t’s fitting that my first issue as your new Editor of the ANZA Magazine focuses on Singapore’s vibrant and diverse culinary scene. Some of my earliest food memories were born here. In 1980, my family left the suburbs of Melbourne and touched down in the tropics for a two-year expat stint. For an Aussie kid raised on a diet of vegemite sandwiches, meat and two veg and sausage rolls, it was like landing on Mars. Suddenly I was eating at bustling, open air hawker centres and devouring plates of fragrant fried rice and spicy satay skewers, sipping tart lime juice and digging into rainbow coloured mountains of ice kachang. My lovely ‘amah’ would cut up slices of mango, papaya and watermelon for breakfast and I fell in love with Kueh Lapis, or thousand layer cake. Incidentally, my eight-year-old daughter almost ate an entire Kueh Lapis cake herself when I introduced her to it! The mango doesn’t fall far from the tree it seems… I’m sure my early days of visiting hawker centres in Singapore set me up for a lifetime of adventurous eating. On my travels I’ll give most foods a go - I’ve sampled crocodile nuggets in Australia’s

Top End, elk in Canada and a traditional underground hāngi in Samoa. Since I arrived for my second ‘tour of duty’ two years ago, I’ve dived headfirst back into Singapore’s incredible food scene – trying as many Indian curries, fiery noodle dishes and dumplings I can. I also love sharing restaurant, café and hole-in-the-wall hawker suggestions with friends. This issue celebrates all things edible in Singapore – from revealing interviews with the island’s innovative top chefs, to eating on the healthy side (if I must!), where to find the best weekend brunches and the definitive list of the five dishes you have to try in Singapore before you leave. How many have you ticked off? July is a highpoint on the food calendar here, with Singapore celebrating the 25th anniversary of its month-long food festival. There are heaps of foodie events going on, so get out there and try something weird, wonderful and delicious. Just steer clear of durian… I’m thrilled to be part of the warm and welcoming ANZA team, and can’t wait to tell your stories. My inbox is always open.

WHY IS IT SO IMPORTANT FOR WORLDFIRST TO WORK WITH THE ANZA COMMUNITY? Joining the ANZA community is a great way for new arrivals to get to know Singapore and find new friends here. DID YOU KNOW? There are over 120 hawker centres in Singapore, with a further 20 planned to open by 2027. Although the bustling food centres are now considered a national treasure, the original street hawkers were once thought to be a public eyesore. Between 1971 and 1986, the government built indoor pavilions, in an effort to provide better working conditions and clear the streets.

We returned to Australia in June this year. I would like to thank ANZA for all the wonderful tours and walks I have participated in and especially my very enjoyable and happy times playing mahjong.

Singapore’s Funniest Woman SELENA TAN, comedian, actress and Dim Sum Dolly talks to ANZA about her latest stand-up show, Happy Ever Laughter (see calendar for details), and her upcoming role in the Singapore-set rom com Crazy Rich Asians. WHAT CAN AUDIENCES EXPECT FROM HAPPY EVER LAUGHTER? Audiences can expect a rip roaring good time, with 12 of Singapore’s top comedians going at each other in a new concept – The Battle. It will be stand-up comedy madness, where the audience will get to decide who will win bragging rights to be funniest in the land! CAN YOU DESCRIBE THE UNIQUELY SINGAPOREAN SENSE OF HUMOUR? Singapore is a mishmash of cultures and over time these cultures have seamlessly combined to produce our uniquely Singaporean sense of humour. We’re also part of a rare breed of independent, commercial theatre companies in Singapore who write and create a significant amount of original content every year. I play Alix Young, a crazy rich and stingy, but glamourous-looking Aunty; not unlike my roles as an aunty in previous MediaCorp sitcoms, except for a far bigger budget, better costumes, an exceptional director, yummier catering, professional crew, posher dressing rooms… I could go on and on. Plus, I got to work with an international cast of Asian heavyweights, including Constance Wu from Fresh off the Boat, Awkwafina from Ocean’s 8, and Michelle Yeoh from just about every movie! It was great fun filming the movie and I can’t wait for the premiere, which happens straight after Happy Ever Laughter. WHAT WAS THE LAST BELLY LAUGH YOU HAD? Kumar50, a 50th birthday celebration of Kumar, Singapore’s most iconic stand-up comedian (which I also direct) I can’t believe I’ll get to perform with him for another bellyful of side splitting aches at Happy Ever Laughter.

A key feature of the CSP is the Singapore Armed Forces being able to access training areas in Australia which equate to a land size approximately 10 times the size of Singapore itself, and annual training numbers increasing from the current approximately 6,000 Singaporean service personnel who conduct training in Australia each year, to a figure in excess of 14,000 annually.

DEFENCE SECTION The Australian High Commission’s Defence Section consists of three uniformed staff and three civilian personnel. The Section explains and promotes Australia’s Defence Policies to their Singaporean counterparts, and contributes to the pursuit of strategic interests Australia shares with Singapore. ASEAN YOUNG DIPLOMATS STUDY TOUR 2018 In May a handful of lucky participants across ASEAN visited New Zealand as part of the ASEAN Young Diplomats

Study Tour 2018. The study tour provides opportunities for young diplomats to learn about New Zealand’s governance and culture, and have a true Kiwi experience! Singapore’s participant was Benjamin Tan from the Ministry of Trade and Industry. Ahead of his visit to New Zealand, we asked him what he associated

with New Zealand: “100% Pure New Zealand! I think of agriculture and food, of high standards and good quality. I also think of your landscapes – I wish Singapore had the kind of scenery you have in New Zealand.” Benjamin said he was looking forward to experiencing the different seasons in New Zealand.

DISCOVERING NEW ZEALAND’S FILM INDUSTRY

This year’s Taste New Zealand was another rousing success, jointly organised by New Zealand Trade and Enterprise and Cold Storage. The annual event, which showcases the range of New Zealand premium food and beverage products in Singapore, saw a number of new Kiwi products being introduced to consumers here for the first time. Food and beverage exports are a key feature of our bilateral trade relationship with Singapore and we are pleased that New Zealand products continue to grow in popularity. Plus it is always nice to have a little taste of New Zealand readily available for the homesick Kiwis amongst us!

The New Zealand film industry is known for its internationally acclaimed films such as The Lord of the Rings trilogy, Avatar, and more recently, Hunt for the Wilderpeople and Waru. However, very few are aware that the 2007 sleeper hit The Tattooist was produced through a collaboration between New Zealand and Singapore. With this in mind, Chris Payne, Head of International Relations at the New Zealand Film Commission was recently in Singapore to provide industry leaders an overview of potential opportunities to bring Singaporean film and television projects to life with production and post-production partners from New Zealand. Here’s hoping that we get to see more Singaporean films with a little Kiwi edge in the near future!

New Zealander, Dean Brettschneider, 49, is one of the world’s leading bakers, Alongside regular TV appearances and 12 best-selling baking books, he’s the brains behind Baker & Cook - a cosy neighbourhood chain of bakeries, where swarms of locals and expats line up daily for fabulous coffee, brunches, fresh artisan bread and glistening globally-influenced baked goods – from Aussie lamingtons to Italian bomboloni doughnuts and fluffy English scones.

ore recently Dean has opened Plank Sourdough Pizza and a new burger bar venture Moe and Joe’s, as well as returning to his teaching roots with Brettschneider’s Baking & Cooking School.

COUNTRY COOKING Dean’s passion for food was born in his small rural hometown, Waikuku Beach, 30 kilometres north of Christchurch, where residents pickled, baked and home-cooked regularly. “My baking really did start with my grandmother and mother’s weekly biscuit tins,” says Dean. “On Sunday they baked for the week; cakes, cookies and slices. That was born and bred into me. ” When the local baker needed an apprentice, Dean signed up and found his calling. After stints in Europe to hone his baking skills, three years running award-winning Windsor Cakes bakery in Dunedin and time in research and development, Dean was ready for something new. After visiting a friend in Singapore he had a lightbulb moment to open a bakery here.

RECIPE FOR SUCCESS Back in the early days of Baker & Cook, Dean had enough time on his hands to run ad hoc cooking classes after hours. “When I got to Singapore, I had one little bakery in Hillcrest Road, and to fill my day in I started doing baking classes in the back room. From 4pm in the afternoon until 3am in the morning, the place was relatively empty. So, I pushed tables aside and randomly put on my newsletter for people to come and bake with me, first in, first served.” Teaching came naturally to Dean. “I taught part-time at the local TAFE when I was in my twenties. From a young age I had it in me to share my knowledge about baking and cooking – which only grew as I moved into commercial test kitchens, wrote cookbooks and found myself in front of the camera.”

BUILDING A BUSINESS As Baker & Cook took off and Dean opened more stores, he found himself getting too busy to run baking classes, despite demand from his customers. When a former beauty salon came up for rent behind his Hillcrest bakery, Dean snapped it up. “Baking was on the rise,” says Dean. “People wanted to learn how to bake, so I decided to put a school there.”

BEST IN CLASS Brettschneider’s Baking & Cooking School now offers a range of classes – from Classic Cakes to Proper Pies and Tarts, Vegetarian Cooking and Healthy Eating. “I’ve got a great team of tutors, bakers and cooks that work with me and we limit our classes to maximum 15 participants, so you go away with not only the recipes, but hands-on experience. We tailor make our classes and cater to all levels of experience.” Baking remains the main drawcard. “Baking is a global phenomenon now. But when I published my first baking book 18 years ago, baking wasn’t trendy. In fact, it was the last thing that people wanted to do!” laughs Dean. “Now, baking is by far our most popular set of classes. We offer bread baking, sourdough, advanced bread baking, grains, deli style, sweet breads, eclairs, mousse cakes, Danish pastries and croissants…we uncover all aspects of baking.”

NEXT VENTURES After mastering baking and pizza, Dean is biting into the burger market. “We’re opening a new venture called Moe and Joe’s Sourdough Burgers in Greenwood Avenue,” says Dean. “It’ll be a small burger joint focusing on good, honest burgers with an oldfashioned hamburger bun, with maybe 10 per cent sourdough in it.” Dean isn’t a fan of the soft burger bun. “It’s become fashionable to make burger buns out of super sweet brioche doughs, and then you need a soup spoon to eat it because it’s drenched!” he says. “We’re going to deliver our burgers to you in a good state, with a bun that doesn’t fall apart in your hands. You can add sauce, and as many gherkins as you like afterwards!”

FAVOURITE COMFORT FOOD? I love cooking spaghetti bolognaise, that’s from my flatting days. One pot of spaghetti bolognaise went for three days and you can always add your own touch to it.

KEEPING IT SIMPLE Baker & Cook continues to grow, with more stores planned in Singapore, Saudi Arabia, Abu Dhabi and Kuala Lumper, as well as three existing stores in Manila. Dean says the recipe for business success is simple. “My business philosophy has always been about local neighbourhoods, and people. My food philosophy is about being honest. Baking ingredients are so straightforward – flour, butter, sugar – I just try to keep things simple, combined with some fun. Not too complicated.”

SINGAPORE’S FOOD SCENE Dean finds Singapore’s food scene exciting. “It’s a foodie heaven. We’re lucky to have everything on our doorstep here, from fine French food, Indonesian, Italian, good hawker food. That’s what I really like – the incredible variety. I do try not to allow my product to be influenced by local flavours though. People come to me because I offer the very best of lots of tastes from around the world. You won’t see me baking up a local bun or soft bread. One of our biggest days of the year is Chinese New Year and my customers don’t come for pineapple tarts, they come to get away from pineapple tarts!”

INGREDIENTS: 200g soba noodle 160g silken tofu 2 cups vegetable stock 1 tablespoon miso paste 2 tablespoon mirin ½ tablespoon oil 70g edamame 500g enoki mushroom 2 stalks spring onion

JAPANESE VEGAN BOWL Chef Jenna White Serves 2

Ginger Ponzu 1/2 tablespoon rice wine vinegar 35ml mirin juice 1/2 lime 1 teaspoon freshly squeezed lemon 25ml soya sauce or tamari 1 teaspoon grated ginger ½ tablespoon water Pickled Ginger 10g wakame – rehydrated Togarashi – to garnish Lime wedge – to garnish 50g ginger 50g rice vinegar 10g sugar Pinch salt

To pickle the ginger – on a mandolin finely slice the ginger. Place a small saucepan of water onto the heat and bring to a boil. Blanch the ginger for 15 seconds and drain though a fine strainer. Mix the vinegar, sugar and salt together and stir the hot ginger into the vinegar. (This can be done up to a month in advance) To prepare the ginger ponzu – place all the ingredients into a jar and shake well to combine. Store in the refrigerator until needed. To prepare the miso broth – place the vegetable stock, miso and mirin into a small saucepan and bring up to a boil. Set aside to keep warm until ready to serve. Cook the noodles as per the directions on the packet. Run under cold water and place to the side. Cut the tofu into 1 ½ cm cubes and place aside. Slice the spring onions on an angle and place aside Place a small pot of water onto the boil. Blanch the edamame for 10 seconds then refresh in iced water. Drain and place aside To assemble the bowl – divide the noodles between the two bowls. Place a ladle of the miso broth over the noodle stack. Top with the tofu, spring onion, enoki mushroom, edamame and drizzle with the ginger ponzu. Sprinkle with the togarashi powder and finish with a wedge of lime

Patrick Taylor, Secret Men’s Business

Patrick has been Captain of the Secret Men’s Business (SMB) group for many years and has been instrumental in charity work such as the ANZA Melbourne Cup Day and weekly golf fundraisers. In partnership with ANZA Action, SMB have recently upgraded the counselling rooms, outdoor spaces and girl’s dormitory at Melrose Children’s Home. WHAT DOES THE ANZA COMMUNITY MEAN TO YOU? It’s a fantastic organisation - there is something in ANZA for everyone. New arrivals to Singapore often don’t have any or much of a social network and ANZA definitely offers assistance to the settling in process. I was both surprised and humbled to receive this award, as I know there are many very good people who volunteer and do excellent work amongst all the groups.

Seeing the look of excitement and amazement on someone’s face when they complete a ride they previously thought was out of their reach, or they learn a new bike skill which helps grow their confidence and empowers them. The appreciation and the growth in the community as a result of my efforts is amazingly rewarding in itself and something which continues to inspire me to do more.

Skye has worked tirelessly over the last few years to make ANZA Nippers a reality. Under her leadership the Nippers community has built a club of over 120 kids and 230 parents. Skye’s efforts have ensured the kids enjoy a safe water environment as they learn valuable surf lifesaving skills. WHAT DO YOU LOVE MOST ABOUT VOLUNTEERING? I’m surrounded by lots of special and interesting people that give their time and energy to continually creating and growing our group. I get to see the best of humanity in action. WHAT KEEPS YOU GOING WEEK AFTER WEEK? I truly love seeing every single one of our kids competing in our All Ages Relay at the end of the session. Bringing our whole group together and seeing them having fun together just makes me happy. I grew up by the beach and this has given my kids a little piece of home-away-from-home. Every week at Nippers there is always someone saying thanks and how much they enjoyed themselves. Hearing feedback and seeing smiles helps you stay the course and realise you’re part of something bigger that gives back to so many people.

Balancing Act Sonia’s Beautiful Beetroot Relish INGREDIENTS: • • • • • • • • • •

500g beetroot, peeled and grated 200g brown onion, finely chopped Zest of ½ orange 3 tablespoons apple cider vinegar 1 tablespoon water 1 tablespoon honey ½ teaspoon cinnamon ½ teaspoon ginger ½ teaspoon cumin Himalayan rock salt and pepper to taste

Australian Nutrition Consultant Sonia Osbourne shares her healthy eating philosophy to take your body and your tastebuds to a happy place.

W

ith a busy private practice and 11-year-old twin boys, Nutrition Consultant Sonia Osbourne is an expert in fuss-free, healthy family eating. She shares her tips for eating whole foods, shopping for good quality produce and finding the right balance at the table.

What is your personal healthy eating philosophy? Embrace whole real foods that are as close to what nature intended as possible. Think plant foods, complimented by protein, good fats and moderate amounts of unprocessed, starchy carbs.

What drew you to working in nutrition? I have always been fascinated by nutrition, from the moment we studied it in school. My passion for nutrition has also flourished from my own health journey. Undiagnosed gluten intolerance meant I had years of digestive issues, migraines and anxiety from a young age. All of my learnings and study has now enabled to me to be a healer.

How do you help expats make good food choices? I often ask people to drop the wording “good”, “bad”, “low carb” and so on, and just start eating foods that nourish them. They then start to lean towards more whole foods, versus processed options. I also embrace “progress not perfection” to help create new lifestyle patterns as opposed to a short-term diet. We look at their current eating habits, wellness needs, and start ‘swapping’ for more nutritious choices, like substituting a chocolate bar for a handful of nuts and an apple.

What are the biggest challenges of eating well in Singapore? The majority of food you buy in Singapore is imported, so freshness and cost can be challenging. It can also be tricky to find a one-stop shop. Rather, you have to visit numerous places to get all that you need. It can be a little challenging at first, but once you find your rhythm and a routine it will be become easier.

What are your tips for sourcing good quality meats? There are many great outlets and on-line delivery services for imported grass-fed meats that are hormone and antibiotic-free. Some expat favourites include Hubers, Swiss Butchery, The Butcher, Ryan’s Grocery, Oh Deli, The Fish Wives and many more. Purely on-line providers can sometimes offer better prices and convenience, including Sasha’s Fine Foods, Straits Market, The Meat Club and NZ Fresh.

How can expats find good quality seafood? There are some great outlets for wild caught and ethically farmed seafood. The Fish Wives, Sasha’s Fine Foods, Straits Market, The

Alaskan Guys, Oh Deli and others offer good choices. You can also seek-out a trustworthy fish monger at a wet-market who may be able to point out the wild-caught options.

Where is the best place for expats to buy good fruit and veg? The wet markets can be wonderful for fresh produce. They can often be very fresh and more affordable than the supermarkets. If you start to go regularly you will start the know the stands that look fresh. I also recommend that you ask for the “country of origin” and ideally avoid produce from China. Always separate the fruit from the vegetables to make them last longer – if you put them together they will ripen faster. There are also some fabulous on-line offerings like Open Taste.

What are your favourite more exotic local, Asian fruits and veg? There are many local fruits and vegetables that you can benefit from. Dragon fruit are rich in antioxidants, vitamin C and loaded with fibre. Okra are also a source of Vitamins B and C, plus a fabulous pre-biotic for digestive health.

What are your tips for healthy eating at a hawker centre? Choose steamed or lightly stir fried options, rather than deep fried or thick sauces. Steamed fish with stir fried greens is always a good choice. Water or iced, unsweetened tea is best.

Is it worth buying organic food in Singapore? I personally recommend buying organic produce for those items declared as the “Dirty Dozen” which have the highest pesticides. Use a quality fruit and vegetable wash to minimise your exposure to harmful chemicals, such as ETL’s No. 9 – All Purpose Green Formula.

Do you have favourite healthy cafes in Singapore? Carrot Sticks and Cravings, Rebel Food Kitchen, Grain Traders and many more!

What are your tips for healthy family eating? How do you eat/feed your own family at home? Embrace vegetables! My family isn’t vegetarian but the majority of every meal is vegetables. They are vital for wellness.

Singapore has some of Asia’s best home cooks and a huge foodie culture, what do you think the contestants will bring to the MasterChef kitchen? They’ll bring with them exactly that home cooking prowess and a diverse culinary arsenal spanning across multiple cultures. On top of that, I wish to see ‘spark’; something in contestants that makes them step outside their comfort zones and in turn, grow. No one grows when they stay within their comfort zone. What sort of a judge do you hope to be? Tough or a big softie? I’m just going to be myself. In real life, I am patient and communicative. I always start by giving full benefit of the doubt, and try to truly understand why someone has chosen to do something. I can be tough when someone is arrogant or chooses to get defensive: but once they let me get through to them, I’m a big softie. Who is your favourite Aussie MasterChef judge - Gary, George or Matt? George (Calombaris) tickles me the most with his cheesy puns and low-spice tolerance. What is the dynamic of the Singapore MasterChef judges? Audra is the warm one. She’s always the first voice to welcome the contestants to a new week, and to reassure them when times are tough. Damian is the father figure, who everyone would look up to for his depth of experience with traditional cuisine and classic techniques. Then there’s me - who is the youngest judge. I see my role as being someone to help cut the tension with dumb jokes. Jokes aside, I’m there to lend a fresh

perspective to the judging, coming from a culinary background that is innovative and rule-breaking. Why did you decide to do modern Middle Eastern food in Singapore when you opened Artichoke? I opened Artichoke in 2010 - back then no-one was being inspired by Middle Eastern flavours. But it was already happening for a long time in the Australian café scene. I was born in Singapore, but lived in Brisbane for seven and a half years, from when I was 22, studying a bachelor’s degree in Hotel and Tourism management and then working as the sous chef in a Greek café. I was surrounded by Habibis – my best mate was Arab, my housemate was Iranian. My Iranian housemate’s mum would come over and visit and I would just cling onto her every day and help her cook. I learned how to cook from their Mums. Are you inspired by Australian food? What I picked up in Australia was very special. The Australian café scene is incredibly diverse and there’s a lot of Middle Eastern influences in café food. You see things like eggs with dukkah, or grain salads with labne. It’s something we haven’t seen in Singapore, until quite recently. With Artichoke the statistics were against me anyway – many restaurants fail in Singapore – so I wanted to be as different as I could. You succeeded with Artichoke! By the skin of my teeth! Not everything I’ve touched has turned to gold. For every success, I’ve had three failures. I’ve had other businesses that haven’t worked out and that I’ve lost a lot of money on. You

learn your lessons and be more careful in the future. Are you a rebel with food? Some people call it breaking the rules, some people think of it as being humorous. To me, it’s just my style. I cook what I like to eat and I have a bit of a sloppy streak - I love eating dude foods. What are dude foods? Dude food is stereotypically associated with being masculine: things you would find in a frat house like pizza, tacos, burgers, ribs, smoked foods… junky, delicious things. But it’s a misconception that I’m all about dude food. I’m not. My menu at Artichoke features lots of salads and fresh mezzes, not all of them are dude-ish. Having said that our menu has undertones of cheekiness. We serve a pork collar with a cola sauce and a ‘Beet Mac’, which is a play on a Big Mac, only it’s beetroot falafels with a cheese sauce. What’s life like outside the kitchen? I have a daughter who’s one and a half, Gemma. My wife Roxy is a superwoman. I come home exhausted at 11pm and everything’s done. I do not cook at home. I have the worst home kitchen – it’s an open kitchen that looks good, but the moment you fry one egg the whole house smells like oil. Luckily the food is really good here in Singapore around the clock.

SINGAPORE FOOD STORY

YOU MIGHT BE FAMILIAR TO MANY ANZA MEMBERS AS A SOCCER MUM? Yes! All three of my boys play football. Kieran (14) has been playing for about 10 years now, Conor (11) for six years and Jamie (9) for two. I’ve been team parent and team photographer, and they’ve travelled overseas to play - last year Kieran played in Spain. They’ve made great friends playing at ANZA and they all look forward to their games.

WHY WAS YOUR FAMILY ORIGINALLY POSTED TO SINGAPORE? We moved to Singapore for my dad’s work. He was a Qantas pilot who retired in 1987. After nearly a year of being bored out of his cranium, he learned through the newspapers that SIA was taking retired pilots under the age of 60 He applied and was accepted, so in 1988 we moved here from Sydney. I was 15 at the time.

YOU’VE LIVED IN THIS HOUSE BEFORE? The house we live in now isn’t actually a childhood home, but I was living there with my parents in the late 90s. When we took over the company from my parents, it was just easier to stay where we were. We’ve made the space our own now.

WHAT ARE YOUR FOOD MEMORIES OF GROWING UP HERE? It was the best! I used to train dogs here with the German Shepherd Dog Club, and every Sunday after training we would go - dogs and all - to a different hawker centre for lunch. I got to try a huge range of food from intestines, to frogs, to squirrel. I reached a point where I stopped asking what anything odd actually was. I either liked it, or I didn’t!

HOW DID RED GUM COME ABOUT? My mum started the company in 1989 when she saw a gap in the market here. In Australia she had been catering manager for stockbrokers JB Were & Son. When we moved to Singapore she 40 anza

saw none of the brilliant Australian products we all take for granted, and decided to remedy that by importing vegetables from Perth. When Roland and I took over the company in 2001 we had one driver, one truck, one merchandising lady, and a book keeper. We did less than 10 deliveries a day. Now we have a food production factory at Senoko and over 60 staff.

WHAT DO YOU LOVE ABOUT WORKING IN THE FOOD INDUSTRY IN SINGAPORE? I love seeing the change from when I first arrived. Back then the only place to have a cappuccino was a five star hotel. In the 90s I once paid $15 for a cup! Singapore is now such an incredible, vibrant food city because Singaporeans genuinely love food and travel. lena Scherer, Director of Red Gum Foods, has lived in Singapore for 30 years – the longest she’s lived in any country. Having gone to school here as a teenager, she attended the University of North Dakota and returned to the island in 2001 to run her parent’s food importing business with her husband, Chef Roland Scherer. From her leafy Upper Bukit Timah home, Elena shares her connection to ANZA and Singapore’s food industry.

HOW DO YOU ENJOY WORKING WITH YOUR HUSBAND IN THE BUSINESS? Roland says that if anyone told him he would be working with his wife one day, he wouldn’t have believed them! He’s really taken on driving the company with new ideas and concepts. When we started the company was straight up food importers. Now we produce our own antipasto, import olives direct from Greece and marinate them here to our own recipes, create salads, dressings, and all kinds of deliciousness!

HOW DO YOU LIKE TO CHILL OUT WITH THE FAMILY? At home! After a crazy week of running around with work and the boys, and whatever else is going on, sitting down at home with a nice glass of wine while Roland prepares dinner is the best. I like to sit at the bar and chat with him while he cooks. It’s our time to reconnect and relax.

When we do go out our favourite place is a French restaurant Bar-A-Thym on Gemmill Lane (www.bar-a-thym.sg) where Chef Francois always impresses. His menu is creative and interesting, and he has an awareness of sustainability that is fabulous to see. Greenwood Fish Market is great for fresh seafood – I buy my fish or seafood there on a Friday afternoon. We are also crazy about Crystal Jade at Holland Village. You’ll find us there at Sunday lunchtime nearly every weekend. It’s not the fanciest joint in town, but the food is consistently good.

I love making salads and vegetable-based dishes. I’m a bit hooked on www.foodandwine. com for their creative recipes and easy search engine. But Roland cooks everything, really. He makes a brilliant soufflé, his consommé is too delicious for words, and don’t get me started on his hollandaise.

What’s your food philosophy? Fresh, tasty, healthy and occasionally very, very decadent. It’s no fun being good all the time!

TOP TANDOORI Once we’ve nibbled on the pretty glutinous rice creations, cooled off with a swim and had an afternoon siesta, it’s time to search for our first meal, and we’re certainly spoilt for choice. Every cuisine imaginable is available here –from Indian to Nonya, Chinese, seafood and hawker fare. It’s hard to know where to look as we wind through the busy streets and laneways in search of North Indian restaurant Kashmir (105 Jalan Penang). This gorgeous heritage zone is crammed with historic shop-houses, famous street artworks, gilded temples, Neoclassical churches, mosques and opulent mansions. Known as one of Penang’s best Indian restaurants Kashmir doesn’t disappoint – the famed tandoori chicken is smoky and succulent, with excellent crispy naan to dip into a fiery vindaloo.

Food is also on the menu and we satiate mid-morning hunger pangs with a just-out-of-the-oven flaky egg tart and refreshing street side fruit juice. Vibrant fusion café China House (153 & 155 Beach Street, 183B Victoria Street George Town) is our lunch stop. This compound of three interlinked heritage buildings includes a café, restaurant, art gallery, shop and bakery. The menu is Western, with an Asian/Middle Eastern twist, but plenty of people just come for coffee and cake. It’s hard not to press your face against the glass display of towering cheesecakes, layer cakes, tarts and brownies. In the end, I resist the siren song of cake for a special bento box with small, perfectly balanced portions of meatballs, crisp apple and pomegranate salad, rice and enoki mushrooms. The bento bites revolve according to what’s in season.

TROPICAL SPICE GARDEN

In the cool of the morning we head out on a private walking tour with experienced local guide, Joann Khaw, from George Town Heritage Walks (016-440 6823). Joann starts with an overview of the history of Penang, then takes a leisurely pace around the streets, stopping to reveal more about the architecture, art, food and bars and traditional local produce like perfumes, oils and spices. Joann makes a point to step off the tourist trail and after just a few hours with her we feel like we’ve really cracked the surface

On our third day we visit the Tropical Spice Garden Cooking School (tropicalspicegarden.com), located on the tranquil white sandy beaches of Batu Ferrangi, about a 20-minute drive from George Town. Before hitting the kitchen, we meet up with a guide who takes us on a tour through lush, landscaped jungle gardens, set over eight spectacular acres. Along with spotting a snake coiled in a tree, we taste from the spice terraces, drink a lemongrass herbal tea in the heart of the jungle and wander through 500 species of tropical flora

and fauna. Even without the cooking class, this would make a lovely outing. At the top of the hill lies a small, purpose-built cooking school, where we’re faced with our own cooking station and a menu we’ll later devour for lunch. Our patient and calm teacher, Jamie, is a classically trained French chef, but she taps into her family favourites with recipes for coconut rice, Chicken Rendang and Buah Melaka (Onde-onde). We quickly learn how to milk a coconut and use local flavours like pandan, lemongrass, kaffir lime leaves and candlenut. It’s not long before we’re sitting down to plates of rich rendang, coconut rice and gooey green balls of Buah Melaka, filled with a burst of sweet palm sugar.

SAVING THE BEST TO LAST On our last night we decide to visit Seven Terraces’s highly rated in-house restaurant, Kebaya (kebaya.com.my), which fuses “traditional Malaysian flavour profiles with Vietnamese lightness, Thai spiciness, and traditional French cooking styles.” Enjoy a pre-dinner cocktail in the refined, colonialstyle adjoining bar, and then head to your table for a fourcourse menu: To Begin, Protein, Greens and Dessert. Envelopes of betel nut leaf arrive filled with toasted coconut, shrimps, lime, cashew and Norwegian salmon roe, followed by 72-hour sous vide Australian beef shoulder, glazed with tamarind and gula melaka and finished with egg custard, spiked with pandan essence and served with sugar snaps. Confession time; we came back another night for a late night supper of warm chocolate fondants and vanilla ice-cream! Aren’t holidays all about the food?

We’ve all seen those colourful scenic pictures of green rice paddies tended by farmers wearing traditional conical hats, but I wanted to do a more muted black and white photograph. Vietnam’s countryside is filled with rice fields, and the cities with rice dishes. However, we have to keep in mind how extremely hard the rice harvest is for the farmers. So appreciate your rice dish and remember where it came from!”

ROSEMARY OXLEY “My family and I had the opportunity to visit Xi’an in China, home of the Terracotta Warriors. This massive tomb of over 8000 soldiers, 130 chariots and 520 horses was sculpted for the first emperor of China, Qin Shi Huang, with the sole purpose of protecting him in the afterlife. Each soldier’s face is uniquely carved with different characteristics and expressions, almost like individual fingerprints. It’s truly a staggering sight to behold. Amazingly, this tomb is over 2000 years old and was only unearthed in 1974 by unsuspecting local farmers who were digging around for a new well. Imagine their surprise! This photo was taken with my Canon EOS 80D 18-135mm F/5.6 1/400 and ISO of 6400. Yes, the light was not great indoors (the soldiers are protected in a covered pit) so I had to bump up the ISO, hence the photo is a bit grainy.”

ward-winning Melbourne author Alison Stuart looks at ease in Violet Oon’s glamourous Peranakan restaurant, National Kitchen – located in the National Gallery overlooking the Padang, and complete with marble floors, dark wooden fittings and plush heritage interiors. The author is in town to undertake research for her upcoming historical thriller set in Singapore, the first of an initial two-part series called the Harriet Gordon Mysteries under the pen name A.M. Stuart. The 59-year-old has scored a career breakthrough most writers can only dream of, being signed by top US-based literary agency Marsal Lyon, and landing a contract with Berkley Penguin – an imprint of Penguin Random House, known for spotting new talent and building author’s into global franchises. The deal is for two books initially, though Alison says with a gleam in her eye that she envisages six. The series begins with Singapore Sapphire, a whodunit set in 1910 colonial Singapore featuring wily protagonist Harriet Gordon - a former suffragette working as a private secretary. When a client is murdered, enigmatic Detective Inspector Robert Curran enters her life and shakes it up. The follow-up novel will be published in the United States in August next year. Alison’s ‘overnight success’ didn’t come easily. A former lawyer before becoming a full-time writer – she has eight full-length historical romances already under her belt. They include By the Sword, which won the 2008 Eppie (electronic publishing) award for best historical romance.

Hard-working Alison is a former president of the Romance Writers of Australia. Alongside her Harriet Gordon Mysteries, she’s also currently working on two historical novels for Harlequin Australia, set in the Victorian goldfields. The genesis of the deal that has seen her set to crack the American market began in Singapore nearly two decades ago - in a group creative writing exercise at one of the monthly meetings of the ANZA Writers’ Group. “I remember vividly sitting in an airy room in fellow member Rebecca Poston’s black and white house near Kent Ridge. It was early evening and I could hear the cicadas. We were doing a murder thriller exercise dreamt up by coordinator Julie Vellacott, and I found myself writing a character who became one of the protagonists in my Harriet series, Detective-Inspector Curran.” Alison - who has travelled back to Singapore several times since repatriating to Australia in 2003 - was in the National Library looking at a 1905 front page of The Straits Times when inspiration for her book struck. “I saw an advertisement for a woman proclaiming her services and that she could undertake shorthand. In capital letters, it also said: ‘ABSOLUTE SECRECY AND CONFIDENTIALITY ASSURED’. It just called to me that there was a story in there.” Alison, who with her husband David has two grown-up sons, adores her return visits to Singapore. “Every time, there is a familiar sensation of walking into hot cooking oil and cotton wool as soon as you leave the airport terminal, and you sigh, and say, ‘we’re home again’.”

he sweeping city views from the 43rd floor of contemporary Italian fine diner, Zafferano are breathtaking, especially at night. But on this occasion, I’m not stopping to admire the twinkling lights of the CBD from the plush, sky-high dining room. Instead, I’m frantically pressing the lift button in an attempt to beat the guest of honour to the table. It’s my friend’s surprise birthday and we’re supposed to be seated before he arrives. When I do (just!) make it to my seat before the birthday boy, the evening unfolds seamlessly. The service at this sleek restaurant is impeccable. Baskets of curry, rice and seaweed crackers

provide umami crunch with our predinner bubbles, followed by an entrée of delicate deep fried egg yolk, sitting atop green cabbage, raisin and pine nut stew. Wine is a focus here – literally surrounding diners with floor-to-ceiling glass bottle racks. Next on the tasting menu ($108 for a selection of four courses) is the house made ravioli, stuffed with potato and drizzled in a lick-the-bowl-worthy pecorino cheese sauce and lamb ragout. The main course is a choice of fish or roasted suckling pig, and I choose the perfectly cooked pan roasted Australian seabass, served with Mediterranean sauce, and only experience a small pang of food envy at the salty crackling being devoured across the table. Just when I think I can’t fit in another bite, dessert arrives – a beautifully plated chocolate mousse or ‘cremino’ dusted with moreish chocolate crumbs, slivers of sweet watermelon and palette cleansing watermelon sorbet. It’s the perfect sweet finish from a class act. – Pip Harry

was a surprise to discover that Paris Baguette, with its fragrantly delicious array of French boulangerie and patisserie items, is a South Korean conglomerate headquartered in Seoul. Since 1945 it has been delighting regulars with its innovative creations, eventually venturing forth to other countries, including seven outlets in Singapore, at Wisma Atria in Orchard Road, Bugis Junction, Hong Leong Building at Raffles Quay, JEM at Jurong East and Changi Airport, with more slated to open here. For a quick breakfast, a sandwich and coffee fix or a relaxing afternoon tea sojourn, Paris Baguette attracts. One of my favourite items is their delightfully buttery croissant, with or without a filling added (ham with salad is especially good). Chefs bake fresh loaves of bread daily at each location, with baguettes made in the traditional method using French flour. Paris Baguette’s signature item, apart from the baguette, is their milk pudding. Steamed daily, the creamy pudding is available with a whisper of caramel or seasonal tastes. Other items rotate, including various salads, pound cake, strawberry shortcake, plus a unique and most attractive strawberry and watermelon cake. – Raelene Tan

This zucchini and mozzarella salad is so fresh and light, but also super tasty and easy to make. We serve it at The Assembly Hall and it’s always so popular. Sometimes I just eat it on its own for lunch, but it’s also delicious as a dinner with some simple grilled fish or chicken. I like to cook dishes that are full of flavour, easy to create and don’t require an expensive or extensive list of ingredients. Living in Singapore, I prefer fresh and light meals.

Zucchini Salad with Mozzarella

INGREDIENTS

METHOD

Serves 4 as a side dish

Shave the zucchini with a potato peeler, working from top to bottom to create long strips, so each strip has a sliver of skin and soft, pale green flesh. Work your way around the zucchini until you only have the soft inside of the zucchini left. (Note: you don’t need the rest of the zucchini for this recipe but save it and chop it up to use in something else). Put the zucchini strips aside in a colander to drain slightly.

2 large zucchini 1 spicy red chilli 1 ball buffalo mozzarella Zest of 1/2 lemon Handful of toasted pine nuts Handful of fresh mint Drizzle of extra virgin olive oil Squeeze of lemon juice Salt and pepper to taste

Next, drain your mozzarella ball and squeeze all the moisture from it. Thinly slice your chilli and finely chop your mint. When you are ready to assemble your salad, pat the zucchini dry with some kitchen towel to stop it from making the salad watery. ed up with being seduced into buying a new phone every couple of years and determined to hold onto the one I currently own – I took myself off to the ornate zillion dollar gadget store with the fruity logo on Orchard Road. A preppy assistant with a dazzling smile, beamed a few shades less brilliantly when she discovered that I wasn`t looking for something brand spanking new. She sent me up a back staircase to ‘customer support’. Once I reached the upper domain and marginally less chi-chi environment, I waited for what felt like a lifetime in a queue behind a pot-plant. Once I made it to the front of the line, preppy assistant Version 2.0 waived my enquiry away and jabbed at his corporate keyboard for inspiration. Eventually the sage in the Cloud advised us that I was lucky enough to be able to book a customer service appointment to hear my query in five days between 3.30 and 4.30pm. By this time the voices in my head were close to winning the war and it seemed best that Elvis left the building while he still could. Luckily I was a few short steps from a Plaza with similar name and I got it

done in four minutes, for half the price … The lesson I took from my experience is that Capitalism is still King when the little guy can dodge the lumbering footsteps of corporate goliaths. I couldn’t help comparing this to the wine game and consider just how important small wine producers are to this wonderful thing we call the wine industry. It’s easy to be bedazzled by the high flying corporate wine brands with loads of moola to dump on fancy billboards, product placement in the latest Bond movie and shiny racing cars. Often the price tag is higher than the industrial-sized guys, and there’s a reason for that. Economies of scale make a difference, but spare a thought for the artisanal pinot winemaker who has thrown life, soul, a marriage, and two lifetimes of bank credit into his passion. The odds are that you will discover a world of nuance, individuality and discovery for just a few bucks more. When shopping for Friday nights’ vino – I encourage you to give your neighbourhood wine store or website a workout, and ask for the smaller producer. Odds are it will be loads of fun and you might discover your new favourite drop.

Held at Singapore Expo and Suntec Singapore over four delicious days, FHA, Asia’s leading food and hospitality trade event, celebrated its 40th Anniversary this year at its prestigious biennial celebration. Having regularly attended since the 1980’s, I can attest to the ongoing quality and quantity of exhibits over the years. This auspicious Ruby Anniversary year saw foods from Italy, Turkey, Poland, Sweden and Indonesia, amongst a myriad of others, including large displays proudly representing Australia and New Zealand. Plump green shelled Kono mussels, hand-raised in Marlborough Sounds, and elegant Down She Goes pinot noir from Anderson Hill, Adelaide Hills, drew admirers, as did the popular Sanitarium booth. Workshops, displays, tastings and competitions enthralled, as well as halal hospitality, gelato making, plus pastry chefs and baristas showcasing their skills.

espite our different personalities, backgrounds and beliefs, there’s one trait that every ANZA member has in common: at some stage we all decided to say goodbye to the familiar and comfortable, to follow an opportunity in a foreign land. This is no fluke. By acknowledging that you, as an expat, have an ability to withstand – and often seek out – the new and the unexpected, you can make the most out of any challenge that life will inevitably bring. In our family, we call it ‘ex-frightment’. That sense of heart-racing exhilaration when you’re about to step forward into something bold and unknown. You’re scared to death and unimaginably excited at the same time. You know this feeling. You’ve felt it as the doors are bolted shut on your loaded-to-the-brim shipping container, or as you hand over your passport to immigration before that oneway flight to your new home. Challenge is an inherent part of life and expats enjoy more opportunities than most to engage with and thrive off the back of disruptive and unexpected situations. In order to get the best out of a challenging environment, I encourage you to:

DISCERN REAL CHALLENGE FROM FEAR: Media and gossip can hype up threats and leave you feeling vulnerable to challenges that are highly exaggerated. Maintain a measured approach to what is truly going on around you and focus your energy and attention only on those challenges that really affect you.

RECOGNISE WHEN THINGS ARE JUST NOT WORKING: If a situation has become overwhelming or untenable and the support you need is not available, it may be time to move on. There is no failure in recognising what is best for your wellbeing.

MAINTAIN A POSITIVE OUTLOOK: Trust in your ability to endure and in the resilience of your loved ones. Ask for the support you need and always understand that challenge, if approached correctly, can be an inspiring and invigorating experience. It’s natural to feel low at times, but lean into positivity whenever possible.

oga is one of the most powerful ways to forge vital, lasting connections – with yourself and others. Why is yoga so incredibly good at creating community? Firstly, the only person on show in your yoga practice is the real you. There is something very powerful and healing in this unintended intimacy.

NO JUDGEMENT As sweat drops or you topple from a side plank, your fellow yogis will likely laugh with you, not at you and words of support will be offered. This is not the place for that perfect Facebook pose or artificial gaiety; the smiles in yoga are genuine, lopsided and very, very human. Perhaps one of your fellow yogis can barely move from tadasana (standing tree), or spends most of class in savasana (resting on your back) Remind yourself to let them be, but to check up on them later and ask the all-important question: RU OK?

Yoga offers the chance to intensify ties with one of the most important people in the world – you. We might come to yoga feeling awkward, uncomfortable, depressed, anxious, or just wanting to avoid human contact. You’ve come to the right place. Yoga not only has physical props like blocks and straps, but the practise itself is also an ‘emotional prop’. When the stress is too much, we simply tune into our breath. This reduces irritability and calms the surging ocean within. Yoga’s mindful breathing – focusing attention on our breath while we simply inhale and exhale - may be your best tool

in tough situations, since it activates areas in the brain’s frontal lobes that heighten calm and concentration.

Hokkien Mee

This beloved Singapore noodle dish is the creation of post-war Hokkien noodle factory workers, who would gather along Rochor Road and fry any excess noodles they had. Cooked in a fragrant stock, Hokkien Prawn Mee is made with a mix of thick yellow and vermicelli noodles, large prawns and slices of squid. The dish is covered in a rich prawn stock, typically made from pork bones, prawns, anchovies and, in some cases, dried oysters. Add a squeeze of lime and sprinkle of chilli to taste. This Peranakan dish fuses Chinese and Malay cuisine into one delicious, steaming bowl. Brought to Singapore by Teochew immigrants, the moreish dish is now a hawker staple and variants include the ‘black’ version, which is laced with dark soy sauce. oa Payoh Stadium is the new home of ANZA Athletics. The stadium consists of a soccer field, an 8-lane running track and a fitness corner. “We’re looking forward to welcoming our 2018/19 ANZA athletes next month with a fresh start at a new track,” says committee member Lucy James. Centrally located, the new stadium is a multi-purpose facility that is part of a larger sports complex. It’s easily accessible and has played host to many international events, including the SEA games, Commonwealth Champions, Women’s World Cup, Nations Netball and the Youth Olympic Games. It’s also the venue for soccer matches and is home to the Balestier Khalsa FC. The club will kick off their Friday sessions at the stadium with a more family-friendly start time. “This season we’ll start at a new, earlier time of 4.30pm each Friday,” says Lucy. “This should help the parents get their tired and hungry children fed and off to bed a bit earlier than previously!” ANZA’s mini athletes will take to the track and field at Toa Payoh to learn the sports basic skills of track running, hurdles, discus, shot put, long jump, triple jump and high jump. “They are exposed to all of these events during a six-week rotating program,” says Lucy.

“Learning these skills and building on them over successive weeks and seasons.” As with all ANZA’s sporting groups, emphasis is given to participation, sportsmanship and personal improvement, and parents are involved in the program as voluntary helpers or officials. “They share in many experiences with the children and its fun for everyone,” says Lucy. Considering a season of ANZA Athletics for your kids? Head to the stadium for a trial run. “If you’re not sure if your child will like it, come and join us for a trial, but be prepared as your children will most likely love it and will want you to sign them up!” says Lucy. As parent Fiona Zdun said recently; “It’s a great atmosphere. In the beginning I was hesitant to give up my Fridays, but I can still be finished and on the road early, and still have a wine in hand by 7.30!” The 2018/2019 Season fires up on 24 August and registration is now open for girls and boys from five to 14 years of age. “We look forward to welcoming back continuing athletes, and meeting many new ones,” says Lucy. “Athletics is an excellent way for kids to build strength, a healthy competitive spirit and make lots of new friends.

FAREWELL PETE DEPARTING ANZA CYCLING MEMBERSHIP DIRECTOR PETE ARCHBOLD REFLECTS ON THREE AMAZING YEARS WITH THE CLUB AND SHARES HIS TOP REASONS FOR JOINING THE PELOTON.

fter nearly three years of living and cycling in Singapore, my time has come to depart from the shores of this Little Red Dot. But before I go, I thought that I would share some reasons why joining ANZA Cycling may be for you!

YOU’LL NEVER RIDE ALONE The club is run and operated by a team of volunteers, who put in their own time to make riding in Singapore fun, safe and visible. The club itself has over 360 financial members who always have cycling mates, with rides scheduled daily. Prior to my time in Singapore, I would only ride twice a week, but with the luxury of knowing that there is always someone else keen for a ride, I manage to squeeze in up to five rides a week.

YOU’LL GET CYCLING EXPERIENCE

Like most fields in Singapore, our members come from a diverse range of backgrounds and cycling experience. Firstly, to make sure that all ANZA Cycling members are on the same page, the club holds a monthly induction ride. This is an opportunity for both the club and rider to assess each other. In the pre-ride

briefing we basically discuss ‘how we roll’. What calls to listen out for, hand signals to be used, etiquette we expect riders to uphold. This is then put into practice on a brief 20km ride before our regular Saturday rides are called. These essential skills are then used on all the rides. ANZA Cycling is very social, so there is usually lots of talk on the rides (depending on effort at the time!) This is a fantastic opportunity to garner a lot of cycling knowledge from others around you. We also have some outstanding contributors amongst our members who dedicate their own time to run skill sessions, first aid courses and help promote cycling in Singapore.

THERE ARE MANY RACING OPPORTUNITIES Boundless pretty much sums up the opportunities available to ANZA Cycling members. Whether you love racing, or you like the idea of a weekend getaway then our road, mountain and triathlon events usually see a large contingent of our members participating across the region. This year, more than 50 members attended Tour De Phuket in both race

Club trips are a highlight I have enjoyed over my time with ANZA Cycling. We offer day trips to Desaru, Batam and Bintan or weekends away to Bintan, Mersing or KL. This is a terrific way to experience new surroundings and challenges on our doorstep.

IT’S NOT (JUST) ABOUT THE BIKE We all search for a cycling club because we love to ride, but it is also great to spend time with each other off our bikes. I’ve met so many wonderful people and made lifelong friends throughout my time with ANZA Cycling at coffee stops, breakfasts, social drinks and various club events.

SAFETY FIRST For me, safety is very important. I have two young daughters at home who I like to encourage to be active, but to also do so in a safe environment. Club riding creates ‘safety in numbers’. Wearing club kit, riding with lights and a helmet and in a group makes you far more visible on the road to other vehicles. Being part of the club ride means there’s always assistance out on the road or track for any mechanical or health issues. Keeping abreast of changes to road rules and the Active Mobility Act are always communicated via the club in order to keep you safe on your bike.

WHAT DID YOU DO BEFORE ANZA? I worked in Hong Kong running the English Schools Foundation After School Sport Programme for children. I led the section which delivered nine different sports across 22 schools with around 4,000 participating children. Before that, I worked in the UK for the Amateur Swimming Association in national development.

I love the community spirit and the passion and drive from the committee members. The atmosphere at the final presentation day was fabulous. It’s amazing that such a vibrant programme has all been built entirely on the dedication and commitment of volunteers. Mums and dads not just supporting on the sidelines but coaching, umpiring, running cake stalls. It is fantastic to see.

HOW DID YOU GET INTO SPORT? I started gymnastics at age four before switching to highboard diving at 14. I became national champion at 18 and competed at European, World and Olympic level as part of the high performance team. At the peak of my career, I would be training 25 hours + whilst also juggling physios, nutritionists, psychologist sessions, strength and

conditioning training and of course school/university. It was my world.

YOU COMPETED AT THE OLYMPIC GAMES FOR GREAT BRITAIN; WHAT WAS THAT LIKE? It was a truly life-changing experience. It isn’t just the Olympics itself but the process you take as an athlete to get there. There are so many disappointments and tough times to overcome, so it is such an emotional and overwhelming experience when you finally achieve your dream. The Olympics itself is indescribable. Even now, I still feel the excitement of walking out into the stadium for the opening ceremony, or the moment I stepped forward to take my first dive in front of 17,000 people.

HOW WILL YOU CONTRIBUTE TO THE DEVELOPMENT OF ANZA NETBALL? I hope to assist the committee put stronger structures in place to support what is already being delivered. This will ensure sustainability of the ANZA Netball programme for the future, which is especially important with a transient expat community. A number of professional coaches have already been engaged to provide coaching direction and guidance and the committee want to provide more netball opportunities for the children participating, including more leagues/tournaments, clinics and off season training.

ANZA SOCCER STARS AS ANZA SOCCER GEARS UP FOR UPCOMING AUGUST SEASON, ANITA NEVILLE REFLECTS ON THE CLUB’S OFF-FIELD GOAL KICKERS.

GOOD LUCK DONOSTI CUP TEAM! For the second year, ANZA Soccer has sent a team to the Donosti Cup in Spain. Thanks to the fundraising efforts of our dedicated volunteers and the support of Accor Hotels another strong ANZA Soccer team is heading to San Sebastian for a week long competition from 1-7 July. We wish them lots of luck and goal scoring!

W

hile the players are the focus of the season, our ANZA Soccer volunteers are the glue that holds the community together and ensures that the season is a fun-filled and successful one for all involved.

AGE GROUP COORDINATORS (AGCS) Possibly the hardest volunteer position is our Age Coordinators who are responsible for assembling the teams at the start of the season and organising the match schedule. They also help organise volunteer coaches and team parents, communicating weekly with team parents about the week’s schedule and any issues that arise. For age groups U10 and upwards they also collect scores from refs and coaches. Without them, ANZA Soccer would not function!

Our Sunday competition teams play across Singapore and the region. CTCs organise the teams and liaise with the outside organisations that run the Sunday leagues. Like AGCs they also organise volunteer coaches and team parents and keep them informed of the upcoming games.

ANZA Soccer’s Matildas teams have been steadily growing, and our dedicated programme for girls is one of the best on the island. As part of this development, we’ve added regional and international competitions to the GTC responsibilities.

COMMITTEE MEMBERS A dedicated team of volunteers make up the ANZA Soccer committee. Responsible for everything from coordinating kit for the season, ensuring we have all the coaches and refs we need, fundraising and promoting ANZA Soccer, this dedicated band of individuals keeps ANZA Soccer running like a well-oiled machine.

PARENTS We know it’s all about the kids, but parents play an important role in weekend competition (and it’s not just about providing the weekly taxi service!) Team parents communicate with members, updating them on the week’s games, changes to the programme, arranging fruit rosters and social activities.

COACHES Volunteer coaches are the final piece of the ANZA Soccer puzzle. Parents sacrifice their weekend lie-ins to allocate player positions, run warm ups and coach the players through their games, awarding ‘Player of the Week’ trophies and ensuring every child gets a fair shot. Without the contribution of all these individuals ANZA Soccer would not be what it is - Singapore’s leading soccer club. It’s hard work, so enjoy the break that comes with the off-season. We are looking forward to kicking off soon for the 2018-2019 season in August.

SPORTS GROUPS AFL Adults of all experience levels who are interested in Aussie Rules Football can get involved with the ANZA Singapore Wombats. Training is on Thursday evenings and Saturdays, with regular social events too.

QUILTING

ANZA’s men’s soccer team is a group of fun-loving, hardworking, soccer-crazy guys aged from their 30s to 50s. The Lions play mid-week Futsal team on the East Coast, and Saturday Over 35s around the island.

Meeting monthly to connect and discuss investments and important financial matters for expatriates. Whether just starting out in investing, or a seasoned professional, you can benefit from being part of the group.

Quilters of all levels are welcome to learn, mentor and sew.

A track-and-field programme run by parents for kids 5 to 16, with a focus on fun, fitness and skills.

Fields three teams in the Singapore Cricket Association. Training is at Singapore Cricket Club nets from 7pm on Monday evenings.

ANZA Yogis practice Hatha and Yin Yoga in the Singapore Botanical Gardens and on the East Coast near Parkland Green.

From 30km rides to long distance, rides are held every morning to suit all skill levels, embracing road, MTB, triathlon and Audax disciplines.

GOLF / 9 HOLE Aimed at beginners, those seeking a handicap and those with a handicap over 25.

GOLF / LADIES The ladies meet every Thursday in Singapore and Malaysia.

The only Australian scouts group outside Australia. Fun activities for children. The ANZA Scouts meet Saturdays at AIS from 2-4pm.

ANZA ACTION The community affairs arm for ANZA, supporting charities in Singapore through funding and volunteering activities. For info on the charities we support visit the ANZA website.

Children from 4 to14-years-old can learn beach and ocean awareness through fun activities, and connect with the great outdoors – meeting on Sunday mornings.

RUNNING Looking to find some running buddies in Singapore for regular casual runs? The ANZA Running Group meets Monday evenings at 7.30pm in the Singapore Botanical Gardens.

SOCCER / KIDS Running programmes for children aged 3 to 18-years-old, focusing on participation and family fun. Matches on Saturday mornings at The Cage Sports Park @ Turf City; training on Thursday evenings.

KILL-O-METRES Join ANZA’s walking group each Monday to get together and get moving around some of Singapore’s great parks. Check the website for times and locations.

KNIT FOR LOVE Come along and knit beanies for Singapore Cancer Society chemotherapy patients. New knitters welcome – there will be friendly souls there to help you learn. The group meets on the third Friday of the month in the ANZA office.

BOOK CLUBS We have a number of social book clubs that meet monthly in the morning or evening. Contact us to be connected with a group that meets at a time that suits you.

SEA FISHING A community of fishermen and women who arrange regular boat trips across the Singapore Strait, The Andaman and South China Seas. We plan to do a mixture of both day and night trips, as well as longer weekend trips and threeday adventures.

SECRET MEN’S BUSINESS Lunch and lager every third Wednesday of the month. Just turn up at The Penny Black, Boat Quay at 12.30pm. The lads also play golf in Singapore each Thursday.

LADIES NIGHT ANZA SCOUTS

Netball offers coaching and competition for girls aged 6 and upwards. Sessions are held on Saturday mornings from 8.30am at Tanglin Trust School.

SCOUTS Open to boys and girls aged 5 – 17, Scouting is about meeting new friends, developing leadership skills and being outdoors.

A monthly get-together at different, funky locations. Bring your friends or come alone and meet new members. Ladies Night is just for the girls!

MAHJONG This friendly group meets every week on Thursdays from 10am–1pm at Boomarang on Robertson Quay.

SINGLE PARENTS NETWORKING FORUM Being a single parent is never easy, and can be even more challenging when away from family and close friends. This group aims to provide support, advice, friendship and fun for single parents in Singapore.

WINE CLUB

MEDITATION Learn to thrive and live at peace with ANZA meditation, every Wednesday at 6.15pm in Holland Village.

AUSTRALIAN EXPAT ISADORA NOBLE SET UP POP UP WINE WITH HER HUSBAND DAVID HARKER TO OFFER EXPATS AND LOCALS A MORE AFFORDABLE DROP. historic 1930s bolt hole of an apartment in Tanglin. Our four kids grew up in Singapore. Our youngest (now almost five) was conceived there. Whilst in utero we called him our ‘Singapore Surprise’ as, at 43 I wasn’t expecting any more babies! Singapore holds a special place in all of our hearts. We plan never to have to say goodbye!

WHERE’S HOME IN AUSTRALIA? A wheat and sheep farm in Kulin, Western Australia with a population of 300 people, 300 kilometres from Perth. My relatives account for about three-quarters of the town. I came to Singapore via Sydney. HOW LONG HAVE YOU LIVED IN SINGAPORE? Five years. I now live between Perth and Singapore, where David (and our family cat!) is still a resident. We swapped our sprawling black and white house in Goodwood Hill about a year ago for a

WHAT ARE YOUR WINEMAKING ROOTS? Our association with wine began in 1849 when David’s great, great, great, grandfather, ‘ol man Freebairn, left Scotland for McLaren Vale, South Australia - planting what would be some of Australia’s first winegrowing vines. My Grandpa Ted unintentionally bought a working vineyard - to house his mob of 1000 prize merinos - near the wine region of New Norcia, Western Australia. The region is planted with vines from the anointed hands of Italian-born, Benedictine monks. WHY DID YOU DECIDE TO OPEN UP POP UP WINE IN SINGAPORE? Our folly into online wine retailing evolved out of our love of wine and the seemingly impossible task of finding good wine in Singapore for less than the air fare back to Oz. Aghast at the thought our friends might be drinking one bottle of wine instead of two, we initially started supplying friends with wine.

Now we supply friends-of-friends-offriends. David’s background is finance but he has a life-long love of wine. When I moved in with him in Sydney, every cupboard and wardrobe in the house was full to the ceiling of cases of wine! And as I would find out later, many cellars in wine storage facilities throughout the world. CHEAP AND CHEERFUL DROP OR A FINE VINTAGE? Our favourite finds are undervalued wines, that don’t get much attention from the industry. David’s just as happy when he finds a $30 wine when it should be $50, as when he buys a Penfolds Grange for $500 when it should be $700! We started the store with Australian and New Zealand wine, so the Kiwi’s and the Aussies were the first ones to find us. They liked the fact the wine wasn’t much more than what they were paying back home for the same labels. AWAY FROM THE WINE INDUSTRY, WHAT’S NOURISHES YOUR SOUL? Yoga is my love. Meditation is my saviour. Both keep me grounded. I like to live a fast-paced life but I can’t do it without bowing out of the frenetic pace through daily practice. I also love to walk in the Botanic Gardens, which is a stone’s throw from our apartment in Singapore, or on Leighton Beach in Perth.

CHICKEN RICE / Pinot gris / grigio. Go for a crisp wine, with a hint of sweetness and nuttiness to bring out the flavours.

CHILLI CRAB / Crisp, dry sauvignon blanc. Choose one with a hint of fruit flavours as this will complement the crab.

RENDANG CURRY / Shiraz. Choose a full-bodied wine with lots of grunt and tannins.

SATAY / Riesling. Choose a wine with a bit of citrus and minerality to it. It will work no matter the meat of your satay.
