There’s so much to see, do, explore and discover at this 37,000-acre cattle ranch that it’s difficult to know where to begin! The Resort at Paws Up is the very definition of the great outdoors. REYKJAVÍK
STAY Arrive at Keflavík International Airport, pick up your rental car and drive 45 minutes to the capital city of Reykjavík. (Flights from the United States typically arrive in the morning.) Drop off your bags at Tower Suites, your hotel for the next two nights, before heading out to explore. On the outskirts of downtown, Tower Suites is a new hotel ensconced on the top floor of a 20-story glass office building, Reykjavík’s tallest. The views from the rooms and The Skylounge, a communal space with an honor bar and a stocked refrigerator, are spectacular.
DINE Have lunch at the nearby Reykjavík Kitchen. Start with the traditional meat stew, made with lamb, or the creamy seafood soup. Follow it up with a Rabbabararúna Nordurljós cocktail, made with Brennivín, a caraway-flavored aquavit popular in Iceland. Another good lunch option during your stay is the much-acclaimed
Sægreifinn (Sea Baron), a rustic spot known for its lobster soup. For dinner, visit the architecturally inspiring Harpa Concert Hall, with its famous exteriors designed by artist Ólafur Elíasson, and have dinner at Lóa, which serves delicious local traditional food. Another recommendation is Forréttabarinn, a friendly restaurant by the old harbor.
EXPLORE From the hotel, it is an easy walk to Laugavegur, the main shopping thoroughfare. We also recommend a visit to the Reykjavík City Museum. Highlights are the Settlement Exhibition,
built around the ruins of a historic Viking longhouse, and the oldest wooden home in Reykjavík. Another must-stop is Hallgrímskirkja, an EvangelicalLutheran church with a soaring height of 244 feet. Standing watch before it is an imposing statue of Leif Erikson, the Norse explorer.
Drive 15 minutes to the new Sky Lagoon, a man-made lagoon with a spectacular cliffside setting (be sure to book the Sky Package, which provides guests with private changing facilities). Relax in its warm geothermal waters, enjoying the

view of the harbor through the mist while drinking a glass of bubbly from the swim-up bar. After a good soak, participate in the spa ritual, which includes a cold plunge, a sauna, a cold fog mist, a body scrub, a steam room, and a shower. Before leaving, stop in the gift shop and get sustenance at the Sky Café or the Smakk Bar.
This afternoon, learn about Icelandic cuisine with the Reykjavík Food Walk. On our tour, the charming guide Dagur Lárusson led us around downtown sampling the staples of his home country: mini-tacos made with fried langoustines and a date purée, lamb medallions with parsnips and carrots, traditional lamb soup, a refreshing Icelandic White Ale from Einstök Beer and lamb hot dogs from the beloved Bæjarins Beztu Pylsur food stand, which opened in 1937.

HAUKADALUR
ON THE WAY Drive 67 miles to your first stop on the Golden Circle sightseeing route: Thingvellir National Park, a UNESCO World Heritage site and the home of Iceland’s parliament for nine centuries. With a rift valley caused by shifting tectonic plates, rocky cliffs and glacial depressions, Thingvellir is one of the few places to witness Earth’s dynamic geology in action. There are numerous
walking and hiking trails here; moreadventuresome visitors can snorkel or scuba dive between tectonic plates at the Silfra Fissure, where visibility is up to 260 feet.
STAY Across the street from the Haukadalur geothermal area is Hótel Geysir. Family-run by Icelanders, it features sizable, comfortable and modern rooms with private balconies.
DINE There are no fine-dining options near Hótel Geysir, but its casual Geysir Restaurant serves a great langoustine bisque. The Geysir Center next door contains the casual Geysir Glíma restaurant, which offers pizza, sandwiches and beer, and a high-end design store selling Icelandic-made outerwear.
EXPLORE Visit the Haukadalur geothermal area, which includes several active geysers, hot springs and fumaroles. (Strokkur puts on a good show, regularly spewing every four or five minutes.) Next, drive 10 minutes to Gullfoss, a stunningly beautiful waterfall that plunges 105 feet into a deep canyon.

DAYS 6-8
HVOLSVÖLLUR
ON THE WAY Head to Hvolsvöllur on the southern coast. On your way, stop in Flúdir, the home of the Secret Lagoon. Carved out of a geothermal area in 1891, it is the oldest natural pool in Iceland. Three geysers supply all the water in the lagoon, making it pure and clean, if slightly sulfurous-smelling.
After your soak, get lunch next door at the Fridheimar tomato greenhouse. It’s a scenic drive to Skálakot.
STAY Skálakot, a fourth-generation horse farm, hugs the mountainous slopes of the Icelandic highlands, offering views of the North Atlantic Ocean. The Master
Suite and Mini Suite are recommended. A small spa has a hot tub and sauna, and a visiting massage therapist provides treatments upstairs. The gracious hospitality here makes guests feel as though they are staying with Icelandic friends.
DINE Breakfast, lunch and dinner are served in the hotel’s 40-seat restaurant, while the attached bar offers cocktails and coffee all day.
EXPLORE Over the next two days, make Skálakot your home base as you explore the area around it. Visit
Seljalandsfoss, a waterfall with a 197-foot cascade that you can walk behind, and Skógafoss, one of Iceland’s largest waterfalls with an astounding width of 82 feet and also a 197-foot drop, both of which are nearby. Become acquainted with Icelandic horses at Skálakot; this breed is known for its small stature, musculature and relaxed demeanor. Take a guided horseback ride (arranged through the hotel) to the black beach or toward the Eyjafjallajökull glacier. The following day, drive on the Ring Road to the town of Vík. Depending on the time of year, you can visit ice caves, puffin colonies or the black-sand beach of Reynisfjara, with its striking basalt columns and sea stacks. In the evening, certain times of the year, you can see the Northern Lights.

GRINDAVÍK
ON THE WAY Check out of Skálakot and drive west toward The Retreat at Blue Lagoon. Break up the two-and-a-halfhour drive by stopping along the way to do some shopping. Just 25 minutes west of Skálakot is a woman-owned store called UNA Local Product, offering handicrafts, jewelry and gifts. Continue on toward Selfoss. Before you arrive, be sure to stop at Thingborg Wool Shop, which sells hand-dyed wool and quality knitted sweaters out of a 1927 schoolhouse. While Selfoss itself is not exactly a handsome place, a new town center contains cafés, restaurants and shops carrying local
brands. We most appreciated Motivo for women’s clothing, the Mistilteinn Christmas shop and Gallery Listasel for Icelandic art.
From Selfoss, take the southerly road along the coast to the Blue Lagoon. You will pass through an expanse of ancient lava fields and see steam rising over the mountains from the Svartsengi geothermal power station, which supplies the mineral-rich waters of the lagoon.
STAY Upon arrival to The Retreat, an otherworldly environment, you will be
welcomed with a glass of Champagne in the lobby. The Retreat has 62 rooms surrounded by the milky-blue, mineral-rich geothermal waters of the Blue Lagoon and offers a more exclusive experience away from the tourist hordes who visit the lagoon each day. Unlimited entry to the spa and lagoon is included with one’s stay. This hotel offers six categories of rooms. The top tiers, the Lagoon Suites and the bilevel Blue Lagoon Suite, have their own private lagoon, but the latter offers a steam room and sauna; Lagoon View Junior Suites are situated next to the water and have otherworldly views as well but do not allow swimming. This hotel sets the standard for luxury in Iceland.

STAY Depending on where and when you start your travels, you’ll likely arrive in Vietnam’s capital late in the evening. Check into your hotel, either the Sofitel Legend Metropole Hanoi, a longtime favorite with a classic colonial style and a garden courtyard with a pool, or the more over-the-top Capella Hanoi, which has a lavish and theatrical art deco décor but more-limited outdoor space.
DINE Vietnam is justly famed for its street food, but a notable fine-dining scene has also developed. Both Sofitel Legend Metropole Hanoi and Capella Hanoi have fine restaurants. On our recent stay, we found Gia Hanoi, La Table Hanoia and Tung Dining exciting and reasonably priced, and also near
our recommended hotels. Gia Hanoi is across the street from the Temple of Literature. Chef and restaurant co-founder Sam Tran, who worked for a decade at top restaurants in Melbourne before returning home to open her own establishment, serves up Vietnamese cuisine through contemporary recipes. The chic La Table Hanoi is on the second floor of the Press Club and focuses on gourmet French cuisine, available à la carte or in set menus. And with no fewer than 20 courses, Tung’s tasting menu is the longest in Hanoi. The acclaimed head
chef is Hoang Tung, but the restaurant’s name is also an acronym — “Twisted, Unique, Natural, Gastronomic.”
EXPLORE One afternoon, meet a guide for a walking tour around Hoan Kiem Lake and the adjacent Old Quarter; the shopping is excellent. Another day, book a private street food tour and/or visit the Temple of Literature, Hoa Lo Prison (the notorious “Hanoi Hilton” during the Vietnam War), contemporary art galleries and local craft brew pubs, as your interests dictate.

DAY TRIP (OR STAY) The new highway reduces the travel time from Hanoi to Ha Long to about two hours, making it possible to see Ha Long Bay as a long day trip. But if time permits, consider spending the night there, perhaps even aboard a traditional wooden junk, allowing for a leisurely cruise through the emerald waters of Ha Long Bay.
EXPLORE Ha Long Bay is a spectacular labyrinth of towering limestone islands rising out of the sea. Junk boat tours and sea kayak expeditions take visitors through these striking sea stacks and include meals. It is also possible to experience a guided hike in picturesque Cát Bà National Park, with its the lush and tropical rainforest.

HUE
STAY Return to Hanoi’s airport and take a short flight to Hue, Vietnam’s former imperial capital. Transfer to the Azerai La Residence, Hue, a stylishly renovated 1930s hotel on the Perfume River. The 122 guest rooms and suites feature high ceilings, terrazzo floors, private balconies and elegant furnishings made from indigenous materials. Many of the accommodations offer river views. Public areas include a lush garden that surrounds a 130-foot saltwater swimming pool overlooking Hue’s ancient citadel.
DINE Excellent French-Vietnamese cuisine is served at the hotel at La Parfum, which also offers cooking classes.
EXPLORE Spend a full day exploring Hue, starting with the immense Imperial City, a walled compound in the center. Although it was heavily damaged during the war, many of its gates, temples and pavilions have been restored, as have some of its patios and gardens. Also, visit some of the notable sites on Hue’s outskirts, including the tranquil Thien Mu Pagoda and one or two of the imperial tombs (the hillside tomb of Khai Dinh and lakeside resting place of Tu Duc are especially recommended).

ON THE WAY Transfer with a car and driver from Hue to Danang, where gleaming new hotels and apartment towers have sprouted along famed China Beach. Nearby is the Museum of Cham Sculpture, housing an arresting collection of artworks and artifacts dating from the 5th to the 15th centuries. Alternatively, detour a few miles inland to Bach Ma National Park, where hiking trails lead to picturesque pools and waterfalls.
STAY Check into the Four Seasons Resort The Nam Hai, set on a beautiful stretch of coastline between Danang and Hoi An. This lavish resort has 100 beachfront and pool villas with spacious baths that extend into private tropical

gardens with outdoor rainfall showers. Pool Villas feature private courtyard entrances, plunge pools, kitchenettes and personal butlers.

EXPLORE Make a short day trip to Hoi An, a well-preserved port town with a pretty (if quite touristy) historic center. After seeing the ornate Japanese Covered Bridge, the unofficial symbol of Hoi An, explore the city’s pedestrian-friendly streets, visiting old assembly halls and
temples and shopping in the stylish boutiques.
We highly recommend enjoying a treatment in one of the Four Seasons’ entrancing spa pavilions, built over the edge of a placid lotus pond. And definitely take the time to relax on the sand or beside the immense sea-view pool.

NHA TRANG
STAY Transfer to Danang’s airport and fly nonstop to Nha Trang, Vietnam’s most famous resort town. We recommend two hotels in the region. Six Senses Ninh Van Bay is accessible only via a 20-minute speedboat ride from town. Some of its sea-view villas have dramatic private pools hewn from boulders. Exquisite Amanoi overlooks Vinh Hy Bay, about an hour and a half south of Nha Trang by car, in a remote location on the coast of Nui Chua National Park.
RELAX Spend at least two days experiencing the amenities of your resort, perhaps enjoying sightseeing cruises, hikes, spa treatments and/or snorkeling.

EXTEND YOUR TRIP If you want to enjoy another stay on Vietnam’s stunning coastline, consider adding a stop. We recently had an unforgettable stay at Zannier Bai San Ho, a coastal resort located about 90 minutes south of Quy Nhon’s airport. It’s rich in character and offers some fascinating, culturally focused excursions. Beach Pool Villas have private ocean-view pools and direct access to the sand, and the hilltop main building has a stunning infinity pool. STAY Take a short flight to Ho Chi Minh City, known more popularly as Saigon. Check into either the Park Hyatt Saigon or Mia Saigon. The latter is on the city’s outskirts, with a large swimming pool facing the Saigon River, giving it more of a resort feel (a motorboat shuttles guests between the hotel and the city center at scheduled times throughout the day).

I prefer Vietnam from December to March because the humidity is low, the rains are not problematic and temperatures are more moderate. Remember that Vietnam is a long country, with the weather in the north (Hanoi) being chillier than in the south (Ho Chi Minh City). If you are continuing on a Mekong Delta cruise, February is the best month to capture all of it!

STAY And finally, a one-hour flight will bring you to Queenstown at the southern end of South Island. We recommend three hotels nearby. Azur, five minutes from the center of Queenstown, is terraced into a steep hillside where nine villas provide breathtaking views of Lake Wakatipu and the surrounding mountains.
Matakauri Lodge, a stylish alpine retreat, also on the shore of spectacular Lake Wakatipu, is about 10 minutes from Queenstown. Eichardt’s Private Hotel, which is right in town, has seven suites with separate living rooms, gas fireplaces and lavish baths with heated floors. For those who want to be outside Queenstown, we recommend a fourth: Blanket Bay, a splendid sanctuary 45 minutes away on Lake Wakatipu with a majestic backdrop of jagged peaks.

EXPLORE There are many ways to spend your day in town, including at The Skyline gondola or The Skyline luge or by enjoying some tandem paragliding.
For a day trip, return to Queenstown Airport for a Milford Sound helicopter excursion through the Southern Alps. This breathtaking flight will pass secluded alpine lakes, lush rainforest, brushfringed valleys and rugged mountain peaks. Land and stroll on a deserted beach in Fiordland. Fly along the fjords to the rugged west coast and view seal colonies.
Experience a glacier landing and touch down at a secret wilderness site for a memorable picnic lunch.
Local guides can also take you for a full day of sightseeing in the Queenstown region. Activities include traversing narrow canyons in a jet boat from Shotover Jet and visiting the historic gold-mining village of Arrowtown. Lunch at Amisfield Bistro with stunning views of snow-covered mountains and Lake Hayes. Then watch — or participate in — a bungee jump at the bridge where the thrill-seeking activity went commercial. It’s 141 feet into the canyon below.

Best time of year to visit Spring and fall usually offer lovely mild weather and fewer crowds. New Zealand is in the Southern Hemisphere, so the seasons are opposite ours, so it can be ideal if you are looking for a lovely break from winter weather.
When to start planning
For best availability, allow six to nine months, maybe even more, if you want to travel during the
high summer season (November –March). Many of our favorite hotels are quite small, so if you have the time to plan ahead, we highly recommend starting early to avoid disappointment!
Before you go
Read up on the country’s history and specifically the Māori people, of which New Zealand is very proud and whose history and culture this country holds in very high regard. And perhaps consider doing a New Zealand wine tasting at home to prepare for your journey of discovery as you travel through the best wine country in the world.
What to pack
Most of Mr. Harper’s favorite hotels have a relaxed dress code during the day, with a slightly elevated feel for dinners at the lodges, so keep that in mind while packing. Also, many offer more-active pursuits, such as golf, fly-fishing and hiking, so if you plan on partaking in those activities, remember to pack appropriate clothing.

This journey across Ireland encompasses the best of both worlds — a bustling city with a lively and varied dining scene and tranquil, verdant landscapes in the West Country, where visions of ancient druids come to mind. After an exciting stay in Dublin, you’ll head west to connect to rural Ireland and enjoy falconry, hiking and the Aran Islands. Then back to Dublin via a manor and a mansion, both of the highest caliber. Highlights include a Michelin two-star restaurant in Dublin, a stroll through the gardens at Malahide Castle, a boat to the Aran Islands and relaxing in castles, manors and mansions. STAY After you land at the international airport, your driver will take you to The Merrion. EXPLORE Dublin boasts numerous historical treasures, a dining scene on the upswing and several worthwhile livemusic bars and concert halls. Highlights of our time downtown included a tour of Dublin Castle and a visit to Trinity College to admire the Book of Kells, an illuminated manuscript of the four gospels of the Christian New Testament dating from A.D. 800, and the Long Room, filled with more than 200,000 of the university’s ancient books.
To escape the hustle-bustle of the city, drive to Farmleigh House and Estate, set within verdant Phoenix Park. Originally owned by the Guinness family, the property is now an official state guesthouse. The exceptional Benjamin
Iveagh Library showcases first editions of Jonathan Swift’s “Gulliver’s Travels” and James Joyce’s “Ulysses.” Another convenient half-day excursion is the pretty seaside town of Malahide. A high point includes exploring the gardens surrounding Malahide Castle where regal peacocks roam and there are hidden nooks ideal for relaxation. You could also book a culinary class at the cooking school housed within the charming town of Howth’s eponymous castle or simply walk the cliffs along the coast nearby.

STAY Wake up early and head in the direction of Galway, in Ireland’s West Country, some three hours away. This is your longest day on the road, but the drive is peaceful, well marked and straight. On the shores of Lough Corrib, 45 minutes north of Galway, Ashford Castle is set in a 350-acre woodland park. Crenellated battlements incorporate the remnants of a 13th-century castle. The 82 lodgings on the estate offer antique furnishings, rich fabrics and original artwork.
DINE The formal George V Dining Room features gourmet dishes in an
opulent setting with Waterford chandeliers, while The Dungeon is a casual bistro-style dining option for classic Irish cuisine. For drinks, the Prince of Wales Bar is delightful.
EXPLORE Set off an a fishing trip on Lough Corrib in a hand-crafted traditional wooden clinker boat. Opt for a full-day experience and you will enjoy a picnic lunch on one of the islands and the chance to cook your catch!

DAY 7-9 CONNEMARA
ON THE WAY After a late checkout, drive an hour west and stop for lunch in the quiet coastal fishing town of Roundstone, a few miles past your next hotel. O’Dowd’s Seafood Bar and Restaurant faces the town’s eponymous bay and Inishnee island beyond. Be sure to order the signature seafood chowder and, if available, the crab claws accompanied by an herbed butter sauce.
STAY After lunch, check into the Cashel House Hotel, a white manor bordered by flawlessly manicured lawns and tall woodlands. Owned by the McEvilly family since 1968, the hotel feels like a private home. Country-house style rooms have been recently renovated.
DINE At the hotel, a Victorian-style conservatory restaurant serves regionally
sourced seafood, local lamb, guinea fowl and Irish cheeses.
EXPLORE The hotel’s detailed book of the Connemara region’s magnificent trails will guide you on scenic walks. The Cashel House Hotel is also perfectly suited to complete studied indolence — relaxing in the gardens and appreciating the scenic bay views are really the whole point of the place. Those wanting to be more active can book a trip to Inishmore, the largest of the three Aran Islands. The 40-minute boat ride from Rossaveal offers magnificent water views, but the wind whips ferociously, so be sure to bring layers. The rugged beauty, the multitude of historic churches and hill forts, the majestic sheer cliffs facing the Atlantic and the austere charm of the Aran Islands make this a memorable addition to your stay.

LIMERICK
STAY Enjoy a final breakfast at the Cashel House Hotel and then drive to Adare, voted “the tidiest village in Limerick,” which is located a two-and-ahalf-hour drive south of the Cashel House. Just a short walk from town lies Adare Manor, a regal resort of the highest order set within a fairy-tale Gothic Revival-style mansion bedecked with gargoyles and surrounded by box-patterned formal gardens and the acclaimed Tom Faziodesigned golf course, which will play host to the 2027 Ryder Cup.
DINE The Michelin-starred Oak Room, with its imposing interior with glittering chandeliers, serves sophisticated Irish cuisine. A more casual dining option is the
Carriage House, a grill offering artisanal produce, local seafood and dry-aged Irish beef. Buffet breakfasts and afternoon tea are served in the Gallery.
EXPLORE Outdoor pursuits range from clay-pigeon shooting and fly-fishing in the River Mague, which runs through
the grounds, to signature activities like handling sessions with gun dogs and falconry. There is also a first-class spa and a health club encompassing two padel courts (a sport that blends aspects of tennis and squash), a glamorous indoor infinity pool, a hot tub and a state-of-theart fitness center.

COUNTY LAOIS
STAY Drive east for a little over an hour to reach the splendid Ballyfin Demesne. Regarded as one of the architectural gems of Ireland, this restored 1826 Regency mansion is owned by Chicago businessman Fred Krehbiel. Set in 614 acres of parkland, the hotel is the embodiment of sumptuous comfort. Public spaces are elegant, with a grand foyer marked by Corinthian columns and an 80-foot-long library that runs the length of the house’s south façade. Each of the 20 rooms is individually decorated with authentic furniture and original art.
DINE Meals are served in the State Dining or Van Der Hagen rooms, while a charming space set next to the well-stocked wine cellar houses a bar. You can also arrange a picnic in a place of your choice on the demesne.
