resurgence as more and more people realise this.
For those who enjoy the taste of vermouth – or perhaps just don’t want three shots of gin before dinner – the Wet Martini is a fine apéritif, perfectly balanced and infinitely more sophisticated than its rather unfortunate title suggests.
Ratio-wise, Embury is probably about right with 7:1, though anything from 15:1 (the famous ‘Montgomery’) to 5:1 deserves to be called dry. Take your pick, just don’t pour away the vermouth! Try Ferdinand’s Saar Dry Gin – made with some Riesling wine in the blend – with Ferdinand’s Saar Dry Riesling Vermouth; for an aromatic, spicy Martini.
The original ‘Dry’ Martinis referred to the type of vermouth rather than the amount: a Martini was originally made with Italian (red) vermouth (what would be called a ‘sweet’ Martini now), a Dry Martini with French (dry). Bobby’s is particularly good with its fine balance of east & west botanicals; Dolin Dry has a fresher, less oaky taste than some vermouths and so doesn’t dominate the gin.
70ml Ferdinand’s Saar Dry Gin 10ml Ferdinand’s Saar Dry Riesling Vermouth Stir over ice for 2-3 minutes, depending on ice, and strain into a chilled cocktail glass. Garnish with a lemon twist or three skewered grapes.
50ml Bobby’s Dry Schiedam Gin 25ml Dolin Vermouth de Chambéry Dry 2 dashes of bitters Stir over ice for 2-3 minutes, depending on ice, and strain into a chilled cocktail glass.
Vesper Martini Bond famously specifies Gordon’s and the long-defunct Kina Lillet for his controversially shaken-not-stirred bar call. Export strength Gordon’s, at 47.3%, is a big gin and stands up well to the twin ignominies of being mixed with vodka and bashed about the place; the more readily available 37.5% doesn’t have quite the same oomph to it and can lead to a thinner drink. We like to use Greenhook Ginsmiths American Dry Gin, which at 47% holds up to the extra dilution, and whose floral notes benefit from the extra chill from the shaking. For the vodka we use Tovaritch: a genuine Russian vodka made from organic grain, which has a crisp clean taste and a creamy mouthfeel: perfect for a Martini. Kina Lillet is the tricky bit: the recipe changed in 1986 to reduce the quinine content so the “bitter aftertaste” mentioned in the eponymous Vesper is significantly less bitter than it may have been, making Kina Lillet one of the great ‘lost’ cocktail ingredients. Various substitutes are used, but we like L.N. Mattei Cap Corse: a true quinquina from Corsica, which has a fresh, bittersweet flavour.

Following the London dry gin style, Van Wees produces this smooth gin distilled from grain with juniper berries, lemons, coriander and other botanicals, that were used in the 17th century.
KOVAL DRY GIN 47% ABV Made with a unique variety of woodland spices. Juniper and wildflowers envelop the nose, while the taste is dry, yet vibrant - clean and nuanced by emerald grasses, golden citrus, and white pepper with a round, floral body. PISCO PUNCH In Gold Rush era San Francisco, pisco from the Italia grape was the most expensive spirit a thirsty prospector could buy, costing more than gin, rum, whisky and even cognac. Throughout the late 1800s and into the 20th century Duncan Nicol, bartender at and later owner of the Bank Exchange & Billiard Saloon, used this pisco to prepare his celebrated punch, a drink which Rudyard Kipling suspected was “compounded of shavings of cherub’s wings, the glory of a tropical dawn, the red clouds of sunset, and fragments of lost epics by dead masters.” Although Kipling was perhaps a little overenthusiastic in his guesswork, Duncan Nicol was certainly secretive about the true recipe and it was believed to have died with him in 1926, in the middle of Prohibition. Speculation and research has led to numerous theories and alleged ingredients – including a few of dubious legality – but there is general agreement that the Bank Exchange Pisco Punch was made with Italia pisco and included pineapple syrup; and most recipes also include some aromatic spice. The spice can be added in a few ways: by macerating pineapple skin, by adding cloves or a dash of falernum or, most simply, with bitters. Amargo Chuncho, made from Peruvian ingredients, does the job nicely. -------40ml Pisco 1615 Italia 3 dashes of Amargo Chuncho 10ml fresh lime juice 20ml pineapple syrup Build with crushed ice in a highball glass and churn. Garnish with a wedge of pineapple marinated overnight in sugar syrup (optional)
