Soft Dough Concentrate This concentrate is perfectly designed for all kinds of sweet wheat doughs. It gives good volume while making the result very soft. Choose whether you want to store the dough itself or store it as a finished product in the fridge for a longer shelf life. This makes Bakels Soft Dough Concentrate optimal for delicious Shrovetide buns, or as we would call them – Semlor. This versatile product is excellent for baking everything from buns and cakes to hamburger buns and toast bread.

Using a concentrate helps you save time. It simplifies your baking and you will always get an even and safe quality since you do not have to weigh and handle several different ingredients at the same time.

METHOD Mix all the ingredients into a smooth dough. Use cold water as the dough requires longer processing than regular wheat dough. Mix for 6 min at low speed and approx 6 min at high speed. Dough temp: 26-28 °C Proving time: 55 min. Baking temp: 210 °C Baking time: approx 8 min (80 g)

METHOD Mix all the ingredients into a smooth dough. Normal mixing times. Leave to rest for 10 min. Cut to 100-250 g per piece and roll down to approx 2,5 mm. Proving time: approx 50 min Baking temp: 180 °C Baking time: approx 7 min (350 g)
