e have had a very successful year with our new teams coming together well and successfully beating our budgets with every business unit. We have seen Proficiency Healthcare Diagnostics re-accreditation by CAP and after a grueling two days of assessment with 9 separate assessors, the feedback was “Fantastic team and a great laboratory”. Wow! At Ibin Sina, we have seen our new hospital move towards opening in 2014 and our management team strengthened by the arrival of Dr. Eduard Lotz as Hospital Director, our hospital HR Manager, Jona and in the Procurement department, Jeyganesh. A warm welcome to you all. The inauguration of our latest Pharmacy, the Al Khaleej, was honored by the presence of

His Highness Sheikh Abdul Munaem Bin Nasser Al Nuaimi and was a memorable and enjoyable cause for celebration. The new pharmacy was recently re-located to the same building as the main Ibin Sina Medical Centre and we are expecting a busy and profitable new venture. October saw our latest CME event with over 2000 delegates in Ajman and another great success for Dr. Jacob and Dr. Gafoor. Our pilot partnership with Guys and St Thomas’ Hospital, also allowed us to achieve accreditation from the Royal College of Physicians and to enjoy the presentations of 4 of London’s leading Doctors. Our thanks go, as always, to the Ministry of Health and the University of Ajman. Without your continued support, this event would not be as successful. At Sharjah Corniche Hospital and the Doctors Medical Centre in Sharjah, we are excited with our plans to expand the facilities and 2014 should be significant, as we are joined by many more Doctors to continue our impressive growth. At Anglo Arabian Healthcare HQ, we continue to grow and with Preda now

running the main reception, means all visitors are met with a welcome smile and a warm greeting. With our planned engineering team and a general expansion to cope with our many new projects next year, we have taken the adjacent office in Dubai Healthcare City and this should allow us to cope with our project planning for the next few years. 2014 will see our first Reward and Recognition event in March, and I am looking forward to celebrating the incredible individual performances from 2013 that are too numerous to cover here. More than ever I am certain of our future success and with the UAE now reaching 42, together with Dubai winning the 2020 Expo the year before the UAE turns 50, we should have momentum building towards a very exciting future. After recently celebrating Eid and Diwali, we are now looking forward to Christmas before a New Year celebration that should herald some great new memories and fun times ahead. I would like to personally thank each and every one of you for your continued support. Warm Regards, Mark Adams CEO & Founder, Anglo Arabian Healthcare

14th International Two Day Ibin Sina CME Event Update On 24th and 25th of October, the Ibin Sina and AAH team along with the Ministry of Health in Ajman held a very successful 2 day CME conference in Ajman and Jebel Ali focusing on Managing Diabetes and Women and Child Health. We were delighted with the response of attendees, and had over 1500 medical & dental professionals from around the UAE in attendance. Once again, our heartfelt thanks go to Dr. Jacob, Medical Director at the Ibin Sina Medical Centre and his team for ensuring another successful CME event.

W

e were very proud to join hands with our education partner - London’s leading teaching hospital Guy’s and St Thomas’ NHS Foundation Trust, with 900 years of history and a reputation as one of Europe’s top medical institutions. We welcomed four of the hospital’s top consultant physicians in the field of Endocrinology, Women’s Health and Pediatrics to speak at the conference. In addition, we had two expert dental speakers including the past President of the British Dental Health Foundation addressing the crowd of dentists and dental allied staff. To reach out to our medical colleagues in Dubai and Abu Dhabi, we held a smaller CME conference that took place in Jebel Ali focusing on Infertility and Paediatric Cardiology. In order to further promote physician education and reach out to more healthcare professionals, we have exciting plans to expand the CME conference in 2014 with simultaneous events taking place across the Ajman, Dubai and Abu Dhabi, and eventually around the GCC.

16th International Ibin Sina CME in partnership with AAH As we near the end of a very busy and successful 2013, we soar to new heights and challenges for 2014. Moving forward we shall build on the previous 15 CME conferences and expand into Dubai and Abu Dhabi in April 2014.

T

he 16th Ibin Sina CME in partnership with AAH will run on the 3rd and 4th of April 2014. In Ajman we will run the 2-day format where as Dubai and Abu Dhabi will be half-day conferences. The theme for Dubai, Abu Dhabi and the first day in Ajman is “Blood, Vasculature & Dynamics.” The second day in Ajman will focus on “Cranio-Facial Sensory Organ Disorders.” We are further delighted to announce our recent partnership with leading cardiologists and neurologists from Imperial College London. In terms of vascular surgery, Imperial College’s research output is greater than that of Oxford University, Cambridge University and King’s College London School of Medicine combined. Charing Cross Hospital and St Mary’s Hospital, who are both apart of Imperial, have revolutionized the management of aortic aneurysms, venous disease and carotid artery disease in the last 75 years, promising for a truly leading and engaging educational experience this April 2014. On the dental side, we are still working with the past President of The British Dental Health Foundation; Dr Chris Potts, who is lining up some exciting, forefront dental speakers for us. More will be confirmed after the Christmas and New Year celebrations have passed. Due to the long-standing reputation that Ibin Sina upholds, the CME program in Ajman is renowned for attracting a wealth of delegates in all medical and dental professions that is not yet present in Dubai and Abu Dhabi. We hope that our conferences will attract the leading physicians in their respective fields in the UAE to discuss the latest advances in medicine with the goal of improving the quality of healthcare for the patients we serve

Typhoon Haiyan The AAH Donation Drive for those affected by Typhoon Haiyan was a huge success!

E

very year the islands of the Philippines encounter twenty typhoons on average. We are geographically located in the tropics and we are an archipelago of almost 7,100 islands. Vast water territory and longer rainy seasons are already part of our lives. Lessons have been learned the hard way over the past few years and the authorities did all they could to warn and people prepare for extreme weather conditions. This year another super typhoon hit us out of the blue and this time, the majority of the coastal areas were affected. The world saw the horrific aftermath of the typhoon, and it was devastating and heart breaking to witness as thousands of people lost their homes, their possessions and even their lives. Depressing images and sad stories of the calamity have flooded throughout world news channels and our nation grieved along with the rest of the world. Country to country aid began to arrive in the mainland areas and were quickly mobilized to the worst affected areas, providing homeless grief stricken families with much needed food and warm clothing. Doctors and paramedics from different parts of the globe flew in for medical missions treating those injured and lost. Stories of the survivors inspired many to respond and to take part in the rescue and rehabilitation efforts. Surrendering is not an option for those who survived. Years will be counted to rebuild the whole province, their homes, and their livelihood. But the spirit of humanity that all of us share will help them take the first steps toward rebuilding their lives, their hope and their faith. The people may have lost their loved ones, but the love and care shown to them from strangers all over the world, will heal their wounded hearts. On behalf of Anglo Arabian Healthcare, we are very grateful to everyone who heeded the call to help and donate. We have successfully collected 16 huge boxes of medicines, food items, toiletries, blankets and towels, footwear, and warm clothing. These are now on their way to the Philippines through our partnership with the Basics Global (Lisa Kingsley) and LBC Foundation for redistribution in the affected areas.

Whatever you gave and shared will bring smiles on their faces. On behalf of my “kababayans (countrymen) in the Philippines, our outmost gratitude to the Anglo Arabian Healthcare Family. Salamat Po. Eugene Quiamco, AAH Head Office Manager

Special thanks go to our food and beverage sponsor, The Rotana Hotel, Ajman who provided a delicious spread that was enjoyed and appreciated by all.

CME Registration Celebration

A

s the Ibin Sina CME Teams and central marketing team worked hard to promote the the Ibn Sina CME event, in partnership with Guys and St. Thomas’ Hospital, London due to be held at the Ajman University on 24th to the 25th of October, it was a time to celebrate when the numbers of delegates registering for the event, crossed the 1,500 target! This was largely due to the efforts of the teams that visited many Doctors to personally invite them and constant promotional updates via our Social Media networks, word of mouth and following up email invitations with personal telephone calls. All in all, it was a huge team effort that won the day and that ensured the CME event was a great success. Well done to everyone involved in organizing such a memorable CME program.

Sharjah Corniche Group Update The Sharjah Corniche Hospital has enjoyed tremendous success this year with many successful marketing campaigns and community events. The intention behind these campaigns was to reach out to the community and create awareness on common health concerns generally ignored by people due to their hectic lifestyle.

F

or October’s breast cancer awareness campaign, we encouraged both men and women, daughters and sons to show appreciation to the special women in their lives by giving them a voucher entitling them for a discounted Mammography, Breast Ultrasound and Consultation with our two Gynecologists - Dr. Shaymaa, Sharjah Corniche Hospital and Dr. Kamini, Doctors Medical Centre. We were very pleased with the response that our ‘Show Her You Care’ campaign received, and are excited to build on this initiative in 2014.

and is celebrated as one of the top 100 cosmetic surgeons in the world. Dr. Alex visited SCH in November and was fully booked for consultations and cosmetic procedures. In early 2014, Dr. Alex will once again re-visit SCH where he will not only perform cosmetic treatments but we hope to extend his visit to conduct a series of Master Classes for the professional medical community in Sharjah and the wider Emirates. In the next edition of Health Works, we will focus on Dr. Alex’s visit and share with you more details of his highly successful collaboration with SCH. 2014 is looking particularly exciting for the SCH group as we plan to expand and develop more medical services to the newly acquired ground floor, offer round the clock 24 hour medical services, open a dedicated Mother and Child department at the Doctors Medical Centre and re-vamp the Unicare Medical Centre at the clock tower, Sharjah. We look forward to welcoming our new Doctors and again, will share more information with you in the next edition of Health Works.

In November, we turned our attention to Diabetes awareness, as the UAE holds one of the highest prevalence rates of this chronic condition. Through a free Diabetes and Cholesterol screening campaign in Doctors Medical Centre, we were able to screen over 200 people in just 2 days! Those that were identified to have above range results were immediately referred to our Internal Medicine Physician - Dr. TT Joseph.

A special thanks goes out to Allan Pereira, Azza Awad and the rest of his team, for all of their continued hard work and support as we expand the group and fully intend to enjoy further success.

In November, we were pleased to bring back our visiting Plastic Surgeon - Dr. Alexander Krakovsky, who is based in the USA

We wish a warm welcome to the following team members who have joined the SCH Group since the first of September 2013:

Central Marketing Activity Update September to the end of the year is always a busy time for the marketing department with the new September school terms starting, plenty of awareness campaigns taking place in October and November for breast cancer awareness, diabetes walks and men’s health being highlighted in a rather hairy way with Movember!

This last quarter has been no exception.

T

he Amina Hospital is really taking on a busy momentum and the hospital is a hive of activity, full of workers, noise and dust! I have been busy, but happy, developing the interior design of the hospital, choosing wood types, wall colours for each of the seven floors, tiles and vinyl flooring materials as well as designing lighting plans and signage systems! I am very pleased to be supported by Declan Devery of the 360 team and Vidula who has the complicated task of listing precise details for each wall, door, floor area in a set of comprehensive schedules. For the artwork within the hospital, I am pleased to have the opportunity to collaborate with the Art Director at the Ajman University and organise a special competition where I will invite all the art students to submit their interpretation of what the essence of our hospital brand Amina, really means. Students will be encouraged to submit their artworks in any form be it oil, acrylics, pastels, digital, sculpture or animation and the lucky winner will receive a generous prize together with the runners up with their artwork displayed for all to see and admire within the Amina Hospital. More details will follow as we develop the competition throughout the early part of 2014.

New projects that the marketing team will be focused on will be the expansion of the Doctors Medical Centre in Rolla, Sharjah to provide a dedicated mother and child department, the ground floor expansion of the Sharjah Corniche Hospital providing quality cosmetic surgery and cosmetology services, gynaecology and paediatrics, the relocation of the Family Medical Centre in Ajman, the makeover of the Ibin Sina Clinic and the support of new Doctors joining the groups. I am very pleased to welcome Lejpathroy to the team as our Marketing Manager for Northern Emirates. Lejpath has over 12 years of marketing experience in India and the UAE having previously been Branding and Communications Manager at Zulekha Healthcare Group, Sharjah and Dubai for the past four years. I am sure that many of you would have seen and met him already and will join me in extending a very warm welcome to the team. O

ur team in Ibin Sina Medical Centre also held a medical camp at the Ministry of Finance, Ajman where they provided medical screenings and doctors consultations to a huge number of government employees. We look forward to more activities involving the community, and aim to spread the message of health promotion & disease prevention around the UAE.

Throughout the month of November, we focused on a chronic condition that is very relevant to the region - Diabetes. Statistics from the International Diabetes Federation report that one in five people in the UAE are living with Diabetes that can be easily prevented through lifestyle changes and early detection. Our laboratory PCL, and four of our clinics - Aaliya Medical Centre, Family Medical Clinic, New Ibin Sina Medical Centre and Doctors Medical Centre held a Diabetes campaign and offered patients free blood sugar and cholesterol screenings. We were able to screen over 300 patients across our group, and helped to raise awareness on this condition and have since, treated those that were identified with very high cholesterol readings. Another cause passionate to us is breast cancer awareness. We created the ‘Show her you care’ campaign for Sharjah Corniche Hospital and Doctors Medical Centre which urged individuals to encourage a woman in their life to put their health first and screen themselves for breast cancer. In addition, our team at PCL participated in the Cancer Wave event at the Marina Mall in Abu Dhabi to promote awareness on breast & cervical cancer. They handed out 30 free HPV DNA tests, which can help detect who is at higher risk for developing cervical cancer

This will go hand in hand with the very clear and determined vision of His Highness Sheikh Mohammed bin Rashid Al Maktoum, Vice-President and Prime Minister of the UAE and Ruler of Dubai, to transform Dubai into a popular medical tourism destination in the Middle East. “Dubai Expo 2020 will breathe new life into the ancient role of the Middle East as a melting pot for cultures and creativity,” tweeted Sheikh Mohammad, echoing the Dubai Expo 2020 theme of “Connecting Minds, Creating the Future”. An integral part of EXPO 2020 will be initiating international debates, conferences, CME events and gatherings to share the latest medical advances, share knowledge among experts, innovations, technologies and preventative disease initiatives.

This can only fortify the entire healthcare sector and assert international standard best practices, all of which can only have a positive effect on how patients perceive care and treatment in the UAE. In addition, to meet the rising demand of the UAE’s urban growth, the region will see a widespread increase in healthcare facilities from primary health centers, to niche and specialized clinics and hospitals. With Anglo Arabian Healthcare set to embark on an ambitious expansion and acquisition journey in 2014, as well as developing international CME events in partnership with global leaders and innovators, we are thrilled and excited to be a part of such an important and historical chapter for the UAE.

Leaving your child un-strapped in the car while driving is not only dangerous, it is irresponsible! Studies have revealed that around 63 per cent of child deaths in UAE are caused by road accidents, which is way beyond the global average of 22.3 per cent. What can you do to reduce this horrific statistic? Use seatbelts for everyone travelling in your car.

O

ne mother who is determined to make a change is Lesley Culley, a busy mum of two, who set up the Buckle Up in the Back campaign in May 2010 after seeing far too many children travelling without proper restraint in the back of cars. Although having child seats for children below the age of six is mandatory according to a law issued by the Ministry of Interior in 2011, according to studies around 98 per cent of parents DO NOT follow this rule. The law is not being fully enforced even at government level as some taxis in the UAE still don’t have child seats. Lesley Culley believes that there should be a 3 way approach to make a positive change in order that our children are safe and secure whilst travelling in cars. These are: 1) Have the seatbelt law introduced for anyone travelling in the back of a vehicle

PG.

2) Proper enforcement of the law 3) Continued educational awareness in schools and nurseries to explain the reasoning behind Buckle Up to get the message through to parents just how crucial seatbelts are for children’s safety whilst travelling on the roads. So what can you do to help? Ensure that you are mindful to strap your child in with a seatbelt each and every time you travel on the roads – and insist that your friends and family do the same with their children. It just might save a life…

Anglo Arabian Healthcare support Buckle Up in the Back to ensure our children are not only healthy, but safe.

Our Experience for improving Laboratory Turnaround Time (TAT) Accuracy, precision, timeliness and authenticity are the four pillars of efficient laboratory services. We as lab professionals sometimes overlook timeliness as an important attribute and instead concentrate on improving the analytical intricacies of sample processing. However timeliness, which is expressed as the turnaround time (TAT), is often used by the clinicians as the benchmark for laboratory performance. Clinicians depend on fast TAT’s to achieve early diagnosis and treatment of their patients and to achieve early patient discharge from emergency departments or hospital in-patient services. Assessment and improvement of turnaround times is essential for laboratory quality management as well as ensuring patient satisfaction.

C

linicians consider TAT from the time the test is ordered, to results reporting, whereas laboratory professionals usually use specimen receipt to reporting of results as the TAT. There are many factors which are beyond the jurisdiction of the laboratory which influence TAT. Such non-analytical delays may be responsible for up to 96% of total TAT. The perception of us as lab professionals regarding laboratory efficiency has undergone tremendous change over the last five years. We understand that the pre- and post-analytical phases are equally important for the laboratories more so where TAT is concerned. The ‘total testing cycle’ describes TAT as consortium of nine steps; • • • • • • • • •

ORDERING COLLECTION IDENTIFICATION TRANSPORT PREPARATION ANALYSIS REPORTING INTERPRETATION ACTION

TAT can be classified as pre-analytical, analytical and postanalytical depending on the different phases of sample processing. There are different ways in which each of the phases—pre, analytical and post-analytical phases can be expedited in order to achieve optimum turnaround time. The pneumatic system is a path breaking innovation that has revolutionized sample transport in hospitals. As independent reference lab, our experience in improving TAT was with other means of minimizing pre-analytical delays like adoption of ideal phlebotomy practices, bar coding of samples, enable providers to order electronically, and use of gel vacationers that reduce the delays which are caused during centrifugation. We maximized TAT of analytical phase by complete automation of our lab testing, use of machines with higher throughputs, use of plasma or whole blood samples, primary tube sampling, ensuring minimal downtime and adequacy of backup, adoption of efficient quality control procedures, automatic repeats and dilutions in case of results exceeding linearity, prompt validation of reports and auto-verification of normal results. It is also essential to monitor the TAT for selected tests in each section with benchmarking. Our staff are trained to handle urgent samples with utmost care and expedite their processing.

Dr. Rana Nabulsi

Quality Improvement Consultant, Proficiency Central Laboratories (PCL)

The post analytical phase is dramatically improved with the adoption of laboratory information services (LIS). This will abolish transcriptional errors and delays caused in report dispatch to the respective clinician. The other strategies that we adopted are prompt notification of critical values to the physicians through SMS texting. There is a customer service department to ensure devise transparent and effective communication system between the clinicians and laboratorians. It is clear from our critical self-appraisal of our laboratory services that we have improvised the analytical phase by automation, elaborate documentation and communication of critical values and recruitment of trained laboratory personnel. There is a scope of further improvement in our TAT by initiating pre analytical automated platform to support work-flow optimization from sample arrival till sample archive including bar coding, sorting, centrifugation, aliquoting and efficient delivery system to different sections with host interface and imaging system.

The Rhythms of Life An article submitted by Dr. P. C. Jacob Medical & CME Director, Paediatrician Ibin Sina Medical Centre, Ajman

T

he ticking of the old clock on that bare white wall behind my couch suddenly disturbed my afternoon pensive mood. The ticking continued relentlessly and I knew it will not stop till its life giving battery drains out. I tried to engage in my routines but the rhythmic ticking of that wall clock lingered in my mind disturbing and ushering in many more rhythms to my ears; maybe my ears are attuned to the rhythmic heart beats of thousands of children I have treated in my long career. All of a sudden I became aware of my own inner rhythms, the rhythms of my own heart and lungs. What are these rhythms? My mind started flipping through the definitions that I have learned long ago. A natural movement or change having regularly occurring alternations or ups and downs is termed a “rhythm”, whispered my poetic mind. The physical scientists call it “periodicity” and the physicians prefer the term “cycles”, but I knew all are one and the same. My senses are trained and tamed to function critically, to observe and analyze the evidence and to draw logical conclusions. So I should do more justice to my years of training, should try more to explore the “rhythms”. Rhythms are distinct and different, they are there all around in everything and everything is controlled by its own innate rhythms. Open up your eyes and ears, keep yourself fine tuned, relaxed and receptive, you will experience the “rhythms”. The world (physical) around us is constantly changing but the changes, major or minor, follow rhythmic patterns. The day and night alternates in regular twenty four hour rhythm. The moon travels around the earth in its orbit once in a lunar month creating the lunar rhythm that can influence even the delta activity of our brain during NERM sleep. The four seasons adorn our earth in an annual rhythm. Outdoor temperature usually rises during day and falls during night but the relative humidity takes the reverse course by rising during night. Even the wind velocity of a place has a rhythm, increases during afternoon and decreases during the nights.

Many plants have a nyctinastic trait that helps their leaves and blossoms to open up and close in response to various environmental cues. The lotus and water lilly flowers close in the afternoon and throughout night to open up in the next morning. The sunflower plant is heliotropic and the flower head dances rhythmically along the path of the sun. Look around; there are thousands of examples to appreciate. In Avian kingdom many activities are governed and coordinated by obvious rhythms. Many birds moult, reproduce and migrate with an endogenous circannual rhythmicity which is often modified by synchronizing “zeitgebers”. Circannual and circadian rhythmicity are well evident in birds migrations as they occur at certain seasons and during certain times of the day.

HEALTH MATTERS Volume 1 | Issue 2 |

Human Rhythms The cyclic pattern of rest and activity is universal and even our body systems down to the basic cells precisely follow this law of life. It’s now known that about a thousand different biological rhythms are active in the physiological control of human organism. Examples are many but to enumerate a few: • The lub-dub of the heart is rhythmic • Body temperature follows a diurnal rhythm • Female body temperature changes with cyclic ovulation • Menstruation is cyclic • Sleep inducing melatonin secretion is linked to the darkness of night • Pulsatile secretion of growth hormone occurs during sleep • The well-being hormone serotonin secretion is daylight responsive • The stress hormones are naturally secreted into blood in early mornings to promote physical activity • Bone marrow secretes more cells during night

The science of Rhythms In 1729, the French Chronobiologist M. de Mairam propounded that the living world has endogenous and exogenous rhythms.

December - 2013

Rhythms that are independent of the external cues such as light and temperature are termed endogenous rhythms and rhythms that stop without external cues are termed exogenous rhythms.

Zeitgeber (German for time- giver) The environmental cue that is capable of setting the phase of a biological rhythm is the phase factor or Zeitgeber.

Circadian rhythm Endogenous rhythm that continues in periods close to 24 hours is a circadian rhythm but the circadian rhythm is often corrected to exact 24 hours by a Zeitgeber. Circadian rhythm is the internal body clock evolved by living organisms to adapt to the daily cycle of day and night as the earth rotates every 24 hours. The clock is located in the Suprachiasmatic Nuclei (SCN) of the hypothalamus. Multiple genes are responsible for running the biological clock and in 2001 scientists at University of Utah discovered the first human clock gene. The genes control the biological clock by regulating the amount of protein production.

To sum up the rhythms… The rhythms abound in this Universe and may be in the Multiverse that some speak of. Our breaths and heart beats are the constant reminders of our pounding inner rhythms and a healthy and peaceful existence in this world demands a smooth synchronization of your inner rhythms with that of the nature.

COOKERY CLUB Volume 1 | Issue 2 |

December - 2013

International Cookery Club

A

s promised in the first edition of Health Works, the International Cookery Club is going to be an enjoyable part of the newsletter where members of the AAH family are invited to submit well-loved recipes to share with fellow friends and colleagues within the group. The only rule in submitting your recipes for publication is that they should be firm family favorites, come from your specific part of the world and be absolutely delectable as well as healthy!

Fresh, wholesome, healthy, rich, aromatic -- it’s no wonder that the past decade has seen Middle Eastern cuisine’s global profile skyrocketing. Here is the first delicious recipe to share with you!

Chicken with Moroccan Spices Ingredients 4 chicken breast fillets Chermoula 2 garlic cloves, crushed 2 spring onions (scallions), white part only, finely chopped 2 tablespoons chopped coriander (cilantro) leaves 3 tablespoons lemon juice 2 tablespoons olive oil 1 teaspoon ground cumin 1 teaspoon ground coriander ½ teaspoon hot paprika ½ teaspoon chilli powder

Method Cut three slashes across the top of each chicken breast no more than 1 cm (½ inch) deep and put them in a shallow dish. Combine all the chermoula ingredients and pour over the chicken, turning the breasts over to ensure they are evenly coated. Leave to marinate in the refrigerator for at least 1 hour and up to 24 hours. To make the couscous, put 250 ml (9 fl oz/1 cup) of water in a large saucepan with 2 tablespoons of oil and ½ teaspoon of salt. Bring to the boil, then add the couscous. Remove from the heat, cover and leave for about 3 minutes, or until it starts to swell. Return the saucepan to a very low heat for 3 minutes while fluffing up the grains with a fork. Transfer to a bowl and leave to cool for 5 minutes. Stir in the remaining ingredients and season well with salt and pepper.

Couscous 200 g (7 oz) couscous 4 tablespoons olive oil 4 tablespoons lemon juice 55 g (2 oz/¼ cup) pitted green olives, finely chopped 45 g (1½ oz/½ cup) toasted flaked almonds 85 g (3 oz/1 cup) sultanas 4 tablespoons chopped flat-leaf (Italian) parsley 3 tablespoons chopped coriander (cilantro) leaves

Remove the chicken breasts from the chermoula, allowing any excess to drip off. Line a bamboo steamer with baking paper and punch with holes. Arrange the chicken on top in a single layer. Sit the steamer over a wok of simmering water, making sure the bottom of the steamer doesn’t touch the water, and steam, covered, for 15 minutes, or until the chicken is cooked through. Serve the chicken with the couscous.
