A touch Ŗ traditiŝ If there’s one hard-and-fast holiday tradition I abide by, it’s breaking out the best serving pieces in the house. It may only happen once or twice a year, but every Christmas, the fine china, crystal, heirloom silver and cut-glass pitchers are dusted off, polished and put to good use. (And, much to my husband’s chagrin, this happens whether we’ve just welcomed a newborn baby or are knee-deep in moving boxes.) To my credit, I’ve discovered it’s a family trait; my 90-year-old grandmother still passes cheese bites on a silver platter and serves shrimp remoulade from a porcelain dish—even if it’s an informal gathering. Senior contributing editor Marcia Sherill and our very own woman-about-town, Naomi von Habersham, revisit this phenomenon—among other longstanding Atlanta traditions—in this month’s issue. For our part, we hope you’ll join us for an Atlanta Homes & Lifestyles tradition by touring our Home for the Holidays Showhouse & Marketplace, which continues through December 8. Getting in the Holiday Spirit Managing holidays and special events after a cancer diagnosis Rod Echols, 39, was diagnosed with stage III colorectal cancer in August of 2012. With two young children and the holidays around the corner, Rod and his wife, Keisha, were determined not to let the diagnosis sideline the festivities. A planner by nature, Keisha began thinking about what they could do to ensure that their children’s lives remained as normal as possible during this stressful period. According to the American Psychological Association’s most recent “Stress in America” survey, 22 percent of Americans report an extreme level of stress during the holidays. Add a cancer diagnosis and treatment to the mix, and the holidays can become downright unbearable. Diane Schaab, MS, LAPC, a Mind-Body Therapist at Cancer Treatment Centers of America® in Newnan, Georgia, says that patients and their families should try to adopt flexible mindsets and allow themselves to modify and simplify gatherings, celebrations, gift-giving and other traditions. “Try to conserve energy by asking your loved ones to help out with the cooking, cleaning, decorating, or wrapping of presents,” says Schaab. “Let go of the control and allow someone else to do these tasks for you.” In addition, Schaab recommends that families and supporters try to be open to new traditions and experiences that may or may not blend with the things they have done in the past to celebrate special events and holidays. “Don’t feel that you have to live up to a certain level of expectation or follow the same patterns as you have in the past,” says Schaab. “Take the opportunity to live in the moment and create new traditions. Change can make the holidays and special events more unique and gratifying.” Finally, it is important for patients and their families to express their emotions during this time. “People characteristically become more emotional around the holidays,” Schaab says, “so don’t be afraid to talk about how your life has changed or your fears regarding the future. Give yourself permission to feel and express those sentiments. Naomi von Habersham ATLANTA HAS CERTAINLY CHANGED SINCE I moved here from Montezuma in the 1960s. Gone are Rich’s and its Fashionata fashion shows, Regenstein’s, The Coach and Six, Gene and Gabe’s, and numerous other establishments that so many of us frequented. Although the city is famous for always looking to the future—often at the expense of the past—there remain a few vestiges of classic Atlanta. Long before Atlanta became known for its multitude of restaurants, its dining scene consisted of only a handful of establishments, most of which were immensely popular among Atlantans. Fortunately, some of these old restaurants still exist, serving up the dishes that we have long craved. My list for classic Atlanta food wouldn’t be complete without yeast rolls from The Colonnade, Grouper Louisiane from McKinnon’s, the relish tray at Alfredo’s, fried chicken from Mary Mac’s Tea Room, and a naked Dog and an F. O. from The Varsity. And thank heavens that Rhodes, Henri’s and McEntyre’s bakeries are still in business, preparing the cheese straws, rolls and petits fours that continue to be ubiquitous at our at-home soirees. (By the way, I’m still miffed about the loss of both Pharr Road Wine and Cheese and Cloudt’s. Their gourmet food offerings were beyond compare.) Holidays in Atlanta are celebrated with long-standing traditions. There is the lighting of the Christmas Tree at the Governor’s Mansion, Christmas at Callanwolde, the Phipps Plaza Santa Claus, standing in line at HoneyBaked Ham and the Atlanta Boy Choir Christmas concerts. One tradition that I dearly miss is nonstop Christmas carols played on the now-defunct Peach 94.9 radio station. But we do have a new tradition that I think is pretty fantastic: ice-skating at the St. Regis in Buckhead. And while I’m on a roll, I’d like to add the following to my list of classic Atlanta treasures: the Peachtree Road Race, Charles Willis, Peachtree Battle shopping center, Wender & Roberts, Glenn Burns and Ken Cook, ADAC, the Westin Peachtree Plaza, Nikolai’s Roof, the Swan House, Sweet Auburn, the Disco Kroger, and, of course, Atlanta Homes & Lifestyles.

Mix a quarter ounce of allspice dram with your favorite spirit—I prefer scotch or a dark rum—in a hot mug, then fill with the cider and garnish with a flamed orange peel. December is truly one of my favorite months of the year. Maybe it’s because I love holiday lights, hot chocolate, roasting marshmallows, school breaks, presents and, of course, wintertime travel. It’s also one of the busiest times of year, with Christmas shopping, festive parties and baking and cooking for family and friends. Luckily, travel around this time gives us the chance to decompress and rejuvenate while enjoying new experiences and beauty around the world. And, in this issue, we have something for everyone to try. You’ll find the best wintery spots in Colorado to partake in offbeat seasonal sports such as snowkiting, tubing, snow biking and ski-joring (these are just a few of the adventures my three kids and I are putting on our 2014 wish list!). Market Restaurant, home of the famous Chef Jean-Georges Vongerichten, offers Euro-Asian cuisine, and Suviche delivers an incredible selection of fresh sushi and ceviche. Don’t miss the charred sea bass rolls and trio of ceviches—my favorite one was served with tomatillo and avocado. A continental breakfast at Agua—try the mangoand-ginger smoothie with yogurt, berries and mint—is the perfect start to mornings at Palmilla. Don’t worry about snack time; you’ll be offered an icy paleta (a fresh Mexican Popsicle) every time you turn around. (The seasonal lime and coconut are not to be missed!) The Kitchen that Sings
FEED YOUR BODY, YOUR HEART AND YOU
MOST MODERN AMERICANS ARE over stimulated, incessantly plugged in, and allegorically out of breath. The edges of work and home life are relentlessly blurred. We’re addicted to the ping of our smart phones, even as we love and despise them at the same time. Social media has created a bizarre stage interlinked with business and the result is a nagging need of constant
performance. We move along like robots, often not pausing to think about the unhealthy situation we are feeding. I admit I am as guilty as anyone else. Deadlines for articles compete with deadlines for cookbooks. Power point presentations compete with fundraisers that compete with testing recipes. I’m writing this very article 30K feet above the earth on a plane bound for Atlanta.
As a chef, food writer and cookbook author, part of my work is also as a traveling culinary instructor. Undoubtedly, my favorite place to teach is La Cocina que Canta, “The Kitchen that Sings” at Rancho la Puerta. Rancho la Puerta is a legendary wellness center and destination spa. Family-owned and operated since 1940, when the first guests arrived at 33

Tips from Chef Virginia Willis a beautiful Baja California campsite created by Edmond Szekely and his wife Deborah, Rancho La Puerta has been changing lives now for over 70 years. Deborah, now over 90, still lectures weekly and is hard at work on her many projects to spread the word about Americans’ need to live a healthier more-active lifestyle that is also supported by a protected, chemically-free environment. Every turn at the ranch there are sights, smells, and sounds that fill the senses, yet the gardens that really fill my soul are the organic vegetable and fruit gardens of La Cucina que Canta. Tres Estrellas, or Three Stars, is a six-acre organic garden that provides much of the produce in the main kitchen and nearly all of the produce used by the cooking school. And, these stars shine mightily. La Cucina que Canta feeds your body, your heart and your mind. Executive chef Denise Roa works closely with the energetic and gregarious head gardener Salvadore with planting and harvesting the fruits and vegetables in the garden. The two of them have developed a very tight system in that two to three weeks

before the chefs arrive she knows what will be ready for harvest. The visiting cooking teachers and chefs can then plan their menus accordingly. Frankly, I know of no other program like it. It’s amazing for the cooking teachers, and most definitely, for the guests. It’s incredibly enlightening to be in an organic garden and see real food, to learn how to cook real food and to push your body through physical exercise. The fruit and vegetables at Rancho la Puerta are certainly alive. The gentle, persistent hum of the bees in the herbs is the soundtrack of the garden. The garlic is sticky and fiercely hot; the carrots are crisp and sweet like candy. One row goes to seed as the adjacent row has fledgling seedlings pushing through the soil. It’s vibrant and moving and pulsing with life. The food is as real and nourishing as it can possibly be. It’s powerful. It’s strong. The entire experience makes you think. The philosophy of Rancho la Puerta is “siempre mejor,” which means “always better.” It refers to a life strengthened by good health and life-long learning, which unleashes the willingness to change—for the better.
When cutting ingredients, keep your eyes on the knife, not on the cutting board. The layers of paper on an onion indicate its age; the more paper, the older the onion. Remove all of the green part of a garlic clove—it is tough and bitter, and means the garlic is old. To roast a red pepper, hold it over an open flame with tongs, then place in a bowl and cover so it steams while it cools. The skin will slip off easily.

Last January, The Cathedral Antiques Show & Tour of Homes celebrated its 42nd anniversary
with an array of events, including a lecture from celebrated designer Miles Redd. The Show’s thirdannual Inspiration House was located on the grounds of the Cathedral of St. Phillip at the circa-1910 Lanier House. Also known as the Andrews-Dunn house, the historic home is associated with some of the most important names in Atlanta history: the Colliers, Hicks and Irbys. Last winter, it served as a laboratory for designers to infuse the storied space with color, pattern and energy. The 2014 Cathedral Antiques Show will be held January 26-February 2, 2014. Bryan Kirkland was determined to infuse the space with cheer. “I wanted it to be bright and vivacious,” he says. “We wanted to explore the juxtaposition of rugged and rustic versus faceted color and glamour,” says Robert White of the dramatic boardroom. Because the kitchen would remain after the showhouse closed, Warner McConaughey asked the church staff how they used the space. After learning that it is essentially used as a catering kitchen for serving simple meals during meetings, he opted to keep the space’s small proportions but raised the ceiling in a dramatic halfbarrel vault. “I wanted it to be like the kitchen in an English castle, where you sneak away from the tour and get a glimpse behind-the-scenes,” he says. Lime-washed pecan cabinets conceal the appliances, stacked limestone covers the interior wall and countertops are illuminated by bare Edison bulbs.

ATLANTANS W HO MIGR ATE TO CASHEIRS on the
weekends, drawn by rolling mountain views and the calm of country living, tend to gravitate toward creating homes that are cozy, streamlined and fuss-free—a soothing counterpoint to their busy lives in the city. When an empty-nest couple called upon their longtime interior designer, Amy Morris, to give their four-bedroom home the refined mountain treatment, she understood how to interpret their mandate. “Their home in Atlanta is traditional with a lot of color and embellishments,” says Morris. “This house needed to be simple and warm, with minimal fuss.” Because he wanted contemporary and she requested traditional, Morris immediately went to task to reach a common ground. “The house’s bones don’t lend themselves to contemporary style, so we compromised with clean furnishings, elegant fabrics and a mix of simplified items,” says Morris. Shiplap walls and refinished wood beams provide a casual backdrop in this home, so Morris played off that feel in the living room by employing a chocolate mohair sectional and a linen chair and ottoman for a luxurious, but low-key look. Antique tree engravings offer a subtle nod to the mountain setting and illustrate Morris’s uncontrived simplicity. Contributing further to the home’s laidback ambiance is the serene color palette. “I canvassed the neutral color wheel,” says Morris, whose swatchbook for this project included shades of brown, grey and white. In the living room, the scheme affords the advantage of showcasing the cabin’s stunning views of the Blue R idge Mountains. Raised, gray-painted cabinets and white marble countertops in the kitchen offer a sleek, streamlined space for the weekend retreat. Rarely deviating from the soft palette—save for the geometric pop of a f loor rug—Morris went rogue in the guest room above the garage. “After stripping away existing green-and-white toile wallpaper, we began to see the beautiful shape of the room,” she says. To highlight the architecture, she added tongue and groove paneling and black paint “to make it graphic.” In lieu of pattern play, Morris employed texture

Morris gutted the original kitchen, installed a white marble-top island and raised the cabinetry to the ceiling to give the illusion of space. The barstools
to create drama in the neutral setting. “I use pattern sparingly,” says Morris, who prefers to create a feeling of depth with texture, in this case, mohair with linen, and velvet with leather. The master bedroom is a study in her layered aesthetic, from metallic linen draperies and a tufted velvet headboard to a metal chandelier and a lacquered wood chest. “I like to make sure there’s a great balance,” says the designer. “The result is so luxurious looking. You definitely wouldn’t distinguish this room as being in a mountain house.” In an effort to go more polished than pastoral, Morris’s signature touch included the addition of large-scale lighting (her philosophy: “the bigger, the better”) and dressmaker details. designer loves creating a focal point through lighting, whether it’s a showstopping lantern in the dining room or the unexpected placement of sconces f lanking the kitchen sink. In the living room, the designer’s penchant for nailhead trim and tufting is on display: trim applied to the curtains introduces pattern, while diamond-shaped tufting on the sofa and ottoman strikes a classic note. “These small details elevate the design; without them, certain pieces aren’t as eye-catching,” she says. Ultimately, Morris designed the house using the blueprint of a primary residence. “We weren’t looking for cabin decor; we were simply seeking special pieces,” she says. “Plus, we had to replace the animal heads that were covering the walls.” SEE RESOURCES, BACK OF BOOK.

PUT YOUR HEART ON THE TABLE
What makes an Atlanta house a HOME? In the final installment of our year-long series on the essentials of every Atlanta residence, MARCIA SHERRILL pays homage to a well-set table.

PLITTING MY TIME between the South and the North (I keep a pad in New York), I still fi nd myself startled by the contrast in attitudes toward dining at home. Yes, it is practically a cliché that—because everyone in New York has such a small apartment—ordering in is obligatory. But there’s truth to the idea that we Atlantans tend to put dining on a pedestal. It’s a part of our legacy, after all. Setting the table was a talent that was esteemed, even revered, by our grandmothers and great-grandmothers; along with the turkey gravy, their families and guests served up accolades and showed their appreciation. Our mothers started us (girls, that is) young. And if your mother, like mine, was a Yankee, then it was up to your grandmother to set you—and your table-setting skills—straight. Grandmothers owned stacks of china and boxes of passed-down silver…all of which, I’m sure, was to make sure we were never confused about a fish knife or an oyster fork. (Or there would be hell to pay. But Lord, can I set a table.) Today, the art of setting a table may not come in handy in terms of antiquated sherry and port glasses, but a new phenomenon has emerged. Oh heck yeah, we Atlanta gals can
set a traditional table, but now we’re allowed to go buck wild, thanks to designers who have realized we’re a demographic that will buy, buy, buy. Our silver may be vintage Wallace or Gorham instead of George Jensen, but we have drawers, if not entire vitrines and breakfronts, devoted to place mats, napkin rings and crystal. When Kim Seybert presented beaded place mats in coral designs, we bought; ditto for her napkin rings. When Paula Deen designed porcelain dinner service, we loaded up. We were fi rst on that Versace bandwagon. Now Williams-Sonoma, Restoration Hardware and even Target are in the game, offering everything from melamine plates to DuraClear iced tea glasses. All bets are off; we are in hog heaven. Certainly, our grandmothers would be proud of our most recent Thanksgiving and Christmas spreads. Like our precious, passed-down antique silver, we realize that dazzling place mats and freshly ironed linen napkins are never out of style. We love what they have always loved—a glamorous table.
