Our fashion shoot this issue took place in the Artist’s Village of Downtown Santa Ana. Memphis, Lola Gaspar, and the Grand Central Art Center provided great spots to display some of this spring’s sleekest fashions from MaxMara, Novecento and Lugano Diamonds. Men’s To our readers: The launch issue of bask generated a great deal of response from readers. While the questions covered a number of topics, one overriding query stood apart:

Why a special section just for men? Many female readers, in particular, felt that men had limited interest in a philosophy centered upon the notion of Luxury in Balance. Some challenged whether men were truly committed to acts of charity. Some even questioned whether the men in their lives could read at all. Well, the good news is that men do care, they do want to know, they will read and they are committed to giving back…and not giving up. How do we know?

Because men aren’t just telling us, they are showing us. We see them in their offices, of course. And there is virtually no man who doesn’t enjoy his time behind the wheel of that favorite new

toy. We see them every day on one of Orange County’s finest golf courses. They are there with friends or family, planning the years to come as they take in some of our area’s most beautiful views. They are finding balance. They are giving back to people and schools and organizations that are making a difference. They are not just writing checks, but contributing valuable time and putting a very masculine, human face to some of Orange County’s most noteworthy charity efforts. And they want to know what else they can do.

What got you cooking? My aunt opened one of the first cooking schools in Baja; I was her assistant. I was actually a student of architecture, but realized cooking was my passion. So I quit school.

But there is a huge interest in Mexican cuisine. I always hear people say, “Mexican food is my favorite food!”

And about this food truck trend? Oh, I love it! The trucks have been around forever, but with social media, Facebook and Twitter, it’s become something cool.

What’s the attraction? Well, you see chefs like Ludovic Lefebvre, who did L’Orangerie in LA with a truck! I remember working at Bon Appétit magazine, going to his restaurant and ordering Duck L’Orange. Now, 12 years later, he’s got a food truck! It shows the progression of cuisine and the direction we’re going.

I had been stalking them for a decade. I sent them a tape when I was 19. I tested three times; the first two times they said no. Then they finally said yes!

Tell me about your show, “Mexican Made Easy.” I like things fast, not fussy and fun. In the past, shows were afraid to focus solely on Mexican food.

bask magazine launches a new era of luxury in balance

What better way to celebrate the debut of bask than with a party bringing the pages of this dynamic new magazine to life? Earlier this winter, more than 500 guests gathered at the “La Bastide” Estate in Shady Canyon — listed with Chris Valli and Rick Langevin of Surterre Properties — to bask in the finer things, in balance. Models donned the latest looks from MaxMara and John Varvatos, accented with stunning pieces from Lugano Diamonds and Rolex. Chef Azmin of Sapphire Restaurant and Pantry in Laguna Beach enthralled guests with a cooking demonstration, while Fresh Events and Catering provided delicious food and Adina Schaefer of The Ritz Carlton Scottsdale, Arizona, provided a custom cake featuring the cover of bask. Ion Vodka provided martinis to the guests, and International Wine Ventures, and Derby Wine Estates of Paso Robles provided the wine. Men and women alike visited the event’s “Men’s Lounge,” which featured two new Audi models, the 2011 A8 and the R8 convertible, provided by Audi of Mission Viejo. Guests also reveled in a live art show by artist Aaron R. Thomas (provided in association with the Peter Blake Gallery in Laguna Beach), as well as music from renowned DJ Mark Moreno. There was never a lull at the lively launch party, with guests staying late into the evening to mingle and enjoy the event’s offerings. B. What better way to celebrate the 25th anniversary of the Orange County Performing Arts Center than with a new name honoring its biggest supporter and champion, Henry Segerstrom? The new moniker — “The Segerstrom Center for the Arts” — was announced during a grand ceremony on the Arts Plaza on a beautiful January 12, 2011 evening. On hand were 1,500 arts patrons representing a Who’s Who list of Orange County civic leaders, philanthropists, artists, leaders of the arts community, a select group of friends, the two-dozen-plus-strong Segerstrom family, and former Governor Arnold Schwarzenegger. Following a series of accolades honoring the Segerstrom family and their contributions to the creation of the Center, the former Governor presented Mr. Segerstrom with the Governor’s Ring, while the amazingly talented Chris Botti and his band played a rare four-song private concert. The new name was unveiled via a 40-foot banner and 10 minutes of spectacular fireworks. The event also announced the commissioning of a new ballet featuring two stars from the Bolshoi Ballet and a new initiative to distribute 10,000 tickets for $10 each to allow for even broader access for Orange County’s residents to the Center’s upcoming events. CHOC Children’s (Children’s Hospital of Orange County) presented its Children’s Champion Award to the Anaheim Ducks and the Lady Ducks on January 22 at The Island Hotel in Newport Beach. Guests of the CHOC Cherishes Children Gala enjoyed the award presentation and a fabulous evening of delicious cocktails, dinner, entertainment and a live auction. The evening raised more than $600,000 to support the “Change CHOC, Change the World” campaign, which aims to transform the future of CHOC, specifically by providing the community and region with a world-class, sustainable pediatric institution. A Champion for Peace The Center for Living Peace in conjunction with the University of California, Irvine (UCI) hosted the second “Living Peace Series” on the evening of January 25th. The event welcomed special guest Sir Richard Branson, CEO and founder of the Virgin Group to address the audience. move the earth.” – Archimedes For so many of us, the place where we stand is solid. Whether it’s a physical space or one of internal strength, the place where we stand gives us both the inner balance and external confidence we need to take steps forward in our lives — to meet challenges, build relationships, make a life for ourselves and for those who depend on us. When this place — our foundation — is intact, things seem possible — or, at a minimum, not impossible. But when our foundation is not intact, when it has cracked and we lose our

balance, we are very much in danger of falling down. I have seen the foundation in my life crack more times than I can count, and like many of you with similar experiences, I can remember the people that appeared, or the internal places to which I turned, to prevent the fall. They were significant experiences that shaped my life. And they help me keep my balance today. It is for this reason that I chose a very special nonprofit organization to be the highlight of this column. It is called Families Forward and its mission, in essence, is to restore balance to those who are fighting to survive the cracks in their lives — from a death in the family, loss of employment, abandonment by a spouse. I did not know about this wonderful charity before conducting research for bask, but having now spent time getting to know their management, staff and volunteers, I have been very impressed. Their very tangible impact on those in need is moving, and I am honored to share their story with you here.

Families Forward is an Irvine-based nonprofit whose mission is to help families in need achieve and maintain self-sufficiency through housing, counseling, education and other support services. They have been in existence since 1984, and serve more than 9,000 individuals throughout Orange County each year. With transitional housing, food, counseling, career coaching, and referral programs available, Families Forward is truly successful at achieving its mission of creating stability for families who have lost their balance. And, they provide this help with a strict eye on expenses, giving 87 cents of every dollar they raise to those in need. My personal experience with the staff and volunteers at Families Forward echoes the reason they have achieved such success over the years. This first-rate organization is well managed by caring and effective individuals who have sincere compassion for those they serve. I had the pleasure of spending time with their Executive Director, Margie Wakeham, as well as two key staff members, Megan Markel and Claudia Vazquez, who were knowledgeable, friendly and always available to answer questions and provide details on every facet of the organization. I also enjoyed serving as a volunteer in the organization’s food pantry, alongside my eight-year-old son Griffin. We had a wonderful time, putting together kits of key household items and food to be distributed throughout the year to families. Which brings me to the purpose of this column — to recommend to you, our readers — an organization you can trust. If you have considered getting involved with a charity, either as a donor or a volunteer, and are looking for one that works with families in the community, Families Forward is one that I would suggest. Not only do organizations like Families Forward serve others in a tangible and effective way, they also give something back to you — the incredible feeling of doing something for someone else, a feeling that will help you stay balanced in your own life.

Los Angeles interior designer Krista Ewart, Orange County photographer Michael Sage and Bettershelter developer Steve Jones all refer to the Rose Bowl Flea Market as the “granddaddy” of flea markets, and they likely aren’t alone. “I am constantly amazed by what people pull out of the Rose Bowl. The most inspiring finds are there,” says Jones, who likes to stop by the Little Flower Candy Company in Old Town Pasadena afterward.

“Organic isn’t as important to me as local,” says Chef Daniels. “We’re flying, trucking and shipping in foods that we can grow in our backyard. We should be supporting local farmers who are bringing their products to the market. That’s where you get the best stuff, and you know where it’s coming from.”

KCRW’s Kleiman gives the Sunday Hollywood Farmers’ Market high marks for “sheer entertainment” and people watching. “It’s Hollywood, an always entertaining mix of high and low – including celebrities in their sweats.”

Open-Air Not only can you pick up goodies you can’t find at grocery or department stores, you get to do it in the fresh Southern California air when you shop the region’s plethora of outdoor markets.

Qual it y “You can only create a great dish with great products,” says Executive Chef Renieri Caceres of Rustica in Newport Beach on why he shops local farmers’ markets, such as the Newport Beach and Santa Monica markets.

R ecycl e Buying used instead of new is eco-chic. “The fact that everything that is at the flea markets has already had at least one life makes for the most eco-friendly shopping there is,” says Bettershelter’s Steve Jones.

Saltsman’s favorites of the season include “green garlic (young garlic plants before the bulb has formed; you can use the whole plant as you would a leek or scallion and the flavor is mild), fava beans, asparagus, lettuces, pea tendrils and leeks.”

New York Fashion Week: A look inside the fashion frenzy

It happens only twice a year. When editors, stylists, socialites and celebrities flock to New York City for the biggest event of the season: Mercedes-Benz Fashion Week. This year’s Fall 2011 Collections had a new home at Lincoln Center, bringing a whole new vibe — and the same rush of excitement — to the runways. Here are some highlights of the week:

Day 1: Approachable Avant-Garde

Day 2: Sophisticated & Sultra

Leaving breakfast in the Meatpacking District, a sign catches my eye: “Improvd.” It’s a new storefront for a line I discovered last year — one of the most beautifully tailored, fresh yet timeless, and sophisticated collections on the market. Designed by Valentino Vettori, the line is selling out at stores like Madison and Intermix. Improvd.com

I always love getting a backstage glimpse of the madness and fury of pulling a fashion show together. Amy Denoon, Principal of Beach House PR, invited us backstage to watch her hair team create the looks for Alexander Wang’s show. Overseen by hair stylist Guido Palau, the look was “downtown, messy chic,” and was achieved with Sultra’s new “Bombshell” rod curling iron. The clipless rod allows you to create messy, beachy waves that last all day.

The next stop is the Global Glam Presentation — and it turns out to be our favorite of the day. A select group of designers were chosen by the W Hotels to create looks exclusive to their hotel boutiques. Swimwear designer Melissa Odabash’s bikinis and cover-ups will make fashion waves at W Hotels in beachside locales. Minnie Mortimer’s British-inspired frocks will hit UK shores, while delightful baubles by Lulu Frost and Behnaz Sarafpour will head for St. Petersburg. Before the show begins, the flashes are blinding as Vogue’s Editor-in-Chief Anna Wintour takes her front row seat. Other notables in attendance included Alicia Keys and Kanye West. The show, at Pier 94, was a fresh approach to a modern runway, with lights creating an illuminated catwalk on the cement floor of the warehouse. Day 3: Chic Couture Basics The Improvd boutique is a-buzz for the Fall 2011 presentation. Designer Valentino Vettori has created a deconstructed reinterpretation of timeless classics, making them modern for today’s fashionistas. The neutral palette of knitwear, outerwear and accessories in raw, over-dyed fabrics make these pieces must-haves at unexpectedly reasonable price points. The fall collection also marks the debut of Improvd handbags in rich leathers and fresh shapes. The Charlotte Ronson show is always a favorite. Fans of her line will love her entire 2011 collection. It’s all about mix-and-match ease and is made up of styles that translate on both coasts. Her take on military grunge makes every piece seem like a staple. Concierge Medicine 101 –

The Doctor Will See You Now Concierge medicine, also known as private medicine or membership medicine, is, essentially, a relationship between a patient and a primary care physician in which the patient pays an annual fee for increased access and enhanced services. This fee can range anywhere from $600 to $5,000 per patient and typically is in addition to the fees the patient pays for health insurance premiums and insurance copayments for appointments and procedures, tests, etc. With concierge medicine, physicians care for fewer patients than in a traditional practice, giving them the ability to pay more attention to each patient.

Despite the recession, concierge medicine is flourishing for two reasons. First, today’s patients are increasingly seeking unhurried appointments, a personal relationship with their physician, the ability to come into their doctor’s office right away (or close to it) and access to their doctor day and night via phone. Second, doctors – frustrated by insurance companies and the current health care system – are seeking to find a new revenue base (concierge medicine’s access fees) while providing thoughtful, innovative preventative care and developing long-term patient relationships.

Q:

How is a concierge medicine practice different than a traditional medical practice?

Physicians are normally compensated on the number of patients they can see per day. A typical full-time physician will care for an average of 3,500 patients in his or her practice and will see an average of 25-35 patients per day. In contrast, a concierge medicine group like Personalcare Physicians of Newport Beach charges a yearly access fee that allows us the financial ability to see fewer patients – no more than 350 per physician – usually no more than five-to-six per day.

Q:

What does my access fee get me that I wouldn’t get from a traditional practice?

The benefit for patients is that they have enhanced access to their physician. At Personalcare Physicians, all patients have the ability to call their physician on his or her cell phone 24 hours a day, seven days a week, including email and text messaging. Same day or next business day appointments and emergency house calls can be arranged. Physicians will provide dedicated time to all medical needs including specialist tracking, review and collaboration.

Q:

How does insurance work with this program?

For most concierge medical practices, traditional fee-for-service plans such as preferred provider organizations (PPO) or indemnity plans will allow us to best coordinate patient care. The client’s insurance will be billed for office visits, procedures, labs and prescriptions – just as is typically done under a PPO plan. Patients remain responsible for co-pays and insurance premiums.

While there are various reasons to do a cleanse, you might be surprised to learn that weight loss doesn’t rank high among them. Most people lose an average of three-to-five pounds on a three-day cleanse, but the other benefits of cleansing, as I learned first-hand, were even more exciting. After cleansing, I felt amazing - the best I had in months. My skin was clear and bright. I had more energy than usual (no more afternoon drag). And I slept Ambien-free throughout the night! f you can dream it, he can build it. And he has. John Finton has built

some of the most unique homes in the world for an impressive client roster spanning billionaire business execs to Hollywood stars from J-Lo to Ben Stiller. But Finton doesn’t drop names. And he doesn’t much dig titles, like his being dubbed “Indiana Jones” for his ’round-the-world treasure hunts for custom home finishes and materials. “I’m a little over it,” he says nonchalantly. “It started accidentally about ten years ago when a client asked me to travel to Jerusalem for stone that Christ was said to walk on.” Finton got the stone, and got hooked. “It’s an art form, really,” he adds. Last year alone, Finton traveled 300,000 miles to locate the dream home elements on his clients’ wish lists. “It’s the ‘Pathological Accommodator’ in me.” Finton Construction, with 45 project managers and 1,500 people on the job on any given day, accommodates clients by building their luxe abodes in Russia, Asia and around the globe, but his regular clientele are those in bask’s backyard - Beverly Hills, West Los Angeles and Orange County’s Newport Coast.

hat does a guy who’s seen it all and built it all have to say about

the latest in ultimate home building? That answer was about as hard to get as a certain French limestone. From job sites to private planes to lunches at the Beverly Hills Polo Lounge, Finton is a moving target. We caught up at one of his current dream homes in the making — a 65,000 square foot Bel-Air estate, which, incidentally, will be clad in a rare limestone that he personally sourced in France, then traveled to China to have fabricated.


S

o, on to what’s trending in the world of custom homes. Is it Mediterranean?

French Chateau? Italian Modern? “It’s interesting. It depends on which side of the ocean you’re sitting on,” notes Finton. If you live in Europe, people love things American, theaters and all. If you live here, everyone wants the old charm of Europe. One day, some people feel less is more. And the next minute, luxury and opulence is in. Some want a beach house, some need parking for 40 cars, some are doing political fundraisers, some need catering kitchens.” He added, “For many years, we didn’t do much contemporary work, and now the last five years we’re doing more. I’m doing spas in almost every house I build; massage room, steam, sauna, relaxation area. We didn’t used to do that.” One constant he did drive home, though – should you have a villa, summer house, hacienda or palatial palace on the horizon – was the importance of quality. “Clearly it’s always better to build good quality. We have record sales for the price per foot of the homes we’ve built in Malibu, Pasadena, Beverly Park. Good quality always sells.” He should know. Finton Construction homes have graced the coveted cover of Robb Report twice with ‘House of the Year’ awards. His most recent win was last year for a Beverly Park home that he built.

ow about the LA market versus that

of Orange County? “There’s no question that the LA market is more sophisticated in terms of their taste levels, and in terms of what they’re demanding out of their projects. There’s a higher level of detail and the projects move much faster in LA. We’ll have clients who want to have their Malibu beach house finished for a party, and in order to get it done, we’ll need to work 24 hours a day. And that’s not crazy here (in LA). In Orange County, we never have projects like that.” And, on the topic of more eco-conscious homebuilding, “Everybody wants to be responsible, but, at a certain point, you’re spending so much money to get some of these things that it doesn’t make sense. Take geothermal heat and air conditioning as examples. By the time you look at what it costs and what the payback is, people say ‘I want to be green, but I don’t want to be green that much.’ Like anything, there is a balance of what makes sense.” About that balance… what kind of home does Finton call “home?” “My house is a modest, charming 1920s home in an old part of Pasadena. It’s cool; it’s only about 3,000 square feet. Coming home to a 10,000 square foot house just didn’t make a lot of sense to me anymore. And I like Minimalist style,” he adds. When Finton is not at home in Pasadena or on a job site, you can find him dropping anchor on his boat, traveling the West Coast, Mexico and Costa Rica.

Go beyond your comfort zone, and try some of the raw seafood specialties out there.

The weather is changing and we’re moving away from heavy winter foods in favor of lighter fare. Fish is a natural, healthy choice and eating it raw is a great alternative. When we think of raw fish, we often think of sushi and sashimi. However, the Japanese are not the only culture to celebrate the raw stuff. From Italian crudo to Peruvian tiraditos, restaurants are offering raw seafood in a variety of preparations. Raw seafood has a very different taste and texture than cooked fish, so starting with a high-quality product is crucial to making these dishes shine. Great as an appetizer, light lunch or dinner, go beyond your comfort zone, and try some of the raw seafood specialties out there. One of my favorite preparations is Italian crudo, raw fish dressed with olive oil, sea salt and citrus. Santa Monica Seafood (SantaMonicaSeafood. com) recently opened their Costa Mesa café and serves a delicious crudo of thinly sliced hiramasa with arugula pesto, lemon oil, radishes and basil. At Marché Moderne (MarcheModerne.net), the Big Eye Tuna is drizzled with a yuzo koso vinaigrette, accompanied with a tangy passion fruit sphere, and sprinkled with smoked sea salt. The Hungry Cat in Hollywood (TheHungryCat.com) is a casual spot that serves fresh seafood and has a raw bar that’s open late. Sit at the bar and watch the chefs work their magic on a menu that changes with the season. They serve their raw seafood Italian-style, with a carpaccio of thinly sliced swordfish, tangerines, fennel and a sprinkle of spicy chili oil.

Goi ca is a Vietnamese raw fish dish that is elegantly prepared at S Fine Dining in Westminster (SFineDining.com). Halibut is sliced into thin strips and then briefly marinated in lime juice before being tossed with sweet onion, red onion, Thai Basil and ginger. The mixture is held together with a piquant peanut lime vinaigrette and served with crispy prawn crackers for dipping. If you like Mexican ceviche, you’ll love this Asian specialty. Ceviche is popular in the coastal regions of Central and South America. Living in California, most of us are familiar with the Mexican dish of citrus-marinated raw fish. However, new to many of us is the Peruvian version, tiraditos, a variant of ceviche that is influenced by sashimi. Raya at The Ritz-Carlton Laguna Niguel (RitzCarlton.com/Laguna Niguel) combines hamachi, radish and apple, with sriracha, mint and ponzu to create a bright and zesty small plate. If you want to try various raw bar dishes in one sitting, Scott’s Restaurant & Bar in Costa Mesa (ScottsRestaurantandBar.com) has a raw bar that features several. There are eighteen varieties of oysters, from the Kumamoto of the Pacific Northwest to the Malpeque of the East Coast, that make great starters. Subtleties in flavor and texture come from their terroir, the local conditions that impart a unique stamp on each fish. Like wine, local nutrients, temperature, and trace minerals all have an influence. After oysters, move on to the hamachi sashimi, served with refreshing cucumber, mild shishito peppers and citrusy yuzo, or try the ahi tartare with sesame, creamy avocado and soy vinaigrette.

Beyond spring (rolls): Vietnamese

Vietnamese cuisine embodies spring with its fresh, healthy ingredients that utilize a diverse range of herbs. Orange County’s Little Saigon is the oldest, largest and most prominent Vietnamese community in the United States and a wonderful source for authentic ingredients and restaurants where it’s recommended to dine by dac biet (a restaurant's prescribed list of house specialties). The Vietnamese have a strong vegetarian tradition influenced by Buddhist and Chinese values. Au Lac (AuLac.com) is a “Humanese” restaurant in Fountain Valley that offers an entirely vegan menu, with several raw and cooked selections. The flash-fried tofu dish called “da hu rang muo” consists of ultra-soft tofu in a light batter that is cooked with salt, pepper, cilantro and jalapeño. While tofu is ubiquitous on Asian and vegetarian menus, this preparation is a stand-out. Brodard Nem Nuong and Brodard Chateau (Brodard.net) in Garden Grove are known for their “nem nuong cuon,” grilled pork spring rolls wrapped in rice paper with lettuce, cucumber, daikon, carrot and mint, and served with “Mom’s” house dipping sauce. Other favorites include “bo luc lac” (Shaken Beef), chunks of tender filet mignon wok-seared with onions, scallions, mushrooms and spices and the Mint Leaf Chicken with scallions, spicy jalapeños, basil and cooling mint. Bamboo Bistro (BambooBistroRestaurant.com) in Corona del Mar is the sister restaurant to the Garden Grove Brodards and features many of the same menu items. In Little Saigon, the debate regarding the best “nem nuong cuon” has begun with Dat Thanh in Westminster challenging the heavyweight champion, Brodard. Subtle differences prevail between the two, from the mixture of the garlicky pork patty and how it is grilled, to the tightness of the rice paper wrapping, the snap of its fresh vegetables, and the secret recipe dipping sauce.

Uyen Thy Bistro in Westminster reflects the French colonization of Vietnam with fusion-inspired dishes that include pan-fried sole and Chicken Cordon Bleu, red wine reductions and butter sauces. The bistro’s breakfast of sunny-side-up eggs, pâté, ham and soft baguette also is phenomenal. There is often a line out the door at Westminster’s Ngu Binh for its “banh it kep banh ram,” a glutinous rice cake, gently steamed, then stuffed inside a deep-fried glutinous rice cake. Its crunchy exterior is topped with fresh scallions, fried shallots, dried shrimp and crackling pork skin and is made for dipping in the salty fish sauce spiked with slivers of hot, red pepper. One of the most well known dishes in Vietnamese cuisine is pho, and it’s a great introduction to Vietnamese food. But, when you’re ready to move on, try the noodle soup with more flavor - "bun bo hue". Quan Hy in Westminster makes this soup with fat rice noodles, sliced beef, shrimp sausage and a broth doused with fiery chilies. Haley Nguyen sources most of her quality herbs and vegetables from the gardens of local Vietnamese women, supporting the name of her restaurant Xanh (“Green”) Bistro in Fountain Valley (XanhBistro.com). As one would expect, salads play a starring role here. “Goi buoi” is composed of tangy Pomelo sections, bitter chrysanthemum leaves, julienned jicama, toasted walnuts and a slightly sweet house dressing. “Goi hoa chuoi” features crisp strands of banana blossom, grilled shrimp and pork, pickled daikon and carrot, Vietnamese mint, sesame seeds and peanuts tossed with a lime and cilantro dressing.

fennel

Mushrooms are used extensively in cooking, especially in Asian cuisines where they provide the fifth basic taste, or umami. High in fiber, protein (from a vegetable perspective) and vitamins such as thiamine, riboflavin, and niacin, mushrooms are a low-calorie, flavorful, healthy addition to many dishes. Store mushrooms in a loose paper bag in the refrigerator, but not in the crisper. When ready to use, clean lightly with a dry paper towel and do not rinse as mushrooms tend to soak up water and get soggy. At Quattro Caffé in South Coast Plaza, the Funghi con Parmigiano – a selection of portobello and shiitake mushrooms sautéed in white wine and finished with Parmesan - highlights how spectacular and satisfying mushrooms can be with the simplest of preparations.

The bulb, fronds, and seeds of the fennel plant are widely used in cuisine across the world and have a pleasant anise or licorice flavor. The bulb is a crisp root vegetable that can be sautéed, stewed, braised, grilled or eaten raw. The seed is a common ingredient in Italian cooking and northern European breads. Currently, fennel pollen is an “it” ingredient, thanks in large part to Mario Batali. Old Vine Café at The Camp in Costa Mesa showcases fennel in a rich soup of cannellini beans and pork sausage that is topped with a crispy, herbed crostini and crunchy fried fennel. The guanciale, ricotta e cipollotto pizza at Pizzeria Ortica, also in Costa Mesa, features fennel pollen on a chewy, crispy crust that is topped with fresh ricotta, house-cured pork cheek and scallions.

The tender, young shoots of green asparagus epitomize spring. When selecting asparagus, look for smooth skin, a bright green color, compact heads, and freshly cut ends. White asparagus, known as spargel, is cultivated by denying the plants light while they grow, and is less bitter than the green variety. On most menus, asparagus plays a supporting role. But, at Zinc Café in Laguna Beach and Corona del Mar, you’ll find it as a main course – in this case, as an open-faced asparagus sandwich where toasted sourdough is topped with puréed cauliflower, braised asparagus, white cheddar, a soft poached egg and bread crumbs.

Late spring brings with it strawberry season. Delicious naturally, they are a delicate fruit that should not be washed until ready for consumption. Size does not indicate flavor, but color can, so select those that are bright red, without any white parts. Forgot how good a strawberry can taste? Try the Seascape or Chandler varieties from Harry’s Berries at several LA farmers’ markets. Or, indulge in a strawberry croissant from Crème Pan, a Japanese bakery in Tustin, where flaky, buttery layers of pastry are filled with creamy custard and freshly sliced, sweet strawberries.

An easy way to brighten your food this spring — or any time of year — is with fresh herbs. cilantro

Chef Azmin of Sapphire Restaurant recommends six basic herbs for the Southern California kitchen: basil, thyme, rosemary, oregano, cilantro and Italian parsley. Less common in everyday cooking, but delicious in special dishes, are marjoram, dill, tarragon and sage. While starting from seed is possible, it takes a lot of time and patience for a first-time grower. Instead, visit your local farmers’ market and select herb plants with a few inches of growth. They take less time to mature and also have a better chance of surviving the elements. Herbs, like all plants, take some trial and error to determine how to best care for them in your unique environment. However, follow some basic rules and they should thrive. Plant in a sunny spot and make sure they have lots of space. Keep the soil moist, not letting it dry out, and soak the roots. Use your herbs frequently and be careful not to let them seed. By cutting them, you actually promote growth. Accept that there will be pests. Use a worm compost to help reduce critters and pay your children a few cents for every snail they can find. In addition to cropping up in your favorite dishes, herbs now are being used to create inventive cocktails. Some of the best include:

basil While it naturally complements the taste of tomatoes, basil also pairs well with other sweet fruit. Take the adult version of lemonade at Watermarc in Laguna Beach, for example. It starts with vodka and is muddled with fresh strawberries and basil. Charlie Palmer uses basil with Vino Fresco Belvedere, grapes and lime in his Signature Cocktail.

Most people have a love/hate relationship with cilantro. For those who love it, there are several outstanding cocktails showcasing its flavor. Sol Cucina in Newport Beach serves a Cilantro Celery Cocktail that uses Grey Goose vodka, muddled cilantro and celery, agave and fresh lime. One of the most delicious cocktails I’ve ever sipped is the Cucumber Cilantro Margarita at Wildfish Seafood in Newport Beach. Loaded with bright cilantro, cool cucumber and a touch of sweet agave, this is certain to become a new classic.
