Flexible baking with the best results BAKELS MUFFIN MIXES

Our flexible muffin mixes can be used for both muffins and soft cakes of various kinds. By adding only water and oil, you get muffins and soft cakes with good volume, delicious flavours and a soft and moist crumb. Discover Chocolate Muffin Mix with a rich chocolate flavour and Vanilla Muffin Mix with a lovely taste of vanilla, which is a perfect base for your own flavouring and ideas.

PRODUCT INFORMATION - BAKELS MUFFINS

Store dry and not over normal room temperature (max 25°C, max 65% humidity).

Packaging: 20 kg bag.

Allergens: Contains gluten and egg.

Shelf life: 7 months.

Caramel Muffins

Muffins:

Bakels Vanilla Muffin 1000 g

Oil 400 g

Water 400 g

Aromatic English Toffee Flavour 10 g

Filling:

Bakels Caramel Truffle 200 g

Cream Cheese

200 g

Aromatic English Toffee Flavour 4 g

Topping:

Bakels Speculoos Crumb (before baking)

Bakels Millionaires Caramel

Mix all ingredients for 1 minute on the 1st gear, scrape down, mix for 5 minutes on the 2nd gear.

Sprinkle Speculoos Crumb before baking.

Baking temperature: 180°C

Baking time: approx 20 minutes

Immediately after baking: fill with whipped Caramel Truffle, Cream Cheese and English Toffee Flavour.

Pipe Millionaires Caramel on top.

Red Velvet Muffins

Muffins

Bakels Vanilla Muffin

Aromatic Red Colour 80 g

Cocoa powder 30 g Vinegar 8 g

Filling & Topping

Bakels White Truffle 200 g

Cream Cheese 200 g

Mix all ingredients for 1 minute on the 1st gear, scrape down, mix for 4 minutes on the 2nd gear.

Blend red colour, cocoa powder and vinegar in a separate bowl. Mix the batter on the 1st gear for 1 minute.

Baking temperature: 180°C

Baking time: approx 20 minutes

Immediately after baking: fill with whipped White Truffle and Cream Cheese.

Save some truffle mix for the topping.

Pipe truffle mix when the muffins have cooled.

Topping - Italian Meringue:

550 g

Water 187 g

Bakels Actiwhite 50 g

Water

300 g

Sugar 50 g

Mix all ingredients for 1 minute on the 1st gear, scrape down, mix for 5 minutes on the 2nd gear.

Fill with Les Fruits Rhubarb.

Baking temperature: 180°C

Baking time: approx 20 minutes

Top with Italian Meringue:

Boil 550 g sugar with 187 g water to 122-124°C.

Whisk 300 g water and 50 g Actiwhite with 50 g sugar fluffy at highest speed.

Add the sugar in a stream on medium speed and increase the speed again.

Reduce to lowest speed when the meringue is fluffy, mix until it’s cool. Lightly burn off the meringue after piping.

Mix all ingredients for 1 minute on the 1st gear, scrape down, mix for 5 minutes on the 2nd gear.

Baking temperature: 180°C

Baking time: approx 35 minutes

After baking: top with melted Orange Truffle.

Mix all ingredients for 1 minute on the 1st gear, scrape down, mix for 5 minutes on the 2nd gear.

Fill with Les Fruits Blueberry.

Sprinkle No Bake Chocolate mix.

Baking temperature: 180°C

Baking time: approx 20 minutes

After baking: whisk the whipped cream with Dark Truffle and pipe on top.

Fill with Semla Filling Viktoria.

Baking time: approx 35 minutes

Top with melted Light Truffle mixed with Speculoos Crumb.

Vanilla Custard K

Cocomix

Mix all ingredients for 1 minute on the 1st gear, scrape down, mix for 5 minutes on the 2nd gear.

Fill with Vanilla Custard K.

Mix cocomix and water with a wing for 2 minutes and sprinkle over the muffins.

Baking temperature: 180°C

Mix all ingredients for 1 minute on the 1st gear, scrape down, mix for 5 minutes on the 2nd gear.

Baking temperature: 180°C

Baking time: approx 18 minutes

Heat Choc Fudgice for approx 1 minute.

Add the coffee och mix well.

Spread over the cake and top with coconut flakes.
