‘S

pring has sprung, the grass is grizz, I wonder where da birdies is?’ I love that little rhyme, it’s so jolly and happy. My mom used to say it to me when I was young as soon as spring started rearing her pretty little head. Well, it seems spring has come early in the Highveld, not that we’re complaining. How do I know it’s spring? Our cat Bella no longer hogs the bed at night. Our winter body heat is no longer needed and she’d rather park off somewhere else. Typical. Spring is also a great time to cleanse, a chance to start afresh, a renewal of sorts. It also feels like a fabulous time of year to give. Talking about giving, it was my husband’s birthday the other day and being the loving wife I am, I went online and bought him some new clothes. This is how our conversation went on the morning of his birthday: Me “Open the box! Just open it, I’m so excited!” Husband (peeling each piece of tape off one by one at a glacial pace) “Oh

no, those shorts are way too bright.” Me “But that colour, its bang on trend.” Husband “I’m not trendy.” Needless to say the gift didn’t go down too well. However, I do know with almost 100 percent certainty that our gifts for you with this issue will go down a treat. urnise’s life is geared towards performance perfection: training, life between classes, rehearsals, productions and, finally, stepping into the spotlight.

TRAINING “I like routine,” says Burnise. “It makes me feel safe. Dancers have Type A personalities, so routine helps us function. Even having a class moved can throw us. I’ve had class at 10am for the last 22 years!” Curiously, this compartmentalising doesn’t extend to what Burnise eats. “I’m so bad with diet,” she smiles. “I simply follow the ‘everything in moderation’ rule. If you feel like some chocolate, have some

chocolate; just not the whole slab. During productions, I’m aware that I need to eat for energy, so the evening before a performance, I’ll have pasta with a protein. During the day, I’ll have two rusks in the morning, fruit after class, muesli and yoghurt at lunch and a few nuts during rehearsals. Then, on Saturday for breakfast, I let go and have the whole gedoente.” Are there goals in terms of the strength and fitness Burnise needs to maintain? “Class builds strength,” she notes. “As we get closer to productions, we build intensity, as we need to peak during performances, which last for two-and-a-half hours rather than an hour at a time.” Burnise acknowledges that experience has helped

her work smarter. “When you’re young, you push 200 percent, all of the time,” she says. “When you’re older, you know what you can control. I adapt what I commit to according to what’s needed in my performance. So, if my role doesn’t require jumps, I don’t expend energy on jumps in class.”

Body maintenance continues after hours. “I go to the physiotherapist two or three times a week. At night, I go and stretch in a sauna – the heat helps.” All of this activity exacts a toll. “I’ve been lucky to not suffer a lot of pain in my career,” says Burnise. “But it’s a

part of everyday life now. I’m tired when I go home, not because I’ve worked hard, but because I’ve been in pain all day. My greatest fear is that I’ll need a hip replacement. I’m terrified of having to learn to walk again.” LIFE With so much focus on her body and its condition, is it wise for Burnise to get involved in anything risky? “No,” she says, “because I know that it’ll be me who has to deal with the stress of working back to full strength. I think I also have an adrenalin rush at work every day. I don’t need to go out and look for it.” How does this approach impact on relationships? “Sharing time with others is an issue,” Burnise concedes. “I did, however, build up incredible friendships during my first years in the company. Those people will be my friends for life. I’m a strong believer in the need to work at relationships, and I need that attitude back from a friend,


otherwise I cut them out.” A good support system will be important as Burnise contemplates life beyond dancing professionally. “The unknown is scary,” she confesses. “I know I’ll miss it. A lot of people try to find something to replace it, and I know that won’t happen for me. I’ve made peace with that.” Are there any concrete plans for the future? “I hope to stay involved in ballet,” she says with a nod. “I’d like to share my knowledge. But becoming a good teacher takes time. I’ve had to build my confidence.” Ultimately, Burnise’s house remains her castle. “My place is small; I don’t need much,” she says. “All it needs to be is a safe haven. I get judged 24/7. I don’t want to take that home.” PERFORMANCE The reason for Burnise doing all that she does? “Taking the stage for each new production. Focus is key. By the time you get there, your body knows what to do, but your mind needs to play ball. Sometimes I stand backstage and it takes a lot for me to step on. Once you’re there, you can’t go back.” Burnise elaborates on her relationship with the crowd. “They’re just a presence in the darkness to begin with. I try to draw them into my world. The best moment is after a solo; that pause before applause as the audience process what’s happened.” What about her status as a role model? “I www.joburgstyle.co.za | 25


love speaking to kids about ballet,” Burnise says and grins. “They seriously believe you’re the princess. I thought that myself as a girl: I supposed that when the ballerinas went off stage, they continued dancing in a forest. I remember writing a letter to a principal and waiting for weeks for a reply, so I make a point of answering notes.” Does the publicity treadmill ever wear Burnise down? “I understand what it’s about,” she says with a shrug. “It gets us an audience. They pay my salary. The focus on my being a prima is more challenging. People are not as forgiving as when you’re up and coming. The minute you have a title, it’s tougher. Sometimes I want to remind them: I still need to prove myself.” 26 | www.joburgstyle.co.za

“There’s a special kind of power in femininity. That’s what I’m currently discovering,”

Pabi says with a shy smirk. Perhaps she noticed the small element of surprise and scepticism in my facial expression as she said this. Pabi and I are sitting opposite each other at a busy Vovo Telo restaurant in Parkhurst. Our conversation is embellished with the aromas of foreign teas and exotic meals. It’s oddly oxymoronic - hearing a female speak about discovering her own femininity. However, the truth of her womanhood is yet to unfold. Pabi’s affiliation with the feminine force as well as her knack for entertainment originates from her nascent years growing up in Soweto. She describes her childhood as a magical experience that has informed the way she currently lives her life. “My family is very festive. We are always singing. Chopping carrots, we’re singing. Doing the garden, we’re singing. Let’s not even talk about Christmas time!” she recalls. “I was raised by women. Very funny. Very strong. Very entrepreneurial. All the women in my family had something going for themselves,” she explains with affirmative pride. Her perspective on feminism is an interesting one. Pabi gravitates towards the idea of a woman’s power being in her ability to play diverse roles in the spaces she occupies. “Our women are captains of industries and leaders in their fields. Yet, they are also lovers, nurturers and providers. That’s an amazing thing!” she says. Although Pabi is involved in many aspects of the South African entertainment industry, the exciting state of her radio career is the most interesting. She recently joined Power 98.7 FM, from Highveld Stereo, hosting her own show every Saturday and Sunday from 12:00 to 15:00. “Talk radio is a different kind of animal. It requires a different energy. A different mind-set. A different kind of fitness,” she says. She emphasises the importance of content preparation and articulative consistency in a talk radio environment. “You literally talk for three whole hours. You have to pay attention to what you’re saying and how you say it. You really have to be on top of your game as a talk radio host.”

With a diverse and strong professional resumé Pabi Moloi has been in the South African entertainment industry for close to 15 years. Yet, there’s something new and refreshed about the Pabi South Africa sees today. Over teas, salads and soup, Lelo Macheke chatted to her about her reinvention Ordinary people who’re not in media hold the common perception that the entertainment industry is an unstable one. To test the truth of this perception, I ask Pabi about the industry’s fickleness as well as how she’s managed to maintain a career in entertainment for as long as she has. “Well, I’d love to say that those rumours are entirely false,” she says as she puts down tea her, getting ready to give me a detailed explanation. “Yes, there are times when you’ll get a courtesy call asking you not to come to set because the show is ‘taking a new direction.’These things happen. Most of the time you don’t even get an explanation. But people have to understand that it comes with the territory. That’s how the industry works.” Pabi’s secret to overcoming the harsh inconveniences of the entertainment industry and have a flourishing career lies in her attitude. She sees her entertainment industry as a business. She seizes opportunities which match up to her worth as a professional woman. She doesn’t follow the temptations of fame and unsubstantial associations. And when projects don’t work out, she either grabs a hold of bigger and better opportunities or she cultivates opportunities of her own. She lets nothing stop her from being the best that she can be at her hustle. She contextualises the navigation of her career in the analogy of Jay-Z. “Think about it. Jay-Z started out selling drugs. Then he sold mixtapes. Then he sold albums. Then he started his own label. Then he became his own brand. There have to be levels to your hustle.” Self-development is very important to Pabi. She has recently adopted a healthier way of living by working out religiously and being conscious of her eating habits. She expresses that this way of living has become a form of therapy and meditation for her. It’s how she keeps sane and stays driven. Pabi is constantly adjusting her energy to align with the successes she wants, whether it be professionally or personally. Perhaps her comment about finding her femininity is more than just a realisation of what she can do as a woman that a man can’t. Pabi’s rediscovery of her femininity means she’s constructing new avenues of navigating her life in a way that’s more inclusive of how she identifies as a woman. Pabi is indeed a demonstration of independence and possibility. She’s a fan of hard work with an unforgettable spirit. Although she may be one of South Africa’s most powerful and influential personalities in entertainment, the real truth about Pabi Moloi is that she’s just a woman going through the renaissance of her own womanhood. 28 | www.joburgstyle.co.za

oint your feet! Point your feet!” shouts ballet teacher Joanne Petersen – as she helms a ballet class of 24 youngsters. These classes take place almost every afternoon at Uncle Tom’s Community Centre in Soweto – one of several Joburg Ballet Cuban School development programme satellite sites serving almost 500 students in total. Similar sites exist in Alexandra and Katlehong, focused on providing kids in local communities with classical ballet training. The classes are popular, driven by word of mouth, outreach campaigns by Joburg Ballet and the accessibility provided by the satellite sites. These schools serve a dual purpose: Grooming young dancers for a dance career and providing them with life skills such as poise, confidence and discipline. According to Joanne, body and mind work together. Her observations are backed up by local schoolteachers and by research from the Centre for Educational Research and Innovation (CERI). So while it’s recognised that few students will emerge as professional ballet dancers, the programme serves a wider purpose. Joburg Ballet’s Fiona Brown is responsible for orchestrating the development programme. She makes sure that teachers are informed, children are where they need to be, transport to and from the Braamfontein studios is arranged and that the Cuban ballet methodology is applied across all the satellite schools. “Our biggest

challenges are manpower for teaching, setting up classrooms and outfitting students – all things requiring additional funding,” Fiona says. Claudia Monja, a soloist with Joburg Ballet, visits the Soweto satellite school on a Tuesday as a guest teacher. Being Cuban and educated as a professional ballet dancer at the National Ballet School of Cuba gives Claudia’s instructions weight. Part of the programme’s aim is to give everybody an opportunity. This means supporting kids who cannot afford a pair of tights, a leotard or a pair of ballet shoes. However, the differences in background completely evaporate as soon as the kids enter the ballet class. “The ballet barre is an equaliser,” says Joanne. “There, you will never be the more or less privileged person. Your work is what matters. The effort you put into it is what you are going to get out of it.” As the sun sets on Wednesday, a busload of kids arrives at the Joburg Ballet studios. They keenly observe the professional dancers completing a rehearsal before changing. Today’s teacher is Angela Revie, a senior soloist with Joburg Ballet, and this class aims to demonstrate how flexibility exercises help the dancers accomplish their goals. After completing a gruelling sequence, the kids reluctantly agree that making a split has now become a lot easier than it was at the beginning of the session. Kids from these classes also get the opportunity to participate in Joburg Ballet productions such as The Nutcracker: Re-imagined. The Academy represents the final step in the Joburg Ballet education path and is reserved for the best dancers. It serves as a mechanism for the company to recruit experienced graduates, while also allowing students to experience a professional dance company from within. Students are taught by lead dancers, including prima ballerina Burnise Silvius, and get the opportunity to dance as members of the corps de ballet in productions.The technical requirements are extremely demanding.Reaching this level means that students have basically proved that dance is a viable career for them and they possess the technique, passion and mindset required.

ou haven’t lived until you’ve tasted a Freezochino from Mooz to wash down the best cheesecake in town. You also haven’t had a taste of Jewish Joburg unless you’ve sunk your teeth into a thick piece of Shula’s halva cake and taken home a dozen bagels. Life wouldn’t be the same without the challah from Corner Café in Glenhazel. Or the gefilte fish from Feigel’s. The Israeli products on offer at Kosher Deli. The excellent meat at Nussbaum’s butchery. Did we mention the pies at the Pieworks? The shwarma at The Shwarma Place in Norwood? And then there’s the fried fish at the Spar next door. And the kosher pizza that flies out of the store at Michelos Pizzeria. A taste of Jewish culture starts with food and ends there. It you want to experience Jewish hospitality, that twinkle-in-the-eye, tongue-in-cheek sense of humour, that bountiful generosity and warmth, then you have to talk food. You’ll be rewarded with plenty of what makes Jewish meals such a delight, as well as a taste of what it’s like to be enveloped by Jewishness. Gemutlikheit, it’s called in German. We’re not sure what it is in Yiddish. And what is Yiddish, you ask? It’s a mixture of a number of languages from all over Europe, where many of the Jews who have sinced moved here, to the US and Australia lived before the Second World War. It’s the language of Jewish grandparents and the generations before them, a language now only used in colloquial terms. In fact, Jewish vernacular is littered with Yiddish sayings that have become part of the language of the Jews all over the world. (See sidebar) Joburg, Cape Town and the far reaches of South Africa, not to 44 | www.joburgstyle.co.za

mention Nigeria and Morocco and, of course, the Middle East, Europe, North and South America, and even as far afield as the Scandinavian countries all have a Jewish population. They live in what is called the Diaspora – anywhere that isn’t the land of their birthright, the land of milk and honey, the Promised Land – Israel. And of course, each country has its own Jewish community, with its own little quirks, customs and traditions. South Africa is no different. And right here in Johannesburg you can experience a taste of this. There are approximately 50,000 Jews in Joburg. Not to mention around four Jewish day schools and numerous nursery schools and crèches scattered all over town. There are synagogues in many suburbs, as well as a smattering of kosher delis, butchers, coffee shops, bakeries and cafes. And unless you’re Jewish yourself, or know somebody Jewish who lets you in on the secret, you’re unlikely to enjoy a taste of Jewish food or tradition. Jewish food, as we said before, is the heart of the matter. If you want to know about being Jewish, then you need to discuss food with a Jewish person. Once food is part of the conversation, you’ll also find out about them and their families, too, because the two are intrinsically linked. If you’re lucky enough to be invited to a Jewish household for a meal, you’ll be smothered with attention, love, conversation – and food. IF YOU WANT TO KNOW There are two things ABOUT BEING JEWISH, THEN you need to remember when you’re a guest at a YOU NEED TO DISCUSS FOOD Jewish table. Firstly, finish WITH A JEWISH PERSON everything on your plate, because your hostess is waiting to fill it again. And secondly, don’t be surprised if you can’t keep track of the conversation, because

A SMATTERING OF YIDDISH

The definitive Yiddish and Jewish expression is oy, an iconic combination of astonishment, concern, resignation and other sentiments that only the word can express. • If it takes long to do something, or to get somewhere, then it’s a schlep, a long journey. • Ask a question such as ‘why?’ or ‘so?’ and there’s the perfect word to use – it’s nu? • Dafka is a little more difficult to translate – it means ‘just because’ and in many ways sums up the Jewish temperament. • Someone who is cheeky has chutzpah (pronounced ‘goeds-pa’. Another very Jewish trait often carried out very tongue-in-cheek. • If you’re crazy, you’re meshugenah. We Jews use this word a lot, often as a term of endearment. • A sad word is tsores, which means ‘trouble’. Often used by Jewish mothers to describe the angst her children give her at times. • A happy word is naches (pronounced ‘nag-is’), it is the joy you experience, usually from your children’s outstanding achievements.

HOLIDAYS AND FESTIVALS

• Shabbat – The name of the day of rest in Judaism, it happens on the seventh day (Saturday) of every week. On Friday evenings Jews all over the world sit down to Shabbos dinner. Saturday is a day of rest and work is prohibited. Shabbat is a happy day and is celebrated with the lighting of candles, drinking Kiddush wine, breaking and eating Challah (kitke plaited bread), prayer, spending time with family and dining out on scrumptious food. • Yom Kippur – The Day of Atonement is the holiest day of the year. It’s observed with a 25hour period of fasting, intense prayer and with most of the day spent in synagogue. • Hanukkah – The Festival of Lights is an eight-day holiday commemorating the rededication of the Holy Temple in Jerusalem. The festival is observed by the lighting of the candles each night on a nine-branched candelabrum known as the menorah. Hanukkah festivities include playing dreidel (spinning top) and eating oil-based foods such as doughnuts and latkes – similar to a potato rosti.

You see, the Jews love to party, and given the opportunity, they’ll celebrate up a storm. Two of the most well known Jewish festivals are Jewish New Year (Rosh Hashanah), and Passover (Pesach) when everybody eats unleavened bread (Matzos) to celebrate the 40 days and nights that the Israelites travelled through the desert, fleeing Egypt under Pharaoh Ramses rule. There’s always plenty of L’Chaims and Mazaltovs, food, lots of loving speeches, and dancing. At a wedding, the couple is lifted into the air on chairs, at bar and bat mitzvahs, the girl or boy gets the same joyous treatment. Whether it’s to dance off the fabulous meal that precedes this tradition, or just because they love having fun, a Jewish celebration is always filled with dance, laughter, noise and music. wner of the Alice Art Gallery, Alice Pitzer, keeps us in the interesting art investment know. JOBURG STYLE Starting an art collection for the first time can be intimidating. What do you need to consider and where do you begin? >ALICE PITZER The right artwork will take residence in your heart and mind before it takes up wall space. The process of acquiring, learning about and living with contemporary art should be an adventure and doesn’t end with a single work being hung on the wall. There are many reasons art exerts a hold on collectors but, for the best of them, it’s the thrill of engaging in a process that’s both mysterious and profound. What’s most important, is to begin with a piece that ‘speaks’ to you. Your first purchase shouldn’t necessarily be governed by its possible future growth or by a ‘name.’ As your taste develops over time, it becomes more important to build a relationship with a gallery that have works appealing to you. Through this relationship the gallery will then start to advise you on certain artists and their growth and investment potential. Over the last 25 years we’ve seen art lovers build amazing collections. Their first piece normally is their best investment as it started them on a great journey. You need to be true to yourself and your taste. Acknowledge types of works you enjoy that will make your collection personal. Educate yourself, be an informed buyer. Take every opportunity to discuss the fine points of what you’re looking for with as many different experts, curators, collectors, gallery personnel and other informed media. JS How do you weigh up the purchase decision between a piece that you absolutely

love and one that has longterm investment potential? >AP Always buy the piece you love. Buying art is to possess something of great beauty. That it can grow in monetary value is secondary. It’s true that art can be defined as investment art and you can be sure of future growth but what’s the point of owning a piece you don’t enjoy? Learn about the different artists and how they have progressed over time. Feel your passion grow. JS Which artists’ work should you consider from the onset? >AP If you’re looking at it from an investment point of view, buy a smaller work from a well-known artist rather than an emerging artist. I still don’t know all the great South African artists, so for me it would be daunting to open to international markets as well. South African art is very much undervalued. JS How do you know you’re getting an original piece? >AP By definition every piece an artist paints is a one-of-akind. Even if the artist tries to replicate a previous piece it will be different. To me it’s more important that an artist is original in his/her approach to a subject matter. I like to see originality in a style that can be clearly identified as a certain artist. For example, you don’t have to see every landscape Otto Klar painted to be able to recognise his style of landscapes. Most artist have what they call ‘lines’. Otto Klar painted landscapes and flowers, both very distinct in style. If you’re looking at original as opposed to copied or fake, works South Africa has an example in Father Frans Claerhout. Many fakes or copied works are in the market place carrying his name. Before you purchase such a piece you need to know the history, who owns it and where they got it. Get an expert opinion


from a good gallery or auction house on authenticity of his work, as in some cases it can be very difficult.

JS What style should you focus on? >AP Never underestimate a drawing. Encapsulated within a work on paper is often the genesis of a larger work. And, as the traditional hierarchy of masterpieces go, paper is considered a lesser form than canvas and usually costs much less. There’s magic to mixing up art. It has a presence that goes way beyond the ability to simply fill a space on a wall. A small oil painting can make a louder noise in a room than a whizz-bang pop art sculpture. Accommodating art among other possessions requires sensitivity to the balance, colour, shapes and themes inherent in the various objects. JS What is good art to buy right now? >AP Good art is to stay true to yourself and buy from your heart. Be true to your dealer too and make sure they understand

whether you want a growing investment or just a beautiful picture on the wall. Explore various artists in respect to popularity, universal theme, recent sales and sustainability. JS Once the art bug has bitten, and you have a growing collection, how do take it to the next level? >AP You’ve bought pieces you love and some you might have bought purely on name. Your tastes have settled and you know which artist you prefer. You might even have a favourite gallery and a portfolio adviser. The search is on for gems by the artist you love. Don’t be afraid to let go of art you no longer want. Use your space wisely to express yourself through your art. Most artists have ‘lines’ that enable them to paint full time, but every now and then they paint something completely different or experimental. These are the pieces that you want, they are possible collectors pieces.

JS What constitutes an amazing art collection? >AP When your jaw drops! I love the idea of what I call ‘a wall of smalls’, also known as salon-style. It’s a wall full of small works from various artists ceiling to floor. I have other large amazing pieces that every time I see them, I love them. I love exceptional pieces of well-known, great South African artists sought for and collected over a period. JS Explain the pros and cons of buying at an auction as opposed to in a gallery or even from the artist direct. >AP It’s a personal choice more than anything else. Buying at an auction, you’ll

get the satisfaction that you’ve outbid everyone else and own the piece. Your homework on the market values of work is more work, but can be a journey by itself. The greatest advantage of an auction is that it gives the buyer a great opportunity to set the price. Galleries offer a more relaxed purchase experience and you have advice available to you about a piece or artist. A greater range and history of artists are often available. Buying from the artist is also an experience and makes the purchase more personal. Research the price and reselling of an artist’s works beforehand. www.aliceart.co.za

he Mosaic Association South Africa’s (MASA) Cher Manning gives us the ins and outs of mosaic. In many countries around the world mosaic is considered a fine art medium, and not merely a craft, as is the case here. Since MASA's inception in 2009, we've been encouraging and motivating our mosaic artists to concentrate on improving their technical skills and create much more than mirrors, crosses and other home décor items. What is mosaic? “The term ‘mosaic’ refers to creating a picture from solid materials. Mosaic has been around for thousands of years and we’ve come a long way from subtle shades or natural stones early craftsmen had to use. Since the inception of baking glass into small

square tiles, there are no limits to the innovation of new materials available to the modern mosaic artist.” Cher explains there are no rules to what is used to make a mosaic. Ostrich shell, vitreous glass, ceramic tiles (glazed and unglazed), crystal glass, found objects like pebbles, sea shells, jewellery bits, buttons, ceramic inserts, stained glass, metal tiles and a hot favourite, handmade fused glass tiles in any shape and pattern you can think of – the options are endless. “Mosaic experienced a major rebirth a few years ago and is steadily gaining momentum. We, on the southern tip of Africa, may have been lagging behind the rest of the world but we’re gradually catching up. Joburg Style was inspired by a few of Joburg’s favourite street eating stalls and food trucks and came up with a few recipes of our own that we think would go down well at your next foodie get-together.

GOURMET HERB MAYO HOT DOG Serves 4

Ingredients For the herb mayo: ½ cup (125ml) good quality mayonnaise Small handful selected herbs, washed (coriander & dill) Drizzle of olive oil Squeeze of lemon juice Sea salt & freshly ground black pepper

Toasted hot dog buns, to serve Steamed Bockwurst sausages, to serve Sliced dill pickles, to serve Method 1. For the herb mayo, combine the mayonnaise, herbs, olive oil, lemon juice and salt and pepper in a bowl. Using a hand blender, blitz to form a smooth, even consistency. Set it aside. 2. To assemble, place a steamed Bockwurst sausage into each hot dog bun, followed by sliced pickles and drizzle with the herb mayo. 3. Scatter with sliced spring onions before serving.

BEER-BATTERED FISH TACOS WITH CORIANDER CREAM Serves 4

Ingredients For the beer batter: ½ cup (125ml) cake flour 1 can of beer Sea salt & freshly ground black pepper Vegetable oil, for frying 200g fresh hake, filleted, skin removed, cut into chunks ½ cup (125ml) cake flour For the coriander cream: ½ cup (125ml) sour cream 2 tbsp (30ml) mayonnaise Juice of ½ a lime Small handful coriander, washed Sea salt & freshly ground black pepper 12 taco shells, to serve 1 small cos lettuce, shredded Chopped tomatoes, to serve Sliced spring onions, to serve Micro coriander, to serve

Method 1. For the batter, combine the flour and beer in a large bowl. Mix well to form a smooth batter. Season with sea salt and freshly ground black pepper. 2. Heat the oil in a large saucepan. Season the hake and dip into the extra flour and coat in the prepared batter. 3. Fry batches of the fish in the oil for 5 minutes or until the batter is golden, crispy and cooked through. Drain on

absorbent paper. Repeat, until all the fish has been used. 4. For the coriander cream, place all ingredients in a bowl and using a hand blender, blitz until well incorporated. Set it aside. 5. To serve, place a layer of lettuce into a taco shell, followed by some fish, tomatoes, spring onions and drizzle with coriander cream. Ingredients 600g beef short ribs, cut into chunks 2 garlic cloves, grated 2 star anise 1 cinnamon stick 1 tsp (5ml) Chinese Five Spice 3cm piece fresh ginger, grated 100ml reduced salt soy sauce 1½ cups water 1 whole red chili, deseeded & chopped 1 tbsp (15ml) honey Freshly ground black pepper Steamed Jasmine rice, to serve Sliced spring onions, to serve Sliced red chili, to serve Fresh coriander or micro-herbs, to serve

Chopped tomatoes, to serve Method 1. Place the chicken, olive oil, lemon juice and garlic in a bowl. Season well with sea salt and freshly ground black pepper. Cover and marinate for 20 minutes. 2. Skewer the chicken onto bamboo skewers and grill over a hot griddle pan or braai for 10 minutes (turning regularly) or until the chicken is cooked through. 3. For the tzatziki, combine the Greek yoghurt, garlic and cucumber in a bowl and season. Mix well. 4. Serve the chicken souvlaki with toasted pita, a dollop of tzatziki and chopped tomatoes.

Method 1. Place the ribs in a large roasting dish. 2. Add the garlic, star anise, cinnamon, Chinese spice, ginger, soy sauce, water, chili, honey and season with freshly ground black pepper. Mix well. 3. Cover with tin foil and place in a preheated oven at 150 degrees Celsius for 2-3 hours or until tender. 4. Serve the ribs with steamed rice and garnish with spring onions, chili and herbs.

MOJITO TIP#BALANCE In order to balance the sourness of the limes in the mojito, use a simple syrup which is a fancy way of saying sugar water. To make it even better infuse it with mint to add to the flavour.

“T

here’s no clear source of the true origin of the cocktail. The first recordings of the ‘cocktail’ date back to the 19th century,” says national consultancy manager for Shaker SA, spirits expert and drinks enthusiast, Cuan Dumas. He explains further: “One story I believe to have an element of truth was an article published in 1803 in the Farmers Cabinet. It refers to a guy who ‘drank a glass of cocktail – excellent for the head’, obviously referring to the hangover cure. “There’s no evidence to support the first cocktail ever created. However, many in my profession like to believe the ‘Sazerac’ was the first American cocktail, from New Orleans.” Cuan says that cocktails throughout history have changed drinking trends. “From Sex & The City’s Cosmopolitan to beachside coolers like the Mojito and Sex on the Beach, as well as hotel bar classics defining what seems to be the gentleman’s drink of choice these days – Old Fashioned, Martini and Manhattan.” I found another cocktail story too, which I thought was worth sharing. In 1586, a fleet of English ships, commanded by Sir Francis Drake, was stranded near Havana, Cuba. The ships were full of plundered gold but the crew was too sick to sail, or more importantly, fight. Which was a problem, considering the number of natives that were out for their blood. According to the legend, Sir Francis took local medicines such as mint (good for stomachs), lime (to treat scurvy), bark from the chuchuhuasi tree soaked in rum (a cure for dysentery) and cane sugar (to make it all taste better), and mixed it all together. The resulting drink, dubbed ‘El Draque’, is credited with curing his sailors, who then went on to plunder a few

more villages on their way home. The word 'cocktail' comes into it because Sir Francis’ crew allegedly drank this concoction from a long spoon with a cocktail handle. Sound like a stretch? There is, however, a striking resemblance between El Draque and the drink now known as the Mojito. So, you decide. Matthew Peckham, general manager of Liquidchefs Rosebank, says that the most popular cocktail with their student clientele tends to be the Long Island Iced Tea. He explains there are a couple of classic and neo-classic cocktails that have influenced the way we drink today. “Take a look at the Mojito and Caiprinha craze, as well as the Cosmopolitan trend.” “Internationally, I’d say cocktails like the Negroni (equal parts Gin, Sweet Vermouth and Campari) are a huge hit with bartenders around the globe, as are Old Fashioned, made with Bourbon and bitters. Locally I see the ladies are still in love with the Strawberry Daquiri.” Matthew says that if cocktails are made correctly, they should be balanced. “Not too sweet, not too sour, not too strong, not too weak. The sum of all parts should amalgamate to produce an awesome drink.” He shares his favourites: “For frozen drinks I like the Miami Vice. It takes half a Pina Colada topped with a Strawberry Daquiri, great for summer. When it comes to salty cocktails, I have a Salted Caramel Popcorn Whisky Sour. It’s a delicious playful drink made with real popcorn and served in a popcorn cup with fresh popcorn overflowing. For the ladies there’s the Bubblebath Martini. For men I recommend the Chocolate Bourbon Old Fashioned or a Negroni.” www.joburgstyle.co.za | 63

First mixed sometime between 1934 and 1948, this pink, fruity concoction was named after the 15th century Venetian artist, Giovanni Bellini, who liked the peach colour. TIP#FRUITY It's the ultimate summer aperitif. Don't be afraid to mix the fruits up a bit.

One of the world’s oldest cocktails, still popular today, the Old Fashioned is thought to have started life at the Pendennis Club in Louisville, Kentucky – the home of American Bourbon. So established is this classic drink that it even has a tumbler glass named after it. The cocktail is said to have been brought to the Waldorf-Astoria hotel in New York by distiller Colonel James Pepper in the 1880s.

Since opening its doors for business in Paris on Thanksgiving Day (26 November) 1911, Harry’s New York Bar has established itself among the great cocktail bars. It was a regular haunt of drinkers, including Earnest Hemingway, Humphrey Bogart and Jack Dempsey, Harry MacElhone was the original bartender and, later, owner of this Parisian institution. His legacy lives on in the numerous drinks he created, including the Sidecar in 1931 and, most famously, the Bloody Mary in 1921.

MAI TAI – TRADER VIC’S IN CALIFORNIA Generally agreed to have come out of Trader Vic’s ‘Polynesian Bar’ in Oakland, California in 1944, a rival claim to the Mai Tai comes from Hollywood’s eponymous staple, Don The Beachcomber, in 1933. However, it is certain that the cocktail’s name comes from the Tahitian word for good – maita’I.

5. MANHATTAN – THE MANHATTAN CLUB IN NEW YORK Few drinks have the universal appeal of the ‘king of cocktails,’ the Manhattan. According to popular history, Dr Iain Marshall invented the drink at New York’s exclusive Manhattan Club in 1870, for a reception in honour of presidential candidate Samuel J Tilden. TIP#THE RIGHT WAY Learn to make a proper Manhattan and you'll know how to create at least one flawless thing in this world, and the person you're making it for will know, and respect you. Place the glass in the freezer for 30 minutes (old-style cocktail glass).

SINGAPORE SLING – THE LONG BAR, RAFFLES HOTEL IN SINGAPORE Developed by Raffles' head barman, Ngiam Tong Boon, before 1915, the Singapore Sling has been enjoyed at the Long Bar by the likes of Rudyard Kipling, Noël Coward and Joseph Conrad. While the recipe for this classic cocktail has changed over the years, the key to a classic Singapore Sling is freshly pressed pineapple juice to create the drink’s famous foamy top.

The official drink of Puerto Rico since 1978, the Pina Colada was probably first mixed at the Caribe Hilton's Beachcomber Bar in San Juan, around 1954, by Ramon Marrero, the bartender charged with creating this signature drink for the hotel’s celebrity clientele.

Jennings Stockton Cox invented the Daiquiri in 1898. He was in the town of Daiquirí (Cuba) overseeing the exploration for iron ore. The miners were already receiving a monthly ration of Bacardí rum, but, after experiencing the heat firsthand, he took some and shook it with fresh lime juice, sugar and ice to cool him down each morning ahead of going into the very hot mines.

Just back from a memorable trip exploring Amsterdam, David Gillson offers a fresh look at the best places to go, shop and dine in this laid-back European city

T

here’s a new energy in Amsterdam, something that grabs you the moment you arrive in this quirky European city with its high, skinny buildings and endless canals. It may not be a glamorous place, like London or Paris, both of which I visited this past month, it’s much cooler, more laid-back and chilled. Amsterdam has been reinvented recently, and has become a creative hub, a very gentle, very eco-friendly town with lots of quirky, interesting little shops, restaurants and areas to explore. We stayed in one of

the newest, trendiest areas, called 9 Small Streets (9 Straatjes), which is located within nine little streets – three running parallel to each other and six crossing two canals, Herengracht and Keizersgracht. These old cobbled streets are jam-packed full of interesting little stores, restaurants, bookshops, homeware shops and hairdressers. It’s also special because it’s not just a trendy tourist area – locals come here to eat, drink and shop, too. I recommend spending an entire day exploring, shopping and dining here.

The Hoxton New on the block, the Hoxton opened its doors in July. Created from five separate canal houses, it was originally used in the 17th century as the home of the Mayor. There are 111 rooms across five floors, all offering quirky décor, high ceilings and lovely canal views. ON THE ROAD Enjoy these three fun, one-day adventures from Joburg to explore greater Gauteng’s fascinating surroundings

#1 The Cradle of Humankind Also consider Either en route to or from the Cradle, or at lunchtime, why not visit Van Gaalen Cheese Farm, which not only offers a tour of the factory that shows how its delicious cheese is made, but also has a restaurant where you can enjoy a cheese-filled lunch in a lovely setting. If you book the day before, you can have a picnic hamper prepared for you, which you can enjoy in the beautiful surrounds.

9am: Today you head out to the famous World Heritage Site, the Cradle of Humankind, located around 50km northwest of Johannesburg. There is so much to see here, that you can easily spend the day exploring both Maropeng, the Cradle’s official visitor centre, and the spectacular Sterkfontein Caves, which date back more than four million years. There are 14 fossil sites to explore at the Cradle in addition to the Sterkfontein Caves. 10.15am: A highlight of a visit here is the Maropeng Museum itself. But first, you embark on an underground boat ride through time, going backwards from the present day to when the earth was initially created many millions of years ago. Experience what is was like to live in the Ice Age, as well as the time when the earth was submerged underwater on your journey back in time. You also visit the Tumulus, an enormous burial mound on your unforgettable journey of discovery. Afterwards, take time to explore the Maropeng Museum itself, which offers an interactive area that takes you forward in time back to the present. The various fossil displays highlight the history of humanity and its origins. These fossils, which were uncovered during excavations of the area, include human skulls, as well as tools and other items used by people in the Early Stone Age. You’ll see cleavers and axes, the tools of hunter-gatherers who lived in this area a million years ago. 1pm: Enjoy lunch at Maropeng at a choice of three excellent restaurants, one of which is located in the Maropeng Hotel. The other two are located within the Maropeng precinct. There’s the Market Place Restaurant, where you can enjoy snacks and light meals, and the Tumulus Restaurant, which is more formal and offers a choice of dishes that you can enjoy while savouring breathtaking views over the Cradle of Humankind. #2 Journey to Cullinan

9am: The quickest way to get to Cullinan is by taking the Gautrain to Hatfield Station. From there you can embark on a morning guided tour of Cullinan, or if you prefer, you can use the Uber system to get you there, and then explore at your leisure. This particular diamond mine is most famous for being where the largest gem-quality diamond in the world was found in 1905. Called the Cullinan Diamond, it was 3106.75 carats and approximately 10.5cm long. 10 – 10.30am: The little mining town of Cullinan, home to the Premier Diamond Mine, or Cullinan Mine, is about 20 minutes’ drive east of Pretoria (Tshwane). The diamond, discovered by then owner Thomas Cullinan, who owned the mine at the turn of the century, was sold to the Transvaal government and presented to King Edward the Seventh as a birthday gift. Aside from its phenomenal clarity, the diamond is also black in the middle. The diamond was cut into nine stones, the largest of which is a pear-shaped stone of 530.20 carats called The Great Star of Africa. choose from – the Superman, the Granny and the Skidmark. Their names say it all! Granny is the slowest of the three, a scenic zip slide that takes you at a leisurely 30kmph down the gorge. Superman is the absolute opposite – it’s 570m long, and reaches up to a speed of 74kmph as you race across the gorge 65m up. Skidmark is 350m in length. With a choice of an hour or twohour session, there’s plenty to keep you busy all afternoon before heading back to Hatfield Station to take the Gautrain back to Johannesburg.

#3 Safari adventure

9am: Yes, you can go on safari just outside Johannesburg! All you need to do is take the Gautrain to Hatfield Station close to Pretoria. From there you head northwards on a half-hour drive to Dinokeng Private Game Reserve, home of the Big Five. You can either join a tour to Dinokeng, or take an Uber or taxi to get there, but remember. You have to prebook your safari, you can’t just arrive. Dinokeng is the only free-roaming game reserve in Gauteng, which makes it quite unique. In fact, it’s the only free-roaming game reserve in the world that is home to the Big Five and close to a residential area. 10-10.30am: Enjoy a fascinating two-hour game drive in the reserve in an open-top safari vehicle with an experienced driver/guide. If you request this in advance, you could also enjoy the thrilling experience of tracking animals on horseback, or on a quad bike. Whichever way you choose to game view, you’re likely to see a wide variety of animals, including lion, rhino, buffalo, leopard, elephant, cheetah, hippo, crocodile, giraffe and various species of antelope. Smaller animals include aardvark, hyena, aardwolf and a variety of beautiful birds. 1pm: Enjoy lunch at the Kingfisher Restaurant, which is located in the reserve on the Mongena Game Lodge. 3pm: Relax after a lazy lunch, before heading back to Hatfield Station to take the Gautrain back to Johannesburg. ALSO CONSIDER There’s more to do at Dinokeng than seeing the animals. You could also leave much later and go bass fishing in the afternoon, if you wish. Or, if you prefer, you could take a township tour through Mandela Village in Hammanskraal.

She has worked in a variety of mediums that speak of township life: Sheshwe cloth, photographs from Kliptown worked on in pastel and graphite, and newspaper collages. Recycling materials is part of Kliptown’s daily life, and Marion has considered that in her work. By enlarging the portraits, Marion wanted to achieve a sense of grandeur and honour for the people who are often overlooked in life by many. “The realness of the people in Kliptown and the way they live is what I am choosing to document and explore in a way that will tell the stories about this community. Kliptown and its people brought me back to art, because it became a necessity for me to capture these precious moments. These were selected and researched by postgraduate History of Art and Heritage students, in the context of a course on Object Biographies. Underpinning the project is the desire to know more specific details about objects in the WAM collection. In a sense, the students were tasked to recover, as far as possible, the complex biographical trajectories across time and place of the object they had selected. Each of the objects to be displayed is accompanied by an extraordinary story captured in the book Life-Line-Knot. Though each essay or research journey yielded different kinds of information, each one offers fascinating insights into the processes of research, and the recovery and construction of knowledge and histories. SOWETO

No visit to Joburg would be complete without a trip to the sprawling township of Soweto. Julia Rice sat down with Richard Greig, of fifth-generation successful jewellery company Charles Greig, to chat about their expansion into art and their new concept store

THE CHARLES GREIG ART GALLERY OPENED IN HYDE PARK CORNER SIX MONTHS AGO. My brother

Christopher became involved with Ardmore Ceramic Art about 20 years ago and since then we’ve been a very strong supporter of the brand and very involved in their product. It’s an amazing local porcelain brand made by locals in KwaZulu-Natal. There are 20 male sculptors who make onceoff pieces and 30 female painters who paint all the sculptures by hand. It’s incredible, there’s so much work that goes into each piece. We’ve held exhibitions over the years in Hyde Park Corner’s Centre Court [before the Charles Greig Gallery opened].

MY OTHER BROTHER DONALD IS A BRONZE SCULPTOR. He has his own foundry and gallery in Cape Town, which

his wife runs. He’s been sculpting for 20 years and has become well known internationally. We sell his work in our stores too. Christopher holds a bronze exhibition every year in Hyde Park Corner, and once it’s finished, he moves the exhibition to his garden and hosts a charity day. It’s both a garden show and bronze exhibition, and is very popular. My mother is a bronze sculptor too.

THE CHARLES GREIG CONCEPT STORE AT THE MICHELANGELO TOWERS OPENS AT THE BEGINNING OF NOVEMBER, AND WILL BE UNLIKE ANY OTHER. The store will sell 80 percent local and African products.

These include crocodile skin luggage, belts, bags and wallets brand Zambezi Grace (made in Joburg), Ardmore, Anna Trabinsky’s upmarket clothing range from Kenya, and my wife’s cashmere gowns and blankets from Mauritius. We’ll also have local coffees and Kenyan teas. There’ll be wonderful products for tourists and locals – however, it’s not a curio store, it won’t have a kitsch feel.

JEWELLERY IS OUR PASSION. However, the arts side of the business has become popular, and the new store will showcase this. My brothers and I buy the stones, design our own jewellery and have our own workshop. That’s our speciality. MY INTEREST IN ART HAS PROGRESSED AND WITH THE NEW STORE IT’S GOING TO GO FURTHER. When
