Dear Reader Time flies when you are having fun they say. It must be right because here we are on our next issue of 1…2…Vegan (Youth). Winter has turned to spring, and it is wonderful to see the leaves turning green again, the flowers blooming, and the birds singing. My message is the same. Keep being the beautiful compassionate soul that you are. Help others to follow you in your vegan journey. This is most important! Veganism is the best solution to current problems, planet degradation, animal exploitation, and health decline. You are a fierce force of goodness….so carry on. Let’s turn in vegan related book reports at school. Ask your family and friends to join you in being a hero for the planet. Ask the cafeteria for vegan options. Don’t go to zoos, aquariums, and other places that exploit animals. You are fighting for your right to have a livable planet. Be the strong person I know you are. Together we will triumph. Together we are stronger. Together we will create a more compassionate world. Thank you for what you do.

Did you know… Animals - Coyotes 1. Coyotes weigh only about 20 pounds, making them the size of a medium dog. 2. They have long fur that is brownish red, grey or white. Coyotes have a bushy tail like a fox. 3. A baby coyote (Canis latrans) is called a pup, just like dogs and wolves. 4. Coyotes raise their pups in dens or holes in the ground. 5. Coyotes live in a pack comprising of adults and pups. There is usually an alpha male and a female, but they are often joined by relatives. 6. Coyotes are resourceful. They are capable of digging their own burrows, but they often enlarge the burrows of woodchucks or badgers to use for their dens. 7. They howl at each other when meeting after a long time or when establishing the boundaries of their packs or dens. 8. They also use their sense of smell, hearing, and sight while communicating. 9. Coyotes are known to run as fast as 40 mph. 10. Coyotes are excellent swimmer.

Let’s Eat! Sticky Bun Chia Seed Pudding Prep/Total Time: 15 min. Cook Time: 5 min Makes 4 servings
INGREDIENTS Chia Seed Pudding • ▢2 cups Unsweetened Cashew Milk • ▢½ cup chia seeds • • • •
▢2 ▢1 ▢1 ▢1
tablespoons agave nectar tablespoons brown sugar teaspoon ground cinnamon teaspoon vanilla extract
Sticky Pecans • ▢2 tablespoons real maple syrup • • •
▢2 tablespoons agave nectar ▢Pinch of salt ▢¾ cup chopped pecans
IINSTRUCTIONS • In a medium bowl, whisk together cashew milk, chia seeds, agave, brown sugar, cinnamon, and vanilla. •
Cover, and refrigerate overnight.

To make the sticky pecans, add maple syrup, agave, and salt to a saucepan.
•
Bring to a boil.
•
Remove from heat and stir in pecans.
•
Let pecans sit for 5 minutes.
•
To serve, spoon sticky pecans over pudding, and enjoy!

Let’s Eat! Peanut Butter Banana Quesadillas Prep/Total Time: 10 min. Cook Time 5 min. Makes 1 serving
INGREDIENTS •1 8-inch whole wheat tortilla •2 Tbsp natural peanut butter •1/2 medium banana •1 Tbsp semi-sweet chocolate chips
INSTRUCTIONS
•Spread the peanut butter over the surface of the tortilla. •Slice the banana very thinly and then arrange the slices over half of the tortilla. Sprinkle the chocolate chips over the banana slices and then fold the tortilla in half. •Cook the quesadilla in a skillet over medium-low heat until golden brown and crispy on both sides.

What is activism? The term, can bring about a host of emotions, but it simply refers to any action intended to bring about change.
Activism has many benefits for you. It is a way to learn important ideas while helping someone or something in the world. Activism will help you develop leadership and collaboration skills while opening your mind and providing you with purpose. You control the future of this world, it’s important that you get a head start by involving yourself in matters that impact this world and your future. This will also help you broaden your view of the world. You can help create a better world!
