AROMATIC JILK 60 WHY CHOOSE JILK 60? • Produces a high volume and a soft and spongy texture. • Fast acting and and easily soluble = Short mixing time and and disperses well throughout the mixture. • Made of pure vegetable origin and has a very low level of trans fat acids: <1%. • Low dosage: 1–2% on batter weight. • A very cost-effective product – Because of reduction of egg and the low dosage. Monoglycerides are the most commonly used emulsifiers in the baking industry. When properly formulated, they form an alpha-gel, which has proven to be the most efficient emulsifier solution in cake production.

WHY CHOOSE A CAKE GEL INSTEAD OF A POWDER? • It is easier to mix into a batter as opposed to a powder, which may be inactive and not disperse properly. • The gel instantly interacts with other ingredients and reduces mixing time by 50%. • Promotes the aeration of cake batter by producing a large number of small, uniform air bubbles. • Stabilises the batter during the baking process, and the cake during cooling. • Saves time by allowing the ”all-in-one-method” to be used.
